I’m trying very hard to be patient for spring to arrive. We had one relatively warm week without rain followed by a chillier overcast week. Welcome to North Carolina as they say!

Seriously though, I have never been more ready for spring and summer. Personally, I am in much need of renewal or a reboot, and I know I am not alone, a pandemic has a way of creating that need. But, I have been surrounded by a lot of loss lately, none of which has been Covid-related. It started with the loss of my cousin, Bonnie, last June. Followed by Linda, a dear friend at church who taught me so much about her super-power, love. Then my dad and Doug, another dear friend from church on the very same day barely into the new year. Followed most recently by yet, another church friend, Mike, who suddenly and tragically passed away. All lives cut short; all leaving voids for their loved ones.

Being a cancer survivor makes me keenly aware of my own mortality and the need to live each day to the fullest! Live and love and leave nothing unsaid to those you love! As we slowly emerge from this pandemic, like the daffodils and crocus, let us spring forth with a renewed spirit of kindness, love and patience.

Our April cover features Second Harvest Food Bank. No one shows love to our community quite like them! They are a literal life-line to so many, and I couldn’t be happier to highlight their wonderful legacy! April is the second month of our three-month long Summer Camp Showcase and our annual Spring Home Issue. I believe we all have a new appreciation for our homes. And, whether you’re looking to improve the one you’re in or in the market to make a new nest, you’re sure to find the resources to help!

The Path to Parenting Does Not Come with a Map, and No One Should Have to Go It Alone

parents are overwhelmed and do not know the next step, it is hard to ask for help or to know where to turn. That is why The Parenting PATH provides a safe haven with the trusted support parents need in order to create a thriving home. Our programs and services are proven to strengthen families, enhance parentchild relationships and create safer, more stable communities.

CHEERS TO 40 YEARS! This year we are celebrating our 40th Anniversary! Founded in 1981, with the support of the Exchange Club of Greater Winston-Salem, Exchange/SCAN (Stop Child Abuse Now) began providing services in Forsyth County. Following the National Exchange Foundation’s model of using parent aides, staff and volunteers worked with parents in the family’s home. This revolutionary model operated in partnership with families, teaching child development knowledge and providing support without judgment.

In the last 40 years, we have served Forsyth and surrounding counties by building resilience in our families and community. We have grown to offer 13 evidence-based programs designed to ensure that every child has the opportunity to grow in a safe and supportive environment.

SUPPORT AT EVERY PARENTING STAGE, FOR EVERY PARENT Through the last four decades, our guiding principle has been working with families from a strengths-based perspective. We strive to identify what the families are doing right rather than focus on what they may be doing wrong.

Our staff believes in respecting the culture of our families and celebrates the diversity that makes us a stronger community. Too often we heard that clients felt embarrassed to receive services from an agency whose name featured the words “child abuse.” As our services expanded, we wanted to incorporate our positive, strengths-based approach into our name. In 2018, we became The Parenting PATH (Positive Actions, Thriving Homes).

The Parenting PATH offers a variety of services including in-home visitation, respite care, parent education and counseling. No child, no parent and no situation is the same, so our staff adapt services to meet the family’s unique needs.

The Parenting PATH provides support for parents and caregivers to be the best they can be through positive, impactful programs. Our approach offers a support system for parents, so they can provide a safe, loving home for their children.

The Parenting PATH has adapted to changing times, adding unique services for families in response to challenges facing our community. Forsyth County’s Infant Mortality Rate is routinely the highest of all urban counties in North Carolina, so in our Welcome Baby program, staff visit with new parents in-home to provide support, child development information and links to valuable community resources. After learning that 50% of parents admit to frequent and intense conflict as coparents during the first two years of separation, we created the Co-Parenting for Healthy Children program, which teaches parents how to deal with the conflict of separation, divorce and coparenting. To assist parents who may be struggling to navigate parenting challenges, The Parenting PATH implemented the Parent Coaching program. Parents work one-on-one with a trained provider who will observe parent-child interaction and create a custom plan for the family.

safe to say that of all the exercise programs, fads, and trends that have come and gone over the years, Pilates is here to stay! In 2000, Newsweek reported that in the late ‘90s, approximately 5,000 people did Pilates exercise on a regular basis; today, the number is 5 million in America alone! It’s no wonder with all the incredible health benefits Pilates has to offer. Luckily, we have a powerhouse Pilates studio right here in our community called Club Pilates.

Located in Thruway Shopping Center, Club Pilates is a vibrant, inclusive space with a mission statement that sums up their good energy: “We believe that Pilates is the path to a fuller, more satisfying physical existence. They offer lots of variations for each skill level, so I didn’t feel awkward or slow for being new and out of shape. They are super diligent about cleanliness, especially during Covid. An Uncommon Approach to Money Management

breeze offered relief from the intense summer sun, and for a moment, Ginny lifted her face toward the light and simply smiled.

Her daughters laid nearby, reading books while their husbands took turns chasing a frisbee down the beach. She listened to the magical sound of her grandchildren’s laughter as they played in the sand, and at that moment – she was reminded that every cent she saved and spent on the annual family beach trip was worth it. These were priceless memories. Soon, stomachs would start to rumble with hunger. After shaking sand from blankets, they would make their way back to the rented beach house – the house that felt like a second home given that it was their 14th straight summer renting it. It was a tradition now. A tradition that Ginny hoped would live beyond her.

And, she hoped her family understood that even though there were sacrifices to make this trip happen – it was a worthy investment. They were a worthy investment. But, for now, everyone was together. Happy and content, Ginny got up and joined the children. She smiled as she said, “Let’s build a sandcastle!”

Stories like Ginny’s aren’t common. But many want to do as she does.

• A red door is meant to imply protection. However, in Scotland, a house with a red door means that the homeowner has paid off the mortgage.

Goals, right?

• In New York, there is a “Ghostbusters Ruling,” and while it may sound crazy, sellers are required to disclose whether ghosts frequent the residence.

• Even though “downsizing” is a buzzword of recent years, and we even experienced the tiny house movement not too long ago – the average home is 522 square feet larger than 20 years ago. And, today’s homes are 30% larger than they were 40 years ago.

heard the saying, “You only have one opportunity to make a first impression.” Whether the interaction is in-person or over the phone, the initial impression can set the tone for the entire customer experience. Piedmont Sheet Metal, PSM, founded in 1928, is well-known for its expert and knowlegible installation of HVAC systems, but long before a customer is enjoying their heating and air conditioning system, those employees who interact with the customers, scheduling estimates and addressing any concerns, set up the whole customer-business relationship. At Piedmont Sheet Metal, those working on the inside are there, every day, for customers, before, during, and after installation.

Connie is part of the second generation of the Cook family to work at Piedmont Sheet Metal.

“Officially, I have been at PSM for 43 years, not counting coming in and cleaning the office and bathrooms as a child. My dad, Bill Cook, is the owner of PSM and has worked here for 74 years this June.

Dad, 90 now, still comes in every morning to make sure we all show up, and he makes coffee for the office staff. As General Manager & Corporate Secretary, I do everything from quenching fires to taking out the trash, with everything in-between. Even with all this past year had in store, at PSM, we kept to our focus of ‘Our customers’ comfort is our mission.’ We have always viewed every employee and customer as family, and we treat each one like we would want to be treated. Currently, we have 43 employees; the breakdown for years of service is quite impressive, ranging from being with the company from 49 years to 1 year of service. Not many businesses have that kind of loyalty. We have also been blessed to serve generations of customers, because we work diligently to be the best in our field and are very appreciative to our customers,” said Connie.

Joining PSM 13 years ago, Marsha echoes the feeling of family from everyone. “I am the Commercial Service Coordinator and love the variety of this position; I handle the scheduling, dispatch, billing as well as other responsibilities in my role. From my first day here, I felt like family and that has never changed. The Cook family strives to make us all feel like family, and we in turn extend that feeling to our customers, which makes a difference. I am very fortunate to have the co-workers I have, both in the office and the service technicians. They are great people and make working at PSM very rewarding,” stated Marsha.

Karissa McCann

Karissa joined her mom, Marsha, eight years ago at PSM. “I’ve been a part of the PSM family a good while, since my dad used to work here and my mom still does.

I work primarily within the install department, both residential and commercial. PSM allows us to grow, learn, and create in our roles, and the girls in the office are good friends, spending time together outside of work. Our customers see us just like we see them, as part of the family and they will call and maybe need someone to listen, pray with them or for them, or encourage them during a trying time, like illness. It’s all about caring and letting our customers know we are here for them,” Karissa commented.

After being in a completely different field of work, Tara joined PSM four years ago. “My motherin-law, Connie Cook Miller, is preparing for retirement and I am trying to absorb every bit of information from her in an effort to continue her work as seamlessly

as possible. Having the opportunity to work for my husband’s family has been rewarding and I look forward to being a part of continuing the Cooks’ family values within the community. No matter if your name is Cook or not, we are one family at PSM. Throughout the course of our workdays, we all wear different hats and support each other as we take care of our customers’ needs,” Tara said.

“As the Planned Service Coordinator, I work with our customers who have annual/ biannual maintenance agreements to get them scheduled and serviced in a timely manner. I also work in the Service Department, taking calls for customers that are having issues with their systems.

Although I’ve only been here three years, I truly love the family environment of the company and how down-to-earth the company is. In my role, I get to develop personal relationships with our customers and hear all about their lives. After 93 years in business, you hear about the generations of families that PSM has helped over the years and there’s nothing like that experience,” commented Brittney.

Marcie married Keith in 1991, but didn’t join the family business until this past summer after her job was downsized due to the covid situation. “Coming from years in the corporate world, it’s nice to be a part of something where customer service is still the priority and that fosters an understanding that we provide an essential need to the community.

I work in the residential service department, inventory control, and tracking. It’s a blessing to be part of a family business with Christian values and pride in the service we provide. At PSM, we have the ability to make a difference and send our family attitude throughout the community,” Marcie stated.

Simple Ways to FRESHEN UP Your Home

you ever feel like you are in the business of busyness? With many of us working from home nowadays, it’s hard to find that work-life balance, and easy to make that excuse that there is too much to do with little time to do it. With that said, here are a few ways you can switch up your daily routine and freshen up your home for the Spring season.

SWITCHING UP YOUR DAILY ROUTINE • MAKE A TO DO LIST. For generations, that good old to-do list has been wonderous in helping individuals achieve their daily tasks, and it has

become an important component in the work-life balance goal of today. Mark down your urgent tasks, then spread the remaining tasks throughout the week.

The trick comes in not giving yourself too much to accomplish, as well as holding yourself accountable for not overworking by starting on tomorrow’s tasks. This also helps in reducing stress about having to constantly remind yourself about what your next step is.

•R EGULAR QUICK CLEAN-UPS. In between those deeper cleans, try breaking up the cleaning jobs into more manageable chunks throughout the week, to keep you from dreading the end of week massive clean-up. This is where your to-do list can come in handy, too.

Dedicate each day to only one room and limit it to 10-20 minutes to keep stress levels at a minimum. In addition, you may consider cleaning the countertops, running the dishwasher, and decluttering the living room each night to wake up to a more calming morning routine.

•R EDUCE SOCIAL MEDIA TIME. Did you know that one study showed that the average individual spends more time on their phone and laptop than they do sleeping? Keeping that in mind, try giving yourself a screen time limit to help keep you accountable, reduce anxiety and depression, as well as free up valuable time. A few tricks of the trade include setting a time limit on your phone, writing down your to-do list instead of using an app, turning off social media notifications, turning your phone on silence during family dinners, and not using it at least an hour before going to bed.

• I NCORPORATE QUICK DAILY WORKOUTS. From walking your dog to morning stretches to short HIIT workouts, there are a variety of ways to incorporate activity into your daily routine that don’t take hours in the gym. Physical activity not only improves your muscle strength, but can also deliver proper oxygen and nutrients to your tissues to help increase

heart health, give you more energy, and keep you better focused on the task at hand.

FRESHEN UP YOUR HOME • ADD ACCENT COLORS. Try adding bright, light shades of color to a room that you think may need a little uplifting.

This can be accomplished through simple measures, like adding decorative pillows, vases, lamp shades, and wall art.

• DE-CLUTTER. As the saying goes, if you’ve haven’t used/worn it in over a year, then you obviously don’t love it too much. We’ve all just about used the “just in case” excuse; however, it’s time to declutter and refreshen. There are plenty of measures for de-cluttering, from tidying it away in organized containers, to donating at nonprofit organization, to selling nicer pieces through consignment shops or online marketplaces.

• ADD INDOOR GREENERY. Whether you choose a large potted plant or a small succulent, indoor plants have a variety of science-backed health benefits, from increased productivity to purifying indoor air quality. A few common indoor plants that are easy to take care of and don’t require tons of daylight include Peace Lily, Dragon Tree, and Spider Plant.

• NATURAL STOVETOP SIMMERS. Our bodies are triggered to the nostalgia of homecooked meals and their aromas that drift through the house. While we may not always have time to make grandma’s slow-cooked Bolognese or your mom’s “infamous” chicken pot pie, try simmering water in a small saucepan with citrus slices and fresh herbs, like mint or lavender, to have sweet scents wafting throughout the house during the workday.

Authenticity is more than just a buzzword for Blake Ginther, and when he speaks of being truly authentic, he means in both words and actions. Blake describes himself as a bit “old school” when it comes to approaching client relationships, which is a plus for The Ginther Group’s fortunate clients who know they are building a longterm bond with Blake and his team.

“We live in a slightly strange, social-media based world, where people are more about how they seem than how they are,” explains Blake. “I intend to learn what matters most to my clients and support their desires and needs by both my actions and words.”

Blake chose to set up the group’s offices at Keller Williams Realty Elite in WinstonSalem in 2015, after working as a Realtor in the Triad since 2009. “I wanted to help others achieve the success I had found in this area,” he says. “Since then, our team has helped 1,500 families from Yadkinville to High Point and from Pinnacle to Lexington. We also have three expansion partners we work with in Greensboro, Burlington, and Chapel Hill, to guide people relocating to those areas.”

