evy County has so much to offer visitors to the area and readers will have a chance to learn about more than a dozen special places to visit in the county.

But those already living in Levy County may want something extra to do over the summer with their families. We’ve put together a package of daytrip ideas no more than an hour’s drive away.

In this edition, we feature five places to visit in the Gainesville area. They include everything from water activities to museums to music concerts.

We are featuring the Florida Museum of Natural History, Free Friday Concerts in Gainesville, High Springs, Ginnie Springs and Kanapha Botanical Gardens.

In addition, we have added fun recipes for you to try. We have two recipes for apples — apple turnovers and apple pie. We have some tips on how to make “next level” burgers and also some tips for using up all the blueberries you have picked or purchased.

Do-it-yourselfers will surely want to check out the article that explodes the myths about grilling and barbecuing.

FYI Summer 2021 The Community’s Conscience

For more than 70 years, the Chiefland Citizen has been the conscience of the community it serves. The Citizen was established in 1950 by Jack Holland, and purchased in 1973, by longtime newspaperman Walter Wilson and his wife, Wihlena, both hands-on owners who did all the work themselves.

One by one, staff was added, including Wilson’s brother, Fred, in 1978 until the newspaper boasted 11 employees. In 1974, the Wilsons began to publish the Tri-County Bulletin, a free shopper.

After Wilson died in 1995,

Williston Pioneer:

Wihlena and son, Chris, took over the publishing duties of the newspaper.

In 1999, the Wilsons sold the newspaper to Landmark Community Newspapers Inc., which holds the philosophy that the only first-rate newspapers are those that are independently operated by people who live in the community and who are responsive to community needs.

Today more than 98 percent of its editorial content is contained to Levy, Gilchrist and Dixie counties and focuses on the people who live here and the issues that concern them.

The Voice of Williston

Only 24 years after Florida became a state, and 18 years before the city of Williston was incorporated, a newspaper was founded on the island community of Cedar Key and placed its roots in Williston in 1879.

Originally called the Island City Herald, the evolution of the Williston Pioneer is as rich and storied as the people it has continuously served for over 140 years.

The paper has changed hands numerous times over its lifespan, and has undergone, several name changes, including the Williston Sun. It wasn’t until 1968 that the paper finally came back

into local hands when Bess Williams merged The Williston Sun with the Suwannee Valley News. For the next 23 years the newspaper played a key role in the community, even with the advent of the Williston Pioneer, founded by Skipper Hammond.

In 2001, Landmark Community Newspapers Inc., purchased both papers and merged them into the current Williston Pioneer Sun News–the oldest continuously published newspaper in Levy County and one of the oldest in Florida.

From paddleboarding to volleyball, there is something for everyone at Ginnie Springs.

Ginnie Springs Outdoors has five open-air pavilions available to rent on

a daily basis. Each pavilion is selectively adjacent to a beautiful natural spring. Pavilions are equipped with electric and water, a large smoker grill*, and picnic and serving tables.

ruits and vegetables are vital components of a nutritious diet, and few foods pack a more nutritional punch than blueberries. Verywell Health says blueberries are touted as a superfood because they are full of antioxidants, vitamins, fiber, and phytosterols, which are micronutrients that can significantly lower LDL cholesterol and reduce the risk of heart disease.

Blueberries also are low in saturated fat and may help lower triglyceride levels.

A study published in the Journal of the Academy of Nutrition and Dietetics found that women who consume blueberries on a daily basis have lower blood pressure. Furthermore, researchers in Finland determined a berryrich diet supports healthy aging and controls the risk of chronic diseases.

Enjoying a blueberry muffin or a cup of blueberries with breakfast are two ways to consume more blueberries. But those are not the only ways to incorporate more blueberries into your diet.

1. Make a smoothie. Blend blueberries into a smoothie containing frozen yogurt and other fruit. Drink it any time of the day as a filling snack or even a small meal.

2. Whip up blueberry relish. Diced fresh blueberries tossed with onion, diced tomato and various seasonings can be used to top fish tacos or spread on toast rounds.

3. Create a fruit salad. Blend together various fresh fruits into a delicious fruit salad. Squeeze fresh lemon juice on top to prevent browning of the fruits used.

4. Whip up overnight oats. Mix equal parts of almond milk, oats and Greek yogurt together in a container and let sit overnight. In the morning, mix in favorite some blueberries. Add a little pure vanilla extract for added flavor.

5. Add blueberries to batters. Mix blueberries into pancake or waffle batters to add extra nutrients to meals.

6. Flavor your drinks. Drop blueberries into water, fruit juices or lemonade for a nutritional boost. Dress up sangria with blueberries for an added punch to this popular cocktail.

