LETTER
FROM
THE
Editor Awesome friends, good music and a great cause. My friend Sherry (pictured) and I recently attended the Journey concert at the Houston Livestock Show and Rodeo. We were able to meet new people, participate in wonderful conversations and get our steps in while doing it. Some of my favorite things to do are networking and paying it forward. Attending the rodeo and knowing that some of the money goes to the youth, in all the surrounding areas, fills my heart with joy. The Austin County Fair will be coming up in October to our county. Please come out, bid on the animals, buy some food and crafts, sponsor the fair and have a great time with some of your besties, all the while knowing that you are supporting the future of our wonderful nation. - Karen Lopez

MOMMY MOMENTS by Amanda Luksha
g n i v Mo ! y a D I always thought buying a home would be exciting. The process of going to look at potential homes, seeing what you do like and do not like, seeing how the kids react and them running around to pick which room would be theirs. Finally finding the house you love is when it gets real. I found the perfect house for me and my kids to grow up in. The layout of the house was ideal, their rooms were perfect for them and the backyard with the playset was perfect. We started the moving process and I realized I needed a few quick ideas to help get them involved and more excited. First was going to our new home and showing them their rooms and planning where their beds would go, their desks, toy boxes, TV and all. After that, we went back to our rental and I started working on them getting to help me pack. My kids are not a fan of cleaning and packing. I figured the easiest way to go about this is to make it easiest and go room by room. So, starting with their rooms was first, I started taping up boxes for them to start putting their stuffed animals in. This helped because they knew they were getting packed and not thrown away because mommy was impatient. They also loved this process of packing because they got to write their names and what was in the box on the box. The next part, the most dreaded part for us all, was cleaning. My kids have slightly turned into hoarders with old color papers they did at school or daycare, and it is very hard for them to get rid of some of it. When I say some of it, I mean ALL OF IT! Having to find a middle ground on what they could keep and what needed to be tossed was stressful at first until I explained to them that we need to make room in the boxes for the stuff they wanted to keep and take to our new house. This keeps them excited.
8
A mommy moment we are not all proud of is being sneaky. By this, I mean as you “help” them clean their rooms and pick up toys, carry around a trash bag to pick up papers and broken toys but also toys we know they never play with. We have to be sneaky about it because otherwise, the kids will flip into meltdown, and then it is all over. We want to keep them excited and not upset. This is a key part of getting rid of clutter though, especially with moving. Now we start the process of moving everything into our new home. Depending on your kids' ages, they like to have an opinion on where things go, especially in their new rooms. We let them have their opinions and unpack the things they want and where they want to go. Because the honest truth is that when they are at school or asleep, we can go in there and change it to look better and they never notice – unless it is their favorite toy or stuffed animals, we do not touch those. I decided on the second day of moving that we should have a little family pizza party in the house, even though there was nowhere to sit yet. We sat on the floor laughing and talking and making plans for the house while we unpacked. Kids do not always enjoy the fact of moving and cleaning and downsizing their things but it is our job to always have them engaged in the process and answer all their questions. They will ask, “why are we moving,” or “why can’t we keep this,” and more. Be honest and sound excited so they feel the same way. Moving with children is a hassle in itself but knowing what you are doing for your and their lives, makes everything that much better.

STOP BULLYING By Toni Dupree Merriam-Webster defines bullying as “abuse and mistreatment of someone vulnerable by someone stronger.” I understand, to some, bullying is mild in comparison to school shootings, workplace violence or even sexual assault for that matter. For these reasons, many more bullying is often dismissed, overlooked or mismanaged. Honestly, it is a precursor to aggressive, violent behavior. According to stopbullying.gov, one in four children who bully will have a criminal record before the age of 30. Bullying is a series of unwanted aggressive behaviors among school-aged children and/or adults. This behavior can involve a real or perceived power imbalance. It is expressed when one person or group can dominate decision-making, or otherwise asserts power in ways that will cause a disadvantage to another person or are not in the best interest of all involved. The behavior is repeated or has the potential to be repeated over time. Both individuals who are bullied and who bully others may have serious long-lasting negative psychological (low self-esteem, depression, anxiety), physical (thinking about suicide, sleep disorders, headaches), and academic (staying focused, attendance) effects. As it relates to bullies, and those people who witness, there is not much research that has been done to understand the effects of it. More research is needed to get a better understanding of the consequences of bullying on the individuals who bully others, and for those who witness the bullying situation. For example, if they witnessed, backed up or even attempted to defend the victim, they may feel anxiety.
