Welcome to the new fresh start of 2022! Though 2021 holds many sweet memories, I am ready for the new adventures of 2022 to come along so I can make more memories. This year, my family and I will be setting new goals, opening our minds, and exploring new ways to create. There are many unique aspects about Kaufman County and I can’t wait to share a few of them with you.

A great new service provider, Unlocking The Spectrum, is coming to Kaufman County to fulfill the needs for children with autism. They aim to provide autism intervention therapy to children with autism to help them reach their maximum potential.

Recently, I have been visiting the Fresh Market on Grove and discovered many unique vendors that were lined up throughout the lot. A sweet booth caught my eye for not only the product but also for their unique story as you will read in The BeeKing’s story.

Something I’ve noted over the years after the new year begins is that the world seems to open and brighten in color. Although a physical change doesn’t occur, the title of a new year opens our minds to see clearer and look at the world for a fresh start. This colorful and open mind leads us to better ourselves, much like the stained glass that local artist, Debbie Wood, creates.

Along with the new year comes new interpretation to the evolving world around us. Local artist, Greg Doster depicts stories for locals and those in surrounding areas to enjoy and interpret art to make them feel however they choose. Giving those an opportunity to feel allows for open minds that can create change for the better.

Autism intervention services uniquely cater to children and their families

nlocking The Spectrum has been providing autism intervention services since its founding in 2009. With the mission of making applied behavioral analysis therapy (ABA therapy) accessible to all children with autism, Unlocking The Spectrum is thrilled to announce the opening of a new location in Kaufman County! Opening a location in Kaufman County has long been a dream of David L. Henderson III, one of Unlocking The Spectrum’s founders, because Kaufman is his hometown.

Over the past decade, Unlocking The Spectrum has helped hundreds of children with autism reach their maximum potential.

“The thing that is special about ABA is seeing the difference it can make in the lives of children and their families,” said Andrew Capezzera (Board Certified Behavioral Analyst, with a degree in the Master of Arts), Unlocking The Spectrum’s Director of Texas. “It is special when children begin communicating, when a child stops engaging in aggressive or self-injurious behaviors, when a family can engage in activities outside the home without worry. I love being able to help make breakthroughs for children and families that can help impact their lives in a meaningful way.”

The center opening in Kaufman Country will provide a warm, friendly, and safe environment for children with autism to build

skills, grow, and develop. The location is centrally located, making it convenient to provide services to anyone in the area who is interested. Additionally, Unlocking The Spectrum offers the opportunity for home based services for families that are interested.

Capezzera is excited to be joining the community and notes, “There have been minimal resources available in the area and it’s going to be wonderful to introduce families to the services we can provide and the benefit it can have for their children.”

Unlocking The Spectrum works with children of all ages, with a deep commitment to going above and beyond to make sure that every child they work with receives the support they need to reach their maximum potential. As part of their mission of making ABA accessible to all children, they work hard to keep their services affordable to families.

“I started Unlocking The Spectrum because I believe every child with autism should have access to ABA Therapy,” said Ilana Hernandez, Managing Director and founder. “Many people do not know that Texas has a mandate for insurance to cover ABA therapy for individuals with a diagnosis of autism. At Unlocking The Spectrum, as soon as a family contacts us we work with them to guide them through the process of accessing ABA therapy. I am very aware that the families we work with have a lot on their plates, and I’ve structured our processes at Unlocking The Spectrum with a focus on helping the families we work with in any way that we can. We often hear from parents how relieved they are to learn that the process for starting services is led by our staff, and we take care of handling all the details with insurance. When a family does not have insurance that covers ABA therapy, we will do everything possible to help that family secure insurance to get the coverage that they need for their child. More importantly, my goal is to make sure every decision we make around each child’s program centers around what they need and not what insurance has authorized. If that means a child needs more therapy hours,

then we do everything we possibly can to get that child the hours they need, often at a direct cost to the company.”

Unlocking The Spectrum focuses on the needs and interests of each unique child they work with by incorporating the science and research-based knowledge that is the basis of ABA. This allows them to create effective and fun individualized programs for children and their families. The programs that Unlocking The Spectrum creates are focused on increasing socially significant behaviors including social skills, language, communication, reading, executive functioning and other practical everyday skills that are needed on a day-to-day basis. Unlocking The Spectrum uses a variety of teaching techniques, but they always make sure to include active play and time in different environments. Unlocking The Spectrum believes that ensuring the children they work with are taught using play based programming is important not only for a child’s progress but also for their wellbeing. Local artist paints the town and touches hearts along the way

By Elaine Frosch Greg Doster is a local artist that works on many commissioned pieces for The City of Kaufman, residents of Kaufman, as well as other customers. Not only is Doster an artist, but he’s also a vivid storyteller through his art.

