Know Your Rights-Employment Agreements Know Your Rights Students volunteer for Hospice West Auckland Employment Agreements Good employment relationships begin with a good recruitment process that ensures everyone has clear expectations about the role, working conditions and employment rights. A clearly written employment agreement can help reduce the risk of misunderstandings. Every employee must have a written employment agreement. This can be either an individual agreement or a collective agreement. Collective employment agreements are negotiated in good faith between an employer and a registered union on behalf of their members. Employers must not unduly influence employees to join or not join a union. From 1 July 2011, employers are required to retain a signed copy of the employment agreement or the current signed terms and conditions of employment. The employer must retain the “intended agreement even if the employee has not signed it. Employees are entitled to a copy on request. There are some provisions that must be included in employment agreements by law, and there are also a number of minimum conditions that must be met regardless of whether they are included in agreements. Employment law also provides a framework for negotiating additional entitlements.

Personal Presentation Know Your Rights Personal Presentation When you are working in a service industry your personal appearance and presentation are very important. People tend to make judgments about others in the first few seconds of meeting them and this judgment is mainly based on their appearance and presentation. Some things to consider are: Personal hygiene Customers are easily put off by an employee with ‘bad breath’. The customer will tend to end the discussion quickly and often not continue the discussion as they would prefer their experience to be more pleasant. Likewise an employee with unpleasant body odor will have the same effect on the potential customer. Customers are also unimpressed with dirty hands or fingernails (unless the person is a mechanic who has just finished working on their car). Simple personal hygiene habits such as always wearing fresh clothes and showering before work, using a deodorant, practicing good dental hygiene and using a breath freshener each day ensure your personal hygiene will not turn away potential customers. Be aware, though, that wearing strong smelling deodorants or perfumes can also be offensive to some people, so don’t overdo it. Hair Your hair should be neat and clean. If you have long hair it should be tied back for safety as well as for neatness. It is very important that your hair is away from your eyes as it becomes a barrier to communication if your hair covers your eyes. People don’t like to deal with people if they can’t see their eyes. Generally, ‘radical’ hair colorings are not appropriate for most areas of the customer service industry although if you are working at a trendy night club it might be appropriate to have ‘radical’ hair coloring or styling.

Personal Presentation Know Your Rights Personal Presentation

Uniform If you are supplied with a uniform you need to keep it clean and well ironed. Wear it how you are expected to wear it. If the company policy is to have T shirts tucked in, do it. Standard Hospitality Industry uniform is black trousers, black leather shoes or boots and a black or white collared shirt (black if you are a technician, white if you work Front of House).

Deportment If you have poor posture, hang your head or slouch in your chair you will make a poor impression regardless of your impeccable grooming. Good posture helps to give the customer the impression that you are interested in talking to them. When speaking to a customer, look them in the eyes, don’t fiddle with a pen or your phone, and show interest in what they have to say. Use Active Listening techniques to ascertain their needs. Use appropriate language, don’t use slang and be polite. Use body language to show you are interested in what the customer is saying.

New Zealand Culinary FareStories 2013 NZMA Student Success

A world-class competition has proved that New Zealand’s hospitality industry is hosting a tonne of talent – and students from NZMA are at the top of the leaderboard. The prestigious New Zealand Culinary Fare, held at the ASB Show grounds from August 18 – 20, saw hundreds of competitors from around the country test their skills against their industry equals in a wide range of front-of-house and back-of-house events. Many brought home medals and all had the chance to showcase their ability to the judges, spectators, and future employers. Students from NZMA’s Auckland Central, Auckland South, Panmure and Waikato Campuses competed in the event, bringing home a staggering 55 medals between them, including six gold medals, 23 silvers (two of which were top scores for their categories) and 26 bronze medals. “NZMA students really shone in the Culinary Fare this year,” said NZMA Campus Principal and trainer Nishat Elavia. “We received great feedback from the judges and some of our students even gained job offers as a result of their performance on the day. Their impressive medal haul was well deserved – our students and their trainers put in hours and hours of work in the weeks leading up to the competition, to ensure their performances would be flawless on the day.” The New Zealand Culinary fare is the largest hospitality competition of its kind in the Southern Hemisphere, attracting up to 6000 spectators each year. NZMA sees it as a fantastic opportunity for students to master certain areas of service, gain confidence, and build their reputations in the industry.

