I
’ve never been one of those people who makes a big fuss over birthdays. In fact, if you know me at all, you know my favorite part of gift-giving is doing the giving, not the receiving.
I absolutely love surprising people with thoughtful gifts throughout the year. Truthfully, I’m not great at remembering birthdays, and I’ve never liked buying something simply because the calendar says I should. I’d much rather stumble upon the perfect gift and give it “just because.” So imagine my surprise when my daughter decided to turn the tables on me this year! At the July Girls’ Night Out event in WinstonSalem, she’s planning a birthday celebration for me and my dear friend, Robin Bralley. Our birthdays are July 15th and 16th, and we couldn’t be more excited. The best part? The celebration will benefit one of our favorite nonprofits, Second Harvest Food Bank. For years, we’ve had the privilege of working alongside the incredible team at Second Harvest Food Bank of Northwest NC. They aren’t just community partners—they’ve become family. We’ve seen firsthand the impact they make every single day, and we’re honored to support their mission. Many years ago, we made the decision to focus on collecting monetary donations rather than canned food drives. While every donation is appreciated, we learned that food banks can stretch donated dollars much further than most of us can at the grocery store. Through their purchasing power, partnerships, and buying programs, just $1 can provide up to 6 meals for neighbors facing food insecurity.

Dear Betty Bee, My kids are home for summer, and despite my best efforts, the house feels like it explodes by noon every day. How do I enjoy summer with my family without constantly cleaning up after everyone?
BETTY BEE SAYS: Oh, friend, if you’ve found a wet towel on the floor, an empty snack wrapper on the counter, and a trail of flip-flops leading through the house before lunchtime, welcome to summer! This season is full of sunshine, laughter, lastminute adventures, and memory-making. It’s also full of extra stuff finding its way into every room of the house.
Use baskets generously. Summer has a way of multiplying toys, goggles, towels, and sports gear. A basket gives all those things a place to land. Try a 10-minute family reset each evening. Turn on some music, set a timer, and have everyone pitch in. It’s amazing what a few focused minutes can accomplish.
The good news? A busy home often means good things are happening inside it.
Remember every room doesn’t need to look perfect every single day. Focus on keeping your spaces functional, welcoming, and easy to enjoy.
One of the biggest misconceptions about organizing is that the goal is a perfectly tidy home. It’s not. The goal is creating simple systems to help your home support your family’s active life.
One day, the pool towels will be folded, the craft supplies will be packed away, and the kids won’t be racing through the house looking for their swimsuits.

WHEN YOUR MIND WON’T STOP WRITING STORIES Maybe the invitation is this:

ave you ever replayed a conversation in your head long after it ended?
prepared or considerate. Sometimes we are. But there’s a line where awareness becomes worry and empathy becomes emotional over-responsibility.
Wondered if your text sounded wrong. If your friend seemed distant. If your coworker’s short response meant they were upset. If you said too much… or not enough.
Many people, especially caregivers, parents, leaders and those who deeply value relationships, unknowingly shoulder emotions that aren’t theirs to carry.
Ask questions instead of assuming answers.
For many of us, overthinking has become second nature. We analyze, predict, assume and rehearse imaginary outcomes — often carrying emotional weight for situations that haven’t happened and may never happen.
The truth is: other people’s feelings belong to them.

Our minds become storytellers. The problem? Those stories are frequently written without facts.
That doesn’t mean we stop caring. It means we stop assuming. If someone has something important to communicate, healthy relationships make room for honesty. We aren’t meant to become detectives in every interaction.
A quote I recently came across stopped me in my tracks: Stop assuming everyone is upset with you. Stop trying to read minds. Stop taking responsibility for other people’s thoughts and feelings. Let people own their emotions.
The cost of overthinking is significant because it steals something precious: peace.
Simple words, but profound.
Confidence.
How much energy do we spend trying to interpret silence? Trying to decode facial expressions, delayed responses or shifts in tone? We convince ourselves someone is disappointed, frustrated or hurt — and before long, we’re carrying anxiety that may not belong to us at all.
Joy.
Overthinking often disguises itself as caring. We tell ourselves we’re being thoughtful,

