know… the picture! I had hoped that when the time came that I could finally manage to get a haircut that it would signal a quick return to normalcy. But here we are. I did get a much-needed haircut, but re-opening has been slower than I had anticipated. We miss our Chamber events. We miss seeing everyone at the monthly luncheons and will miss seeing all of our friends at the Annual NIBROC Festival in 2020. I trust everyone is taking all precautions to stay healthy so that we can see you again soon. I would like to thank Don Estep at the News Journal for his generous offer to mail copies of our magazine to News Journal subscribers in Corbin and Williamsburg. A few weeks ago, representatives from Northern Contours in Corbin contacted our office and shared an initiative that the company was undertaking in their Minnesota headquarters, the Pay It Forward Business Support Fund. When asked if our office would like to partner on a comparable initiative locally, I immediately confirmed that we would indeed. We are grateful to the Southern Kentucky Chamber, the Corbin Industrial Development Commission and the Cities of Corbin and Williamsburg, who all generously joined in the effort to support small businesses in our community. This issue includes photos of the business leaders that applied, and I am extremely happy to announce that we were able to help a total of 20 small businesses in Corbin and Williamsburg. Congratulations to all those selected, we want you to know that you are all integral members of our business community. I cannot thank Northern Contours enough for their forward-thinking generosity to our community. In the spirit of the fund, I hope these businesses will “pay it forward” to help others that are struggling during this pandemic, in whatever

CORPORATE SPONSOR SPOTLIGHT: WALLEN’S TOWING After nearly 90 years, Wallen’s Towing continues legacy of dependability and community partnership

f you were to look at a map and stick a pin in the exact meeting point of Knox, Laurel and Whitley Counties, you’d pretty much be sticking that pin straight through the location of Wallen’s Towing and Recovery, located at 952 Hwy. 25W in Corbin. The location is ideal for Wallen’s, as each day their trucks can be seen assisting those in need on the roads of Corbin, London, Williamsburg, Barbourville, and many surrounding areas. Founded in 1933 by Luther Wallen, Wallen’s Towing continued to grow and evolve until son Danny Wallen took over in the sixties. Danny’s son, Daniel, took the reins of the business in

the mid-nineties, and the fourth generation, 11-year-old Dylan Wallen, is already being groomed to one day lead the tri-counties’ most popular towing and recovery service into the future. “You have to make a brand out of it,” Daniel said recently when speaking about the success that Wallen’s has experienced in nearly 90 years of being in the towing and recovery business. “We’re in a very competitive business, and the community that you serve is who keeps the phone ringing. If you don’t keep them happy, then they’re not going to keep ringing you.” Luckily, down through the generations Wal-

len’s has been led by individuals who understand the value of hard work and keeping the customer happy by offering reliable service at a fair cost. “You have to have the initiative, the drive, and the ‘want to,’” Daniel said, recounting some of the valuable lessons that he learned from his father while growing up in the business as a young child and a teenager. It is these same principles that Daniel is currently in the process of instilling in his own son, who hopes to be taking some big steps toward being able to call himself an owner when Wallen’s begins to approach the century mark in a

little over a decade from right now. As for the immediate future, Daniel said his goal is to continue to maintain business as usual at Wallen’s. A satellite office has been added off of Exit 29 in north Corbin, however, which Wallen says has helped tremendously to cut down on response times to certain areas, especially with the amount of road construction that has taken place in and around Corbin recently. CORPORATE SPONSOR SPOTLIGHT: MI CASA AND MI JALISCO MEXICAN RESTAURANTS CONTINUE TO GIVE CUSTOMERS WHAT THEY WANT

i Casa Mexican Restaurant predates all other Mexican establishments in the Corbin area. Owner Oscar Barajas and his crew have accomplished this by being consistent in their commitment to offering customers a variety of authentic Mexican-style dishes, as well as providing a fun and relaxing atmosphere to dine in. Thanks to the great success of Mi Casa, located at 785 East Cumberland Gap Parkway, Barajas was able to expand with a second Corbin location, called Mi Jalisco, about ten years ago. This establishment is located a few miles closer to Interstate 75, in the Brentwood Plaza across the road from Walmart Supercenter. It offers many of the same delicious food options that you will find at Mi Casa, so if the wait happens to be too long for your liking at one location, it only takes a few minutes to drive and check out

the other. While both Mi Casa and Mi Jalisco do offer party rooms for larger gatherings, only Mi Casa currently offers outdoor seating. The restaurant’s spacious patio area has always been popular since it was added several years ago, but Barajas says it has been extremely helpful recently with the restrictions related to COVID-19. In addition to serving up some of the best Mexican cuisine in the entire tri-county area, Barajas is also passionate about being a good partner to the local community through his continued support of schools, churches, and athletic programs. And as a multiple-time People’s Choice Award winner for best Mexican restaurant in Corbin, it’s clear that the surrounding community likes to support Barajas as well. Recently, a second Mi Casa location has opened up off of Highway 192 in London, right

next to the Kroger store on the south side of town. This new location is offering online ordering, which is just the latest step that Barajas has taken to improve and expand his restaurants’ virtual presence. Earlier this year, he also made it possible to access the menus for all his establishments via the Internet, giving customers the option to browse using their own mobile devices instead of having to handle a physical menu. This was done both for the sake of convenience, and to give diners a contactless option should they

have any concerns related to potential spread of the COVID-19 virus. No doubt, COVID-19 has drastically changed the ways that we go about our day-to-day lives, and that includes how we eat. For anyone who is still hesitant to sit down and have a meal inside of a restaurant, both Mi Casa Corbin and Mi Casa London, as well as Mi Jalisco, always offer carryout service.
