TRACKSIDE TALKS: PACE LAP

The year was 2019. It was a perfect spring day in March when I found myself at my first ever NASCAR race in Phoenix, AZ alongside my boyfriend (now husband, Dillon). To be honest, my interest level to see the race wasn’t high. I had only signed up to go because of the road trip destinations we planned to hit on our trek from Denver, CO to our destination including Arches National Park, Monument Valley and the Grand Canyon. Little did I know that by the end of that day, I’d become an honest race fan.

Hi! My name is Clair Crow, and I’m so excited to continue growing my NASCAR knowledge while sharing what I learn with all of you. I’m certainly not what you would call a racing expert, not even close; however, my passion for the sport has only grown since the first race I attended. It definitely helps to have a guy who knows what he’s talking about teaching me all the things. My husband has been a NASCAR fan since he was a kid, and I reckon I owe him a big thanks for introducing me to his love of NASCAR.

A little about me: I grew up in south central Missouri and still think the Ozarks are the prettiest parts of the country. I attended college outside of Kansas

City, MO where I obtained my bachelor’s degree in ministry and my master’s degree in counseling. I currently work as the outreach director at Multiply Church LKN and continue to maintain a small client load. I met my husband on Bumble (that’s right!) in 2018, a week before he moved to Denver, CO; and wouldn’t you know it, a year later I packed up and moved west to be with him. We were married in 2020 and not long after, he received a job offer that brought us to Race City USA. We couldn’t be happier! During our time here, we faced infertility (that’s a story for later) and were graciously chosen as recipients of the Bundle of Joy Fund, which brings me to my favorite part of our story – our son, Fuller Blake Crow! He is nearly nine months old and just

attended his first NASCAR race on Mother’s Day where we saw Brad Keselowski take the checkered flag at the Good Year 400. It was a day to remember!

This column will include a little bit of NASCAR-related everything from chats with drivers, pit crew members and women in racing, to unpacking race day with the fans, exploring all the different NASCAR-adjacent careers and perspectives, and so much more!

If you haven’t fallen in love with NASCAR yet, go to a race with someone who knows the sport! It’s the best way to experience it. There’s just something about the sound of a race car at full song, the unbelievable speed those drivers go and the smell of burning rubber that leaves you hungry for more.

One last thing – I want to wish my husband a very happy first Father’s Day! Fuller and I are the luckiest two people in the world to have you leading our home in faith…and NASCAR. We love you!

INVESTING IN KNOWLEDGE & SKILLS THAT LAST A LIFETIME

I RECENTLY FOUND MYSELF COMPARING STOCKS TO FLOWERS IN A CLIENT MEETING. IT’S OFFICIAL. MY MIND HAS BEEN TAKEN OVER BY FLOWERS.

This micro-flower-farm business of mine continues to remind me of investing. The more you put in, the more you get out. More blooms, more variety and excitement. But also, the more disappointed you are when things go wrong. Diversification in your investments is often a winning strategy. However, buying funds of funds of funds with exposure to everything to make sure all the bases are covered is not always better. The phrase “keep it simple, silly goose” continues to slap me in the face as I dream about future bouquets.

Like a business, from seed to cut flower, each step is a step of survival. The seed has to germinate, and every seed is a little different. Some seeds need cold stratification, some need direct light and some don’t like their roots messed with and should just be planted directly outside. I have learned that I like the direct sow “don’t touch my roots” seeds. Provided it’s a good seed with enough sun, water and the right soil conditions, you’ll move onto phase two. An indoor seedling must make a successful transition from inside in managed conditions to the unpredictable outdoor environment. I killed a lot of seedlings that I nurtured for two months in this phase. That was heartbreaking. Okay, now phase three. Outside, between bugs and animals, it feels like death is around every corner. Will the plant survive pesky critters? We’ll see!

Each time something didn’t go right with the seedlings, my husband would say, “Just go buy a mature plant.” The problem is that one mature plant only produces a few flowers, and they are not cheap! One mature foxglove is the cost of three packs of foxglove seeds with 50 opportunities in each bag (ie. 150 future foxgloves… provided they get to that point). However, if my luck as a new gardener is any indication, that one plant potentially has a better chance of survival and producing those few flowers that you could then sell and make enough to cover the cost of the plant. They’re not all hard to grow, but to the newcomers, choose your seeds wisely.

Another decision you must make is, perennial versus annual. Are you looking to establish a perennial garden that comes back each year or annual flowers that require annual plantings? Or a mix of both. Our yard has established hydrangeas and bulbs everywhere. In the last year, I’ve made investments in rare peony roots, English rose bushes, additional hydrangeas, lilies, gladiolas, freesia, coneflowers and tulips. The yard will be bursting with color from the mature plants, but because it’s the first year in my yard for many of these perennials, they won’t do a whole lot. My roses and peonies will be pretty small. These flowers are always lovely surprises that come up every year with little work on my part. For time management and predictability, a nice perennial garden is worth it to me. I’ve also invested in some tender perennials, dahlias and ranunculus roots that may benefit from being pulled up and stored and, of course, countless annual seeds like snapdragons, zinnias and cosmos. Those are a lot of work, but they should do well in year one, and they’re some of the most desired and most beautiful. In terms of getting a return on your investment, they’re worth it.

