Un’arena naturale

I

l Garda Trentino affascina per il suo territorio, una vera e propria palestra per diverse ed emozionanti esperienze a stretto contatto con le bellezze naturali del paesaggio che conquistano e regalano momenti indimenticabili.

Un’area geografica che colpisce per quella linea perpendicolare che divide idealmente l’orizzonte lacustre tra la sponda del Monte Baldo e quella delineata dal sentiero della Ponale. Una morfologia che rispecchia tutta la verticalità del Garda Trentino, con pendenze comprese in un dislivello che va da un minimo di 65 m. fino a quota oltre 2.000 m./s.l.m. Gli itinerari, percorribili sia a piedi che in bici, salgono colline e monti a corona del lago, aprendo sempre più l’orizzonte a panorami spettacolari. Il Monte Stivo con 2.059 m. e l’Altissimo con 2.074 m. sono i punti più alti e raggiungibili del Garda Trentino. Si può essere amanti delle

passeggiate o sportivi che si mettono alla prova con percorsi trekking impegnativi. E ancora… Sfidarsi in arrampicate a picco sul lago… Non ha importanza. Il Garda Trentino offre itinerari che incontrano le esigenze di tutti, a seconda della propria preparazione. La verticalità del territorio è ben rappresentata dal progetto Gardatrek con tre itinerari diversi per difficoltà e impegno. Si tratta di tre veri e propri loop da percorrere a tappe che permettono di scegliere tra un’escursione a fondovalle oppure optare per gli altri due itinerari che raggiungono alte quote, richiedendo maggior preparazione per difficoltà e dislivello. Una vera e propria esperienza sensoriale, tra profumi mediterranei dei lecci, degli olivi che pian piano lasciano spazio a una vegetazione alpina e alle distese dei pascoli di alta montagna. E non è tutto: è possibile pernottare nei rifugi in quota, godendo

del magico panorama notturno delle luci sulla sponda settentrionale del lago. La mitezza del clima mediterraneo marca ulteriormente l’unicità del Garda Trentino, destinazione perfetta in ogni periodo dell’anno e l’ambiente ideale per ogni attività outdoor.

Il Garda Trentino è senza alcun dubbio una vera e propria arena a cielo aperto con naturali pareti che ad Arco, Nago, Torbole garantiscono ai climber l’emozione adrenalinica di un’arrampicata sportiva in totale sicurezza. Le 16 falesie dell’Outdoor Park Garda Trentino, infatti, sono attentamente e periodicamente controllate al fine di garantire i migliori standard di sicurezza. Eine natürliche Arena Das Garda Trentino ist ein faszinierendes Gebiet, das unvergessliche Erlebnisse in der Natur mit all ihrer atemberaubenden Schönheit bietet.

Hier treffen steile Bergwände auf herrliche Seelandschaften – auf der einen Seite der Monte Baldo, auf der anderen der Sentiero del Ponale – und präsentieren gewissermaßen auf kleinstem Raum die gesamte Morphologie der Region zwischen 65 m bis auf über 2.000 m. ü.d.M. Sämtliche Wege und Routen durch die Hügel und Berge rund um den See laden zum Wanden oder Radfahren ein und warten mit weiten, nichts weniger als spektakulären Panoramen auf.

Der Monte Stivo mit seinen 2.059 m und der Altissimo mit 2.074 m sind die beiden höchsten und am leichtesten erreichbaren Gipfel des Garda Trentino. Hier findet sich etwas für jeden Geschmack und jede Fähigkeitsstufe – ganz gleich, ob Sie genüssliche Spaziergänge, anspruchsvolle Wanderungen oder abenteuerliche Klettertouren hoch über dem See vorziehen. Das Projekt Gardatrek bietet zudem ausgezeichnete Möglichkeiten zum Erkunden des steilen Geländes: Drei Rundwanderrouten mit unterschiedlichem Schwierigkeitsgrad führen etappenweise am

Talboden entlang oder – für anspruchsvollere Gemüter – hoch hinaus in die Berge. Es ist ein wahres Sinneserlebnis, wenn der mediterrane Duft der Steineichen und Olivenbäume langsam jenem der alpinen Vegetation und der weiten Almwiesen in den Bergen weicht.

