It has so much to offer and readers will have a chance to learn about more than a dozen special places to visit in the county.

In addition, we are adding a day-trip feature about five must-see parks within an hour to hour and half drive just south of us.

We will tell you about the mermaids at Weeki Wachee and mermaids (manatees) of Three Sisters Springs. If camping is your thing, we have it. Like to paddle or canoe; or just to swim and snorkel?

In this edition, we feature Homosassa Springs Wildlife State Park, home to dozens of native species sent to rehab or live out their days at the park. We also have a story about Weeki Wachee and its mermaids, but did you know you could also swim in the spring and paddle down the river yourself?

At Chassahowitzka Campground, you can paddle to the large spring or out to the Gulf of Mexico. At Rainbow Springs they have it all: float on your back down the river, camp out on the river or visit the headsprings and nature trail for a up closes and personal view of Florida flora and fauna.

About the Cover: Yuma, 7, is one of two

Florida panthers residing at Ellie Schiller Homosassa Springs Wildlife State Park in Citrus County. He was brought to the park at 13-weeks old after his mother was killed in south Florida. He is non-releasable due to being imprinted and losing his fear of humans.

FYI Spring 2021 The Community’s Conscience

For more than 70 years, the Chiefland Citizen has been the conscience of the community it serves. The Citizen was established in 1950 by Jack Holland, and purchased in 1973, by longtime newspaperman Walter Wilson and his wife, Wihlena, both hands-on owners who did all the work themselves.

One by one, staff was added, including Wilson’s brother, Fred, in 1978 until the newspaper boasted 11 employees. In 1974, the Wilsons began to publish the Tri-County Bulletin, a free shopper.

After Wilson died in 1995,

Williston Pioneer:

Wihlena and son, Chris, took over the publishing duties of the newspaper.

In 1999, the Wilsons sold the newspaper to Landmark Community Newspapers Inc., which holds the philosophy that the only first-rate newspapers are those that are independently operated by people who live in the community and who are responsive to community needs.

Today more than 98 percent of its editorial content is contained to Levy, Gilchrist and Dixie counties and focuses on the people who live here and the issues that concern them.

The Voice of Williston

Only 24 years after Florida became a state, and 18 years before the city of Williston was incorporated, a newspaper was founded on the island community of Cedar Key and placed its roots in Williston in 1879.

Originally called the Island City Herald, the evolution of the Williston Pioneer is as rich and storied as the people it has continuously served for over 140 years.

The paper has changed hands numerous times over its lifespan, and has undergone, several name changes, including the Williston Sun. It wasn’t until 1968 that the paper finally came back

into local hands when Bess Williams merged The Williston Sun with the Suwannee Valley News. For the next 23 years the newspaper played a key role in the community, even with the advent of the Williston Pioneer, founded by Skipper Hammond.

In 2001, Landmark Community Newspapers Inc., purchased both papers and merged them into the current Williston Pioneer Sun News–the oldest continuously published newspaper in Levy County and one of the oldest in Florida.

Williston’s Blue Grotto

W

elcome to the clear water cavern in the heart of freshwater spring country – Williston’s Blue Grotto.

Homosassa Springs Wildlife State Park

H

omosassa Springs is home to a variety of captive animals such as alligators, black bears, red wolf, Key deer, flamingos and whooping cranes. But it is not a zoo, these animals are

here because they cannot survive in the wild on their own.

Before it became a state park, it was a site famous for its exotic animals and native species. Many of the former animals at the See PARK/Page 10

park were trained by television producer Ivan Tors to be used in television and movies.

One of the most popular was a bear named Buck, who was a stand-in for Gentle Ben in the 1960s television series. There is one holdover from those days, Lu, the oldest hippopotamus in captivity at 61, is also an honorary citizen of Florida.

There are a number of fresh and saltwater fish that still congregate in the natural spring bowl — large jacks, snapper, snook and others.

Activities: Birding, hiking, picnicking and wildlife viewing.

