Later this year, we will open The Bedford by Martha Stewart, an incredible dining concept inspired by Martha’s own Bedford, New York farmhouse. Situated beside David Burke Prime on the restaurant level in Grand Pequot Tower, The Bedford will serve as the core breakfast and brunch offering on the property while also dishing up Martha’s favorites for lunch and dinner.
This is much more than a restaurant opening; it’s a true partnership with Marquee Brands and Martha Stewart. From the locally sourced ingredients on the menu to the thoughtfully designed restaurant space, we have been working closely with Martha and her team on every detail. In the coming months, we will incorporate first-of-its-kind activations, offering guests the opportunity to experience Martha’s touch throughout the resort.
In addition to The Bedford by Martha Stewart, food lovers can also look forward to the opening of Momosan by Iron Chef Masaharu Morimoto this spring. This unique dining experience will feature his signature ramen and sushi dishes.
We will also continue to improve our accommodations with a full-scale renovation of the Great Cedar Hotel, beginning later this year, creating an authentic boutique hotel experience for our guests. Under the theme of “Legacy Reawakened,” the design will incorporate warm color palettes and woodland
designs inspired by our land in Mashantucket. Over the course of the multi-year renovation, each room will be completely reimagined to feel like a woodland retreat. At the same time, the updated lobby will feature a firepit area that provides a hub for relaxation and connection. For our players, the Poker Room will undergo significant upgrades as it relocates to The Fox Tower. At Foxwoods, gaming is more than a pastime—it’s a carefully curated adventure. The resort has recently undergone a series of transformative renovations that balance luxury, comfort, and excitement.
Bryan Hayes, Senior Vice President of Gaming Operations, describes these updates: “From the Woodlands Casino to Club Newport, every project we’ve undertaken focuses on delivering a seamless, enjoyable experience for our guests. It’s about creating spaces where people feel comfortable and can fully immerse themselves in the fun.”
As Hayes mentions, among the highlights is the Woodlands Casino, which now features a high-limit slot area designed with premium guests in mind. The addition of the Truth bar has further elevated the atmosphere, providing a stylish, inviting spot to grab a drink and unwind between games.
Equally impressive is the Club Newport high-limit table games area, which underwent a complete remodel. This redesign introduced two new salons, allowing for a more intimate and flexible gameplay. Similarly, the Grand Pequot Tower’s updated table games floor now offers fewer but more strategically placed variety of games, making the space more open and guest-friendly.
Pioneering gaming trends are at the heart of Foxwoods’ approach. Instead of prioritizing as many games as possible in a single space, Foxwoods is continually evolving its gaming spaces to be more open and welcoming, creating an environment where both seasoned players and newcomers feel equally at home.
“Guests today want more than just games,” Hayes explains. “Our focus is on introducing innovative gaming options while maintaining the energy and excitement that Foxwoods is known for.”
March is Responsible Gaming Month, and at Foxwoods, responsible gaming is more than just a policy—it's part of the resort’s DNA. Zach Zarnoch, Chief Compliance Officer, shares that the property has always prioritized the well-being of its guests, partnering with the Connecticut Council on Problem Gambling for years.
"Our goal is to make sure that if anyone needs help, they know exactly where to turn," Zarnoch explains. You'll find the council’s toll-free helpline displayed prominently throughout the property, from ATMs to slot machines, ensuring guests have access to support wherever they are.
The resort also offers a self-exclusion program, allowing guests to take a break from gaming if they feel it's in their best interest. “If a guest wants to stay away for a while, we’re here to help make that happen,” says Zarnoch. The team works closely with the Tribal Gaming Commission to enforce these exclusions, creating a safer, more supportive environment for all.
But it’s not just about the resources—it’s about the people behind them. Foxwoods invests in training its staff every year to recognize the signs of gambling-related issues. “We want all our employees to know how to guide guests to the help they need, whether it’s pointing them to the helpline or offering self-exclusion options,” Zarnoch says.
Technology also plays a key role. The team uses advanced data analysis to identify play patterns that might indicate a problem, reaching out to guests directly to ensure they’re still having fun without going overboard.
As Zarnoch puts it, "Gaming should be fun." This philosophy shapes everything Foxwoods does, from its responsible gaming initiatives to the wide variety of entertainment options it offers. "We want people to enjoy themselves, but we also want them to know we're here for them if they need support."
With all these efforts in place, Foxwoods continues to lead the charge in responsible gaming nationwide, constantly exploring new ways to support its guests. "We’re always looking to improve and make sure everyone has a great experience," Zarnoch concludes.