20
TYPES OF BULLYING Bullying can be physical, which involves hurting a person’s body or possessions, including hitting, kicking, and pinching. Verbal bullying can be saying, or writing mean things, including teasing, name-calling, inappropriate sexual comments, taunting, and threatening with the intent to cause harm. Social bullying, which can sometimes be referred to as relational bullying, involves hurting someone’s reputation or relationships. This type of bullying includes leaving someone out of the loop on purpose, turning others against the person being bullied, spreading rumors about someone, and embarrassing someone in public. Lastly, cyberbullying is the use of electronic communication to hurt someone, typically by sending messages of an intimidating or threatening nature. WHY DO BULLIES BULLY? Some do it because of having been bullied themselves by parents, older siblings, or by a neighborhood kid. Often lacking empathy, a bully's perception of what happened to them leaves them with a need to pay it forward. Interestingly enough, bullies can be frustrated or envy people who are doing better than them at things. It could be academics, athletics, or professional accomplishments. They will undermine the other person’s skills with acts of aggression to level the playing field, basically to bring the person down to their level.
21
Shame is another reason bullies are aggressive towards others. Possibly because of their low intellectual abilities or the lack of ability to succeed in whatever they try. Their failure can be a direct cause of their frustration. Lastly, gender norms are a common cause for males to bully another person. Females are more apt to talk about their problems and accept any visual emotions, the opposite is usually true for males. It is important to keep in mind that without the outlet of healthy communication and display of emotion, people can revert to aggressive behavior. 21st CENTURY BULLYING What once was a push or shove in the hallway of a school, has evolved to a tactless exchange on social media between strangers. A bully might post embarrassing pictures or videos of his or her victim on the web where large crowds of people can see them. Cyberbullying is a numbers game that gives the bully a larger audience. Because social networks offer a more sophisticated platform, shame tends to be felt much deeper. Sending hurtful messages and inappropriate pictures through a cellphone could be instrumental in the anxiety and depression that come with being bullied. Bullying has become so exacerbated by the internet that it has led to suicide, per stopbullying.gov.
22
WHO’S THE BULLY? Typically, bullies are the outgoing, aggressive, active, and expressive types. They get what they want with brute force or harassment. These bullies reject any rules or regulations and have a need to rebel to achieve a feeling of superiority and security. Other bullies are more reserved and manipulative, and may not want to be recognized as harassers or tormentors. They control by smooth-talking, saying the “right” thing at the “right” time. This bully gets his or her power discreetly, through cunning manipulation and deception. These two types of bullies seem to be quite different but have some behavior that is similar in their focus. They want power over someone and they are willing to abuse to get what they want. WHO’S THE VICTIM? No one is exempt from being a bullies’ target. The victim, more so, for psychological traits than for physical traits. Most victims are shy, sensitive, anxious, or insecure. As it relates to children, they are sometimes chosen due to being overweight or physically small, having a disability, or belonging to a different race or religion. STOP A BULLY The best way to stop a bully is to meet them with calm behavior. Tell them to calmly back off. Keep your responses short, and then walk away. Standing up to a bully redirects the behavior. If you believe you have been bullied, report it.

While assisting with weddings for more than 20 years, and as the owner of A Dream Fulfilled, I have learned a few Dos and Don’ts and the major factors that are needed to plan a great wedding. These things, combined and hiring the perfect wedding planner, are extremely helpful. Some of the most important things you need to know while planning your wedding are: Budget Guest count Venue or location Wedding style Wedding planner Start with tips on picking the wedding venue that best fits your vision. The venue, or location, you decide on usually consumes most of your budget. Keep this in mind while you are planning for your special day.
27
Not sure what all venues are out there? Check out social media. Most venues and vendors update their social media platforms on a regular basis. Past brides post about their experiences – the good, the bad, and the not-sogood – on the venue’s social media. Reviews can be a handy tool while searching for your venue. Check out a handful, then look at their websites to review pricing, along with hotels, Air BnB, VRBO, etc. that are nearby. Narrow down to your top three venues, then call and schedule your tour. See it in person to know if that venue is the one. Does it give you all the feelings of being the one you’ve always dreamed of?
28
Never overlook the value of a wedding planner. A wedding planner can assist you in planning your entire wedding, from start to finish. They keep track of your budget and even help with the setup and breakdown. Most importantly, a wedding planner is someone who will do all the stress for you. Your job is to enjoy the planning process of your wedding. The most informative tip on searching for a wedding planner is by word of mouth. Had a friend that was recently married and bragged about how fantastic their wedding planner was? Get in contact with that planner. On the flip side, if they complained about how bad their wedding planner was, then look in another direction. Word of mouth is beneficial, as it gives you the true experience from someone firsthand.
29
Search out different wedding groups on social media. This will aid you in not only picking your wedding planner but all your wedding needs. Once you’ve done your research on wedding planners, narrow it down. See what all they have to offer. Don’t just look at their rates as some offer more options, are worth the money, and are willing to assure that your day is flawless, compared to others who may not have the experience you want and need. Most importantly, pick someone that you can connect with and relate to. Hire a wedding planner that you can talk to like a friend. They can help ease the stress of the wedding planning process and not just be a business transaction. If you are a type-A personality, you may want to know if there are any checklists or timelines you need to follow. Don’t worry, most wedding planners have this readily available. There are many checklists on the internet, however, so check with your planner to confirm what is needed and when.