There are currently 15 agents, including Blake, at the Winston-Salem office, and many of them were born and raised in the area, and have so much to offer in local knowledge.

While springtime is notoriously the busiest time of year for Realtors, Blake says recently, all seasons have remained pretty action-packed. In the current market, he believes it’s timed around jobs and schools, combined with the inevitable holidays and spring breaks, which have been quite different since the pandemic. Amid the Covid-19 challenges, there has been a bright spot!

“The bright spot has been how much the pandemic has increased our line of work,” explains Blake. “People are scrutinizing their homes like never before, as they’re spending more time in them than ever before. The challenge has been doing our jobs safely in the middle of a global pandemic. I think the local real estate community has walked the extremely fine line of continuing to help folks buy and sell, while respecting Covid-19 and being extremely cautious.”

For Blake – and the team he inspires every day—their business philosophy is solidly built around giving. “One of my favorite books is Go Giver, and I believe if you live every day doing your best to help others achieve their goals, there is zero chance we

all won’t win! Thousands of people move every year, and Realtors shouldn’t expect folks to buy or sell before they are ready.”

Remembering his passion even at the tender age of six when he announced he wanted to be an architect, Blake has always felt successful Realtors need to strongly like houses or people, and it doesn’t necessarily have to be both. But he’s fortunate that for him, it really is both!

If your home and surroundings need a little sprucing up, there’s no time like the present to embark on a new project!

These budget-conscious ideas will have you admiring and enjoying your space for years to come. From funky garden planters and inexpensive outdoor furniture makeovers, to refreshed walls and cabinets inside, there are plenty of ways to improve your surroundings without spending a fortune.

Find unconventional items around your house to use as garden planters—an old box spring, a wheelbarrow, a bass drum, crates, shelves, and pallets…all make wonderfully inventive planters and great conversation pieces! Design your vegetable, fruit, and herb garden using these inventive pieces.

Make wire cloche covers to protect your vegetables/fruits or other plants from pests—use chicken wire or wood covered in chicken wire to make cloche covers that will keep the pests out! There are great DIY videos online showing a variety of designs and how to make them.

Make window planters—you can really get creative with these! They can be as simple as a plain wooden box or one fashioned out of old pallets; you can buy an inexpensive vinyl box ready to install, or adorn your boxes with ornamental iron features you love. Paint your boxes whatever color you choose, then pick out beautiful plants and blooming flowers that make you happy to look at each time you drive up the driveway.

Change the hardware on your kitchen or bathroom cabinets; change out handles and knobs, and while you’re at it…change towel racks and even lighting fixtures. You can get great vintage fixtures online or at antique markets, or find brand new ones anywhere they sell home goods. There are so many varieties to suit your taste! witnessing empty shelving and limited access to produce last spring, many people started thinking about gardening. Growing food can be a magical experience if you have three conditions, sunlight, soil, and water! The ideal situation is a window receiving southern exposure for a minimum of six hours daily. If not, consider buying a four-tier greenhouse; heating pads, intended for plants; and one or two grow lights. If you desire to harvest herbs, fruits, and vegetables, the cost is inexpensive! Creating the ideal conditions allows anyone to produce an edible garden.

Soil

Seeds require a lighter soil to transition into a plant; therefore, either purchase a “seed starter soil” or mix one cup of potting soil to two-cups of vermiculite. Made from compressed minerals, it absorbs water as it expands, providing air pockets.

TIP: Soil loses its nutrients after expending it on a plant. You can toss a previous year’s soil in a compost; however, do not reuse it after one year. The plant will not reach its full potential, and likely lack the nutrients to develop fruit.

Water

Always feel the soil with your finger before adding moisture. If it adheres to your finger, don’t water. Dryness will require a few squirts from a spray bottle. Overwatering will kill your plants!

TIP: Do not use cold water on your plants. Try to refill the bottle at night to ensure it reaches room temperature by its next use.

What Can I Grow?

Herbs BASIL: Most herbs have the potential to become quite bushy. Rather than keep herbs in your greenhouse, move them to the kitchen for ease in extracting leaves and to minimalize their size. Snip off a stem of basil and add it to water until roots form. You can have basil throughout the year!

TIP: Don’t let your herbs go to seed. Research how to dry or freeze for future use.

CILANTRO: While some herbs sound delicious, ask yourself if you really plan to use them. Do you enjoy cooking savory dishes? Cilantro needs partly-sunny days, roughly 3 to 4 hours.

CHIVES: If you successfully grow chives in your garden, consider digging out a clump at the end of the season for potting. Leave it in a cool, dark spot for a few days before placing it in your sunniest window.

OREGANO: As a Mediterranean herb, it needs plenty of direct sunlight and little water. Keep trimming to maintain its health and fullness.

ROSEMARY: As a woody plant, you can keep rosemary year-round without needing to prepare a cutting! It can become bushy; so, try and separate it, gifting plants to friends.

Fruits and Vegetables CARROTS: In a 12-inch pot, use seed tape to grow six to eight-inch carrots; especially Oxhearts, resembling a triangle; or Parisienne, a round carrot. Use a popsicle stick to mark each vegetable, and include dates of harvest.

LETTUCE: Fortunately, depth isn’t a requirement; however, the plant needs width, such as a window planter box, especially if it comes with a self-watering feature. Since lettuce matures quickly, plant weeks apart, in order not to be overwhelmed with the harvest.

STRAWBERRIES: A self-watering basket is ideal for growing strawberries.

Choose to hang in a window and enjoy the arrival of fruit.

POTATOES: Do you have space for a five-gallon bucket? Potatoes are one viable possibility. Only one plant per container!

TIP: Sprinkle crushed eggshells on the surface or bury a banana peel in the soil. Plant matter will decompose and release vital minerals and vitamins, boosting the plant’s health!

TOMATOES: Buy only one or two healthy plants (unless you plan on giving seedlings to friends). The goal is to support the size of the plant with its root system. Plan to use a three- or five-gallon bucket with a deep saucer. (Remember, it’s going to need water!) Rather than disrupt the root system, place the stakes early, one on either side.

Wouldn’t it be amazing to go to your living room window to extract a handful of sugar snap peas or cut a few twigs of oregano for the evening meal? Anything is possible with the willingness to try growing food indoors! Go for it!

since added a second factory and warehouse. Most consumer-product companies have not increased structural capacity. But Gojo believes that hand sanitizer is different.

“The pandemic is a real wake-up call for everyone globally on the importance of infection protection,” said Jim Arbogast of Gojo told the Wall Street Journal earlier this year.

Mass transportation: Buses, trains, planes and subways have one thing in common: moving large numbers of people within small spaces.

During the pandemic, ridership decreased 87% in San Francisco, 79% in Washington, D.C. and 74% in New York City, according to ArchDaily, a weblog covering architectural news.

Realistically, the future shape of mass transportation is probably dependent on whether people continue to flee cities, if remote work establishes a permanent foothold and if transportation managers are able to offer new and creative ridership solutions that society will embrace. It also depends on whether communities evolve into more pedestrian- and bicycle-friendly places.

What Pandemic Changes will Stick Around?

Many generational events have had influences well beyond their starting and ending points, shaping life in the next few decades.

When COVID-19 settles onto the list of generational events, it will be remembered for how it shapes our behavior in the world. In the meantime, each person can look at their own social sphere and see what permanent changes have been brought to their personal universe.

Here are a few of the things that COVID-19 may have reshaped in your life:

Family time: Prior to the pandemic, many families were running at hyper-speed. Parents worked long hours and children were shuttled from one scheduled activity to the next. For many families, it was a rare event to sit down and eat a meal together – and share stories about the day’s events.

COVID-19 changed all that. Suddenly, parents were working from home, kids were being schooled from home and all three meals a day were family-time options.

Truliant In a survey of 2,000 Americans by OnePoll, 65 percent said the pandemic

Grocery delivery: Prior to the pandemic, e-commerce made up 2% of food and beverage sales in 2019. It was a niche business, projected to be $38 billion and account for 3.5% of sales in 2023, according to The Online Grocery Report from Business Insider.

But the Online Grocery Report projects – if COVID-19 runs its course in the next few months – grocery buying and delivery will change dramatically, reaching 55% of the U.S. population by the end of 2024. And if the pandemic extends further it will reach 66%.

It’s not unusual to go into a grocery store, like Whole Foods, and find far more personal shoppers than customers selecting produce, meat and picking condiments off the shelf. It has been a rapid transition that seems unlikely to retreat.

Hand sanitizer: In 2020, U.S. sales of hand sanitizer – excluding businesses and institutions like hospitals – increased nearly 600% to $1.3 billion. That increase easily outstripped other pandemic items. Toilet paper sales increased 20%, the Wall Street Journal reports.

Gojo Industries, the maker of Purell, is betting on sanitizer growth. Before the pandemic, Gojo had one factory and one warehouse. They have

has brought them closer to their family. While the length of the pandemic is certainly stressing many parts of daily family life, the benefits of more engaged family members appear to be real.

Zoom zoomed: Few companies rode the pandemic to greater heights than Zoom. In less than a year Zoom became a verb. In 2019 it averaged 10 million daily meetings, now it averages 350 million, according to news site Vox. Zoom became the default tool for work meetings, but also for birthday parties, baby showers and just about any other type of family or group gathering.

What happens when the vaccine takes hold? The use of Zoom will evolve.

People will embrace the good – frequent talks with family and friends who are far away – and cast aside Zoom fatigue.

The pandemic clearly escalated changes in society – changes that may have taken a decade were done in months. What sticks and what slips will be up to consumers. In 20 years we may have some clear answers.

open forum of a marketplace is a burst of seasonal colors and a steady buzz of chatter. The curious shopper discovers he or she has direct access to fresh and locally grown fruits and vegetables, herbs, dairy-based products, and proteins. The woman or man behind the table provides a small sampling of popular items; yet, you can experience a more expansive array of goods at their farm. It’s vital to introduce yourself and inquire where the growers or farmers live. Most likely, it’s just around the corner! “Support local” is more than just an expression. It’s an opportunity to support growers and farmers in communities near you!

Cobblestone Market Not all farmer’s markets are open to the community until the spring season. Winston-Salem has a unique opportunity for customers year-round at a produceronly marketplace. Located on 1001 South Market Street, patrons can choose from naturally-grown or butchered, to artisan-prepared. Each month, vendors arrive to provide their fresh products. Perhaps the Cobblestone Market introduced you to Robin Blakley of Buffalo Creek Farm and Creamery. In perusing their website, you’ll set your GPS and start driving!

Visiting Buffalo Creek Farm Traveling from Winston-Salem north on Germanton Road/Highway 8, pastoral fields lead to a 35-acre farm containing herds of goats and sheep, and two miniature donkeys, Lillie and Pixie, on guard duty! Most travelers slow down to take in the scene from the high vantage point, just in time to turn into Buffalo Creek Farm Road and the farm.

Expanding the Farm A new, two-story addition was constructed on the farm in 2012, featuring a Farm Store and, just below, the Creamery. When the herd of goats freshens, John and Robin begin seasonal cheesemaking. In the production of their raw-milk-aged cheese, the Blakleys adopted a traditional approach from ancient recipes and techniques for the aging process.

Visitors can purchase grassfed beef, country ham, pickled okra, and hand-rolled salted butter while shopping for household items, such as homemade laundry and hand soap. If you need healthful jams and jellies without high fructose or raw, unfiltered honey, you have a place to go! One warning to parents, Buffalo Creek maintains a fully stocked supply of children’s toys, books, and clothes year-round!

Robin writes, “Our customers enjoy coming to the farm to make their purchases, so they can watch the animals, whose pastures surround the store. Visitors often bring family and friends to show off where they shop locally.”

An old folktale, retold each year at Second Harvest Food Bank of Northwest NC’s signature Empty Bowls event, offers a relevant beginning to another story – one weaving together strands of the Food Bank’s nearly 40-year legacy of feeding community into a common vision and commitment to build a healthy, hunger-free community for everyone.

In the tale of “Stone Soup,” a hungry traveler arrives at a village where the inhabitants are hungry and think they have nothing to spare. The traveler goes door to door with no success, until he fills his one possession, a pot, with water and puts a rock in it. A villager passing by asks, “What are you cooking?” The traveler replies, “Stone soup, and it’s delicious, but it would be better with a carrot.” A carrot is not so much, so the villager throws one in.

SHARING THE ABUNDANCE 80 billion pounds of food are wasted every year, yet more than 37 million Americans do not get enough nutritious food to lead healthy, productive lives. The economic and social challenges at the root of persistent food insecurity have worsened as a result of the COVID-19 pandemic, which, like food insecurity, continues to impact some of our neighbors disproportionately. Here, and across our nation, community members of color are more than two times as likely to struggle with food insecurity.

Nearly 40 years ago, a growing acknowledgement of poverty, food insecurity, and disparity within our community stood starkly against a backdrop of tremendous food waste and abundant agriculture in the region. These contrasting circumstances led a group of concerned citizens to figure out how to get available bounty to neighbors who needed it most.

In 1982, the Food Bank of Northwest NC hired its founding Executive Director, Nan Griswold, and our community and region officially joined the food bank movement (Feeding America). “Second Harvest” was later added to the Food Bank name to better reflect its core food rescue operations in partnership with grocery retailers, including Food Lion, Harris Teeter, Lowes Foods, Walmart and others. These operations continue to serve as a central hub and source of food for a network of 430+ partner food assistance programs – food pantries, community kitchens and shelters, and special meals programs for children and seniors.

Under Griswold’s leadership, awareness and support for the organization grew exponentially. Within one year of opening the Food Bank moved twice, leaving its first 1,800 sq. ft. warehouse and landing in a 9,700 sq. ft. space in the Old North State Supply Company building on Liberty Street, donated to the Winston-Salem Foundation by Richard Budd. Ten years into operations, our community supported the construction of a 34,000 sq. ft. warehouse. In 2001, Griswold introduced the inaugural Empty Bowls to a crowd of 250 people. The event has grown each year since; the most recent event drawing a crowd of 1,800.