7. Mix up energy bites. Pair nuts, oats, chia seeds, flax seeds, and other healthy ingredients with blueberries.

Utilize maple syrup or honey to keep ingredients together, and bake until golden brown. Many different recipes are available online for these types of treats. Blueberries make nutritious additions to any diet, and there are various ways to incorporate more of this flavorful fruit into your meals.

Kanapaha Botanical Gardens in Gainesville is a 68-acre facility comprised of 24 major collections visually accessible from a 1 ½ mile paved walkway. These include the state’s largest public display of bamboos and the largest herb garden in the Southeast. Some of Kanapaha’s gardens are organized taxonomically; others demonstrate principles of ecology or natural selection. Kanapaha Botanical Gardens is a premier Gainesville wedding venue with both indoor and outdoor rentals for wedding ceremonies, wedding receptions, meetings, retreats, conferences and other social functions. Kanapaha’s signature plants include a premier stand of Chinese

royal bamboo (Wong Chuk), and--during the warm months--giant Victoria water lilies and Asian snake arums.

The months offering the most color are June through September. Kanapaha hosts many special events throughout the year including a Bamboo Sale and North Central Florida’s premier horticultural event, the Spring Garden Festival. Another must-see is our Moonlight Walk when the paths and meadows are illuminated by special laser lights and more than 1500 luminaries; live music is featured as well.

he year 2020 is one few people will soon forget. Life changed dramatically and perhaps forever in 2020, when the outbreak of the novel coronavirus COVID-19 forced billions of people across the globe to make sacrifices in an effort to prevent the spread of the potentially deadly virus.

The sacrifices made in response to COVID-19 are perhaps most noticeable on holidays, when people accustomed to gathering with family and friends were unable to do so, or only able to do so on limited terms. Despite those restrictions, people continued to celebrate on holidays like Easter and Memorial Day, and the Fourth of July does not figure to be any different.

Fourth of July celebrations often take place in the backyard by the grill, and this year marks a perfect opportunity to expand your culinary repertoire.

This recipe for “Best Burger With Blue Cheese Butter” courtesy of Eric Treuille and Birgit Erath’s “Grilling” (DK Publishing) offers a new take on a backyard barbecue staple.

Best burger with blue cheese butter

Serves 4 t 1 pound ground chuck steak t 2 teaspoons salt1 teaspoon black pepper t 4 - 1/2-inch slices blue cheese butter t 4 sesame hamburger buns, halve Combine ground steak with salt and pepper. Divide into 4 equal-sized pieces and gently shape into 4 burgers about 1-inch-thick. Grill burgers and warm buns according to instructions below. Top burgers with butter and serve hot in sesame buns.

Outdoor cooking: Grill over hot coals for 3 minutes per side for rare, 4 minutes per side for medium rare, or 5 minutes per side for well done. Place buns cut side down on grill until warm and lightly golden, 1 minute.

Indoor cooking: Preheat a ridged cast-iron grill pan over high heat.

Makes 15 servings t 16 tablespoons unsalted butter, softened t 4 ounces (1 cup crumbled) blue cheese t 2 teaspoons black pepper Place ingredients in a food processor or blender; pulse until well blended.

Wrap in foil. Place in the freezer until hard, about 45 minutes. To serve, roll back foil and cut into 1/2-inch slices.

When slicing from frozen, warm the knife under hot water first. After slicing, always tightly rewrap the unused flavored butter roll in the foil before returning to refrigerator or freezer.

O’Leno State Park

O’Leno State Park is located on U.S. Highway 441, six miles north of High Springs along the banks of the scenic Santa Fe River at 410 SE Oleno Park Road. The park features sinkholes, hardwood hammocks, river swamps and sandhills. As the river courses through the park, it disappears underground and reemerges over three miles away in River Rise Preserve State Park.

portunity to unwind in a natural setting. Visitors can enjoy a day of hiking or biking on the park’s shaded trails. The Santa Fe River is a beautiful spot to launch a canoe or try your hand at fishing along its banks. Pavilions are located along the river’s edge, providing a serene backdrop for picnicking and relaxing. The shady, full-facility campground is the perfect place for a relaxing overnight stay.

High Springs Historical Society Museum

Poe Springs Park

28800 NW 182nd Ave. Poe Springs Park is located 3 miles west of High Springs on County Road 340.

The spring basin is accessible either from the Santa Fe River, or from a boardwalk 1,000 feet from the parking area. The basin is up to 25 feet deep.

The vent entrance is about 2 feet by 3 feet, and the cave is about 13 feet long.