30
Key notes to have ready while planning your first meeting with a wedding planner and vendors are: Know the budget you are working with to fulfill your wedding dream, bring a notebook full of your visions and the questions you have. Have an estimated guest count, and any vendors or venues you may have already secured. Have an idea of themes and styles you may want. Dress, cake, and décor are definitely on your mind now, so let them help you figure out what works best for you! Wedding dress? Try them ALL on!!! You may have an idea of what you want, but until you try it on, you won’t know it’s the one. Note to the bride, the dress will let you know which one is THE one. You may get goosebumps, a little emotional, and most of all, you will just know.
31
Ready for cake? There are many different styles, flavors, and trends. Pick something that works for you and your partner. If you aren’t much of a cake person, then pick something you like and will enjoy eating. If you prefer pies or cookies over the cake, then go with a dessert table. Do something that suits you and your style. This will personalize your wedding and be a memory your guests will not soon forget. There are many trends when it comes to décor, colors, etc. Some of these are exactly what they sound like, trends. Your wedding day is special and a reflection of you and your partner. Pinterest or other social media platforms are a wonderful start. A vision board helps too.
32
A couple of nights before the big day, put together a wedding box/tote to hold the following items: Marriage license Rings Blank invitation for photos Day-of shoes Robe/button-up shirt to get ready in Envelopes for final payments/tips for your vendors Deodorant/hygiene products/perfume, etc. Wedding day bag Important DOs and DON’Ts: DO your research on all your vendors. Research social media accounts and don’t just rely on their websites. DO have a realistic budget for all aspects, venue, vendors, etc. DO know if your catering company will be cutting/serving your cake and/or deserts. DO know who is responsible for removing guests’ trash from the tables at the end of the night DO NOT agree to pay any vendors without a signed contract. DO NOT stress!!! This day will be as special as you dreamt it would be. DO NOT allow your family to be responsible for organizing the event.

The effects of the COVID-19 pandemic have been far-reaching. People from all walks of life have had to confront the pandemic and the changes it wrought, and many of those changes could have some staying power. Wedding industry experts note that one of the more noticeable and potentially long-lasting effects of the pandemic has been the rise of microweddings. The 2020 Real Weddings Study (COVID-19 Edition) found that 58 percent of couples who planned to get married in 2020 ended up reducing their guest list by a significant percentage. The average reduction was 41 percent, and some suspect small ceremonies may be the new normal in the years ahead. Microweddings Microweddings are not necessarily a new trend, as couples have always had the option of getting married with only a small number of family and friends in attendance. However, microweddings could be an emerging trend, and cost may have a lot to do with that. The Wedding Planner Institute notes that microweddings cost anywhere from $1,600 to $10,000, though the group notes that most microweddings fall somewhere in the middle of that range. A 2020 survey from TD Ameritrade found that 47 percent of respondents felt that cost of living was the biggest threat to their financial security and long-term investments. Engaged couples confronting the welldocumented post-pandemic increase in cost of living, including an unprecedented rise in housing costs, could see expensive weddings as luxuries they simply canÕt afford. Microweddings could be viewed as a cost-effective way to combat the rising cost of living that still allows couples to share their big day with their closest friends and family members. The WPI has urged wedding planners to offer microwedding packages in an effort to capitalize on this emerging trend. Data from The Wedding Report indicated that the total number of weddings would rise to 2.77 million in 2021, an increase of roughly 650,000 over the yearly average. Even if only a fraction of couples who tie the knot in 2022 opt for a microwedding, a preexisting microwedding package can help wedding planners secure their business. Couples who opt for microweddings may do so to save money, but also to avoid the effort and save the time required to plan more lavish affairs. Such couples may be especially excited to work with wedding planners who can plan their weddings regardless of how small the affair may be. What goes into a microwedding Nothing should be off the table when planning a microwedding. The fewer the people who will be there, the more freedom planners and couples may have. The WPI notes that microweddings afford planners and couples the chance to get personal in ways that may not be possible when organizing larger affairs. Planners can focus on small details and allow couples to make their ceremonies and receptions as personal as they would like. Couples who prefer microweddings tend to emphasize minimalism, so keeping things simple is something to keep in mind when planning microweddings. Microweddings are an emerging trend that make for a realistic option for couples and the people they hire to help them plan their big day.

