The Noble Hare is nearly ready to take its shot at pleasing F-M bourbon lovers By Helmut Schmidt | The Focus The owners of the new bourbon, wine and cocktail bar in West Fargo vow to have the largest selection of whiskeys and bourbons in North Dakota. The Noble Hare is just about ready to make its jump into the Fargo-Moorhead bar scene. Owners Isaac and Sarah Olson say their bourbon, wine and cocktails spot is on track to open in midJanuary at 344 Sheyenne St., in The Firm building, just off the POW/MIA Plaza. The goal is to have a place where people can “re-create the art of conversation,” Isaac Olson said Friday, Dec. 29, as workers busied about the bar, plugging away at punchlist items and unpacking furniture. “We want a place where people don’t want to leave,” Olson said. “We want it to be a fun experience. Try something you haven’t tried before.” The Noble Hare has a full bar, but the Olsons vow to offer the largest selection of whiskeys and bourbons in North Dakota. “I’m very adamant on that - well over 100,” Olson said, including rare bourbons, with limited allocations of bottles. “There’s a number of places that claim to have the title, but we hope to soon leave no doubt.” The decor is designed to be comfortable, with a nod to early 20th century speakeasys, including banquette seating with deep blue velvet backing, comfy couches, table seating, and bar-height seating towards the

back that gives people-watchers a chance to ponder the bar as they sip.

in warm weather when a large garage-style door is opened.

There’s also a back room available for parties; an intimate space with two chandeliers hanging from a pressed tin ceiling with wood inlays, and library lights with green shades.

One wall of The Noble Hare features wood and wire liquor lockers, built by Isaac, and his father and brother. Patrons can rent a locker to store bottles of their favorite liquors.

The front of the bar is marble, cut and formed into a 3D effect image, with a granite bartop. Altogether there is seating for about 130 people, plus space on a patio

The Noble Hare is modeled on the places the Olsons enjoyed while touring bourbon country in Kentucky. They’ve been working on the concept for the bar for two years.

“We love bourbon country in Kentucky, and there are a number of speakeasy and steak restaurants that model the old-fashioned, early1900s vibe,” Olson said. It’s something they hadn’t seen in Fargo-Moorhead, and they figured it was a niche in the market that needed filling. Noble: continued on page 5

continued from page 3 “Honestly, everywhere we went was a loud sports bar. It was hard to hear my wife talk. I wanted a place where you could sit down and have a conversation,” Olson said. “And that was our pitch to the city (of West Fargo). We want to re-create the art of conversation.” Isaac and Sarah have lived in West Fargo since 2010. His extended family is from the area, and they decided they wanted to put their roots down here, and now have three children in West Fargo’s schools. Isaac has been in sales for 25 years and bartended. In Fargo, he’s worked for Corwin Automotive Group for four years, then moved on to The Buckle for three years. From October 2017 to October 2023, he was general manager of the Zales jewelry store at West Acres in Fargo. Sarah has bartended for 18 years. Over time, she’s gotten more

focused on “the bourbon world. There’s just a lot more stuff you can do with it,” she said. Bourbon is an acquired taste, “and then you learn the different notes of it. It’s like wine,” and you have to educate your palate, she said. Her first experience was a bourbon and chocolate tasting event, “which made me fall in love with it because I like chocolate.” She also enjoys the creativity of making cocktails. “I have a lot of experience. I’ve also learned a lot. I have a creative background,” which helps when making new cocktails. “It’s rewarding,” Sarah said. In addition to drinks, The Noble Hare will also have an appetizer and small plates menu, as well as desserts supplied by Nichole’s Fine Pastry and Cafe in Fargo. “Everybody can (sell) beer and wings, but we want to create more than that,” Isaac said. “We want to create reasons for people to want to go out and have a date

Whether it’s a bourbon or wine tasting, or a Valentine’s masquerade party, things of that nature. I think people in Fargo and West Fargo want something; they want events. We hope to create a space where they enjoy doing that.” A website is still being created, and server training is underway. The Olsons are also still hiring. Noble Hare to be a welcoming place for adults in all stations in life. “What we want you to do is come and talk to people. Come and have a conversation,” Isaac said. “We feel like we’ve created a spot where people can do that. Our goal is to get people to put their phones down. Maintaining the Maintenance Zones By City of West Fargo Staff

Maintenance zones are a concept many municipalities use to designate specific days of the week for routine street, sewer and water maintenance activities. This can include snow removal, hydrant flushing, street sign repairs and street sweeping. The purpose of the zones is to provide the community with a standardized schedule of maintenance to minimize disruptions. Maintenance zones also include parking regulations to provide a safe space for crews to repair and maintain equipment, vehicles and infrastructure. Maintenance zones in West Fargo share the same boundaries as the garbage collection schedule. The assigned maintenance zone day of the week is the day before garbage collection. For example, the northeast section of the City has a Tuesday’s garbage collection route and a Monday maintenance zone day. During the designated maintenance zone day of the week, the City does not allow on-street parking from 8 a.m. to 5 p.m. to allow crews to conduct maintenance. Signs are visible throughout the City to identify the no-parking day of the week in that maintenance zone. The West Fargo Police Department enforces the no-parking regulations. If residents believe they have a complaint in a maintenance zone, such as a parking violation, there are a few ways to resolve the situation. Before making a complaint, it is highly encouraged to speak with the car’s owner first, if possible. If not, residents can contact the West Fargo Police Department’s Code Enforcement Unit to submit a complaint. To submit a complaint, email ce@westfargond.gov or call 701-515-5517. More information on the Code Enforcement unit is available online at westfargopolice.com. The maintenance zone schedule is active year-round. When possible,

the City of West Fargo will provide advance maintenance updates using various social media channels. Abiding by the maintenance zone schedule allows Public Works crews to work more efficiently to address residents’ concerns such

as street repairs, filing potholes, and snow removal. For more information on maintenance, zones visit westfargond.gov.

