lmost four and a half years ago, we held the first ever GABS at The Local Taphouses, our craft beer venues in Melbourne and Sydney, to celebrate the diversity of beer in a unique way. To think that some international brewers now consider it to be one of the best beer festivals in the world is both humbling and incredibly exciting. That hasn’t stopped us from trying to make the GABS experience even better and this year we have lots to get excited about, not least that GABS is heading to Sydney for the first time. Ticket prices are now better value than ever with our new Beer Buddy tickets less than $30 (plus booking fee). So where do you start at GABS? How about grabbing one of our famous tasting paddles or the Coopers Festival Glass and enjoy some of the 300 beers available, including 118 ‘Festival Beers’ made especially for the event by brilliant brewers from Australia, NZ, Japan, Italy and England. There are more brewery stands in the Dan Murphy’s Market Place than ever before with dozens of exciting and fun events scheduled. Make sure you explore the Taste New Zealand area showcasing a range of beers from the best breweries across the ditch. Our food offering takes another step up with more renowned restaurants like Three Blue Ducks and LP Meats (Sydney) and Meat Mother, Uncle and B’Stilla (Melbourne) having food stands. Two education areas will now feature – The Local Taphouse 'Craft Beer College' with brewer panel discussions and masterclasses hosted by Pete Mitcham, and Steel 'Adventures in Craft' with Kirrily Waldhorn, the Beer Diva, focusing on beer and food, as well as fun ‘out there’ and unexpected beer experiences. The new Little Creatures Carnival sees entertainers and circus performers roving the festival hall along with spectacular shows in the Carnival Circle with some performances even matched with Little Creatures beers! Along with a range of fun games to play, the KegStar table tennis ‘Kegaseum’ will see brewers take on beer fans in a round robin competition for bragging rights. The Triple M Dr Dan Bar will showcase 10 different styles of beer selected from The Local Taphouse’s hugely popular annual beer poll. We have also been working on cool tools to help you decide which beers to sample and which beer and food pairings to try. The best place to discover all of these exciting elements will be the 2015 GABS Official Apps. If that’s not enough, we’re again teaming up with some of the best craft beer venues, bottle shops and cellar doors to help continue your beer journey with some fantastic value offers to be redeemed using your GABS Craft Beer Passport.

ENTRY PROCEDURES Melbourne - entry is via the Nicholson Street entrance to the Royal Exhibition Building. Sydney - entry to the Exhibition Hall is via the Bay 8 Locomotive Street entrance in the Australian Technology Park. As this is a licensed event, ensure you can provide photo ID on request. The event organisers also reserve the right to check bags or refuse entry.

TOKENS All drink and food purchases at GABS can only be made using official GABS tokens. Each token is worth $2. Tokens are available for sale from the Token Booths (with cash or card) or from Token Sellers roaming the festival hall (cash only). Please note that surplus tokens are not refundable.

FOOD MARKET GABS OFFICIAL APP The GABS Official App has a stack of information about all the beers at the event and tools to help you choose which beers suit your palate and expectation. There is even a Paddle Planner! The App also suggests great beer and food pairings and contains the full schedule of what’s going on during the festival.

TASTING PADDLES With so many incredible beers on offer, sampling is the most popular pastime at GABS. While 85ml individual tasters are available to purchase for just 1 token ($2), tasting paddles allow you to purchase up to five different tasters at a time. To help bar staff, please mark the beer numbers on the paddle in chronological order with the chalk provided before you reach the bar for service. Only beers available within a given bar section can be purchased at that section so plan ahead to avoid frustration.

COOPERS FESTIVAL GLASS At some point you will certainly find a favourite beer. Rinse your Coopers Festival Glass and order a fill at the main bars or the Dan Murphy Market Place stands. Please hang on to your glass as you will only receive one. Replacement glasses can be purchased from the Merchandise Stalls.

FESTIVAL BEERS One of the unique highlights of GABS is the Festival Beers brewed by leading Australian and international breweries. Brewers can submit any beer they like as long as they’ve never brewed it before. Some choose to brew in a traditional style, perhaps with a twist, while others use exotic ingredients and brewing processes to come up with something highly creative.

Renowned local restaurants feature at the GABS Food Market including Three Blue Ducks, Cornersmith, Veggie Patch, Mary’s and LP Meats in Sydney and Uncle, Milk the Cow, Huxtaburger, Mr Claws, B’Stilla and Meat Mother in Melbourne. Make sure you try some of the suggested beer and food pairings (see page 16).

GAMES There are again plenty of fun games for you to play including table tennis, ten pin bowling, corn-hole, Giant Jenga, and Beer Twister so get involved!

SMOKING Smoking is not permitted anywhere within the festival hall. Smokers are asked to smoke outside the main entrance and to one side. Passouts are available from a GABS security guard inside the main entrance.

DAN MURPHY’S MARKET PLACE The Dan Murphy’s Market Place is where dozens of great breweries (and cideries) showcase their regular range. Many also host excellent events at their stands and you can check out the full schedule in the GABS Official Apps or on signage around the venue.