Factors that can affect the length of your engagement
EACH YEAR, MILLIONS OF COUPLES AROUND THE WORLD TIE THE KNOT. BUT BEFORE COUPLES WALK DOWN THE AISLE, THE PROPOSAL TO GET MARRIED MUST TAKE PLACE. MANY COUPLES MUTUALLY AGREE TO GET ENGAGED, WHILE THE EXPERIENCE MAY BE A SURPRISE FOR OTHERS WHO HAVE THOUGHT ABOUT IT, BUT MAY NOT HAVE BEEN SURE WHEN ONE PARTNER OR ANOTHER WOULD POP THE QUESTION. UPON GETTING ENGAGED, COUPLES MAY PONDER HOW LONG THEIR ENGAGEMENT SHOULD LAST. THERE IS NO PERFECT ANSWER, AND ENGAGEMENT LENGTH TYPICALLY DEPENDS ON PERSONAL PREFERENCE AND THE NEEDS OF THE COUPLE. IN FACT, ACCORDING TO THE KNOT 2017 REAL WEDDINGS STUDY, THE AVERAGE LENGTH OF AN ENGAGEMENT IS 14.5 MONTHS. A NUMBER OF FACTORS AFFECT THE LENGTH OF A COUPLE'S ENGAGEMENT, AND COUPLES SHOULD NOT FEEL AS IF THEY NEED TO HURRY DOWN THE AISLE. FOR EXAMPLE, COUPLES WHO WILL BE FINANCING THEIR OWN WEDDINGS MAY NEED A LONGER ENGAGEMENT THAN THOSE WHOSE PARENTS WILL BE CHIPPING IN. IN SUCH INSTANCES, LONGER ENGAGEMENTS GIVE COUPLES MORE TIME TO SAVE AND MAY HELP THEM ENSURE THEIR WEDDINGS ARE EVERYTHING THEY HOPED FOR. OTHERS MAY PREFER A SHORTER ENGAGEMENT IF THEY ARE FINANCIALLY STABLE AND PREPARED TO TIE THE KNOT. COUPLES IN THEIR LATE 30S MAY FEEL THE TUG OF A BIOLOGICAL CLOCK AND WANT TO ENSURE THERE IS AMPLE TIME TO GET MARRIED AND HAVE CHILDREN. A SHORTER ENGAGEMENT CAN FACILITATE THAT. SOME COUPLES MAY HAVE LITTLE CHOICE IN THE MATTER, AS THE LENGTH OF THEIR ENGAGEMENTS MAY BE DICTATED BY THE AVAILABILITY OF THEIR FAVORITE VENUES. MILITARY DEPLOYMENT, WORK COMMITMENTS, MEDICAL ISSUES, OR TRAVEL RESPONSIBILITIES ALSO MAY AFFECT THE LENGTH OF AN ENGAGEMENT. SOME COUPLES MAY FEEL THAT AN ESPECIALLY LENGTHY ENGAGEMENT DIMINISHES THEIR EXCITEMENT ABOUT GETTING MARRIED. THAT NEW ENGAGEMENT SHINE CAN WEAR OFF AS FAMILY AND FRIENDS WAIT MONTHS OR YEARS FOR THE WEDDING TO TAKE PLACE. COUPLES GENERALLY ARE ADVISED TO STICK WITH WHAT FEELS RIGHT TO THEM REGARDING THE LENGTH OF THEIR ENGAGEMENTS. JUST LIKE ALL ASPECTS OF THE WEDDING, COUPLES CAN WEIGH THE OPINIONS OF OTHERS BUT FOLLOW THROUGH WITH WHAT WORKS BEST FOR THEM.

The sunshine and colorful, fresh, local produce will inspire you to take your edible art to the next level, and the small-town camaraderie will nourish your soul. When the Bellville Farmers Market held its first event back in 2015, it featured only ten vendors. Since then, it has blossomed to include 30-35 vendors who proudly display their lovingly cultivated wares, including fruits, vegetables, fragrant herbs, microgreens, honey, yard eggs, free-range chicken, pork, and grass-fed beef. You will also find delectable jams, jellies, shelled pecans, baked goods, wines, baklava, Indian cuisine, homemade noodles, wines, and more. And even if you’re not much of a cook, you will love browsing the beautiful perennial plants, jewelry, candles, handmade soaps, and beard oils. Since the inventory is seasonal, you will always discover something a little bit different. Vendors happily chat with attendees and provide learning experiences such as demonstrations and cooking tips. You will find food vendors selling treats like kettle corn, turkey legs, BBQ, and jerk chicken, and a variety of merchants offering handcrafted gifts, yard art, custom leather, quilts, and much, much more. Tammy Bond, Executive Director of the Bellville Chamber of Commerce, calls the concurrent events “two great shows in one small town,” and anyone who attends them agrees! She says that “out-of-town visitors express to us that they love the quaintness of Bellville and the variety they find at the shows, as well as the music, family activities, and friendliness of the vendors and locals.” And for locals, the events foster “a sense of community and hospitality” through the chance to socialize while supporting small businesses in the area. THE IMPORTANCE
OF HEALTH AND FITNESS BY MICHAELA COWAN SEALY NUTRITION
