I

t’s spring! And that, in itself, should be enough to warm even the coldest heart.

We were lucky in Levy County this year. It was a very mild winter, but even still, most everyone is excited to see the natural progression of life as winter begins its descent into spring as life evolves from the dingy tans and browns into verdant splendor.

There is just something awe-inspiring to stand in the middle of a paddock and deeply inhale sunshine, fresh air and maybe a little pollen too.

This quarter’s FYI spotlights the city parks in Bronson, Cedar Key, Chiefland and Williston.

Here is where you can go to get away from ringing telephones and household chores and enjoy the splendid outdoors.

Peggy O’Neill Basham Park in Williston is one of my escape places. Its winding walking trail is small, but filled with beautiful trees, blooming bushes and just recently, hundreds of azaleas showing off their brilliant pinks.

The best part of the cities’ parks is they are free.

Families can enjoy picnics and the children can play or skate while mom and dad enjoy nature in all her glory.

This is a season of happenings, as most every weekend is filled with outdoor events, community gatherings and a chance to experience life outdoors once again.

Whether you’re kayaking or canoeing down the Waccasassa, playing a round of golf or digging into fresh Cedar Key clams, it’s all right here.

Grab your sweater and sunglasses and set out to enjoy the place we call home.

FYI Spring 2020 The Community’s Conscience

For more than 70 years, the Chiefland Citizen has been the conscience of the community it serves. The Citizen was established in 1950 by Jack Holland, and purchased in 1973, by longtime newspaperman Walter Wilson and his wife, Wihlena, both hands-on owners who did all the work themselves.

One by one, staff was added, including Wilson’s brother, Fred, in 1978 until the newspaper boasted 11 employees. In 1974, the Wilsons began to publish the Tri-County Bulletin, a free shopper.

After Wilson died in 1995,

Williston Pioneer:

Wihlena and son, Chris, took over the publishing duties of the newspaper.

In 1999, the Wilsons sold the newspaper to Landmark Community Newspapers Inc., which holds the philosophy that the only first-rate newspapers are those that are independently operated by people who live in the community and who are responsive to community needs.

Today more than 98 percent of its editorial content is contained to Levy, Gilchrist and Dixie counties and focuses on the people who live here and the issues that concern them.

The Voice of Williston

Only 24 years after Florida became a state, and 18 years before the city of Williston was incorporated, a newspaper was founded on the island community of Cedar Key and placed its roots in Williston in 1879.

Originally called the Island City Herald, the evolution of the Williston Pioneer is as rich and storied as the people it has continuously served for over 140 years.

The paper has changed hands numerous times over its lifespan, and has undergone, several name changes, including the Williston Sun. It wasn’t until 1968 that the paper finally came back

into local hands when Bess Williams merged The Williston Sun with the Suwannee Valley News. For the next 23 years the newspaper played a key role in the community, even with the advent of the Williston Pioneer, founded by Skipper Hammond.

In 2001, Landmark Community Newspapers Inc., purchased both papers and merged them into the current Williston Pioneer Sun News–the oldest continuously published newspaper in Levy County and one of the oldest in Florida.

Little Shark Park 192 2nd St., Cedar Key

Lil Shark Park is on the beach in downtown Cedar Key and is the most popular park on the island. With its location, Lil Shark Park is the best known as well.

The park has a lot to offer, with a wide range of playground equipment for the young ones and even a few exercise stations for the adults.

Along with the usual swings (with a variety of swinging options), the park boasts some very unique pieces as well, including a couple of musical options.

Gus’s Crab Trap is an artistic “jungle gym” type piece that was aptly named by a Cedar Key young-

ster who thought it looked like a crab trap when he first saw it.

The beach is connected to the park and allows for those so inclined to get their toes in the water or sand, whichever they prefer.

For those who want to dine alfresco, there are picnic tables scattered around the park.

The park is also dotted with palm trees, adding to the scenic beauty of the beach and park.

Cemetery Point Park

16050 East Point Road, Cedar Key Unless you’re a local, or you are lucky enough to know a Cedar Key resident, you might miss out on this hidden gem..

Cemetery Point Park is actually tucked behind the city’s cemetery, as the name implies.

Although there is no beach, this park has a lot to offer visitors as well. For starters, there’s a long and winding boardwalk that takes visitors along the marshy shore.