Doster grew up in a small “paper mill town” called Springhill, Louisiana from his childhood until a few years after graduating college.

After high school, he went on to study mechanical architecture at Louisiana Tech University. Once Doster graduated from Louisiana Tech, he moved to the Dallas area and then proceeded to move to Kaufman where he now resides with his wife, Venetia.

Doster first started to get into art around his junior and senior year of high school when he realized he could draw pretty well. He discovered his skills were fairly decent when he would draw sketches of buildings. Doster said his art skills came from continuing to paint all the time. He also credits his skills today from listening to many mentors over the years, such as Doug Walton, Jerry Hanes, and Bud Bigs.

Artists have the option to use any medium they desire; the array of mediums to choose from is vast. Doster paints a lot with watercolor which is one of the hardest mediums to master at times. However, he also works with oils, acrylics, and pastels. When Doster is asked what his favorite medium is to work with, his response is, “I get a lot of satisfaction out of feeling accomplished, and that’s my favorite medium.”

Behind a piece of art is an artist, and behind the artist is their ‘why?’. Doster’s intent with his art is to illustrate stories that resinate and bring value to people. He wants others to view his art for how they see it because he says that “art is an honest expression.” Many

people would try to create a language around pieces of art rather than just letting the pieces speak to the person viewing them. Doster will voice that he “doesn’t know what good art is.” He will also point out that “a velvet Elvis to somebody can be very special to them.” The interpretation of art from different people based on different pieces will continue to vary because everyone is so different and everyone comes from different places.

Doster started leasing at his studio/gallery in Feb. 2020. Around this time, Covid-19 hit a peak and shut many companies and activities down. When many were left with little to do during the worldwide lock down, Doster finished improvements to his studio and worked on his art pieces.

When Doster talked about his studio space he said, “It’s something special.” He discussed that when he has visitors in the studio, many of them make comments about how they feel almost ‘at home’ and at peace when they walk through the door. Something about the studio transports visitors to a space where they are free to feel and just be in the moment rather than thinking or worrying about what is happening outside the studio doors.

From townscapes to peaches, Doster has painted it all. He has produced around a couple thousand pieces since he started his artistic career. Doster showcases his art daily in his studio/gallery, but he occasionally hosts events and attends other events in the DFW area. When he hosts events, Doster invites Matt Corbett who is an executive chef. Corbett prepares meals and appetizers for the guests to enjoy that also compliment the art.

Doster said the best advice he can give to any artist whether they are a painter or a photographer, is this, “You are what you do.”

BeeKing’s Honey

OFFERS SWEET NEW TAKE

ON TRADITIONAL LOCAL HONEY

By Mollie Kasper BeeKing’s Honey is new to Kaufman County, but it is quickly becoming a sought-after delicacy. Owner Chris Miller is as interesting as the uniquely-flavored honeys he creates. His all-natural beekeeping philosophy and vision of himself as a bee ambassador make BeeKing’s a perfect fit for this area.

MEET THE OWNER Miller was born in Alaska and moved to Washington State with his family at the age of 11, where his mother ran a Christian book store.

Books were “a part of life,” Chris says, and writing is “my first passion.”

Miller and his brother Allan have co-authored and illustrated three novels, collectively known as the Hunter Brown series, which have all won the Moonbeam Award. The pair also collaborated on two picture books, both western retellings of Bible stories.

Miller has been an entrepreneur since 1999. After graduating from college with degrees in computer animation, multimedia design, and screenwriting, he and Allan started a web and graphic design company. The brothers provided multimedia design services for both young startup businesses and established businesses that were just developing an online presence.

Although the web design business was successful, Miller eventually tired of marketing others’ products, and began looking for an opportunity to supplement his writing income and develop a product of his own. A serendipitous request from a friend soon gave him that chance.

BEEKING’S BEGINNINGS The friend was a beekeeper who was planning to move out of the country and needed help getting his hives and business ready to sell.

He hired Chris, Allan, and their families to help out with farmers’ markets and other aspects of the business.

At first, Miller had no intention of getting involved with beekeeping.

“I was the guy at the picnic who was afraid of bees … I was scared to death of bees,” Miller claims. “My stipulation was that ‘I’ll come help you with the business side, I’ll help you sell it, I’ll help you package … but I’m not gonna go out there and deal with the bees.’”

After watching the owner work the bees day after day, curiosity got the better of him, and he began inching his way closer and closer to bees until finally, he was working the hives. That business was sold as planned, but for Miller, it was too late. He had been bitten, or rather, stung, by the honey bug.