43
WHAT IS THE IMPORTANCE OF HEALTH AND FITNESS? LET'S BEGIN BY BREAKING THOSE TWO WORDS DOWN AS DEFINED BY THE MERRIAM-WEBSTER DICTIONARY: HEALTH, “THE CONDITION OF BEING SOUND IN BODY, MIND, OR SPIRIT,” AND FITNESS, “THE QUALITY OR STATE OF BEING FIT.” ACCORDING TO DATA FROM THE CENTERS FOR DISEASE CONTROL AND PREVENTION ON USAFACTS.ORG, NEARLY 32% OF AMERICANS QUALIFIED AS OBESE IN 2020. OBESITY IS DEFINED BY MW AS “A CONDITION CHARACTERIZED BY THE EXCESSIVE ACCUMULATION AND STORAGE OF FAT IN THE BODY.” BEHAVIORS AND GENETICS ARE MAJOR FACTORS CAUSING AND/OR LEADING UP TO OBESITY. OBESITY IS THE LEADING CAUSE OF DEATH IN THE UNITED STATES. IT PLAYS A MAJOR ROLE IN HEALTH CONDITIONS SUCH AS HEART DISEASE, DIABETES, STROKE, AND VARIOUS CANCERS. AS YOU BECOME HEALTH-CONSCIOUS, IT IS IMPORTANT TO INCLUDE REGULAR HEALTHY EATING AND PHYSICAL ACTIVITY. HEALTHY EATING BEGINS WITH BALANCING THE AMOUNT OF CALORIES ONE CONSUMES FROM FOOD AND DRINKS, WITH THE AMOUNT OF CALORIES THE BODY NEEDS FOR PHYSICAL ACTIVITY. THIS HELPS TO PREVENT EXCESS WEIGHT GAIN.
44
IT IS IMPORTANT TO CONTACT YOUR LOCAL HEALTH PROVIDER, DOCTOR, OR SPECIALIZED NUTRITIONIST WHEN DETERMINING HOW MANY CALORIES YOU SHOULD CONSUME EACH DAY. THROUGH THE INFORMATION PROVIDED IN THESE CONSULTATIONS, A DETERMINATION CAN BE MADE REGARDING HOW MANY CALORIES SHOULD BE CONSUMED TO MAINTAIN A HEALTHY WEIGHT OR WHAT CALORIE DEFICIT YOU SHOULD BE AT TO LOSE WEIGHT. WHY FITNESS? WHEN PAIRED WITH A HEALTHY, BALANCED NUTRITION, FITNESS IS A GREAT WAY TO MAINTAIN NOT ONLY PHYSICAL HEALTH BUT MENTAL HEALTH AS WELL. IN SHORT, FITNESS ASSISTS WITH WEIGHT MANAGEMENT IN ADDITION TO IMPROVING BLOOD FLOW AND PRODUCTION OF HAPPY BRAIN STIMULATION, KNOWN AS ENDORPHINS. AS YOU BEGIN YOUR HEALTH AND FITNESS JOURNEY, CONSISTENCY IS KEY. THERE ARE SEVERAL WAYS TO STAY CONSISTENT INCLUDING A WORKOUT PARTNER, ACCOUNTABILITY PARTNER/GROUP, OR WORK WITH A TRAINER. WHILE THESE FACTORS HELP PROMOTE CONSISTENCY, THE PRIMARY WAY TO STAY CONSISTENT IS TO MAKE IT FUN AND LOVE WHAT YOU ARE DOING. FITNESS DOES NOT HAVE TO BE A DREADFUL ACTION THAT YOU FORCE YOURSELF TO DO. EXERCISE CAN COME IN DIFFERENT SHAPES AND FORMS SUCH AS WALKING YOUR DOG, SWIMMING, HIKING, BIKING, AND SO ON. ANY FORM OF ACTIVITY FOR MORE THAN 30 MINUTES IS A GREAT START TO A SUCCESSFUL HEALTH AND FITNESS JOURNEY. TO SUMMARIZE, HEALTH AND FITNESS ARE CRITICAL TO REDUCING OBESITY AND OTHER HEALTH DISEASES, AS WELL AS IMPROVING MENTAL HEALTH AND OVERALL WELL-BEING.

When we’re scared, a hug can work wonders. And when a woman is diagnosed with breast cancer, she may feel the most fear she’s ever experienced. The Blessing Box Project sends what many recipients describe as “a supportive hug” in the form of a box of necessities and goodies. “I can’t cure cancer, but I can cure the fear of cancer with a box,” said Dawn Compton of Bellville, the “accidental” founder of The Blessing Box Project. Dawn and the “Pink Tribe” of breast cancer survivors, doctors, nurses and a whole lot of people who just care have packed and shipped more than 6,700 boxes from Austin County to women around the world who are recovering from or going through breast cancer treatment. Each box comes with a “drain shirt,” which holds the post-mastectomy drains comfortably. It also includes a handmade pillow specially designed for comfort after mastectomy surgery. Another staple is a poster-sized card of encouragement that many women display prominently to power through the pain and fear that comes with a breast cancer diagnosis and the subsequent treatment. Dawn and the tribe also pack supportive trinkets and remedies they’ve found helpful as breast cancer survivors. “(The mastectomy pillow) gently hugs my body everytime and I can't imagine sleeping without it because it's perfect in protecting my chest as I lay in bed, kind of like a gentle hug,” said Dahlia Bradshaw.