Investing in good quality plants and keeping your scope a bit more narrow is a smart decision. When it comes to flowers and building bouquets, this feels almost impossible. Every flower is beautiful, and every cut flower could join a dahlia, English rose or peony as filler in a bouquet. That being said, it is certainly worth it to diversify and try a few different things. I must admit, I took on more than what I could handle with seeds and filler flowers. Thankfully, the cost is minimal with bags of seeds and lessons were learned, but wasted time starting some of those seeds inside months ago, is time I could have used doing something else.

I came home from a weekend out of town to a raised bed previously full of strawberries in bloom, consumed by deer and rose bushes once covered in leaves and buds, bare. Brief stock crash over here. Time to reassess our new threats. Hungry animals with very expensive tastes. Hm.

Dear residents of North Carolina,

I am writing to express my heartfelt gratitude for the incredible honor of being named the 2024 Miss North Carolina for America on May 5, 2024!

My journey to this beautiful state began with aspirations of diving headfirst into the adrenalinefueled world of NASCAR, a racecar driver myself – this passion was instilled in me at a young age by my racing family. Upon arriving in Race City USA back in 2013, the tall trees and winding paths through the mountains instantly stole my heart. From the coastline to the racetracks, the past 11 years of calling North Carolina my home has offered me boundless opportunities and unforgettable experiences both in my personal and professional life.

In my time here – I have been able to not only fulfill my dreams in NASCAR, but also to carry the extraordinary privilege of representing our state as Miss North Carolina for America. This title carries with it a profound sense of responsibility – one that I wholeheartedly embrace with enthusiasm and unwavering dedication.

I am grateful for the support and encouragement I have received from the community, my friends and my family throughout this journey. It is with immense pride

that I accept this role, knowing that I have the privilege of serving as an ambassador for North Carolina and advocating for causes that are close to my heart.

As Miss North Carolina for America, I am committed to using this platform to make a positive impact both in the community and nationwide. I hope to inspire others to reach for their dreams and never give up on their passions, no matter what.

Throughout my reign, you will find me at many events statewide – meeting others and giving back through my foundation dedicated to building children’s literacy and many other organizations to impact change. You may also find me at a racetrack where I will likely be hosting, pit-reporting or just enjoying a night at the races. Please say “hi!”

I am deeply honored to have the opportunity to contribute to this great state and represent North Carolina this August in the Miss for America pageant in Las Vegas.

THE ISABELLA SANTOS LEGACY: COMMUNITY INVOLVEMENT SHAPES SUCCESS

Established in 2007, the Isabella Santos Foundation (ISF) epitomizes community engagement in the fight against rare pediatric cancers. ISF’s mission, inspired by Isabella Santos herself, focuses on enhancing pediatric cancer research and providing vital support to affected families. The foundation’s recent expansion into the Lake Norman community marks a new chapter of collaboration and impact.

ISABELLA SANTOS’ LEGACY

Diagnosed with neuroblastoma in 2007 at just two years old, Isabella’s resilient spirit laid the foundation for ISF. With fewer than 700 cases in the United States, treatment options and information were limited. Erin Santos, Isabella’s mom, had to be proactive, do her own research, and fiercely advocate for her daughter. She challenged what was put on the table every step of the way, no matter how provocative or impossible her proposed solutions seemed.

The family traveled between her hometown, Charlotte, North Carolina, and New York’s Memorial Sloan Kettering Cancer Center to receive care. It was exhausting, but the family persevered, eventually reaching a summit where they needed to rally support, raise awareness of her mission, and most of all — to

make things happen. That same year, Erin founded ISF to turn her pain into action.

With ISF, Erin realized she could make an impact in small ways that would culminate over time. They didn’t need $100 million right away — but they needed $50k to improve their technology and equipment. These milestones seemed small, but they meant a world of a difference to families with kids with rare cancer and to the future of pediatric cancer care.

The foundation raised $7,000 in its first year. Since then, it has raised over $14 million to expand research, treatment, and support for affected families. Isabella’s audacious spirit saw her through until the very end. Despite countless treatments and five relapses, Isabella passed away in 2012 at only seven years old.

EMPOWERING RESEARCH AND TREATMENT

Today, Isabella’s legacy is seen through Erin, who continues as Executive Director of ISF, leading a team that drives forward the Foundation’s mission of improving rare pediatric cancer treatment options and creating meaningful, sustainable, and lasting change. Over seventeen years, ISF has made significant

financial commitments to expand research and treatment options for rare pediatric cancers and support affected families. Partnering with Atrium Health and Levine Children’s Hospital, ISF funded clinical trials, developmental therapeutics, and a top-tier MIBG therapy suite—one of 20 nationwide. In 2020, the Isabella Santos Rare & Solid Tumor Program launched with Levine Cancer Institute, aspiring to be a global hub for children with solid tumors and rare cancers.

This year, ISF proudly announced the launch of the TORCH Initiative, an effort aimed at supporting rare pediatric cancer heroes at children’s hospitals across North and South Carolina. The TORCH Initiative, which stands for Transformational Outcomes for Rare Cancer Heroes, will support projects encompassing clinical trials, translational research, and survivorship support, with a focus on improving both the quantity and quality of life for young rare cancer patients. With a $2 million annual funding goal, ISF will have the opportunity to engage with every pediatric hospital across the Carolinas.

BUILDING A COMMUNITY OF SUPPORT IN LAKE NORMAN

The Isabella Santos Foundation’s engagement strategies involve partnerships with major institutions, inclusive events, and digital initiatives to foster a supportive community where events are both educational and fun. Its journey underscores the transformative power of community involvement - even when the cause itself may be rare. Through financial contributions, innovative research, and unwavering support, ISF continues to make a tangible difference in the lives of children battling cancer. As ISF expands into the Lake Norman community, they invite local members to join their mission, honoring Isabella’s legacy and ensuring a future where no child fights cancer alone.