It steals present moments while our minds revisit yesterday or rehearse tomorrow. It steals sleep.
And sometimes, opportunities — because fear of getting it wrong becomes stronger than the willingness to move forward. Ironically, the people who overthink are often the ones who care the most. They want to do well, love well and avoid hurting others. But carrying constant mental noise isn’t kindness toward ourselves.
Pause before creating meaning where none has been given.
Trust that not every silence is rejection. Not every delayed response signal disappointment. Not every shift in someone’s mood is about you. And perhaps most importantly, trust that you do not have to manage everyone else’s emotions to be worthy of connection. Life feels lighter when we stop trying to read minds. There is freedom in allowing others to speak for themselves. Freedom in accepting uncertainty. Freedom in releasing stories our minds create and returning to what is actually true. Because peace doesn’t come from controlling every outcome or understanding every thought another person may have. Sometimes peace arrives quietly — the moment we stop carrying what was never ours to hold. Maybe the healthiest question we can ask ourselves is not, “What if something is wrong?” but rather, “What if everything is okay?”

CHICKEN PESTO PASTA SALAD By KATHARINE ROSENTHAL, RDN
I
t’s fresh, flavorful, and effortlessly satisfying. It’s packed with herby pesto, juicy chicken, and crisp veggies, all tossed together in a way that feels equal parts light and hearty.
Servings: 4-6 Prep time: 10 minutes Cook time: 15 minutes Total time: 25 minutes • • • • • • •
Ingredients: 8 ounces farfalle pasta 1/2 cup pesto 1 cup cherry tomatoes, halved 1/2 cup mozzarella pearls 2 cups kale, chopped 1/4 cup red onion, diced 2 cups chicken breast, chopped Instructions:
1. Cook the pasta according to package directions. Drain and let cool slightly. 2. In a large bowl, toss the pasta with the pesto until evenly coated. 3. Add the cherry tomatoes, mozzarella pearls, kale, red onion, and chicken. Mix gently. 4. Chill in the fridge for 15–30 minutes before serving for the best flavor. 5. Serve cold or at room temperature, and enjoy!

Over the past several years, Kristen’s jewelry has developed a loyal following among our customers, many of whom return year after year to add another meaningful piece to their collection. Passing on that legacy of a “life on the water” means everything, and sharing that dedication with family, friends and new Lake Norman residents is what has made Aquaventure Boat Club the longest established boat club in the area.
A Coast Guard licensed master captain, Dustin has been boating since the age of 14 and has – in turn – savored every detail of spending time on the lake with his own kids making lifelong memories. He also loves sharing the tender ages at which they each began joining in his passion for the water.

“Isaiah is my oldest. He is 21 years old and started working with me when he was four years old! He just graduated Liberty University with a degree in pastoral leadership. Esther, age 19, teaches preschool and has worked with me from the time she was 10. Abigail is 16 years old and currently works for Chick-fil-A, but she worked with me from age 10 until age 15. Luke, my youngest, is eight years old and just started working with me last year,” Dustin shares proudly.

As things progressed on the construction side — discussions turned to furnishings and styling. That meant analyzing the client’s existing furniture and décor to determine which pieces could still work in the new home, and where updates might be needed.

