TGI Fridays, the fun, friends and family casual dining restaurant, has opened a new flagship location, which is located in the iconic Dubai Mall.

Subway, one of the world’s largest restaurant brands, in partnership with its master franchisee, Kamal Osman Jamjoom Group (KOJ Group), has announced a new restaurant, which is located in Arjan.

The UAE’s much-loved Arabic eatery, Operation: Falafel, has expanded its footprint into the United Kingdom, opening its first-ever outlet in London, in what has been the brand’s entry into the European market following the launch of its first restaurant in the United States last year.

These are all part of 10 recent restaurant openings, including that run by a Filipina expat who have gone viral at the height of the pandemic’s quarantine period for giving free food to the jobless. (Full story about Feby’s Restaurant and Café on pages 22-23).

ajestic Hotel & Spa Barcelona’s dining philosophy has always been crafted around serving food that provides an authentic experience for travellers. It’s these culinary experiences that create a doorway between exploring the new and making it into the familiar; by tasting food the way locals do throughout the seasons, and to further bridge the gap between visitors and daily Catalan life.

To celebrate the upcoming autumn season, the hotel is introducing new menus inspired by those changes, which comes along with its own produce, flavours and warmth.

Starting October, Majestic Hotel & Spa Barcelona will introduce a new tasting menu every two to three months, aligning the flavours with seasonal offerings for authentic, fresh and sustainable dishes served in their restaurants.

From October until mid-December, guests will be treated to a special mushroom tasting menu with a fun twist – a game designed to test and expand the diner’s knowledge about the different varieties of mushrooms, and by the end of the season, winners will get the chance to participate in raffle draws for a chance to win hotel stays.

The menu will feature elevated gourmet creations fused with distinctive flavours including mushroom’s tapa, Milk cap mushrooms and warm mackerel marinated in mild citrus, chocolate ganache and Paris mushrooms with black trumpet mushroom dust.

For meat lovers, the hunting season in Spain, which runs from December until March 2023, will be reflected in a new special menu based on local meats and truffle, from deer, rabbit and partridge, guests will indulge in a winter feast like no other. Draped in green just in time for Spring, the menu from March until May will be focused on vegetables in a marriage of healthy eating concepts and freshly sourced ingredients from farm to table, ideal for a body and health reset after the cold season binge.

From June until August along with the beach season comes the fish and seafood fiesta with a special seasonal menu, known for its marine life variety and famous fish market, Barcelona’s Mediterranean shores bare some of the best delicacies the sea has to offer, which hotel chefs serve with a special care and genuine service.

The restaurant opening included attendance from Subway’s Chief Executive Officer John Chidsey and President of EMEA Mike Kehoe, as well as KOJ Group’s Chairman and Founder Kamal Jamjoom and CEO Hisham Al Amoudi.

Arjan is a new district within Dubailand, situated on the outskirts of Dubai. The community is bordered by Al Barsha South towards the north.

Guests will be treated to a luxurious evening of live entertainment, exquisite food and beverages, elegant service and personality, the core elements and identity of the stunning skypool restaurant.

Drawing inspiration from the Mediterranean Sea, its coastal areas, and its deep and famous history, along with the warm hospitality and the sharing style of food, diners can expect authentic Mediterranean fare made with the highest quality of fresh ingredients.

Signature dishes include a Seafood Llatter, Bistecca Alla Fiorentina, and Saltbaked Snapper stuffed with lemon and herbs. Still, the chef ’s recommendations are the Steak Tartare, Fruits de Mer, and Corn Fed & Olive Oil Truffle Chicken.

“Although the menu is Mediterranean, there is an extra emphasis on Italian dishes. Most of our dishes are suitable for sharing, another element of the Mediterranean tradition,” says Executive Chef Sydney Hart.

The drinks menu contains cocktails that are specially crafted using unique stories and ingredients that the Mediterranean Sea area is rich in, including the Tonino Lambogroni, the perfected Negroni – aged in the brand’s wooden barrels, and The Amalfi Coast, which takes a twist on the historical Limoncello that is made in the idyllic Amalfi coastal area, adding honey, lemon, and a unique blend of herb smoked bubbles to the homemade Limoncello.

“Our wine list consists of a specially curated selection of Mediterranean fine wines, creating a synergy when paired with our dishes,” adds Chef Hart.

