Non si spreca nulla: distillando le vinacce delle singole varietà di uva si ottengono grappe più o meno intense o aromatizzate con erbe, bacche, radici secche, piccoli frutti e altro ancora!

Liquore (61°) famoso per il colore rosso e realizzato con fragole e lamponi di montagna, è stato inventato negli anni ’40 da Achille Foletto, allora titolare dell’omonima farmacia. Solitamente servito ghiacciato, è ideale accompagnato a gelati e dessert.

Es wird nichts verschwendet: Beim Destillieren der Trester der einzelnen Traubenarten erhält man mehr oder weniger intensive oder mit Kräutern, Beeren, trockenen Wurzeln und kleinen Waldfrüchten aromatisierte Grappas. Aber es gibt noch mehr Möglichkeiten!

Dieser wegen seiner Farbe berühmte Likör (61%), der aus Erdbeeren und Himbeeren hergestellt wird, die in den Bergen wachsen, wurde in den 40er Jahren von Achille Foletto, dem Besitzer der gleichnamigen Apotheke, erfunden. Er wird gewöhnlich eiskalt serviert und passt hervorragend zu Eis und Desserts.

Nothing is wasted: by distilling the marcs of each variety of grapes, are obtained different kinds of Grappa of different intensity in flavour, or aromatized with herbs, berries, dry roots, wild berries and many other ingredients!

This distillate (61°:alcoholic degree), famous for its red color and made by using mountain raspberries, was invented in the ‘40s by Achille Foletto, at that time the owner of the pharmacy of the same name. Usually served ice-cold, it is the ideal matching to ice creams and desserts.

Nur am Gardasee kann man die seltene Gardaseeforelle angeln.

Außerdem: Forelle, Felchen, Ukelei, Sardine, Hecht, Schleie, Barsch und Aal. Ein unschätzbarer Reichtum, der ebenfalls in den nahen Laghi di Ledro, Tenno und Cei, in den Flüssen Adige (und deren Nebenflüssen) und Sarca vorzufinden ist. Dies trifft auch auf die kleineren Becken mit ihren jeweils unverwechselbaren Eigenheiten zu. Wichtig ist ebenfalls die Saibling- und Forellenzucht (Regenbogen- und Bachforelle), die erst kürzlich die DOP-Anerkennung erhalten hat.

Only in Lake Garda you can catch the rare, along with fish such as the trout, whitefish, bleak, sardines, pike,tench, perch and eel. A priceless treasure, which you can also find nearby here in Lake Ledro and Lake Tenno, Lake Cei , and in the rivers Adige (including its tributaries) and Sarca, as well as in the minor ponds each of them with unmistakable peculiarities. Very important is the breeding of the Salmerino (char fish), the Trota Iridea and Trota Fario (rainbow trout and brown trout), recently recognised as a DOP-product (Protected Designation of Origin).

Solo nel Lago di Garda si può pescare il raro carpione, assieme a pesci come trota, lavarello (o coregone), l’alborella, le sarde, il luccio, la tinca, il persico e l’anguilla. Una ricchezza inestimabile, presente anche nei vicini Laghi di Ledro, Tenno e Cei, nei fiumi Adige (e affluenti) e Sarca, così come nei bacini più piccoli, ognuno con specificità inconfondibili. Importante è l’allevamento di salmerino e trota (iridea o fario), da poco riconosciuti DOP.

In Dro, in the Sarca Valley, grows a local variety of plum, unique in the world, recently recognized as a DOP.label (Protected Designation of Origin). Purple in colour and characterised by a compact flesh, it is rich in potassium and vitamins.

Die besonderen klimatischen Bedingungen auf dem Monte Baldo, Sitz des gleichnamigen Naturparks, machen es möglich, schwarze Trüffel, Heilkräuter und Safran zu sammeln: Letzteres ist ein typisch mediterranes Gewürz. Diese Schätze der Küche finden man hier als auch im Ledrotal. Mit dem Grestatal wachsen hier im allgemein mehr als 20 Pflanzensorten, darunter die Minze, Melisse, Ringelblume, Kornblume, Malve und der Lavendel, die als Lebensmittel und in der Kosmetik verwendet werden.

