Editor Hurry up and Stop! Do you feel as if the holidays had you running around feeling like there wasn’t enough time in the day to complete anything… and I mean anything. If you are like me, you rushed around, stressed about spending too much money, and forgot that the holidays were meant to be spent with the ones that you love. I realized this when I was being cranky, daily, with the man that I love. Yes, that’s you, Eddie. STOP and truly smell the roses. Life is too short not to enjoy the reasons you are here. Eddie and I decided that we would focus more on each other in 2022. We want to attend 80’s cover band concerts, try a new restaurant each week, and take three- or fourday extended weekend get-a-ways throughout the year. Hopefully, we will even squeeze in a “real” vacation. Both of us are in management, thus we are always on call. Our phones never stop ringing, but this is what we signed up for and we both love our jobs. On that note, we need to practice what we preach; work/life balance.

MOMMY MOMENTS TRIKES, BIKES … YIKES! I very vaguely remember when I learned how to ride a bike. I do, however, remember falling off my bike in the fifth grade and fracturing my wrist and slamming my forehead into the concrete. Oh, the good old days! Now, I have three boys of my own and teaching them to ride a bike has been an experience, each their own. They are young and do not always understand the concept of balance, or how to move the pedal or how, if they start leaning and falling, that they need to put their foot down and catch themselves. No, instead they fall and cry and probably have something bruised, bleeding or both. My oldest is now 10 years old. I started trying to teach him to ride a trainingwheeled bike when he was about three. He caught on easily but would manage to keep rolling down the driveway, not use his brakes and would cruise on into the grass and half the time would be yelling or crying for help. The other times, he would fall on purpose, it seemed. Once he had the hang of training wheels, I determined he was ready to have them taken off. Wow … worst mistake ever. He takes after me with balance and coordination, so needless to say he had a hard time staying on his bike. I would try to hold it, then push a little to get him used to the pedals and try to keep his balance to stay up, but it was a struggle in itself. Around the age of eight years old, his middle brother who was five years old started to ride his bike with training wheels like a champ. My oldest wanted to show he was the big boy and became very determined to ride his bike. Again … bumps, bruises and more still happened. But, one day he hopped right on his bike and took off like a pro. Not even a year later, my middle child had no training wheels because he wanted to be like his big brother and ride the two-wheeler style.

Now my third and youngest boy is three years old. This child is as stubborn as the day is long. He wants to get on the bike and ride, but he wants us to do all the work to move him. So, if he does not get it after a couple of tries, he gets off and grabs the scooter because apparently standing on the scooter and pushing with his leg is much easier than pedaling a bike. Again, I point out he is my most stubborn child of all. I am constantly trying to get him to understand that you must push your foot forward to make the bike move. Easy enough concept, except he pushes back and will stand on his bike where the brakes lock up and he cannot move. So, we go through the process again of moving his foot forward. He gets it for a second, then the brakes happen. I think he is starting to do this on purpose more and more because I either laugh or get frustrated and then he goes back to the scooter yet again. Being consistent with him on this new experience is paying off, he is starting to ride by himself with little to no help. A word of advice to parents is to have patience with your children while they are learning something new. We were not perfect when we learned to ride a bike, no one is. They will get the hang of it if you continue to encourage and practice with them. Be grateful to have children riding a bike and have not broken a bone. I am dreading the day one of my kids loses balance or runs into an object and it turns into a doctor visit. Going from training wheels or tricycles to a two-wheeled bike, yikes! But, for now, I will enjoy watching them have fun and enjoying the freedom of riding their bikes on their own while enjoying the outdoors.

Camping vs Glamping
Some people still love to go out and experience the great outdoors with a tent and a sleeping bag. Time to get away from all the modern conveniences of the world. Still, others want to see what the great outdoors has to offer but want the comforts of home when it comes to sleeping and cooking. That is called glamping.