New Zealand Culinary Fare 2013 NZMA Auckland South Café Supervisor Joanna Katene competed in the event for the first time and earned herself top score in the Chicken Dish (Open) category, with her very own mouth-watering Chicken Roulade with Chive Sauce. The 42 year old mother of eight and grandmother of three studied Level 3 and 4 Hospitality at NZMA after spending many years as a stay-at-home mum. NZMA was so impressed with her ability and attitude that they later hired her to run the NZMA training café, and teach students the practical aspects of food safety. “Studying at NZMA really changed my life,” said Joanna. “I wanted my kids to be able to say their mum had a good job, not that she just stayed at home all day. And now that I am working at NZMA, they can! I love my job and it was great to have the opportunity to compete in the New Zealand Culinary Fare for the first time. I had knots in my stomach throughout the entire competition - I couldn’t believe it when I was awarded the top score. It has given me such a boost and it was a great experience.” Others from NZMA Auckland South who made their mark included Sana Etuale and Lance Broad who both won gold medals for their Classic Cocktails (Training) and bronze medals for their Innovative Cocktails (Training). Lance also picked up a bronze in the Table Setting/Service (Training) category. Maria Hill earned a silver in Classic Cocktails (Training), and bronze medals were awarded to Stevie Marino, Jordan Noble and Isibella Sila for their Innovative Cocktails (Training). Meanwhile Jessica Wanihi and Maki Moka took out bronze medals in the Barista (Open) class. This is the first year NZMA has entered in any of the cookery events, and our talented cookery students from NZMA Panmure did us proud. Zexuan Liu and Leap Leang both won silver medals for their Soup (Training) and four silvers were awarded in the Pasta Dish (Training) category (Juyoung Im, Tyson Cross, Cassandra Violeti and Michiel Roos). Benjamin Biddle gained a bronze in the same category while bronze medals also went to Jarmanjit Singh Khosa for his Salmon Dish (Training) and Allie Mataata for her Duck Dish (Open). Yang Ding received a certificate of merit for his efforts in the Salmon Dish (Training) category. Several hospitality students from NZMA Panmure also competed. Hope Pomery (pictured competing here) earned the highest score and a silver medal for her Innovative Cocktail (Open). Te Ahu Kapea competed in the same event and brought home the bronze.

New Zealand Culinary Fare 2013 A word from our students... Point England mum and NZMA Panmure student Hope Pomery wowed the judges – and her four kids – at the recent New Zealand Culinary Fare. Hailed as the largest culinary competition of its kind in the Southern Hemisphere, Hope’s ‘Lady Marmalade’ earned her the top score and a medal in the Innovative Cocktails category. “There were 32 of us competing. I was shocked to be awarded the highest score because everyone else’s cocktails looked amazing. My kids were so happy!” “It was hard juggling my kids, hospitality studies and competition training, but it was well worth it!!”

Siyuan Yang (Vivi) a Auckland City NZMA Student and gold medal Barista winner had this to say about her experiences. “Before the competition I always practiced after school and increased this towards the competition date. I think I achieved the gold

April Zhang another Auckland City NZMA student and medal winner believes her determination and perseverance helped her to achieve her results. “Keep going, never give up and you will see that everything is possible.”

New Zealand Culinary Fare 2013

New Zealand Culinary Fare 2013 A word from our students… Allie Alberta Mataafa tells us about her experiences … Wow what an experience I’ve just finished the culinary fare competitions and I feel GREAT!!!! Hmmm….I can’t say I felt that way in the lead up to this event. It was a hard road one that was fraught with some very highs and some very lows which at times left me and others thinking what the heck have we said yes to. I would scream at the top of my lungs in my head from frustration, but most times managed a polite yes Chef no Chef three bags four Chef. Our team consisted of ten students including myself. I along with Mick, Tyson, Ben, Sana and Marcia were in the Pasta section. Jay and Eric were in the Salmon section and of course Leap and Saber had the Soup section covered. We each had the opportunity to find a dish that was a Medal winner and some amazing recipes came out of the wood works. I however struggled with my idea but was encouraged by my tutors Aldo Franckin and Warwick Mackay to make a Rabbit Ravioli. Oh Lord, how ironic I had never eaten Rabbit and now I was going to make a Rabbit Ravioli. Everyone was excited at the prospect of not a good dish, but a great dish and there were even dreams of grandeur for us all. I jumped on board the train of excitement and decided that I would figure this out as I went along. After weeks of training the end of the tunnel was insight and I knew that our comps team had dishes that were AMAZING actually they were crazy AMAZING!

New Zealand Culinary Fare 2013 A word from our students... However for me this was not going to be an easy road. Sometimes in life curve balls are thrown our way, these can sometimes build character and or cause us distraction. This however was something that would test my character my resolve.

I and everyone else had not been expecting the bomb shell of information we would receive. We were told that the Restaurant Association had not received my application for the Pasta division and this section was full and now closed. I could not believe my luck this was something I had worked hard towards and now the rug had been pulled out from under my feet. What was plan B was there even a plan B?