The particular climatic conditions of Monte Baldo, which is the location of the Natural Park with the same name, permit the harvest of the black truffle, and the saffron, a typical mediterranean spice, products that you can find also in the Ledro Valley. In these areas, as well as in the Gresta Valley, grow more than 20 species of plants such as mint, lemon balm, calendola, cornflower, lavender, mallow, all used both in alimentary field and cosmetics.

Le particolari condizioni climatiche del Monte Baldo, sede dell’omonimo Parco Naturale, permettono la raccolta di tartufo nero e zafferano, spezia tipicamente mediterranea, prodotti che puoi trovare anche in Valle di Ledro. Dieses Gebiet ist Sitz wichtiger Hersteller von Qualitätsprodukten, die die besten Rohmaterialien auswählen, um Ihnen gute und bekannte Produkte anzubieten. In Rovereto befindet sich die Kaffeerösterei Bontadi, die älteste Italiens (1790 gegründet), während die Kaffeerösterei Omkafè in Arco ihren Sitz hat. Questo territorio è sede di importanti trasformatori di qualità che selezionano il meglio delle materie prime per offrirti prodotti buoni e rinomati. A Rovereto ha sede la torrefazione Bontadi, la più antica d’Italia (fondata nel 1790), mentre ad Arco si trova la torrefazione Omkafé dove è possibile visitare il Museo e rivivere un appassionante viaggio dai paesi d’origine alla tostatura, dalle antiche tradizioni alle prime macchine per espresso. Lungo il torrente Varoncello ha invece sede il Molino Pellegrini, uno dei pochi ancora attivi in provincia.

Formaggi di malga, caciotte, burro, yogurt.

A Bezzecca, 2 Km dal Lago di Ledro. In estate svolge l’attività di alpeggio nelle Malghe di Tremalzo, presso la malga Bezzecca. Dopo la mungitura delle vacche, nonno Mario, il nipote Marco, producono formaggi tipici, burro di malga, caciotta di Tremalzo, yogurt, ricotta fresca e affumicata.

Cellana Giovanni coltiva la passione per le api e per il miele. Le arnie si trovano a pochi passi dal Lago d’Ampola e le api possono spaziare dal bosco di conifere ai verdi prati fioriti per un ottimo miele millefiori. Inoltre ha propoli, polline e candele di cera.

Die Bienenhäuser befinden sich in der Nähe von Ampolasee und die Bienen dürfen von Wald bis zu den Blumen voll mit Blumen fliegen, um guter Blütenhonig zu machen. Dazu hat er Propolis, Pollen und Wachskerzen.

Dopo una fase di sperimentazione, grazie alle condizioni climatiche, prende piede in forma concreta e con buoni risultati a Bezzecca in località Pinabel. Proprio laboratorio artigianale.

Latte Ledro nasce dall’abilità casearia di famiglia, dove la bontà dei formaggi è dovuta alla qualità della loro materia prima: il latte. Grazie al bestiame allevato con fieno profumato dei pascoli di montagna, i prodotti si distinguono per i loro speciali sapori e per le diverse fragranze, che li rendono appetibili per tutti i palati.

Fondato nel 1903, vanta oltre cent’anni di storia nella macinazione del mais e del grano saraceno; è un’azienda familiare, artigianale, dove l’uomo e la sua esperienza sono ancora un elemento fondamentale. Rimane uno degli ultimi molini storici in Trentino.

Fondato nel 1960, è a conduzione famigliare. Recentemente, oltre alla produzione di olio extravergine di oliva (certificato biologico), si realizzano prodotti cosmetici come olio da bagno, shampoo, balsamo, sapone, crema idratante, tutto a base della preziosa miscela ottenuta secondo tradizione.

Il Presidio, nato dal pre-esistente comitato, è costituito da cittadini, produttori e ristoratori locali. Mira alla valorizzazione dell’ortaggio, entrato nell’offerta gastronomica locale e noto per la sua tipicità e le caratteristiche organolettiche eccellenti, nonché alla sua salvaguardia sul territorio.

