








































































































Local equitherapy organization shares how horses are helping needs, from physical to spiritual.

SOME HORSES ARE USED FOR SHOW. Others are used for transportation. And then there are those that are used for healing.
That’s the goal of Wings of Hope Equitherapy, a Cleburne-based organization that uses horses to help those with mental, physical or emotional challenges, from autism to PTSD. Wings of Hope recently held its Round-Up for Riders dinner and party on Aug. 4, raising over $160,000 to support its mission.
So how exactly does a horse help a rider? Wings of Hope Development Director Allison Gross shared some examples.
PHYSICAL “The horse’s gait is the most natural simulated movement to a human’s natural gait,” she said. “If someone is born with cerebral palsy and their gait is not what we would consider normal, and they don’t necessarily walk like you and I do, when they get on a horse, the horse’s movement is going to actually simulate the movement that our bodies were intended to do. There’s a lot of physical benefits, especially for those who do have an altered or unnatural gait.”
COGNITIVE Working with horses improves cognitive abilities as well, Gross said. Stroke survivors, for example, can benefit from guiding their horses through trail patterns on a repetitive basis.
“For them to have that repetition cognitively and be able to execute a 10-step trail pattern, and for them to remember that pattern and teach their horse that pattern, and do it in conjunction together, there’s a lot of cognitive benefits to that,” she said.
EMOTIONAL “Being around a horse and seeing the power that they have can truly be life altering, especially when you have someone with a disability — they’re in a wheelchair 24/7, and then they get on a horse, and they’re able to control that horse and partner with that horse,” Gross said. “That’s very empowering.”
SPIRITUAL Gross said founders Margaret Dickens and Patti Pace wanted to incorporate faith when they started the organization in 1996, especially for families of children with disabilities who at the time felt uncomfortable in church, to provide them a place to feel welcome and also help meet their spiritual needs.
Last year, with the help of the Amon G. Carter Foundation and builder AG Builders, Wings of Hope opened Hope Sanctuary — a 400-square-foot space used not just for events and meetings, but also prayer groups.
“We feel blessed to be able to bless others, and the way that we do that is to share the love of Christ and to do that through the partnership of a horse,” Gross said.

BEFORE THE 2017 WOMEN’S MARCH ON WASHINGTON, THERE WAS THE DAY OF THE GIRL MARCH, HOSTED BY GIRLS INC. OF TARRANT COUNTY.
But its purpose is not political. Rather, the event is meant to encourage girls to live out Girls Inc.’s mantra: “Strong, Smart, and Bold.”
“It’s really not a political march,” event co-chair Staci Kirpach said. “This is just to share positive messages and inspire the girls from Girls Inc. We want them to know that we support what they’re doing and encourage them to stay on the right path and follow their dreams.”

recited, followed by a walk through downtown. At press time, Girls Inc. was still working to finalize the route, but the march is meant to start and end at the courthouse. According to Kirpach, the “energy is incredible.”
“When everyone is holding signs and chanting ‘strong, smart and bold,’ and really having that cohesive moment where the girls can see how many people are in their corner, I think it’s a really powerful afternoon,” she said.
The event takes place in recognition of International Day of the Girl on Oct. 11.
The first Day of the Girl March took place in 2013, starting with 400 participants coming from Girls Inc. and the Young Women’s Leadership Academy. The number has since doubled. Last year, the event had 800 participants.
Girls Inc., which celebrated its 40th anniversary last year, offers programs to girls ages 5-18. Programs focus on education and leadership skills, along with drug and alcohol abuse prevention. One of the organization’s newest programs, Eureka!, educates eighth-graders on STEM careers and opportunities. In 2016, the organization served more than 16,000 girls in Tarrant County.
“Girls Inc. does an incredible job sharing that message to these girls, day in and day out,” Kirpach said. “This march gives them opportunity to see a real world application of that.”

What We Liked: The Turks N’ Durks sandwich had original, robust flavors and a generous portion of quality meat.
What We Didn’t: The grab-andgo items were lacking in seasoning.
Our Recommendations: You can’t go wrong with one of the sandwiches or large salads loaded with healthy ingredients.
The hippie vibe at this quaint holein-the-wall pulses off the neon green walls, bright orange seating and eccentric artwork. A massive mural, inspired by the three wise monkeys (see no evil, hear no evil, speak no evil) and created by local artist Jimmy Jenkins, occupies the exterior wall of the building and acts as an identifying marker for restaurant newcomers.
During our midday visit, we were greeted by a laid-back trio that was con-
structing sandwiches behind the counter. The dining area was bustling, and it looked like everyone had either a salad or a sandwich in front of them. We followed suit and ordered the Super Food Kale Salad ($9.50) and the Turks N’ Durks sandwich ($9.50).
The wait was lengthy but well worth
it. Treasures abounded in the Super Food Kale Salad. Salty and sweet, large kale pieces were tossed with toasted pepitas, coconut, Craisins and a light strawberry dressing. My only suggestion would be in how the raw kale is prepared. The salad could have been
significantly improved if the stems had been removed from the kale leaves.
Piled high with several pieces of ovenroasted and thickly sliced deli turkey, the Turks N’ Durks sandwich released complex flavors in the first bite. Baby Swiss, caramelized onion, avocado and tomato each played their parts well, but the star of this sandwich is the sweet, smoky Durkee Sauce, a magical combination of mustard, vinegar and mayonnaise. Served with a side of coleslaw, the Turks N’ Durks is among the best sandwiches I’ve encountered in town. Wanting to experience the convenience of Lettuce Cook’s grab-and-go options, I picked up dinner and a few sides to serve my family at home later that evening.
As I emptied the brown bag containing our dinner, I searched the boxes for reheating instructions and discovered there weren’t any. Using my best judgment, I warmed the Honey-Glazed Carrots ($3), Hatch Chili Mac & Cheese ($7) and Wild Caught Halibut Meals ($25 each).
What we discovered in the take-home sides is that seasoning is minimal. This is likely because the chef is allowing customers to season according to their particular tastes.
After reheating in the microwave, the carrots were rubbery and dry. There was no detection of honey at all. The other side of Hatch Chili Mac & Cheese was slightly watery and lacked in cheese, but the addition of peppers provided a nice kick. Not wanting to dry out the halibut in the rewarming process, I placed a damp paper towel over the dish before microwaving. A small filet of well-seasoned fish rested on a generous portion of sautéed veggies. It was a hit with everyone.
Prep time for dinner was less than 10 minutes, and clean up was a cinch. Options are endless as the meals change daily at Lettuce Cook. If you call ahead, they’ll even bring your order out to the car as you pull up. I can foresee Lettuce Cook being a regular option on days when cooking a healthy dinner isn’t feasible. It also offers full-service catering for any size event.
After more than three decades, Saint-Emilion continues to impress diners with its menu of old-world classics and inventive takes on current trends.

