Les travaux ont démarré doucement en juillet 2012 et se sont poursuivis cet été et cet automne. Le centre aquatique de 9 600m 2 comprendra plus de 1 300 m 2 de bassins ainsi qu’une zone surf, une rivière à courant rapide et un espace bien-être avec jaccuzzis, saunas et hammams. L’hôtel et la résidence auront un accès direct au centre aquatique qui fonctionnera à l’année et génèrera selon la commune des dizaines d’emplois directs ! C.T n

With pools of all types and sizes, indoor basins and outdoor basins, water playgrounds and well-being rooms, nothing has been overlooked - this centre will be the best! Courchevel had to have its own water park, and it has decided to aim big, very big. Due to open in 2015, the building housing the water park and a hotel complex will be in the Grandes Combes district, just below Courchevel Moriond. Work began in July 2012 and has continued through this summer and autumn.

The 9600-m2 water park will include more than 1300 m2 of pools, as well as a surf area, fast-flowing river, and a well-being centre with Jaccuzzis, saunas and hamams. The hotel and apartment complex will have direct access to the water park, which will be open all year round, creating dozens of jobs, according to the local council.

Ou quand le chocolat devient un art Le principe est simple et date de plus de 1000 ans. Les amandes des fèves de cacaoyer sont d ’a b o r d s é c h é e s , p u i s t o r r é f i é e s e t b r o y é e s . C e t t e opération donne naissance à une pâte dont on extrait deux éléments : la pâte de cacao et le beurre de cacao. u fil du temps, le chocolat est devenu un véritable bijoux gustatif dont les pâtissiers se disputent des créations toujours plus aromatiques et inventives. Originaire d’Amérique, il était très prisé par les noblesses Maya et Aztèques qui l’associaient à des divinités de la fécondité. Après la colonisation du nouveau monde, son goût subtil envoûte rapidement les cours européennes. Et si les amérindiens le dégustent mélangé à de l’eau et des épices, les européens ont besoin de miel et de sucre pour supporter son amertume. Mais on attribue également certains pouvoirs à la fève de cacao, au-delà de soigner les toux ou les maux de ventre, sa saveur si particulière lui a souvent valu des vertus aphrodisiaques. Aujourd’hui, les scientifiques s’accordent à dire que s’il est mangé régulièrement en quantité modéré, il peut avoir des effets bénéfiques sur la santé, notamment sur le système circulatoire et en tant qu’antidépresseur naturel.

Les grands crus Comme le vin, le cacao comprend diverses variétés et de nombreux crus. Il existe quatre grandes variétés de cacaoyer. : le criolo, le forastero, le trinitario et le nacional. Aujourd’hui, les crus de cacao sont dûment répertoriés et classifiés. Parmi les principaux crus, on trouve le Fernando Po de Guinée équatoriale, le Puerto Cabello et le Chuao du Venezuela, le Mangaro de Madagascar, l’Arriba Summer Superior d’Équateur et Los Ancones de St Domingue (République Dominicaine). En France, l’INAO (Institut national de l’origine et de la qualité) classe les variétés de chocolat selon trois grandes familles : les ‘chocolats d’origine’ dont le cacao provient d’un seul pays, les ‘chocolats de crus’ dont le cacao est issu d’une région géographique spécifique ou d’une plantation unique, et les ‘chocolats grands crus’ dont le cacao a un caractère unique. Enfin, concernant l’ajout de matière grasse végétale autre que du beurre de cacao, si une directive européenne permet d’en faire entrer 5 % dans la composition du chocolat, les dénominations «Chocolat Pur Beurre de Cacao»et «Chocolat Traditionnel» sont réservées aux chocolats fabriqués à partir du seul beurre de cacao. …/…

