Grilled Texas Peaches Ingredients 4 Texas peaches, fresh, halved, pit removed 1 teaspoon Texas olive oil ⅛ teaspoon kosher salt ¼ cup Texas honey ¼ teaspoon vanilla ¼ cup toasted Texas pecan, chopped

Flavor Note: Replace salt with Tajin (chili-salt) for an extra punch of heat and spice, or sprinkle with one of your favorite herbs, such as lavender, rosemary, or mint to boost up the flavor and aroma.

Preparation 1. Heat and outdoor grill or indoor non-stick grill pan to medium high.

2. Cut the peaches in half, remove their pits.

3. Coat the cut sides of the peaches with olive oil and a sprinkle of salt.

4. Place on the hot grill, cut side down, until the peaches has grill marks and start to soften, about 3 to 4 min.

5. In a small cast iron skillet or aluminum foil packet, place honey, vanilla and toasted pecans 6. Place the skillet or foil on the hot grill or stove top bring the mixture to a boil and allow to cook for 3-4 min while the peaches are grilling.

7. Turn the peaches over and place in the hot honey-vanilla pecans mixture with the grill marks up . Continue cooking over medium heat, another 2-3 min until the peaches are softened.

8. Remove from heat.

9. Serve two peaches halves with honey pecans mixture spoon on the top. Refrigerate leftovers for later use.

10. Top with ice cream, yogurt, or whipped cream

Oncor donates $1.7M to community nonprofits affected by COVID-19 Mexia Caritas gets $10,000 to feed the hungry Oncor announced on April 13 that the company would provide $1.7 million in donations to community non-profit organizations across their service territory that serve those most affected by the COVID-19 pandemic.

Funding will be focused on first responders, health care professionals and vulnerable or heavily impacted populations, such as seniors, children, homeless, and low-income or displaced workers and families.

Mexia Caritas food pantry was presented $10,000 on Wednesday, May 20.

Oncor CEO Allen Nye said, “For more than 100 years, Oncor has upheld our commitment of serving and supporting Texas communities. And while we know firsthand how resilient these communities are, we also recognize the unparalleled impact of this pandemic and the challenges our communities and nonprofit partners are now facing. We are honored to do our part in helping to meet these needs through the donations announced today.”

“Regardless of the challenges we may face, the men and women at Oncor know that we are stronger together,” Nye continued. “We want the many communities we serve to know that this commitment of togetherness extends to each of them as we continue to uphold our vital role of powering Texas communities.”

A significant portion of Oncor’s support will be through participation in North Texas Cares, a funder collaborative made up of North Texas foundations and United Ways that have come together to provide support for organizations that work with people and communities who may be most negatively affected by COVID-19. Other recipients include Paul Quinn College, the Tarrant County Food Bank and North Texas Food Bank, and additional local nonprofit organizations across Oncor’s service territory in West, Central and East Texas. The commitment includes $500,000 from Sempra Energy, Oncor’s indirect majority owner, through the Nonprofit Hardship Fund from the Sempra Energy Foundation.

“Now, more than ever before, nonprofit organizations are on the frontlines of supporting individuals affected by the COVID-19 public health crisis, and financial support —from partners like Oncor— is critical to response and recovery efforts,” said Jennifer Sampson, CEO of the United Way of Metropolitan Dallas, one of the founding members of North Texas Cares. “This generous gift symbolizes the spirit of giving that is synonymous with Texas. We are grateful that Oncor has stepped in to help galvanize United Way of Metropolitan Dallas’ —alongside United Way Chapters across the Lone Star State— rapid response to this crisis.”

A short history of Springfield According to the Texas Historical Commission, Springfield was established in 1838 by Moses Herrin around a large spring east of the Navasota River. In 1845, Limestone County named Springfield as its county seat; and by the 1850s, Springfield had a population of 2,600. At one point, the town had five general stores, two hotels and even its own courthouse; and by 1860, a college. When the Civil War broke out, three-fourths of the free men of Springfield joined the Confederate Army. After the war, however, former Confederates were not allowed to vote or bear arms, while black citizens did, and racial strife ensued.

In 1873, the railroad bypassed Springfield, and the Limestone County seat was moved to Groesbeck. Consequently, the population of Springfield dwindled as its residents moved elsewhere to find jobs. More information is available online through the Texas Historical Commission at www.thc.gov.

Springfield Lake, at Fort Parker State Park, is currently overgrown with plant life. Many birds and other wildlife may be observed by people walking the trail.

Springfield Trail provides peaceful, scenic nature walk

Limestone County’s Fort Parker State Park features several nature trails that are sure to please nature lovers, but one of those trails, Springfield Trail, is especially pleasant and appreciated by local residents.