The impact of the Great Recession was already clear in the rising numbers of people seeking food assistance across Second Harvest’s network. Fitzgerald understood he would be called upon to inspire even deeper community engagement to expand the resources and impact of the organization in service to the people and communities of Northwest NC, and he did. Fitzgerald’s passion for feeding children and families was well known, respected, and supported across our region and state. Under his leadership, nine BackPack programs grew to 109 and annual food distribution grew from nearly 8 million pounds to 37 million pounds.

In 2002, the community rallied to support Second Harvest’s Making Room at the Table campaign, nearly doubling the size of the Food Bank's warehouse and allowing for the introduction of the BackPack program, which provides meals for children on weekends. Later, the nationally recognized Providence Culinary Training (PCT) program (known originally as Triad Community Kitchen), began. Led by Chef Jeff Bacon, PCT and its social enterprises at Tanglewood Park in Clemmons, focus on serving community members facing barriers to employment and changing lives, one recipe at a time.

FORGING THE FUTURE

When Griswold retired in 2008, Clyde Fitzgerald, a retired executive for Reynolds American who’d been an integral part of Second Harvest Food Bank for its entire history, including 26 years as a board member, advocate, and three terms of service as board chair, assumed the organization’s helm.

When Fitzgerald retired in 2018, he told Second Harvest’s many supporters that he was doing so with complete confidence that the Food Bank had hired the right person in Eric Aft to lead the organization into the future. Our entire community grieved the loss of Fitzgerald, who sadly passed away just six months after retiring, but his spirit remains at the heart of the Food Bank he loved.

In the face of the economic fallout of the COVID-19 pandemic, Aft’s 31 years in nonprofit management, proven leadership in building collaborative approaches to addressing pressing community issues, and commitment to innovation and transformative change is needed now, more than ever.

Before the COVID-19 pandemic, the level of food insecurity was improving due to economic conditions; however, more than 1 in 7 individuals were still facing uncertainty over where their next nutritious meal might come from. Aft and his team understand that it will take greater ingenuity to address both the immediate challenges of hunger and its root causes.

“The future is about constant innovation and partnerships. During the pandemic, we’ve been required to adapt and change rapidly. Our success in doing so showed us what is possible. The impact of the pandemic will be felt for multiple years. We must be prepared to continue our enhanced response efforts while focusing on new, promising strategies that will position individuals for success and break the cycle of hunger and poverty.”

HUNGER FOR CHANGE As the backbone to the region’s hunger relief network, Second Harvest understands its responsibility to lead conversations about the intersections of food insecurity, poverty, health, and racial disparities.

Second Harvest is seeking ways to enhance its core mission to support people who are experiencing hunger while also addressing the circumstances underlying hunger. Over the last couple of years, this has been brought to life through greater nutrition education, explorations to expand its culinary training program, distribution of more fresh produce, and new methods to get food to our area’s children and seniors.

Aft says the future will require not only new thinking, but new infrastructure. “Second Harvest’s facility was not built to handle the more than 43 million pounds it is now distributing, nor all of the programs that are creating results in the fight against hunger.”

As the Food Bank’s leaders look to the future, they know they can work better and smarter.

The organization’s $10 million Hunger for Change capital campaign, led by Cantey Alexander, Triad Market President with Truist, Chair and Cynthia Anderson, Honorary Chair, will address the capacity, efficiency, and technology constraints that are slowing transformational impact down at a time when it needs to be moving faster.

FROM HEAD START TO HARVARD “What I hope you take away from my story is not that a girl from the projects can go to Harvard. Instead, I want you to see the reality that the generational cycle of disadvantage can be reversed when we invest in opportunities that give kids hope.”

Emma Battle was born at Kate B. Reynolds hospital in the early 1960s.

Her two parents, who had moved to Winston-Salem before finishing high school, worked in the domestic care industry and for RJ Reynolds Tobacco Company.

“Dad had a good-paying job at R.J. Reynolds, and we were having a pretty good life in our Claremont Avenue rental house while my parents saved to buy us a home. And then, my father was convicted of manslaughter. He was sentenced to four years in jail while my family served four years on public assistance in the Kimberly park housing projects.”

From that moment on, Emma remembers her neighborhood as a struggling community—a place where kids would spend their time at the dime store buying layaway school clothes or counting blood drops on the pavement on the way to church to try and guess who had been stabbed the night before.

“We used to walk alone to and from our neighborhood elementary school, North Elementary, but our friend Tweetie was raped. She was just five years old.”

Violence and destruction were common. Police would patrol the streets and park their mobile crime units near the neighborhood recreation center. Sometimes, they would invite the kids in to see graphic photos of people shot in the head—to teach the children that crime does not

pay. According to Emma, police would also circle the Black Panther house, one of her favorite places in WinstonSalem, because the members “were cool.

They served food and taught us about black hair care and skincare. We used to sing about black power and standing up for our rights.”

“In the midst of all the drama, there was some goodness: school. I got the chance to go to Head Start and discover a new world. Head Start was my first life-changing experience and a key event that helped my siblings and me avoid the American Dream Crisis.”

Emma found solace and energy in Family Service’s Head Start program. There, she met with a guidance counselor who convinced her to apply for a scholarship to a boarding school in Massachusetts. Because of Head Start, Emma was able to realize her potential as a student and lifelong learner.

She graduated from Duke University in 1983 and received her MBA from Harvard Business School in 1990.

Emma Battle, an alum of Family Service’s Head Start program, is currently the President and CEO of MarketVigor, LLC, a strategic consulting, e-commerce marketing and digital analytics firm. She also serves as the President and CEO of Higher Education Works, a non-profit organization that advocates for support of North Carolina public universities and community colleges. She previously served as the President and Chief Operating Officer of CRISP Agency, a digital advertising agency, before which she served in executive and senior marketing and sales roles at Red Hat, Inc. and Hanesbrands Inc. She also holds a BA in Economics from Duke University and a MBA from Harvard Business School.

A Life-Changing Combination Atrium Health, Wake Forest Baptist Health Join to Improve Care for All

Wake Forest Baptist Health and Atrium Health have combined to form a single enterprise to enhance health care, medical education, innovation, research, and economic opportunity in WinstonSalem, Charlotte, and beyond.

The combined enterprise will be one of America’s leading academic health systems, with 42 hospitals and more than 1,500 care locations, serving more than seven million people across North Carolina, South Carolina, Georgia, and Virginia. It will employ more than 70,000 individuals and include more than 3,500 students in over 100 specialized educational programs.

Atrium has already announced $3.4 billion in new investments in the Wake Forest Baptist system and the communities it serves to address needs over the next ten years. It includes the construction of a new care tower at Wake Forest Baptist Medical Center with an upgraded emergency department and enhanced operating rooms and intensive care units.

Funds are also being combined with private philanthropic support to accelerate the creation of a new Eye Institute in downtown Winston-Salem’s Innovation Quarter.

A second Wake Forest School of Medicine campus is planned in Charlotte, with the primary campus remaining in Winston-Salem.

Julie Ann Freischlag, MD, FACS, FRCSEd (Hon), DFSVS, chief academic officer of Atrium Health Enterprise, said the impact of the strategic combination will be far-reaching.

“This commitment to grow our capabilities is part of what makes our strategic combination with Atrium Health so beneficial for our patients, our faculty and staff, and the communities we serve,” said Freischlag, who continues to serve as chief executive officer of Wake Forest Baptist Health and dean of the Wake Forest School of Medicine. “Not only will this improve care delivery, it will also have a tremendous, positive effect on our local and statewide economy. As we break

new ground on buildings, we’ll also be able to break new ground in the areas of clinical care, education and research.”

There also are plans to build a second School of Medicine campus, to be located in Charlotte, with the primary campus remaining in Winston-Salem, and to invest in the Translational Research and Population Health Center in WinstonSalem, exponentially expanding access to thousands of clinical trials across the region.

“Through our combined, nationally recognized clinical centers of excellence in multiple specialties, we will be able to expand our research in signature areas, such as cancer, cardiovascular, regenerative medicine, and aging, and target bringing research breakthroughs to the community in less than half the time of the national average,” Freischlag said.

Eugene A. Woods, MBA, MHA, FACHE, president and CEO of Atrium Health, said the combined enterprise will be lifechanging for people in Winston-Salem, Charlotte, and across North Carolina.

“Throughout the process of joining together Wake Forest Baptist Health, Wake Forest School of Medicine and Atrium Health, we’ve worked hard to understand ways we can make a difference – to improve health, elevate hope and advance healing for all,” Woods said. “Part of that is making sure we make investments into the community and the infrastructure to ensure even better care, research, and education that will have a positive impact for generations to come.”

What

promise a summer holds? The promise of hot, sunny days. The promise of activities not possible during colder months. The promise of beaches, pools, lakes, and the like. The promise of time with family and friends, stretched out across long, lazy days…making memories.

As adults, many can look back with fondness and nostalgia to summers of their childhood. The carefree days of youth, which for some included time spent at summer camp…maybe for one week, maybe for the entire season. If you were lucky enough to spend time at camp, you know that the mark that experience leaves can last far beyond that summer and stay with you forever.

Camp offers days filled with structure, but also lots of choice in activities: time to play, close bonds with camp friends, singing around the campfire, and the chance to try and master new things that campers might never have had a chance to do, if not for the safety of the camp environment.

Confidence is bolstered there; self-esteem is built up there. Camp becomes a part of who that person is.

There are many benefits to summer camp.

Here are some of the most valuable: Building Resilience and Confidence: At camp, children are positioned in an environment where it’s safe to leave their comfort zone and try new activities they might not otherwise have the opportunity to try. Things like sliding down a giant slide into a lake below, tackling a high ropes course, trying a new sport, learning to maneuver a canoe or kayak…or numerous other challenges. If they don’t get the hang of it the first time, they can try again until they feel confident in their ability. By taking risks and facing their fears, camp teaches children confidence and resilience in a safe and supportive environment.

Fostering Friendships: Meeting new people can be intimidating for some. In the relaxed atmosphere of camp, there is less pressure, and friendships develop naturally.

Kids with similar interests are together, involved in activities they enjoy, and bonds can form quickly and last for many years to come. Children can meet friends from different backgrounds and learn how to work together in teams. They can face challenges together and conquer fears together…a bonding experience for sure!

Connecting with Nature & Encouraging a Healthy Lifestyle: Most camps don’t allow electronics (or permit only minimal use).

The focus at camp is primarily on outdoor activities. Many camps provide a daily routine that involves waking up early, a day filled with lots of physical activity, eating

regular meals, and spending most of the time outdoors. Where at home they might be playing video games, doing homework, or watching TV, at camp, those things are not even an option. Kids are immersed in the “natural world.” In addition, at camp, children have to rely on each other and the adults around them to teach them skills and keep them safe during their time outside.

Things like hiking, outdoor camping, and boating can be exciting, but also scary for a first-timer. The hope is that being and exploring in nature will foster a lifelong love of the outdoors.

Promoting Physical Play: Real opportunities for physical play in daily life are not what they used to be. Recess has been drastically reduced or removed from school altogether, homework is more challenging, video games have taken over, and many children are just too busy. At camp, the environment is set up for play. There is enough free time, plenty of playmates, and countless things to do. Playtime allows a child to be creative and imaginative and express him- or herself in comfortable surroundings. They learn to negotiate with other children and make new friends.

Self-reliance and Independence: Leaving their home to attend summer camp encourages a child to become more independent. In the camp setting children learn to make some decisions on their own.

They discover they are able to do things without their parents by their side all the time, and this builds their confidence. In the positive, nurturing environment of summer camp, children can discover who they are and what their strengths and weaknesses are. They learn new skills that can shape their identity and help them become more self-reliant. Every success reinforces their sense of independence.

Camp instills appreciation for family and home: Time away from home and family helps kids appreciate everything more: the parents who love them, the house that keeps them warm and safe, a meal cooked by mom or dad, and everything else they don’t have at camp.

Naturally, parents want the best opportunities for their children. They want them to be happy, well-adjusted, healthy, and successful throughout their childhood and as adults. Children need life skills to be their best selves. Skills such as self-reliance, socialization, independence, and physical well-being will benefit them long after their summer camp days are over. Not only will a child return from camp with greater self-confidence and a stronger sense of identity, he or she will also have developed valuable new skills, made new friends, and created memories to last a lifetime.

More Than a Lemonade Stand:

Encouraging the Budding Entrepreneur in Your Child

If

you ask an adult to share their earliest memory of making money, you may be greeted by a tale of a makeshift lemonade stand during the family yard sale, or a story about selling cartoon drawings or friendship bracelets to classmates.

These memories stand the test of time, not because of the financial worth, but the feeling of value associated with them. The early moments when they realized something they had to offer was worth something in return.

falling down, that’s okay! Try again in a different room or use different supplies from the linen closet! Allowing children to try things differently helps them look through a different lens at life and embrace a positive attitude when it comes to failure and trying new things. Ask questions such as, “What do you want to do differently next time?” or, “How do you think we can make it better?” This is a way to grow problem-solving and criticalthinking skills, and the younger, the better!

There is a unique beauty in the way that children see the world and the role they play within it. From the talent they possess and the skills that interest them, it is during those youngest years where the possibilities seem endless and imagination beats insecurity.

Encourage and Accept Differences Dr. Suess may have said it best when he wrote, “Today you are You, that is truer than true. There is no one alive who is Youer than You.” Children notice quite early the things that make them different than their peers, but those things deserve to be celebrated. Some of the most successful entrepreneurs in history are people who used what made them different to see the world differently and create new things or ways of doing things. Those first few years of life, humans are filled with so many questions of “Why?” and “How?” Grown-ups should challenge themselves when they respond to invitations by curious minds to dive deeper! What if the question “Why is the sky blue?” is answered, instead of with the question, “What if it wasn’t?” by, “What color do you think it should be?” Get to hear the unique perspective of that child, the one who may learn and think differently than his or her classmates or other siblings, and encourage their opinions and thoughts.

