Divide the cranberries among the sections of a standard (12-cube) ice cube tray. Fill the tray sections with water and freeze until frozen, at least 4 hours and up to overnight. Add 1/2 cup of the tequila, 1/3 cup of the lime juice, 3 tablespoons of the orange liqueur, 1 1/2 tablespoons of the coconut milk and 1 tablespoon of the superfine sugar to a large cocktail shaker. Place cloves and cinnamon on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. Add to juice mixture. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until flavors are blended. Discard spice bag. Serve warm with stir sticks if desired.

Heat in the microwave for about 30 seconds or till sugar is dissolved. Cool and stir in evaporated milk and almond extract. Pour into a large punch bowl and add vanilla ice cream. Use a potato masher to break ice cream into small chunks. Slowly stir in the 7UP®. Spoon into serving glasses. Garnish with whipped cream and sprinkles if desired. Serve immediately.

as well. Stuff the cavity of the duck with garlic cloves, a quartered onion, and a couple sprigs of rosemary. You could also use lemon slices or a quartered apple. Fold the loose skin on both ends of the duck to hold everything inside and tie the duck legs with butcher’s twine or string to truss it by tying a loop around one duck leg, then crossing it over the other leg and wrapping the twine around both legs a time or two, then tying it off. In a small bowl, combine the salt, paprika, garlic powder, and pepper, then rub over all over the duck. Place the duck with the scored breast side up on a wire cooling rack over a baking sheet or on the rack of a large roasting pan. Start the duck by roasting it at a higher temperature of 425 degrees for 15 minutes, then decrease the
oven temp to 350 degrees and roast for 1 hour and 15 minutes. At the 60 minute mark, brush half of the honey over the duck, then cook for 10 minutes before brushing the duck with the remaining honey. If the juices are still running pink after a total of 1 ½ hours, let it roast another 15 minutes before pulling it out of the oven and tenting with foil for 15 minutes to let the juices redistribute before carving. The duck will be done with the juice running from the thigh after poking it are just barely a rosy pink color. Instructions Graham Crust In a medium bowl stir together the graham crumbs, sugar & cinnamon. Then stir in the melted butter. Press the mixture into the bottom of a 9-inch springform pan. Place in the freezer as you make the filling. Cheesecake Filling Blot the pumpkin with a paper towel and squeeze out the excess liquid. I do this many times to remove as much liquid as possible.

In a large bowl beat the heavy cream until stiff peaks form. In a separate large bowl beat the cream cheese until soft. Then beat in the sugars and pumpkin pie spice. Mix in the vanilla extract and pumpkin puree. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Take the crust out of the freezer. Spoon the cheesecake mixture over top and spread the top smooth. Place in the fridge to chill for at least 6 hours.** When ready to serve, trace a very thin sharp knife around the edges of the pan, then unclamp the springform. Top with whipped cream, slice into pieces & serve.
½ cup chopped pecans Instructions Preheat oven to 350F degrees. Spray a 9”x 13” baking dish with nonstick cooking spray. In a medium bowl (or your stand mixer bowl), combine all the cake ingredients except for the chopped pecans. Mix very well. Then stir in ½ cup chopped pecans. Pour batter into greased baking dish. Bake for about 40 minutes. Oven times vary but cake should spring back to the touch and be golden brown. Or insert a toothpick into the middle it should come out clean. For the sauce: In a small pot over medium heat (or in a microwave), melt 2 tablespoons butter. Pour in can of sweetened condensed milk with the melted butter and stir. Continue to stir until heated thoroughly, then add ½ cup chopped pecans. Stir again then take off heat. Then spoon this deliciously yummy sauce over individual slices of cake when serving. Or pour it all over the whole cake.
PECAN PRALINE CAKE WITH BUTTER SAUCE Ingredients For the cake: 1 (15.25 oz) box Butter Pecan Cake Mix 1 tub Coconut Pecan Frosting 4 large eggs ¾ cup vegetable oil 1 cup water ½ cup chopped pecans For the sauce: 1 (14 oz) can sweetened condensed milk 2 tablespoons salted butter Page 14 | December 2021
Make a half-batch of our Best Sugar Cookie Recipe and roll out the cookie dough on a floured surface. We used a small square cookie cutter to cut out our Christmas Sugar Cookie Bites but you could also cut the dough into strips and then cut the strips into square. Bake in a 350 degree oven for 4-5 minutes. Check on the cookies at the 4 minute mark, because they are so small you don’t want to over bake them. The edges will be slightly golden when they are ready to come out of the oven. Next, make a batch of our Best Buttercream Frosting Recipe. We split this batch into three bowls and colored one batch green using 3 drops of Leaf Green Food Coloring, one bowl red using 4 drops of Super Red Food Coloring and left one bowl white. Frost the Sugar Cookie Bites and add Christmas sprinkles.