Und das ist noch lange nicht alles: Von den vielen Schutzhütten aus genießt man einen geradezu magischen nächtlichen Ausblick hoch über den Lichtern des nördlichen Seeufers. Das milde mediterrane Klima macht das Garda Trentino zu einem besonderen und zu jeder Jahreszeit idealen Ziel für Outdoor-Fans. Das Gebiet ist eine wahre Outdoor-Arena, deren natürliche Steilwände in Arco, Nago und Torbole Sportkletterern einmalige Adrenalinkicks in völliger Sicherheit ermöglichen. Die 16 Wände des Outdoor Park Garda Trentino werden in regelmäßigen Abständen und nach höchsten Sicherheitsstandards sorgfältig geprüft und gewartet.

Ebenso unvergesslich sind Segeltörns auf dem See mit eindrucksvollem Ausblick vom Wasser aus den Berghängen entlang bis hoch hin– auf in den Himmel.

A natural arena The Garda Trentino is a fascinating area, a true adventure playground for all sorts of exciting encounters in close contact with the natural wonders of the landscape, and a place where visitors can enjoy unforgettable experiences. This geographical area is remarkable for the perpendicular line that perfectly divides the Lake’s horizon between the Monte Baldo shore and that marked by the Ponale trail, reflecting the steepness of the local terrain, which ranges in altitude from a minimum of 65 metres above sea level to more than 2,000 metres a.s.l. Tours can be made on foot or by bike, climbing hills and mountains at the head of the Lake that open up spectacular views. of a trekking route or a sheer climb overlooking the Lake: the Garda Trentino area can offer itineraries to meet everyone’s needs according to their level of preparedness. The mountainous nature of the territory is well represented by the Gardatrek project with three different routes graded by difficulty and effort. These are three loops to be completed in stages, allowing you to choose between an excursion in the valley or to opt for the two other high-altitude routes that require greater preparation on account of their difficulty and height difference. These offer a genuine experience for the senses between the fragrant holm oaks and olive trees that slowly give way to Alpine vegetation and high mountain pastures and meadows.

And that’s not all: you can spend the night in a mountain hut, enjoying the magical night-time lights on the north shore of

Lake. The mild Mediterranean climate is a further unique feature of the Garda Trentino, a perfect all year round destination that is ideal for all forms of outdoor activity. The Garda Trentino is undoubtedly a true open-air arena with natural walls at Arco, Nago and Torbole that offer climbers adrenaline-fuelled thrills in total safety. The sixteen crags of the Outdoor Park Garda Trentino are carefully and regularly monitored to ensure the highest safety standards. Another unforgettable experience is that of sailing on Lake Garda, enjoying the view from a different perspective and following the astonishing vertical lines that start from the water’s edge, crossing the earth and seemingly reaching the sky.

l Garda Trentino, nel raggio di pochi chilometri, propone diversi itinerari anche tra borghi medievali, torri, bastioni e castelli che avvicinano alla storia, senza dover rinunciare a panorami e scenari, suggestivi per l’intreccio di natura e cultura. Diversi sono i percorsi escursionistici che ripercorrono le tappe storiche della Grande Guerra, periodo in cui il Garda Trentino era al confine tra Austria, Ungheria e Italia. Oggi tra salite, discese, affascinanti panorami e lungo quella linea che segnò il fronte, si incontrano luoghi di rilevante valenza culturale con trincee, camminamenti e forti a memoria del ruolo che quest’area ricoprì.