While it may not be as easy for adults to share this same mindset, it is up to them to embrace and encourage that youthful creativity they see in the children around them.

Imagine, if rather than simply taking notice of Dick’s and Jane’s interests, they instead embraced and encouraged these behaviors, and these helped them pursue a step towards entrepreneurship. A step that in turn can lead to a healthy appreciation, passion, and drive for independent business, and the skills that are often part of that as they grow.

Help Them Embrace Their Interests The things that interest children are so important to who they are and who they will one day be! Some may have passions that stay with them for more than a season, like a favorite sport or hobby. Sometimes, it could be something fleeting, like the latest superhero or pop- culture craze. Regardless, helping them spend time marinating in what interests them and discovering more about these thing helps them find themselves. Encouraging exploration and trying new things, while not worrying about what’s popular, helps them discover what makes them unique and innovative—very important traits in entrepreneurship.

Create a Trial-and-Error Environment Rather than concentrating too much on one project or outcome, it’s a good idea to create an environment of trial-and-error for kids. If they decide they want to build a fort, but the fort keeps

Teach Them to Appreciate Money When a child begins taking their interests and building on them in a way they can create a product or service to sell, the idea of money becomes much more concrete. Imagine that silly little lemonade stand at the family yard sale once again.

Understanding the value behind a dollar is simpler to learn when you’re selling cups of lemonade for fifty cents each. This can provide an avenue to start appreciating money, and lead to a positive relationship with it. They can comprehend early on the difference between simply wanting money and earning it.

Paying a niece or nephew a small fee to walk the dog or wash a car can teach them about the connection between time and money as well.

Not Your Parents’ Summer Camp!

most of us, the words “summer camp” evoke memories of camp fires and tug-of war, sing alongs and canoeing contests. The experiences and memories we gained from those times away from home were a true rite of passage. But what if that experience could have also influenced your future career path? What if you also learned things at camp that inspired you to explore possible job opportunities?

As the song says, “The times, they are a-changin’,” and the summer camps of today look a bit different than the camps of years gone by. Don’t worry, there are still ghost stories and talent shows, but there’s also robotics and radio production, video game design, and equestrian science.

Right here in the Triad, our local NPR station, 88.5 WFDD created a day-camp called “Radio Camp.” Radio Camp enables middle school students to learn how to write, prepare, and record a story for broadcast on the radio. In just one week! It was so successful that the station developed an after-school program for high school students, called “Radio 101.”

“Kids liked it so much they were taking the camp over and over! So we added Radio 101 as an after school option for older students,” said Gabriel Maisonnave, WFDD’s Education Program Manager.

• North Carolina Agricultural and Technical State University’s Research Apprenticeship Program (RAP) is a fourweek residential summer program for current or rising high school juniors and seniors. Its main objective is to stimulate interest in agriscience professions, including: biological engineering, biotechnology, business and economics, child development, fashion and apparel, food product development, horticulture, landscape architecture, nutrition, teaching, veterinary science, and many more.

CHRYSANTHEMUMS: Ushering in the fall brings an aromatic plant to cast away ants, Japanese beetles, bed- bugs, fleas, silverfish, spider mites, ticks, and roaches.

With an eye-catching foliage, they contain a well-known chemical called “Pyrethrum,” found in many insecticidal sprays. (There’s a reason the mum adorns entranceways of houses by September.) By late fall, consider quadrupling your investment by taking a shovel and dividing one mum into four sections, and replant!

ALLIUMS: The long-stemmed purple flowers forming a perfect sphere are dramatic, and a natural broad-spectrum insecticide for pests, from aphids and carrot flies to cabbage worms and slugs.

Add significant color to your garden by planting allium near cabbage, carrots, broccoli, garlic, kohlrabi, leeks, peppers, potatoes, and tomatoes.

DAFFODILS: New house owners may discover a fence of daffodils surrounding a vegetable garden or fruit trees. It’s a colorful option to keep mammals away, such as deer. And squirrels find the yellow spring flower poisonous!

PETUNIAS: The hanging basket of cascading trumpet blooms is a sign of welcome to visitors! It repels the aphids, asparagus beetles, tomato hornworms, squash bugs, and weevils; therefore, plant petunias as companions to basil, beans, corns, peppers, and tomatoes.

BASIL: Consider keeping this alluring herb in pots near the house, especially by the doors. It repels flies and mosquitoes.

(Insect Repellent Recipe: Combine four ounces of boiling water with fresh basil leaves. After steeping for several hours, remove the leaves. Then, mix the liquid with four ounces of vodka. Store the spray bottle in the refrigerator and use it as needed.)

CHIVES: In the garden, plant seeds of chives near your carrots and onions, or roses. While acting as a pollinator to enhance yields, they ward off Japanese beetles, aphids, carrot flies, and moles.

LAVENDER: Traditionally, lavender bouquets are hung inside and outside homes to keep the home pest-free, specifically from moths, fleas, flies, and mosquitoes. If you need a plant to keep the neighbor’s cat away, plant lavender!

MARIGOLD: Grandmothers often kept a Mason jar full of marigold seeds to sprinkle along the border of gardens. It’s an ideal flower to keep the vegetable garden blemish-free. One such parasite that flees from the powers of the marigold is the “cabbage-root maggot.” Left protected, it will feed on cabbage, cauliflower, broccoli, Brussels sprouts, collards, kohlrabi, radish, and turnips. Save the seeds after deadheading! Plus, you’re promoting new blossoms!

MINT: The smell of peppermint or spearmint, for instance, is a repellant against mice, spiders, mosquitoes, and a whole host of other insects, including ants, and wasps. While it may not serve well in your vegetable garden, because of its tendency to spread, plant it near the

Rosemary and other herbs, such as sage and thyme, are perfect for protecting beans, lettuce, and peas from rabbits.

SUNFLOWERS: A wall of flowers can be a natural attractant for pollinators, while acting as a barrier against deer. Try planting teddy-bear sunflowers, which reach a height of three feet, to boost your yields for cucumbers, pumpkins, squash, and zucchini plants!

smell of a fresh loaf is irresistible. It invokes happy memories of warmth, fulfillment, and pleasure associated with family, friends, or great meals! You may connect it to a crock of soft butter, a hard cheese platter, or a steaming pot of cooked spaghetti! For some, the experience of breaking bread, seated around a table with others, may feel Biblical. Since prehistoric times, each society has made a specific type of bread.

Today, some households prefer to mix flour, water, yeast, sugar, and salt to create unique sizes and shapes, or add additional ingredients to make cheese bread, wheat, rye, pumpernickel, or sourdough. Do you ever wonder why you enjoy a specific type?

TEXTURES AND CRISP Unleavened bread, made by mixing flour with water, is usually baked or fried. You may even have a stack of its product, tortillas, stored in a bread box! Add yeast or another type of leavening agent to the flour and water mixture, and the dough can rise and expand.

•A merican Rye has more fiber and protein than white bread and only two vitamins and minerals, iron and thiamine.

•W hole wheat is more nutritious than white bread, containing iron, and thiamine. It contains only 60 calories, 1.6 grams of fiber, and 2.4 grams of protein.

•A multi-grain bread comprises whole-grain flours, seeds, and sprouts. It is fortified with iron and thiamine and offers 65 calories, one gram of fiber, and 2.5 grams of protein. Except for whole wheat, which has 1.1 gram of fat, white, rye, and multi-grain all have 0.9 grams of fat.

•B agels, made with enriched flour, offer almost three times the calories and carbs of white bread. A bagel contains 0.6 grams of fiber, 6 grams of protein, and varying amounts of iron, niacin, thiamine, and riboflavin (vitamin B2, promoting tissue regeneration.)

• Wheat flour absorbs water to form an elastic dough. As bubbles form, it transitions to a texture which is easily broken.

FACT: D ry toast has calories equal to those of a slice of bread.

• Rye contains varying amounts of gluten and is harder to tear.

THE LANGUAGE OF BREAD

• Sugar and honey are ingredients to encourage faster yeast growth.

Ever wonder, “What’s the difference between whole-wheat and wheat bread? Who knew bread would lack a standard definition?

Instead, we tend to select based on a preferred taste.

• Water, beer, milk, and fruit juice are liquids that influence the flavor and texture.

• Some form of fat, such as butter, adds flavor to create a rich and flaky crust in pastry bread.

• Commercialized rolls or loaves include preservatives, emulsifiers, bleaches, or coloring agents to improve their appearance and shelf-life.

FACT: Louis Pasteur, in the 1850s, identified yeast as a living organism.

NUTRITION In Biblical terms, bread is the food that sustains life. It’s inaccurate to believe starch, protein, and vitamins offer total nutritional value. Many nutrients found in grains do not transfer in milling and processing; yet, depending on the type of bread, enriched white flour, for instance, has more B complex vitamins than whole wheat.

Be aware, some ingredients increase the nutritional value: the list includes eggs, cheeses, dried fruit, dried nonfat milk, seeds, soy flour, sprouted grains, and raisins.

• A slice of white bread is not fattening. It contains 65 to 80 calories, two grams of protein, and nine-tenths of a gram of fat.

And fortified niacin (to lower cholesterol), thiamine (vitamin B1), and two essential minerals, iron and calcium.

•W hole-wheat contains whole-grain wheat flour; wheat bread is likely to be produced from refined white flour, bran, and other ingredients.

•C iabatta is an Italian creation made from olive oil and various herbs, creating a chewy and moist bread.

•F ocaccia—the word alone adds calories! It’s an Italian yeast bread, similar to pizza, and usually contains olive oil, onions, garlic, among other herbs.

When is the Best Time to EXERCISE?

everyone can jump spryly out of bed ready to tackle an elliptical. Circadian rhythm beats like a ticking clock, creating a biological awareness to open your eyes at first light, and feel the pull of sleep past dusk. Your goals and health needs can give you an upper hand in deciding when to engage in physical exercise. Whether it’s morning, noon, or evening, identifying your personalized prime hour can prevent stress, injury, and promote a night of sound sleep.

STRETCHING

One sign of aging is a shortened range of motion. Steps shorten to a shuffle. Arms lose the limber swing. And, the neck, shoulder, and back no longer bend with relative ease. As the body executes strength-training moves, the result is a protection against falling and injury. Stretching can be done standing or sitting and moving the arms and legs, or following a yoga or Pilates routine.

• In a study based on the exercise walker’s cognitive function, researchers concluded that women who spent 1.5 hours weekly gained more than women who only spent 40 minutes per week.

• A walking shoe tends to break first at the midsole!

• Exercise before breakfast, if the goal is to burn fat.

• In seeking to reduce blood pressure levels by 10% and sleep better, you should begin a physical routine by 7:00 AM.

LOW-IMPACT AEROBICS

In the desire to improve bad knees and hips and overcome an overall feeling of tiredness, the ideal exercise is a 20-minute lowimpact and cardio circuit. Take a brisk walk, using your arms, or ride an exercise bike.

• With moderate exercise, individuals will lose four cups of water per hour. After each workout, replenish your liquids with a minimum of two cups!

• If you suffer from sleep apnea, start exercising mid- to late afternoon.

HIGH-IMPACT AEROBICS

Do you love the force of the water rushing past your body or the heightened rush of a dance routine? Whether it’s 20, 30, 45 minutes, or an hour, high-impact exercise is a sustainable action.

• Running, at a steady pace, for a mile outdoors or on a treadmill burns 30% more calories than walking the same distance.

• Improve your ankle strength and wear “cross-trainers” or “court shoes,” rather than running shoes, for actions that involve turning the foot or pivoting.

• Sweat is an indicator of fitness! Your body is showing its ability to cool!

• The body’s temperature reaches its peak between 2 PM and 6 PM. It’s an ideal time for those seeking to improve their physical stamina.

STRENGTH TRAINING

The body develops muscle through tests of resistance.

Sometimes the routine involves the body, weights, or a variety of machines. Begin with ten minutes daily if you are new to strength training to give your muscles time to rest. Joining a gym allows individuals to learn how to use a variety of equipment to prevent injury.

•H uman thighbones are stronger than concrete.

•E xercise increases blood circulation and releases serotonin to the brain for a boost of processing and mental acuity.

•R unning uphill burns 28% more calories than cycling uphill.

• I t’s vital not to advance workout levels too quickly! Wait at least two months to improve balance and strength.

•M oving daily slows degenerative joint diseases and strengthens the bones, muscles, and tendons!

•B ody temperature reaches its peak in the afternoon to promote coordination and stamina.

•D on’t exercise after 9 PM. The body is already releasing the natural chemical melatonin in preparation for sleep.

Unexpected Stay-At-Home Dad

How Virtual School Can Change the Family Dynamic BY KAREN COOPER

moves quickly. Blink, another year is gone. There are many families with two working parents. Kids have to get to school, do homework, sports, church, and whatever else they like to do. We manage to eat dinner together when we can and we keep it all moving forward. It works (most of the time). We juggle, we stress, we manage, and it works…until everything comes to a screeching halt!

No one could have anticipated how we would all have to alter our lives when a pandemic set in. Even the most flexible among us was thrown for a loop! Everyone (on earth) had to regroup.

In our family, the only logical choice was that Mom would keep working (because there was really no choice, no flexibility, and no work-from-home option—hello healthcare!—and Dad would stay home (because he had a lot of options). A man used to building things, fixing things, making old, decaying things beautiful again and working with his hands all day…this guy would now be house manager, drill sergeant, teacher, homework overseer, technology guru, encourager, cook, and so many other things. What could possibly go wrong?

The kids, 17 and 13, might have thought this would be a vacation of sorts. Boy, were they in for a rude awakening!

Their Dad, used to running on a tight schedule, learned quickly to get them up an hour before classes start so they can have breakfast, finish any last-minute work and get their computers set up for the day. In Dad’s school, they must be up at their desks (kitchen and dining room tables) dressed and ready to work.