Histoires de familles L’histoire du chocolat est marquée par la naissance de grandes dynasties comme les suisses Caillier, Suchard, Kahler ou Lindt, le hollandais Van Houten, l’anglais Cadbury ou le français Menier. De nos jours, si la plupart des chocolats industriels privilégient une haute teneur en graisse et en sucre, il est aisé de trouver des chocolats supérieurs (43 % de cacao minimum) en supermarché. Ainsi Robert Linxe, fondateur de la Maison du Chocolat, l’une des chocolateries les plus réputées au monde, avouait dans une interview au magazine l’Express, qu’il appréciait certaines tablettes de chocolat vendus en grande surface (en l’occurrence, la tablette bio équitable à 70% de cacao de la marque française Cemoi). Parmi les grands groupes, des maisons comme Lindt ou Côte d’Or ont également mis sur le marché des tablettes à forte teneur en cacao.

De la sucrerie au joyau

Chez les artisans de la chocolaterie, la création est sans limite. Les orfèvres de la fève sont toujours plus ingénieux, mêlant des grands crus de cacao avec des saveurs fines ou puissantes. Ganaches aux parfums de fenouil, de raisin, ou menthe-poivre vert, mousse de chocolat au lait-caramel, pulpe de framboise, de cassis ou de citron, truffe au chocolat noir ou rocher praliné... la finesse des compositions et des amertumes, le travail incessant des chocolatiers pour obtenir des goûts toujours plus subtils est étourdissants. Ensuite vient la façon d’emballer, deuxième étape très importante de la chocolaterie. Bien disposés et soignés, les chocolats prennent l’allure d’œuvres d’art. Chaque boutique se distingue par son packaging, ses rubans ou ses couleurs. Le précieux carré n’est plus simple sucrerie, mais devient un véritable joyaux que les boutiques affichent en vitrine tels des pierres précieuses ou des colliers de diamants. Le chocolat reprend dès lors l’aura de ses débuts, quand il était réservé à la noblesse et aux riches marchands. Mais, si cet aliment sucré peut parfois atteindre des prix salés, il est désormais accessible à tous. Comme s’il était devenu, au fil du temps, le seul produit de luxe indifférent aux questions de classe. n

The maestros of the cocoa bean Or when chocolate becomes an art

The principle is simple and dates back more than 1000 years. Cocoa bean kernels are first dried, then roasted and ground. This process gives rise to a paste from which two products are extracted: cocoa mass and cocoa butter. Chocolate is a mixture, in varying proportions, of cocoa mass, cocoa butter and a sweetener. Over the centuries, it has become a veritable jewel of the culinary arts, inspiringconfectioners to devise ever more tasty and inventive creations. Originally from America, it was highly prized by Mayan and Aztec nobles, who associated it with the goddesses of fertility. Following the colonisation of the New World, its subtle taste quickly enchanted the courts of Europe. However, in contrast to the Amerindians, who ate it mixed with water and spices, Europeans found it necessary to mix cocoa with honey and sugar to reduce its bitterness. At this time, cocoa beans were attributed certain powers, and not just for alleviating coughs and stomach aches, as its unique taste often led to it being considered an aphrodisiac. Scientists now agree that, eaten in moderation, chocolate can be good for your health, as it has beneficial effects on the circulation and acts as a natural anti-depressant. Grands crus Like wine, cocoa comes in different varieties and there are numerous “crus”. The four main varieties of cocoa tree are Criolo, Forastero, Trinitario and Nacional. Today, cocoa’s crus have been duly catalogued and classified, with the principle ones being Fernando Po from Equatorial Guinea, Puerto Cabello and Chuao from Venezuela, Mangaro from Madagascar, Arriba Summer Superior from Ecuador and Los Ancones from St Domingo (Dominican Republic). France’s National Institute for Origins and Quality (INAO) has classified the different types of chocolate into three large families: “Origin” chocolates are made using cocoa from a single country, “Crus” chocolates are made using cocoa from a specific geographical area or a single plantation, and “Grands Crus” are made from cocoa with a unique character. Although a European directive allows chocolate to include up to 5% vegetable fat in addition to cocoa butter, the denominations “Pure Cocoa Butter Chocolate” and “Traditional Chocolate” can only be used for chocolate made uniquely from cocoa butter. A history of families Since it was introduced to Europe, chocolate has made the fortunes of several great dynasties, including Caillier, Suchard, Kahler and Lindt in Switzerland, Van Houten in the Netherlands, Cadbury in England, and Menier in France. Although most mass-produced chocolate has a high fat and sugar content, it is becoming increasingly easy to find good quality chocolate (minimum 43% cocoa) in supermarkets. Even Robert Linxe, the founder of one of the world’s most renowned chocolateries, Maison du Chocolat, admitted in an interview with the magazine L’Express that he liked some of the chocolate bars sold in supermarkets (the 70% cocoa, freetrade, organic chocolate made by the French company Cemoi). Some of the major chocolate manufacturers, such as Lindt and Côte d’Or, also produce chocolate with high cocoa contents.