Along with the boardwalk, Cemetery Point Park features a few more options for those looking for exercise.

Along with the boardwalk, there is a fitness trail that boasts a number of exercise stations along the way. If you’re looking for recreation to go with your fitness routine, the park also has a disc golf course as well.

Add in a couple of spots for lounging and taking in the island scenery, and visitors will be glad they went to the effort to find this hidden gem.

horses

T

here’s not been a time in Margy Cox’s life when she didn’t like horses.

It’s almost like a pre-destination with the animals, she said, adding most little girls are fascinated by horses. Most outgrow it.

Margy did not.

As a young teenager in Seattle, Wash., Margy (born Margaret) saved her money until she could buy her own and from that point on, her future

was sealed, despite a few twists and turns along the way.

From her spacious and airy home in Steeplechase Farms in Morriston, where the main motif throughout is equine-related, Margy and her husband, John, spoke zealously about their love of horses, and particularly carriage driving. However, everything the couple enjoys is talked about with gusto and it’s clear to see how their passions drive them.

Quarterhorses were Margy’s first love and she rode them through Point Defiance Park before traveling to Sweden where she was educated after

high school.

John, who served in the U.S. Marine Corps, said his wife actually loved all horses but tended to be scared of the larger draft horses.

An interior designer by vocation, the quiet Margy spent many years caring for her horses as her primary hobby, eventually turning boarding horses into a side business.

The progression from equestrian to show woman (Arabians) was next.

By 1983, Margy had moved on to competitive combined carriage driving using an Arabian-Percheron cross.

“It was a challenge to put wheels

behind a flight animal,” she said. “You have wheels, you go fast.”

In combined driving, the driver sits on a vehicle drawn by a single horse, a pair or a team of four. The sport has three phases: dressage, cross-country marathon and obstacle cone driving.

In dressage, judges inspect at standstill in the novice classes and in advanced classes, transitions in gait and speed are judged. Dressage movements may include circles, figure eights and all paces.

about speed and endurance, which tests the horse’s ability as well as the driver’s knowledge. Obstacles are often a part of the course, which makes this segment the most thrilling to watch.

The last segment, the obstacle cones, horse and driver negotiate a series of preset cone patterns. Each cone has a ball on it and the driver’s goal is to pass as accurately as possible through the cones without knocking off the balls.

It is the second phase, the marathon segment, where John comes in. He serves as Margy’s navigator – a critical post. He is positioned immediately behind Margy and tells her where to go on the course. Hours of practice and studying the course can go into a preevent, and the Coxes do it often across the United States.

John tells of how they ended up in Florida – all Margy’s idea, he said.

He was still in Washington and she’d come to Florida for horses when he got the call.

“I bought a horse for $60,000,” she said. “We’re moving to Florida.”

Simple as that.

John said he couldn’t argue because he was ready as well. Besides, Margy, an entrepreneur from the get-go had started a cottage soap making business that developed into an online phenomena.

The soaps, holding a little pony in the center, were an immediate hit and so successful, she was able to sell the company for a lucrative profit, which enabled the move and her passion for all things horses.

Is there money to be made in combined driving events?

John gave out a huge belly laugh, “No!” Mostly it’s for trophies, ribbons and bragging rights because any money you win is turned right back into the horses, carriages, travel and entry fees, he said.

Margy has lots to brag about including competing in four Nationals and more than 50 events at Black Prong Equestrian Village.

However, there’s no place like home, they both agree.

From the winding driveway down to the stables and window-laden house that faces the Goethe State Forest, the Coxes are secluded in their haven where nature abounds.

There, Margy finds solitude and contentment working in her flowers and gardens and watching the wildlife prance across the forest.

BRONSON James H Cobb Park 275 Picnic St., Bronson

The James H Cobb Park is Bronson’s hidden gem. In the center of town, between the Greater Works Ministries Church and the green Retro Roadshow emporium sits Picnic Street, off Hathaway Avenue.

At the end of Picnic Street is the 18 acre park, which was donated to the town of Bronson in 1984 by the Bronson Recreation Association.

Park amenities include: a 1/4 mile walking/jogging track with a pavilion and playground in close proximity.

There are three fields suitable for soccer and football, a basketball court, five baseball, softball and T-Ball fields,

a tennis court and three restrooms.

