It’s

in times of tragedy that we see humanity at its best! Its times like those that we find ourselves in now…amidst the coronavirus crisis! There really are few words to explain how our existence has changed so drastically, and seemingly overnight! But I have seen the best in people time and time again through this pandemic. From the outpouring of love and support for our front-line medical personnel, putting themselves in harm’s way to care for others, to the folks helping us meet our essential needs. Volunteerism abounds, from taking groceries to those who are most vulnerable, to feeding the hungry and sewing masks. The creative ways folks have found to celebrate birthdays and weddings and to keep everyone’s spirits up.

I have never been prouder of our nation than right now.

It looks like Mother’s Day celebrations will look a little different than our typical ones, just as our Easter did. But we can still celebrate moms and all they mean to us. After all, the only thing most any of us want is appreciation and acknowledgement that what we do matters to the people we love most. So thank all you lovely moms out there!

Our cover features the first baby born in The Birth Center at Wake Forest Baptist Medical Center in July 2019. We thank all the neighborhood ambassadors and places that allowed us to temporarily distribute the magazine until all our regular distribution spots are open to the public again.

Is Market Volatility Always a Bad Thing?

Since entering the financial services industry, we have worked with an array of investors who have different personalities.

Many investors, especially those newer to the markets, have not encountered a stock market pullback until recently.

Unfortunately, these newer investors have a tendency to focus on the negatives of market volatility. These investors could be focusing on the positives and the opportunities created during times of volatility.

One may ask what opportunities are you referring to? For starters, pullbacks can create an opportunity to purchase publicly traded companies or other variable investments at a lower price than they may have been trading at in recent months or years. At Marzano Capital Group, our team of financial professionals focus on the long-term success of our clients and we believe investors that do not make investment decisions based off of emotion have fared better during market pullbacks than those investors who let emotions dictate their investment decisions. More simply put, market pullbacks can create attractive buying opportunities for investors who are focused on their longterm goals and working with a financial advisor or a team of financial professionals may help investors clearly identify those goals, stay focused on the longterm and not lose sight of their finish line.

5 Reasons to Thank a Nurse in May

6th is National Nurse’s Day. It is also the first day of National Nurse’s Week, which wraps up on May 12th.

May 12th, 2020, is a very special day, as it marks the 200th birthday of Florence Nightingale. She is known as the founder of modern nursing and established the first secular nursing school in the world. Nurses worldwide take her pledge upon graduation and still honor her with the work they do today.

Nurse’s week is extra special this year. With the current pandemic we are facing, nurses deserve an extra pat on the back for what they are doing to help their patients. We all are seeing news stories every day about nurses working so hard, sometimes without the tools and protective equipment they need, to care for others. It is a tough job; they need us to lift them up and show our gratitude.

May 2020 is definitely a time to think about how special nurses are and remember why we need to thank them. Here are five reasons to thank a nurse in May.

Nurses Are Patient Advocates Nurses take the time to explain to you the things about your healthcare you might not understand. They take great pride in

learning about their patients’ wants and needs, so they can advocate for what is best for each patient in every situation.

urses Support the Patients’ N Families, Too For nurses, it’s not just about the patients; it’s about the families, too. When your loved one is sick, you need information and support. Nurses are the ones who take the time to give you that.

Nurses Work Hard Nurses work long shifts and are lucky if they get breaks to quickly eat or use the restroom.

They are on their feet most of the time and do it all to make sure the patients get the care they need.

Nurses Are Brave To be a nurse is to be brave.

They go to work every day not knowing what situation they may have to face. In our current healthcare crisis, we are seeing this bravery every day. They are putting themselves on the line to make sure that others are cared for. There is no greater sign of bravery.

Nurses Have a Special Heart It takes a special person to be a nurse. They need to have a heart big enough to share with

the ones they love in their personal life, and to give to strangers at work.

Not everyone can do that. At work, they hold patients’ hands, cry with them, hug them, and celebrate the sorrow and joy. And after all that, they go home to do the same with their families.

We all know that nurses are special, and we know they deserve our thanks, but now is the time to show it. Our community is amazing. Over the last few months, we have seen some moving examples of how to show nurses, and the healthcare community as a whole, how much they are appreciated. We have seen law enforcement parades going by the hospitals, community members sewing masks for healthcare workers, food donations from local restaurants, notes of thanks written on sidewalks in chalk, and so much more. We need to keep it going.

Nurse’s week is an important time to remember to say thank you to these special members of our healthcare system, but we can’t stop there. They never stop giving of themselves for us, and we should do the same. Say thank you, send a note, give a gift, whatever you can think of to share your appreciation for the nurses who have touched your life—do it. They need to know we care as much as they do.

TURKEY & MANGO-SLAW PITAS (servings: 4) 1. In a medium-sized bowl, toss together 3 cups coleslaw mix, 2 Tablespoons sliced red onion, and 2 Tablespoons golden raisins. Add in 1/3 cup plain Greek yogurt or low-fat mayonnaise and 3 Tablespoons mango chutney. Mix until well incorporated.

How to Make the Perfect Picnic (Kid-Friendly)

a picnic basket, a comfortable blanket, and gather your family to make your way through the grassy meadows to enjoy a spread of your favorite bites for lunch. Enjoy this simple guide to cultivate the perfect picnic and fill it with laughter, lifelong memories, and maybe a few bunny sightings.

Set-Up Basics The ideal location for a picnic is a scenic spot where you can enjoy the warmth of the sun without its blinding rays. Choose a location that has natural shade, and plenty of lush, grassy space for the children to run around in. Once you’ve found your ideal picnic spot, lay out a comfortable blanket that is large enough to house your food and everyone coming along. You may wish to bring a few machine-washable blankets, so that everyone sits comfortably, and you can easily wash up any food spills or grass stains.

Similarly, think ahead about a few serving items to rest your food on. This helps to prevent any ants from sneaking a bite of your delicious snacks. For example, consider a wood crate or small trunk to use as a makeshift table. Your goal is to find slightly lifted, flat items that will prevent food and/or drinks from being knocked over. Even a cutting board or the inside of your picnic basket would work great to hold opened drinks!

I n a small bowl, mix together ½ cup low-fat cream cheese and ¼ cup apricot preserves. Spread about 2 Tablespoons of this creamy deliciousness on 4 whole wheat tortillas. Then, layer each with sliced deli turkey and fresh arugula or baby spinach. Roll up each tortilla tightly and wrap in parchment paper until ready to eat.

1. To make the crust, pulse 1 cup Medjool dates, 1 cup cashews or almonds, and a pinch of salt in a food processor. Add a little warm water, if needed, until the mixture forms loose balls. Press about a Tablespoon of the crust mixture into six small Mason jars.

2. To make the cheesecake, add 2 cups cream cheese, 1 cup Greek yogurt, 1/3 cup maple syrup or honey, 1 Tablespoon lemon juice, 1 teaspoon vanilla extract, and a pinch of salt to a food processor.