The team maintained a cohesiveness in all finishes throughout the home, balancing aesthetics, functionality, and a keen eye on long-term livability. “To ensure the outside of the home complemented its interior design, we also guided their external material and color selections, achieving a beautifully blended aesthetic,” Anna explains.
“While blending the old with the new, we guided them through new furniture and window treatment selections, styling details, and some finishing touches throughout their home,” Anna shares. She’s proud of the high level of trust she develops with clients over the course of a project, developing a strong working relationship, and finding that clients become comfortable enough to give her team creative freedom. That’s where collaboration is key. Since this particular project aligned with her clients returning to in-office work following Covid, Anna recalls those exciting times when her clients returned home to catch a glimpse of newly completed spaces. “The reveal moments became especially meaningful because the transformation happened gradually while they were away during the day,” she adds. Relationship-driven interior design never goes out of style, and thoughtful consideration of the homeowner’s vision has meant this home still feels as wonderful to its owners now, as it did the day they moved in. The power beneath the hood. For a few precious moments, it felt as though his father was riding along beside him. CARRYING THE LEGACY FORWARD When the pair returned, there was one more memory to create.
THE LONG ROAD HOME A Treasured Camaro and the Enduring Bond Between Father and Son By CAROLYN SHORE-PETERSON
S
ome reunions are planned. Others happen when you least expect them.
Austin Settle was 9 years old when he last saw his dad’s 70 Camaro hot rod. A recent chance sighting at a local gas station led to a reunion he never imagined possible; a reunion not only with his late father’s cherished Camaro, but with memories he thought were lost forever. The story began in April when someone spotted a distinctive classic Camaro at a Mooresville gas station. Recognizing the vehicle, the individual snapped a photo and sent it to Kelly Shuler, widow of the car’s original builder, Jeff Settle. For Kelly, the image stopped her in her tracks. Jeff, a respected Rowan County Probation and Parole officer, had painstakingly restored and modified the 1970 Camaro before his life was tragically cut short in a car accident in 2011. At the time, Austin was just a young boy. The Camaro, one of his father’s greatest passions, eventually changed hands a few times, and over the years its whereabouts became unknown. THE SEARCH BEGINS
Russell had purchased the vehicle ten years earlier from DC Classics in Mooresville and had no idea of the emotional history behind the car. When he learned the story, he didn’t hesitate.
Now she was part of the story herself. Together, Austin and Erin, now living in Alabama, took the car out for another drive, symbolically connecting the past and the future; his father’s legacy riding alongside the life Austin is building today. For Kelly, it was a gift she never expected to give her son.
For Russell, it was an opportunity to share He contacted the family and arranged a meeting. something much bigger than a car. A FAMILIAR SHADE OF GREY On May 15, Austin arrived at Trump National Golf Club not knowing exactly what to expect. Then Russell drove in. The Camaro’s unmistakable paint color glistened in the afternoon sun, the same color Austin remembered from childhood. In an instant, years melted away. “It looked exactly like Dad’s car,” Austin recalled. As he walked around the vehicle, memories began flooding back. Russell showed him the modifications he had made during a decade of ownership, while also preserving much of what made the car special in the first place. Though some details had changed, the heart of the machine remained the same.
Determined to find the car and reconnect her son with a piece of his father’s legacy, Kelly shared the photo and a heartfelt request on social media.
And then came the moment Austin never thought he would experience again.
The response was immediate.
Without hesitation, Russell handed him the keys.
Car enthusiasts across the Lake Norman area began sharing the post, including members of the popular LKN Car Guys community. Before long, the search led to the Camaro’s current owner, Russell Jones.
Austin settled into the driver’s seat, turned the ignition, and listened as the engine his father had built roared to life.

Russell stepped aside and Austin’s wife, Erin, climbed into the passenger seat. Married just nine months earlier, she had heard countless stories about Jeff and the Camaro.

Like many grandparents, Carrie and Gary were eagerly anticipating the birth of a new grandchild. Their daughter had long passed her due date and was feeling anxious. In a family text thread, Gary attempted to encourage their daughter by assuring her of their prayers and focusing on the celebration to come when the baby left her “woom.”
The result is Zoom Zoom Out the Womb!, a whimsical and heartfelt children’s book told from the imaginative perspective of a baby who is perfectly content in his cozy quarters. While Mom and Dad eagerly await the big day, the baby sees no reason to hurry. Through playful rhymes and gentle humor, readers experience the anticipation, curiosity and excitement that

“Zoom Zoom Out the Woom…a children’s book by Grandpa Gary.” Everyone laughed. But, then another thought emerged. “What if we actually did it?”
Then came the long-awaited news. After a prolonged and difficult labor, Carrie learned that her precious grandson had finally arrived during the night. She sat down to record the joyful event in her journal. But, instead of simply documenting the birth, something unexpected happened. “Ideas began to come to me so quickly that I needed to grab some paper and just try to capture the words that were downloading in my brain,” Carrie recalls. “I felt like I was taking dictation...but from whom?”