Amenities: Amphitheater, concession and restaurant, interpretive exhibit, nature trail, parking, picnic pavilion, restroom facilities, visitor center, wheelchair accessible.

Hours: 9 a.m. to 5:30 p.m.

Rainbow Springs State Park

R

ainbow Springs State Park was once the site of the Rainbow Springs Attraction, which closed in the 1970s. It reopened in the 1990s as a state park.

The park consists of three

areas — the headsprings; the campground and the tubing entrance. The headsprings is where the former Rainbow Springs Attraction was located and visitors can explore the See RAINBOW/Page 14

area via paved accessible pathways, the area that, in the past, was filled with zoo exhibits, a monorail through the treetops, and bird sanctuary.

Guests can also canoe, kayak and tubers can access the Rainbow River at the tubing entrance. Trams are

The campground is a mile and a half downstream, or six miles by road, from the main headspring. Showers and restrooms, a laundry facility, a pavilion, playground and camp store, where firewood and ice are available, are on site. All campsites have electrical service and water, and the RV sites have sewer connections.

Activities: Birding, camping, fishing, hiking, paddling, picnicking, reunions and gatherings, snorkeling, swimming, tubing and wildlife viewing.

Amenities: Amphitheater, campgrounds, canoe and kayak launch, concession and restaurant, gardens, interpretive exhibit, laundry, parking, pets, picnic pavilion, playground, restroom facilities, RV, shower station and visitor center.

Hours open: Effective Nov. 13, 2020: Rainbow Springs State Park is open from 8 a.m. to 5 p.m. daily. Canoe and kayak rentals are available at the head springs. Tubing is currently closed for the winter season and will reopen in April 2021. The campground is open.

Goethe State Forest

D

on’t expect much more than flora and fauna when entering the Goethe State Forest.

Named for J.T. Goethe, from whom most the land was purchased under Florida’s Conservation and Recreation Lands Program in 1992, the Department of Agriculture and Consumer Services, Division of Forestry, was given lead management responsibility for the Goethe State Forest.

Three Sisters Springs

isitors can actively or passively enjoy manatees at Three Sisters Springs in Citrus County. To watch manatees from a boardwalk overlooking the famed manatee hangout, purchase a day-long ticket or annual pass from Crystal River’s Three Sisters Springs Center and ride the citytrolley, walk, ride or cycle to the

refuge entrance at 601 Three Sisters Springs Trail.

If you like your brush with nature to be more intimate, paddlecraft can launch at Hunter Springs Park, 18 NE 2nd St., Crystal River, or King’s Bay Park, 268 NW 3rd St., Crystal River. No motorized boats are allowed in the spring area.

Visitors can also charter a dive boat tour.

A handheld favorite fit for a crowd Slow-cooked foods seem tailor-made when the mercury is low. Stews, soups and casseroles can simmer and gain great flavor through slow-cooking methods. nother local spring is the small, quiet Blue Spring just west of Bronson.

The outflow from Blue Spring, a second magnitude spring, forms the headwaters of the Waccasassa River, renowned for the adventurous spring sporting event, the Wild Hog Canoe Race.

Shell Mound County Park

S

hell Mound County Park is located on CR 32, off of CR 347, north of Cedar Key. Set out in the beautiful grasses of Cedar Key, the park is home to many types of birds, hiking trails, wild flowers and an abundance of natures’ four legged friends. There are 20 campsites with water and power hookups, 10 primitive camping sites, restroom and shower facilities, boat ramp, fish cleaning area and an RV dumping station. A play set with swings, jungle gym and a slide keep kids entertained, along with a volleyball area and basketball court.

The boat ramp is a favorite to air boaters. The park has a state approved water system.

Shell Mound Trail and Archaeological

site is approximately 1/2 mile west of the park on CR 32. An observation deck extends out into the water, along with a sheltered area of information about the history of the shell mound. The boat ramp is readily accessible with convenient restrooms.