From confectionary to art form The creativity of master chocolatiers knows no bounds. These maestros of the cocoa bean have become ever more inventive, mixing “grand cru” cocoa with other delicate or powerful flavours. Fennel, grape, or mint and green pepper ganaches, milk chocolate mousses with caramel, raspberry, blackcurrant or lemon pulp, dark chocolate truffles and praline clusters… the compositions dreamt up by master chocolatiers show incredible finesse and their endless search for ever-more subtle flavours is simply staggering. Then there is the way the chocolates are wrapped, the second essential stage in chocolate making. Skilfully arranged and presented, chocolates become works of art. Every shop has its own distinctive packaging, its own ribbons, its own colours. The precious substance is no longer a mere candy but a veritable jewel that shops display in their windows like precious stones or diamond necklaces. In this form, chocolate regains its original prestige, when it was the preserve of the nobility and rich merchants. But, even though its price can still attain bitter heights, this sweet delight is now available to all. It is as if, over the years, it has become the only luxury product to have broken through the class barrier. n

Celui, évidemment, de James Bond et sa fameuse DB5, parée de gadgets stupéfiants dans le film Goldfinger de 1964 avec Sean Connery dans le rôle de 007. Un modèle qui demeure intimement lié à l’agent secret, à tel point que ni les modèles V8, Vanquish ou DBS-V12, apparues dans des épisodes ultérieurs, ne purent rivaliser avec le fameux gris métallisé et le 6 cylindres en ligne du coupé de sa majesté. Maintes fois détruites sous les yeux des spectateurs ahuris, elle a toujours ressurgi du laboratoire ultra secret du M16 ou d’un garage clandestin comme dans le dernier opus, Skyfall. …/…

La reine du Mans

1.5l Le Mans truste les trois premières places dans sa catégorie. Ce podium marque le début d’une longue aventure entre la marque de Gaydon et la course de la Sarthe. Parmi ses hauts faits d’arme, le modèle DBR1 gagne le championnat du monde des voitures de sport (World Sportscar Championship ou WSC) en 1959, remportant notamment les 1000 km de Nürburgring et Le Mans.

Aston Martin, n’en déplaise à la teinte de la DB5, fait également référence à une couleur, le très distingué British Racing Green ou BRG, une couleur similaire au vert Brunswick, couleur de la Grande-Bretagne lors des courses automobiles internationales jusque dans les années 60. Cette référence à la compétition automobile nous ramène au début de l’histoire de la marque. En effet, le premier modèle fut créée en 1913 par Lionel Martin et Robert Bradford pour une célèbre course de côte : la Aston Clinton dans le Buckinghamshire. Et si leur premier bolide fut conçu sous la marque ‘Bamford & Martin Ltd’, la victoire de Martin en 1914 eu pour conséquence de rebaptiser l’entreprise Aston Martin, conjuguant l’appellation de l’épreuve et le patronyme de son conducteur.