Ken and Yvette Strange are the owners of Spoon Mountain Glamping in Wimberley in the Texas Hill Country. Yvette said, in a nutshell, glamping is "glamorous camping." "Some may say it's pitching a tent and sleeping on a blowup mattress and a generator to run a fan in the tent. To others, glamping means 5-star luxury accommodations. I tend to lean towards the "luxury" side of glamping. Today glamping covers everything from African safari tents to dome structures to yurts and everything in between. The level of "glam" depends on each structure. Some have outdoor showers and bathrooms while other structures are built with nothing but comfort and convenience in mind," Yvette said. Tessa McCrackin, Chief Marketing Officer of Camp Fimfo said to them, glamping is getting to enjoy the great outdoors with all the comforts of homes. Yvette said glamping is great for all ages but do research before choosing glamping accommodations. "Anyone looking outside the box for a unique stay will love glamping. Just be sure to do your research on what you are looking for in a glamping site. For instance, is the bathroom/shower inside or outside the structure? Is there ac/heat available? Is there a way to cook food or restaurants nearby? Do they allow pets and children? (For example), we are an adults-only and pet-free facility," Yvette said. McCrackin also agreed that glamping is for any age level. "Especially at Camp Fimfo, we've made sure there's something for everyone. Our interactive water playground and gem mining are great for younger kids. But we also have stuff for adults to enjoy, like our swim-up bar and on-site coffee cart. Mini-golf, yard games, and incredible access along the Guadalupe River make our campground a super fun destination for the whole family," McCrackin said. And while glamping might be a bit too frilly for some, there is always the old-fashioned camping and Stephen F. Austin State Park has everything you need for camping. Stephen F. Austin State Park Ranger Interpreter Delia Metcalf said that when it comes to camping, it is generally good for people of all ages. "RVs make it easier for some of those age groups that tent camping might have been more difficult for them to enjoy our beautiful outdoor areas," she said.

LODGING Camping options can vary from camping outdoors at your home to camping at National Parks like Stephen F. Austin State Park in Austin County. Camping options at Stephen F. Austin State Park range from a full hookup, tent sites, group camps with water, as well as screened shelter or cabin options. "We have had some guests bring only a sleeping bag and sleep under the stars for a night. The next day, they would roll it up, toss it in their car, and continue their journey. Others have a whole RV full of supplies. It is up to each camper to choose what makes them comfortable,” Metcalf said. When camping, it is important to have a plan to properly set up your lodging. Metcalf said that with the pandemic they have seen a surge of first-time campers. "Many thought that an hour or two was plenty of time to set up their tents and quickly realized as the sun was going down that it was not. That is why if you are new to camping or using new equipment, try to give yourself extra time to set up or practice with the equipment at home, so you know how much time to give yourself," Metcalf said. "If practicing is not an option, we recommend watching a video that explains how to set up your specific equipment. This will make setting up easier and make your overall camping experience more enjoyable." Lodging options can be the biggest difference when it comes to camping vs glamping. Glamping accommodations can range from a variety of options including cabins, pods, RV, trailer, tents, yurts, treehouses, and more. "Ken and I are ‘OG’ campers, and love to pitch a tent, sleep in a sleeping bag and cook over an open fire but we now have evolved and loved all the modern accommodations and comforts of glamping. There is nothing like someone already pitching the tent and doing all the hard work and us just getting to enjoy a king-size bed with 1000 thread count sheets, AC or heat, a tiled walk-in shower, and kitchenette to add to the whole experience," Yvette said. Luxury accommodations are something you will find at almost every glamping site. "In our case at Spoon Mountain Glamping, think of luxury accommodations and everything you would find in a 5-star cabin, but it's an African Safari tent with canvas walls and ceiling. We even have a chandelier in each tent," Yvette said.

ACTIVITIES Camping and glamping activities can be quite similar depending on where you camp or glamp at. State parks like Stephen F. Austin Park have a variety of activities for campers to enjoy as well as seasonal events. "Stephen F. Austin State Park has approximately 5 miles of hiking and biking trails. Guests can enjoy wildlife watching, geocaching, stargazing, or just immersing themselves in nature. We also offer events on certain days of the week. These can be ranger-led hikes, interpreter programs that teach about different aspects of the park, or simple arts and crafts projects. These events vary depending on the seasons," Metcalf said. When it comes to what to do for fun while glamping, the activities are similar to typical camping activities but more luxurious. "Sit on the front deck and take in the sunset view and the deer, take a couples bubble bath on the private back deck under the Hill Country stars, go downtown Wimberley Square to eat or shop, zipline, wine tours, or take a dip in one of the famous swimming holes," Yvette added. "There is so much to do here in our beautiful little town." Amenities at glamping sites like Camp Fimfo aim to give visitors activities that traditional campers experience but also things that campers would not typically get to enjoy. "There's tons of stuff to do right on-site at Camp Fimfo, including a pool, water park, mini-golf, playground, sports courts, restaurants, and more. You can also explore the surrounding area and still enjoy all the classic camping activities like building a campfire, roasting s'mores, and hiking," McCrackin said. COOKING Whether you are camping or glamping your dining options can greatly differ. Depending on what shelter option you have chosen while camping your cooking option will start with making a fire for yourself which will serve as your makeshift oven. When glamping, your cooking options might still include a campfire but it is much more likely that your cooking amenities will include a stove, oven, or microwave.

