Just

one year ago, behaviors like social distancing, wearing a mask and sanitizing everything under the sun abruptly entered our world. Sheltering in place orders and the closing of so many businesses soon followed. Initial shock and disbelief in what was happening to life as we knew it was quickly followed by shortages of paper goods and disinfectants. Fear and panic gripped us as the media reported the grim news of daily infections, hospitalizations and reported deaths. Covid-19 was an unwelcome visitor and who could have ever known that a year later it would still be haunting us?

America and the world would adapt and creativity would flourish as new ways of living with this unwelcome visitor were discovered. We witnessed the best (and worst) in humanity at times. As vaccines become available to more and more people, we see a light at the end of the tunnel. I am grateful for the scientists who worked tirelessly to create the vaccine. I am grateful for the healthcare workers who cared for us and frontline workers who kept our pantries full and prepared food to sustain us. I am grateful for the teachers who are doing their best to engage our students. And yes, as crazy as it sounds, I am grateful for the lessons Covid has taught us. An appreciation for the blessings and freedoms we have, may we never take those for granted again!

And most of all, to remind us that life is ever precious. I hope that people will take these lessons and use them to be a little kinder, slow down a little more and be a little more present with those they love.

Our March cover features a well-known family owned company, Casual Furniture World. I met the Rowell family on a beautiful but very chilly February afternoon to photograph their cover. Kudos to them and especially the children for braving the elements to create the beautiful cover that you see.

Creating wonderful outdoor spaces in our homes have never been more prevalent than now. With spring just around the corner, be sure to stop by and see them to make your own outdoor oasis a reality!

March is the beginning of our three-month long Summer Camp Showcase. Be sure to check out this section to start planning an enriching and fun summer for your child. Stay tuned next month for additional camp advertisers to join us!

Retirement Savings Tips From Your 20s to Your 60s

planning is a lifelong endeavor, but people often seek out investment advice that doesn’t fit their current stage in life. When it comes to saving for retirement, most Americans invest and manage those savings for six decades or longer.

It’s important to consider how your resources and risk tolerance change as you move though different life stages. Saving for your retirement looks very different at age 30 compared to age 60. As financial advisors, we strive to help our clients develop retirement savings plans that are appropriate to the changing circumstances they face at every age. Here are some areas that we consider when giving age-appropriate retirement advice.

IDEAL ASSET ALLOCATION BY AGE In the past, investment experts advocated the “100 Rule,” which called for subtracting your age from 100 to determine how much of your assets should be invested in stocks. For example, this rule called for 25-year olds to hold 75% of assets in stocks or “riskier” investments and 25% in bonds, CDs, equities or other low-risk investments. Now this has been updated to the “110 or 120 Rule” because Americans are living longer, making it extremely important to generate enough money to last throughout retirement. While this rule is useful for general guidance, it’s important to look at your particular situation and develop a more nuanced investment mix that is more closely aligned with your retirement savings goals and risk comfort level.

IN YOUR 20S: BALANCE SAVING AND INVESTING Your earning ability is at its lowest in your 20s, but the power of compound interest makes this decade the best time to invest. Many professionals recommend that people in their 20s invest a majority of their retirement savings in stocks rather than bonds or savings accounts.

A 2016 investment analysis by NerdWallet found that a 25-year old with a $40,456 salary who invested 15% a year exclusively in the stock market would likely end up with as much as $3.3 million more than if they kept their money in savings accounts. Regardless of how you invest your retirement savings, you should strive to balance your approach with paying off outstanding debt (student loans, credit cards) and saving for an emergency fund.

Take full advantage of your employer’s contribution by investing 10 to 15% of your salary in your office retirement plan in your 30s. Investing in a home or rental property is a good idea, provided you will be able to keep the real estate for at least five years. When you compare long-term investment returns on stocks and bonds, stocks vastly outperform cash and bond investments over time. You have decades to potentially make up any temporary losses in the stock market, so invest as aggressively in equities as your risk comfort level allows.

IN YOUR 40S: MAXIMIZE YOUR RETIREMENT CONTRIBUTIONS

By the time you reach your 40s, Marzano you need to be saving as much

as possible for your retirement.

