A new ship launch is always an exciting event in the cruising world and we are set to be positively spoilt in this regard during 2018.

Here are some of the new vessels that will be making their debut over the next 12 months.

Roald Amundsen Hurtigruten’s newest ship will help shape the future of cruising. Roald Amundsen, named after a legendary Norwegian explorer, is the first of two vessels that will incorporate electrical power to show that hybrid propulsion is possible for these cruise ships. This, along with conservative use of electricity on board, will cut emissions by 20% and help protect the remote regions of the world that Hurtigruten visits. Features include a state-of-the-art activities centre where guests can learn about the areas they visit, an infinity pool and a Norwegian fine dining restaurant. The first sailing takes place in October 2018.

Symphony of the Seas℠ For the last few years, Royal Caribbean have been having a competition with themselves to build the largest cruise ship in the world. Allure of the Seas℠ earned this accolade before she was surpassed by Harmony of the Seas® in 2016, and now Symphony of the Seas℠ 14 Cruising Magazine

will take over the mantle in the spring.

The ship will feature the popular ‘neighbourhood’ layout found on her Oasis Class sisters, along with a few new additions. There’s the chance to play laser tag, a new high-flying show will grace the AquaTheatre and the impressive Ultimate Family Suites include a slide between the two levels.

Chef de Par Q&A with Dirk Helsig Fred. Olsen Cruise Lines’ Executive Chef Where were you born, and where do you live?

I was born and grew up in Germany, but I married an English girl, so now I live in Southampton, which is really handy for joining the ship.

How did you come to be a Chef on a cruise ship?

Back in 1986, I was working in London to improve my English. During that time, I worked at several different restaurants, including The Ivy, which was a great experience. I wanted to travel and the agency I worked for offered me three options – one was to work on an oil rig, the second was to go to Kuwait, and the other was to join a cruise ship. I chose the cruise ship, and have been at sea ever since.

Coincidentally, the ship that I joined initially was the Royal Viking Sky, which is now Fred. Olsen’s Boudicca, so I have come full circle.

Why Fred. Olsen Cruise Lines?

have to say that I’ve travelled around the UK quite a lot and there are some lovely places here, too. I love visiting castles, and I really like all the history here.

I have worked for several different cruise lines, including Royal Viking Line, Holland America, Cunard and Seabourn.

I joined Fred. Olsen in 2005 because I really like working for a smaller company, and on smaller ships. They are much friendlier, and I also like the fact that we cruise mostly in and out of the UK and have mainly British guests. As far as I know, most cruise lines have special menus or indications on I am not a fan of these huge, their menus for healthy dishes. Lots modern ships that look like of cruise ships offer fitness instructors floating blocks of flats. or nutritional experts, who will advise the guests on healthy eating.

Are cruise lines moving more towards healthy eating?

What are your favourite meals and destinations?

I love anything spicy, particularly Thai and Indian food, but my wife will kill me if I don’t say that my favourite is her Shepherd’s Pie! I have been really lucky and travelled to most places in the world. I have spent a lot of time in Thailand, and would love to travel around India some time. I went to Tanzania on honeymoon and would love to do more safaris, as that was an amazing experience. Other than that, I

But do cruise guests really want to be healthy?

I think that this depends upon the individual guest; lots of our guests cruise with Fred. Olsen to enjoy the experience, to be cooked for and be well-looked after, and they like to relax after lunch with a book. However, we also have guests who make good use of the gym and go for runs around the deck. It is a matter of individual choice.

Is catering for allergies and dietary requirements on board important?

Does it encourage more guests to cruise with you?

It is very important to look after the guests with special dietary needs; they should not feel that they are being discriminated against if they are Coeliac, diabetic or have allergies.

We will receive, weeks before a cruise starts, a dietary request list; then, on the first day of the cruise, the guests will receive an invitation to our Dietary Meeting with the Executive Chef, where he/she will explain how the food is prepared on board and how the dishes can be adapted to meet their needs.

We ask guests who have specific allergies to have a private talk with the Executive Chef after the meeting.

Allergy training for our Chefs and Waiters is vital. If we have all the information from the guest about their allergies, it is very

straightforward, and it is very important that the communication is clear between the guest and the waiter, when the order is taken.

What about the crew on board – is there a move to ensure that they eat healthily, too, especially as this should help them perform better?

The food that we serve crew members on board is the ‘oil that keeps the ship going’; as I always say, ‘variety of good fresh food = happy crew = happy guest’. This is a very simple calculation.

We have crew members who are vegan, vegetarian or have other dietary needs, and this needs to be taken into consideration. Many crew members use the gym to keep fit and, with a variety of fresh salads, vegetables and fruit, they have a healthy lifestyle on board.

What new challenges come with any move towards healthy food – e.g. sourcing organic and healthy, fresh food?

A big challenge is the price of healthy, fresh food, as this can be very weather-dependent, and costs continue to go up.

The Fred. Olsen Purchasing Department is doing a fantastic job, sourcing excellent, high-quality food items and ingredients, but this takes a great deal of time and commitment.

As for cooking methods, all the cruise liners have combi-ovens, which are energy- and time-efficient, and they are great for slow cooking, roasting and poaching. Our Executive Chefs are constantly training and improving their skills; it is a 24/7 job – although there is a highly-skilled Galley team to support them.

From Early Riser breakfasts to late night buffets, there is food available at whatever time of day those hunger pangs hit you. Just got back from a shore excursion and feeling peckish? Afternoon tea is waiting. Sitting by the pool and need a quick lunch? Try a counter service poolside restaurant. All that nightclub dancing got your stomach rumbling? Head to a somewhere like Royal Caribbean’s Sorrento’s for some after-hours pizza.