Bibingka is in the air – and it’s not in Manila

The eatery’s name is a bit cliché, even drab if you’re not so kind – but there’s beauty in simplicity, and so “Bibingka and Paratha Cafeteria,” which opened on July 19 this year in Satwa, a workingclass enclave of mostly Filipinos, Indians and Pakistanis, has caught on fast.

UBAI, United Arab Emirates – With the onset of the “ber” months, that aromatic whiff of rice cake – bibingka – on banana leaf being baked atop a clay oven filled with glowing charcoals would soon be in the air, heralding the start of the longest yuletide season in the world.

But t hat ’s in Manila.

Seven thousand kilometers away in Dubai, an enterprising group of overseas Filipino workers (OFWs) thought they’d bring that mouth-watering scent to the city.

Pinoys, after all, grew up with this comfort food back home and it makes them nostalgic about Dawn Masses, the Noche Buena and, of course, their loved ones too, being away from them.

This part of the world is the domain of flatbreads, different varieties of them – the culinary legacy of the once mighty Ottoman Empire, which controlled vast territories from Central Asia to the Middle East and on to North Africa from the 14th century till the early 20th century.

And so, the bibingka found its way in Dubai, all dressed up with cheese and toppings of grated coconut – just like grandma used to make.

Daisy G. Calabia, who used to work as a restaurant manager, said they saw a market demand for an eatery serving not only a particular cuisine but a mix of several ones.

It is open from 10am to midnight and is making lots of home deliveries, which by itself, is almost like a norm in the city, such that people can just make a phone call – or send a Whatsapp message – to the momand-pops store, or a shawarma outlet, at the corner, ask for soda or a roll and chai (tea) and have it delivered at their door in minutes.

Bibingka and Paratha Cafeteria seats eight people and, Calabia said, there were plans to set up tables go al fresco in the winter. The cafeteria also serves drinks, including milk teas. “ Tayong mga Pinoy, bukod sa talagang hinahanap natin ang bibingka, eh mahilig din naman sa paratha. Then yung ibang lahi naman, kumakain din pala sila ng mga kakanin natin. And nakaka-proud ‘pag natitikman nila yung bibingka natin, sinasabi nila na special cake daw po yun,” said Calabia.

(We, Filipinos crave bibingka and also love parathas. The other nationals, surprisingly, also enjoy our delicacies made from glutinous rice and coconut milk. It makes us feel proud when they try our bibingka.

They say it’s a special cake.)

FOODTASTIC UBAI, United Arab Emirates – Here’s a story about how hard work and resolve pay off.

Following years working at restaurants here in a managerial post, a 37-year-old single mom now runs a successful cloud kitchen operation after deciding she’d give up being an employee and finally run her own business.

“Nagsimula ako sa isang order lang para sa isang kabayan na may party sa bahay nila,” recalls Brenda Britania, who hails from Caloocan City in Metro Manila, Philippines. “ Then, yung mga guests nagtanungan kung saan inorder yung food, and then ayun na, eventually kumalat na sa community at social media,” said Britania.

(It all started with just one order for a party.

Then, people at that event inquired about where the food was ordered from. And that’s it. It grew by word of mouth and social media.)

Britania maintains a Facebook page named “Lutong Bahay ni Brenda,” (Brenda’s homecooked meals), where she posts orders and her contact details. The page has over 3,000 followers.

Britania went full swing with her cloud kitchen in 2016, and has now become to be the goto cook among most Filipinos for their party needs – from birthdays to yacht events. Among her customers were the famed Michael Cinco and the award-winning film actor, Michael Deo Macaraig.

Britania also accepts orders for “Kabayan pack meals” from grocery stores for their Filipino customers.

Day s t ar t s at night Working from a small kitchen in a flat in Muraqqabat, a residential district, Britania, who operates on an e-commerce business permit, says her day actually starts at night, during which she lists down ingredients for the meals ordered for the next day, and inform suppliers for deliveries. “ Then, gigising ako sa umaga para magluto – depende yun sa order ng customer. Gusto ko kasi mainit pa yung food pag pinick-up,” Britania said.

(Then, I get up in the morning to cook, depending on what time the food will be picked up. I want the food to still be warm when the customer gets them.)