SAINT-EMILION HAS BEEN IN THE ABLE HANDS OF SEVERAL CHEFS THROUGH THE YEARS but has maintained a consistency in its menu and standard of service that continue to earn it accolades and loyalty that stand the test of time. Chef Summer Jones passed the torch to Kobi Perdue in mid2015 and, sadly, I hadn’t had a chance to dine at Saint-Emilion since the kitchen changed hands. With two years to settle into his new role, it was time to see what Chef Perdue’s doing with Fort Worth’s original French darling.
The dining room is just as cozy and elegant as I remember, complete with white
linens and freshly polished stemware — although the tables have recently been refreshed with new cream leather chairs. I don’t recognize several new faces in the dining room or the kitchen, but the service is as polished and coordinated as before.
The menu at Saint-Emilion is now fixed price. Guests can choose one- or twocourse meals ($58.50+) or the standard three-course option ($69.50+). Diners who would prefer just a glass of wine and appetizer are asked to dine on the patio, which is not a bad option considering Saint-Emilion’s wine list and the number of solid and memorable first courses on the menu.
During our visit, we decided to play it safe and started with escargots and foie
gras. Les Escargots à la Bourguignonne are six snails served in a classic porcelain gratin dish with an herby garlic butter and topped with individual puff pastry rounds. Just as I remember, the texture is dense and clam-like with an earthly flavor, but dipping the pastry into the pool of warm butter definitely takes the dish from good to exceptional.
If you are a fan of seared duck liver over mousse or pâté, the Foie Gras de Canard Poëlé won’t disappoint. SaintEmilion’s foie gras presentation changes seasonally, but when we dined, the slices of liver were sautéed with grapes and whole almonds in a Sauternes gastrique sauce flavored with smoked almond butter. The creamy nuttiness of the sauce played well with the sweetness of the grapes, and we loved the foie gras’ crispy sear but melt-in-your-mouth center.
For the main course, the wood-roasted duck and Dover sole are some of my favorites, but for this meal we opted for
a classic steak and a fish selection from the blackboard. The Steak Au Poivre uses a beautifully aged cut of New York strip crusted in peppercorns and served with a rich and silky Cognac and peppercorn sauce. It’s a generous portion of meat served with skinny french fries flavored with garlic and rosemary. It’s a wonderful choice for those who want a more flavorful beef cut than the tenderloin, though we would have preferred our steak cooked with a little more salt.
From the blackboard, we tried Filet of Loup de Mer, a delicate filet of Medi-
terranean seabass served with a lemon butter caper sauce over a bed of buttered farro with baby asparagus. The fish was moist and tender with a crispy skin and not overwhelmed by the capers in the sauce. I wasn’t sure about the farro, but the meaty texture of the grain proved to be an excellent complement to the fish. I was impressed with the preparation of the side vegetables served. Instead of being an afterthought,
the braised carrots, squash and red onion ended up being one of the highlights of the meal.

What We Liked: Classic dishes at Saint-Emilion remain some of our favorites, but the chef keeps the menu fresh and modern with weekly blackboard specials using seasonal ingredients.
I was also pleased to find that one of my all-time favorite desserts, Tuile Aux Mûres, was just as delicious as I remember. A pistachio and coconut lace cookie is formed into a cup, placed over a round of delicate butter cake and filled with a scoop of creamy fromage blanc. Then, mixed berries sautéed in butter and raspberry liquor are poured over the top. The cookie remains light and crispy, while the warm juice from the berries soaks into the cake underneath.
What We Didn’t: The fixed price menu (with service charge included) may appeal to some, but we prefer the flexibility of the a la carte menu and found tipping more confusing. We were also sad to see the lobster soufflés gone from the Thursday night rotation.
Our Recommendations: If you are a first-time guest, the three-course bistro menu is a great introduction to the restaurant at a reasonable price point (with or without wine). It’s available Tuesdays and Wednesdays. If you’ve dined at Saint-Emilion before, the upstairs private dining area is definitely worth trying at least once, but requires parties of 8-14 guests.
The Tuile Aux Mûres forever remains one of the most surprising and unique “must-try” desserts in Fort Worth. If you go to SaintEmilion just for dessert and a glass of Sauternes, I wouldn’t begrudge you, but hopefully you’ll linger over the table with friends enjoying a meal you won’t soon forget.

Egg in Purgatory is an egg baked in tomato sauce with pancetta, red onion and chili flake.