La zona di Riva del Garda custodisce infatti ben 7 fortificazioni rivolte l’una verso l’altra e fu proprio tale posizione a determinare la funzione strategica della zona. Presso il porto San Nicolò di Riva del Garda si incontra l’omonimo forte che assurgeva al ruolo di monitoraggio del lago e del passaggio Riva-Torbole. Proseguendo il tratto di sentiero della Pace sul Monte Brione, si raggiungono il Forte Garda, un tempo luogo fondamentale sia per difesa che per attacco e oggi punto panoramico per l’imperdibile veduta dell’Alto Garda, e il Forte Sant’Alessandro

da cui si monitorava la zona di Arco. Nel periodo della Grande Guerra sul Monte Brione erano dislocati molti osservatori e questo fu il motivo per cui la Batteria di Mezzo, fortificazione visitabile dal 2014, fu munita di una galleria per rendere raggiungibili tali postazioni. Sul panoramico sentiero della Ponale si trovano invece i resti dell’omonima Tagliata strutturata su 5 livelli interni alla montagna con cunicoli e trincee che, scavati nella roccia, scendevano verso il lago. Molto ben conservati e visibili sono poi i due forti (inferiore e

superiore) di Nago e salendo da Torbole si ha l’impressione che le due strutture siano ancora lì, come un tempo, a presidiare l’intera area. Altra tappa storica di grande interesse è la “Busa dei Capitani”, raggiungibile sempre da Nago, che deve il suo nome al ritrovamento di due busti appartenenti all’imperatore Francesco Giuseppe e all’arciduca Carlo d’Asburgo.

Certamente la firma riportata sul busto dell’arciduca e sulla cui autenticità non c’è alcun dubbio, rappresenta un dettaglio di grande valore storico.

Auf den Spuren der Geschichte Das Garda Trentino bietet im Umkreis von wenigen Kilometern eine Vielzahl an Routen, auf denen Sie durch mittelalterliche Örtchen, vorbei an Türmen, Wehrmauern und Burgen auf Tuchfühlung mit der Geschichte gehen, einmalige Panoramen genießen und eine wunderbare Verflechtung von Natur und Kultur erleben können. Daneben zeichnen mehrere Wanderrouten historische Etappen des Großen Krieges nach: Damals bildete der nördliche Gardasee noch die Grenze zwischen Österreich-Ungarn und Italien.

Steile Auf- und Abstiege entlang der ehemaligen Kriegsfront eröffnen faszinierende Aussichten und bieten wertvolle Einblicke in Zeitzeugnisse wie Schützen– gräben, Gänge und Festungen. Um Riva del Garda finden sich ganze 7 einander

zugewandte Festungen, die das Gebiet zu einem strategischen Standort machten.

Am Hafen San Nicolò in Riva del Garda befindet sich die gleichnamige Festung, von der aus der See und die Strecke zwischen Riva und Torbole überwacht wurden. Am Friedensweg in Richtung Monte Brione stehen die einst für Verteidigung und Angriff wichtige Festung Garda, die heute ein einmaliger Aussichtspunkt ist, und die Festung Sant’Alessandro, von der aus früher die Gegend um Arco bewacht wurde. Im Ersten Weltkrieg standen am Monte Brione mehrere Beobachtungsposten, die von der seit 2014 für Besichtigungen geöffneten Festung Batteria di Mezzo über Tunnels erreichbar waren. Am Panoramaweg Strada del Ponale finden sich hingegen Überreste von Gängen,

Kammern und Schützengräben, die sich im Inneren des Berges auf 5 Ebenen zum See hinabzogen. Für Besucher zugänglich sind auch die beiden gut sichtbaren Festungen von Nago (obere und untere Festung): Von Torbole kommend hat man den Eindruck, als wachten sie noch heute über das gesamte Gebiet.

Ein weiteres historisch äußerst interessantes Ziel ist die von Nago aus erreichbare „Busa dei Capitani“, die ihren Namen zwei Büsten des Kaisers Franz Josef und des Erzherzogs Karl von Habsburg verdankt. Die Signatur an der Büste des Erzherzogs ist zweifellos echt und geschichtlich wertvoll.

The Footsteps of history Within a radius of just a few kilometres the Garda Trentino region is home to varied itineraries that pass by medieval villages, towers, fortifications and castles that illustrate history while offering wonderful views and scenery that show off the interplay of nature and culture. There are several hiking trails that trace the historical developments of the Great War, during which the Garda Trentino was on the frontline between Austria-Hungary and Italy.