A large pavilion, next to the second playground, may be reserved with a $50 refundable deposit.

The Bronson Veteran’s Memorial is situated in the center of the park, near the basketball court No pets are allowed in the park.

A Race for River Rats

I

t’s 15 miles of twists, turns and surprises as canners make their way down the Waccasassa River in the challenging Wild Hog Canoe Race.

Begun in 1977 by Frank Couch III as a way of promoting his canoe rental business, the first race had only 12 brave souls willing to make their way down the river.

Now in its 43rd year, scores of race contestants will compete April 25 for bragging rights to be the Master of the River as they drag their canoes through mud, over logs, dodge branches and fend off of the wildlife as they make their way down the picturesque Waccasassa.

The race begins at the bridge on SR 24 between Bronson and Otter

Creek and takes river rats through beautiful cypress swamps and hardwood hammocks.

Racers compete against the clock, with boats starting every two minutes.

Once the canoe leaves the starting line, competitors are on their own until they cross the finish line on Hwy.19 between Otter Creek and Gulf Hammock. There, racers are greeted by hundreds of cheering fans, live music and barbecue Proceeds from the event go the Association of Retarded Citizen of Levy Count, an organization that operates a work center in Otter Creek for mentally handicapped people of all ages. In order to stream line registration on the day of the race, as well as keep costs

down, racers must pre-register in order to receive a T-shirt commemorating the race, which starts at 9:30 a.m. after a review of the rules.

CHIEFLAND Trailhead Park

121 S. Main St., Chiefland Trailhead Park in Chiefland does not have a lot of the amenities many other parks do, but it does have something the others do not -– the Nature Coast State Trail.

The Nature Coast State Trail is a

system of hiking-biking trails that run along the western side of the state, offering outdoor enthusiasts a safer way to enjoy hiking or biking. The trails have rest stations along the way and also meander through a number of small towns in Northwest Florida.

As for Trailhead Park, the park itself offers picnic tables and three gazebos situated just behind the historic depot in Chiefland.

CHIEFLAND Chiefland Skatepark 826 NW 4th Drive, Chiefland

This small park is tucked away behind Chiefland Middle and High Schools.

The centerpiece to this park is the Delma Locke Skate Court, which offers bicyclists and skateboarders an opportunity to hone their skills on a number of platforms.

The skate court was built in 2009 was built with assistance from the Florida Department of Environmental Protection.

Alongside the skate court is a playground with the usual slide and

swings as well as a couple of other playground pieces for youngsters.

A handful of picnic tables scattered among the trees also give visitors a place to enjoy a meal in the great outdoors.

Love is in the Air

r. Norman C. Leppla the University of Florida expert on love bugs says this pesky insect that seems to collect on cars especially windshields and buildings, the ground and people “is a seasonally abundant member of a generally unnoticed family of small flies related to gnats and mosquitoes.“ While Leppla’s academic paper “Living with Lovebugs” thinks they generally go unnoticed, he does say later that “Lovebugs characteristically appear in excessive abundance” twice a year.

And let’s dispel the myths that lovebugs were created genetically at the University of Florida to kill mosquitoes that failed as we still have those nasty biters or were lovebugs were brought in from another area for study at the University and escaped.

No such thing, this is an invasive pest that has flown up from Central and South America and is continuing on a northward trek. Florida just happened to get in their way.

Most folks cannot help noticing the insects as they swarm over Florida and other Gulf Coast states twice a year. And as they try to remove the dead black bugs and their sticky remains from vehicles.

And while lovebugs bug humans, that is the only bad thing to be said about them. They do not bite or harm anything other than splattering on whatever gets in their way.

They just simply bug people! About the only way to avoid them is to only go out after dark as they do not fly at night. Oh, and don’t turn on the outside lights lest they take it was a welcome sign.

But they are such romantics, with

male-female hookups flying attached to each other.

And while you do not see their babies, they are right under your feet. After the lovebugs mate, the females takes off to lay her eggs in a burrow underground where the larvae will emerge to feed on the vegetative debris think grass clippings in the grass they call home before emerging to fly and mate in the spring and fall. The babies also like to munch on manure and decomposing organic debris.

After mating, the lovebugs don’t live for more than 92 hours. What could be more romantic?

Well, certainly not cleaning up the mess they leave behind. That can take longer than a lovebugs lifetime.