People reach out from around the world to either request a box for themselves or to have one sent to a woman they know. Thanks to a continual flow of donations of supplies, the boxes cost nothing to recipients and gifters. “I live all (the way) in Barbados and I received a box. It came just in time for my operation. When I spoke to Dawn Compton I did not believe she would actually send me something because I was so far away. When my box came and I opened it I felt so loved I cried,” said Candy Gordon. Dawn keeps a list of women who have received or will receive a box. At the time of publication, the list had surpassed 7,200 names. The women proudly identify themselves with their recipient number on The Blessing Box Project Facebook Group. “These are not boxes on a shelf. These are named people I have personally had contact with through email or online,” Dawn explained. The Blessing Box Project is not a business either. It is not even a nonprofit. It is simply a passion born out of God’s goodness, Dawn explains. In 2018 at age 52, Dawn was diagnosed with breast cancer. “Your world changes. It takes your breath away,” she says. Your life becomes about the next doctor's appointment. To cope, Dawn started knitting hats for other women. Doing something for someone else helps take your mind off of yourself and your fear, she said.

Facing a double mastectomy, Dawn Googled, “What do you need for a double mastectomy?” and found the drain shirt and the mastectomy pillow. She made them for herself. Because they’d provided so much support to herself, she sent a pillow and a shirt to a friend she’d made on a Facebook Group for women fighting breast cancer. That friend shared “Thank you for my box of blessings” in the group and The Blessing Box Project was officially conceived. Dawn started receiving messages from other women requesting a box for themselves or a woman they knew who could use the support. Knitting hats turned into sewing pillows and shirts and packing and shipping boxes. From there, the support for The Blessing Box Project grew. The Sew-Ins hosted events multiple times a month to construct the drain shirts and pillows but it only started when a friend saw Dawn at the post office with the sticky notes, address labels and 20 boxes. Ten minutes later, the Nelsonville Church was booked and the first Sew-In was held shortly after. Dawn will tell you over and over that this isn’t her vision. This is Jesus’ doing. “When I was diagnosed, I was fussing at Jesus saying, ‘Cancer is your choice, but I will be strong and do this. I didn’t choose this so you take me through it.’” Dawn has many stories of Jesus providing while the demand for the boxes continued to grow. For instance, in March 2020, as the pandemic was about to bear down on everyone, Dawn received a call from a food pantry asking if The Blessing Box Project wanted a donation of around 10 bolts of fabric. About two weeks later, the same food pantry called and said they had received four pallets of fabric for The Blessing Box Project.
52
Around this same time, fabric was being bought up to make the masks we all now needed. Dawn said this generous donation allowed The Blessing Box Project to make mastectomy pillows despite fabric shortages through the pandemic. They just recently, in 2022, used the last of it. Another woman in Mineral Wells, Texas, donated (30) 13-gallon bags of her mother’s fabric to honor her after she passed away fighting breast cancer. A local woman also donated her mother’s fabric. “My mother was a seamstress. When she passed away I had lots of fabric to donate. The Blessing Box was one of six organizations to receive fabric and supply donations. I know my mother would be proud of the joy that these recipients receive when they open their box,” said Becky Irish, whose mother lived in Bellville and was raised in Sealy. As a way to pay it forward, Dawn asks if recipients or senders are able to donate a small amount towards postage. Some can afford to donate and some can’t but everyone who asks receives a box. There have been times when Dawn was creating shipping labels online and charging the $13 shipping for 100 boxes to her own credit card and donations came in covering the cost. “That’s provision,” she says. It’s not only about the supplies. It takes an army, or in this case, a “Pink Tribe,” to sew shirts and pillows, pack and label boxes and deliver them to the post office.
53
Sew-Ins are hosted at least once a month. Men, women, children, survivors and supporters join in to create the pillows and drain shirts and pack the boxes. Usually, 20 to 30 people show up from 8:30 a.m. to about 12:30 p.m. to pitch in for women they do not know and most likely will never meet. Even Dawn’s nurse navigator, her surgeon and her surgeon’s daughter come to Sew-Ins, as do other nurses and doctors. “I am truly blessed to be a part of this wonderful project that Dawn has put her whole heart into,” said Sharon Stanford, a Blessing Box Project volunteer. “I will continue stuffing the pillows and giving them a big hug once I have sewn them to be sent out in The Blessing Box and hope each recipient feels the love and hug.” Dawn says The Blessing Box Project is rooted in kindness. “Just showing kindness is a super power and it makes Jesus happy. It makes Him happy that we’re doing what we’re doing. The stuff, the people, the places all come because he is happy.” Jesus blesses every box and (the recipients) can feel it,” Dawn said. The “Pink Tribe” is continually growing through those that offer donations of supplies, money, time or support of any kind. To join the “Pink Tribe” all you have to do is help in some way. PERFECT PAIRINGS FOR A WINE AND FOOD PARTY BY ROXANNE AVERY
Chic charcuterie boards are super trendy and make throwing an impromptu party easy. Add a bottle or two of wine and you’re set! Or plan an entire elegant meal paired with perfect wines. Your guests are sure to give you lots of compliments. Start by building a cheese board to serve appetizers. Salty, hard cheeses pair well with wine as well as soft cheeses. Select three to four different types of cheese and add interest by cutting your cheese into different sizes and shapes such as wedges, circles, slices, and cubes. Choose cheeses of different textures including hard, medium, and soft. Include cheese from different sources such as cows, sheep, goats, or vegan sources. Use a variety of flavors including smoked cheeses, cheese coated in herbs, or drizzled with truffle oil.