Today the climbs, descents, landscapes and the line that marked the front are major cultural attractions in themselves, with trenches, dugouts and forts to remind visitors of the role this area once had. The area around Riva del Garda contains a total of seven fortifications facing each other and it was precisely this location that determined the area’s strategic significance. The port of San Nicolò at Riva del Garda is the site of the fort of the same name which came to monitor the Lake and the passage from Riva to Torbole. Continuing on the Path of Peace on Mount Brione, we encounter the Garda Fort, once a vital stronghold for both defence and attack, today a vantage point

with unmissable views of the upper reaches of Lake Garda, then the Sant’Alessandro Fort overlooking the area of Arco.

During the Great War, numerous observers were posted on Monte Brione and this is the reason that the Mezzo battery, a fortification opened to the public since 2014, had a gallery to permit access to these positions. The scenic Ponale trail also reveals the remains of the Tagliata del Ponale, a fortification carved into the mountain, with five internal levels featuring tunnels and trenches carved into the rock and descending towards the Lake. Also well preserved and visible are the two forts (upper and lower) of Nago: ascending from Torbole you get the impression that the two structures are still there, watching over the entire area as before. Another historical highlight is the “Busa dei Capitani”, which can also be reached from Nago and which owes its name to the discovery of two busts of the Emperor Franz Joseph and the Habsburg Archduke Charles.

The signature on the Archduke’s bust confirms its authenticity and is a detail of great historical value.

a cucina del Garda Trentino offre un’esperienza gustativa appagante sotto ogni profilo ed è meta ideale per i gourmand più esigenti.

Vacanze con Gusto è il progetto ad hoc che riunisce produttori, cantine, agriturismi, attività commerciali e ristoratori.

Una cucina genuina che nasce dalla qualità della materia prima che racconta il territorio, dal pesce di lago (trota, lavarello, carpione) e d’allevamento, alla carne: tra questi, ecco Sua Maestà la “carne salada”. Prodotto autoctono, si può degustare esclusivamente nel Garda Trentino (certificazione De.Co.) dove ha saputo mantenere intatta l’identità trentina. La storia è antichissima e la conservazione della carne di bovino con il sale nacque dalla necessità di conservarla durante i freddi inverni. La lavorazione ebbe origine nel basso Sarca e arrivò fino al lago di Tenno dove, nel Settecento, due famiglie del luogo

avviarono la produzione e la commercializzazione. Ora l’obiettivo è mantenere la memoria del gusto, tramandandola di famiglia in famiglia, da produttori e ristoratori. La carne salada condita e conservata secondo l’antica ricetta con sale, pepe, aglio, aromi, rosmarino, alloro e ginepro, perde i liquidi e acquista compattezza e gusto rivelando un’esplosione di sapori. La scelta della parte è determinante. Se cucinata cotta, si utilizza la fesa e va tagliata più spessa, scottandola velocemente. La parte più compatta e magra (il magatello) che assorbe meno liquidi, va invece utilizzata per la versione cruda, tagliata sottilissima come un carpaccio. Il suo colore dev’essere scuro esternamente e rosso vivo nella parte interna. Fino a 30 anni fa si consumava solo cotta o cruda, ma nel tempo si è evoluta con nuovi abbinamenti e, pur nella sua semplicità, la versione più autentica e apprezzata è quella

con l’olio extravergine d’oliva del Garda DOP, altro prodotto di altissima qualità la cui coltivazione è la più a Nord del mondo. Nei ristoranti la carne salada è spesso proposta accompagnata dal broccolo di Torbole Presidio Slow Food, o dai fasòi (fagioli borlotti lessati). Non dimentichiamo che il Trentino è terra di grandi vini e spumanti come i Trentodoc, ma le caratteristiche gusto-olfattive sono esaltate dall’abbinamento della carne salada con Teroldego, o Marzemino, o Merlot, o Schiava. La stagionalità è poi fondamentale per gli abbinamenti, i ristoranti dell’Alto Garda propongono la tradizionale degustazione della carne salada con gustosi menu gourmet.

tung. Seine Ursprünge sind uralt –früher bewahrte man Rindfleisch über die langen Wintermonate in Salz auf.