Blend until smooth. Evenly spoon the cheesecake mixture into each of the Mason jars.

3. Refrigerate for at least 2 hours, then top each of the cheesecakes with chopped strawberries.

Extras to Pack Often times, we can get caught up in the excitement of the picnic festivities and forget about the not-so-exciting extra items that are quite essential. You may want to consider bringing disposable ware for an easy clean-up. Similarly, if you plan on adventuring into the grassy meadows, plan to bring along a trash bag or two.

Depending on your delicious menu, keep your food safe by packing ingredients with ice packs or inside a thermos to prevent food spoilage. Finally, paper towels and wipes come in handy when wiping down before the picnic, wiping up spills, and cleaning up afterwards.

An appealing characteristic of picnics is that you are taking the party on the road; therefore, being organized by planning to pack those extra items will help keep any headaches at bay.

Think about how therapeutic it would be to knead bread and create a loaf, pretzel, or special pastry from its ingredients. Baking presents numerous difficulties for you to solve, such as substituting ingredients to promote a new flavor, or inconvenient conditions. Start with making a loaf of bread. Ask family members for online recipes! You most likely have the equipment needed to get started.

Calligraphy As a visual art, you can feel empowered by the execution of beautiful symbols and letters by hand. In using a broad-tipped instrument or brush, you’ll save money while potentially gaining a new business in designing specialized envelopes, or invitations, banners, or developing a unique signature. This art is not expensive! Along with a pen, you’ll need ink, nibs (pen points), which hold the ink, and smooth, non-fibrous paper. Starter kits, including plenty of practice sheets, are sold online or found in hobby stores.

Floral Arrangements The role of flowers and plants is a natural part of every ceremony and special event.

From gardens to houseplants, we cultivate specific colors, plants, and smells that boost our levels of happiness. Think of the enjoyment in working with, and preserving, freshly cut flowers or silks. Through research or a book, you can learn the significance of a flower’s meaning, color, and its association with a variety of events. Ethical Will When You Have More Than Things to Pass Along

Most

of us understand the value of a legal will to assure that our material items, investments, and other things of monetary value are given to family and friends in case of our death. But have we ever thought of having an ethical will? An ethical will holds much more than a legal directive for the transfer of our material goods. It is a written document that details the thoughts, emotions, and beliefs that mean the most to us that we want to pass along to those we love.

Why Write an Ethical Will?

Writing an ethical will allows you to communicate your personal story to your family, share your thoughts and memories of your life, and leave a document that details what you feel are your accomplishments and values.

By leaving your family with your ethical will, you will be leaving something meaningful behind, so they, as well as future generations, can learn from you and remember your stories after you are gone.

The Stories of a Life Well-Lived You may have stories you would like to relive with your children and grandchildren, including stories before they were even born. Often family histories are lost because no

one bothers to write them down, so an ethical will is a good way to include those rich family memories for generations to come. Some stories may have been shared many times over a Sunday lunch, but to have a written document for those to come is a very special thing. Much of what will be gained and retained in the sharing of your stories will be your perspective. Feel free to share your beliefs and values that resulted from your experiences. An ethical will empowers you to share the lessons you have learned, why they are important to you, and why they may be important to those who come after you.

The Regrets That We All Have Just as important as the things you did are the things you didn’t do, but you wish you had. As painful as some of these memories may be, consider the value of conveying anything that you regret saying or not saying. Because children are so often influenced to raise their children in the same manner in which they were raised, it is important to share your regrets, so they can learn from your lifelong lessons, perhaps having time to change their own course based on your regrets. In an ethical will, you can also forgive family and friends who have hurt you in the past or ask for forgiveness for things you did or said to others.

The Things You Are Passionate About If you leave assets to charitable organizations, an ethical will enables you to explain your reasons to family members who may feel slighted that they didn’t receive these gifts. Part of the reason to share your story is to convey why and how you developed your philanthropic beliefs and values, and why you were passionate about a certain charity.

The Blessings from Your Life Finally, one of the most important things you can write about in an ethical will is to identify the things for which you are most grateful. As each person progresses through life, it’s easy to get caught up in the pursuit of material possessions and status. By sharing with family and friends the things that are most important to you as you assess a lifetime of living, you can help them reevaluate and perhaps affect their own priorities to hold tight to more personal and less material goals and values.

Ethical wills have no standard form or structure, so feel free to personalize it. From a written letter to an informal note, diary or scrapbook, or to an audio or video recording—however best suits you in sharing what means the most to you is the way you should approach your ethical will.

The Difference between Memorial Day and Veterans’ Day

Monday, May 25th, people throughout the United States will be honoring Memorial Day—a day designated to remember those who died in active military service. Later in the year, people will come together once more and remember Veterans’ Day in November. On this day, we’ll honor veterans of all the wars. The meanings of these two days are often confused or intertwined. While there are similarities between the two, both do honor deceased military members from all the wars. Nevertheless, Memorial Day and Veterans’ Day have their own unique meanings and history. Each day deserves its own moment and recognition, although the differences aren’t well known. Let’s take a look at the true difference between Memorial Day and Veterans’ Day, while learning a little more about the two days’ histories.

MEMORIAL DAY:

VETERANS’ DAY:

As mentioned above, Memorial Day is observed on the last Monday in May to honor the military members who died while serving in the American military. Its history dates back to shortly after the Civil War. First known as Decoration Day, Memorial Day became a federal holiday in 1971 with the passing of the National Holiday Act of 1971.

On November 11th, people will honor veterans of all wars on Veterans’ Day. Originally known as Armistice Day, Veterans’ Day began in order to honor the end of World War I on November 11th, 1918. Then, in 1954, Congress changed the name from Armistice to Veterans’, and legislation was passed on June 1st, 1954, establishing November 11th officially as Veterans’ Day.

• On May 5th, 1868, The Grand Army of the Republic, an organization formed to honor Union veterans, founded Decoration Day and decorated the graves of soldiers from past wars with flowers. Former general of the Union Army and 3rd Commander in Chief of The Grand Army of the Republic, Major General John A. Logan, is credited with giving Decoration Day its official date of May 30th.

Historians have stated this particular date was chosen because the flowers would be in bloom throughout the country.

• The Civil War was the first time national cemeteries were established to bury the dead of the war. In fact, Arlington National Cemetery, the once home of the Confederate Army commander Robert E. Lee, began as a national cemetery in 1864. After the war, individual observations were held throughout the country. Earliest records of Decoration Day show that a group of freed slaves organized a tribute for the fallen soldiers in Charleston, South Carolina, less than a month after the Confederacy surrendered in 1865.

• The name Decoration Day was chosen because it included all wars and wasn’t the anniversary of a specific battle or war. On the first Decoration Day, General James Garfield (also soon to be 20th President of the United States), gave a speech at Arlington National Cemetery, and with 5,000 people assisting, the graves of 20,000 Union and Confederate soldiers were decorated.

