This July, Las Vegas, a new gyoza restaurant, hung out its shingle in the gyoza mecca of Fukuoka. Owner Kazuma Kawase, who’s made a point to try gyoza from all over Japan and the world, focuses on freshness. He uses Japanese pork thigh and only wraps the gyoza after you order them. He’s also the owner-chef at the popular bistro Yorgo, so foodies are already making their way to Las Vegas. For ¥50 off, you can sit at the counter and wrap your own gyoza. The refreshing grapefruit and lemon sours, which use fresh juice made daily on site, make for a perfect pairing.
교자 라스베가스
일본에서도 손꼽히는 교자 타운 중 하나인 후쿠오카에 2018년 7월 등장한 교자 전문점. 가게를 열기에 앞서 오너가 직접 후쿠오카의 모든 교자 가게, 그리고 일본과 해외의 교자 가게를 찾아가 여러 가지 교자 를 먹어보며 레시피를 고안해냈다고. 신선한 일본산 돼지 다리살, 양배추, 부추 등에 특제 소스를 넣어 간을 맞춰둔 뒤 주문이 들어오면 교자피로 감싸 모양을 잡는다. 카운터(4석)에서는 직접 교자를 만들 수도 있다고(50엔 할인). 오리지널 사와로 목을 축여가며 따끈따끈한 교자를 맛보자.

OSHIGE SHOKUDO IMAIZUMI
After winning the Ippudo-sponsored World Ramen Grand Prix last year, Oshige Shokudo, a progressive izakaya, opened its own ramen shop this May in Imaizumi. The menu is simple: ramen, kaedama (noodle refills), and rice with umeboshi plums. The soup base is made from Nagasaki flying fish and top-grade kelp from Hokkaido, which is mixed with an original blend of seven dried meats and fishes. This base is placed in a coffee siphon at your seat and then heated and extracted to make the soup—a stunning visual show that smells great, too! No artificial seasonings are used in Oshige’s unique offering, which has garnered the attention of many a ramen fan. The bouncy noodles are made from locally grown ramen wheat, and toppings include a marinated soft-boiled Rao brand egg (from Oita) and Biton brand pork chashu, which has been soaked 48 hours in salted rice malt. The owner’s discerning sense also extends to the stylishly curated Japanese decor.

In 2016 there were 18,000 reported cases of tuberculosis in Japan and it affects not only the elderly but younger generations too. If diagnosed early, it can be cured; undiagnosed, untreated cases, however, can spread and even result in death. The main symptoms are coughing, fever, phlegm, phlegm with blood, chest pain, dullness, night sweats and weight loss. If you have had a cough for over two weeks or have any of the above symptoms, please get checked. Fukuoka City offers free chest X-ray examinations for students at Japanese language schools and their families, and people who entered Japan within the last five years and are yet to have been examined.

Wood sculptor Yuichi Komoda (moqu c0mo) has carved out a new landmark in Itoshima. Resembling North American totem poles, each pole of locally sourced Japanese cedar is named after one of the seven mountains and peaks in Itoshima, and each is dedicated to a god. A new standing bar opened this March right next to Akasaka Station, and with a bright pink neon sign, you can’t miss it! When you first order, the staff will hand you a card with a local subway station name on it, which they will then call out for subsequent orders—so be sure to remember yours! With a menu of small dishes, local sake and Kyushu shochu, Neo Megusta makes for a good first (or second? or third?) stop on a Fukuoka-style pub crawl. For some local flavor, try the bite-sized seared mentaiko or smoked salted mackerel. Opens early, so stop by if you have the afternoon off, you won’t be the only one there.

Not far from the up-and-coming Ropponmatsu Station area in a back alley of small, funky shops sits Coffeeman, which is run by award-winning barista Takaomi Eguchi. The shop, which roasts its own beans, offers four blends and two single origin coffees. When you order, you choose your cup based on the roast level: 3.8 for a lighter blend, or 5.6 for a medium roast, for example. The different levels bring the most out of each kind of bean. The photo above shows their americano which you mix to taste. The shop opens at 8 a.m. and is located next door to a popular bakery, making it a great way to start your day.

HOJOYA FESTIVAL
This seven-day festival has a history of over one thousand years, and gives thanks for the blessings of nature. It’s one of Fukuoka’s big three festivals, and draws over one million visitors every year! Watch religious rituals and stage performances, and explore the one-kilometer path to the shrine, which is filled with 500 stalls offering games, tasty snacks (like takoyaki), fresh ginger and more. From Shinto rituals to stage performances to busy street stalls, Hojoya offers the entire Japanese festival experience!

這個感謝大自然恩惠的七日祭典已持 續了千年以上的歷史，是福岡三大祭 典之一。每年吸引超過一百萬人次旅 客造訪！觀賞宗教儀式和舞台演出， 或者探訪到神社前一公里的路徑，琳 琅滿目的 500 個攤位，包含了各種 遊戲、美味小吃（像是章魚燒） 、和 生薑等。從莊嚴的神社儀式到忙碌的 路邊攤販，在放生會體驗完整的日式 祭典！

하카타를 대표하는 축제 하코자키구 호죠야. 1주일에 걸쳐 본전에서는 여러 의식이 치러지며 경내 에 서는 각 종 행사가 열린다. 만물의 생명을 가엾이 여기고 살생을 경계하며 가을의 결실에 감사 하 는 이 축제의 기원은 10 0 0 년도 더 되었다고. 참배로에는 귀신의 집과 각종 게임, 수확해 바로 출하하는 신선한 생강 등 50 0여 개의 노점이 들어서며 총 100만 명이 방문한다.