That sense of connection is something Community Manager Alexandra “Alex” Welch says makes River Rock at Blume Road special.

word I’ve had to practice saying, and it is arriving with its own complicated political and environmental climate. The celebration already has a name: America 250, with official events planned across all fifty states and territories. There will be gatherings in Philadelphia and Washington, on the National Mall, and in town squares I couldn’t find on a map. A United States Semiquincentennial Commission has been working since 2016 to organize commemorations that are meant to be, in their words, “the largest birthday celebration in world history.” The Op Sail fleet is expected to return to American harbors again. Think about what the country has done since that summer I watched fireworks over a fairground in my hometown. In 1976, there were no cell phones, no internet, no streaming services delivering entertainment to a glowing rectangle in every pocket. We had three television networks and a rotary phone. The Berlin Wall stood. The Soviet Union existed. South Africa was under apartheid. The European Union did not yet exist in its current form. China was still in the grip of the Cultural Revolution.

A TRIP THROUGH TIME: FROM THE BICENTENNIAL TO THE SEMIQUINCENTENNIAL By ROBIN SHUPE KELLER
A child of the 1960s, looking back and forward… I was born three months after John F. Kennedy was elected president. That makes me part of a generation that grew up with civil rights marches on the evening news, moon landings interrupting summer reruns, and a war in Southeast Asia that pulled our brothers, sons and fathers into uniforms. We were raised in a country that could be magnificent and maddening in the same breath, often on the same Tuesday.
53 tall ships into New York Harbor, their white sails impossibly beautiful against a hot July sky. The whole country threw itself a party, parades, pageants, a Bicentennial Wagon Train with covered wagons rolling from coast to coast, and everywhere those red-whiteand-blue colors on everything from coffee mugs to garbage cans. President Gerald Ford stood at Independence Hall in Philadelphia and declared America “forever young.” We wanted to believe him. Lord, we wanted to believe him.
So, when July 4th, 1976, rolled around, I was fifteen years old. I have been driving since February, almost six months. I was old enough to feel the weight of what we were celebrating, young enough to still be fascinated by the fireworks.
But 1976 was also just two years removed from Watergate. It was one year after the fall of Saigon. The economy was bruised, gas lines were recent memory, and the country had been through a decade of assassinations and upheaval that none of us fully understood. We celebrated at 200 anyway, because that is one of the most stubbornly American things there is, the insistence on hope in the face of complications, corruption and war.
And there were fireworks. Operation Sail, established my birth year 1961, by JFK, brought

We have also, in those fifty years, remained stubbornly, persistently American in our disagreements. The arguments of 2026 are different in their specifics but not entirely different in their nature from the arguments of 1776 or 1876 or 1976. Who counts as a full citizen? What does the government owe the people, and the people the government? How do we remain one country made of many? These questions do not expire. My generation, the ones who wore mood rings and watched the Bicentennial in bellbottoms, grew up being told that America was an idea as much as a place. That struck us as either deeply inspiring or slightly evasive, depending on the decade and our mood. But
I’ve come to think it’s simply true. America’s 250th anniversary is scheduled to be celebrated on July 4, 2026, with events planned nationwide through the America 250 Foundation and the U.S. Semiquincentennial Commission.

here is something special about the bond between grandparents and grandchildren. Maybe it is because grandparents have learned that the smallest moments often become the biggest memories.

Around the Lake Norman area, families are fortunate to have countless opportunities to spend meaningful time together. Whether your grandchild is adventurous, creative, curious about nature, or simply loves time with Nana and Papa, there are experiences close to home that create connections across generations.
There are several waterfront parks that feature playgrounds, picnic areas, trails and lake access, perfect for an afternoon.
A DAY ON THE WATER Of course, life around Lake Norman often begins with the lake itself. For a slower pace, a ride on a pontoon can become an unforgettable outing. Children love spotting birds, waving at passersby on other boats. Many marines offer easy boat rentals, making it possible to enjoy the lake without owning a boat yourself. Fishing is another timeless tradition that bridges generations. Whether casting from a dock or a quiet shoreline, children learn patience, storytelling of ‘the one that got away’, and maybe a life lesson or two. For families wanting something a little more active, paddle boarding and kayaking in calmer coves can be a fun shared adventure for older grandchildren. In Huntersville, Discovery Place Kids, offers hands-on children’s exhibits, story time, and museum with play areas, excellent for rainy days or when the temperatures might be a tad too warm for outdoor activities. Not far from Huntersville is Carolina Raptor Center, where kids can see eagles, hawks, and more up close with flight demonstrations.
An afternoon trip for ice cream at the Soda Shop in Davidson, NC can quickly become ‘our special place.’ Grandchildren remember those traditions, from the booth you always sit in, to Grandpa’s favorite flavor, to the sprinkles that Nana must have on her sundae.