During the holidays, having a Christmas party or a social gathering for friends and neighbors is almost its own holiday tradition. Ugly sweaters, dress as your spouse, bring your pet … all of these are popular themes. But, have you thought of mixing it up this year by offering your guests a hot cocoa bar instead of or in addition to an actual alcohol-based bar? Hot cocoa bars are a great option for guests who don’t drink alcohol, children, or designated drivers. Plus, they are just fun! This is always popular at large family meals, as well. Here are some tips on how to make your hot cocoa bar a hit!
WHAT TO INCLUDE IN YOUR HOT COCOA BAR Whipped cream from a can or make your own Crushed peppermint candy to sprinkle on top or candy canes for stirring Chocolate Curls Flavored coffee syrups hazelnut, vanilla, cherry, caramel, and peppermint are all yummy choices Cinnamon sprinkle it in with the cocoa if you are making it from scratch or sprinkle a dusting on top of the whipped cream Cinnamon sticks for stirring Ginger powdered or crystallized Carmel sauce or hard caramel squares Cayenne pepper or chili powder, be sure to also add cinnamon for Mexican Hot Cocoa or for a cup with a kick !

FLANNEL CHRISTMAS TREES
FLEECE HAND WARMERS You Will Need: Fleece material of your choice, about ½ yard. Matching thread Rice for the stuffing Funnel Baking twine for tags Card stock for tags

You Will Need: Cardboard Cone Trees Flannel Fabric Rustic Metal Stars Hot Glue Gun Scissors Steps: Cut your fabric into strips, about 2 inches wide. Use old flannel shirts if you’d like. Start gluing the strips at the bottom, allowing overlap that you will glue down later. Move upward the cone in a round circular pattern. Make a line of hot glue around the bottom, and then allow the fabric
to overlap a bit onto the glue as you move upward and wrap toward the top. Smooth the fabric down onto the glue as you go. Finish the fabric at the top. Cut off the end piece that is any overhang. Complete the look with jingle bells or stars on top!
Steps: Cut the fabric into squares the size of your choosing. Smaller squares are for smaller hands. Larger squares are for larger hands. Stitch around the sides leaving a small opening on one end. Use a shot glass to fill the rice into the fleece hand warmer. Leave a little room to be able to sew it
closed. Once filled with rice, sew it closed. Write well wishes onto the card stock and attach it with the twine. These can be warmed for 30 seconds in the microwave and used as hand warmers or mini heating pads. Make sure you do not wash them or the rice will mold.
MASON JAR NATIVITY SCENE You will need: Ball quart jars with smooths ides Sea glass paint in ice Battery operated tea lights Gold vinyl Transfer tape Weeding tools Cricut machine Steps: Clean jars and dry them. Spray paint them outside. Cover all sides with sea glass paint and allow to dry. This gives a frosted look. Use your Cricut Design Space and cut the nativity from one 12x12 sheet of viny. You can upload the designs from www.thecountrychiccottage.net/ christmas-jars. Use scissors to cut images away. Use transfer tape and lay the transfer tape over the top of the images and press down firmly. Remove the backing from the transfer tape. The vinyl shuld remain on the transfer tape. Place the vinyl onto the painted jars. Press down firmly. Peel back the transfer tape. Remove any excess from the bottoms with scissors and lay flat. Put a candle inside and place onto your table or mantle!

Next, write out or type out a poem that reminds you of your lost loved one. Using a glue gun, attach the poem in the back of the frame, and attach the chair and tree to the bottom of the box. You can add decorations, lights, and whatever else you want to make it special and personal. Then place it on the dinner table or elsewhere in the house so everyone can remember that special person who is no longer there.

CHRISTMAS GAMES STOCKING GUESSING GAME: Number of Players: 4 or more OBJECTIVE: First, you (the host) has to put random items into a stocking for this game. Once it’s stuffed, tie a ribbon around the top so there is no peaking. Sit in a circle, and pass the stocking around. Give each person a piece of paper and pen to write down their guesses. The person with the most items guessed correctly, wins ! CHRISTMAS CAROL PICTIONARY: Number of Players: 4 or more OBJECTIVE: Write down this list of Christmas carols on separate flash cards and divide players into teams. The list is below. Once person from each team draws from the pile of cards, and has one minute to illustrate the Christmas carol they have chosen. If their team guesses correctly, they get one point.