Again working with his brother as a partner, in 2013 Miller began building the BeeKing’s brand, products, and market presence. The name is a play on words and a nod to the bees’ Creator. “In a hive, there is no king bee,” Miller explains. “There’s one king of the bees and that’s God. We are responsible stewards of His kingdom.”

Not only were the brothers keeping bees, they were also procuring honey from other local beekeepers and developing their signature whipped honeys. Miller found that running BeeKing’s afforded him the opportunity to spend precious time with his wife of nearly 25 years and three children, who all help out with labeling and selling at farmers’ markets. The older kids are even helping work the hives. His wife, Angela, even creates products such as lip balms from beeswax.

According to Miller, the business was, “A process that went from curiosity to discovery to then, full-on, embracing it as a family. It included my wife in what I was doing, which I really loved as well.”

After a couple years, Allan bowed out of the business to focus on other interests, but Miller and his family continued. In addition to farmers’ markets, they opened a successful retail store in Washington.

In 2020, as the coronavirus pandemic caused nationwide shutdowns, BeeKing’s struggled with in-person retail sales. Online sales, however, remained strong, especially in Texas. The family began to eye Dallas as a secondary market. They had friends who had moved to Texas and loved it. On a scouting visit to the area, Miller discovered First Monday Trade Days in Canton, which he saw as a marvelous opportunity.

The family left a team in Washington to continue operations there, stepped out on faith, and made the move to Kaufman County during the pandemic. They found local beekeepers to work with, a co-packer to blend their recipes, and farmers’ markets where they could sell their products. BeeKing’s Texas location was born.

BUSINESS PHILOSOPHY BeeKing’s honey is all-natural, raw, unfiltered, and never heated above the temperature in the hive. Although Miller has no hives of

his own here in Texas, he procures honey from other beekeepers who adhere to his high standards. BeeKing’s represents about 50 Texas hives and 2,500 Washington hives. They only work with beekeepers whose processes they have thoroughly vetted, and do not mix honey from the two locations. It is important to Miller to maintain the local integrity of the honey they use. Miller’s three principles of hive management are: 1) chemical-free hives; 2) all-natural beekeeping methods; and 3) leaving-on, a practice in which about a third of the honey harvest is left in the hive to feed the bees over the winter, rather than feeding the bees sugar water.

Last year, Miller developed an allergy to bee stings. It was a “soulsearching moment,” he shares. Although he has had to limit his physical interaction with the bees, he still considers himself a bee ambassador, noting how much we can learn from the joyful, giving creatures about community and work ethic. “Bees can teach us how to live better lives,” Miller explains.

PRODUCTS BeeKing’s signature products are whipped honeys, which undergo a three-day process of chilling and churning to create a spreadable honey, which is creamy and smooth like butter. Nothing is added; it is raw honey, in its crystallized form. They create flavored whipped honey by adding a variety of mix-ins, such as cocoa powder, raspberry, cinnamon, and lemon.

They also sell a limited amount of local raw honey, but are cautious of infringing on the sales of local beekeepers. Their flavors include orange blossom honey and mesquite honey.

Miller is most excited about BeeKing’s newest product. In partnership with Five Points Distillery, makers of Lone Elm Whiskey, Miller has created Texas Barrel-Aged Whiskey Honey. They age their local honey for three months in empty whiskey barrels, rotating the barrels to pull the flavor into the honey. It creates a honey infused with a unique, maple-oak-vanilla flavor. Once the honey is drawn off, the barrels are returned to Lone Elm and used to age whiskey and create honey-flavored whiskey.

In addition to their food products, BeeKing’s offers a line of bath and body merchandise including lotions, deodorants, and flavored lip balms, all of which incorporate beeswax.

FUTURE PLANS Miller has big plans for BeeKing’s future. The family is currently developing a retail location in Canton, where they plan to bring the honey churning process back in-house. It will have a window through which customers can view the process. Miller also hopes to provide wholesale products to new markets and to sell beekeeping supplies, supporting others in developing a natural, hive-to-home philosophy.

He would love to create a bee museum hosting crafting days and field trips. Miller welcomes new marketing ideas and opportunities to collaborate with local beekeepers, and invites anyone who would like to work with him to send an email to chris@beekings.com.

DEBBIE WOOD

Creates Colorful Masterpieces

By Mollie Kasper As a little girl, Debbie Wood sat in church admiring the stained glass windows. She was fascinated by the colors, the shapes, and the sparkle. Little did she know it, but as the hymns arose, the seeds of her future were being planted in her soul. Inspired by those windows, as well as ones she noticed in Victorian and Craftsman-style homes, she now creates her own masterpieces from brightly-colored fragments of glass.