TASTE NEW ZEALAND This new area of the Market Place ensures you can sample a variety of beers from the best breweries in New Zealand.

CASK ALE BAR A selection of leading Australian craft breweries are putting one of their beers in a traditional cask (as opposed to a keg) and perhaps adding additional or different ingredients. Cask ales result in a gentler level of carbonation, a rounder mouthfeel and often a slightly more complex flavour and aromatic profile.

THE LOCAL TAPHOUSE ‘CRAFT BEER COLLEGE’ WITH PETE MITCHAM Hosted by beer personality, Pete Mitcham (aka Prof Pilsner), and presented by The Local Taphouse, the Craft Beer College features a diverse range of educational seminars Pete Mitcham including the popular ‘Q & Ales’ where a panel of brewers discuss their festival beers. LITTLE CREATURES CARNIVAL Inspired by fellow free-thinking and creative folk, the Little Creatures Carnival is coming to GABS. Popping up in the Little Creatures Carnival Circle will

be mystery carnival acts perfectly matched to Little Creatures beers.

TRIPLE M DR DAN BAR The Triple M Dr Dan Bar will be showcasing 10 different styles of craft beer selected from The Local Taphouse’s hugely popular annual 'beers of the year' poll. The featured breweries include Feral (WA), 4 Pines (NSW), Two Birds (VIC), KAIJU! GABS is proudly part of Melbourne's Good Beer Week (GBW) which celebrates its fifth anniversary in 2015. It has grown from an idea conceived over beers at a Melbourne bar in February 2011 to a festival spanning 250 events across 180 venues that attracts brewers and beer lovers from near and far. Its aim from day one has been to entertain, inspire and educate people about the wonderful world of beer and shine a spotlight on the brewers, venues and individuals that make the colourful contemporary beer scene so exciting. The result has been four years of ever bigger, more creative and more diverse programming, always shot through with a sense of joyous celebration and community that spreads beyond the participating venues in Melbourne and Victoria.

FUN & GAMES There is so much more to GABS than beer so make sure you play some of the fun games around the venue with your friends… or complete strangers! This year the block-stacking, stackGiant Jenga crashing game of Giant Jenga is back and will surely draw crowds. Or strike out at the new twin GABS ten pin bowling lanes. But certainly try Beer Twister, the GABS game that ties you up in knots and get you in a twist. Spin the spinner and make your move. Will it be Saison, Framboise, Brown Ale or Stout? The last person standing wins!

KEGSTAR KEGASEUM Table tennis is back but this year Kegstar wanted to raise the bar. So drop by the Kegaseum for a casual game or enter the fun Brewer vs. Beer Fan round robin competition each session.

As in previous years, GBW has split its events into five ‘streams’ in 2015 to make it easier for attendees to plan their ideal adventure. They are Beer 101, Beer Lover, Beer Geek, Foodie and Good Times. Between them they offer chances for people to enjoy and learn about beer everywhere from Pentridge Prison to Vue de Monde with comedy, live music, warehouse parties and much more on the lineup too. This year the ‘Festival Hub’ moves to the heart of Melbourne to Beer DeLuxe to put good beer in front of an even wider audience. Like the conversation that sparked GBW, the very first GABS – when the A stood for Australian – also took place in February 2011. LET THE GOOD TIMES ROLL

‘Natural conditioning’ or ‘bottle fermenting’ is a traditional brewing technique, in which beers undergo a secondary fermentation after the beer has been bottled or kegged. While there are only a few breweries that still take the time to do this, natural conditioning extends the beer’s shelf life, helps to enhance its flavour and eliminates the need for preservatives or additives. STEP 1 – ADDING THE YEAST Once bottled or kegged, extra yeast is added to begin the natural conditioning process

STEP 2 – CONDITIONING CELLAR The ales are held in cellar conditions for two weeks at ambient temperature while the bottle fermentation takes place.

STEP 4 – THE SEDIMENT Once fermentation process is complete, the yeast falls to the bottom of the bottle or keg leaving fine sediment. When that happens we know the beer is ready to be enjoyed. This is why Coopers’ ales and stouts have a ‘best after’ rather than a ‘best before’ date.

STEP 3 – BOTTLE/ KEG FERMENTING Yeast eats away at the remaining sugars in the beer creating alcohol and CO2. As the CO2 is trapped it naturally carbonates the beer and displaces the remaining oxygen. This maintains the beer’s integrity and removes the need for additives and preservatives.

STEP 5 – ROLLING Coopers encourages people to roll their bottle or agitate the kegs before serving the beer. This helps move the sediment through the beer, enhancing its flavour and giving it that signature, cloudy appearance.