A TYPICAL DAY AT SCHOOL: 9:00 am – Dad comes in the living room to find eldest son wrapped in a blanket lying on the couch with computer propped up on his chest. “I’m on a zoom call,” he says. Nope…Dad motions him back to the table. No lying down at school!

10:15 am – Dad comes in to find eldest son googling sports cars while zoom call is visible in the small window at the top of screen. Dad eye rolls heavily. Situation corrected, Zoom call reprioritized.

11:30 am – Younger son takes lunch as scheduled, spills chocolate milk on new couch. Clean-up ensues by all. Mom none the wiser (or so they thought).

12:00 pm – Asynchronous learning…husband calls me because he can’t remember Canvas (virtual school parent portal) password and can’t retrieve assignment. I spend at least 45 minutes solving the problem.

12:45 pm – More asynchronous learning…kids struggling, Dad assisting…. realizes they don’t do math like we used to do it. Urgent call to elder son’s girlfriend, who is math genius.

12:45 – nighttime – 100 calls and e-mails from school, trying to figure out what teenagers have completed and what is still due and why they were marked absent when they were clearly “there,” wistfully longing for a time before virtual school and completely appreciating teachers for the millionth time since March 2020.

Truth be told, we are very fortunate to be set up to handle the pandemic and virtual learning this way. Not everyone is so lucky, and I stand in awe of the parents with younger children, the parents who both have to keep working outside the home and thus outsource their child’s or children’s learning to a relative or babysitter, and especially of the parents who are out of work and dealing with that stress on top of trying to ensure their children stay educated. None of it is easy!

However, in our case, I have to say it has been a blessing in many ways for the kids and their Dad. Talk about quality time! There has been a lot of bonding taking place. They have all grown closer and understand one another better.

Dad has more empathy for the kids and their struggles with school and with life in general, and he’s more invested in their future success. He’s learned to anticipate their moods, their needs, and when to give them extra encouragement. The kids have learned to trust their Dad more, and know that he will be there for them when they need him.

I’ve learned to trust him more too! Even though it’s been really tough at times, there has also been a lot of good.

Of course, we hope it doesn’t stay like this for much longer. I don’t know about you, but everyone in my house is ready to get back to “normal”…whatever that will look like. Still, until the kids have the option of going back to school fulltime, we’ll be thankful for what we have and continue to meet each challenging day with gratitude…although the teenagers might not go quite that far.

Asking, “What can I do?” leads to a proactive decision to invest time in the ultimate insurance policy— valuable life skills encompassing security, shelter, food, water, and medical care! In any emergency, from extreme weather to a personal disaster, you have the power to take charge of your fate by making plans and taking action!

Have you ever said, “Am I watching a movie, or could this become a real-world experience?” A thrilling drama in 2002 featured a mother and daughter trapped within a panic room during a home invasion. THE PURPOSE The Ancient Egyptians were masters at building secret rooms to protect an entombed pharaoh’s treasure. can often open our hearts and minds to the biggest lessons life has to offer. Children’s author Christi Eley has seen this firsthand since she was a young girl, and has taken the unconditional love that the animals in her life have shown her and poured it into her first children’s book. As you read through the pages of Mr. Flopsy Whispers from God: A Lesson on Being Still, you’ll be met with the message of helping your child find the stillness and peace that God has for all of us, from none other than a pet bunny.

“By connecting with animals, children learn to see and hear God’s love and feel secure as they learn to be quiet, patient, brave and trusting,” says Eley. “In my experience, spending time with animals opens you up to those lessons firsthand and shows you God’s love in a different way. They really do teach us so many things about life.”

In this particular story, the main character, Cam, is excited about everything life has to offer and can hardly sit still from the excitement of all the things he wants to do and be part of. He can’t understand why it seems as though everyone is always wanting him to “sit still” or “be quiet”— surely, they understand how exciting life can be, don’t they? It isn’t until Cam’s friend, Mr. Flopsy, a white bunny rabbit with a lesson to share, helps him see the beauty in finding stillness and exploring what God has to say on the subject. Cam watches Mr. Flopsy, a bunny he knows loves to hop all around, sitting in his favorite spot quietly breathing in and out, and wonders, maybe he can understand what it means to be still, too?

Illustrated by Aries Cheung, these two friends take a colorful journey together through the pages, sharing thoughts and stories. Perfect for children ages 3-10 years old, the characters, illustrations and rhythmic script of the story quickly grab their attention. Cam’s feelings of discontent and the questions he asks Mr. Flopsy about how to be still will resonate with readers, as they often receive similar commands and struggle with finding the understanding behind them. Eley does a wonderful job pulling the gentle and affirming words from the Bible verse, “Be still and know that I am God” (Psalm 46:10), to connect with her young audience and drive the lesson home in a way that they understand.

The message within the story Eley shares is not only perfect for little readers, but adults as well. “It’s special that the grown-ups realize the importance of slowing down as

they read the book. I’ve gone through my own journey as a mother to a very active daughter and I’ve learned to take time and be still myself. I want parents to take this same message away and know how important it is,” Eley explained.

As readers reach the final page of the book they are met with resources to help their little listeners dive deeper into the topic of being still, by exploring activities and scripture that corresponds to the lessons in the book. Each suggestion provides an opportunity to build long- lasting habits embracing the stillness the pages in the book remind us are so important.

Of all the lessons that she could have had Mr. Flopsy share, this felt like the perfect first tale to tell, wanting to write something that felt bigger than herself with a message grounded in spirituality and faith. With over 20 years of practicing yoga through her children’s program Angel Bear Yoga, Eley has a lot of experience in turning the message of “sit still” into a positive, rather than a negative. Mr. Flopsy helps do this by breaking down the barrier that can sometimes come between an adult’s request and a child’s understanding. As you read each page, you’ll quickly see that this pet bunny has a real knack for getting through to kids in a way that feels authentic to them, meeting them where they are.

Understanding Gluten

Dough makers pound and stretch the dough; then, toss it into the air until it expands in a perfect enlarged circle. Have you ever wondered what compounds create the “elastic” quality? In some grains, such as wheat, barley, rye and spelt, is a protein called gluten, which is essentially flour. One out of 133 people suffer from an autoimmune condition, which makes it difficult to digest gluten. Imagine looking at a menu and realizing few items fit your diet. The “no” column includes any item prepared from flour such as bread or breaded foods, wheat-based pasta, wheat and rye. You too may consider limiting your gluten intake. Fruits and vegetables have a higher nutritional value and can offer the essential vitamins and minerals the body needs!

A MIXTURE OF FLOUR AND WATER

As flour proteins of grain mix with water, gluten proteins, such as glutenin and gliadin, form a sticky network comprising a glue-like consistency. It’s understandable why grains are essential to increase the strength, rise and shelf-life of bread and other baked goods. In a body that identifies gluten as a foreign threat, it will quickly attack the lining of the stomach and cause an inflammatory disorder within the small intestines. Eating foods containing similar antigens to gluten is most prevalent with other autoimmune conditions, such as type one diabetes, rheumatoid arthritis, Grave’s disease, Hashimoto’s thyroiditis, celiac disease and irritable bowel syndrome (IBS). As conditions arise, individuals may develop conditions like anemia, osteoporosis, neurological disorders and skin conditions. As to why humans struggle to handle gluten, research believes the digestive system has yet to process high number of grain proteins in today’s foods. According to the National Health and Nutrition Examination Survey, gluten has more than tripled in the past five years.

THE BENEFIT TO AVOIDING GLUTEN

Not choosing to consume breaded and highly processed foods, baked goods and other sugary sweets promote individual health and wellness.

Without gluten, most people claim to feel less fatigue and joint pain, and celebrate their weight loss. Open the door to healthy fats – such as fish – and fruits and vegetables. Better filling foods can provide greater essential vitamins and minerals.

THE GLUTEN-FREE WAY

Transitioning to a flour-free diet can impart wonderful techniques to eat better and smarter with the following suggestions!

• Substitute white sugar for organic, raw or brown sugars.

• Cold-pressed oils such as extra virgin olive oils, macadamia nut and grapeseed oils contain high amounts of antioxidants and vitamins; therefore, select over a cooking spray.

• Eliminate using flour and wheat and choose glutenfree, all-purpose and self-rising flours. Rice flour is an ideal substitute, too!

• Use corn flakes as a breading coating on chicken or fish dishes.

• Brown rice has twice the amount of fiber as white rice!

• Go for butter over margarine!

• Find a bakery or recipe book of gluten-free baked goods. Using almond, coconut or hazelnut meal is just as delicious! Give it a try!

• Find a friend who raises chickens, and start consuming free-range eggs.

• Local beekeepers sell raw, unfiltered honey. Be careful of unknown jars that say USDA approved.

Most likely, it contains high fructose corn syrup.

• Look for gluten-free products in salad dressings and sauces!

COOKING HEALTHY MEALS

Cookbooks sing the praises of “the weight-loss plan that works for anyone!” Titles such as “4 Ingredients Gluten-Free” by Kim McCosker and Rachael Bermingham, “The Everything Gluten-Free Slow Cooker Cookbook” by Carrie S. Forbes and “The Gluten-Free Edge” by Gini Warner and Chef Ross Harris can help anyone seeking a transition into a new dietary lifestyle. You’ll find delicious recipes to please everyone in the family!

Rather than pasta or French fries, select asparagus and a serving of brown rice with a side of fresh lemon.

• Diners can enjoy a hamburger. Substitute the bun for a crisp leaf of romaine lettuce!

“Oh, Thank Heaven” When

I was a young child, the tagline for the convenience store, 7-11, was, “Oh, thank Heaven for 7-11!”

It was a catchy little phrase. I mean, how could you not be thankful to a Higher Power for Slurpees, Big Gulps, and hot dogs that roll listlessly like logs in a river’s current? Little did I know that a 7-11 in my one-stoplight-town in Virginia on a cold March night in 1980 would play such an important role in my life. But for any of that to make sense, I need to back up a bit.

A few weeks before my rendezvous with fate at the 7-11, I had been standing in my elementary school principal’s office. No, I wasn’t in trouble (but I DO remember that enormous paddle riddled with holes hanging on his wall!!). I was called down to Mr. Rexrode’s office for another reason. Earlier in the day, my firstgrade teacher had noticed something about me. He had caught sight of some bruises—the purple/black marks on my face that didn’t seem normal. I can’t say that I have a crystal-clear memory of this, but I vaguely remember him asking me how I got them. I probably said something like, “From my dad.” The events that would change my life forever were set into motion.

Back to that little boy standing in the middle of the principal’s office. I stood sheepishly in front of Mr. Rexrode’s large wooden desk as he sat behind it with a look of concern in his eyes. To the side of the room stood the School Nurse, quietly observing the situation before her. If there was another soul in that elementary school office, I couldn’t tell you. Mr. Rexrode, a middle-aged, balding man whom I trusted to be a decent person, asked me to take down my pants.

Slowly, I complied. My small fingers clumsily unfastened the button and zipper, letting my trousers fall to the floor. I don’t remember being embarrassed, but I can recall being a timid child standing there with stick-like legs covered in the telltale signs of abuse. The bruising told the story of the previous eight months that I had been living with my parents. I never knew what kind of physical or mental torture I would have to endure on a nightly basis in the small apartment I called “home.” What I did know was that I missed my grandparents, who had lovingly raised me until the age of six. I also knew there was something wrong with my parents. And I guess, subconsciously, I knew I had to get out of that nightmare.

So, I threw my parents under the bus. But getting hit by a bus every night had gotten to be too much. I guess I was simply doing what I needed to...SURVIVE. In the days that followed, I learned quickly what a Social Worker is. I spent a great deal of time with him. My parents must have been talking to him as well. I had no idea what was going on “behind the scenes.”

It wasn’t long after I was standing in front of the principal with my pants around my ankles that I was being told to grab any items that were important to me. After being with them for eight months, I was leaving my parents.

A small bag of clothing was quickly scrounged together. I picked up my one prized possession—a light brown teddy bear with dark brown glass eyes and arms and legs that swiveled. Carrying very little, I walked out the front door of that apartment for the very last time.

It was already dark outside.

The late winter air was frigid as I climbed into the passenger seat of my Social Worker’s car. Then, we drove away.

I could say that it was a long, silent three-hour ride where I sat worried and nervously anticipated what lay ahead. But in actuality, it was less than a five-minute drive. We turned left at that one stoplight, followed by another left into the 7-11 parking lot. The car slowly slid into a parking space. To my right, out the passenger side window that was partly fogged up, I noticed a green vehicle that looked something like a jeep. The driver’s side door of the jeep-like car opened and a lumberjack of a man emerged from within. After some muffled conversation in the cold between my Social Worker and the lumberjack, my car door was opened.

Gripping my teddy bear tightly, I was formally introduced to John. John was to be my new father. After a few quick “goodbyes,” I climbed up into the passenger seat of the green truck/car/jeep thing and sat next to the complete stranger who would go on to become the greatest man and influence in my life.

As we carefully backed out of the parking spot, the light of the 7-11 sign reflecting on the windshield, a sense of relief washed over me as I thought to myself, “Oh, thank Heaven.”

The Little Free Library

How A Family’s LOVE of Reading Influences Their Community

“It’s

part of our daily ritual. Going to check the mail and the book box is a really fun part of our day.” For the Daniels family, these trips to their Little Free Library symbolize more than just walking and books.

It represents a chance to help their community and make family memories.

“We have a really long driveway, so a trip down and back is 15 minutes of dad and kid time,” said Aron Daniels. “My sons view it as a thing that adds quality time.

We have also looked up the local book boxes and make them part of our trips. I love how simple it is to make a magical stop for my kids to find a new book and give some.”

You may already be familiar with the concept of the Little Free Library.

Within neighborhoods, one may see a box structure with a clear glass door filled with free books for citizens to take, read, and share.

“I’ve seen little free libraries on several trips to the parks and when visiting friends and family. I loved the idea the first time I saw one. In our house, we have encouraged books more than most other things. Now that my oldest son has the reading bug, I wanted to keep pushing and find a way to amplify that reading is important.”