So why are they all over vehicles?

In his paper, Leppla said “female lovebugs are attracted to UV irradiated aldehydes, a major component of automobile exhaust fumes” and cited other studies on the subject. “They may confuse these chemicals with the odors emitted from decaying organic matter.”

They like heat and Floridians know there is no hotter place than automobiles and highways.

According to Leppla, “The body fluids of lovebugs are acidic and immediately dissolve automobile paint. When numerous lovebugs are smashed on the front of a vehicle, the contents of their bodies, especially eggs, coat the painted surface. No permanent damage is caused, however, if the surface is cleaned before the coating is baked by the sun for a day or two.”

His recommendation: Coat the front of your vehicle with a car wax and remove the lovebugs within 24 hours.

Phlox

ne of the many beauties of spring are the glorious wildflowers, and Levy County is certainly blessed. Ideal soil and weather temperatures allow the wildflower flower species of Phlox to flourish along Levy County roadsides and medians.

The many shades of Phlox delight travelers in abundance.

Heat and drought tolerant, Phlox subulata, or more commonly known as creeping phlox, moss pink and moss phlox, can be seen in waves of color throughout Levy County.

Originally a native of Texas, Phlox readily grow throughout Florida and coastal areas of the southeast. Depending on the cultivar planted, colors vary from red, lavender, pink and white, white and dark blue. Plants grow no more than about 6 inches tall, make excellent ground cover and may be used cascading down walls.

According to UF/IFAS Extension,

the ideal planting time in Levy County, (Zone 8) is May, June and July. Phlox flower in spring and prefer to be planted in partial to full sun.

According to Troy Roberts, Communications Specialist District Two, Northeast Florida, Florida Department of Transportation, the Chiefland Maintenance office usually plants the native Florida-grown species of Phlox by the end of each year. For successful plantings, Roberts says the crews scarify the ground, apply the seed and lightly roll the seed to stabilize it in the ground.

Seed is ordered annually and usually planted in new areas. “In addition to adding color and beauty to North Florida, it also presents FDOT with a unique cost-savings opportunity. Without the need to mow these areas as frequently, we save money on fuel costs, maintenance costsand the time our maintenance crews spend on mowing,� Roberts said. The mowing See PHLOX/Page 33

One of the many benefits of Phlox, besides the beauty, is they

are an attractant to native pollinators. More than 4,000 species of bees, 750 species of butterflies and thousands of species of wasps, flies and beetles depend on wildflowers.

Pollination is an essential ecological function. Without pollination, plants cannot produce seeds, and seeds are the next generation of plants.

I

admit it. There’s not been a lot of cooking around my house this past quarter. I’ve been up to eyeballs with newspaper and family stuff, and if I actually throw a meal together it’s one that takes less than 30 minutes and is probably not as nutritious as it should be.

I dream of days long ago when I labored over new recipes, perfecting each one to suit my taste – or wallet.

Not anymore.

Too often I find myself sitting down with a bowl of oatmeal or a peanut butter sandwich and calling it dinner.

Just yesterday I told my husband, “I’m making baked ziti this weekend.”

“You are? I remember making that for you once,” he answered.

“Uh, no,” I responded. “You made a baked pasta dish.”

“Ziti,” he countered.

Well, it may have been ziti noodles, I conceded, but the absence of ricotta meant it wasn’t real baked ziti.

Here’s my favorite recipe for the weekend.

It’s quick, easy and loaded with carbs. What more can you ask for?

1. Boil the pasta: Heat a large pot of water to a strong boil. Add a tablespoon

of salt and a dash of olive oil. Add the pasta and cook at a rolling boil, uncovered, until the pasta is al dente—edible but still a little firm to the bite.

Drain the pasta through a colander.

Toss with a little olive oil so the pasta does not stick together while you make the sauce.

Ingredients • 1 pound ziti pasta • Extra virgin olive oil • 1/2 pound bulk Italian sausage • ½ pound ground beef • 1 small onion, diced fine • 3-4 garlic cloves, chopped • 2 T fresh basil, minced • 1 T Italian seasoning • 1/2 tsp. red pepper flakes

• 1-2 tsp. oregano depending on your preference • 1 large jar of marinara sauce (about 32 oz.)

