A

s this goes to press, Colorado and Wyoming have lots of snow, yet here in the appropriately named Sunshine State, it is still a humid, sweltering 88 degrees.

I told a colleague earlier this week I would love to have several days of 68-degree temps.

It’s been a hot one this summer and now as we descend into autumn, it appears we’re in for some more of those sticky, hot days before we actually get to those 68-degree temps – possibly by December.

We’re also entering our seventh month after a national emergency was declared due to the COVID-19 pandemic.

Here in Florida, we’ve seen the numbers reach all-time highs and now we’re leveling out, but to say we’re out of the woods just yet may be a tad premature. Is this our new normal? Is it the new normal for our country? Who’s to say?

In Levy County, most of us are trying to carve out a safe niche for ourselves, our families and our patrons.

Local restaurants aren’t as crowded as they once were, which just gives you more time to savor that Heart of Palm Salad on Cedar Key, or drop in for some of Mimi’s Krispy Fried Chicken in Williston.

New boutiques and shops are popping up around the county because more people would rather shop at home than drive to the larger cities and be too close to too many other folks.

Although many are divided on what can safely be done while social distancing, most everyone agrees that being in the great outdoors is most likely the safest place for anyone.

In Levy County, you can hike, kayak, swim, boat, go horseback riding or sit and soak up the sun – safely and outside.

Ecotourism is one of the biggest selling points of our county, and if you enjoy a varied change of scenery, there’s no better place to look. From the sand dunes of the Williston Highlands to the majestic ancient trees in the Goethe Forest to the tranquil waters of the Gulf of Mexico, our county offers something for everyone.

Whether you’re a tourist passing through for the first time, or someone who visits often, this is Levy County – our home – and we’re glad you’re here.

FYI Fall 2020 The Community’s Conscience

For more than 70 years, the Chiefland Citizen has been the conscience of the community it serves. The Citizen was established in 1950 by Jack Holland, and purchased in 1973, by longtime newspaperman Walter Wilson and his wife, Wihlena, both hands-on owners who did all the work themselves.

One by one, staff was added, including Wilson’s brother, Fred, in 1978 until the newspaper boasted 11 employees. In 1974, the Wilsons began to publish the Tri-County Bulletin, a free shopper.

After Wilson died in 1995,

Williston Pioneer:

Wihlena and son, Chris, took over the publishing duties of the newspaper.

In 1999, the Wilsons sold the newspaper to Landmark Community Newspapers Inc., which holds the philosophy that the only first-rate newspapers are those that are independently operated by people who live in the community and who are responsive to community needs.

Today more than 98 percent of its editorial content is contained to Levy, Gilchrist and Dixie counties and focuses on the people who live here and the issues that concern them.

The Voice of Williston

Only 24 years after Florida became a state, and 18 years before the city of Williston was incorporated, a newspaper was founded on the island community of Cedar Key and placed its roots in Williston in 1879.

Originally called the Island City Herald, the evolution of the Williston Pioneer is as rich and storied as the people it has continuously served for over 140 years.

The paper has changed hands numerous times over its lifespan, and has undergone, several name changes, including the Williston Sun. It wasn’t until 1968 that the paper finally came back

into local hands when Bess Williams merged The Williston Sun with the Suwannee Valley News. For the next 23 years the newspaper played a key role in the community, even with the advent of the Williston Pioneer, founded by Skipper Hammond.

In 2001, Landmark Community Newspapers Inc., purchased both papers and merged them into the current Williston Pioneer Sun News–the oldest continuously published newspaper in Levy County and one of the oldest in Florida.

W

hen St. Clair Whitman developed the tools to extract fiber from the boots of the sabal palm tree, he created a boom in the economy of Cedar Key. Whitman created brushes and

brooms that were used to clean, and were sold around the world straight from the Standard Manufacturing Company, started by Dr. Dan Andrews.

The company and Cedar Key’s brushes helped maintain the island through the Great Depression, employing more than 100 people.

developed the machinery and Dan Andrews and his brothers had the capital to invest.

When synthetic fibers became common in the 1930s, handmade brushes from Cedar Key became a dying industry.

Dan Andrews taught himself how to make the brushes, and substituted mineral oil for paraffin oil, which was

what the original plant in Cedar Key used.

Today, the lost art of creating the Cedar Key brush is kept alive by Pam Wadley, a Gainesville resident and volunteer at the Cedar Key Historical Society Museum.

Wadley learned the craft three years ago from Dan Andrews, the son of

FYI Fall 2020 Wadley said. “He oils it before he gives it to me. I set up my own little workshop so I can make them at home now.

I don’t need to use his workshop.”

Aside from Andrews, Wadley is the only person who knows how to make the brushes.