RESTROOM How you use the restroom might be very different whether you are camping or glamping. When camping your best hope is that a bathroom is located not too far from your camping site. For others, while camping your new toilet might be the closest bush or tree. Restroom accessibility is one of the greatest pluses when it comes to glamping. Typical glamping accommodations will include a bathroom or be located in close proximity to a bathroom. 16
SUPPLIES Metcalf said that camping gear can be as extensive or as primitive as campers are comfortable with. “Usually, the basics for tent camping are a tent and the supplies needed to set up the tent, sleeping bag, firewood and supplies to start the fire, toiletries, first aid kit, cookware and utensils, food, flashlights, water container, and water if not provided, insect repellant and appropriate outdoor attire depending on your planned activities," Metcalf said. Supplies needed to camp can be more than the supplies need to glamp. Most glamping resorts will provide almost everything you need while you are staying at the glamping site. "Glamping is more accessible since folks don't need to bring any equipment with them. At Camp Fimfo we provide kitchen basics, place settings, and linens. Camping involves bringing in your own equipment such as a tent, pop-up, or RV. We've got over 200 full hook-up RV sites, so we welcome campers and glampers alike," McCrackin said. PRICING Glamping and camping prices can differ depending on where you are staying. For example, at Stephen F. Austin State Park prices range from $12-$100 per night. Prices at Spoon Mountain Glamping range from $275-$375 depending on the season. Two-night minimums are required unless the schedule has one day available in between other bookings. Cabins at Camp Fimfo start at $114 a night.

SEALY AREA HISTORICAL SOCIETY

Gone are most of the traditional confectioneries of the early 1900s, which is truly a loss. The name alone is worth preserving, as it conjures up the most delightful images of large glass jars filled with candy, boxes of chocolates, tins of cookies, scoops of ice cream, fudge, taffy, and fluffy baked pastries. The typical confectionery sold more than sweets, however. Cigars, chewing tobacco, and cigarettes were also considered treats and were sold in most confectioneries, along with stationery and gift items, such as toys and jewelry. The local confectionery was a place to socialize as much as it was a place to purchase confections. Some confectioneries sold alcohol, though most drinks were of the ice cream and fruit varieties. After Prohibition ended in 1933, the Edmund Bader Confectionery and Liquor Store in Bellville sold iced liquors on dance nights and was open until midnight. Nearly every community had at least one confectionery, and each of the larger towns in Austin County had several from the early 1900s through the mid-1900s. Caramels and lollipops were produced as far back as the early 1700s. Mixes of flour, honey, fruits, and nuts to make sweetmeats date back centuries earlier. However, sweets were only affordable for the wealthy until the 1800s when sugar became more available. By the mid-1800s, over 380 candy factories had been built in the United States, most producing hard candies that were sold loose in confectioneries in large glass jars or in open barrels. Peppermints and lemon drops became widely popular.

Although cocoa was in use many centuries ago in Central and South America, it was not available in much of Europe until the 1600s. By the 1700s, chocolate drinks were enjoyed in Europe and the United States and were believed to have medicinal benefits. Benjamin Franklin sold chocolate from his printing shop as early as 1735. However, chocolate, as we know it today, was not produced until Fry & Sons, an English chocolate company owned by Quakers, produced the first chocolate bar in 1847. Life has been better ever since! Whitman’s first boxes of assorted chocolates were sold in 1854. Today, there are over 1,600 candy factories in the United States. Individually packaged candies became available after the industrial revolution brought mechanization to the candy factories. Brach’s Candy was one of the first to market individually wrapped candies and began making packaged caramels in 1904. In the 1930s, manufacturers, seeking new avenues for selling candy, began promoting the practice of trick or treating on Halloween. A number of candies popular today have been sold for nearly a century or longer, such as Dum Dum lollipops, originally made in 1924, and Bit of Honey, also first made in 1924. In one of the photos of the Felcman Confectionery in Sealy, tins of Fig Newtons can be spotted on the shelf. Fig Newtons have been mass-produced and distributed across the country since 1891. The Sealy Area Historical Society recently acquired the back bar from Felcman Confectionery that opened in Sealy in 1907. More recently the back bar was located in the restaurant of the Stephen F. Austin Golf Club in San Felipe, and, fortunately, was rescued from the flood of 2016. The back bar is currently housed in the main museum at the Sealy Historical Park. After restoration, the back bar will display typical items from the confectioneries of yesteryear and will become part of the “Old Sealy” streetscape planned for the historical park. In the profession of Law Enforcement, we undergo a rigid background check. Then, there’s written tests, physical agility tests, psychological testing, medical testing and then, if you successfully pass through all of those obstacles, you are accepted into an Academy. There, you will be instructed on the Penal Code, Code of Criminal Procedures, Traffic Laws, Report Writing, Firearms, Driving and Cultural Diversity just to name a few of the many months and months of arduous training. All the while, trying to continue living a life. Should you successfully pass and graduate the Academy, then you are issued a closet full of uniforms and equipment. Some of those items might include a handheld radio, flashlight, body armor, equipment belt, holsters for your sidearm and Electrical Control Device (TASER). Usually, you weigh about 25-35 pounds more on the scale when you gear up, to report for Duty. Armed with all this new knowledge, uniforms and equipment, you show up and report for Duty with your new Field Training Officer. He or she welcomes you aboard, maybe introduce you to a few Officers, Deputies, Troopers in your work area and then, out to the streets, highways and byways you both go. After a lengthy Field Training Program (usually 12-16 or more weeks) you face a final evaluation phase and then, you’re released on your own as a Probationary Police Officer for about one year. If you’ve been keeping up, you’re usually on year two and a half at this point.