After speaking with neighbors who would be directly impacted by the local book box, Daniels ordered the materials, registered it with www.LittleFreeLibrary.org, and hit the ground running with getting neighbors familiar with the book box.

“It was as simple as putting it up one weekend.

A little bit after it was up and the neighbors had seen it, we took books to all the local houses.

We put bags of books in a wagon and wheeled it around. In each bag along with a book, we had an invitation to visit the box and an explanation of what it is, as well as a bookmark so they’d have a little reminder floating around.”

The family also found a creative way for maintaining the book collection. After the book box was up for a week, Daniels had a local used bookstore gather books for him to purchase. He aims to keep a wide assortment of books available, including biographies, best-sellers, and children’s books.

“I want anybody who stops by to be able to find something they may want to take. I was able to get a ton of books from the used bookstore that I shuffle in with whatever books people bring to the box. Each time I swap books out, which is usually two or three weeks, I post on the local neighborhood Facebook page to let the locals know to come check it out.”

Anyone can start their own Little Free Library in their area. It is a quick and simple process to get your book box on the national map, and Daniels has only one piece of advice for those who are interested: “Do it!”

“Any time you have a way to add to your community, do it. There are some things like a book box that can be special. Just find the right place, in your neighborhood or local community space, purchase a box or register a structure on the website, and make it happen.”

Looking at the mission of the Little Free Library, Daniels says he isn’t just adding books to his community, but is also spreading a love for reading. Books can introduce people to new worlds, adventures, and stories. All we need to do is share this passion with others, especially with the younger members of our neighborhoods.

“We give and receive some great books that really encourage my kids to love reading.

Kids are going to pick a TV show every single time until someone sits down and makes reading fun for them. All you need is some funny voices and time. With a library like ours, a kid can easily find a book to take home and enjoy by themselves or with Mom and Dad to make a great memory. In fact, we all could use a change of pace, a slowdown, and a good book that offers us a valuable space to just be. I think every person in the community could use that right now.”

The Little Free Library offers many special moments to the Daniels family, and moments they hope are passed along to neighbors and their families in the coming months.

“Growing up, reading was difficult for me.

I struggled with it for years. I would love to see my kids continue to love reading and for someone every now and then to pick up a book that feels important to them. Maybe it’ll be special to some people the way it is for us.

Books are for everyone and it’s never too late to fall in love with reading.”

Too

many toxins? Not feeling well? It’s easy to fall prey to toxic chemicals, processed foods, stimulants, and pollutants. We can do our part by opting for organic and natural products and ingredients. Detoxing is not just part of a healthier lifestyle, but it’s also important to avoid illnesses and diseases, allowing us to better control our health. Detoxing can be utilized as a preventative measure before resorting to surgeries or medications that often lead to unwelcome side effects.

Be aware of the signs and symptoms when your mind, body, and spirit are crying out for a detox. If your brain is befuddled, you’re bloated, nauseous, or gaseous, lacking energy, and your skin is broken out, it might be time to detox.

u Self-cleansing and self-healing are in your hands. Check off this list or create your own to refer to every day: u Start your morning with hot water and lemon, instead of a caffeinated cuppa joe, and stay hydrated with filtered, alkaline water. u Eat fermented foods – Take probiotics. u Take vitamins and supplements (including adaptogens). u Listen to soothing music like New Age, classical, ambient, and binaural beats. u Read something uplifting and positive.

You can increase mental clarity, improve digestion, boost energy, and get more beautiful skin through detoxing. Other benefits of detoxing include more stable moods, serving as an antidote to depression, increased self-confidence, gaining a sense of empowerment, a more positive body image, and longevity.

u Do a DIY massage and reflexology with carrier and essential oils.

Even though detoxing may not be a panacea, it can benefit your overall health. It takes discipline and consistency for a successful detox, and chances are you won’t experience improvements overnight, but more gradually. So, stay true to the process. Opt for pure, organic, and natural. Chart your progress by writing down or recording the steps you’re taking to document how you are feeling over time.

u Take breaks from electronic devices.

Though it is important to adhere—as much as possible—to rules and regulations of detoxing, becoming too rigid and extreme with your detox routines could be harmful to your health. Go easy on yourself. There’s no need for a minimalist fad diet or forensic fasting, though there are benefits of fasting, too.

Positive reinforcement and treating yourself can be helpful. But don’t overindulge in foods or beverages that set you back. There are healthier ways to substitute for what you’re craving, so you’re not taking two steps forward and two or more steps back.

Have a sweet tooth? Craving those tempting sugary desserts?

Don’t buckle, binging on a dozen doughnuts, or reaching for cake for breakfast. Instead, enjoy a small square of dark chocolate (with all those health benefits) or a carob powder coconut milk (or fav nut milk) smoothie for your chocolate fix. Ready to reach for a brewski or something harder? Pour yourself a glass of wine with a meal instead. Or, get creative and mix together a virgin mocktail drink.

u Take a daily detox bath (with equal portions of Epsom salts, baking soda, and essential oils).

u Try nature therapy – get fresh air, sunshine (vitamin D), and exercise with a walk outside. And get a good workout while gardening. u Take nap time—incorporate relaxation with prayer, meditation, and guided imagery into a restful routine. Lie down and take a break from an active day. Set your alarm for 30 minutes to an hour, so you don’t oversleep and can still sleep well at night u Eliminate chemicals, stimulants, additives, allergies, and anything toxic. u Clean and beautify (can DIY) with pure products. u Head to a spa or DIY at home (saunas and steam rooms can do wonders). u Get your levels tested and find out if you’re deficient in any vitamins you can supplement. u Get rid of sugary or chemically laden sodas and energy drinks and opt for H20, teas, and whole fruit juices.

Whether you’re 1, 10, or 100, detox to benefit your health. Make detoxing part of your routines and involve loved ones. Save on medical expenses and be happier with a healthier you!

People worldwide join together volunteering to clean up public spaces, educate, and advocate for a better environment.

Not all plastics are recyclable, and what is and is not acceptable can vary from city to city. Alex Schenker from “My Winston-Salem” put together a simple guide to recycling in Winston- Salem.

Covid-19 may have dashed the hopes of a 2020 season for the beloved WS Dash baseball team. It certainly did not stop them from being very involved in the community this past year! Below is a sampling of the many events they held. Make plans now to enjoy their 2021 season with their home game opener set for May 4th!

Ice Cream Giveaway I Scream, You Scream, Dash City Screams for Ice Cream! Bolt and the Dash delivered FREE ice cream to 12 Winston-Salem neighborhoods. Facebook was used to have fans comment what neighborhood should be selected, and the announcement of the contact-free Ice cream delivery from Bolt!

Character Cruise Thru The Winston-Salem Dash hosted a “Character Cruise-Thru” at Truist Stadium on Saturday, May 30th. This event allowed families to experience a fun activity from the safety of their own vehicle. Vehicles were guided through Truist Stadium’s parking lot parade-style, passing by characters along the tour.

Over 25 characters from Star Wars, Disney movies, Superhero movies and local mascots participated in the event.

Socially Distanced 5K The Winston-Salem Dash Socially Distanced 5K was hosted on Saturday, May 2nd and June 6th, 2020.

Participants were encouraged to complete their 5K anywhere and at any point during the day while keeping a 6-foot distance between themselves and other runners. Results and winners per age group were posted on the Dash social media pages. All participants received a ticket voucher to a future Dash game!

Play Catch on the Field The Play Catch on the Field Event included “throwing partners” who signed up for one-hour time slots. The event was FREE to the public.

Hot Dog Mondays Free Hot Dog Mondays! Attendees received FREE hotdogs at Truist Stadium from 4:30 p.m. to 6:00 p.m. on 6/29 (exclusive to essential workers), 7/6, 7/13 and 7/20.

There was a limit of 500 vehicles on each date.

Open House The Dash hosted an Open House on July 25th. This included the opportunity to play catch on the field, hit in the batting tunnel and to run the bases.

Mask Giveaway The Winston-Salem Dash held a free face mask giveaway. The Dash worked with Hanesbrands to produce the cloth mask with the new team logo.

Vow Renewal Couples celebrated this year by renewing their vows on home plate at Truist Stadium! Couples were allowed up to eight guests, for a 45-minute time slot on Saturday, August 8th.

The ceremony was officiated by the team mascot, BOLT, and Dash Vice President of Baseball Operations, Ryan Manuel, who is ordained. Couples had their photo taken and were given a complimentary Dash picture frame.

T-shirt Toss The Dash brought the Hanes T-Shirt Toss to FIVE neighborhoods to celebrate the start of school and remote learning! Each T-shirt included information from Wake Forest Baptist Health regarding the COVID-19 pandemic. Dash staff and Bolt tossed T-shirts from 4:30pm - 5:30pm Monday, August 17- Friday, August 21.

Skate Night Co-presented Skate Night with Lowes Foods at Truist Stadium on Friday, September 18. This event allowed guests the opportunity to roller skate around the concourse.

WSFCS Teacher Appreciation The Winston-Salem Dash provided Winston-Salem/Forsyth County Schools employees with free Hot Dogs on Thursday, September 17. Lowes Foods, Wake Forest Baptist Health and Truist partnered with the Dash on this community event.

Small Business Lunch Delivery Program The Dash selected 15 small businesses and delivered lunches with Bolt for their entire staff courtesy of Truist.

Monday Merchandise Giveaways The Dash offered a weekly giveaway each Monday. These items were given away at the Hanes Team store. The items given away range from seat cushions to baseball hats. These giveaways were sponsored by Truist and Lowes Foods.

Community Hero Meals The Winston-Salem Dash recognized local community heroes. Each of our heroes were nominated by our fans and community members.

As a small token of appreciation for their heroic efforts they received a socially distant visit from Bolt along with a free meal courtesy of Truist, Wake Forest Baptist Health, and Lowes Foods.

Disc Golf From November 19-22, Truist Stadium transformed into a 9-hole disc golf course. Each night included 10 great prizes, cash prizes for the top 20%, and a Gold Record Trophy for the best score.

Drive-Thru Santa The Winston-Salem Dash hosted a drive-thru event for three weekends in December where families were able to come to Truist Stadium to safely take pictures with Santa.

It’s been a while since I’ve shared any of my book reviews with my Forsyth Family friends, so that’s the focus of this month’s column…. I recommend any and all of these books. I hope you’ll read these and enjoy them as much as I did, and mostly—I hope they will challenge you as they’ve challenged me.

Groeschel, Craig. Dangerous Prayers.

I was terrified of this book. It’s a heavy topic— prayer. And then you add the word “Dangerous” to the title and it’s no joke. This book will jar your prayer life. It’s going to challenge you and make you take a long, hard look at the way you approach prayer. It’s a call to action kind of book and one that will challenge you to pray with more boldness and confidence than you can imagine.

Kendrick, Stephen and Alex. Defined.

In a world that tells us to “be ourselves” and “find ourselves,” the truth is—we’re already defined. While many look to self-help books to explain themselves to themselves, all the answers are in Scripture. Specifically, this book is a deepdive study in the book of Ephesians. The authors do a brilliant job of explaining how to find our identity in Christ.

Laurie, Greg. Jesus Revolution: How God Transformed an Unlikely Generation and How He Can Do It Again Today.

This book is part historical, part autobiographical.

And 100% about the power of the Holy Spirit. Our world needs revival in the worst way. By taking us on a nostalgic journey back to the Jesus Movement revival of the 60s and 70s, Pastor Greg shows how limitless the Holy Spirit is…. He reminds us of how much the Holy Spirit can do with a few willing hearts, even if they may seem to be ill-equipped and unqualified. For those who are praying for revival—this is a must read.

Lucado, Max. Jesus: The God Who Knows Your Name.

This book goes section by section into Jesus’ life and reminds the reader of who we are in the eyes of God. We have a Creator who is deeply invested in us and our lives. So much so, that He purposely experienced life with us so that He can relate to all the feelings and emotions we have. Jesus knows us and He wants us to know Him. This book invites us to do just that.

Millard, Bart. I Can Only Imagine.

I Can Only Imagine is an amazing story focused on Bart Millard, the lead singer for the Christian band, MercyMe! His story, and relationship with his father, is an incredible testimony to the grace and forgiveness of God! The writing tends to be so honest and so real. By the last page, you feel like Bart has been personally telling you his story. Best of all—he credits God with every miracle in his life.

A powerful testimony and great book!

Stewart, Don. The Rapture: The Blessed Hope of the Church.

For months, I looked for a book that would explain the various views of the “Rapture.” The author has done an incredible job of outlining the various points of view. Each chapter includes the belief and the basis of the belief…then, it outlines the Biblical problems and objections to said belief.

While I am still a believer in the “Pre-Tribulation Rapture,” this book has helped me understand other points of view.

TerKeurst, Lysa. Forgiving What You Can’t Forget.

In 2019, I heard Lysa was writing a book on forgiveness and I was especially excited, since that was my 2019 Word of the Year. Like every Lysabook, it’s a book filled with her personal testimony and honest truth. She is vulnerable and shares her own experience with forgiveness, while pointing us back to Scripture and practical applications of it to apply to our lives.

Wallace, J. Warner. Cold-Case Christianity: A Homicide Detective Investigates the Claims of the Gospels.

For a girl who loves real-life mysteries and “Forensic Files,” finding a faith-based book written by a cold-case homicide detective was a huge win.

And I absolutely loved it. The author has applied his experience in forensics to analyze the validity of the Gospels. I really don’t know how any skeptic could read this book and walk away with doubt. It’s a thorough review of every aspect and argument for or against Scripture. Detective Wallace has left no stone unturned, and he has made a rock-solid case for the claims of Christianity.

MINUTE for your Minister What Is Your Story?

BY PHIL LEWIS One of the techniques that pastors and counselors use with couples in conflict is to have them go back and tell their story. Their love story. How they met. Their first date.

Their first kiss. Where they got married.