• Every year on Memorial Day, a national moment of remembrance is held at 3:00 pm, Eastern Time.

• World War I ended on June 28, 1919, with the Treaty of Versailles. Seven months earlier, the fighting of the war had ended with the Allies and Germany putting an armistice into effect on the eleventh hour of the eleventh day of the eleventh month. The switch in the day’s name was made to include veterans from World War II, the Korean War, and all veterans from future wars, thanks to the hard work and pushing of veterans’ organizations for the change.

• For a few years, Veterans’ Day was held on the fourth Monday in October. In 1968, the Uniform Holidays Bill was passed by Congress and went into effect in 1971. However, by 1975, President Gerald Ford had moved the day back to November 11th, because of its historical significance.

• Other countries have similar days to commemorate the veterans of World War I and World War II. Canada observes Remembrance Day and Great Britain honors the second Sunday of November as Remembrance Sunday. France and Australia also have tributes around November 11th.

• The original concept of Veterans’ Day was for towns to have parades, tributes, and public events, which should also include a moment of peace. Businesses were to stop at 11:00 am.

Memorial Day and Veterans’ Day have national ceremonies at Arlington National Cemetery. While these days have separate meanings, one important thing is for sure—Memorial Day and Veterans’ Day honor and remember our military members who made, and make, the greatest sacrifices to help keep our country safe and free.

KAGE’S KARDS The Smallest of Deeds Can Bring the Biggest Blessings

We

all know how a note or a card can brighten a day. When we are going through tough times, we feel isolated and alone, but knowing someone is thinking of us can be such a blessing.

Having a child in the hospital is one of life’s times when you feel helpless, alone, and uncertain. No matter the reason or diagnosis, having a sick child of any age throws life into a tailspin. You would do anything to bring a smile to your child’s face and to know that you, as a parent, aren’t alone in your worries. As a means to brighten the days of the children in hospitals, Ashton Vest and her four children began giving out cards through a group they formed called “Kage’s Kards,” named after Ashton’s fouryear-old son, Kage, who has spent a lot of his life in the hospital.

A Little Boy Born to Make a Difference From the moment Kage was born, he had health issues. Life began with severe jaundice and digestive issues. As time went on, Kage wasn’t able to hold himself up and was delayed in his crawling. Before he had his first birthday, he was hospitalized multiple times for RSV and pneumonia. Physicians assured Kage’s mom, Ashton, that Kage was fine, just delayed in his development. It wasn’t until Kage’s two-year check-up that his current pediatrician realized it was very apparent that things weren’t fine with Kage.

“We received a referral to a wonderful Developmental and Behavioral Pediatrician, Dr. Nutt, and he has been essential in our fight for answers and a diagnosis.

After many tests, therapy, visits to various specialists, including genetic testing, Kage was diagnosed with Noonan Syndrome, explaining a lot of his behaviors and issues along with Chiari Malformation of the skull.

After decompression surgery on the brain in August 2019, Kage’s speech greatly improved, his headaches subsided, and there were feeding and movement improvements,” recalled Ashton. With ongoing two steps forward, followed by one step back, Kage has

become an inspiration not only to his family, but to others he’s met along the way, beginning with a family in the ICU waiting room.

“As a mom to a child with special needs, I am very familiar with waiting rooms and how they are the last places you want to be, and what a simple act of kindness can do in these dreaded places. Once when Kage was dropping off Valentines at the hospital, he gave a family a card, and they invited him to share some brownies they had. It was in that moment that we realized the big difference a card could make, so Kage’s Kards began. We now have a ton of local support with the YMCA of Yadkinville, Yadkinville Elementary, Yadkinville UMC, Hillsdale Baptist Preschool, Hillsdale Church, Sunrise UMC, and Smart Start of Davie and Yadkin Counties receiving handmade cards to give out to children in hospitals. We’re doing monthly

donations, having given cards to Brenner and Chapel Hill; our April cards will be given to Duke Children’s Hospital and May’s cards will be delivered to the Ronald McDonald House for moms on Mother’s Day and parents. On the delivery days, I load up the kids, and we make our visits.

Kage has become somewhat of a superhero with his Kage’s Kards crew,” Ashton said.

In times of uncertainty, it’s easy to close yourself off and focus on what you and your family need, but by looking outside your immediate circle, you can touch others with the smallest of things, like a smile, a hug, or a card. For Kage Vest and his family, connecting with others began in the simplest of ways.

Instead of Holding the New Baby, Hold the New Mom.

are one of the largest joys in the world, especially to other mothers. When our friends bring home their new bundle of joy, many of us automatically jump for the chance to visit and hold the sweet little nuggets. While this is a totally normal response, and absolutely valid—it does beg the question: while you’re holding the new baby, who is holding the new mom?

Becoming a mother is such a beautiful and exciting moment of our lives, but it is also intense, terrifying and exhausting.

Especially the first few months of our child’s life, we are sleep deprived, unsure of what we are doing half the time, and often ignored by most of the world as the focus pivots from our bellies to our babies.

This time of transition is the best possible time for friends and family to step up to

become the village that raises the family, not just the child. Here are some ideas of specific ways you can help to support new moms: uFeed Her Making a quality meal doesn’t always have to be time-consuming, but when you have a tiny human being who needs to eat constantly, sometimes taking even that 30 minutes to cook yourself something from scratch just isn’t workable. If you are able to come and cook your friend their favorite meal or drop off a few freezer meals for her to have on hand for when she can’t handle the idea of making another peanut butter and jelly sandwich for dinner, she would appreciate it a lot. Alternatively, if you aren’t confident with your cooking skills, pick up her favorite takeout! uDo the Laundry Laundry sucks. Let’s just get that out there: it’s pretty much the worst chore of all time. Which means it will mean that much more to an exhausted new mother not to have to handle a few loads of it. u Clean the House (or Hire Somebody Else to Do It) Keeping up with a house without kids is hard enough, but add the little ones, and

it can get overwhelming very quickly.

Helping out with cleaning, or gifting a cleaning service, can be a much-needed relief from this unlovable chore. uOffer to Run Some Errands Running out to the grocery store with a newborn is a rite of passage that many mothers are absolutely fine with passing on for as long as possible. By offering to pick up groceries, grab stamps, get diapers from Costco, or whatever else she might need, that is one less thing she needs to have to handle with a baby in tow. u Offer to Sit with Baby, So She Can Do Whatever She Wants This goes a little against what we were saying about not holding the baby—but by offering, this gives the new mom a choice if she wants to have time alone (which is at a serious premium with a newborn). If you want to make it interesting, make a bet with a friend on whether she’ll choose a nap or shower, because I can just about promise you those will be the top two choices. uTell Her She’s Doing a Good Job Becoming a mother is overwhelming.

