Assure Food Safety Food and beverage carts can pose safety challenges.

Whether foods are hot or cold, make sure they remain in the temperature safety zone for service.

Cold foods must be maintained at 41°F or lower Hot foods must be maintained at 135°F or higher

Check temperatures every two hours to allow for corrective action

f Maintain safe food temperatures by using a cold plate or a hot box. f Cover food while transporting.

Discard food after 4 hours

f Prevent contamination by using disposable gloves to avoid bare hand contact with ready to eat foods. f Clean and sanitize food contact surfaces and storage containers after every use.