Shell Mound County Park has an attendant on duty 7:30 a.m. to 6:30 p.m. It accepts cash only, takes no credit cards and does not take reservations. There is a seven-day limit for camping. Camping rates are: RV and travel trailers $15, tents with electric $10, tents without electric $5. Levy County residents over the age of 65 or 100 percent disabled are eligible for half off park admission rates. Leashed pets are allowed. For more information, call 352-221-4466.

8 tips for dyeing Easter eggs

C

oloring eggs is a beloved Easter tradition. Eggs long have been symbols of fertility and rebirth, making them fitting icons for spring.

One story links eggs to Easter as well. According to some religious scholars, Mary Magdalene, the woman who was the first person to see Jesus Christ after His resurrection, was holding a plain egg in her hand while waiting for the emperor to share the good news. The emperor then told her that Jesus’ resurrection was as improbable as that egg suddenly blushing. The egg then turned red.

Dyeing eggs is an entertaining activity, but one that also may have some religious significance. Many families will color eggs this Easter, and these guidelines can make the process go smoothly. t Wait until just before coloring to hard-boil eggs. Good Housekeeping recommends boiling eggs for 11 minutes for a hard boil. Do not chill the eggs afterward; warm eggs absorb color more effectively for more vivid results. t Egg dye can stain furniture, clothing or tablecloths. Therefore, dress in clothing that you’re not worried about

staining.

Also, cover work surfaces with an old tablecloth and newspapers to soak up any spills. t Make a drying rack to ensure that eggs will dry evenly. This can be a rimmed cookie sheet lined with layers of paper towels to absorb any excess dye that runs off the eggs. Or push pins into thick foam board and place the eggs on top to allow air to circulate. t Consider using glass bowls or ceramic mugs to house the colored dye solutions. These vessels are more sturdy than plastic cups, and less likely to be overturned by eager young hands. t Scissor-style tongs are ideal tools for retrieving eggs from the dye.

While some people may want to use Easter eggs for recipes later on, it

may be safer to boil up a fresh batch of eggs for that purpose, even if it seems wasteful. According to Emily Rubin, RD, LDN of the Thomas Jefferson University Division of Gastroenterology and Hepatology, ‘hard-boiled eggs should be refrigerated within two hours of cooking and discarded if left out for more than two hours at room temperature.’ Chances are it may take two hours or more for children to find hard-boiled eggs hidden by the Easter bunny.

Lamb is ideal for spring dinners Spring celebrations wouldn’t be the same without lamb. In fact, it is a classic dish for Easter gatherings. While leg of lamb and other lamb roasts may be customary, lamb chops also can fit the bill.

Lamb chops are the star of the show in this recipe for broiled lamb chops with garlic mayonnaise from The Food of France (Kyle Books) by Sarah Woodward. These chops are best when cooked on the grill, but also can be broiled indoors.

Broiled lamb chops with garlic mayonnaise

Serves 4 t 8 lamb chops t Sea salt and freshly ground black pepper t Few sprigs of rosemary, lavender and thyme t 6 fat garlic cloves, peeled t Yolks of 3 large fresh free-range eggs t Extra virgin olive oil t Juice of 1/2 lemon Classically the alioli is made in a pestle and mortar, but a food processor will do the job admirably. What is essential is that all the ingredients are at room temperature before you start — cold egg yolks will usually make the sauce curdle. Either crush or whizz the

garlic with plenty of salt until you have a paste. Now add the egg yolks and pound or puree again. When you have a smooth mixture, start adding the oil, literally drop by drop at the beginning, either whisking in or giving short blasts on the processor. As the mixture starts to thicken, you can begin to add the oil in a steady stream. Exact quantities will depend on the garlic, the eggs and the temperature, but a generous 1 cup of olive oil would be a good estimate.

The aim is to end up with a stiff emulsion, which you serve alongside the broiled lamb chops. Finish the alioli with a few drops of lemon juice.