Now is the time to max out your retirement contributions by investing the full $18,000 allowed each year. Investing in a taxadvantaged Roth IRA in addition to your 401(k) or 403(b) will help boost your retirement savings. It’s the right time to start investing in some lower-risk bonds too, unless you have been neglecting your retirement savings plan. A financial advisor can help determine the ideal investment mix to work towards your savings goals while maintaining an acceptable risk level.

IN YOUR 50S AND 60S: START PREPARING FOR RETIREMENT

If you need to build emergency funds to meet unexpected medical expenses and other costs in retirement, mature investors are allowed to start making catch-up

contributions to tax-free savings accounts in the year they turn 50. In 2021, you can save up to $26,000 in a 401(k) and up to $7,000 in an IRA each year.

When you are in your last decades of saving for retirement, it is time to start rebalancing your portfolio.

Consider moving your funds into bonds and money markets.

A financial advisor can help you compile a comprehensive financial profile, assessing all your funding sources to figure out your ideal investment mix to provide income throughout your retirement.

Embracing Diversity through Children’s Books

of the many things I love about books is their ability to open doors and new worlds to readers.

Children and adults can go to Hogwarts, visit the Hundred Acre Woods, or travel 80 days around the world from just pieces of paper. In addition, books provide knowledge and teach about other cultures and people different from us throughout the world. These types of novels hold wonderful opportunities for others to learn about diversity and see life from another perspective. Whether it is seeing life through a different race, culture, family structure or lifestyle, children feel important when they are able to view themselves as characters in a book. Our world is changing and more people are starting to fully embrace each other’s uniqueness. However, one way to make sure this continues to happen in our younger generations is by introducing them to a diverse collection of books early on.

No matter their age, there is a book to help your child celebrate diversity. Looking for a place to start? Try reading selections from this suggested list.

Board Books for Babies and Toddlers • One Love by Cedella Marley - Based on the Bob Marley song, One Love tells the story of a community coming together and filling the world with love.

• Bringing in the New Year by Grace Lin - Bringing in the New Year introduces babies and toddlers to the Chinese New Year and the Lunar New Year.

• Baby Faces by Amy Pixton - In this cute board book, young children can see themselves through the different characters, their faces, and learn to understand the various moods we all experience.

Picture Books • I Love My Hair by Natasha Anastasia Tarpley - There is power and a value of importance when a child is able to see themselves in the characters of books, movies, and other people outside of their environment. I Love My Hair does just that and encourages self-acceptance for African American children. The book’s plot is full of lessons that show children they can be proud of their hair, culture, and heritage.

• Same, Same But Different by Jenny Sue Kostecki-Shaw - Elliot and Kailash are pen-pals and send letters back and forth from their homes in America and India. Through their correspondences, they discuss the similarities and

differences in their daily lives. Children will quickly see how exciting it can be to share commonalities with someone on the other side of the world.

• The Sneetches and Other Stories by Dr. Seuss -A classic story of love, diversity, and acceptance of others, The Sneetches and Other Stories takes readers through the ups and downs of the star-bellied Sneetches and their starless strangers, as they become friends.

Chapter Books and Middle Grade Novels • Meet Yasmin! by Saadia Faruqui -W hether it is celebrating her Pakistani-American traditions, eating naan, or referring to her father as Baba, there is nothing readers won’t love about Yasmin. Told in four short stories, author Saadia Faruqui envelops Yasmin’s PakistaniAmerican life with problem-solving challenges.

• Esperanza Rising by Pam Munoz Ryan -E speranza Rising has been around for several years and continues to inspire young readers. Esperanza and her mother are forced to flee from Mexico and start a new life as migrant farm workers in California. The pair face unique challenges that show them they are able to thrive and overcome anything life throws at them.

• Tight by Torrey Maldonado -S ixth grader Bryan is being pulled in all directions. He lives in the projects and is always told “to be tough.” His parents are telling him opposite advice on how to handle situations – his mom encouraging him to be quiet, while his dad tells him to toughen up. In reality, all Bryan wants to do is go with the flow. Learn what happens to Bryan in Torrey Maldonado’s Tight.

• The Rose that Grew from Concrete by Tupac Shakur - I nstead of a typical story, The Rose that Grew from Concrete is a collection of poems geared towards young children and teenagers, especially boys. Written as a teenager, Tupac’s poems inspire and challenge writers and musicians to be authentic, unique, and creative.