You’ll respond to all kinds of calls. Some will be funny. Some will be weird. Others, they’ll hurt your heart and harden your soul. They’ll be mothers to comfort and children to, with grace and dignity, pick up off the street. Sometimes, you’ll find yourself asking “How is it a man can to this to another man?!” There might be an answer and sometimes, there’s just no answer at all. Of all the training, tools and war stories from the old heads and your own experience, much like all those men and women who’ve worn a badge before you, you’ll find all that information came down to something which no Academy, no FTO or no other person can truly “teach” you. What I am speaking of is simply this … You’ve got to someone remember, through all the hard times, the carnage and loss, there’s little rays of light. Much like a beacon upon a stormy shore, they’ll stand out to you, if you let them. What you’re left with, is the drive to hang on to and share the one thing you were all along: A compassionate human being. A person who, through all the adversity of human nature and violence, can still find a way to kneel down and hug a child who’s crying or tie their shoes for them. You’ll find a way to somehow tune out all the ambient noise and only hear to voice of a hurting child before you. Their “story” will resonate within you and you’ll find yourself sharing a part of you to a complete stranger. Not because you had to or because it was your job. You did it because it was the right thing to do.

A good cop, I mean the really good ones, don’t count all the citations, arrests, chases and awards. Such cops see only marginal value in such records. Such cops, they keep up with how many lives they saved. How many people they tried desperately to save but, fate had another direction to go. They’ll remember the first mother of a deceased child they held and let her scream, cry and beg them to bring their child back. They’ll remember the lost child in the woods, the one they found and took their coat off for that child to wear. Especially considering it was drizzling and freezing that day. It is not easy to be the kind of cop who can kneel down and just be a Human Being for another Human Being. Especially one that is a complete stranger. I have found in my career, especially as a Chief of Police, the more I was all about being a good person and a compassionate friend to others, the more I seemed to accomplish and, in a very real way, connect to people. Usually, making this tough world a little better than when I found it. It’s not easy. But, I believe we all take our Oath as a Texas Law Enforcement Officer to do one thing above all others: To make Texas, and our respective communities which we serve, a safer, kinder and more viable place to work, live, love, laugh and raise a family. Just my thoughts this evening … until next time, be safe my friends.

Tomahawk Throwing Craze A new craze has hit the Austin County area, tomahawk throwing. A throwing axe is a weapon used from the Antiquity to the Middle Ages by foot soldiers and Native American Indians. Usually, they are thrown in an overhand motion in a manner that causes the axe to rotate as it travels through the air. Is it a workout or a hobby? Both! You stand back several feet from the target and use your arm muscles, shoulders, core, hamstrings, and calves to get a great throw. This proves the benefit of a workout. The fact that it is a growing trend for a friends’ day out, shows that it is a hobby, for people of all ages. Phenix Knives owned and operated by Cowboy and Ilena Szymanski, located at 305 East Main Street in Bellville, showcases this new trend, along with many other activities. Prioritize Projects With your budget in mind, you can turn your attention to which renovations to prioritize. When possible, begin with your home’s most immediate needs, even if they may not be the most exciting projects. Go for lasting impacts rather than cosmetic fixes. While there are no limitations on how a business plan is structured, the SBA explained that a majority of business plans fall into one of two categories: traditional business plans and lean startup plans. Lean startup formats are typically the more concise and simpler option, which may be preferable for entrepreneurs who may modify their business plan. The lean startup format provided by the SBA fit on a single page and recommended key elements be included like the business’ value proposition, infrastructure, customers, and finances. The traditional business plan format is more comprehensive than the lean startup format and is more frequently requested by lenders and investors. Examples provided by the SBA take up to eight pages and include a detailed executive summary, company description, market analysis, product or service line, financial projections and more.