Mexia Area Chamber of Commerce President Linda Archibald has fond memories of walking Springfield Trail with her family.

“Springfield Trail is a beautiful trail,” Archibald said with enthusiasm, “full of wildlife and birds; and it’s very historic for Mexia. You can follow the trail to where the springs empty into the Navasota River. It’s just a beautiful experience of history.

“We go on the Springfield Trail and hike it,” she continued.

“It’s an easy hike, from right there by the Rangers’ station.

“It should be well-known,” she concluded, describing it as a charming place familiar to locals.

Because of its moderate length (1.8 miles), she noted, almost anyone can take the trail, including small children and pets.

Local historian Liz McDaniel is well familiar with Fort Parker State Park since she used to work there and still sometimes helps put on tours of the area.

She described walking Springfield Trail as taking a hike “back into time.”

McDaniel’s preferred way to start Springfield Trail is to turn left after the Rangers station then circle around to park near the Group Barracks.

The trail entrance leads quickly into a thickly forested area, and the many trees – both evergreen and deciduous – that line the winding trail provide a pleasant covering of thick shade for those walking the trail.

After proceeding a good half mile on the trail the person walking will come to Springfield Lake.

“Springfield Lake is a spring-fed lake that is very

cool,” McDaniel said; it has a constant temperature of about 65 degrees year round. As the water fills up in the lake it travels below a small dam, which is also a rock wall that I’ve been told was part of a barrier for a swimming hole during the 1800s, when people used to live in the town of Springfield.”

These days, Springfield Lake is mainly used for fishing, especially around early February, when the park holds a youth trout clinic in coordination with local fishing groups.

Springfield Trail continues around Springfield Lake, which may then be viewed from virtually every angle. At one point, the Trail takes the walker to a high outlook where a bench is installed and where the walker may stop to view the Navasota River Dam, which forms Fort Parker Lake.

Continuing to proceed around Springfield Lake, the walker will come to a side trail, where the inquisitive may take a short jaunt into the woods to see the town’s site and signage explaining about the site of Springfield.

“As you walk this trail, you are walking through what was once downtown and residential neighborhoods of the town of Springfield,” McDaniel said.

Eventually, the Trail loops around to the park entrance, across the pavement and comes out by Springfield Cemetery, where many of the town’s original inhabitants are buried, one of whom is Logan Stroud, Limestone County’s largest slaveowner before the Civil War. It was on Stroud’s porch on June 19, 1865, that his slaves learned they were free, an incident now celebrated as Juneteenth.

Next to the Cemetery is a kiosk with a sign that shows a map of Springfield Trail.

As the walker continues past the cemetery and follows the trail to the left, through the woods once again, they will come out where they began, by the Group Barracks.

“It’s a lovely walk,” McDaniel said. “It takes about an hour. You can observe a lot of plants, birds, frogs and other wildlife. You can fish at the lake, which in January is stocked with trout, but year-round there are fish that can be caught in that little lake. It’s a recreation place; people like to go there and can catch bass and catfish.”

The overall complex – Fort Parker State Park, the Navasota River Dam and also the nearby Fort Parker Restoration – was built by a primarily African American company of the Civilian Conservation Corps between 1935 and 1942. Little did they know what a pleasant venue they were creating for the people of Limestone County. Nor did the people of Springfield, nearly a hundred years previously, realize their bustling city would someday be gone, except for their cemetery, but that future residents would enjoy the same natural beauty they did.

CCC builds dam, state park, fort reconstruction According to the Texas Historical Commission, the Civilian Conservation Corps began construction of Fort Parker State Park in August 1935 at the site of the former town of Springfield. The primarily African American company constructed the Navasota River Dam as well as the Fort Parker State Park buildings, roads and other park facilities, like the Activity Center, cement picnic tables and drinking fountains. The same CCC company also built what is now known as Old Fort Parker, a reconstruction of the original fort, for the Texas Centennial of 1936. The park project was opened and dedicated in 1941 by Texas Gov. Pat Neff and eventually competed in 1942. The 90th Annual Mexia Rodeo was a huge success!

Cowboys and Cowgirls from around the State of Texas and from across the great United State traveled to Mexia, Texas for this award winning Mexia Rodeo.

Well known national leaders in the UPRA circuit were in competition right here in Mexia.

With COVID-19 safety precautions in place, the competitors and spectators enjoyed Rodeo entertainment at its best. A record number of entries hit over 1000 and announcer T.C. Long did an amazing job along with award winning Champion Rodeo Co. to make it the best ever Mexia Rodeo.