Magazzino per la raccolta, conservazione e lavorazione frutta dei soci, poi commercializzata dal Consorzio La Trentina al quale la cooperativa è associata. Attività parallela con Emporio agrario per la vendita di scorte agrarie e Bottega con frutta e prodotti tipici.

Nata a fine anni 50, la Cantina ha una superfice vitata di 700 ha estesa tra Vallagarina, altopiano di Brentonico, Val di Gresta e Basso Sarca. La molteplicità di terreni e microclimi permette di ricavare vini con sensazioni organolettiche molto diverse. Dal 2011 è aperta la nuova sede, ecologicamente sostenibile.

Eröffnet am Ende der 50er Jahre, zur Weinkellerei gehört eine Rebfläche von 700 Hektaren, zwischen Vallagarina Tal, Brentonico Hochebene, Gresta Tal und Basso Sarca. Die Vielfalt an Mikroklima und Bodenart ermöglicht Weine mit sehr unterschiedlichen organoleptischen Eigenschaften zu erzeugen. 2011 wurde der neue Sitz, mit nachhaltigen Kriterien gebaut, eröffnet.

Wines.

Opened at the end of the ‘50s, the winecellar has 700 hectares of vineyard areas, between the valley of Vallagarina, the Brentonico plateau , the Gresta valley and Basso Sarca. The variety of microclimate and soil types, allows to produce wines with very different organoleptic properties. From 2011 the new location, built with sustainable criteria, is open.

Formaggi di malga.

Lo scopo principale dell’Associazione è la divulgazione delle peculiarità dei Marroni di Castione, delle sue notevoli proprietà e caratteristiche. Sensibilizza alla salvaguardia delle piante secolari e si occupa dell’organizzazione di iniziative di promozione valorizzando così questo favoloso prodotto.

Malga Campo si trova nel cuore del Parco Naturale del Monte Baldo a 1630 m di altitudine. Le nostre mucche si nutrono dell’erba del vasto pascolo a disposizione, con aggiunta di cereali, consentendo di ottenere un ricco latte, che Alessio lavora per ottenerne gustosi formaggi.

Malga Campo befindet sich im Herzen des Naturparks Monte Baldo, auf 1630 m Höhe. Unsere Kühe ernähren sie sich mit dem Grass von der Weide, mit einem Zusatz von Getreide. So erhält man eine reiche Milch, die von Alessio zum schmackhaften Käse bearbeitet wird.

Olio extravergine di oliva biologico Monocultivar Casaliva.

Edificio rurale ottocentesco recentemente ristrutturato, all’interno di un oliveto di 300 piante con polo zootecnico e vista sul Lago di Garda. Qui gli olivi, grazie alle brezze di terra e di lago, originano un monocultivar extravergine biologico dai profumi eleganti ed espressivi.

Das bäuerliche Anwesen (mit Viehaufzucht) aus dem 18. Jh. liegt mit Blick auf den Gardasee inmitten eines Olivenhains mit 300 Olivenbäumen. Die See und Bergwinde des Gardasees prägen den herben, leicht pikanten Duft und die elegante Fruchtigkeit dieses Olivenöls, aus Oliven der Sorte Casaliva.

18th century restored rural building (with cattle breeding) that lies inside a large olive grove with 300 trees, overlooking Lake Garda. The Mediterranean microclimate of the Garda area and its winds benefit the single variety “Casaliva” olive cultivation, giving the produced extra virgin olive oil its characteristic aroma and its elegant flavour, with a touch of light bitterness.

L’Azienda ha una superficie di 22 ettari nel Parco del Baldo coltivati a prato, pascolo, ortaggi e mele. Leonardo lavora il latte delle sue mucche nel caseificio della malga. Tutti questi prodotti devono la loro qualità all’ambiente senza pari in cui questa preziosa materia prima ha origine. L’azienda è certificata bio.

Die Qualität der ganzen Produkte kommt aus dem einzigartigen Umfeld, woher diesen wertvollen Rohstoff kommt: die Sennhütte. Der Betrieb hat das Biozeugnis.