MEXICAN CHICKEN RICE BOWLS

The best part of this recipe is that it is a complete meal in a bowl! It has carbs, proteins and fats and is packed with nutrients from the vegetables!

Servings: 4-6

Prep time: 15 minutes

Cook time: 15 minutes

Total time: 30 minutes

Ingredients:

• 1 pound ground chicken

• 2 T avocado oil

• ½ packet of taco seasoning

• 1 bell pepper, diced

• ½ red onion, diced

• 1 avocado, diced

• 1 can of black beans

• 1 can of corn

• 1 can of green chilis

• 1 ½ cup Mexican cheese

• 2 packets of microwavable brown rice

• Sour cream, for topping

• Fresh cilantro, for garnish

Instructions:

1. Add the ground chicken and avocado oil to a large skillet and cook until cooked thoroughly. Once the ground chicken is cooked, add ½ the taco seasoning packet and stir until well mixed. Add some water if the meat seems too dry.

2. While the chicken is cooking, start prepping the other ingredients. Dice the bell pepper, red onion and avocado, drain the black beans, corn and green chilis, and chop the fresh cilantro.

3. Microwave the microwavable rice according to the package instructions.

4. Once everything is prepared, assemble the bowls starting with the rice and chicken, and add the rest of the toppings to your preference. Enjoy!

STYLE AS IT WAS MEANT TO BE, THE FAMILY OWNED AND OPERATED HABERDASHERY, HAMPTON’S, RECENTLY CELEBRATED ITS 10TH ANNIVERSARY.

The initial decade of commerce has allowed the mother and son duo of Jan and Tyler Hampton the opportunity to continually expand the business’ horizons and expose the Lake Norman area to the finest collections of clothing and accessories crafted worldwide. This prominent men’s clothier, with its loyal and grateful following of clients, keeps its promise to assist in curating a sensible wardrobe which you will be proud to wear.

The lake hasn’t always offered this caliber of shopping, though. After realizing the absence of a reputable men’s store in the Lake Norman area, and truthfully, a complete neglect of the entire population between Charlotte and Winston-Salem, Tyler decided he was just the person to remedy this problem, so he and Jan paired together to form what would become a style destination.

Originally known as Dixieland Clothing, the store humbly opened on March 30th, 2014, in a small, downtown Davidson storefront owned by Tyler’s grandfather, Dr. Donald Copeland.

“The idea came to life during a semester I took off due to transferring colleges, and the location couldn’t have been better for the store my mother and I wanted to open,” explains Tyler. At that point, the inventory selections were more casual and better-known brands than today. “I knew I would be leaving for

school again in August, so I wanted items and brands which were easily familiar for the customers and employees alike. Much of what we carry today requires more expertise and is sold based on the quality of the item rather than the name on the label.”

After Tyler’s graduation from the University of North Carolina Wilmington in May of 2016, he and Jan decided the time had come for a new chapter of the store as well. It was then that the rebranding to the namesake occurred, and a move to the Langtree Lake Norman development followed thereafter. Hampton’s spent six years at Langtree before seeking other opportunities to expand, and in early 2023, that opportunity presented itself. Last June, Hampton’s happily returned to its roots and the magic of Main Street – only this time, in Mooresville.

The downtown Mooresville location was previously a retail store on the first floor complete with an apartment above, and now the upstairs area is a designated custom clothing “suite” – an expansive showroom of custom clothing options. The unique space also includes a well-stocked bourbon bar – part of the entire Hampton’s shopping experience. The sense of community in the downtown district is strong, and increased foot traffic in the new location has been a definite advantage.

Tyler adds that none of this would have ever been possible without Jan and the support from family members. “People ask me constantly how I work with my mother every day, but to be honest, I love it (we have our moments, of course). I’ve always gotten along extremely well with my parents, and I’m glad I get to share this time and the excitement of business with them.”

“Entrepreneurship is just in my blood. My dad, both grandfathers and several of our relatives have owned successful businesses for decades. My entire life, I have seen firsthand what it takes to run businesses as well as the importance of family within those companies. This is where my love and passion for family owned businesses developed, and I do my best to support as many of those as possible.” He also expressed that Jan has been monumental in the success and longevity of both Hampton’s and his father’s (Michael Hampton) auto repair business in Huntersville. This is a legacy Tyler hopes to pass on to his future family.

Clearly a strong believer in the fortitude of family ties, Tyler says he also enjoys collaborating with other vendors who are family owned – and often finds himself working with the second or third generation of a business.

“It’s simple – we understand each other and appreciate the strength in family,” he adds. Hands-on with the business right from the beginning, Tyler personally selects which clothing lines become part of the Hampton’s experience, building on the business reputation that continues to expand.

HODGE PODGE LODGE

It all started with a simple question:

“What’s for dinner tonight?”

“Wish I knew.”

“Don’t you always have something planned?”

“Well, tonight it’s hodge podge.”

The dictionary definition of this wonderfully rhythmic noun is “a confused mixture of things.” And, that was exactly what I alluded to when my dear husband asked the inevitable question about dinner. If your household runs anything like mine, you have a designated day – or, you designate a day each week based on your ever-changing calendar – to do the weekly shopping. You know, the one that is mostly based on the meals you plan to make in the six days ahead. But invariably, something happens. It’s called life. Who knew you’d have to make two trips to the emergency vet, be called in to sub for a MIA co-worker or feed three extra teens after a game!