y favorite type of food is Asianinspired, so I wanted to share my take on grilled Asian marinated chicken thighs! This recipe is super versatile and can be paired with easy sides for a quick weeknight dinner or dressed up with more elaborate dishes for something extra special. Ingredients: • 1 package chicken thighs • 1 tablespoon olive oil • 3 teaspoons fresh grated ginger • 1–2 cloves garlic, minced • 3 tablespoons soy sauce • 1 teaspoon sesame oil • 1 teaspoon chili oil • 1 tablespoon oyster sauce • 1 tablespoon rice wine vinegar • Salt & pepper, to taste

Instructions: 1. Combine all ingredients with the chicken in a large bag or container. Marinate preferably overnight for the best flavor. I use a chamber vacuum sealer with a marinate function to speed up the process when needed, but overnight in a zip-top bag works perfectly as well. 2. Preheat your grill to medium-high heat and place the chicken on the grill. Sometimes I add a little extra Salt, Pepper and Garlic seasoning right before grilling for even more flavor. 3. Once the chicken naturally releases from the grill grate, it’s ready to flip — usually about 5–6 minutes. 4. Flip and rotate occasionally until you get a nice char and the internal temperature reaches around 175°. I always cook chicken thighs a bit beyond the standard 165° because they become more tender and flavorful. 5. Let the chicken rest for a few minutes while you prepare the rest of your meal. Serve with rice and vegetables for an easy Asian-inspired dinner that will definitely leave you wanting seconds!

We saw C-97’s but none were converted for refueling. The KC-97 has fuel tanks inside the aircraft and a pod and boom installed. The operator lay on what we called an ironing board and flew the boom into the aircraft being refueled. This would involve talking to the other pilot, extending and retracing the boom as well as flying the boom into the receptacle on the receiving aircraft. They also had several Air Force 1 there. Two or three of them, and you could walk thru them and see the luxury the Presidents traveled in.

T
he United States Air Force (USAF) museum is at Wright Patterson Air Force base near Dayton Ohio. It is a huge facility housing 360 planes. It is fantastic and we spent two days there. It is free but there are restrictions and closings such as Thanksgiving, Christmas, and New Years Day. Having been a gunner on B-29’s and a boom operator on KC-97 for 4 years you can understand my interest. They had a wonderful display of the B-29. Even a cutout where you could go inside and get a feel of what it would be

like. They also had a couple of aircraft without gunnery. The only thing that I didn’t like on the B-29 was that if you had to bail out you had to go through the bomb bay. The B-29 was pressurized, and the B-17 (used in WW II) was not. The gunners were subjected to 30-40 degrees below zero while flying. That is why they wore fur lined leather suits. The one drawback of the B-29 was when they told us the jets were flying faster than the gunnery system in the B-29 and we would have to use Kentucky windage. This is where you lead or shoot in front of the jet so they fly into the bullets.
One of the things that really got me was the experimental aircraft. Most of them I knew nothing about. There were flying wings and all possible shapes as well as the high-flying U-2 which was used for reconnaissance. It could fly at 60,000 feet. Today planes fly at 85,000 feet The reason they fly higher is the air is thinner and the planes fly faster with the same amount of thrust. We now have rocket planes like the X-15 which can go five times the speed of sound and fly over 100,000 feet. The aircraft industry is among the fastest growing in the world. They have even added the SPACE FORCE, to the ARMY, NAVY, MARINE, AIR FORCE, and COAST GUARD. We love our country and have the force to defend it.