But with the backing of NZMA and my tutors they managed to get me into the Open class section of Duck for the competition. Whoa! Hang on a minute, how could I go into a class that I was not prepared for, just what did open class mean? What was expected of me? I was a trainee chef, three weeks into level Four, who would I be competing against? I did not have the brain space for this and immediately went into panic mode but with the help of my tutors we managed to pull a dish. I would have to learn to bone a Duck, mince it and turn it into a sausage as well as make a Duck and Rabbit Ravioli, Carrot game sauce with Balsamic reduction and lightly sautĂŠ organic Puha after four days training to be exact

New Zealand Culinary Fare 2013 A word from our students... We arrived at the ASB show grounds early so that we could become familiar with our sights and work stations. It was amazing and something that none of us had ever seen or experienced before. The noise, the smells, the people and the sights might have been overwhelming if I had not had the support of my team mates and tutors. I still had two hours to go before my competition and kept myself busy with memorizing my recipe and the order in which I would do things. Finally we were called to the gate and given our work station numbers and were told that we could take helpers in with us. After that short brief we were given permission to go and set up. I don’t remember much of that setup because I was still going through the process in my head. By the time they called us in for the brief I knew I was ready for the competition. I managed to work my way through the boning and mincing of the Duck in record time so I knew that I was on target. I looked up at the clock and was thirty minutes into the competition. After the first five minutes of adrenalin rush I slipped into the slip stream of ease and became focused on my dish. I knew exactly what had left to do and was really excited that I would get my dish up on time. If I just remember what I was taught I know I can do. When I next looked at the clock it was thirteen minutes before presenting.

New Zealand Culinary Fare 2013 A word from our students... Wow! I could hear all the cheering from the side line so many supporters so many people believing in me and all I had to do was move into fifth gear and I would be finished. I knew I had to finish for myself I had resolve and determination and that in the end would be the thing that helped me to get there. The end result was a Bronze Medal and the feedback from the judges was also very encouraging. Restaurant Associations comment’s . “ I have great flavours and a resolve to finish” Yes I will take that! It was an amazing experience and one that I will not forget in a long while. The Restaurant Association go all out to see up and coming Chefs get the exposure they need to achieve their goals. I have become fast friends with all of my team mates and have made lifelong friends with some. NZMA saw my potential and afforded me the opportunity to experience what is going to be my future. To all my Team mates Marcia, Tyson, Sana, Mick, Ben, Eric, Leap, Saber, Jay it was a privilege to have done this competition with you all. You ROCK!!! My Tutors Aldo Franckin and Warwick MacKay on behalf of us ALL, THANKYOU with all our hearts. And finally the rest of the staff NZMA Panmure, Thankyou for critiquing our food, for believing in us, and releasing us to do

2013 National Culinary Fare – what a dream journey it has been to walk! Culinary Fare for me has been something I’ve kept my eye on since starting Level 3 Hospitality in 2011. Seeing the faces of previous Culinary Fare medallists on our wall, I knew instantly that one day, my time will come. This year I turned 21 and so did the National Culinary Fare – so it must have been fate which brought us both together. Training for a competition on a scale such as this one was quite intense, though through it all, it has improved my knowledge and has boosted my confidence in ways I never thought possible. All the hard work, time, commitment and determination to succeed in this competition sure has paid off and the experience itself was one of a kind and so surreal; all of which I wouldn’t have been able to do it without the help of Jack Chandra and Karen Reynecke.

New NewZealand ZealandCulinary CulinaryFare Fare2013 2013 Student Profile When I first started at NZMA, my knowledge of the hospitality industry was very minimal and like most people, the only thing I knew a lot about was drinking – not implying that I’m an alcoholic or anything. The courses here have really opened a lot of doors and opportunities for me, it has broadened my mind as to which direction I want my career to take off in, has helped to develop my passion for the industry, and over the past 2 and half years of studying, has been the root of my success as without the tutors, I wouldn’t know what I know now. Never before had I competed in a competition of any sort and this year, Culinary Fare was mine for the taking. I entered into three categories – Table Setting, Table Service & Crumbing Down; Classic Cocktails and Innovative/Original Cocktails - and walked out with 2 bronze medals and 1 gold. At the moment, my future is yet to be defined so I am keeping my options open. I would love to get deeply into mixology and one day take ownership of my own nightclub or cocktail bar but I think being stuck in New Zealand for 21 years, it’s time for me to get out on a cruise liner and enjoy the sights and sounds of the world.

NZMA Strikes Culinary GOLD Well not just gold but silver and bronze, too!! The previous weekend saw several students from across all of our NZMA campuses competing in the Culinary Fair which took place in central Auckland and the Waikato. Under the different categories students had the chance to showcase their skills and expertise in a battle to win a medal. The categories included Cocktail Making, Barista and a challenge for the chefs.

Auckland South Campus Open Day

Staff and students at our Auckland South came together to give prospective students an insight into life at NZMA through their recent open day.

Prospective students were invited to experience all that Auckland South has to offer and meet the people who make it happen. The day included demonstrations such as ‘mocktail making’, enrolment opportunities, prize giveaways and also a BBQ so everyone involved had something to enjoy!

The NZMA and the NZMA Careers team would like to say a huge ‘Well Done!’ to everyone who helped out and put in the hard work which helped to make the day such a success! Check out the following photos from the day to see more!!