Some sobering statistics:

• The average U.S. household wastes nearly one-third of the food it acquires.

• More than two-thirds of households waste between 20% and 50% of the food they acquire.

• The estimated annual dollar equivalent of wasted food is a staggering $240 billion.

• The average waste per household is about $1,866 annually.

There is a lot we can’t change about the political, economic and yes, cultural reasons why this is the case, but in your own household, you can work toward curtailing food waste by challenging its inevitability and doing a few things differently.

For starters:

Start by making food waste a family conversation. You know your crew best. Maybe you open up by sharing your own feelings about the food waste you personally generate. Or perhaps you tie the conversation in with managing the family finances to make a vacation down the road more doable. It could also start with a general concern about food waste. Be careful not to point fingers or assign blame.

Buy what you are most likely to use and use up.

Now, back to “hodge-podge.” In our household, by Wednesday, whatever ends up on the table may be a bit of a crap shoot – a solitary cooked or uncooked chicken breast, some leftover arugula, a few withering grapes and such. It’s discouraging, but then I am reminded of the pantry, that haven of boxes, cans and bottles is a treasure trove of possibility.

“Hodge Podge” has endeared itself as “Hodge Podge Lodge” for us because we’ve taken on minimizing food waste as a challenge. We’ve also proven to ourselves that we can think –and cook – outside of the box.

After opening up the conversation and pursuing mindful food shopping:

Engage the ideas of everyone in your household. Remember that when adults and kids contribute to ideas generation, they develop a sense of ownership for what happens next.

Lean into making it fun, even a little competitive.

My niece has two busy teenagers. Each has one night a month where they come up with a meal for the family that consists only of what is already on hand. Is it always great? No, of course not! But neither is everything that you whip up, right? It’s amazing how creative they have become. Not to mention the life skills they’re acquiring – accountability, resourcefulness, creativity, experiencing the fruits of one’s own labor and being able to listen and accept feedback from others.

As for the actual “hodge-podge creation”:

Take inventory of what you have on hand. Scan what you have to work with before you get started.

Ask Google for help.

You’ll be amazed to see what you can do with leftover ham! The more you ask, the more adept you’ll become at arriving at new concoctions. One of our faves turned out to be brown rice mixed with sundried tomatoes, rotisserie chicken and roasted broccoli – all leftovers from previous meals.

Ah, North Carolina in the summertime – where the sun shines, the barbecue sizzles and the sweet tea flows like a lazy river. Whether you are a Tar Heel native or just passing through, there is no shortage of adventures to be had during the sweltering summer months. So, grab your sunscreen, lace up your hiking boots and get ready to check off these must-do activities on your NC summer bucket list!

1. Conquer the Outer Banks: Start your summer odyssey with a pilgrimage to the Outer Banks, where sandy shores and salty breezes await. Climb to the top of the Cape Hatteras Lighthouse for panoramic views of the coast, or try your hand at hang-gliding over the dunes of Jockey’s Ridge State Park. And, don’t forget to indulge in some fresh seafood – after all, when in the OBX, it’s shrimp and grits for breakfast, lunch and dinner!

Just remember to pack your swimsuit – you’ll want to take a refreshing dip in the cool mountain waters after your hike.

4. Catch a Show at the Biltmore: Step back in time with a visit to the Biltmore Estate in Asheville, the largest privately owned home in America. Explore the opulent rooms of the mansion, stroll through the meticulously manicured gardens and cap off your visit with a concert under the stars at the Biltmore’s outdoor amphitheater. Pro tip: Bring a picnic basket filled with gourmet goodies and a bottle of wine to enjoy during the show.

5. Sample Moonshine in the Smokies: No trip to NC would be complete without a taste of the local moonshine. Head to the Great Smoky Mountains or even Wilkes County, once known as the “moonshine capital of the world,” to visit one of the many moonshine distilleries that dot the landscape. For the summer exhibit season, we are pleased to announce two exciting shows at Mooresville Arts Gallery, in the historic train depot, in downtown Mooresville!

The 20th Anniversary Judged Photography Show & Competition

Now in its 20th year, the annual judged photography show attracts local and regional photographers, of all skill levels, to display their photography and compete for top honors. Photographers submit their latest and greatest work, and subject matter ranges from portraits and landscapes to macro and abstract representations.

This year’s show judge is Cordelia Williams, photographer and educator. Ms. Williams’ work has been exhibited nationally and internationally, and her work can be found in many public and private collections. Mooresville Arts photography program has grown tremendously in the last few years, and this year’s photography show reflects that growth. We are thrilled that our organization can help support local photographers and foster a deeper appreciation for the art of photography!

Women in Paper, a Featured Artists’ Exhibit

A new exhibit, featuring two women artists, will also be on display for the summer. KC Christmas (Greenville, SC) and Tina Vincent (Charlotte, NC) are both artists who work predominantly with the art medium of paper. Ms. Christmas creates female-inspired floral vignettes using paper collage, paint, with a nod to art history, while Ms. Vincent creates female-inspired sculptures using paper maché, paint, with a nod to her African roots and heritage. It is an exhibit of ladies, created by ladies, on paper and more!

Both exhibits will be on display in the Mooresville Arts Galleries June 4th through July 18th of 2024. There is no charge to visit; gallery hours are Tuesday-Saturday 12:00 p.m. - 4:00 p.m. Most of the artwork is for sale, and art sales directly benefit local artists and Mooresville Arts.