Dear Dr. Keith, I’m a 28-year-old woman who recently became engaged to my boyfriend after dating for five years. We plan on getting married within the next couple of years, maybe sooner if we can secure the venue we want to host our celebration. However, I know I’ve been responsible for the majority of our disagreements, which makes me feel a bit insecure. Here’s the issue. My two siblings and I were raised by strict and tough parents. We were expected to follow their rules and face severe punishment if we disobeyed. We were to be seen and not heard. Although they never explicitly said it, we all felt our parents loved us, but they simply didn’t know how to express it. Hugs and kisses were non-existent. Communication within our family was poor at best. I learned about life through conversations with teachers, friends, their parents and personal experiences. The only thing my parents ever told me about sex was that I should remain a virgin until I got married. This is where the issue lies with my fiancé. He believes we should move in together and engage in intimate activities before we get married, and I believe we should wait until after for both. It’s becoming increasingly challenging for me to decline my fiancé’s advances and pressure to move in together. Despite our infrequent interactions, I don’t want to let my parents down. My siblings have engaged in pre-marital sex and both are pleased with their decision. My friends find it puzzling that we haven’t been intimate and express concerns about the potential negative consequences on our relationship if we don’t. They suggest that we move in together now rather than after marriage, believing that living together will enable us to truly get to know each other. It seems like your fear stems from the possibility of disappointing your parents. Additionally, coming from a family with limited love and affection, you might be apprehensive about disappointing your future husband. Regardless of our life choices, when we embark on new experiences, there’s always a learning curve, including having sex. Initially, becoming intimate with someone can be awkward, but the more we engage, the better it becomes because we’re essentially learning on the job. Be patient and kind to yourself. If he’s a good man, he’ll be that way with you too. Throughout my career, I’ve learned that some people are affectionate but not sexual, some are sexual but not affectionate, and some are both. Hopefully, your fiancé is the same as you, which would minimize potential intimacy issues in your marriage. That’s a question that would be better addressed before marriage rather than after. Some people downplay the significance of a healthy sexual relationship in a successful partnership or marriage. The most fulfilling relationships I’ve witnessed or experienced recognize the importance of balance, acknowledging that the physical, mental and emotional aspects are
equally crucial. Mentally, open and honest communication is essential. We can’t read each other’s minds, so expressing our likes and dislikes is vital. Emotionally, mutual support and understanding are fundamental. Your partner needs to feel your unwavering backing. Physically, sexual compatibility is key. What more can you offer your partner than sexual intimacy? It also fosters a strong energetic connection. By taking care of each other in all three areas, you increase the likelihood of a successful marriage. Be cautious not to let the opinions of others, especially your parents, cloud your judgment and prevent you from making decisions that are best for you. Regarding your parents, you weren’t created to fulfill their expectations; it’s your responsibility to carve out your own path, and your choices will shape your destiny. Moving in with your fiancé before the wedding might be a wise decision, as we don’t truly understand someone until we live with them, and that begins when you choose to live together. Ultimately, you need to make a decision that aligns with your comfort level, as you’ll be living with the consequences of your choice. Will you regret giving in to your fiancé, or will you not? Only you can answer that question. There’s no right or wrong here; only time will reveal whether your decision was the right one.

F
or the founder of plants and i, gardening began long before it became a business. It started in Pine Island, Florida, surrounded by the beauty of her grandmother’s tropical garden, bougainvillea climbing in vibrant color, the sweet fragrance of frangipani trees and afternoons spent perched in the branches of a tangerine tree, eating fruit until there was no room left for another bite.
“Something about my grandmother’s homegrown food always tasted better,” said Kat Market, owner and the i in ‘plants and i.’ Then, there was her mother, lovingly nicknamed “Large Marge,” whose flower gardens could stop people in their tracks. “My mom could literally grow anything. The two most important women in my life taught

me patience and how to create beauty for others to enjoy,” Kat commented. Today, those early memories have blossomed into a growing business rooted in creativity, kindness and connection. THE GERMINATION OF PLANTS AND I The idea for the business came unexpectedly during a conversation on a friend’s back porch. “We were talking about opportunities, and I finally said, ‘Why can’t I just be the crazy plant lady and help people make their gardens feel loved?’” That simple moment became the beginning of ‘plants and i,’ complete with its whimsical little gnome logo affectionately known as “Little Marge.”