Infants are tiny, fragile, they cry a lot, and you love them more than you thought you could ever love anything. No matter how much you read about parenting, mothers will always question their skills and choices with their children. Telling a friend that she is a good mom is one of the best gifts you can give her.

She added: “A meal nourishes the body, spirit and the soul.

It is a tangible way we can show people just how much we appreciate their efforts.”

Chad Setliff, president and COO of Forsyth Medical Center and Novant Health’s greater Winston-Salem market, thanked Truliant for the kindness and support shown to Novant Health’s team members.

“The outpouring of support from Truliant and other community partners has been tremendous,” said Setliff. “On behalf of all of our team members, thank you for every card, meal, mask, and word of encouragement. We’re thankful to be a part of this community and it’s our privilege to care for you.”

On April 15, lunches were delivered to the first group, employees of Novant Health’s respiratory assessment centers at Highland Oaks Drive in Winston-Salem and Gateway Center Drive in Kernersville. Box lunches were catered from Midtown Café, and funded by Truliant, in Winston-Salem and Thyme 2 Cater in Kernersville.

Additionally, the credit union provided lunches to more than 200 of its own essential workers starting with employees at its headquarters and Truliant Academy locations.

Mother’s Day, we celebrate all moms and especially those who welcomed life into the world at The Birth Center at Wake Forest Baptist Medical Center, which opened last summer as the region’s state-of-the-art setting for labor and delivery.

The Birth Center provides the full range of delivery options from routine, traditional births and certified nurse midwife-assisted births with hydrotherapy to cesarean and other complex births.

Deliveries are attended by expert teams of obstetricians, certified nurse midwives, maternity nurses and neonatologists.

Starbuck, DNP, APRN, NNP-BC, NEA-BC, president of Brenner Children’s and vice president of women’s and children’s health services at Wake Forest Baptist, says The Birth Center’s opening marked a new era for mothers and families in the area. All deliveries have immediate access to specialists in newborn care and, if needed, intensive care just across the hall in the new Dale and Karen Sisel Neonatal Intensive Care Unit.

“Every woman who is pregnant or thinking about becoming pregnant should know this is the most comprehensive place for them to deliver their child,” says Starbuck, a former NICU nurse who has spent more than 30 years working at Wake Forest Baptist. “It’s also the best place in case any complications arise.”

Phillip Heine, MD, chair of obstetrics and gynecology at Wake Forest Baptist Health, knows that having emergency care just steps away from The Birth Center is vital. He says it is the only facility in the region with top-flight labor and delivery services paired with immediate access, if needed, to specialized NICU and pediatric care.

“Combining labor and delivery options with the newborn and pediatric specialists of Brenner Children’s and the resources of an academic medical center allows us to manage both the known and unknown medical needs of mother and child,” he says.

The facility was developed with patients and their families in mind. It also included input from Ob-Gyns, midwives and birthing professionals to make sure the new setting was designed to help them serve their patients in the best way possible.

“Our goal is always going to be that our patients get personalized service and the personalized labor and delivery care they deserve, and their infants get the best possible start to life,” Heine says.

Located on the top floors of the Medical Center’s Ardmore and North towers, The Birth Center offers unmatched convenience, comfort and patient- and family-centered care. There’s valet parking service and dedicated elevators that bring patients directly to a greeting area on the 11th floor.

The setting is serene and comfortable with numerous windows providing lots of natural light. Amenities include family lounges on each floor, private patient rooms with couches that easily convert to beds, soft floors, a variety of lighting options and beautiful mountain and cityscape views.

There’s a recessed “front porch” entrance to each room that offers family members their own entry and a foyer for coats, suitcases and personal belongings. Hospital staff enter through a separate door.

There is restricted access to the floors and on-site security provided.

The Birth Center includes nine triage and four preparation and recovery rooms and four Ob-Gyn procedure rooms. There are 17 labor and delivery rooms, four of which are dedicated to alternative deliveries with certified nurse midwives on staff in a homelike setting.

There is even a special room where adoptive parents and their babies can meet to bond and begin their new lives together.

Each of The Birth Center’s two floors has its own respite area for on-call physicians and staff that offers a nearby place to rest so they can quickly respond when needed. Lactation consultants and other maternity resources are also located on each floor. The “Mother’s Nursing Nook,” located on the main floor of Ardmore Tower, features a post-maternity consultation suite and breastfeeding items for the convenience of new mothers.

“We’re able to take care of all patients whether they are low-risk or high-risk,” Heine says, “and that’s something we can be really proud of.”

Which Came First, the Seed or the Plant?

“Fight

or flight” is a defense mechanism in all living things. It is an acute reaction to stress that also affects systems without a brain or neurotransmitters. Plants, for instance, can release a hormone, quite similar to that of humans, when attacked. In the very essence of life, humans and plants seek to carry on their species by producing an offspring. Whether by means of an animal, insect or by wind, an opportunity exists to elevate millions of seeds to a fertile location, which possesses adequate levels of sunlight and nutrients.

Why Seeds Are Important A seed is the result of sexual reproduction in plants, which provides individual fertilized mature ovules. They often are high in protein, starch, and oil, which helps the early stages of germination and development. In thinking back to the experience of collecting seeds, you may recall the marigold. Once the flower dried and the leaves turned brown, the head could be plucked and placed into a container. The biological and economic value of these seeds led to their later use and the cultivation of the flowers.

Saving Vegetable Seeds Darwin’s theory of natural selection is relevant in the act of saving seeds.

Choose a healthy, mature plant that inherently produces delicious, tasty fruit.

It will have a higher germination rate.

For example: Dry Seeds PEPPERS: One slice through a green pepper’s middle will reveal its seeds.

Spread them out for inspection on a paper

towel and remove any that show signs of damage or discoloration. Place into the sunlight over a few days, turning them over to ensure drying reaches both sides.

Seeds will appear brittle after a week.

BEANS: The time is perfect when pods turn brown and begin to open. Place pods on a sheet of wax paper and allow to dry for 14 days before shelling. Afterward, preserve seeds in an airtight container.

Wet Seeds

Do not be deterred by seeds imbedded in cucumbers, tomatoes, watermelon, and other melons. (One warning: Be wary of collecting seeds from hybrid plants.

It is likely the plant will not resemble its parents.)

TOMATO: Allow a four-day soak in water for the pulp to ferment and release the seeds. You’ll need to change the water each day! Viable seeds will sink; therefore, throw away those that float to the surface.

Rinse thoroughly. Dry seeds on wax paper for a week and flip over daily before sealing in a glass jar.

Saving Flower Seeds

The act of cutting flower heads and drying on wax paper is a viable procedure to prepare for the future. Fortunately, anyone who wishes to save flower seeds only needs to commit to the effort, which is roughly seven days. Think of the money saved in storing the seeds from blackeyed Susans, coneflowers, sunflowers, and Veronica. And, don’t think annuals require neglect. You, too, can revive larkspur, marigold, morning glory, nasturtium, poppy, and snapdragons next season!