Orders range from the regular rice-and-viand combo, to spreads in trays like roasted pork belly, palabok, kare-kare, crispy pata and menudo among others, for special occasions.

“Hindi na ako gumagawa ng adobo, kasi alam naman na ng marami kung paano linuluto yun.

Saka hindi ko rin sya ma-perfect. Ginagawa

ko yung mga matagal, matrabaho at maselan gawin,” Britania said.

(I don’t do adobo (meat sauteed in soy sauce and vinegar) because everybody knows how to prepare it. Besides, I have never perfected adobo. I cook food that takes time and skills to prepare.)

Se r e ndipit y Britania’s virtual restaurant has a bit of serendipity to it.

She came to Dubai in 2012 on an employment visa as an assistant manager with a company running a chain of Chinese restaurants. She

(My mother is a chef. She has a stall at the port area, she cooks in seven big cauldrons by herself. My uncle works as a chef at a ship.)

Busy days ahead

Filipina expat runs successful cloud kitchen in Dubai had hoped to find a friend, who has scammed her of P100,000 (approximately AED6,200) for work in the city.

“Hindi ko na sya nakita,” she said. (I wasn’t able find her and gave up searching.)

She then worked at an Arabic restaurant as manager.

It runs in the family Britania, who has a degree in Hotel and Restaurant Management from La Consolacion College – Caloocan, where she graduated in 2008, said cooking runs in the family.

Britania said she is expectng busier days around December where she, as in the past years, would be swamped with orders for the Christmas and New Year holidays.

She does not have a kitchen helper; she doesn’t want one, she said.

“May iba-ibang kaartehan kasi tayo sa pagluluto. Maselan akong magluto. Hindi ko pinapa-hawakan ang sandok ko,” the mother of a 15-year-old girl said.

(We have different idiosyncrasies. I take cooking as something very delicate. I don’t even allow anybody to touch my ladle.)

UBAI, United Arab Emirates: It’s 5am. Time to get up. But unlike two years ago, when she’d be preparing packed meals to be given free to the jobless during the height of the coronavirus pandemic, Feby Cachero Baguisa dela Peña would be preparing meals for her children’s lunch in school – and, there’s something else, a restaurant she now runs.

The restaurant, aptly named Feby’s Restaurant and Café, had been a long time coming. “Nuon pa mang bago magpandemic, we had always been taking our chance to open a restaurant. Matagal na naming itong pinaplano,” dela Peña told Rappler.

“ We will be serving the hotel guests.

We will also be providing room service.

Everything is falling into place,” Dela Peña said.

With the restaurant finally off the ground, dela Peña vowed to continue her good deeds and take it to the next level.

For one, the restaurant, which just recently had a soft opening, is located on the mezzanine of BoonMax Hotel, a mid-level hospitality enterprise also in Muraqqabat, which is expected to go full swing by this year’s fourth quarter tourist peak season.

Second, BoonMax Hotel stands on a long road lined with supermarkets and standalone restaurants, making it easier for Feby’s to have its share of the footfall, precisely because the area is teeming with customers.

Third, and most importantly, is that people, jobless and stranded during the pandemic but have now had a change of fortune, were eager to pay back. “ Very recently, maraming mga taong natulungan naming nuong pandemic, lumalapit sila, ‘Natulungan nyo kami,’ sabi nila. Tapos umoorder sila,” Dela Peña said.

The good deed remains: ‘If they are really low on budget to buy food, we’ll feed them.

“ This is something different. Everything is very authentic,” she said.

More to it, Dela Peña, a graduate of St. Joseph’s College in Quezon City, who hails from Sto. Tomas, Batangas, south of Manila, said they will be serving her hometown’s unique cuisine.

“So, we will be having kalderetang Bantangas or what we call ‘Sinantomas.’

Sisig Batangas and more,” she said.

(Very recently, many of those we had helped during the pandemic are coming back, telling us: ‘ You helped us before.’

Then they place orders.)

Good habits never die Dela Peña said she will continue giving free food.

“Itutuloy naming yun. Sabi ko sa kanila (staff ), ‘Kung may pupunta dito na walang pambili, bigyan nyo. Yung naka-visit visa at walang wala, paka-inin natin kahit panglaman-tiyan habang nag-aapply (ng trabaho),’ ” she said.