FYI Fall 2020 “That’s one of my motivations, of course,” Wadley said. “I’d love to be able to show somebody younger than I am how to do it.

“It’s a little awkward if they don’t live here in Gainesville to teach someone. And we would like to make sure

11 it’s someone who cares about Cedar Key as much as Dr. Andrews and I do. Wouldn’t want them to do it just because they enjoy the craft, we want them to appreciate the history that goes with the craft.”

Anna Hodges, executive director of the Cedar Key Historical Society Museum, said Wadley’s craft is important to the museum. The brushes are sold exclusively at the Cedar Key Historical Society Museum and all of the fibers that Wadley uses date to before 1950.

“It’s an extremely rare craft that dates back to at least 1910 if not before,” Hodges said. “In 1910 they established their

you can get it is Cedar Key and our museum … (Wadley) is the kindest, gentlest of souls and she’s putting out this huge, amazing product, I just want the world to know about it, really.”

The only reason Wadley makes the brushes is to donate them to the Cedar Key Historical Society Museum, which displays and sells the brushes.

“I think they appreciate it,” Wadley said. “We have people come by that are from Cedar Key and enjoy looking at the exhibit that Anna created, with a little bit of input from me.”

“Many people really appreciate that exhibit who visit us,” Wadley said.

“We do sell the brushes, so every little bit helps when you have a non-profit.”

Wadley credits Cora Andrews with saving the fiber and some of the original equipment.

“We wouldn’t have had anything to work with,” Wadley added. “I don’t know why she thought to save it, actually. But if she hadn’t done that, we wouldn’t have had anything. She was a remarkable lady, she really was.”

“If it wasn’t for Mrs. Cora, we wouldn’t have the equipment or the fiber,” Hodges added. “And when the fiber’s gone, it’s gone for good.”

Shell Mound:

A glimpse into the land before America

N

orthwest Florida is well known for being the Nature Coast. With such a rich and storied past, it could easily be called the Historic Nature Coast and Levy County sits right in its midst.

The history of this area spans much farther back than the settling by Europeans and at least one site has brought even more light on just how far back. Recent discoveries have suggested the village was active over 2,000 years go, well before the calendar shifted from BC to AD. Shell Mound is a park just off the gulf coast and north of Cedar Key in the Lower Suwannee National Wildlife Refuge. It is an ancient coastal village site and archeological digs

at the site have given us a window into the world of what the area was like before America was even an idea.

The park has two primary points of interest – a 30-minute walking trail (a little under half a mile) and a fishing pier.

The walking trail takes visitors around the mound area with informational stations provided by the University of Florida scattered throughout detailing what is known about the ancient people and their lifestyle.

One of the more interesting facets of the mound area is the discovery of parabolic dunes. Parabolic dunes are U-shaped burial sites that align with the winter and summer solstice.

It is believed that native people traveled from as far away as Georgia to attend ritual feasts at the site. Huge cooking pits used for cooking large See MOUND/Page 22

quantities of food appear to validate those beliefs. Some of the items eaten include oysters, fish, birds and sea turtles. The feasts are thought to have taken place around the summer solstice (June 21).

While the village long ago ceased to be used by natives to the land and has been overtaken by nature, there is still much to learn about Shell Mound and its people.

While not as popular as the Shell Mound tour, the park has another nature trail – Dennis Creek Trail. This

trail takes visitors on a one-mile loop through various terrains and includes a couple of boardwalks.

One of the highlights to the trail is the observation platform which overlooks a tidal pool. Here visitors can observe the transition from sea to land.

The fishing pier is a popular spot for those who like to wet a line and try their luck. Anglers can try their luck for tarpon, snook, redfish, drum or trout to name a few species.

Want to take advantage of the water but not into fishing? Bring the kayak and spend the day paddling the area, soaking up the sun and admiring the

abundance of nature this area has to offer.

For those wanting more than a day trip, a county-owned campground is located nearby as well.

The park is open from sunrise to sunset daily and there is no charge for

FYI Fall 2020 admission. Those who choose to fish will need a license, however.

While in the area, don’t forget that Cedar Key is only a 10-minute drive away and is home to numerous restaurants and bars where visitors can sit, drink and dine while talking about the day’s adventure.

To get to Shell Mound, take SR 24 to CR 347. Turn north on CR 347 and travel 2.4 miles. Turn left on CR 326 and drive 3.5 miles to the end.

Smoke’em, baby!

ho doesn’t love chicken wings? I’m sure there are some who do not but I certainly do. The great thing about wings is that there are endless possibilities as far as flavors go. Wing flavors include everything from the traditional buffalo to teriyaki to Cajun to jerk to… well, you name it.

The question is, have you ever tried smoked wings? If the answer is no, you are missing out.