Après de nombreux podiums dans le milieu des années 2000, il faut attendre 2007 et 2008 pour que la DBR9 équipée du célèbre 6.0L V12 remporte à deux reprises les 24 heures du Mans dans la catégorie GT1. Cette appellation GT1 vient de Grand Tourisme et désigne des voitures de compétition élaborées à partir d’un modèle homologué et vendu

mené par David Richards (fondateur de l’écurie Prodrive), John Sinders et deux sociétés koweïtiennes. En dépit de ces multiples changements de propriétaires, la production est principalement demeurée sur le sol Britannique. Seule le modèle Rapide, faute de place dans l’usine de Gaydon, fut transféré à Graz, dans les locaux de Magna Steyr (usine qui assemble également certains modèles de Mercedes et BMW), en Autriche en 2010.

Aston Martin a donc, jusqu’ici, toujours su préserver le savoir-faire de ses chaînes de production anglo-saxonnes. Un prouesse sans doute liée au positionnement ultra luxueux du constructeur: les acheteurs ne pouvant tolérer de voir le châssis de leur bijou (dont les prix se situent entre 120 000 et 250 000 …/… pour la route. Fidèle à son image de marque, Aston Martin a ainsi toujours souhaité que ses clients bénéficient directement des avancées technologiques de sa gamme course. Cependant, la marque s’est également illustrée avec brio dans la catégorie prototype LMP1 (Le Mans Prototype) avec une victoire au championnat le Mans Series de 2009 avec la B09/60 équipée du même moteur 6.0L V12.

OF SPEED AND DREAMS Aston Martin 100 YEARS OLD This year, the famous manufacturer is celebrating its 100th anniversary. An opportune moment to look back on a legendary saga. Aston Martin is a name that unfailingly evokes another legend. Who could it be but James Bond? Kitted out with amazing gadgets, 007s DB5 caught everyone’s imagination in the 1964 film Goldfinger, with Sean Connery in the role of the famous spy. The DB5 became so intrinsically linked with Bond that none of the models that appeared in subsequent films, the V8, Vanquish or DBS-V12, were able to compete with her majesty’s famous metallic grey, six-cylinder coupé.

Destroyed so many times in front of our eyes, it always rose again, roaring out of M16’s ultra-secret laboratory or a clandestine garage, as in the latest opus, Skyfall. Although the DB5 was grey, Aston Martin is also associated with another colour, the very distinguished British Racing Green, or BRG, a similarcolour to the Brunswick green used by Great Britain for international car races until the 1960s.

This reference to motor racing brings us to the brand’s beginnings. Another aspect of the company’s century-long history is the numerous changes of ownership the brand has been through, with take overs by Augusto César Bertelli in 1926, David Brown Limited in 1947 Victor Gauntlett, Pace Petroleum and the Greek shipping family Livanos in 1980, Ford in 1987 and, finally, a consortium led by David Richards (founder of the Prodrive racing team), John Sinders and two Kuwaiti companies in 2007. Despite this succession of owners, most of the company’s production has remained on British soil. The Rapide is the only exception to this rule, as production of this car was transferred to the Magna Steyr works (which also assembles some Mercedes and BMW models) in Graz, Austria, in 2010, due to a lack of space in the Gaydon factory. As a result, Aston Martin has managed to preserve the expertise of its British production staff; a feat that is undoubtedly linked to the company’s ultra-luxury market position: buyers would not tolerate seeing the chassis of their jewel (which comes with a price tag of between 120,000 and 250,000 euros) being built elsewhere in the world. For the engines, it is another story. The famous 6-litre V12 and the 4.7-litre V8 are built at the Ford factory in Cologne. Rumours that production is to be relocated abroad remain, for the moment, just rumours. Nevertheless, it would be quite amusing to see 007 driving a car built on the soil of a great foreign power. But, until such a hypothetical collateral effect of globalisation comes to pass, let us toast a brand that has continued to produce cars that are as beautiful as they are fast. n

: vous comptez bien, cela fait 20 ans. 20 ans que Galerie Bartoux ne cesse de prendre de plus en plus de place dans l’univers artistique mondial avec pas moins de quatorze galeries aujourd’hui, dont deux à Courchevel, dans l’Espace Diamant précisément, la galerie de l’Alpage II qui représente les artistes vivants, classiques ou contemporains, et la galerie de l’Alpage III où s’exposent des collections privées de grands noms tels que Dali, Picasso, Arman, Miro... mais aussi des artistes avant-gardistes.