INGREDIENTS OF BEER So what makes beer, beer? Very simply beer is made from four basic ingredients; hops, malt, water and yeast. 1. HOPS Hops, formally known as Humulus Lupulus, are vine-like plants that act as the seasoning (balancing malt sweetness) for beer and deliver bitterness, aroma and flavour. During the annual hop harvest, hop flowers are picked off the vine, dried and then used in the brewing process. The intensity of the bitterness to the beer depends on when the hops are added in the brew cycle and the amount used. Added early they will increase the bitterness but decrease the aroma, added later will have the opposite effect. Little Creatures sources a seasonal range of specialty hops from the US, Victoria, Tasmania and New Zealand to achieve a variety of unique aromatic and bittering characters in its beers. So dedicated to sourcing the freshest, highest quality whole hop cones, Little Creatures set up a customs port at Fremantle Harbour to receive these beauties direct and throw them straight into their beer. To get the most out of these precious hops, Little Creatures installed a hopback, which is like an enormous hop tea bag that elicits delicious flavours and aromas into their beer. Little Creatures and White Rabbit are the only breweries in Australia to have this special piece of equipment… and they make the most of it. Little Creatures also takes yearly pilgrimages to the States to select the best and freshest hops from the northern hemisphere harvest. Check out brewer Dan’s hop pilgrimage tour notes on the right.

2. MALT Malting is the partial germination and kilning of a grain, most commonly barley and in some cases wheat, rye, or other grains. Malt starch is converted into soluble sugar during the brewing process – producing

aqueous malt extract or wort. This wort fuels the fermentation process, giving malt its nickname; “the engine room of beer”. Malt gives different flavour, colour and body to the beer depending on the style of malt used. The length, moisture content and degree of roasting (temperature) determine the colour of a beer. Little Creatures quite often mixes different malts and sources specialty malts to obtain varying degrees of colour and flavour. Malt derived proteins also contribute to the formation of the head when you pour a beer.

3. WATER Water, by volume, is the main ingredient in beer. Little Creatures uses local tap water that then goes through a serious filtration process to strip the water right back. They then add stylised salt additions depending on the beer style they’re using it for; keeping in mind the salt profile can greatly affect the perceived flavour of a beer.

4. YEAST Yeast is a single-celled organism that consumes simple sugars and converts them into alcohol and CO2. This unicellular fungus is the essential ingredient in order for the beer to go through a fermentation process and turn the hopped wort (the hoppy, sugary liquid extracted from the brewing process) into beer. Brewers’ yeast can be roughly segmented into two groups, Saccharomyces cerevisiae, a top fermenting yeast, which works at warmer temperatures creating ales, and Saccharomyces uvarum, a bottom fermenting yeast, which works at lower temperatures, for lager beers. Different types of yeast can also affect the flavour of beer, either by accentuating the existing flavour or by adding spicy, fruity tones.

Ever wondered where the team at Little Creatures source their hops? Back in September, brewer Dan headed off for his annual trip to the USA. This is his story… "Every year we buy some of our hops from the USA. They are grown in the Yakima Valley and Willamette Valley where the climate is ideal for hop growing. There are hundreds of farmers growing hundreds of different varieties of hops. With any farming or raw material production there can be factors that influence the quality of a farmer’s crop. Therefore you have some farmers with sensational hops and some with poor crops... and everything in between. Many brewers around the world descend on the Valleys. In essence, breweries have a hop contract with the supplier, and you let them know when you’re coming to choose your hops. They set up the selection process and you select the best hops you can. There are also lots of breweries that send a selector, however some don’t send anyone and they get what they are given. Little Creatures is all about making the best beer we can, so we try to get the best hops available and that’s why we will always send someone to make that choice. What’s important to remember is that if you are given or you select inferior hops you have to use them until the next season, so you need to be obsessively critical in order to ensure you’ve secured your fair share of gold... greeny yellowish aromatic gold that is."

HOW TO TASTE BEER Whether you are a seasoned beer taster or a novice, these tips from Australian Beer Company’s head brewer Andy Mitchell will help you fake it and make it during GABS. As with any tasting experience, it all comes down to the senses. Look, smell, taste, feel – you can even listen to the bubbles if you wish – or perhaps it’s better to just listen to the brewer.

nce the beer is in a clear glass, give it a O good look. Hold the glass in front of you and pay attention to its colour. Pay attention to its consistency, colour and the head on the beer. Don’t hold the beer to a light, as the colour of the light will interfere with the real look and colour of the beer.

Swirling the beer also helps you see the colour and head retention, or how well the head on the beer stays in one piece – this head also traps some of the aromas for you to taste. The emphasis is on gently. Don’t go splashing everyone around you. That is the best way to lose friends quickly.

Remember that you are trying to experience the beer, not down it like at a party. Swish the beer around in your mouth so all your tastebuds get their turn with it. Don’t guzzle, scull, or drink out of a shoe.

At this point, notice the different flavours of the beer, including sweetness, bitterness and acidity/tartness.

Take a deep sniff of the beer to fill your nose with its aroma. This will give you a basic idea of the smell and the taste before you drink it. Sniff but don’t inhale the beer through your nose. You’re bound to choke and make a scene and no one wants that!