Smoking wings imparts tons of

FYI Fall 2020 flavor and, while not exactly “healthy,” is more healthy for you than deep frying. How much more, you ask? Let’s take a look.

One deep fried chicken wing has 159 calories and 11 grams of fat (2.9g saturated). It contains 39mg cholesterol, 157g of sodium and 5.4g carbs.

One smoked chicken wing has 111 calories and 7.9g of fat (1.4g saturated).

It contains 25mg cholesterol, 157g sodium and 1.3g carbs.

For one wing that may not seem like a lot, but who eats one wing? For a 10 wing serving, deep fried wings add 480 more calories, 31g more fat (15g more saturated fat), 140mg more cholesterol and a whopping 31g more carbs than smoked wings.

A second benefit is that they really are not that much more trouble.

There’s no deep fryer, no oil splatters in the kitchen and no used oil to dispose of. The time difference is also really minimal. You can heat up a smoker in about the same time you can heat up oil in a deep fryer. While smoked wings take a few minutes longer, they require less attention, so it balances out.

There’s no “recipe” for the chicken wings in this issue. It’s more about method and less about ingredients.

You know what flavors you like. This just tells you how to get the best results with those flavors.

The wings shown were smoked with a little basic dry rub. I’m using this as kind of a crash course on the basics

for smoking wings. I’m including my basic poultry dry rub recipe, but there are plenty of options available at your local grocery store as well.

Don’t get me wrong. I may not have gone to the trouble of brining or marinating this batch of wings but that doesn’t mean I didn’t have tons of flavor. The dry rub and hickory chips definitely brought the flavor.

Of course, feel free to brine marinate your wings if that’s what you prefer.

It’s your call. Depending on my mood, I like to marinate as well.

I primarily use a small Kamado-style grill at home but any grill or smoker can be used. The setup may be a little different for each but the results should be very similar.

There are two basic methods for smoking wings. The long and slow method imparts a little more smokey

flavor but takes more than twice as long.

Basically, the grill should be set at 250° and indirect heat should be used.

For Kamado-style grills, use the deflector. For other styles, place the charcoal on one side and the wings on the opposite side of the grill.

You will need to smoke the wings for about two hours. I move the wings to the hot side of the grill for the final 15-20 minutes, turning once to crisp up the skin.

Be sure the wings reach an internal temperature of 165°, remove them from the grill and rest them for five

minutes before serving.

The second method calls for direct heat. If using a Kamado, do not install the deflector. This method is much quicker and allows the skin to crisp as the wings cook. You definitely want crispy chicken skin. Nobody likes rubbery chicken skin. Nobody.

I used the second method for these wings.

I highly suggest using natural wood over charcoal. It burns hotter and longer and is also easier to control.

use wood chips. My favorites are pecan and hickory. Remember to soak the wood chips for an hour before using them and place them in a foil pouch with a few holes punched in it.

Add charcoal and heat the grill to 350° and add the wood chips.

Add the chicken wings directly over the coals and close the lid. Smoke for 20-25 minutes and turn. Smoke the wings for another 20-25 minutes, or until the wings reach an internal temperature of 165°.

Remove and rest for five minutes before serving with your favorite sauce and sides.

Here’s the dry rub recipe. Feel free to make changes to suit your taste.

1/4 cup smoked paprika* 3 tablespoons black pepper 3 tablespoons granulated garlic 3 tablespoons onion powder 2 tablespoons oregano 2 tablespoons thyme 1 tablespoon kosher salt 2 teaspoons cumin 1 teaspoon cayenne pepper (optional) * Sweet paprika can be used but smoked adds more flavor

hen people hear the word “canyon,” the flattest state in the country does not typically come to mind, but maybe it should. That’s

exactly what the owners of The Canyons Zip Lines and Adventure Park hope will happen.

A little over 10 years ago a Naples couple, Traci and Dave Walker, decided to build a zip line course in See CANYON/Page 44

Florida. Their search for the perfect place led them just outside of Ocala next to Interstate 75 to an abandoned limestone quarry which had created, well, a canyon.

Mining ended at the quarry about 1930 once the water table was reached, leaving the 94 acres untouched for 80 years. The result was a canyon filled with towering cliffs, dense foliage and pristine ponds - the ideal location for a zip line course.

The doors opened in 2011 and now boasts three different zip line courses, horseback riding trails and even kayaking.

The Sky High Tour may only have three zip lines and lasts only an hour, but it starts high and ends high. It’s also the most strenuous of the three courses. The zip lines will take visitors on a trek through Sky High Canyon at heights of 155 feet above the ground. The longest zip is a whopping 1,150 feet long and the final zip soars over Gator Lake at speeds of up to 45 mph.

And yes, there is a gator in Gator Lake.

His name is Elvis and he has not... left The Canyons.

