Chocolate Avocado Truffles

Raw Vegan Chocolate Avocado Truffles
makes: 12 | time: 15 mins + 2 hours resting | vegan
Ingredients
• 3 ripe avocados
• 1/4 cup de-pitted medjool dates
• 1/4 cup nut butter
• 1/2 cup cacao powder
• 1 tsp vanilla
• 1 tsp sea salt
• 1/4 cup shelled pistachios, finely chopped
• Protein powder (optional)
Method
1. In a food processor, add the avocado flesh along with the dates, nut butter & vanilla.
2. Blitz until smooth before adding the cacao powder, salt & protein powder. Blend until combined.
3. Place into the freezer for 2-3 hour or until firm enough to roll into balls.
4. Once mixture has been divided & rolled into 1 tablespoon sized balls, place the chopped pistachios onto a plate. Roll each ball in the pistachios until coated. Set onto a clean plate & refrigerate until needed.