There are many more books that celebrate diversity and share valuable lessons to children of all ages. A simple acquaintance to a book with diverse characters at a young age will help make a difference and start to form a child’s beliefs on respect, acceptance, and loving each other.

Loving Others Where They Are

started as an inner-city children’s ministry has blossomed and been transformed into a thriving ministry meeting the needs of families throughout Winston-Salem by meeting people, and loving them, right where they are. Meet City Lights Ministry, founded in 2014 by Pastor Melanie Bell and her family.

“We started with VBS-style Bible lessons in inner-city neighborhoods,” said Melanie. “I was a youth pastor, and this was an outreach project we did with my youth group. But over time, as we built relationships with these families, we recognized additional needs for food and clothing. So, we began a mobile food pantry and clothes closet.”

“Our mobile services allowed us to go into the neighborhoods, making things easier for families who simply couldn’t work, balance childcare, and get to a food pantry in person. Transportation was a challenge, so we wanted to ease that burden by directly taking their needs to their neighborhoods. Many of our families are working part-time to support their children. With the limited hours of many food pantries, this was our way of being the light of Jesus in the city.”

Still, even after adding the mobile food pantry and clothes closet, Melanie recognized another need. “Many of the children we served didn’t have beds to sleep in. Originally, we looked for bed donations, and while we were grateful for the beds we received, we consistently maintained a waiting list of 150+ children who needed a bed. After a while, though, we thought—how hard can it be to build a bed?”

City Lights Ministry added a “build” workshop to our 10,000 square-foot warehouse and began building beds from 2 x 4s. Since 2018, they have been able to supply over 700 children with a bed to sleep on. “It’s been so rewarding,” said Melanie. “A good night’s sleep is important to everyone— and especially children! While we still have a waiting list, there are usually only about 20 names on the list at a time.”

“We still accept donated twin-sized beds,” said Melanie, “But the majority of our beds are made in-house. We deliver 15–20 beds per week, and of

course, we continue to have our mobile food pantry and clothes closet, too.”

Currently, City Lights Ministry serves 12 inner-city neighborhoods and continues to grow. “We are also very excited to offer Bright Start—an early-learning program for four-year-olds,” said Melanie. “Bright Start meets two times per week and is free. We meet on North Patterson Avenue, and we help get children ready for kindergarten.”

“Additionally,” Melanie continued, “we have a homeless ministry, after-school tutoring, and we have also launched a New Beginning program which is for recovering addicts. Those who are in recovery can work in our warehouse and help with our mobile services, and as part of their participation in our program, we offer them free substance-abuse counseling.”

Finally, City Lights is also offering a program called Mission 2:10, which is based on Ephesians 2:10 (“For we are God’s masterpiece. He has created us anew in Christ Jesus, so we can do the good things he planned for us long ago.”). Melanie shared, “This is a summer youth camp designed to train those who are ready to put their faith into action.”

does it take to fulfill the high expectational standards of the United States military war dog program?

Only specific breeds possess the intelligence and drive to engage in brave acts directed by their handler. Eighty-fivepercent of all military working dogs, MWD, come from countries that breed worldfamous canine lines. Before newborns open their eyes, puppies spend the first ten weeks with “Puppy Development Specialists” before departing for certified foster families. By month seven, German shepherds, Belgian Malinois, and retrievers say goodbye to puppyhood and begin training.

FACT: A dog has an olfactory sense 40 times stronger than a human. The Labrador, golden, and Chesapeake Bay retrievers make ideal canines for the task of detecting mines and bombs!

SELECTED FOR DOG SCHOOL Puppies are stubborn animals that often have bad days. They respond to feelings of stress and sometimes resort to the unforgivable act of biting a human. Fiftypercent of all puppies cross the fine line between aggression and excitability.

Some puppies that fail the program return to live with foster families or join new homes, while others enter an alternative training program with new handlers.

Earning the coveted title of MWD leads to an extensive eight-month program with the goal that certifies canines as mission ready.

FACT: Where do you choose to work?

Is it a location that’s quiet and without distraction? In training, canines need

exposure to a variety of environments to follow orders.

Imagine trying to concentrate in a bustling city or room without walls!