The price tag for this tour is $44.99 per person and lasts about an hour.

The Treetop Express Tour consists of five zip lines as well as two sky bridges. This tour also covers part of both the Big Cliff Canyon Tour and the Sky High Tour. Unlike the Sky High Tour, this one starts low and slow and finishes with a high-flying bang, zipping 155 feet above the ground at high speed over Gator Lake.

The price for this tour is $69.99 per person and lasts 1.5 - 2 hours.

The course consists of nine zip lines and two sky bridges, but that’s not all.

Those choosing this course will also rappel from the final platform. This course also starts low and slow, then builds in height and intensity with longer and faster lines.

The cost for this tour is $89.99 and lasts for 1.5 hours.

Tony Wilbanks, one of the certified guides at The Canyons, said heights should not keep anyone from experiencing zip lines. In fact, they didn’t stop him.

“I have a fear of heights and I face that fear every day,” said Tony. “I wasn’t going to let my fears stop me.”

According to Tony, who has worked at The Canyons for two years, safety is a priority. Every tour guide is certified prior to working with the public and must recertify every 3-6 months. Along

with extensive training on zip lining, tour guides are also trained to handle any situation that might arise. Those situations could include anything from accidents to those who start the course but then decide they cannot continue.

According to Tony, accidents are few and far between. “I personally haven’t had experienced an accident in the two years I have been working here.”

Zip lining actually doesn’t take a lot of physical ability since gravity and inertia do most of the work. Anyone who is healthy enough to climb the towers and walk the sky bridges should have no problem completing the course.

There are some restrictions as well.

Zip line participants must weigh more than 70 pounds but not more than 270. This is for the safety of both the guests and staff.

FYI Fall 2020 participant to achieve the proper momentum to complete the zip. The maximum weight is put in place to allow the participant to be able to brake safely and for staff members to help stop them at the end of the zip.

While there is no age cap at the top, participants must be at least 10-yearsold and anyone under 18 must be accompanied by an adult. A parent or guardian must also sign a participation agreement as well.

A few other common sense rules include long hair must be tied in a ponytail in the back; closed-toed shoes are required; and dangling jewelry should be avoided. Also, no one under the influence of drugs or alcohol will be allowed to participate.

As mentioned earlier, zip lines are not the only attractions at the Adventure Park. There are also options for

land and water.

For those who prefer to remain grounded, horseback riding is definitely a great option, with the term “grounded” being used loosely. Horseback riders will climb along the canyon to heights of 100 feet or more as the trail takes participants through some of the most breathtaking scenery in the state as guides lead them into the canyon. Riders can expect to see spectacular views of both Big Cliff Canyon and Sky High Canyon as well as scenic lakes, vistas and woods.

The cost for the horseback tour is $60 per person and reservations are required. Walk-ins will be accepted on a space-available basis.

As with the zip line tours, night time horseback excursions are also offered.

Three options ranging from $45-$90 per person gives participants the opportunity to know their horse on a personal level by learning grooming techniques travel to a fireside hideaway by the lake and enjoy wine, gourmet chocolates and s’mores.

Visitors may also choose a paddling adventure and kayak on Lost Spring Lake through scenic Big Cliff Canyon.

Kayakers will glide across spring-fed lakes as they make their way around immense cliff walls as guides point out fossils and other artifacts which mark the area’s storied history.

The kayak tour lasts for about 1.5 hours and costs $45.

A gift shop also offers many of items typical of such a place, including T-shirts, caps, novelty items and snacks.

With only about half of the property being utilized at the moment, there

he Levy County Library System, a department of the county, provides library service to the residents of Levy County.

There is a headquarters housing the library director, an administrative assistant and a youth services coordinator.

The library director and the administrative assistant provide administrative support for the five branches. The youth services coordinator provides programming for children and youth ages birth to 18 at all five library branches.

The administrative support consists of centrally ordering books and other library materials, library and office supplies, equipment, services (telecommunications, printing, book lease, copier maintenance, computer maintenance, etc.).

The library director coordinates branch activities, represents the system to the County Commission, to other county departments and to the public. The library director plans the system’s development, works with state library representatives

and other library directors to improve the System’s programs and activities.

She and the Administrative Assistant work with vendors to obtain the library materials, supplies, equipment, services, etc. required for the System’s efficient operation. A central automation system is operated from the headquarters to provide a catalog of library materials and circulation services.

The five branches of the Levy County Public Library System each serve a unique community. The library staff at each branch is responsible for the day to day activities of the library; collection development, circulation and maintenance; seasonal displays; and supervision of volunteers. They work closely with each branch’s Friends of the Library group to provide programming and other benefits to the library. Four of the library buildings are owned and maintained by the municipalities in which they are located while the fifth one is owned and maintained by a Woman’s Club.