(We will still be doing that. I told the staff, ‘If someone comes here and has no money to buy food, give them food. Those who are on visit visa (looking for a job) and really have nothing, let’s feed them.

Just so they don’t go hungry while looking for a job.’ ) Foreigners wanting to work in the UAE need to secure an employment visa. It is illegal to be working without first obtaining proper visa status.

Rais ing s t andar ds Meantime, Dela Peña, who also is the restaurant’s executive chef currently training two cooks, said she will raise the standards of the Filipino dining experience.

“I-raise natin yung quality. Hindi yung pag sinabing Pinoy food eh karinderia ang dating. Turo-turo,” she said.

“Hindi porket maliit ang sweldo, di na kayang kumain ng disente. Gusto ko lahat, kahit magkano sweldo, nakakakain ng may quality nang hindi nagsa-sacrifice ang bulsa. Hindi yung pupunta lang dito pag sweldo. Level up!” she added.

(We will raise the quality. We will move away from the cheap eatery thing that comes to mind when you mention Filipino food. One should be able to have decent food even if his or her salary is not that big. I want everyone to be able to dine regardless of salary, able to dine with quality without sacrificing the budget.)

To further stress her point, dela Peña said she will return the customers’ money if they were not satisfied with the food.

“Once hindi nyo nagustuhan, ibabalik ko ang bayad ninyo dahil alam kong hardearned money ninyo yan. Nanghihinayang ako sa perang ginatos para sa pagkain.

Kailangang masarap, sulit. Yan ang misyon ko,” she said.

(I will give your payment back if you didn’t like the food, because I know it’s your hard-earned money. The food should be delicious so that you get your money’s worth. That’s my mission.)

Bat angas cuis ine Dela Peña, who used to be an office coordinator and hygiene manager at a gelato company, said they will be serving food in clay pots and bamboo ladles. There will also be a hut from where the buffet spread will be for the weekend treats.

The restaurant seats a total of about 100 people. It will also be serving intercontinental meals.

Pande mic The project was derailed over time due to the cost of setting it up and the pandemic itself, which shut down hotels, restaurants, bars, massage parlors and all other related businesses for about three months, in the process causing tens of thousands of people to lose their jobs.

It was also around this time of uncertainty in May 2020 when dela Peña set off to give free food in the Muraqqabat area near her place from the AED500 that her husband, J.P., gave her.

Soon enough, she was photographed by a bystander showing her and her team standing next to plastic lunch containers of adobo and rice, holding a cardboard announcing “Free food for everyone.”

The photo went viral, with major news organizations, including the Associated Press, running her story.

And as her activity caught more attention, supporters started coming in with rice and all, that dela Peña and her team prepared. The food drive was halted after Dubai authorities, while praising dela Peña for her initiative, advised her about city measures on food safety issues.

Feby’s Restaurant and Café employs 12 people who had lost their jobs during the pandemic.

afé Bateel, the homegrown and award-winning restaurant renowned for its exquisite dishes and heartfelt hospitality, has launched its first-ever premium dinner menu in the UAE and KSA.

Indulge in a Scottish salmon au papillote at Café Bateel.

Curated by Bateel International’s Culinary Director, Nicholas Cuadrado, following his extensive sourcing expeditions in the Mediterranean, the menu has been carefully crafted to reflect dining experiences synonymous with Europe, from authentic ingredients to the traditional concept of sharing plates.

“Inspired by Italy’s traditional cicchetti and Spain’s famous tapas, we created an exceptional dinner menu with sharing plates as the key offering. We take pride in the heartfelt hospitality deeply ingrained in our brand and daily operations.

Encouraging our guests to enjoy and share meals with their loved ones is an extension of this belief,” says Chef Nicholas Cuadrado.

A highlight from the sharing plates is the celeriac risotto. The antioxidant and nutrient-filled celeriac is salt-baked with a hearty braised beef cheek and 24-month Parmigiano Reggiano.

Goldfish Sushi & Yakitori introduces home-made crafted mocktails

oldfish Sushi & Yakitori, a Michelin Guide Bib Gourmand recipient by Michelin star Chef Akmal Anuar, has added three home-made crafted mocktails to its beverage menu. The new refreshing, bubbly drinks called Hana, A Ni, and Aperol spritz were created using fragrant ingredients unique in Southeast Asia.