ABOUT THE ARTIST Originally from Dallas, Wood and her husband, Michael, have three children, five grandchildren, and are expecting another grandchild in January. The couple also care for a menagerie of 24 animals, including dogs, horses, goats, a mule, a pot-bellied pig, and fourteen – yes, fourteen – cats.

Wood has been honing her craft for 32 years. She began working with glass in 1989, when she took a class in the copper foil and solder glassmaking process at Richland College. Later, she took another class at Kittrell/ Rifkin Art Glass Studio in Richardson, which focused on leaded glass. Her first creations were Christmas ornaments and birthday presents, and she loved the peace that working with glass brought her. One of her instructors told her, “If you break two pieces of glass in a day, stop, because you have too much tension in your arms.” Wood has followed this advice, and it has served her well. “It’s been a long time since I broke two pieces in a day,” she notes. She worked with glass strictly on a hobby basis at first, but after retiring from a 15-year career at Taylor publishing, Wood moved to Kaufman in 2005. She was now free to devote more time to her passion.

THE PROCESS While Wood is proficient in both leaded and copper foil glass, she strongly prefers the copper foil method. Not only does she like the shininess of the copper, she also finds that the copper method allows her to be more precise and create more intricate works. She works in a batch process, usually having three or four projects going at once.

Wood’s first step in designing a piece is to create a pattern. She has approximately 3,000 patterns to choose from in her light-filled studio, where squares of glass are organized by color and from light to dark. If none of her patterns fit the bill, she is willing and able to draw an original pattern. She makes two copies of the pattern and numbers each piece on both copies. She then cuts one of the copies apart, while leaving the other one intact.

The next step is to select the glass and transfer the pattern to it. Wood’s favorite glass is the transparent type that lets the light shine through, but she also works with opaque art glass upon customer request. She traces around each piece of the cut-out pattern with a paint marker.

After tracing the pattern, Wood uses a diamond-encrusted, water-cooled ring saw to cut out each piece. Alternatively, if the design features primarily straight edges, she might use a diamond-wheel scorer and then break the glass. She grinds the edges of each piece to ensure that they are smooth, preventing torn copper foil and cut fingers. Next, she attaches the uncut pattern to a piece of ceiling tile and places the pieces of glass on the pattern, matching numbered piece to numbered piece. Sewing pins serve as spacers to allow just enough room for the copper foil.

Once the glass is cut and smoothed, each piece is wrapped in copper foil.

If she has to stop for the day at this point, she must wrap the copper-edged pieces in plastic to keep the copper from oxidizing.

Finally, Wood coats the copper-edged pieces with flux and solders them together, assembling the entire work like a luminescent jigsaw puzzle.

FAMILY CONNECTIONS Wood has created several special pieces, but the most meaningful one for her is a cross that she made for her mother, who passed away six years ago.

“I can’t sell it,” she says, emotion choking her voice. “My mother was my biggest proponent. If she ever needed a gift, she bought it from me.”

Arthritis is beginning to take its toll on Wood’s ability to work. She has been forced to limit her studio time to three to four hours per day, down from eight to ten hours previously. Fortunately, her granddaughter, Gracie, has displayed an interest in continuing the business. She has learned everything except the soldering.

Prices range from $125 to $175 per square foot, depending on the intricacy of the piece and the type of glass (art glass is more expensive). She has a variety of pre-made designs, but enjoys creating custom orders, including windows. One of her favorite recent projects is a set of inserts for a china cabinet, using beveled edge glass, which refract, prism-like. “Bevels bring so much beauty to a piece because they sparkle,” Wood claims.

As Wood shares about her work, the joy that it brings her is evident on her face. “I’ve tried many hobbies,” she notes, “Cross-stitch, needlepoint, crocheting, knitting, quilting. This is the one I’ve stuck with.” Her eyes still sparkle like beveled glass, and like that little girl in church, many years ago.

COPPER FOIL AND SOLDER VS. LEAD GLASS METHODS Both the copper foil and solder and the lead glass methods involve wrapping metal around pieces of glass; however, there are striking differences between the two. The lead is actually a channel into which the each piece of glass fits and which is secured by putty. By design, this method covers up a portion of each piece of glass, and smaller, detailed section like hands and faces can get obscured. With the copper foil method, a strip of thin, flat copper is wrapped around each piece of glass, and the pieces are then soldered together with heat. While both methods produces beautiful results, the thinner copper allows for more intricate designs.
