Valley View Village is an active and vibrant senior living community nestled in the quiet Fairmont Park neighborhood of Des Moines.

Watermelon Berry Salad with Ginger-Lime Dressing

All you need:

2 tbsp Hy-Vee honey

1 tbsp Hy-Vee vegetable oil

½ tsp lime zest

1 tbsp fresh lime juice

¼ tsp grated gingerroot

¼ tsp imitation coconut flavoring

1 (20-oz) container Hy-Vee Short Cuts watermelon, cut into 1-inch cubes

1 (16-oz) container Hy-Vee Short Cuts triple berry blend (can substitute Basket & Bushel berries)

Full Circle Market organic unsweetened coconut flakes, for garnish

Hy-Vee party peanuts, coarsely chopped, for garnish

Fresh mint, for garnish

All you do:

1. For dressing, whisk together honey, oil, lime zest and juice, gingerroot and coconut flavoring until combined.

2. For salad, combine watermelon and berries in a medium bowl. Drizzle with dressing; gently toss to coat. Transfer to serving plates. Garnish with coconut flakes, peanuts and mint. Serve immediately.

The economic development committee recently conducted a survey of committee members to help create a cohesive strategy moving forward. Some interesting themes emerged from the survey data and ensuing discussion. The first major theme that the committee discussed was the need to be an educational hub for folks interested in development on the East, South and North side of Des Moines. To this end, we are working to establish a landing page with a list of resources that will be a value add to our members. Another key takeaway from the survey was the need to provide targeted

learning and development opportunities for our members. This could take many forms including something as extensive as an economic development summit to more concentrated lunch and learns throughout the year. The committee will be working over the next few months to identify what this event(s) may look like. We are excited to take a more strategic look at how we can assist economic development initiatives in our