Foxwoods boasts an impressive 3,200 slot machines, offering a blend of classic and modern games. A South Jersey native, Kyle’s love for the culinary arts began early. He studied culinary pastry and restaurant management at a local college before launching his career with various summer jobs at renowned establishments to learn as much as possible. That early experience eventually led him to Beach Plum Farm in Cape May, NJ, where he served as a Sous Chef.
In 2021, Kyle's journey took him to Philadelphia, where he worked at some of the city’s most prestigious restaurants, including Moshulu as Chef de Cuisine, the Four Seasons ® as a Senior Sous Chef and an Italian steakhouse as Executive Chef. He has also staged at several top U.S. restaurants, gaining invaluable knowledge that he has since brought to the big screen – and to the plate.
After winning Hell’s Kitchen™ Season 23, Chef Kyle Timpson sat down with us to share insights into his culinary journey, his time on the show and what’s next for his career.
CONGRATULATIONS ON WINNING HELL'S KITCHEN! HOW DID YOU GET INTO COOKING, AND WHAT INSPIRED YOU TO PURSUE A CAREER IN THIS FIELD?
I’ve always known that cooking was my passion—I never really saw myself doing anything else. Growing up, I was glued to the Food Network ®, constantly inspired by the chefs I watched. I’d go home, try out new recipes, bake cupcakes and bring them to school to share with my classmates. Seeing how much joy it brought to others made me realize early on that cooking is more than just making food—it’s about creating moments of happiness for people. That’s what I love most about it.
WHO ARE SOME OF YOUR BIGGEST CULINARY INFLUENCES?
When I first got started, I was a huge Rachael Ray fan—she definitely inspired me at the beginning. I’ve always admired Martha Stewart, especially after watching her new documentary on Netflix ®. She’s had such a fascinating journey, rising from humble beginnings to becoming an iconic figure. I love how she built her empire, from cooking to entertaining, and now she’s everywhere, even at Walmart ® .
As for chefs, Gordon Ramsay has always been a huge influence. If you’re on a show and don’t respect him, you probably don’t belong there. Ramsay’s legacy in the culinary world is undeniable, and I really look up to him. I also really admire Dominique Crenn—she’s an incredible chef, and her work is truly inspiring.
WAS THERE AN IMPORTANT LESSON THAT YOU FEEL LIKE YOU LEARNED FROM CHEF RAMSAY DURING THE COMPETITION?
One of the most memorable moments for me was during Charity Night when we were making
soufflés. With my baking experience, I took on the responsibility of making them, as I was one of the only ones on my team with that expertise, aside from Joe, who grew up in a bakery with his dad.
Chef Ramsay was right there beside me while I prepared the soufflés, and we discussed oven times and temperatures. With the new kitchen equipment in the red kitchen, we had to adjust to different conditions. Even though the kitchens had the same equipment, the setup and functionality were different, which is something many people don’t realize about restaurants. Chef Ramsay offered helpful advice on how to adjust and perfect the soufflés, and it made me realize just how many different ways there are to approach cooking, even something as simple as an egg. It was a valuable learning moment, and I was grateful for his input.
I’d love to do more TV, Dancing with the Stars ®—I can just picture myself shaking and jiggling all over the dance floor! I’ve mentioned this to a few people who’ve worked on the show, and I’m curious about how to make it happen. At the same time, I still want to cook, create, and make people happy through food. Right now, I’m not exactly sure what that looks like for me; we’ll see what happens.
ANY ADVICE YOU WOULD GIVE TO ASPIRING CHEFS WHO DREAM OF COMPETING ON HELL’S KITCHEN?
For anyone wanting to be a chef, there are two important things I always tell them:
First, work harder than anyone else around you. I was told in high school, while I was in pastry class, that there’s always someone better than you, and that applies to every profession, whether you’re a doctor, plumber or chef. So, you have to work your butt off, learn as much as you can and say yes to every opportunity, whether it's a catering gig or an extra shift.
Second, always work clean. People don’t understand this until they’ve been in the kitchen, but if you stay organized and tidy, your food will turn out better. I’m a stickler for cleanliness—I’m always folding towels and wiping down stations because working in a mess results in bad food.
Lastly, have fun with it. Cooking shouldn’t always be stressful, so try cooking at home, get a summer job and see if you really love it. It’s a lot of work, but it’s totally worth it. And if people criticize you, just keep going.
IF YOU COULD COOK FOR ANYONE IN THE WORLD, WHO WOULD IT BE AND WHY?
I have to say two people: Beyoncé and Rihanna. Hands down, at the same table. I want them to collaborate; how do we not have one already?