Directions: Spread seeds on wax paper and allow to dry for a week; then, remove husks and pods, leaving behind only the seed. Consider placing in envelopes that are well-marked and dated, and transfer to a large-mouth Mason jar for storage.

Just think—you can then use the seeds anytime to get a jump on spring, or enjoy flowers over the winter season.

Storing Seeds Properly

A Mason jar works well as a tightly sealed, air-proof container. Vacuum sealing is an option or adding a moisture absorber, such as a desiccant. The second consideration is storage. The seeds require a consistently cold, dark, and dry location between the set temperatures of 35 and 50 degrees. A chest freezer that remains closed is another ideal option.

Make sure the jar is well-labeled, including the name, estimated amount, and date.

Propagation

Some woody plants easily catch the eye. The butterfly bush, for instance, may possess an extraordinary variation of brightly colored purple flowers. One solution is to take a four- to six-inch cutting from a branch containing three healthy shoots, called “nodules.” With pruning shears, cut at an angle, and place directly into water. Many plants thrive in the environment of water for up to six weeks, namely fruit-bearing plants (blackberries or elderberries) or flowering vines (trumpet vine or clematis). Rather than spend $10 per plant, consider propagating just one, or perhaps a dozen!

Calling All Defenders of Wildlife!

PART 3: The Barn Owl

The

diversity of North Carolina’s three sub-biomes, namely the coastal plains, Piedmont, and the mountains, yields varieties of forest and non-forest ecosystems. Based on our consistent levels of precipitation and four distinct seasons, we live in the biome of a temperate deciduous forest. It’s no wonder our climate attracts diverse species of colorful birds and smaller mammals. In the mountain regions outside Winston-Salem live black bears, bobcats, and coyotes. And, perhaps the cougar is not extinct, but resurging in numbers. Unless searching for specific names of birds, insects, aquatic vertebrates, and mammals in the Piedmont Triad, you’ll not be aware of the names of creatures that no longer fly, swim, or walk here. In calling all defenders of wildlife, it’s essential to know why our ecosystem is on the verge of losing the essential Barn Owl.

Late in the evening, stand outdoors and listen to the sounds of nature. You’ll hear distinct tweets and chirps, and quite possibly the rare “hiss and screech” of a Barn Owl. (Hooting is another notorious sound; however, it comes from a different species, the Tawney owl.)

Similar to most animals, the owl call conveys different tones and messages. Perhaps it is claiming a specific territory to fend off potential intruders, like the raccoon, opossum, eagle, and hawk, or to signal the presence of a predator to a bonded mate. Typically, each pair covers a span of 12,000 acres. In North Carolina, you are likely to spot the Great Horned Owl, the Barred Owl, and the Screech Owl, before hearing the endangered Barn Owl calling in the night. Cinnamon in coloring, it features dark freckles on its body and wings and has a heart-shaped ruff encircling its eyes and beak. As a nocturnal creature, the Barn Owl, as its name suggests, nests in hollow trees and semi-open social structures, such as church steeples, houses, barn lofts, and silos.

FLYING HOME TO THE CAROLINAS From the great distance of 200 miles north, Barn Owls routinely fly for five nights over the Allegheny Mountains to create a habitat in the lower elevations of North Carolina. They seek prey from grassy and agricultural fields, woodlots, and strips of the forest. Through its asymmetrical, or lopsided, hearing receptors, it can detect different sounds to pinpoint the precise location of its favorite feast, rats and voles. Although not waterproof, the soft feathers are a factor in helping the owl search for prey, allowing for almost silent flight.

To relieve a farmer or property owner of pests, owls eat roughly four small mammals daily.

CONSERVATION EFFORTS Sadly, nesting sites remain scarce.

In 2012, the New Hope Audubon Society installed nesting boxes in a project named “The Piedmont Barn Owl Initiative.” The effort reported

the highest number of Barn Owls in concentrated areas, including WinstonSalem, Greensboro, and High Point; however, 91% of post-mortem Barn Owls had rat poison in their digestive system. Farmers have responded to the increased number of rodents by releasing pesticides and other various chemicals, which have impacted not just the rodent population, but caused the death of small to large birds and mammals. Additionally, cattle farms formerly utilizing barns of hay have transitioned to growing fields of soy and corn.

There is still hope for a resurgence! It will take a community effort to help!

AIDING THE OWL POPULATIONS To strike fear into the rodent, skunk, and bird population, many families have purchased a decoy owl. Why not welcome a real owl to your location by installing a nesting box? While purchasing a shelter is feasible, DIY instructions are available online.

A few tips: • Place boxes at minimum 10 feet from the ground on a tree. Do not prune branches, and turn off exterior lights.

• Attracting an owl is one grand excuse for not mowing the lawn as frequently.

Mice and other rodents will likely travel through taller blades of grass.

• A water feature attracts birds, bees, and other winged flyers, including owls; therefore, consider adding a birdbath to your garden.

All the Barn Owl needs is food and shelter. Once a mated pair has a home, they will remain with you!

SHARING INFORMATION The North Carolina Wildlife Resources Commission wants to hear from you.

The goal for the summer of 2020 is to continue installing more nesting boxes. Reach out, especially if you have owls occupying nesting sites or can report a sighting! Yes, you can help remove an endangered species from lists that contain words such as “rare,” and “vulnerable.”

The Power of Faith through Adversity

month’s column was written just before the governor issued the Shelter in Place order. And it seems obvious to state— no one could have seen this whole coronavirus thing coming. And even now—as I write this in mid-April, knowing it will be for the May issue—there’s still so much uncertainty. It’s hard to know what to say or where to start. I’ve certainly been addressing it regularly in the daily blogs I write, but how do I write this for an audience to read a few weeks from now?

The bottom line is this—in these uncertain times, with so many unknowns, what if’s, and our attempt to make heads or tails out of contradictory reports—what is certain is that our future and very lives are in the hands of an all-knowing God. That has been my saving grace through this ordeal.

Before Shelter in Place was ordered, and as this whole thing began to unfold, I went to the grocery store. Down one aisle, I prayed bold, confident prayers that declared God’s power and goodness.

The next aisle, my prayers turned weepy and fearful—“God, what on earth is going on?” So, if you were in Clemmons, and if you happened to see a woman alternating between calm and cool in the cereal aisle and wiping tears away in the canned food aisle, that was me. And I promise— I’m okay.

And I’m okay today, too. As one of the best meme’s I’ve seen recently said, “I have a mustard seed, and I’m not afraid to use it.” Yes, fear and anxiety have their moments. But my faith is strong enough

to know that my Heavenly Father is bigger than any virus or any threat. He knew it before it happened, and He knows what is going to happen next. My job in this is to worship Him through it and trust that no matter what happens, He is still in control.