Once dogs become proficient in basic commands, such as “Sit!” “Stay!”

“Down!” and “Heel!” the next step is to follow orders, regardless of the location or circumstances.

THE OBEDIENCE COURSE The only way the mind and body can navigate small puzzles and challenges is to engage in physical and mental acuity tests. The military working dog is no exception. At Fort Belvoir, Virginia, a specialized course allows dog teams and their handlers to engage in obedience, search, and controlled aggressive training eight hours weekly. Across one week, teams conduct search operations from intricate, small rooms to large warehouses. In real-world exercises, teams must follow the protocol of search tactics and procedures to rescue an individual or find narcotics.

FACT: Every military working dog is a noncommissioned officer, NCO, and provided with one rank higher than his handler to ensure that any mistreatment of the K9 is classified as an assault of a higherranking officer.

ADOPTING A MILITARY DOG According to the United States Department of Defense, 2,700 working dogs are serving active-duty assignments.

Ninety percent all war-dogs remain with their handlers, while 10% go to police departments or are adopted by the military or civilians. One organization, the Warrior Dog Foundation, ensures K9s have a sanctuary to live out their days of retirement with a forever family!

Retirement usually occurs by years 10 to 12 due to physical or mental injury, age, or a handler’s retirement. Since 2013, the WDF has rehabilitated and re-homed over 170 K9s.

FACT: Not all agencies request retired military dogs go to a trained handler; most times, a K9 requires a happy, loving home!

At Pigtails & Crewcuts, Haircuts Are Just the Beginning!

a child is celebrating the milestone of their very first haircut or headed for a touch-up before school picture day, Pigtails & Crewcuts is there to provide both a haircut and a happy memory for parents and children alike.

Owner and Operator Angel Putnam first celebrated the opening of her Greensboro location of Pigtails & Crewcuts in 2017, and added her second location of the franchise in Winston-Salem in 2018. Since starting her familyowned business, she has found an abundance of joy in having her own three children grow up inside her salons, while creating a community that truly extends beyond each location’s four walls.

Often, parents put “taking their child for a haircut” right up there on the list with having a toddler try on shoes or getting a kid to sit still for a dentist visit— clearly not the most enjoyable of experiences for many. Filled with bright decor, a waiting train table, and custom chairs designed like fire trucks, police cars, and even airplanes, Pigtails & Crewcuts sees first-hand how children react differently to their salon experience from the moment they step inside.

Anxiety is quickly replaced with anticipation when little ones get to ride and play in their special new seat. Older kids even have the opportunity to play Xbox while their stylist snips away! Once their cut is complete and they are looking their best, each child gets to choose a special treat like a lollipop or animal cookie to take with them to enjoy, along with a small toy treasure.

When asked what makes her team so special, Angel declared, “They are a group of superheroes!” What better way to describe the welcoming faces behind a children’s salon? “Truly, they are everyday heroes that bring a smile to so many families.”

“We welcome the wiggles, giggles, and even tears and the fears. Each of our stylists has the love, the compassion, and the understanding to work with children of all ages, while still having the skills to give mom or dad a great haircut as well,” she noted. From cutting and styling to recommending the right hair-care products, the team of stylists genuinely love their jobs and work hard to make sure that even the littlest of their customers can see how important they really are to them.

There are special memories that come out of the salon’s normal everyday moments that feel like the mission of Pigtails & Crewcuts is really being lived out. Mrs. Hicksman, a very special grandmother, recently shared her experience taking her grandson, who has autism, ADHD and other sensory issues, for a haircut, and which previously had been a very large undertaking. After calling ahead with her concerns, Angel had her stylist Mrs. Toya open early so they could be the first and only customers. After making changes to eliminate some of the sensory-related triggers, such as turning off the music, dimming the lights, and even using their quietest trimmers, Mrs. Hicksman’s grandson received his haircut and for the first time, she verified, was able to leave with “happy tears and a great cut!” It’s a wonderful reminder that even something as simple as a haircut can make someone feel safe and loved.