CALCULATING STARTUP EXPENSES Properly assessing the startup costs associated with launching a business is a crucial part of preparation because it can help with the creation of a break-even analysis, attract investors and project profits, among other items. According to the SBA, startup costs can vary widely depending on the business type but common expenses to consider include market research, lawyer and accountant fees, licenses/permits and employee salaries. Once the expenses are identified, the SBA provides a fillable spreadsheet that separates the initial one-time expenses and monthly/consistent fees. The startup cost calculator also has designated spots for budget amounts compared to actual amounts for each line item. Example line items for the one-time expenses in the startup cost calculator include security deposits and licenses/permits; some monthly expense categories include rent, employees and marketing.

FINDING FUNDING Once the startup costs have been properly calculated, determining a source of funding for your startup is an incredibly impactful decision because it can influence the financial structure of a business. The Office of the Governor and Texas Economic Development provides information on each of the major funding sources and includes insight on loan/grant opportunities available for in-state startups. “There are several ways to fund your new enterprise, including using your own savings and raising money from friends and family. You can also apply for a bank or micro loan, secure a federal loan (via the SBA) or seek credit through personal financing. Other alternatives include crowdfunding, angel or venture capital investors,” according to information on gov.texas.gov. While relying on self-funding has the advantage of maintaining control and ownership of the startup, it comes with the risk of jeopardizing one’s personal financial health. Venture capital funding from investors may be attractive for businesses because it exchanges capital for equity, but this option sacrifices control of the business in exchange for financial backing. For those who want to retain complete control of their startup but lack the funds to launch it, small business loans are an option that may be the solution.

The SBA recommends having a business plan, expense sheet, and five-year financial projections to increase the chances of getting a loan. “If you have trouble getting a traditional business loan, you should look into SBA-guaranteed loans,” reports the SBA. “When a bank thinks your business is too risky to lend money to, the U.S. Small Business Administration (SBA) can agree to guarantee your loan. That way, the bank has less risk and is more willing to give your business a loan.” The Office of the Governor suggests the Alliance of Texas Angel Investors, grants.gov, Texas Workforce Training Grants and Community Development Financial Institutions like BCL of Texas, LiftFund and PeopleFund as potential funding opportunities.

Local yoga instructor Melanie Perez, pictured, owner of Yoga with Mel has been working out of The Dance Warehouse of Sealy for five years. She said there’s a style of yoga for every fitness level and every type of body. “A lot of people have the misconception that they can’t do yoga because they’re not flexible or are inexperienced but quite the opposite is true,” explained Perez. “You don’t have to know anything, just come in with an open mind, comfortable clothes and that’s it!” Mel said she is always amazed how often new students, male and female, are completely surprised that they are able to do yoga. “There are many benefits to yoga, one of the best being stress relief. Everybody has some form of stress in their daily lives. Yoga teaches a person to stay in the present moment and focus on the simple act of breathing which people take for granted.” Mel said people often stress over little things in life when in reality there is no reason to be stressed because it takes away from the peace of mind. “Just go with the flow,” she said. Meditation is part of Mel’s classes. “My favorite style of teaching is gentle yoga which is the most popular of all yoga classes I teach in Sealy. I teach the importance of breathing (pranayama) which I recommend everyone do on a daily basis. It resets the mind, gets you grounded and is a great way to start or end the day. I teach in the evenings and some people even fall asleep during the class and there’s nothing wrong with that,” she said.

Yoga with Mel classes are $10 for an hour and children under 18 are free. “My classes are open to men, women and children of all ages and I am always honored when anyone considers taking a yoga class,” Perez said. An interesting fact about yoga is that the Corpse Pose (Savasana) is a pose of ultimate relaxation, rejuvenation and healing and is why it is difficult for many people. In Savasana, the mind and body are calm, allowing the body to destress and positively affect physical, mental and emotional well-being. Today, yoga is being incorporated into health centers as a treatment for illness. One of the most powerful components of yoga is breathing. The ancient yogis devoted serious time to understanding the relationship between the inhale and exhale. Oxygen is responsible for eliminating waste and toxins, bringing oxygen to the blood and brain which rejuvenates our organs, reducing stress, anxiety and disease. One-to-one breathing is a powerful breathing (Pranayama) exercise that also helps with depression and anxiety. To do this, however many counts you inhale, you exhale the same amount. For example, if you inhale for five counts, exhale for five counts. A fascinating fact about yoga is that it slows the aging process by keeping your spine flexible.
