Forty-six-year-old celebrity Chef Musabbeh Al Kaabi is quite familiar with this narrative.

“At a young age of seven, I would spend hours watching my mother cook,” recalls Al Kaabi, who would later grow up to first become a senior soldier with the UAE Army for seven years till 2000 before actually embarking on his career.

“As I was growing up, I started learning recipes and tips from her,” says Al Kaabi, who would soon learn the ropes and have fun preparing dishes, inviting friends over to sample his creations as cooking became a hobby.

And the hobby turned into a calling, a journey, inspired by his mother, into the culinary world. Chicken Mashbous, Al Kaabi says, became his favorite dish, adding that he learned how to prepare this from his mother.

Women’s place

Multi-awarded

Back in the day, the kitchen was almost solely the domain of women, Al Kaabi recalls. Men would just drop in to check what’s cooking, after catching a whiff of the aroma.

The multi-awarded Al Kaabi’s culinary journey saw him starting out as Commis 3 at a beach hotel back in May 2000. A commis is food and beverage jargon for a novice chef.

“It was not common for men at that time, in Emirati culture, to enter the kitchen and cook,” says Al Kaabi. Cooking, he stressed, “was something women of the house did.”

He gradually rose from the ranks to become Commis 1 at Jumeirah Beach Hotel from June 2006 to March 2008; Sous Chef de Cuisine at Dubai World Trade Center (DWTC) from March 2008 to March 2009, then as Head Chef at Aspen Restaurant in the Kempinski Hotel at Mall of the Emirates from March 2009 to July 2009.

Present day That was 39 years ago. Such set-up back then did not cause a stumbling block for the budding chef, not even a steep learning curve because Al Kaabi was doing what he loves and loving what he does.

“It didn’t deter me,” says Al Kaabi.

“I needed to follow where my heart belonged.”

He added, and quite matter-of-factly at that: “I’m proud that now it’s acceptable for both men and women to pursue a career in the culinary arts. This is a massive change compared to (the days) when I started. The idea of being a chef was a novelty in the past.

“But now there are many culinary academies in the UAE. Food is a legitimate career choice. Being part of this change is something that I am incredibly proud of.”

Al Kaabi started hitting it big in 2004 where he landed on the pages of the Arabic newspaper Shabab Al Khaleej as the first professional Emirati chef.

He was UAE representative to the World Expo 2015 in Milan, a “proud moment,” he said.

Al Kaabi would also become Executive Oriental Chef at Jumeirah Zabeel Saray Hotel –Palm Jumeirah for 10 years from August 2012 to March 2022 before taking on his current job as Group Executive Chef at Neem Tree Restaurant and Lounge – Dubai International Financial Centre (DIFC).

Do Van Quy – restaurateur becomes a celebrity chef

Y

as Plaza Hotels in Abu Dhabi has appointed a new Chef de Cuisine at their renowned foodie’s favorite Asian restaurant in the capital, Jing Asia at Crowne Plaza Yas Island.

Vietnamese national, Do Van Quy will be stepping into the Yas Island property directly from one of the top IHG hotels in Vietnam, the Intercontinental Danang Sun Peninsula Resort, bringing with him over nine years of outstanding culinary experience in the hospitality industry working with four different international hotels and resorts. Chef Quy brings a wealth of talent to the venue at Yas Plaza Hotels to further enhance the Asian culinary offering at the property.

Chef Quy started his professional career in 2013 in Hai Phong City by opening his own restaurant. Here he began to specialize in Pho soup noodles, while also learning some key management skills that landed him several roles with leadership responsibilities in his career ahead.

Later in 2016, to pursue international opportunities with diverse culinary talents, Chef Quy had his first Middle Eastern hospitality experience at an Accor property in Bahrain, Sofitel Zallaq Thalassa Sea & Spa where he worked as a Demi Chef and kickstarted his fine-dining

chef experience.

He steadily rose up the ranks and in 2018 took the position of Chef De Partie at Four Seasons Hotels and Resorts in Bahrain Bay. This is where he began to specialize in hand-pulled noodles, wok, and Peking duck which soon became his expertise.