An artists’ reception for both shows is Friday, June 7, 2024 (6:00 p.m. - 8:00 p.m.). An awards presentation for the judged photography show will take place at 7:00 p.m. Light refreshments will be served; everyone is welcome to attend the reception! ART SPEAK: UNVEILING LAKE NORMAN’S CREATIVE VOICES

This month’s featured creator is Pam White, an encaustic wax artist.

How would you describe your work? In the most basic of terms, I paint water using fire. Encaustic wax is a process of applying wax, resin and pigment on a substrate. I use a torch as my paintbrush. From there, I delicately and tastefully find abstract ways to design my piece using inspiration around me.

Which other artists most inspired you?

Certainly Helen Frankenthauler. When I saw her piece “The Bay,” I sat in front of it, and tears rolled down my face. I’ve always loved Marcia Myers’ work, her story behind it and the way she overcame her frustrations with art.

Where do you find your best sources for inspiration?

I am surrounded by the beauty of the Carolinas. While I can certainly paint the landscape, I prefer to dissect the view and create an abstraction of it.

What is the greatest compliment you’ve received about your work?

I’ve had three clients cry when receiving my work, which is inspiring. I’ve received beautiful letters and even tips. However, the greatest compliment I’ve received was the reaction of my (grown and gone) sons to a piece I’d just completed. They see my work all the time, but they both agree, I’m still evolving.

What are you working on now that you are excited about?

I’m working on a field of sunflowers. It has mountains in the background, fields that have deep accretion (texture) and, of course, sunflowers that appear as if they’re beginning to melt…like they would in the heat of August. It began as a practice for a commission I’m starting which is a huge painting of Engineer Mountain. I was playing with the mountain range and the sunflowers just arrived in my mind. It’s pretty cool.

What is one piece of creative advice you wish you had learned sooner? There are actually two things that come to mind. First, LIVE creatively in every aspect of your life. Second, take a break and go away…find an art retreat and immerse yourself in the unknown. Not a class but an actual multi day retreat.

Follow Rooted Social Media on Instagram – meeting Owner Emily Cowan, of course – and you might discover she loves memes and emojis, plus she can put together an amazing Instagram reel! Most of all, her goal is to see your stress over social media for your small business simply vanish!

Emily’s clever name choice is a nod to her love of flowers and gardening. Her earliest jobs were in mom-and-pop garden centers – the quintessential small business – which also inspired her to become a florist. (She still dabbles in flower arranging but only as a hobby.) Then, she was inspired to create Rooted Social Media to take the challenge of navigating social media off business owner’s plates, so they can focus on other parts of their endeavors – and get back to family life.

Why choose Rooted Social Media? “I have worked for both large corporations and also many small businesses over the years, so I understand how overwhelming it can be to run your own company,” she shares. “You can’t handle everything – and social media is one of the first things to fall by the wayside.”

As a social media manager, Emily knows her efforts can have a direct impact on the overall reach of a small business and, as a result, help them grow!

“I want to help small businesses succeed, and a relevant piece of that success in today’s world is social media! Whenever I see new followers or new messages coming in wanting to purchase a good or a service, I do a little happy dance!” she adds.

For hesitant small business owners, Emily gently points out that younger generations value what’s posted on social media even more than previous generations.

“These younger consumers are going to be your top customers one day, so it’s imperative to share what’s important to them! I learned recently that most of Gen Z (born from 1997 to 2012) will perform a search on a product or company on social media before they search on Google,” Emily says. “If you want to capture that audience, you need to go where they are! The oldest segment of that generation is entering their late 20s, and they have money to spend. Make sure they’re spending it with you!”

Consumers also want to purchase items from companies with values similar to their own. They want to know WHO they are purchasing from, and social media helps give them that glimpse into exactly who the owner of the company is, and why they should purchase from them versus another company.

“People love to support local, but if they don’t immediately know they can purchase an item at a small business, as opposed to a big box store, they will take the easy way out and go the big box store route. Having a strong social media presence will help customers choose your store over another!”

Rooted Social Media offers three different packages of posts per week and hours of content creation, which might include carousels and reels from the client’s photos and videos. If a potential client asks for content creation, it’s helpful to be local. Emily also provides services to photographers, realtors and similar industries who don’t need her to create content – but utilize their own galleries in handling their social media needs. She offers overall social media management – including developing strategies – and networking within social media apps.

“I’m also working on creating workshops for people who may want to learn more about different platforms if they’re not quite ready to hire a social media manager.”

As a bonus to her obvious creative side, Emily is also detailoriented, providing meticulous content, word-wise and photo-wise. Always thinking and creating to grow a client’s presence in the marketplace, Emily is grateful for the experience she garnered with her degree in business administration from Elmhurst College (now Elmhurst University) in Elmhurst, Illinois. She now calls Mooresville home, with her husband, Chris, and their dog and two cats, where they love to kayak, play games, explore new restaurants and spend time with family on the lake.

HONEY MUSTARD & CUMULATIVE IMPACT

If you have read any of my columns over the past year and a half, you have read about the power of small choices over time leading to success. Simple choices that, if turned into a habit and executed, will result in beneficial outcomes. The result of cumulative impact or the compound effect as shared in the book “The Compound Effect” by Darren Hardy.

This is demonstrated explicitly through investing or learning a new language. A little bit each day leads to larger outcomes; more money in the bank or fluency in a second language. Each little bit you invest in yourself, your team or your business is a deposit in the bank for better outcomes.