Remember to focus on colors and combinations and make selections that will be pleasing to your guests. Pair orange and red items like fruit and meat together. Then group yellow and green hues together such as nuts, olives, pickles, and dips. The Best Wine The best wine for your party is the one you like best but provide several options for guests to choose from. Serving a flight of wines is always a fun adventure for guests as they sample wine and food. Here’s a list of perfect wines to use: Champagne Chardonnay Moscato Sauvignon Blanc Reisling Provence Rose Pinot Noir Cabernet Sauvignon Malbec Aged Port
Bold Red Wine and Cheese Cabernet Sauvignon, Zinfandel, and Syrah pair perfectly with equally intense cheeses. Put them with a cheese that’s firm and a little salty. Enjoy your cheese in bite-sized pieces and serve over grilled bread. Cabernet Sauvignon pairs well with aged cheddars such as bandage-wrapped cheddar as well as peppery cheeses. Taste the tobacco notes in Shiraz with a smokey cheese such as Gouda. Try a fruity Garnacha wine with a Spanish manchego. Light Red Wine and Cheese Pinot Noir and Beaujolais match well with lightly flavored rind cheeses and mediumfirm, nutty cheeses. Gruyere is a great example of a nutty cheese and Taleggio is a soft, not overly intense washed-rind cheese. For a softer style, try a soft-ripened cheese like Brie or Camembert. Try a Sauvignon Blanc with Goat Cheese, Prosecco with Asiago, Riesling with Fondue, and Chardonnay with triple cream cheese.

Pair Wine with the Main Course Flavor The rule of thumb is to match the wine to the most prominent element of your dish. This could be the seasonings, sauce, or the main ingredient. Most wine connoisseurs recommend pairing wine with the sauce instead of the meat. For example, creamy grilled chicken in a lemon sauce pairs well with white wine while chicken in a sauce with mushrooms with an earthier, richer flavor pairs better with red wine. 6 Flavor Profiles to Consider When Pairing Wine To create awesome wine pairing combinations, mix and match from the list of the six main flavor profiles below. For example, try a bitter, tannic wine with sweet food or to cut through fatty dishes. Acidic Fatty Bitter Salty Sweet Alcohol Remember, red wines have more bitterness; white and Rosé wines have more acidity and sweet wines have mostly sweet notes. Methods of Wine Pairing The two methods of pairing wine and food are: 1. Congruent when you pair two similar flavors together that amplify each other and create a good balance – like Chardonnay with creamy mac and cheese. 2. Contrasting (or complementary pairing) when one flavor cuts through and balances out the richness of the other. Mac and cheese can work great with Chardonnay for an overall creamy, rich experience, but mac and cheese can also go great with a sharper Pinot Grigio.

10 Good Wine Pairings With so many types of wine, it’s not easy to remember what goes with what. Remember to pair red wines with red meats and fatty, hearty dishes. White wines are best with lighter flavors, perfect for fish and poultry. Here’s a list of great pairings: 1.
Chardonnay + Fish: Dry, medium-bodied Chardonnay pairs great with light meats like fish and other seafood in flavorful sauces.
2.
Cabernet + Red Meat: Remember, a rich wine needs a rich dish. That’s why Cabernet and red meat pair so well together.
3. Pinot Noir + Earthy Flavors: Pair a deep Pinot Noir with earthy, savory flavors like mushroom dishes or hearty pizzas. 4. Pinot Grigio + Seafood: Pinot Grigio and light seafood dishes work perfectly together because of their light, delicate flavors. 5.
Sauvignon Blanc + Tart Flavors: Sip a Sauvignon Blanc and pair it with a tart dressing or sauce for a flavorful experience.
6. Rosé + Cheesy Dishes: When it comes to cheese, Rosé is your go-to because it has the acidity of white wine while balancing the fruity notes of red. 7.
Sparkling + Salty Flavors: Sparkling wines usually have notes of sweetness in them, perfect for opposing salty foods.