To make the chops, season the chops well in advance, making sure that there is plenty of salt on the fat, and bring them to room temperature before barbecuing. It is also vital that the coals are only glowing or the fat will burn — so the barbecue needs to be lit well in advance. Alternatively, you can just broil the chops but they will lack some of that special flavor. Just before cooking, throw on the herbs so that the chops cook in their aroma. The chops only will need to grill 2 to 3 minutes per side, depending on chop thickness. Lamb is done when the internal temperature reaches 145 F. Let stand a few minutes for juicy lamb, and serve with the alioli on the side.

Spring ushers in grilling season The return of warm weather is synonymous with many things. For men and women who love to grill, spring marks a return to grilling their favorite foods and dining outdoors.

Burgers and hot dogs may never go out of style, but plenty of additional foods can make for delicious grilled meals.

Grilled chicken, for example, makes for a healthy meal the whole family can enjoy.

Grilled chicken sandwiches, such as the following recipe for ‘Grilled Chicken Ciabatta with Romesco and Baby Greens’ from Karen Adler and Judith Fertig’s ‘The Gardener & The Grill: The Bounty of the Garden Meets the Sizzle of the Grill’ (Running Press), can make for a nice change of pace from more traditional grilling fare.

Grilled Chicken Ciabatta with Romesco and Baby Greens Serves 4

t 2 loaves ciabatta or 4 ciabattini (ciabatta rolls), sliced in half lengthwise t Olive oil, for brushing t Fine kosher or sea salt and freshly ground black pepper, to taste t 4 boneless, skinless chicken breasts, pounded to a 1/2-inch thickness t 1/2 recipe Romesco Sauce (see below) t Small wedge (about 4 ounces) of Manchego or Parmesan cheese, for shaving t 2 cups baby greens Prepare a hot fire in your grill.

Brush the cut sides of the ciabatta with olive oil. Brush the chicken breasts

with olive oil on both sides and season with salt and pepper.

Grill the chicken, turning once, for 5 minutes total. Grill the ciabatta, cut sides down, until it has good grill marks, 1 to 2 minutes.

Slather all the grilled sides of the ciabatta with the Romesco. Place the chicken breasts on the bottom half of the bread, shave some Manchego cheese over the chicken, then top with baby greens and the top half of the bread. If you’re using a loaf of ciabatta, you’ll have 2 chicken breasts on each loaf, so cut each loaf in half horizontally. If you’re using ciabattini, you’ll use 1 breast for each roll. Serve immediately.

Romesco Sauce Makes 2 cups

t 1/2 cup toasted slivered almonds t 2 jarred roasted red bell peppers, roughly chopped t 2 garlic cloves, minced t 1 slice white bread (crust removed), toasted and crumbled t 1 tablespoon roughly chopped fresh flat-leaf parsley t 1/2 teaspoon red pepper flakes t 1/3 cup red wine vinegar t 2/3 cup extra-virgin olive oil In a food processor, grind the almonds.

Add roasted peppers, garlic, bread, parsley, and hot pepper flakes. Blend until it becomes a paste. Add the vinegar and pulse to blend. With the motor running, gradually pour the olive oil through the feed tube in a steady stream until the mixture thickens like mayonnaise. Season to taste with salt and black pepper.

Store in a covered container in the refrigerator for up to 3 days.

eeki Wachee was “discovered”

by Newt Perry, a Navy man who taught frogmen to swim under water.

The name comes from the Seminole word for “little spring.”

Perry recruited young woman and taught them to swim underwater. An 18-seat theater was built into the limestone so viewers could look right into the natural beauty of the ancient spring. It opened in 1947.

been found. More than 117 million gallons of fresh 74-degree water bubbles up daily out of subterranean caverns. The basin of the spring is 100 feet wide with limestone sides and there, where the mermaids swim, 16 to 20 feet below the surface, the

current runs a strong five miles an hour.

Flowing from the spring, the Weeki Wachee River winds its way 12 miles to the Gulf of Mexico.