The park boasts 202 acres filled with scenic woodlands and rolling fields, located along the banks of the Santa Fe River. The well-maintained park features a playground, fishing, canoeing, kayaking, tubing, swimming, hiking, picnicking, volleyball courts, softball/kickball/soccer field, nature trails and its own spring.

Poe Springs is one of the least crowded springs in the area and the shallow water makes it kid-friendly.

elebrations are common in July.

American Independence Day is celebrated each July Fourth, and that momentous occasion lays the foundation for a month-long celebration of Americana. Since the United States first gained its independence from Great Britain, many things have been described as representing the best of American culture. Rock-n-roll music and baseball have long been deemed “as American as apple pie,” but how did apple pie come to be synonymous with America?

Few fruits have been associated more with America than the apple, due in large part to John Chapman, affectionately known as Johnny Appleseed.

Chapman was born in Massachusetts during the Revolutionary War. Chapman’s father fought in the war, than survived to return home to farm and

teach his son the family business. The younger Chapman is said to have spent 40 years clearing land and planting apple seeds in Midwestern states. Apples thrived and became important foods for early settlers. Apples were easy to grow and store for use throughout the year, plus they were, and still are, versatile fruits that can be used in many different recipes.

Apple pie is a popular dish made from apples, but a close cousin to pie, turnovers, can be just as delicious. Turnovers are handheld desserts made with many of the same ingredients as pie.

They are small pastries made by covering one half of a piece of dough with filling, folding the other half over on top, and then sealing the edges. Apple turnovers can be a sweet treat for July Fourth barbecues or other events this summer. Enjoy this recipe, courtesy of PillsburyTM.

Easy Apple Turnovers

Serves 4 t 1 ½-cups thinly sliced, peeled apples (roughly 1 1/2 medium-sized apple) t 1/4-cup packed brown sugar t 2 tablespoons water t 1 teaspoon lemon juice t 1 tablespoon all-purpose flour t 1 tablespoon granulated sugar

t 1/4-teaspoon salt t 1 tablespoon butter or margarine t 1/2-teaspoon vanilla t 1 box Pillsbury® refrigerated pie crusts t 1 egg 1. In a 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and lemon juice. Cook over medium heat, stirring occasionally, until bubbly.

Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender.

2. In a small bowl, mix flour, granulated sugar and salt. Gradually stir into apple mixture, cooking and stirring until mixture thickens. Remove from heat; stir in butter and vanilla. Cool 15 minutes.

3. Meanwhile, heat oven to 350 F. Let pie crust pouch stand at room temperature for 15 minutes.

4. Remove pie crust from pouch; unroll crust on ungreased cookie sheet.

Spoon cooled fruit mixture evenly onto half of crust to within 1/2 inch of edge.

5. In a small bowl, beat egg and 1 tablespoon water; brush over edge of crust. Fold untopped half of crust over apple mixture; firmly press edge to seal.

Flute edge; cut small slits in several places in top crust. Brush top with remaining egg mixture.

6. Bake 25 to 35 minutes or until crust is golden brown. Serve warm or cool.

Drizzle with icing, if desired.

Expert tips: Tart apples, such as Granny Smith or McIntosh, make flavorful pies. Braeburn or Gala apples provide good texture and a slightly sweeter flavor.

ertain foods are synonymous with particular holidays or times of year. For example, few people can imagine celebrating Valentine’s Day without ample supplies of chocolate on hand. And what summer barbecue is complete without grilled hot dogs and hamburgers? While these foods and others are must-haves during certain times of the year, that doesn’t mean they cannot be enjoyed whenever a craving arises.

Apples, and particularly apple pie, are a staple of many holiday season celebrations. But apple pie is just as delicious in March, April, May, etc., as it is during the weeks between Thanksgiving and Christmas. That’s especially true when the apples are fresh. Whether yours is a seasonal or non-seasonal craving for apple pie, be sure to satisfy it with this recipe for “French Apple Pie” from Mollie Cox Bryan’s “Mrs. Rowe’s Little Book of Southern Pies” (Ten Speed Press).

French Apple Pie

Makes one 9-inch pie t 1 recipe Plain Pie Pastry (see below) t Raisin Filling t 2/3-cup raisins t 6 tablespoons water t 1/2-teaspoon lemon juice t 1/4-cup light corn syrup t 1 1/2-teaspoons all-purpose flour t 1 1/2-teaspoons sugar t 2 apples (preferably a tart variety) t 1/4 cup brown sugar t 1/2-cup sugar t 1/4-teaspoon ground cinnamon

t 1/2-teaspoon ground nutmeg t 1 1/2-teaspoons cornstarchIcing t 1 cup confectioners’ sugar t 2 tablespoons water t 1 tablespoon butter, softened To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat.

Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes.

Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust.

Peel the apples, cut them into thin wedges, and put them in a large bowl.

Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then

Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center.

Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.

To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving.

Plain Pie Pastry

Makes two 9-inch pie crusts t 2 cups all-purpose flour t 1 teaspoon salt

t 2/3 cup vegetable shortening t 5 to 7 tablespoons cold milk Sift the flour and salt into a bowl.

Cut in the shortening with a pastry blender until it is the size of small peas.

Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl.

Repeat with the remaining milk until all of the flour mixture is moistened.

Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1/8 inch. Use a light touch and handle the dough as little as possible.

Fact: Everyone reacts differently to heat, so the best way to gauge temperature is by using a thermometer.

Myth #5: Light up the whole grill for best cooking.

Fact: Temperature control is a key component of effective grilling and barbecuing. Having two temperature zones — direct, radiant heat for searing, and an indirect zone for grilling meat evenly and preventing burning — can make food more tasty.

A little about Levy

L

evy County was created in 1845, in development that followed the end of the Seminole Wars. It was named for David Levy, a planter elected in 1841 as the state’s territorial delegate to the U.S. House of Representatives and he served two terms.

When Florida was admitted as a state, Levy was elected by the new state legislature as one of Florida’s first two U.S. senators; he served from 1845 to 1851, and again from 1855 to 1861. He was the first Jewish American elected to the United States Senate.

Levy provided for long-term development in the state by constructing the first railroad across Florida, linking the deep-water ports of Fernandina

on the Atlantic Ocean and Cedar Key on the Gulf of Mexico. He developed a network of feeder railroads through central Florida as well.

ities and towns across the country commemorate special days with various festivities, particularly when warm weather beckons people outdoors. Fireworks long have been a popular way to cap off parades, concerts, sporting events, and national days of celebration.

Entire communities come together to watch spectacular shows in which blazing pops of color light up the night sky.

Smithsonian magazine reports that pyrotechnics displays have been astounding audiences all over the world for centuries. As early as 200 B.C. fireworks were developed in China to first scare off mountain men and later evil spirits. However, soon the Chinese incorporated “fire drug,” essentially saltpeter, sulfur and charcoal (a recipe for gunpowder), into their cultural celebrations. Early Chinese fireworks consisted of the gunpowder mixture stuffed in bamboo tubes.

Fireworks have evolved since then,

but by and large they’re still comprised of the same main parts: an oxidizer, fuel and chemical mixture to produce desired colors. Fireworks are a wonder to behold when they are part of professional displays, and their history can be interesting as well. * While the Chinese invented fireworks, Italians helped fine-tune them. Italians are credited with designing aerial shells and figuring out that certain metallic powders could create specific colors. * The largest consistent fireworks show in the United States is the Macy’s show in New York over the Hudson River on July 4th. More than three million people view the show, which includes more than 40,000 shells. * The Walt Disney Company is the largest consumer of fireworks in the world, according to Business Insider. It also is the second largest purchaser of explosive devices, behind only the U.S. See FIREWORKS/Page 51

must wear cotton clothing, including undergarments, as synthetic clothing can create sparks capable of detonating fireworks, according to Alamo Fireworks. * Various fireworks shapes have their own names. They may be called willows, palms, crossettes, horsetails, rings, cakes, and more. * New Castle, PA is known as the “Fireworks Capital of America” because Zambelli Fireworks Internationale and Pyrotecnico both got their start there in the mid-nineteenth century. * Scientists are currently working to create more eco-friendly fireworks.

T

he Levy County Library System, a department of the county, provides library service to the residents of Levy County.

There is a headquarters housing the library director, an administrative assistant and a youth services coordinator.

The library director and the administrative assistant provide administrative support for the five branches. The youth services coordinator provides programming for children and youth ages birth to 18 at all five library branches.

The administrative support consists of centrally ordering books and other library materials, library and office supplies, equipment, services (telecommunications, printing, book lease, copier maintenance, computer maintenance, etc.).

The library director coordinates branch activities, represents the system to the County Commission, to other county departments and to the public. The library director plans the system’s development, works with state library representatives

and other library directors to improve the System’s programs and activities.

She and the Administrative Assistant work with vendors to obtain the library materials, supplies, equipment, services, etc. required for the System’s efficient operation. A central automation system is operated from the headquarters to provide a catalog of library materials and circulation services.

The five branches of the Levy County Public Library System each serve a unique community. The library staff at each branch is responsible for the day to day activities of the library; collection development, circulation and maintenance; seasonal displays; and supervision of volunteers. They work closely with each branch’s Friends of the Library group to provide programming and other benefits to the library. Four of the library buildings are owned and maintained by the municipalities in which they are located while the fifth one is owned and maintained by a Woman’s Club.