• 1 T honey or ½ tsp. sugar • 1 pound of mozzarella cheese, grated or shredded • 1 heaping cup of ricotta cheese • 1 cup grated parmesan or pecorino cheese

the sauce. Heat a tablespoon of olive oil in a large sauté pan on mediumhigh heat. When the oil is shimmering hot, add the meat. Break up any large chunks of sausage as it cooks. Brown well. Don’t stir that often or it will be more difficult for the meat to brown.

3. Add onions and sauté, then add garlic, spices, then tomato sauce: When the meat is mostly browned, add the

onions and stir well to combine. Sauté everything until the onions are translucent and beginning to brown, about 4-5 minutes. Add the garlic, basil, Italian seasoning, marjoram and red pepper flakes and stir to combine.

Cook 1 minute, then add the tomato sauce and honey and stir well. Bring to a simmer.

4. Preheat the oven to 350°F. 5. Layer sauce, cheese, pasta in casserole dish: Spread a thin layer of sauce in the bottom of a 9x13-inch casserole pan, then dot the surface with half the ricotta cheese. Ladle a spoonful of sauce into the pasta, stir it well and then add the pasta into the casserole.

WILLISTON Heritage Park

When it comes to seafood, it’s OK to say

“CHEESE!”

I

f you ask a classically trained chef, they will tell you cheese and seafood do not go together. Ever.

In this installment of The Suwannee Chef, we’re breaking the rules and running them through the shredder with Seafood Au Gratin.

There’s a lot to love about this dish, like the fact it is versatile, and fairly easy to prepare. Let’s talk about that latter point first.

This is actually a dish I created a few years ago, and over time it has evolved into this particular variation.

Those who saw this recipe would tell me, that looks really good but I could never do that.

My reply would be, can you make mac-and-cheese from scratch?

Almost all of them would say, “Yes.” I would reply, “It’s the same thing, only with different cheese and seafood instead of macaroni.”

Seriously. It is. Anyone who can prepare a basic cheese sauce can make this dish.

Let’s talk versatility.

Don’t like oysters. Substitute them for another seafood variety or more of one already in the dish.

Experiment with different cheeses, but avoid strong-flavored cheeses because they will overpower the delicate flavor of the seafood.

Love seafood boils? Throw in some corn, some browned smoked sausage, Cajun seasoning and cooked diced potatoes. (You’ll need to omit some of the seafood for balance) Make it a little fancier? Hollow out large crusty rolls and fill them with the seafood before baking.

I do have a few words of caution.

Seafood, by its nature, contains a lot of water. Be sure your cheese sauce is pretty thick before assembly. Trust me, the water in the seafood will balance it out. If it is a little loose after baking, don’t panic. Simply make sure everyone has a spoon. It will still taste just as good.

Now it’s your turn. Break the rules, because when it comes to seafood, I can definitely say “CHEESE!”

Seafood Au Gratin Serves: 2 (main dish)

• 3 T butter • 4 T all-purpose flour • 1 C whole milk • Salt and white pepper • 3/4 C grated Italian blend cheese • 1/2 pint medium-sized oysters, with liquor • 1 dozen medium shrimp, peeled and deveined • 1/4 pound white fish • 1/4 pound crab meat • 8 buttery crackers, crushed • Paprika

• Preheat the oven to 400 degrees F. • Melt two tablespoons butter in a small pot over medium-high heat.

Stir in the flour and cook, stirring constantly with a whisk for one minute.

• Whisk in the milk and oyster liquor, a little at a time, then season with salt and pepper. Bring the mixture to a boil and then reduce the heat to mediumlow. Simmer for 4 to 6 minutes, stirring occasionally. Remove from heat and stir in 1/2 cup of the cheese.

• In a bowl combine the oysters, shrimp and crab meat and fish. Season with salt and pepper.

• Lightly grease two individual oven-safe casserole dishes.

• Divide seafood into casserole dishes and cover with the cheese sauce.

• Microwave remaining teaspoon of butter and add to 1/4 cup of cheese and crushed crackers. Mix well.

Sprinkle mixture over the two casseroles and then sprinkle with paprika.

• Place in oven and bake for 8-10 minutes or until bubbly and browned. Remove from oven and serve warm.

5. This dish needs to be served warm.

It’s OK to assemble the dish a little in advance but wait until just before service to place it in the oven and bake it.