This recalling of their story is meant to remind them of how it all started. To remember the moments and memories that led them to love and marriage. It can help stir up feelings that frustration and fighting have often caused to fade.

Revelation 2:4 reminds us not to leave our first love. The love we first felt when we realized that we were in need of a Savior, and that Christ was able to take us “just as I am” and make us new and clean with that joy of forgiveness and a new life. But after years of playing church and failing to live up to Christ’s example, we often need to go back and rekindle that first love.

As pastors, it’s important for us to use this powerful tool when we find ourselves going through the motions of ministry without the joy and peace that were once there. The story of the time and circumstances of God’s divine, clear calling on our life. The stories of past victories that we witnessed first-hand.

So, what is your story? Take time to remember—and then share—that story with someone else who might also need to remember.

Journeying with

Jesus

Glitch?

Several

years ago, my wife and I watched this obscure Netflix series, Glitch. It is set in modern-day Australia. It opens with a teenage boy riding his bike near a graveyard at night. Spooky, right? It gets worse.

He spots the impossible. He watches with fascination mixed with horror as the dead come back to life. They claw their way out of the ground. He calls the police and an officer shows up. He, too, is mystified. He, along with a doctor, get all the “ex-dead” on to a gurney and haul them back to a clinic in the neighboring small town. After they clean the former dead up by washing off the mud, the police officer makes a startling discovery. One of the dozen or so resurrected turns out to be his departed wife, who had died of cancer only a year before. He is over the moon with joy.

But there is a glitch (hence the title). He has already remarried, and his new wife was expecting a baby. Evidently, he wasn’t big into grieving. That is not all. He married his departed wife’s best friend. That reunion wasn’t so cheery.

It is best described as “awkward.” So as incredible as the police officer’s first wife returning from the dead might have been, it came at a price. In fact, it kind of created a mess.

For him and the other families who experienced the same.

Relationships had to be re-evaluated. Some marriages were ruined. Some lives were even cut short. Resurrection turned everything upside down.

Jesus coming back to life on that first Easter was, of course, wonderful and joyful, but make no mistake about it; it made

things messy. For all of Jesus’ followers, they had to make a choice. Stay put and play it safe? Or go to Galilee. Galilee is where Jesus’ ministry began. It would be in Galilee where they would have to go to meet Jesus again and receive their new mission to go tell the world about Jesus’ resurrection.

And that was exceedingly dangerous. So, yes, Jesus coming back from the dead was unbelievably joyful, but it also caused a huge glitch for those first Jesus followers. Their lives were about to be turned upside down and inside out. In fact, according to church tradition, all the original 12 disciples, once you removed Judas and subtracted John, were brutally executed.

If you are a Jesus follower, please join me in celebrating Easter this month. It was the most pivotal point in history, in my humble opinion. Glorious indeed. But don’t miss this detail. Don’t ignore the fact that believing in Jesus’ resurrection can create a glitch. It can cause life to get messy.

It can lead to division in families, friends, and even marriages.

Like the first disciples, our lives can very well be turned upside down and inside out, too. We should expect the glitches. Expect the occasional or even regular rejection or loneliness. Maybe worse. But here is the good news in the Good News. The One who was resurrected from the dead doesn’t leave us hanging. He walks with us as we walk with Him. Hear some of his final words: “I am with you always, till the very end of the age” (Matthew 28:20). Knowing that God is with us, we can have the courage and the power to overcome any glitch we face.

Cooking with Kids

It

all started when my daughter asked to help make breakfast a few years ago.

My husband cracked the eggs, and my daughter began moving the whisk in a circle. My son then walked into the kitchen and asked if he could make the pancakes.

I made the batter and he started stirring.

In fact, he stirred so hard that pancake batter flew onto the kitchen wall. I had to teach him how to stir slowly and teach my daughter the difference between stirring and whisking. They were ages six and four at the time. Later, the children learned how to crack eggs and measure ingredients. I still must watch for eggshells in the bowls, but they are progressing nicely. Now, they are helping with dinner, placing baking sheets into the oven, and understanding what spices go with what food dishes. To be honest, I’m not teaching the cooking techniques in order, but the point is that the kids are learning and enjoying cooking.

Learning to cook is different for children today than it was decades ago. There are kids’ cooking shows, kids’ cookbooks, and even cooking kits for children. Regardless of the method that is used, cooking is a valuable skill for children to learn.

They become educated on how food is prepared and where it comes from. The act of cooking builds their confidence, especially when they are learning to handle heavy pots and pans, and the difference

between simmering and boiling water. Cooking also makes them feel “older.” My eight-year-old is a great example of this. Cooking gives her more responsibility and freedom. It allows her to experiment (safely) and try new techniques. But the best part of children learning to cook is that they try new foods and ingredients because they are the ones putting them into dishes.

My children no longer object to new vegetables. They also know that there are a variety of spices like turmeric, rosemary, cayenne pepper, ginger, and allspice. Now, to be honest, they didn’t become adventurous spirits overnight. It took time and patience, and there are still some foods that they won’t try. However, we’re farther along than we were a few years ago.

If you’ve never tried to cook with your kids or you want to try it differently, consider the following tips: Let them lead: I never made my kids cook with me. Once they said, “I want to help,” I gave them a choice of what to help with.

Children choosing what they want to do puts them at ease and makes it easier for you to guide them.

Give it time: If it is the first time they want to help in the kitchen, don’t let them when you’re in a hurry. Everyone will be frustrated, and nothing will work well. Instead, let them help you cook when you have time to watch over and instruct them.

Don’t be discouraged if they stay for a short time: The first time my son helped me in the kitchen, he stayed for about six minutes. Then he was ready to play. The point is that children try to cook. That can be anything from stirring sauces to washing vegetables. Over time, a child will stay longer and help more.

Have fun: Let the flour get on your clothes. Everything does not have to be perfect. The children are learning and at the end, you have a meal. Have fun while you’re doing everything and take lots of pictures.

Out of the many skills that children learn, cooking is one of the best. As your children get older, allow them to try new recipes and experiment with their own meals. Who knows, you may have the next-best chef in your house!

Spring Has Sprung...

Simon and Garfunkel sang in one of their songs, “April, come she will.” As my article is being written with February still in the rear-view mirror, and a “Welcome to March” sign looming ahead, it is hard to imagine what April will bring. I recently came across a meme that amusingly sums up the seasons in North Carolina.

I have no idea whom to give credit for it, but I am including it for your enjoyment.

I am hoping that we are past Third Winter and are into, though I am not a fan, The Pollening. As wacky as the year has been, there is no real way of knowing. I mean, we start April being fooled.

A few days ago, I awoke to find that the temperature that day was going to be in the low 80s. I dressed accordingly and went out to find it actually was that warm. My grandson and I spent time in the yard enjoying the glorious day. Within an hour and a half, dark clouds swooped in and it was suddenly in the low 60s and still falling. Needless to say, outfit changes were made, and the heat was turned back on. It hasn’t been that warm since, but it made me look forward to the warmer months to come.

I am excited to spend time outside with my grands. We will go on beach walks, look for shells, build sand castles, go fishing off our dock, take boat rides, have picnics, swing on swings, maybe even get to the zoo and anything else that gets us outside in the sunshine and away from screens. My grands are anxious for there

to be days in a row without rain, wind and cold. Bikes, scooters, riding toys, along with other playthings that have been locked inside, emerge from the garage and house only to go right back in. Yes, I am so ready for spring.

This year, we will celebrate Easter on the fourth of April. Once again, unfortunately, it will be different this year. I will still hold an Easter egg hunt for the four grandkids that live closeby. We will still have a family luncheon, but this year will also include a celebration of our granddaughter, whose fifth birthday falls on Easter this year. Her party will be held the day before. The activities will all be held outdoors. A rainy day will result in a postponement, which is hard to explain to a five-year-old, so we will hope for one of those unusually warm and sunny, early April days.

I hope this spring finds everyone well. Also, that those who are eligible and want to get vaccinated have been able to do so. I look forward to spending more time with my out-of-town grands, sister and friends. I hope we will soon be able to get back to some semblance of normalcy. I recently came across this joke and wanted to share it with you in hopes that it would bring you a smile and giggle – a little sunshine if you will. “ A little girl was sitting next to her grandfather as he read her a bedtime story. From time to time, she would take her eyes off the book and reach up and touch his wrinkled cheek. She touched her own cheek after she touched his. After a little while of thinking she asked, ‘Grandpa, did God make you?’

He looked at her and said, ‘Yes, sweetheart, God made me a long time ago,’ She paused for a few seconds and then asked, ‘Grandpa, did God make me, too?’ He replied, ‘Yes, indeed pumpkin, God made you just a little while ago.’ Feeling their respective faces again, she whispered to him, ‘God’s getting better at it, isn’t he?’” – Unknown

A Look into the History of Three Well-Known Moravian Traditions

Bethabara was the first settlement founded by the Moravians after their trek from Bethlehem, Pennsylvania. This German-speaking Protestant group created the village with only 15 people and in the course of 20 years, over 75 buildings and homes were constructed. By 1766, Bethabara was bustling, populated with many people, and was beginning to overflow. The idea for the town of Salem was soon made into a reality.

Today, visitors can tour both Bethabara and Old Salem, along with other settlements in the area, to learn about the rich history and culture of the Moravians, as well as the main belief of the Protestant group: “In essentials, unity; in nonessentials, liberty, and in all things, love.” However, throughout the years, Moravian traditions have spilled into many homes and churches, including the Lovefeast, the Moravian star, and the music. While you may be familiar with these traditions, do you know how they were started?

LOVEFEAST Many associate the Lovefeast service with Christmas or Easter. Yet, this tradition is celebrated several times throughout the year. During a Lovefeast, spiritual hymns are sung, food and drink are consumed, and messages of hope and goodwill are spoken. This tradition started after the first gathering after Pentecost and is based on

the Agape feast. In 1727, the Lovefeast we know today originated. According to the article “The Moravian Church and Its Traditions” on the website MyBrillantStar, the service is “dedicated to Christian love.” It is a tradition founded on love and with the purpose of spreading the love of Christ to others through worship. In fact, the Lovefeast is actually mentioned in Jude 1:12, as a “common meal of the early church.”

THE MORAVIAN STAR During a quick drive through the streets of Winston-Salem during the holiday season, one can easily see illuminated Moravian stars on porches and other structures. These 25-point stars—with 8 square and seven triangular cone bases—were created by a Moravian Boys’ School teacher in Niesky, Germany and were used to help teach geometry. In 1880, Peter Verbeek took this lesson he learned as a student and began making the stars for his bookstore.

Later, his son founded the Herrnhut Star Factory. In Germany, the Moravian star is known as the Herrnhut Star. In early history, the Moravian star helped people center their lives on, and keep a focus on, the church. Since then, the star has appeared during the season of Christmas, Advent, and Epiphany worldwide, including in the West Indies, Greenland, Central America, and parts of Scandinavia. It is a common feature in Moravian nativities and Christmas villages in place of the Star of Bethlehem.

Fun fact: our city uses the star as our official Christmas street decoration and a 31-foot Moravian star can be found atop of the North Tower of Wake Forest Baptist Medical Center during the month of December.

This star is known to be one of the largest Moravian stars in the world.

MORAVIAN MUSIC The traditional songs and hymns we know from the Moravian church began in the United States during the early 1700s. Within the church, music was an essential part of religious life. Early Moravian clergy were also trained in music as much as they were in the liturgy. As they arrived in the United States, the clergy brought this training and numerous instruments with them. Orchestral and chamber music songs were joined by vocals and soloists for worship services, as hymn-singing is a key component of a Moravian service. Today, people can easily recognize Moravian music by the chorale music, brass instruments, and church bands played on holidays, weekly services, and on special occasions. The Moravian style of music is specific to the church and is one of the many things people love.

The Lovefeast, star, and music are three of the most well-known aspects of Moravianism and are closely related to our city. Yet, there are countless more traditions that belong to the Moravian church and add to the special uniqueness of this longstanding Protestant religion that our community holds dear.

Essential Uses of NATURAL Household Items

sensation feels like an itch, a calling to delve into the far corners of the house and clean! It may begin with your wardrobe—a transition from heavy, dark fabrics to lightweight cotton in pretty, pastel colors.

Piles of clothes arrive at the laundry room, via one laundry basket, maybe two, and are sorted. Is dirt and odor removal more important than cost? What if you could have both? Rather than continue to invest in expensive detergent, try combining Borax, washing soda, and laundry flakes.

For less than ¼ cup per load, each laundry cycle costs approximately three cents.

Effective cleaning does not require toxic, abrasive chemicals. For smelly and grimy clothing, consider adding ½ cup of baking soda and pour in white, distilled vinegar as a fabric softener. Saving money is simple if you return to natural ingredients!

BAKING SODA The yellow box of baking soda truly is a woman’s best friend. It’s the essential ingredient that whips up fluffy pancakes, causes dirt and grease to dissolve in water, and neutralizes odors from litter boxes to shoes.

And the 101 uses have room for even more surprises!

HOW TO USE: On a damp sponge,

lightly sprinkle baking soda to create a mildly abrasive scouring powder and natural deodorizer. Then, start scrubbing interior microwaves, ranges, fruits, and floors to deodorize and kill bacteria.

TIP: G ive your dogs a dry bath by combing baking soda through their fur.

WHITE DISTILLED VINEGAR Adding an acid, such as vinegar, to a base, like baking soda, creates a chemical reaction of bubbles and foam.

From cleaning the kitchen counter to carpet stains, vinegar and baking soda offer a power-punch to the best form of cleaning—natural!

HOW TO USE: Create a paste with baking soda and water; then apply to the grimy area, whether it’s bathroom grout and tile, pots and pans, a range, or a carpet stain.

Spritz with vinegar and start scrubbing!

Allow time to penetrate through the surface before wiping clean. Remember, baking soda absorbs grease, while vinegar penetrates through to lift hard stains. Fizz and bubble equal clean!