Honey mustard. A metaphor for the compound effect. Why this? Organic plain Greek yogurt, organic mayo, lemon juice, cayenne pepper, mustard, honey, salt and pepper.

And not this? Soybean oil, high fructose corn syrup, distilled vinegar, water, dijon mustard, mustard seed, white wine, salt, citric acid, spices, honey, egg yolk, sugar, etc.

Well, at least there is MUSTARD and HONEY in the bottled version somewhere.

Food labels list ingredients in order of quantity. Don’t you find it disturbing that, in a honey mustard dressing, the first two ingredients are soybean oil and high fructose corn syrup? These also happen to be two of the main ingredients in any food that should be avoided and are directly linked to inflammation in the body. So, why do they do this? Why the “shortcut?”

The short answer – the food industry is a business. They want to mass-produce products at a lower cost that are shelf-stable and will not spoil to make more money. Unfortunately, their concern is the bottom line, not the health of customers.

The good news is that we have the power to educate ourselves and make the small choices over time that make a difference in our health. We can be in control of what we eat and make the better choice. It is up to us to invest in our health and what we are eating and feeding our families.

Tip: Read the food labels. Take five more minutes to make the healthier version. Pay attention to your ingredients. Creamy honey mustard is a delicious dip/dressing that can easily be made at home and won’t sabotage your health. Small investments over time that lead to a cumulative impact.

HIBACHI CHICKEN & FRIED RICE

For June, I wanted to share a summertime classic meal that we make almost weekly at the house. It’s great for a crowd, fairly simple and a pretty quick cook – hibachi chicken and fried rice on the griddle.

Ingredients:

• 1 pack (6) Boneless/Skinless Chicken thighs – sliced into ½-1 inch cubes

• Marinade: S&P, 2 T olive oil, 2 T soy sauce, 2 T sesame oil, 1 T rice vinegar, couple squirts of sriracha (if you want some spice) and ½ cup of Bachans Japanese BBQ Sauce (or any kind of teriyaki sauce)

• Jasmine Rice (1-1½ cups for serving 2 people) – I usually like to make around 2-2½ cups to have some leftover fried rice with the chicken for the next day

• 2-3 eggs

• Some kind of green – zucchini or broccoli (or both) work well for this dish

Instructions:

1. First, you’ll want to cook the jasmine rice the day before – or at least a few hours before you’re cooking the rest. I always cook it in a rice maker, then let it sit in the fridge for a day before. I also like to go ahead and marinate the chicken with the above ingredients the day before, so when you’re ready to cook the next day, there’s a lot less prep!

2. Note: You could cook all of this on a couple of large skillets or one of those indoor breakfast griddles, but I always love using the blackstone for this. You have so much room and different heat zones for a smooth, easy cook.

3. When you’re ready to get to cooking, preheat the griddle to medium heat, add on your chicken and veggies and keep stirring frequently. Cook until everything looks nice and done. (Chicken thighs this way usually take around 10-12 minutes on medium heat.)

4. While the greens and chicken are cooking, melt a couple pats of butter

and lay down your previously cooked rice on the griddle top, creating a square-ish shape that isn’t too thick so it can get crisped up nicely.

5. Add your eggs to the griddle, scramble them up and, once done, stir the egg into the rice.

6. Next, add a good amount of soy sauce and a few dashes of sesame oil.

7. Keep stirring the rice around and add more soy sauce or sesame oil, as needed.

8. The fried rice should also take around 10-12 minutes. Once it starts to look darker brown and crispy, give it a quick taste test.

9. Pull everything off and combine for a delicious hibachi at home!

Dear Dr. Keith,

I’m a 57-year-old man who met my best friend when we were in preschool. His family treats me as if I were one of their own and mine the same. I’ve always been there for my pal, through the good times and the bad. We lived in a small town. While growing up, we hung out with the same group of girls and guys through elementary, middle and high school. Even though most of us went our separate ways during our college years, we all hung out when everyone came back to our town for summer. My friend and I went to the local community college and university to finish our degrees. We both graduated and started working for companies close to the city we grew up in. We decided to move in together, become roommates to save money and eventually purchase our own homes. We played on the same local recreation softball team, double dated frequently, traveled together with no big issues. I spent a lot of time with his family and he with mine, and when I got married, he was my best man. He eventually got married and maybe it was an obvious red flag when he asked a coworker to be his best man instead of me. There have been other slights throughout our friendship, but I either chose to make excuses or ignore them. At the beginning of his marriage, things were great between us. Our wives got along well, and we spent a lot of time together socializing, traveling and creating great memories. In time, things have changed.

When we go out with other couples, my friend makes me the butt of most of his jokes. He continually criticizes my laugh, behavior and tells stories of our past that make him look good and me like an idiot. If

I start to push back or relate my version, he gets angry and degrading; I just shut up and take it so I don’t create conflict. When we attend social gatherings together, he must be the center of attention, and if for any reason he doesn’t get it, he pouts, gets upset and ruins the evening for everyone. When we go to a party where we know most of the people, my wife and I go out of our way to introduce him and his wife to everyone to make them feel comfortable. When we go somewhere they know most everyone, they leave us to fend for ourselves, making us feel unwelcome. My wife continually asks me why I put up with it or continue to pursue the friendship. When I look back on our shared history, there have been incidents and confrontations with our group of friends growing up, where they chose to end the friendship with him. He’s no longer in touch with any of them, and I’m still in touch with many of them. In our conversations, a common question frequently arises, “Why are you still friends with him?” My usual answer, “He has been my best friend since we were kids; I don’t want to abandon him.” I’ve been taught that loyalty is a great trait, so I don’t want to be disloyal to my friend. Here’s my dilemma – I take pride in being a good friend and a good person. I don’t want to throw away years of friendship, however, I’m fearful that if I continue our friendship my wife will view me as weak and lose respect for me, ultimately threatening our relationship. Is my loyalty blinding me, and would it be wrong for me to end a lifetime friendship that doesn’t feel good anymore? I’m struggling, please help.