Joshua 1:9 says, “Have I not commanded you? Be strong and courageous. Do not be frightened, and do not be dismayed, for the Lord your God is with you wherever you go.” These words, given to Joshua when God commissioned him to lead Israel into the Promised Land, hold true for us, too. As of today, as I write this, where we go may be from the kitchen to the living room. Maybe, in May, we’ll be out and about a bit more. But wherever we go, God is always present. Perhaps we need to see this time as a blessing that has forced us to slow down. God never designed us to go at the non-stop pace at which most of us operate. He’s giving us a chance to reconnect with our families.

And He’s giving us a chance to seek Him. In Jeremiah 29:13, God said, “You will seek me and find me when you seek me with all your heart.”

Are you seeking Him? Throughout this season of fear and uncertainty, it’s important to remember this—life will never be perfect. We will always have unknowns to face. But whether it’s our best day or our worst day—God is good. God is good all the time, and all the time, God is good.

If you’ll seek Him and trust Him, He will flood your heart with the peace only He can offer. Peace that even settles anxiety of pandemic-proportions.

A High Standard

I wrote this May article for Forsyth Family a month ago, not knowing what the current state of our community, country, and world might be regarding the coronavirus pandemic. I’m hoping that there has been a positive turn by now. But let me say this: Wherever we are at this point, as Christians, I present a challenge to you and me. Have a great aim—have a high standard—make Jesus your ideal. Be like him in character. Be like him in outlook and attitude toward God and others. Be like him in the home—thoughtful, patient, and loving. Be like him in your work—honest, reliable, and always willing to go the second mile. Be like him in your social life—approachable, unselfish, and considerate. Make him an ideal not solely to be admired, but also to be followed.

The life of Jesus illustrates nearly every variety of true character. Humility, gentleness, patience, sympathy, charity, trust, and courage – all mixed in that one personality. Crowds gathered around him, for he spoke with authority, and not like the scribes, who merely parroted what they had studied.

The people wondered at the gracious and wise words that proceeded out of his mouth. Here is that unity of gentleness and power that stamps a good character. He entered the homes of the social outcasts without any snobbishness or pretension. He was known as the friend of publicans and sinners alike. Courage and love, perfectly blended, were characteristic of his whole life. He sought God’s will and fearlessly followed it, no matter the cost. In his outlook toward

people and his treatment of them, sympathy and love found expression in a practical way.

Allow the beauty of this character to absorb your thoughts, so that whenever you deviate from this ideal, your conscience will convict you. When that happens, do not try to excuse yourself.

Face your fault. Own it to be yours and yours alone. Ask God’s forgiveness and where it affects others, ask their forgiveness, too. Ask God’s Spirit to stand by you and help you till that part of your character, outlook, or attitude comes into line with the ideal you have in Jesus.

My hope as a minister of the gospel is that all of us, including myself, will live as Jesus lived. Indeed, it’s a high standard set by an Almighty God. It is His will for us, and it ought to be our objective as we live this one life we have received. When we open our hearts to live a life inspired by God’s love, it can change the world. It compels us to pray and even open our doors to those who are hungry, sick, or forgotten. It leads us to reach out to those who are struggling. It drives us to stand together for justice and inclusion. When we live with open hearts and outstretched hands, we are being true Christians.

Don’t forget about others!

Whatever the current state of our existence is, not only during this pandemic, but in any circumstance, we need to strive to exemplify Jesus’ character. We are all concerned about what is going on in our world today. Do we worry? Yes. Did Jesus ever worry? I’m not sure, but I do know He absolutely trusted in God His Father. If I could take just one of Jesus’ characteristics and live by it, it would be always to trust in God my Father.

Nine Lessons Children Can Teach Us

BY MEGAN TAYLOR Brazilian writer and singer Paulo Coelho once said: “A child can teach an adult three things: to be happy for no reason, to always be curious, and to fight tirelessly for something.” As a teacher, I have the privilege of seeing children learn and discover new things. There is nothing more rewarding than watching a student have a “lightbulb” moment when making connections. While I teach them lessons, in return, they do the same. My students teach me things I may not know or may have forgotten as an adult. In reality, children are some of the world’s best teachers for adults. As a person grows up and gets older, there can be a tendency to dismiss or overlook the simpler and positive things in life. However, these lessons are never far from a child’s heart and mind. Through listening to, and interacting with, a child, an adult can be quickly reminded of the messages. Let’s take a look at exactly what we can learn from children.

They notice a haircut, a change in the ingredients in their food, or how an animal moves. These simple, overlooked details show us the beauty of life. We need to stop and “smell the roses” each day by looking at the world around us. Take it all in and live in the moment.

There are many lessons life will teach a person; many we learn from other people, including children. An adult can glean much wisdom from children if they just take the time to observe and listen.

Hope Springs Eternal

I

hope as you read this that our lives have begun to return to normal. As I write this, more than a month will have passed before this article will be in print. It would be nice to know if we are now able to leave our home, take a vacation, eat in a restaurant, go in shops and find shelves are once again fully stocked, and no one feels the need to stockpile toilet paper or any other items. Oh, for a crystal ball!

In the meantime, my husband and I have been practicing self-quarantining and social distancing when we have to go out for groceries. We are not allowed to walk on the beach or go to the park. On nice days, I walk around our neighborhood or our daughter’s neighborhood, always maintaining the six feet of separation. I miss the hugs and kisses from my grands, but will give them up to keep us all safe until this pandemic has passed.

I am impressed with my daughters, as always, but especially seeing how they’ve handled having their children home all day, every day. On top of that, having to homeschool them. Our eldest daughter has children in grades 6, 3, and K. Their school has gone online with e-mail lessons for them to print out. Our middle daughter has a first grader and a preschooler. Both schools have arranged for packets of work and crafts to do. Our youngest daughter has a preschooler and a toddler. The preschool also dropped off some craft projects for her. As wonderful as it is for them to keep up with schoolwork, it doesn’t occupy much time during the day. It falls on the parents to figure out other things, besides screen time, to keep them busy.

Before stores closed, our daughters bought lots of materials for arts and crafts. They all, minus the toddler, love LEGOs. Drawing, coloring, puzzles, books, and many other crafts will keep them entertained. On nice days, they will play outside—the Charlotte grands did a wonderful chalk picture on their driveway, which kept them busy for more than two hours. There have also been numerous free educational programs on the

Internet when they want to be on their computers or iPads. They also have free time, like recess, to watch a little TV, a movie or play a video game.

As time goes by, however, the days are going to get longer, and it will be harder to fill up the time. They are used to socialization. Most of our grandchildren had after-school activities – sports, dance, library time, play dates, music lessons, etc., that have all been canceled.

While most parents can handle a couple of weeks or a month of the total togetherness, it will get more difficult as time goes on. Let’s face it, as much as they love their children, everyone needs a break from being a parent.

Possibly missing the rest of the school year, and still selfquarantining, is not easy on anyone. It is, however, the right path to be on in order to wipe out this disease.