LEMON JUICE Ever wonder what to do with the remaining lemons in your refrigerator? It’s odd to think an acid contained in lemon juice will eliminate various stains; yet, it does! How sweet to have a cleansed area connect to a fragrance of freshness!

HOW TO USE: Cut a lemon in half; then squeeze the fresh juice directly onto a surface. You can use the lemon as a scrubber or a sponge, damp with hot water. Allow the liquid to soak through stubborn stains for up to 10 minutes.

Avoid using this method on porous stone countertops!

Sprinkle baking soda on difficult stains.

TIP: Use lemon juice and two tablespoons of baking soda to clean stained plastic containers. After scrubbing, soak for a few hours before rinsing with hot water. (An ideal method for spice- or tomato-based stains.)

TIP: Use a microwavable bowl and add water and one sliced lemon; microwave on high for three minutes.

Wait five minutes before using the lemon water to clean the interior and exterior of the appliance. Afterward, wipe down your oven.

SALT A one-pound box of salt costs less than a dollar. A food preservative and flavoring agent, it is a potent cleaning agent as well, perfect for eco-friendly households. Salt can refresh stained metal and glassware and clean fabrics, such as clothing and carpets.

HOW TO USE: Sprinkle the salt over grease stains, or mix it with vinegar to polish metal and glassware.

TIP: Add a cup of crushed ice, a tablespoon of water, and a few tablespoons of salt to a glass coffee pot. Swirl to engage the scouring effects of salt; then, rinse.

TIP: Need a bit more stain-removingpower? Combine vinegar with salt and stir. Dip a sponge into the liquid to clean and deodorize refrigerators or remove coffee stains.

TIP: Cutting boards often need deep cleaning. Use half a lemon and a sprinkle of salt to remove deep stains.

Baking soda, white vinegar, lemon juice, and salt make an extraordinary medium to effectively cleanse, sanitize, and leave the house smelling wonderful. Toss out all those expensive chemicals, and switch to an eco-friendly solution! You’ll be glad you did!

“Flora,”

a scientific term, describes the essence of plant life, especially flowers. The use of particular plants, whether it’s the petals, leaves, or roots, aids the progress of health and medicine. We usually don’t associate flora with bacteria; yet, it can describe the microorganisms that exist on or within the human body. Skin flora, defined as existing on the areas on the skin and mouth, and gut flora, found on the lungs, gut, vagina, and urinary tract, refer to bacteria, yeast, or other types of fungi. Research continues to explore the impact gut flora has on human health, especially when some individuals become vulnerable to disease. One solution is to learn more about probiotics.

What are Probiotics?

Stomach aches are rarely pleasant experiences. Gastrointestinal symptoms arrive in the form of bloating, flatulence, and constipation at an acute level. Treatment appears futile when science claims every human has roughly 300 trillion forms of bacteria living within the gut; yet, not all bacteria are harmful and cause their unhealthy levels to impact a balanced immune system. The body needs good bacteria to digest foods, which ultimately fight harmful bacteria and restore balance.

In the form of supplements, tablets can reduce the onset of a cold and prevent pathogens from expanding into an acute gastrointestinal illness.

TIP: Dietary supplements sold as probiotics are not tested or approved by the FDA. Most conditions are “strainspecific”; therefore, the manufacturer cannot claim the type of bacteria listed on the label will enhance immunity, ease IBS, IBD, and urinary tract infections.

Of the trillions of harmful bacteria, the body needs to consume foods high in prebiotics. Do you enjoy eating oats and bananas, onion-based meals, and various types of nuts? Well, you’re already promoting good gut health!

What other foods? Start thinking about meals that can offer servings of lentils, chickpeas, and beans, asparagus, garlic, and leeks! How does pasta with basil-yogurt sauce, peas, and zucchini sound? Do you need a dessert? Try making a yogurt cake with almonds and fruit. You can be part of a growing statistic that links foods containing prebiotic fiber to metabolic and digestive health!

Fermented Foods Diets have changed drastically in the past 50 years. Over 75% of the world’s food supply derives from a limited number of plants, just 12, and five animal species. One of the oldest forms of food preservation is fermentation.

Zymology converts carbohydrates to organic acids using yeasts or bacteria—microorganisms under conditions free of oxygen. If you eat sourdough bread, cheese, sauerkraut, pickled vegetables, and drink vinegar, you already maintain a healthy array of gut flora! As farm-fresh produce arrives in season, consider trying fermentation to boost great nutrition year-round. Almost any vegetable applies!

How Does it Work?

Vegetables already contain good bacteria called lactobacillus. Once the vegetables are either sliced or squeezed, the juice mingles with added salt to create a brine. In a contained system, the lactobacillus multiplies, digesting natural sugars and transforming them into lactic acid. It’s the tangy flavoring in most foods. Most fermented foods, like sauerkraut, require a three-to-fiveday span. With experience, people are feeling confident and experimenting with new flavors by adding herbs and spices. Rather than buy a pre-packaged jar of your fermented food, why not try to make it yourself?

The View from My Section – A Father’s Perspective The Orchid and the Dandelion, each Beautiful in its Own Way

Spring has arrived and flowers are in bloom. Two flowers, in particular, interest me for this story. First, the delicate orchid.

It has to be meticulously cared for to survive and thrive. If so, it blooms into one of the most magnificent flowers on the spectrum, sought after for its beauty and valued for its rare elegance. The second is the dandelion, a wildflower that seems to grow just about anywhere. No special care or treatment is needed and yet it thrives and multiplies by the thousands.

Though its beauty is measured on a different scale, in the appropriate setting, it can be quite majestic, covering the surface of a giant field or pasture in bright yellow.

On this occasion, however, these two flowers are used as metaphors to compare two different types of children. Thomas Boyce, a pediatrician and chief of the division of developmental medicine at the University of California, San Francisco, in his book, The Orchid and The Dandelion: Why Some Children Struggle and How All Can Thrive, uses these two terms to explain an interesting theory. He identifies two personality types in children that stand out. It’s based on his study that included 338 kindergarten children in the United States. They were ages 5 and 6, and their reactions were measured after they were subjected to mildly stressful tasks, such as interviews with strangers, small mental challenge exercises, and varying methods of correcting their mistakes. Their heart rates, cortisol (stress hormone) levels, among other things, were measured before and after to determine the effect. Also, they factored in the parents’ financial stress, marital relationship (good and bad), and parental styles, among other factors.

What they discovered were two very distinct types of response.

The first was referred to as orchid children. He characterizes them as “more sensitive to both good and bad environments, biologically reactive to their circumstances, and [who] find it difficult to cope with stress. They are often remarkable in talent and skill.” It’s interesting that not only are they impacted psychologically and emotionally, but physically as well, in how their bodies react to their environment and experiences.

He found they were more susceptible to severe respiratory disease, pneumonia, and asthma, among other conditions. In addition, rates of anxiety and depression were higher among this group. Much like the orchid flower, these children thrived in

positive, nurturing environments. Equally, they floundered more profoundly in non-supportive and threatening environments.

Their immune systems were overworked due to their inability to handle additional stress reactions more appropriately, leading to more exaggerated physical responses to illness. They were also more at risk later on to hypertension, high blood pressure, and cardiovascular conditions.

Conversely, in the second group, referred to as “dandelion children,” he found them to be “resilient, [to] constitute the majority of the children in the study, and like the dandelion, [able] to grow virtually anywhere.” Their ability to manage the same challenging conditions, situations, and events was much stronger and pronounced. He also found their biological responses were unaffected by the various stimuli, suggesting the longterm impact of negative environmental conditions on their physical health was less of an issue.

Of course, both groups thrived in positive conditions, however, the study indicated dandelion children were much less influenced in the long-term, both psychologically and physically, by adverse or negative events and environments.

A word of caution. I recommend not jumping to any rash conclusions without further investigation into your personal situation. For example, do not assume just because your child is a gifted athlete, musician, or mathematician, they are automatically in the orchid category. Just the same, if your child is more psychologically resilient, it doesn’t absolutely confirm they are a dandelion. There are numerous concurrent factors involved that in combination could “suggest” this theory, but it’s not a guarantee. It is, however, food for thought and provides valuable insight into two distinct characteristics of behavior and personality in children. This is information that could lead to changes in how we relate to each other and further our understanding of why things happen the way they do.

Parenting is a complex world to enter, and one of life’s biggest challenges. The more information we have and the more aware we are of it, the better our chances of providing a proper, stable, loving, caring, and growing environment for children to dwell in.

We all know… parenting is a life-long learning adventure.

Spring has finally sprung! Easter seems extra early this year. Feel free to make these treats as an Easter celebration, or throughout the season as spring-themed dishes. With the season overwhelmed with candy, this feature offers some healthier options with fruit, yogurt, and oatmeal as well. The bunny bread bowl can be used to serve the dip outlined here, or for serving soup!

BUNNY BREAD BOWL WITH VEGGIE DIP BREAD BOWL INGREDIENTS: SNOW Br ead, round loaf, unsliced (white, French, or sourdough) CREAM 2 chocolate chips 1 r ound pink candy, such as a gumball, jawbreaker, or M&M 1 large baked roll Parsley or lettuce for garnish 5 toothpicks BREAD BOWL DIRECTIONS: 1. Slice ¼ off the bottom of the smaller roll, leaving a back section to help it “perch” on the larger bread bowl as the bunny head. Set aside.

2. Cut off the top of the larger bread round in a “U” shape, leaving a perch for the bunny head roll. Slice two long slivers of the bread round top into bunny ears. Dig out the “U” in large pieces, saving some for the bunny tail in back.

3. Using a knife, poke a hole in the lower part of the smaller roll where you’d like the bunny “nose” and push the candy nose halfway into the bread. Use the knife to poke holes for the eyes and insert the pointy part of the chocolate chips in.

4. Using toothpicks, secure the perched roll onto the bread round and the bunny ears on top of the roll.

5. Roll a piece of the bread from inside the bread roll into a “bunny tail” and place it behind the bread round on the “head” side.

6. Place the parsley or lettuce around the bread bowl for garnish.

EASY CATALINA VEGGIE DIP INGREDIENTS: 2 (8 oz.) cream cheese, softened ½ cup Catalina salad dressing Sliced veggies of your choice for dipping: baby carrots, cucumbers, red peppers, yellow peppers.

BUNNY CINNAMON ROLLS INGREDIENTS: BAGEL 1SNOWMAN c an cinnamon rolls with icing (opt for the ones with strawberry icing if you can), or homemade cinnamon rolls Pink food coloring (optional) Pastel sprinkles Pastel M&Ms candies DIRECTIONS: 1. P reheat the oven according to package directions or the recipe. Remove and separate the canned cinnamon rolls and place on a prepared baking sheet.

2. U sing your hands, pull the outside of the cinnamon roll, and curve it into two bunny ears, pressing in between the ears to secure it to the round part of the cinnamon roll.

3. B ake according to the directions on the can or recipe. If necessary, halfway through the cooking time, remove them and reinforce the “bunny” shape using a spoon, since they’ll be hot. Return to the oven and finish baking.

4. Add a couple of drops of pink food coloring to the icing and stir until incorporated throughout. (optional) 5. When finished baking, drizzle the icing in a zigzag pattern while the bunny rolls are slightly warm and immediately top with sprinkles. Add two pastel M&Ms for eyes and one for a nose and serve!

NO-BAKE EASTER-EGG FRUIT TARTS INGREDIENTS: FROZEN BLUE 1 Banana, medium, sliced PARTY PUNCH ¾ cup Blueberries ¾ cup Grapes, green (or Kiwi) ¾ cup Strawberries, sliced 1 cup Almond Butter ¼ cup Honey 2 cups Oats, dry ¼ tsp Salt 2 tsp Vanilla Extract ¾ cup Greek Yogurt DIRECTIONS: 1. I n a microwave-safe bowl, add almond butter, honey, vanilla, and salt.

Microwave for 20 seconds, stirring until smooth.

2. P lace 1 cup of the oats in a blender and blend until finely chopped, resembling flour. Set aside.

3. Add the remaining oats to the almond butter mixture and stir. Slowly add in the oat flour while stirring until it is dough consistency. Note: If your brand of almond butter is wetter, it will require more flour.

4. Take a spoonful of the oatmeal mixture and form into a small “egg” shape. Place onto parchment paper or foil. Repeat until all the dough is used.

5. “Frost” the egg shapes with yogurt. Top with the fruit in rows to make colorful “Easter egg” designs. Enjoy!

DIRECTIONS: 1. Blend together and place in Bunny Bread Bowl.

2. Arrange the sliced veggies around the bunny bread bowl and serve!

one ever talks about anything positive that came from our shutdown. But for Anna Holbrook, the isolation opened up a new opportunity for her through baking. Anna has always enjoyed baking, but she was able to dive into new creative waters and, in the process, found a love for creating pretty, delicious, and unique cookie designs to help her customers celebrate every kind of milestone.

“I started the business in March 2020,” said Anna. “It started with some family and friends, and it’s grown from there. Business continues to grow! I’ve found baking cookies to be a great way to round out my full-time job at Wake Forest Baptist Health, where I work as a wellness coordinator. While I love my full-time job, baking cookies feeds my creative side and is both fun and rewarding.”

“Besides making my own,” continued Anna, “For most holidays, I’ve put together decorative DIY boxes for families to decorate cookies together. The kits include baked cookies and bagged icing—ready for some sweet family fun!”

For those who want to order custom cookies, Anna needs a minimum of two weeks’ notice. In addition to her custommade decorated cookies, Anna can provide other cookie varieties for your special event or party!

Anna has had a lot of fun coming up with creative cookies, including themes for bridal showers, baby showers, birthdays, and even a cookie charcuterie board. “I’ve had so much fun coming up with ideas and putting my own twist on the inspiration provided by others,” Anna continued. “It took a lot of practice to learn how to do this, but I’m really pleased with how things have come together.

Additionally, everything I do is scratch-made. I tried a lot of different cookie recipes before writing my own. I feel that I’ve landed on a cookie recipe that is delicious and lends itself to the edible artwork of the cookie designs.