Maintaining healthy relationships and friendships is work, but it shouldn’t be hard work. They need to be reciprocal to be successful, however long they last. Some relationships will be short in duration, some longer and some will last a lifetime. Hopefully, they’ll be healthy and bring you joy, not heartache, your choice. One of the greatest things we possess is our free will, our freedom of choice. It’s important to choose your friends wisely because who you choose to surround yourself with will have a direct effect on the quality of your life. Only you know what you’re willing to put up with in a relationship. Healthy friendships require compromise, not sacrifice. I believe there are three sides to every story; your side, his side and the truth that lies somewhere in the middle. If we were face to face, I’d have a lot of questions to fill in the blanks. What are you afraid of if you choose to walk away from the friendship? You call him your best friend – has he ever said that of you or made you feel you are by his actions? Does he make you feel secure and supported in your friendship? Just some things to think about. You’ve maintained the friendship for all these years with what it sounds like the negatives outweighing the positives, sacrificing your dignity to appease your friend. Instead of making you feel like an important part of his life which is what best friends do, he goes out of his way to make you look and feel bad, so he feels better, making you feel like an outcast. Is that what friends are supposed to do? I don’t think so! Sometimes our wives notice things that we don’t, and sometimes, not all the time ladies, we might want to pay attention. Your wife will learn to respect you when she can trust that you’ll set healthy boundaries with others, as well as with yourself.

I look at life as a train that leaves the station when we are born. It’s our job to take care of our train by cleaning it, maintaining the engine, keeping it on safe routes and insuring it against the unknown casualties that life presents. At every stop we make on our journey, every station we visit, we’ll have passengers that will get on, off or continue on. The passengers are our friends, family, coaches, teachers, coworkers, bosses, spouses, etc. Some will take a short ride, some go further and some will take the whole journey, and we get to decide who comes along. Some will be respectful and take good care of your train, some will be careless and trash it and others will try to destroy your train if you allow them to continue on your journey. Those that have been along the longest, that we become attached to, acquire their own car by earning our trust, respect, love, loyalty or sometimes through manipulation and fear. It’s up to us to make our train a priority, take good care of it, remove those who abuse it and invite those who respect it to climb on board and enjoy the ride. In the case of your friend, it sounds like he’s abused and trashed his car, so it might be time to uncouple it and move it to another track.

ONE MAN’S PERSPECTIVE – PARTY TIME

Sometime ago, my wife mentioned she wanted a party. I responded with enthusiasm, asking the occasion. She reminded me, I was turning 90, a fantastic milestone. Initially, age hadn’t dwelled much on me. In fact, when younger, I pondered being alive for the turn of the century. And there I was, witnessing it. Many believed computers couldn’t handle the transition from 1999 to 2000. Yet, here we are, 24 years later. My initial hesitation stemmed from anticipated effort and expense. However, she insisted we have the party, and it wouldn’t surprise me.

So, I relented. I inquired about guests, and she estimated around 50. I was taken aback. Did we even know 50 friends? She assured me we did. Then came logistical questions: Where would everyone fit? Where would the party be held? What would we serve? Where would they stay? She simply said, “We’ll figure it out.”

We considered the Airbnb adjacent to our daughter’s. It had five bedrooms but couldn’t accommodate 50 guests alongside catering and a bar. The Foundry at Trilogy (where we live) was our next option. After compiling the guest list, we found Marianne’s estimate of 50 had fallen short. With the support of ABC (America’s Boating Club), our church communities (Little River Methodist in SC), our new church family (Bethel Presbyterian in Cornelius), and friends in Trilogy, our guest estimate surged to an impressive 77 attendees. We would have loved to increase to 90 to match my age, but what was available at The Foundry wouldn’t accommodate.

Keela and Tim (our daughter & son-in-law) graciously offered their home for family accommodations. Meanwhile, Marianne and I gave up our house for close friends, taking refuge in the Airbnb. Still, a handful of out-of-towners sought lodging in nearby motels.

Additionally, we were delighted when our son and daughter-in-law graciously flew in from their vacation in Belize. Another dear couple, who are in the middle of moving to Spain, surprised us by coming.

We settled on a bar setup featuring beer and wine. I put together a slideshow of 66 slides to run continuously. Our son, Scott, graciously took on the role of Master of Ceremonies, ensuring the party maintained its lively atmosphere. I encouraged guests to share their experiences with me. While I wasn’t specifically seeking out a roasting, as a laid-back sailor, I knew I could handle some good-natured ribbing. It turned out these shared stories became a highlight of the evening, evoking rowdy laughter and even a few tears. We consider ourselves incredibly fortunate to have such deep and meaningful relationships, both among friends and family.

Flexibility, adaptability, and a solid plan were key. The result? A fantastic, over-the-top celebration where everyone had a blast. It was a truly special moment, and for that, I’m grateful to the Lord and everyone involved.