In an effort to continue to help their customers, both new and returning, feel comfortable and safe during COVID-19, all services are currently by appointment only. The team has also separated and distanced all of their stylists’ stations six feet apart and added designated blue family squares to keep all customer families socially distanced. Additionally, Angel Putnam shared that they recently invested and installed the iWave in both salon locations, a one-of-a-kind, in-duct air filtration system to help combat Covid. “We felt that though this was a costly step, it was a necessary one to keep our families as safe as ever. The system helps combat Covid-19 based on viral titrations. It was determined that at 10 minutes, 84.2% of the virus was inactivated. At 15 minutes, 92.6% of the virus was inactivated, and at 30 minutes, 99.4% of the virus was inactivated,” she explained.

Creating a Butterfly Garden

families have backyard birdfeeders and enjoy watching the beautiful visitors that come to their property. Small but alluring, butterflies have gained a lot of attention over the past few years. The North Carolina Cooperative Extension has reported that our state is home to more than 175 species of butterflies, making it a perfect spot to create a garden and see what happens.

They say that a successful butterfly garden will need to provide host plants for the larvae, as well as nectar plants or other appropriate food sources for the adults.

It can help to look up photos of these butterflies so you can recognize them when they make their way into your backyard. It will take commitment, time, and dedication, for your area to blossom.

Know Your Population The North Carolina Government has documented some common types of butterflies found in our state. The state General Assembly even went as far as to designate the Eastern tiger swallowtail as the official state butterfly in 2012. You want to be on the lookout for the following:

• Nectar plants;

• Butterflies taste with their feet;

•F lowers with different sizes and depths, as some butterflies like small flowers while others like large;

• They see ultraviolet colors that are invisible to the human eye;

Make a Plan Consider what will be the best means of attracting butterflies.

You have many options: •N ative plants to the region also require the least maintenance and watering, since they have adapted to the area;

•R emember to put your garden in the sun, as most butterflies are only active when it is sunny.

Treat the Home with Care Plan ahead to make sure you can accommodate the butterflies’ needs that will soon be visiting you. Making a habitat can be a fun family project. The North Carolina Cooperative Extension has some suggestions, such as: •L eave brush piles or old foliage, so butterflies have shelter, especially from the wind; •H ave a puddle of mud or a sandy area for male butterflies to hang out; • Have some small pebbles and large flat rocks for butterflies to spend time on while getting some sunshine; • Fruit peels and rotten fruit are necessary; • Minimize use of pesticides as you do not want to unintentionally kill the precious butterflies; • Try not to release purchased butterflies even for special occasions, as they can spread disease to the native butterfly population.

Butterflies are known to bond with humans and crave the friendship. In Japan, the butterfly symbolizes transformation, prosperity, good luck,

and good health. Some cultures say that seeing a monarch butterfly means that you are on the right path to reaching your goals. Spiritually, many people view the butterfly for its joy and positivity. Often it can represent a life challenge, where someone comes out as a better person. You want to educate yourself about butterflies as you observe what is happening in your garden. There are so many facts that make butterflies unique, such as: • They cannot fly if they are cold; • A newly emerged butterfly cannot fly;

• Butterflies have four wings, not two, as most people think; • There is evidence that some butterflies demonstrate intelligence and reasoning skills; • Rain can be a threat to butterflies; • Butterflies eyes are called compound lenses because they can see many things in many different directions at the same time; • Adult butterflies tend to like red, yellow, orange, pink, and purple; • Butterflies actually range from 1/8 inch to 12 inches in size.

Get Acquainted and Learn by Example Look around at some professional setups. It can be fun to visit local butterfly gardens, or even check out what a friend or neighbor has done in their backyard. You will also notice certain flowering plants that butterflies like best. Sometimes it can come down to trial and error. You may try a plant that is not successful, and that is okay. The next plant you add might be a better fit for your habitat. Container plants, which are basically hanging baskets or window boxes, can be a great idea as well. Do not forget that you will want your garden to be in a place that you can easily observe from your window or deck, so you can take pictures of your guests and welcome them. Every family is different. You may have a stable and successful butterfly garden in a month, or it may take a year. You want to remain persistent and know that the benefits of having this special amenity in your backyard are well worth the work.

Pondering “What can I do?” leads to a proactive decision to invest time in the ultimate insurance policy – valuable life skills comprising security, shelter, food, water and medical care!

In any emergency from extreme weather to a personal disaster, you have the power to take charge of your fate by making plans and taking action!