Maybe, before the next school session starts in the fall, schools will hold a prom and have a graduation ceremony. These are just a couple of the milestones high school seniors look forward to. It would be a shame for school administrators not to figure out some way they can still have these memories. I already know several of our grandchildren’s events we love attending every year have been canceled. As much as we will miss them, we’ll all survive, knowing it was the right thing to do.

I had to chuckle when I realized my entertainment was much like my grandchildren’s. I have read books, worked puzzles, played online brain games, watched movies and TV series, taken online French lessons, done crafts, and “played” outside. Whatever you are doing to avoid getting sick, keep it up! Remember, Hope Springs Eternal!

Life as we knew it abruptly changed on Monday, March 16th, 2020.

We were instructed by NC Governor Roy Cooper to close public schools, and universities & colleges quickly followed suit—our kids were going to be at home continuing their education. Mayor Allen Joines issued a “stay at home” order that prohibited people from gathering in large groups. Restaurants & bars were all suddenly closed—one day before St. Patrick’s Day. We were thrust into joining a global pandemic. “Covid-19,” the “Novel Coronavirus” and “Social Distancing” are new phrases that we began to hear multiple times a day from government officials and news networks.

People had to learn quickly to adapt to the new “stay at home” policy, which included working from home for most non-essential businesses and going to school virtually. Others had to continue working in very public (and very essential) jobs and risk their health to help the rest of us. Questions were looming in everyone’s mind, “What is happening to our world? How can we possibly adjust to these new directives? How will our economy and local businesses cope and survive the economic impact? Will I contract the virus?”

Questions that still linger today.

For some in our community, life changed dramatically because they contracted the virus, some losing their life. If your health was not directly impacted, you will probably never forget the non-health impacts and inconveniences. Spring break trips had to be canceled, concerts and plays went dark, Wednesday of the ACC Tournament in Greensboro turned out to be the last four basketball games of the season, funerals for loved ones had to be postponed indefinitely, birthday parties changed, NASCAR and other sports were postponed indefinitely, visiting family members in nursing home facilities and hospitals was prohibited, shopping— forget it except online—eating out became take-out only, going to the doctor for wellness visits had to be postponed, our court system only handled emergency matters, churches and places of worship had to be creative to reach the parishioners, and even the 248-year-old Moravian Easter Sunrise Service had to be modified so that thousands of people could “attend” by watching on WXII, listening on WSJS, or live-streaming the service. Who could have dreamed any of these things just a few short weeks ago?

My family and friends have been lucky so far, with no known health impact. They’ve learned to adapt to the “new normal” that we all hope is temporary. When I first heard about people using Zoom, it took me back to when I was

little and watched the 70s PBS show—Zoom, “Come on and Zoom.”

I quickly discovered that Zoom was going to be very important for my family. My husband is working from home and conducting mediations with Zoom video meetings. I have work meetings with my wonderful Forsyth Magazine team with Zoom. My son Jackson is finishing his 7th-grade year at Forsyth Country Day at our dining room table with Zoom. Even the youth group at Home Moravian Church meets using Zoom.

One of my son’s closest friends, Davis, turned 14 during social distancing, so he couldn’t have a birthday party. His mom had his family and friends ride by and wish him “Happy Birthday” from the street. Jackson had a gift card for Davis, which he connected to his drone and flew it to the birthday boy standing in his front yard.

Our new way of visiting my husband’s mom at Brookridge Baptist Retirement Home is parking in the parking lot while she stands at her 3rd-story balcony holding the phone and waving. This kind of visit has become temporarily normal.

We will get through this together. Better days are in our future. The experts tell us that our efforts to observe social distancing have decreased the number of people infected and dying from this terrible virus. Nothing remotely like it has happened in the United States since 1918—and Americans then made it through that crisis after a great loss of life. I hope you’re lucky enough to say the virus only made life more inconvenient and that you found new ways to enjoy some unexpected spare time.

And finally, thank you to our firefighters, police, first responders, hospital staffs, caregivers, the folks at the restaurants and grocery stores who kept us fed, sanitation workers, delivery folks, and all the other essential people who are helping us get through this “novel” event. We greatly appreciate your service, and we can’t thank you enough!

Summer is Coming – Baby’s Skin Needs Protection, Too

with infants or expecting a new baby should be aware that babies can have skin issues, too. Though the following issues can arise any time of the year, they can be especially difficult for your baby during the summer.

SCRATCHES ON THE SKIN: When infants are born, they often are born with long nails, and because infants cannot control their movements, they can accidentally scratch themselves. To help your infant, you should use an emery board and gently file the nails down. This is a much safer method than using nail clippers on your new baby. You can use a safe baby ointment to soothe any scratches your baby may have as a result of those long fingernails.

BABY ACNE: Newborn babies can also develop baby acne. This is quite normal, and there is no need to use harsh scrubs on your infant. In most cases, this clears up on its own. However, after about four weeks, if you are not seeing the baby acne clear up, consult your pediatrician.

DROOL RASH: Babies teethe between 4 and 7 months (some earlier or later), and as a result, they can develop a “drool” rash. This occurs when the mouth, face, and neck area are constantly wet. The area can become irritated and a rash occurs. Keeping a bib handy as well as changing your baby’s clothing if it becomes soaked around the neck area will also be helpful. In addition, a soothing, gentle baby ointment can also help relieve your baby’s irritation.

BABY RASH: Babies can also develop baby rash. It is important to change their diapers periodically. For many babies, this will be about every 2 hours. Many infants eat every 2 hours, so changing after each feeding can help a new parent keep diaper rash at bay. Please be discouraged from using fragranced baby wipes or even baby powder. Again, a gently soothing baby ointment will help in this instance as well.

SUNBURN: Your new baby should avoid long amounts of time sitting out in the sun. When you do take your infant out, be sure to use a safe baby sunscreen. At this time, when your kids are out of school and many of us are working from, or staying, home, here are some entertaining food “crafts” that do double duty—your kids can make them and play with them, and it’s okay if they decide to take a bite (except for the bird feeder—that’s for the birds to bite).

EDIBLE MARSHMALLOW PAINT

VANILLA PUDDING “SLIME”

Edible marshmallow paint is a great medium to make in a rainbow of colors to paint on canvases of sugar cookies, graham crackers, marshmallows, vanilla wafers, paper and more.

INGREDIENTS:

INGREDIENTS:

cup warm water

1 cup packed marshmallows ¼ cup water 2-3 Tablespoons light corn syrup Assorted food coloring DIRECTIONS: 1. Place marshmallows into a microwavesafe bowl and microwave for 30 seconds. The marshmallows will puff up a bit.

2. Stir in the water and microwave an additional 30 seconds. Stir well.

The residual heat will melt the marshmallows fully. Stir until smooth.

If needed, continue to microwave at 15-second intervals.

