HOW TO MAKE To make this hot chocolate, simply add the milk, heavy cream, chocolate, and cocoa powder to a microwave-safe bowl or jug. Heat in 30 second intervals, stirring after each one, until melted and smooth, and the mixture is hot. Add the pumpkin, vanilla extract, and spices, and whisk until fully combined. Warm up again if necessary. Pour into mugs or heat-proof glasses, top with whipped cream and grated chocolate, and serve immediately.
NOTE: For best results, I highly recommend using the gram measurements (with a digital scale), rather than the cup measurements.

This dessert recipe used to be one of my favorites, but I hadn't taken the time to blog it. Obviously, with a diet low in oxalates (low ox), I can no longer consume many of these ingredients, including sweet potato and almonds, which are rich in oxalates (anti-nutrients causing me health problems; see my recipes for the word key #lowox for more details). However, I still wanted to introduce you to this recipe which could be adapted to suit different types of food. The sweet potato could for example be replaced by Butternut squash for a nice variation.
These bars are chewy, sweet, tender, with a very satisfying “butterscotch” taste. A beautiful comforting fall dessert!

Ingredients (for about 8 servings):
For the crust:
½ cup (55 g) organic almond flour or powdered organic almonds
½ cup (80 g) organic spelled flour or organic gluten-free all-purpose flour blend (such as La Merveilleuse)
· 3 ½ tsp. tablespoon coconut sugar
2-4 small pinches of sea salt (less than 1/8 tsp, otherwise too salty)
· ¼ tsp. powdered organic cinnamon
3 tsp. a level table of organic coconut oil, melted
· ½ to 1 tsp. teaspoon of water if too dry
For the top layer:
1 ¼ cup (325 g) organic sweet potato mash (about 1 ½ to 2 medium sweet potatoes peeled, cubed, steamed and mashed)
¼ cup (60 mL) maple syrup
5 tsp. organic corn starch, arrowroot or tapioca (I use tapioca)
· Organic spices: ½ tsp. cinnamon + ¼ tsp. ginger + ¼ tsp. nutmeg
· ½ tsp. teaspoon organic vanilla extract
1/8 c. sea salt
· 1 C. 1 tbsp melted coconut oil
Method:
1. Preheat the oven to 350F (175C).
2. Mix the crust ingredients in a bowl, starting with the dry ingredients (flour, sugar, salt, cinnamon), then adding the wet ones (coconut shell, water if necessary). We want to obtain a dough that is firm, firm and not dry or too soft.
3. Spread the crust in a loaf pan at the bottom lined with parchment paper. Bake for 8 to 10 minutes, until the crust is golden, but not "burnt".
4. While the crust cooks, top layer by mixing all the ingredients in a bowl. Pour over the crust.
5. Bake for 40 to 45 minutes, until the bars are golden and slightly firm (they will firm as they cool).
6. Leave to stand for 15 minutes, then gently unmold. Let stand 1 hour before eating (best cold).
7. Enjoy! 😊 The bars are delicious warm or room temperature (taken out of the fridge 15 to 30 minutes before eating).