In 1982, Buccaneer Bay opened up to provide families access to swim in the springs, slide down water slides and enjoy a beach experience on the shore of the spring. Buccaneer Bay is currently closed to undergo restoration.

Andrews Wildlife Management Area

A

ndrews Wildlife Management Area is a 3,582-acre tract that is excellent for hunting, fishing and bird watching along the banks of the Suwannee River.

Hikers and bicyclers will want to take advantage of the area’s many trails, especially three that lead to Florida Champion trees, the largest of their kind. These include a maple, a bluff oak and a persimmon.

Although the area’s roads are in good condition, off-road bicycles are best suited for the terrain.

Wildlife lovers may spot white-tail deer, white-eyed vireos and gopher tortoises as they trek through the woods. An observation tower and

two towers on site make watching and photography easier for the nature enthusiast.

Fishermen can pull up their coolers and sit on the banks of the river in pursuit of catfish, bream and bass.

Nearby slash pine plantations are being converted to longleaf pine to improve habitat for wildlife. There are six walking nature trails, as well as several narrow dirt roads. Five clearings have been planted with grass and grains to attract wildlife.

Early and late in the day are good for wild turkey and white-tailed deer.

April and October see an increase in the number and diversity of migratory songbirds along trails, roads, and the river.

Springtime is a season of rebirth and renewal. That’s evidenced by budding trees and the return of frolicking animals. Spring also can be a time to refresh meal-making.

Recipes like ‘Pasta Primavera’ from ‘Seasoned America’ (William Morrow and Company, Inc.) by Chef Paul Prudhomme can be brought out in spring and enjoyed throughout the warmer seasons. t 1/2 cup sliced carrots (cut on the diagonal) t 2 cups sliced zucchini t 6 tablespoons unsalted butter t 1 teaspoon minced fresh garlic t 1 cup asparagus tips or 3/4 cup snow peas t 1 cup chopped green onions t 2 cups heavy cream t 9 ounces of your favorite pasta

Combine the seasoning mix ingredients thoroughly in a small bowl.

Heat olive oil in a 12-inch skillet over high heat. When oil is very hot, add the prosciutto, cauliflower, mushrooms, carrots, and zucchini. Add the butter and, as it melts, stir in the garlic and the seasoning mix. Stir in asparagus tips or snow peas and green onions.

Stir well and cook just until the vegetables are crisp-tender, about 4 to

5 minutes. Stir in the cream and bring to a boil. Lower the heat to medium and cook until the sauce has thickened a bit, about 3 minutes.

Cook the pasta according to package directions; drain. Add the cooked pasta to the skillet, toss well and remove from the heat. Serve immediately.

he Levy County Library System, a department of the county, provides library service to the residents of Levy County.

There is a headquarters housing the library director, an administrative assistant and a youth services coordinator.

The library director and the administrative assistant provide administrative support for the five branches. The youth services coordinator provides programming for children and youth ages birth to 18 at all five library branches.

The administrative support consists of centrally ordering books and other library materials, library and office supplies, equipment, services (telecommunications, printing, book lease, copier maintenance, computer maintenance, etc.).

The library director coordinates branch activities, represents the system to the County Commission, to other county departments and to the public. The library director plans the system’s development, works with state library representatives

and other library directors to improve the System’s programs and activities.

She and the Administrative Assistant work with vendors to obtain the library materials, supplies, equipment, services, etc. required for the System’s efficient operation. A central automation system is operated from the headquarters to provide a catalog of library materials and circulation services.

The five branches of the Levy County Public Library System each serve a unique community. The library staff at each branch is responsible for the day to day activities of the library; collection development, circulation and maintenance; seasonal displays; and supervision of volunteers. They work closely with each branch’s Friends of the Library group to provide programming and other benefits to the library. Four of the library buildings are owned and maintained by the municipalities in which they are located while the fifth one is owned and maintained by a Woman’s Club.