L’autre grand dada des Bartoux est l’art contemporain. L’objectif ? tout simple : le promouvoir et le pérenniser. Le promouvoir d’abord en offrant la possibilité à tous de (re)découvrir de grandes œuvres comme celles du courant surréaliste avec Dali et consorts, mais aussi en donnant à voir de nouveaux grands maîtres du Pop art et du Street Art. Le pérenniser ensuite en soutenant un certain nombre de jeunes artistes qui voient leurs œuvres retenues dans des collections privées ou publiques, répondant aux attentes des collectivités locales ou aux architectes soucieux d’intégrer l’art comme valeur sociale et patrimoniale dans la paysage urbain.

Galeries au sommet

20 ans plus tard, Courchevel peut s’enorgueillir d’annoncer chaque hiver des expositions personnelles ou collectives sur des peintres ou sculpteurs de notoriété internationale, français ou étrangers. Mieux : Galeries Bartoux est même l’initiateur d’expositions en extérieur depuis 2009… C’est ainsi que des sculptures du grand DALI se sont retrouvé un jour sur les sommets des pistes savoyardes… Merci qui ? n

C’est que le principal souhait des fondateurs est d’atteindre les publics français et étrangers, de les sensibiliser à l’art international et de leur donner accès à de nouvelles valeurs culturelles. Aussi, dans chaque galerie une équipe spécialisée est présente pour renseigner et conseiller les visiteurs et les collectionneurs. Plus qu’un détail quand on sait combien il est important d’être accompagné dans une galerie lorsqu’on en ressent le besoin. 31

Galerie Bartoux Honfleur, Saint-Paul de Vence, Megève, Courchevel, Paris, New York, Cannes and Château de Pommard are all home to a Galerie Bartoux. Today, the Bartoux family - Isabelle, Jean-Guy, Charles, Alexandre and Robert - run 14 galleries in France and the United States. Presentation and anniversary. 1993-2013 : That’s right, 20 years. 20 years during which Galerie Bartoux has grown to occupy an ever-larger place in the international art world. Today, the company has no fewer than 14 galleries, 2 of which are in Courchevel: Galerie de l’Alpage II in the Espace Diamant, which exhibits living, classic and contemporary artists, and Galerie de l’Alpage III, which exhibits private collections of great artists such as Dali, Picasso, Arman and Miro, as well as avant-garde artists. Galleries at the summits The main wish of the gallery’s founders was to introduce a French and international audience to international art and the cultural values associated with this art. Hence, each gallery has a specialist team to provide visitors and collectors with advice and information. This is much more than a minor detail given how important it is in an art gallery to be able to call on expert opinion when needed. The Bartoux’s other great love is contemporary art, for which they have a very simple objective: promote and sustain. First, they promote contemporary art by giving everyone the chance to (re) discover great works, such as those produced by Dali and his surrealist consorts, and by exhibiting the new masters of Pop art and Street Aart. They also sustain contemporary art by supporting a number of young artists, who will see their works going to public and private collections, thereby meeting the expectations of local authorities and architects who have come to realise the social and heritage value of including art in the urban landscape. 20 years after the gallery’s beginnings, Courchevel takes pride in being able to announce individual or collective exhibitions of internationally renowned, French or foreign painters or sculptors. Even better, in 2009 Galeries Bartoux began organising outdoor exhibitions. This is how sculptures by the great DALI came to be seen at the top of Savoie’s ski slopes. Thank you, Galerie Bartoux. n