3. Stir in corn syrup to desired “paint” consistency.

4. Divide marshmallow mixture into several small containers. Stir in a few drops of food coloring to reach the desired shade.

5. To apply paint, use popsicle sticks or clean, unused paint brushes. Seal and store for up to 3 days.

(NOTE: Even after marshmallow paint dries, it will be sticky to the touch, so avoid stacking painted cookies.)

DIRECTIONS: 1. P lace the pudding mix and half of the cornstarch into a mixing bowl.

2. P our in warm water and stir until a sticky slime begins to form.

Blast Blue Hawaiian Punch 2 liters Spri INGREDIENTS: 4 cups birdseed ¾ cup flour 2 ( 0.25 oz.) packets unflavored gelatin (5 tsp.)

3 Tbsp. corn syrup ½ cup water Cooking spray

3. S lowly add the remainder of the cornstarch, stirring as you go. Stir until it is difficult to stir with a spoon, then, finish by kneading by hand.

(NOTES: Add water or cornstarch to adjust thickness. Though the recipe is technically edible and not harmful if eaten, it is meant to be a craft item.)

1. I n a medium bowl, mix together dry ingredients 2. S tir in corn syrup and water, then mix with hands until well-mixed.

3. S pray a cookie cutter with cooking spray and press the birdseed mixture into the cookie cutter. Use a skewer or straw to make a hole in top of shape.

Gently remove cookie cutter.

4. Allow to dry overnight.

5. S tring a ribbon through it and hang it in a tree outdoors or wrap in cellophane to give as a gift within the next two weeks.

Reinventing a Classic

mid-March, businesses around the world have been forced to find outside-the-box solutions to the impact of Coronavirus. While all industries have taken a beating, restaurants have faced their own unique set of challenges.

As we’ve seen, many have risen to the challenge, including Winston-Salem landmark, Midtown Cafe & Dessertery. For over 30 years, Midtown has been a staple in the community, but with the onset of COVID-19 and the state-issued restrictions, owner Jeff Cayton and his team have had to reinvent the business model.

“Unfortunately,” said Jeff, “We have had to lay off 90% of our staff, but we are working hard to make sure they have a place to come back to. We miss them and value them. This is very much a family-oriented business, and we want our business to survive this, so we can put our people back to work as soon as it’s safe to do so.”

“The big challenge,” he continued, “is making sure our communication stays strong with the public. Without a daily flow of traffic in the restaurant, we’ve had to rely heavily on social media, e-blasts, and online ordering in order to keep in touch with our customers. What has been really amazing is that even with a 30+ year history in the community and a shutdown order to navigate, we still have new customers discovering Midtown!”

Midtown Cafe & Dessertery has a reputation for hospitality. With their seasoned waitstaff, it’s truly a place where people know your name. “We’ve had to translate our normal in-person hospitality

to a ‘to-go- only business,’” said Jeff. “Our focus has been on family dinners. We have frozen ‘take home and bake’ everyone loves, including Moravian-style Chicken Pies, Quiches, and Lasagnas, and we also have our weekly take-home fully-cooked reheatable meal deal. Those have been a huge hit—Meatloaf, Pulled Pork, and both our meat and butternut squash lasagnas.”

even during difficult times. We’re still offering our full dessert menu, including the newest addition—featured individual creations. Our master baker came up with those shortly before the shutdown, and they change weekly, based on his inspiration. Our customers can find out the week’s selection on Facebook, Instagram, or by calling the restaurant.

The Midtown team has also focused on bringing Daily Dinner Features to feed a group, or they are available as individual servings. And to adapt to the needs of their customers, those entrees are ready at 12 PM instead of the normal 3 PM. Jeff shared, “Our Daily Dinner Features are meals that people love, but probably don’t make at home very often.”

“Through this,” Jeff continued, “We’ve been overwhelmed by the support. We appreciate all our customers and their willingness to support us through this challenge. Even Easter weekend—we fed over 400 people take-home meals! We have been able to continue to provide tasty meals at affordable prices that meet the needs of even the pickiest eaters!

While we look forward to the day when we can resume in-house dining with our amazing staff back at what they are great at doing, we feel thankful and blessed. We are going to be stronger on the other side of this. These lessons won’t be forgotten, and we look forward to applying much of what we’ve learned to the future.”

Additionally, Midtown has created fun ideas, including Spaghetti Feature, Taco Kits for 4, and Breakfast for Dinner.

“We’ve found that the present challenge has really awakened our imaginations to the possibilities of what we can offer our customers,” confirmed Jeff. And as Midtown has adjusted to meet the circumstances, they’ve also discovered a big win. “We had our Great American Seafood Fry Weekend,” Jeff reflected. “We offered Fish ‘n Chips, Crispy Fried Jumbo Shrimp, and Hushpuppies. We’ve been blown away by the popularity so much that we plan to keep that going every weekend, even after we’re able to resume normal operations.”

Jeff also shared that the dessertery part of the business is still available. “We know that people still want to treat themselves,

Peanut Butter Swirl Brownie

BY SARA WILES These are the real deal! They’re insanely rich, dense and filling.

If you’re not preparing for your summer body, these are perfect.

With only four ingredients needed to add a peanut butter swirl, make the brownies from scratch (as noted below) or add to a boxed batter. Either version is equally delicious. If using boxed, be sure to follow the box directions for baking.

INGREDIENTS:

DIRECTIONS:

1 cup unsalted butter, divided

1. P reheat oven to 350 degrees and grease a 9x13 inch pan. Set aside.

1 (4-ounce) semi-sweet chocolate bar, coarsely chopped 2 cups granulated sugar 3 large eggs, at room temperature 2 teaspoons vanilla extract, divided 1 cup unsweetened cocoa powder 1 cup all-purpose flour 1 teaspoon salt 1½ chopped peanut butter cups 1 cup creamy peanut butter ½ cup confectioners’ sugar

2. B rownie batter: in a microwave-safe dish, combine ¾ cup butter and chopped chocolate. Melt in 30second increments, whisking after each, until completely smooth. Whisk in granulated sugar until completely combined, then whisk in eggs and 1 teaspoon vanilla.

3. Add cocoa powder, flour and salt.

Fold it all together with a rubber spatula. Stir in chopped peanut butter cups, reserving a small handful to sprinkle on top. Set aside.

4. P eanut butter swirl: melt the remaining butter. Using a mixer, beat

the melted butter, the remaining 1 teaspoon of vanilla, the peanut butter and confectioners’ sugar until smooth. Drop big spoonsful of most of the chocolate batter randomly into the prepared pan. Top with random spoonsful of all the peanut butter batter. Using a knife, swirl the batters together. Sprinkle with any remaining peanut butter cups.

5. Bake for 30 minutes, then test the brownies with a toothpick.

6. Remove from oven and let cool completely before cutting into squares. Cover and store leftover brownies at room temperature for up to 1 week.