8. Riesling + Sweet, Spicy Flavors: Lightly sweet, many Rieslings help balance spicy dishes while complementing sweetness. 9.
Syrah + Spiced Dishes: For heavily spiced dishes, select a Syrah to finish out the flavor of your dish.
10.
Zinfandel + Rich Plates: The richness of Zinfandel complements the richness of foods like pâtés, mousses, and terrines. Dessert Wine and Cheese Pairings
In Europe, the cheese course is served at the end of the meal, even after dessert. Try a rich, flavorful blue cheese such as stilton, paired with a vintage port. Whatever combinations you choose, have fun experimenting with the magical food and wine pairing experience. Bon appetite!

55 55 YEA YEARS RS OF OF FAIR FAIR DEALING DEALING BY BY VALERIE VALERIE REDDELL REDDELL Freddie Englebrecht says 1967 doesn’t seem that long ago. He came to Austin County for his first teaching job in Wallis, where he quickly learned he’d be helping draft rules and run the county fair. “That was in the fine print in my first teaching contract,” Englebrecht said. Earlier in March, the board of directors – which now includes 55 members – presented Englebrecht with a watch and a pin in recognition of his 55 years of service. Englebrecht grew up in Harlingen and faced fierce competition in the annual three-county fair that took in most of the bottom of the state. “I never did real good down there,” he said. “The best part of that was I got out of school for several days.” He recalls one year when Gene Autry entertained the South Texas crowds. After he arrived in Austin County, he found the rodeo was mostly a county rodeo where ranchers wanted to prove his cowboys were better than the ones on the ranch down the road. “I’ve seen a lot of good, significant changes in the fair since I came here in September of 1967,” he said. Englebrecht is credited with launching the ag mechanics portion of the annual event. That expansion gave students a chance to exhibit trailers, rebuilt tractors or similar projects. Ag mechanics was Englebrecht’s area of specialization for most of his teaching career. He also hosted tractor mechanics contests that tested students’ knowledge in three different areas. “They have to take a 100-question quiz, evaluate 20 different components and work as a team of three to find and five bugs that we put in a tractor,” he said. Many of his former students are working with tractors on farms, or working on tractors to keep others farming, he added. He recently caught up with a former student who returned to the family farm after graduating from Texas A&M University.
62
“I told him he’s got a tough fight with a short stick nowadays. He told me he didn’t even have a stick to fight with anymore with all the regulations and everything,” Englebrecht said. “I told him to keep on doing it because I love to eat. I love my cotton clothes.” Englebrecht’s student completed his classes with a healthy appreciation for cotton. Ag classes produced cotton, milo, and corn on land behind Wallis High School. “That kept the school from having to pay somebody to shred it, or have the maintenance people do it,” he said. Soon they expanded their farm to about 60 acres through a rental agreement with the Catholic church. “We even chopped the weeds out of the cotton patch,” he said. He told students the experience would guarantee they could come out on top of any “you think you have it hard” debate with their own children. Englebrecht said his classes had a nice vegetable garden adjacent to the school too. He knew Austin County was getting more like the big city when he told his class they were going out to plant green beans. “I showed them how I plant green beans. They came to class the next day and asked, ‘Where’s the beans?’” Engelbrecht recounted. He explained that they wouldn’t be picking beans for 40 to 50 days. “Even though Wallis is a rural area, a lot of those kids don’t think about how they get their food or where groceries come from. They learned somebody, somewhere had to start with the seed or an animal and raise it before you get to eat the product,” he said. When harvest time rolled around, the students also got tips on how to prepare the fresh vegetables and they each took some home, Englebrecht said. The ag mechanics work was, by far, Englebrecht’s favorite course to teach.
63
“We showed a lot of projects in San Antonio and Houston. We even went out to San Angelo a couple of times,” he said. “We had a lot of support from the community.” Often students brought in projects from their own farms. Some just needed to be cleaned and painted while others had to have a complete overhaul, Englebrecht said. It became so hard to find someone to fix a really old tractor that members of the community would call to get help from Englebrectht’s students. Englebrecht said he sometimes had to remind those callers that the tractor had been out of production for 70 years. Tasking his students with resuscitating a rustbucket that’s been parked behind the barn long enough to develop a protective cover of weeds would be too much of a challenge. “It’s been a fun ride and I’ve met a lot of people,” he added. “The Austin County Fair has one of the best auction sales of any of the surrounding counties,” Englebrecht said. He was careful to exclude the Houston Livestock Show since it’s so incredibly large, it makes its own category. And as urban sprawl impacts more Austin County families, Englebrecht is glad that Sealy High School has facilities where students can raise an animal. Wallis is still largely rural and many homes sit on nearly an acre of land – which is enough for a calf or a hog. However, he is concerned about what sort of future ag producers face. “We’re taking a lot of good land out of production and building subdivisions,” Englebrecht said. “When my wife and I first came here to Wallis, they said Houston is coming this way. That was 50-plus years ago. Well, it’s finally here.”