Vom unteren Sarca-Tal gelangte das Wissen um die Zubereitung schließlich hinauf bis zum Tenno See, wo zwei Familien im 18. Jahrhundert mit Produktion und Verkauf begannen. Heute wird das Rezept in Händler- und Gastwirtfamilien von Generation zu Generation weitergereicht. Nach der alten Zubereitungsart mit Salz, Pfeffer, Knoblauch, Gewürzen, Rosmarin, Lorbeer und Wacholder wird dem Fleisch Flüssigkeit entzogen: Es

wird kompakt, nimmt Aromen auf und beschert ein regelrechtes Geschmacksfeuerwerk! Dabei ist die Wahl des Fleisches von grundlegender Bedeutung. Wird es gegart, so verwendet man etwas dicker geschnittene Nuss, die lediglich rasch angebraten wird. Das kompakteste und magerste Stück (die Hinterhachse) nimmt weniger Flüssigkeit auf – sie wird daher für die rohe Variante verwendet und wie ein Carpaccio hauchdünn geschnitten.

Die Farbe muss außen dunkel und innen tiefrot sein. Bis vor etwa 30 Jahren wurde „carne salada“ ausschließlich gegart oder

roh verzehrt, heute aber sind verschiedenste Varianten möglich.

Die beliebteste davon ist und bleibt die einfachste, nämlich jene mit reinem Olivenöl vom Gardasee (Ursprungsbezeichnung DOP): Auch hier handelt es sich um ein Produkt höchster Qualität aus dem nördlichsten Produktionsstandort für Olivenöl weltweit.

In Restaurants wird das Gericht häufig mit Brokkoli aus Torbole (Slow Food) oder „fasòi“ (gekochten Borlotti-Bohnen) serviert. Passend dazu bietet das Trentino eine Auswahl großartiger Weine und

Schaumweine aus dem Trentodoc-Gebiet – allerdings unterstreichen Teroldego, Marzemino, Merlot oder Schiava den Duft und das Aroma des Fleisches wohl am besten. Die Beilagen variieren je nach Jahreszeit, und die Gastbetriebe des nördlichen Gardasees betten das Gericht in eindrucksvolle Gourmet-Menüs.

Discovering time-honoured flavours The cuisine of the Garda Trentino area offers an enjoyable taste experience in every respect, one that will satisfy the most demanding of foodies. Vacanze con Gusto is the name of the ad hoc project that brings together producers, wineries, farm holidays, businesses and restaurants. It offers authentic flavours from quality materials that reflect the local surroundings: from lake fish (trout, whitefish, carp) and farmed fish, to meat which includes the majestic “carne salada�, salted beef, an indigenous product found exclusively in the Garda Trentino (De.Co. certification), where the identity of Trentino is fully preserved. Its history is ancient: the treatment of beef

with salt came from the need to preserve it through cold winters. The technique originated in the lower Sarca Valley and came thence to Lake Tenno where, in the 18th century, two local families began its manufacturing and marketing.

Now the aim is to preserve the memory of the taste, handed down from family to family, producers and restaurateurs.

The carne salada is seasoned and stored according to the ancient recipe with salt, pepper, garlic, herbs, rosemary, bay leaves and juniper: the liquid evaporates to leave a firm, tasty product that offers an explosion of flavours. The choice of the cut of meat is crucial. If cooked, the rump is used, which should be cut

thicker and seared quickly. The leanest, most compact part (the eye of round), which absorbs less liquid, must be used for the raw version, very thinly sliced like carpaccio. It should be dark in colour on the outside while bright red on the inside. Up until thirty years ago it was only eaten cooked or raw, but over time it has evolved into new combinations and, for its very simplicity, the most authentic and popular version is that served with Garda DOP extra-virgin olive oil, another high-quality product and the world’s northernmost in terms of its cultivation. In restaurants carne salada is often accompanied by broccoli from Torbole Presidio Slow Food, or

by fasòi (boiled borlotti beans). Let it not be forgotten that Trentino is home to great still and sparkling wines, such as those of the Trentodoc family: the taste and fragrance of carne salada are however best paired with a Teroldego, a Marzemino, a Merlot or a Schiava.

With seasonality the key to such pairings, the restaurants of the Alto Garda region offer traditional tastings of the dish as part of tasty gourmet menus.