When we consider basic home safety for high winds, fires, freezing temperatures, hail, flooding, and earthquakes, do you wonder if you are well prepared? In the great state of North Carolina, few earthquakes arrive in the Piedmont Triad; however, the ripple effect caused when they do can lead to fires. Once homeowners begin to prepare for one natural or manmade disaster, it leads to further protection when facing most other scenarios.

Declutter In most households with young children to preteens, piles of towels or belongings lie on staircases, while toys occupy living room floors. In situations of darkness or the need to move and act fast, it’s difficult to maneuver through a house with clutter. Make it a priority for family member to organize their belongings and clean up personal items.

Be Window Smart While exterior doors with large panels of glass are an attractive feature, find out their level of breakability.

Decorative glass films are available as a shatterproof overlay for extra protection! Despite the two-person effort peeling film and applying, flattening, and trimming, the result is well worth the time and minimal expense!

TIP: Storm shutters are an additional layer of protection for your windows, and are made with 5/8-inch plywood or thick plastic shields.

TIP: I nexpensive tools are available to remove dust and lint from refrigerator coils and your dryer vent to improve your power bill and save you from a potential fire.

TIP: P roper care and maintenance of your chimneys, woodstoves, and fireplaces will prevent unnecessary fires and carbon monoxide poisoning; therefore, hire a professional, certified chimney sweep company annually.

Outdoor Awareness Are lawn furniture and decorations made out of fire-resistant materials? Deter the threat of fire by replacing bark mulch with gravel, bark, or concrete features! Being aware of potential threats and making smart purchases will ensure your family remains safe!

Could it reach around your home? Consider investing in light-weight, non-kink options.

TIP: D etermine if emergency vehicles can find your address. Are numbers large and clear on mailboxes and porch posts?

As the days are becoming warmer, it’s time to transition to some lighter meals that are still satiating, nutrient-dense, and delicious. From the crunch of celery to the mild sweetness of grapes, the classic and comforting tastes of chicken salad are the perfect complement to ripe avocados.

While avocados are available in most grocery stores year round, they are most flavorful from January to March. During this time, the avocados have developed a higher oil content, which results in that buttery flavor and smooth texture that we’ve all grown to love.

Avocados are a rather intriguing fruit that is incredibly nutritious. Unlike most fruits that are high in carbohydrates, avocados are high in healthy fats that are essential to giving your body energy and supporting cell growth. Did you know that avocados contain more potassium than bananas?

Avocados can help lower cholesterol and Triglyceride levels, in addition to being loaded with fiber.

Chicken Salad Stuffed Avocados Servings: 6

INGREDIENTS: 2-3 ripe avocados 3 cu ps boneless & skinless chicken breasts, cooked and shredded (about 1¼ pounds) 1-2 cups seedless red grapes, quartered 3 celery stalks, finely diced 2 spring onions, thinly sliced 1 cup plain nonfat Greek yogurt 2 Tbsp. fresh parsley or cilantro, chopped 2 tsp. honey 1 tsp. kosher salt Three-fourths tsp. black pepper ½ cup almonds or walnuts, toasted and finely chopped (optional) INSTRUCTIONS: 1. I n a large bowl, mix together the shredded chicken, grapes, celery, spring onions, chopped herbs, and toasted nuts (optional).

2. I n a separate bowl, whisk together the yogurt, honey, salt, and black pepper. Pour the mixture onto the chicken, then toss until well combined.

If time allows, refrigerate for 30 minutes to overnight for best flavors.

3. S lice the ripe avocados in half and remove the pits. Stuff each avocado half with a generous amount of chicken salad (each serving size is 1 cup chicken salad).

4. L eftover chicken salad will last in the refrigerator for 3-4 days.

has named Casey Raymer as Director of Annual Giving.

Raymer comes to Kaleideum with more than 20 years of working in Winston-Salem nonprofits, most recently with ABC of NC, a local autism services provider.

Raymer, a graduate of the University of North Carolina at Chapel Hill, has been actively involved in the Winston-Salem community since her arrival in 1999. She is a graduate of HandsOn Northwest North Carolina’s Women’s Emerging Leaders Program and Leadership Winston-Salem’s Flagship Program, a past-member of the Junior League of Winston-Salem, and a committed participant on community boards and committees.