FOOTPRINTS OF FAITH

Give careful thought to the paths for your feet and be steadfast in all your ways. Proverbs 4:26 NIV

Did you know that there are more than 250 references to our feet in Scripture? Wow!

What is up with that? I don’t know about you, but as my own feet prepare to embark on their 70th trip around the sun this summer, they aren’t much to even look at, much less to meditate about; even if I splurged and treated myself to a salon pedicure.

But, what if our feet are mentioned in Scripture much more symbolically? What if Scripture often used the word “feet” as a metaphor for our choices? After all, we almost always need our feet to help us carry out whatever our choices dictate at any given moment, don’t we?

We need our feet to take us to places of service like homeless shelters and soup kitchens. But, unfortunately, those very same feet are also useful for making a beeline for our phones so that we can spread – or maybe even embellish a little – that juicy tidbit of gossip that we’ve just heard about that snobby new neighbor whom we just love to hate.

Hopefully our feet keep us moving in step with the Spirit to bend our will and our choices to embrace God’s will and his very best for our lives. As our text from Proverbs reminds us, we must give careful consideration to the paths that we allow our feet to follow. We must carefully guard our thoughts, words, motives and actions, always seeking to align them with the Truth as it is revealed to us in Scripture and in the life of our Lord Jesus Christ.

We must also carefully monitor which people and which media we allow to influence us. It is virtually impossible to overstate the power that worldly people and violent or vulgar media wield in setting our feet on the wrong paths; or conversely, to overstate the power that Godly friends and wholesome media exert in helping us to keep our feet on the right paths.

When our worldly willfulness is screaming and demanding to get its own way, it certainly isn’t much fun to stare it down and deny it. Anyone who has ever tried to lose weight can testify to how hard it is to resist the lovely tray of assorted doughnuts that someone brought to the office to celebrate a coworker’s birthday. What are we to do when

our feet are itching irresistibly to choose and to follow a path that we know is harmful?

There’s a word for this phenomenon. It’s called temptation. Do we know anyone who squared off with the enemy and his torturous temptations and emerged victorious? Of course we do! Even at His very weakest point after being alone in the wilderness for 40 days, our Lord shamed that evil old snake right back into the slimy black pit of which he slithered out.

What can we learn from how Jesus handled His temptations that will serve as a model for us whenever the enemy shows up unannounced at our own front doors? Jesus answered the enemy’s assault each and every time by quoting Scripture.

If we have made daily Bible study a personal priority, the chances are stacked in our favor that just the right verse will come to mind at the very moment we need it to help us to resist and to overcome temptation.

Not to mention that our desperate cries for help whenever the enemy attacks will always fly straight to the ears and to the heart of God. He is our sure defense against the enemy’s vicious traps whenever we cry out to him to save us.

Would a loving parent ever turn a deaf ear to his or her child’s anguished cry for help? Would our God who loves us with a purer and deeper love than any earthly parent ever had for their precious child ever fail to deliver us from the clutches of the evil one?

God has not left us defenseless in our battle to keep our feet on the path that leads to Him. May we always strive to please Him by surrendering our will and our choices to His perfect plan for our lives.

Prayer: Holy Father, I surrender control of my life to You, knowing full well that your way and your will is always best. Please show me plainly when my feet have strayed from the path that leads to You. Please help me to recognize and to withstand temptation when it comes my way. Help me to be so steeped in Your Truth as it is revealed in Scripture and in the life of Christ that I will be able to see straight through the enemy’s lies and to not be deceived or trapped by them.

THE LAST WORD ON LIFE AT THE LAKE

TRAFFIC JAMS FOR ALL

It’s difficult to choose the spot with the worst traffic around the lake – I’d guess most people would say Interstate 77 somewhere between the exits of 23 and 36 just based on the sheer volume along that route. The bad traffic on that stretch feels even worse because there’s an empty toll lane right next door that you have to look at while driving along at five miles per hour. For some people, Highway 16 is a nightmare for their daily commutes snarled by accidents or weather. For me, it’s Highway 150.

I don’t find I-77 so bad since I live in a somewhat less fashionable part of the lake and don’t need to make daily trips to Charlotte. Highway 16 can be a nightmare during peak traffic, which seems to cover most of the day now, but it’s also not a road I have to use every day.

I live and die by the traffic on 150. This is the road that was supposed to be expanded to four lanes, but the project was pushed back at least a couple years. Neighbors, store clerks and bartenders along 150 all seem to know a bit about the construction, but what I hear often contradicts. I heard that the expansion will require 12 bridges to be built. Then I heard it’ll require only four bridges, but they’re going to have

to tear down a bunch of houses and businesses. Then I heard it won’t affect any businesses, but it’s also not going to happen for a decade. In any case, it’s like the cop who pulled me over while I had a Christmas tree tied to the roof of my car said, “Traffic is only going to get worse here for a long time.”

If you need to drive east on 150 in the morning, you need to wake up early and not slow down for anything. Getting out the door five minutes late can translate to sitting an extra 20 minutes as the stoplight at Perth Road grinds through rows of cars. The same goes for the end of the day. Want to get home from the YMCA without sitting through a dozen light cycles while trying to make a left from Morrison Plantation Parkway onto 150? Well, wrap up your workout early and replace it with the stress of trying to get through the intersection without losing your mind.

I know they say they’re going to widen 150. One day they might, but we’ll have to deal with a couple years of construction along that corridor when they do finally start, so we may look back fondly on this mess we have now.