West Fargo Public Library offers storytime kits for checkout By West Fargo Public Library Staff

West Fargo Public Library users can now bring the magic of storytime home with them. The West Fargo Public Library now offers storytime kits that library cardholders can check out. The kits include books and a binder with reproducible activity sheets and instructions. The kits are intended to help expand West Fargo children’s literacy skills through reading, writing, talking, singing, and play. “We put these kits together with care in the hopes they help families and daycares with young kids,” Lauren Nephew, Youth Services Manager, said. “We include instructions for how to use the kits, but we want people to use the books and activities in the way that benefits their children the most.” Storytime kits can be checked out for three weeks at a time using a West Fargo Public Library card. Through a partnership with the North Dakota State Library, West Fargo Public Library users can now use Kanopy to stream thousands of on-demand movies, docuseries, read-along storybooks, and more for free with their West Fargo

West Fargo Public Library patrons can also now access The New York Times online at the library or on the go for free. Users can explore unlimited articles when visiting the library and using the library’s public computers or WiFi. When not at the library, cardholders can also unlock 24 hours of access to The New York Times online from

Cardholders looking for eBooks and audiobooks are encouraged to useLibby, the library’s primary mobile app. As of Jan. 1, Libby has increased capabilities. West Fargo Public Library cardholders will now experience shorter waiting periods for in-demand items. Library staff will continue to add new materials to the app throughout the year.

Patrons can easily request items to be added to Libby by filling out the library’s Purchase Request form at westfargolibrary.org/ purchaserequest. Explore Libby at westfargolibrary.org/digital. The Teehive aims to be the sweetspot for serving F-M demand for customized goods By Helmut Schmidt | The Focus

The Teehive is back in West Fargo, and the company is working to generate some buzz. The Baxter, Minnesota-based firm’s latest “hive” is co-located with Just For Kix at 480 24th Ave. W., about a half mile south of Interstate 94. Regional Manager Bill Volbert said the Fargo-Moorhead area is a rapidly growing market for custom printed and embroidered apparel and accessories. “Fargo is a cornucopia of opportunity,” Volbert said Friday, Jan. 12. “We’re from Minnesota. We connect with the people here. We have the same values. … The businesses around here, it’s flush with opportunity.” The office is managed by Jaden Kroll, who is tasked with networking, building customer relationships, and immersing himself in the community, Volbert said. The Teehive takes on orders big and small, Volbert said. “If you want one shirt, or you want 10,000 shirts, we can do it,” Volbert said. “Our main focus is your leagues, your churches, your sports teams, your fun runs and then business-to-business.” Sales to businesses can include clothing, hats, cups, mugs and other accessories, to uniforms and safety gear, such as vests, hard hats and impact gloves. The company also customizes can koozies, tablecloths, chair covers, banners, flags, plaques, ribbons, medals, backdrops, water bottles, pop sockets, luggage tags, duffle bags, backpacks and mouse pads.

Kevin Denny, the company’s customer experience and design team manager, said Teehive takes on a diverse and fun array of challenges. “People come in with ideas. Can you laser engrave on a dog bowl? Can you get me a beach towel? We find ways to come up with solutions to their problems,” Denny said. The Teehive’s home hive is a 22,000-square-foot factory in the town of Baxter, near Brainerd. Large batch or embroidery orders are processed at the Baxter factory, Denny said.

Teehive also has outlets in Medina, Minnesota (near Minneapolis), and in Largo, Florida (Tampa Bay area). The Teehive was started in 2009 by Steve and Cindy Clough. The Cloughs had started the Just For Kix dance instruction and clothing firm in 1981. With the growth of Just For Kix (which now has outlets in 13 states), came a growing demand for custom apparel, leading to the need for The Teehive. The West Fargo Just For Kix and Teehive building was built in 2017. The Teehive had been open for a short time in West Fargo before the COVID-19 pandemic hit, but like other businesses, the pandemic forced the local shop to close. With the post-pandemic economy

improving, it was time to reopen, Volbert said. Kroll, who has a bachelor’s degree in graphic design, said he enjoys the challenges of the job. “Anything you can imagine, we can probably do it for you,” Kroll said. “It’s really cool having someone’s design come to life.” The Teehive in West Fargo is open 9 a.m. to 5 p.m. Monday through Friday. Coffee with a Cop on Wednesday, Feb. 21 at Rustad Recreation Center By City of West Fargo Staff

The West Fargo Police Department’s Coffee with a Cop will be at 10 a.m. Wednesday, Feb. 21, at the Rustad Recreation Center in West Fargo (601 26th Ave. E.).