What started as a dream quickly grew into something more meaningful. Through helping fellow gardeners, Kat realized many homeowners simply wanted to be surrounded by beauty, whether they had the time, physical ability or gardening experience to create it themselves. “Some people want a perennial flower bed worthy of Holland; others just want seasonal color and something cheerful to enjoy with their morning coffee,” stated Kat. CREATING GARDENS THAT FEEL PERSONAL The process at plants and i starts with something simple: listening. Every project begins with a complimentary yard consultation where Kat walks the property alongside the homeowner, discussing favorite outdoor spaces, sunlight conditions, color preferences, pollinator interests, pets and maintenance needs. “The client is in control of the canvas. I’m just there to help install the vision,” Kat said. After the consultation comes what she jokingly calls her “recon mission”; searching for the best plants and materials to fit both the homeowner’s goals and budget. She also creates virtual renderings using photos of the existing landscapes, so clients can visualize their transformed spaces before installation even begins. The result is a garden tailored not only to the property itself, but to the people living there, as well.
GARDENING FOR EVERY LIFESTYLE One of the most meaningful parts of Kat’s work has been helping homeowners who once believed gardening was no longer possible for them. Some clients have limited mobility. Others work long hours, dislike yard work or jokingly refer to themselves as having a “black thumb.” “There are so many facets’ people don’t realize matter…sunlight, hardiness zones, soil pH and watering habits. Sometimes people just need guidance and encouragement,” commented Kat. Her philosophy is refreshingly approachable – gardening should never feel intimidating. “There are no wrong answers. You may just have to move things around a little bit. If
you’re learning and enjoying yourself, you are doing it right!” Kat said. She emphasizes practical beauty as much as aesthetics, considering allergies, pets, accessibility and the amount of maintenance a homeowner can realistically manage. A LOVE LETTER TO LAKE NORMAN GARDENING The Lake Norman region offers a unique gardening canvas thanks to North Carolina’s versatile growing zone. “This area is such a beautiful place to garden. You can have timeless southern classics like hydrangeas, azaleas and gardenias, but also tropical pops of color and even palms around the lake. A garden is a place of peace, serenity and self expression. The plants people choose are what make them happy,” stated Kat. MORE THAN LANDSCAPING For Kat, gardening goes far beyond curb appeal. “It touches your soul. It is the smell of the dirt, the texture of the soil, the bees buzzing around, the feeling of being connected to nature. Serving homeowners in Lincoln County is the cornerstone of what we do. T
here is a moment familiar to anyone who has truly learned to look at the woods — the moment the landscape stops being background and becomes a pantry. A shaded hollow reveals ramps. A mossy log fruits with oyster mushrooms. Wild onions push through the soil beside a trail. Across North Carolina, from the Blue Ridge Mountains to the shores of Lake Norman, that moment can happen almost anywhere. On June 19, 2026, Quinn and I attended a wild foraging class at the Florence Thomas Art School in Ashe County. Tucked into the far northwestern corner of North Carolina, Ashe County sits in one of the richest temperate ecosystems in the world. The elevations, cool climate, and biodiversity make it one of the finest foraging regions in the eastern United States. Spring in Ashe County arrives with ramps, the pungent wild leeks long treasured in Appalachian cooking. Found in moist mountain hollows, ramps have become increasingly popular with chefs and food lovers alike. But experienced foragers stress sustainability: harvesting only a leaf or two while leaving the bulb intact allows the plant to regenerate.

Still, foraging requires caution and education. Some edible plants have dangerous lookalikes, and mushroom identification can be especially risky without proper training. The rule experienced foragers repeat most often is simple: if you are not absolutely certain what something is, do not eat it.
That growing awareness has helped fuel interest in foraging workshops and guided walks across North Carolina. Fortunately for residents around Lake Norman, the foraging opportunities do not
The Lake Norman region also supports mushrooms like chanterelles and oyster mushrooms, while the milder climate allows edible greens to grow for much of the winter. For those interested in learning more, North Carolina offers a growing number of educational opportunities. Fun Guy Foraging in Charlotte hosts mushroomfocused tours and classes throughout the region. NC Nature School in Raleigh teaches mushroom and herbal foraging alongside wilderness skills and familyfriendly outdoor education. One of the state’s longest-running events, the North Carolina Wild Food Weekend, held each spring in the Piedmont, draws participants from across the Southeast for guided walks, workshops, and shared meals built around wild ingredients. For those willing to take the scenic drive into the High Country, the Florence Thomas Art School in West Jefferson offers “Foraging for Incredible Edibles” workshops as part of its heritage arts programming. The classes combine hands-on learning with the culture and beauty of Ashe County — equal parts field trip and feast. Whether on a mountain ridge in Ashe County or along the wooded shores of Lake Norman, foraging offers something no grocery store can provide: a deeper connection to the landscape and the quiet satisfaction of discovering what the land has been offering all along.