From 2019 to 2021, Chef Quy had the honor of working with some of the top IHG hotels around the world such as one of the prime tourist destinations in Maldives, the InterContinental Maamunagau Resort.

There, he assisted the executive chef in setting up the culinary department during the pre-opening of the resort.

This secured a well-deserved promotion from Chef de Partie to Senior Chef de Partie within two months of him joining.

From here, it continued to go uphill for him through his impeccable flair in Asian cuisine, along with being a great team player. Henceforth, he was then recruited as a Junior Sous Chef at the InterContinental Hanoi Westlake Hotel & Resort, in the Vietnamese capital. Soon after, he became IHG group’s Sous Chef at InterContinental Danang Sun Peninsula Resort, where he took charge of the main kitchen while excelling in all-day dining at Citron restaurant.

Introducing the Balbacua

O

ne nice thing about Dubai is that being an international expat city, you are always treated to dishes you never thought existed.

Take for instance the Balbacua, a dish popular among Filipinos hailing from central and southern Philippines which is prepared either with beef parts or goat skin, cooked with various spices and black beans for hours.

Various stories abound about the origins of this exotic dish with some culinary

experts suggesting that the word Balbacua was derived from the Spanish “barbacoa” or barbecue – actually a method of cooking that originated in Mexico where lamb or goat is slow roasted for hours in a pit topped with maguey leaves.

Various restaurants in Dubai and Abu Dhabi serve Balbacua, with some

Papillon: Fine dining with a twist of cabaret

The place looks pretty quiet outside. But wait till you get in!

Papillon bursts with provocative performances – as the curtains open – by three ladies in lingerie and fishnet stockings, for instance, doing what would easily pass for a contortionist act on a couch. Or a sultry couple in pyjamas, two males doing the tango, a steaming office scene and… let’s keep it at that lest the spoiler alert sets off.

There’s a storyline for each performance, raunchy if you will, and tickling your fancy.

But there’s a deeper meaning to it, explains Layla Kardan, award-winning singer-songwriter, who launched Papillon late last year. “Whilst it’s entertaining and risqué, the underlying messages are that of female liberation, exploration, passion and the pressures of the rat race,” she said.

There’s a certain epicurean adventure to all this, too.

Your eyes fixed on the dancing bodies, silhouettes and shadows draped in red light, your mind wondering what’s going to happen next – all the while indulging in a creamy truffle mushroom risotto, or lobster linguine, and grass-fed Australian beef tenderloin with tarragon mustard and padron peppers.

The crispy calamari with chorizo and romesco, for starters, also hit the spot.

The much-applauded live show, named Madame Butterfly, was curated by Kardan for Papillon’s second season.

“It’s great for the local ecosystem of the arts (to have) so many dinner and show offerings in the city,” she said, “but very few offer a theatrical experience.”

“Most are just an afterthought in a regular restaurant without the same level of production value we offer -- from the stage and lights, to the caliber of artists and quality of food and drinks offered. We definitely like to pride ourselves on being a unique dinner and show experience in the city. “ Kardan said Papillon dancers were from

all over the world and have “an extremely high caliber, all with their own unique skill.”

Dinner package starts at AED395 per person for a menu created by renowned Chef Vinod Mani.

Curtains open at 8pm for a three-hour live entertainment with unlimited pour that sets the mood.

Papillon, which seats up to 100 guests, is packed on Wednesdays and Fridays.

The crowd, a mix of big boys in suits unwinding after a long day, ladies on a night out and couples on a date. It also has three VIP rooms, with balcony views on the second floor, which can fit up to 12 guests each, approximately.

Party does not end when the curtains close as resident DJ Niara takes the spins, playing the best of the 80’s and 90’s until the early hours.

inner shows are all the rage in Dubai these days, and one such lively venue is the cabaretinspired Papillon, with its otherwise nondescript facade at The Westin Dubai Mina Seyahi Beach Resort & Marina across from Media City.

It’s mystifying to note that there’s a bit of a papillon in us -- the butterfly that flew away to escape the drudgery of life and seek gratifying refuge, no matter how briefly, in the spectacle of la dolce vita.

Porsche Middle East and Africa FZE recently signed a collaboration agreement with DRVN’s management.