To Instill the LOVE of Books

Walking through the door to a story hour inspires a happy giggle and the running of little feet towards the individual holding an opened book! The love of reading is caught, not taught!

We, as parents, invest in collecting and sharing stories of beloved and new fictional characters from birth through adulthood.

Let’s take a look at a number of strategies to spark excitement about the life skill of reading!

Encourage Daily Reading: Do you recall the stories of your childhood? Beloved fictional friends arrived at an early age, later to be shared with daughters, sons, and grandchildren! Make it a habit routinely to read to your child! Ask your local librarian, teachers, and friends for recommendations!

Create a Book-Nook: Crawling toddlers will lie on the floor behind a chair and hold a selected book with hands and lap.

It’s a time of discovery to see captivating pictures and turn pages. Books can be second-hand, torn, or taped together. The condition is irrelevant, compared to the excitement of each page. As children grow older, expand the reading nook, perhaps into a tent or corner of a playroom. Permit the imagination to follow familiar and new fictional friends along intriguing roads of decision!

Promote Self-Reading: Many Dr. Seuss books lend themselves to a parent pointing to, and a child accepting, the cues and reading aloud. Go Dog Go is a prime example. Particular books, emphasized by a few words and descriptive illustrations, allow the child to feel confident in reading each page successfully! Even wordless picture books allow you to ask: • What is happening so far?

(Comprehension)

• What makes you believe it? (Inferring) • What do you think will happen next?

(Predicting) Teach Games Through Books: Preschool children will need to identify

letters in sight words in the text; therefore, talk about titles and words in a story. Ask your child, “Do you see the letter ‘A’ in the first word? Okay, point to it!” Your child will soon not go anywhere without a book in hand!

Introduce High-Interest Series: By the age of five, boys and girls will thoroughly enjoy The Mercy Watson series by Kate DiCamillo. Expect your child to read the book independently after one year. This particular series introduces the setting, character development, the problem, and the solution, which will help introduce sequencing events and problem solving. By age six, introduce chapter books, such as The Magic Treehouse and Stink series.

Jim Trelease, children’s author, writes, “Reading the same book multiple times can help children develop language skills and improve reading comprehension. If you tire from reading the same book, try reading it in a different voice.”

Audiobooks for Kids: Parents spend a lot of time driving kids to and from destinations.

Why not utilize that time with a great book?

Remember, children should not go two years above the intended age level. Online sites allow you to buy or borrow books. Contact the librarian at your local library to establish an online account. Additionally, utilize the parenting website “Common Sense Media” to assess book titles and determine if appropriate for your child. In all children’s media sources, including movies and games, parents and children post helpful reviews!

Never Stop Reading Together: By the fourth and fifth grade, boys and girls will want to explore more challenging themes and worlds. From The Chronicles of Narnia to The Gryphon Chronicles, Percy Jackson, and The Five Kingdoms series, children can delve into great stories by sharing reading responsibilities with you, or listening to the audiobooks. Search for sensitive topics or important themes that can help you discuss the value of friendships, feelings of infatuation, or the handling of bullies and other problems. Influential series, such as A Tale of Magic by Chris Colfer and The Wizards of Once by Cressida Cowell, will transform your child’s understanding of truth, friendship, and acceptance of self.

Vocabulary: “Onomatopoeia” is an entertaining word to say and apply in context. Children love to think of words that use the sound they describe, such as “oops” and “hum.” Each page of the book below has multiple ways to introduce the language, from defining a word to talking about its origins. Seven-to-nine-year-olds would love journeying with Milo to the castles of words and numbers in Norton Juster’s The Phantom Tollbooth!

One of the features of the pandemic is that some of the things society has been flirting with have become quickly adopted in several months instead of years or decades. For example, services like telehealth, workfrom-home, streaming, and grocery delivery, saw adoption grow in 2020.

But colleges are looking at rapid changes that have led to aggressive debates – and likely permanent changes.

Standardized tests: The SAT and ACT were high school traditions. Before the pandemic, some colleges were not requiring the tests and others were thinking about eliminating test requirements in the admissions process. But during the pandemic, most testing stopped and many schools stopped requiring the tests, according to College Life Today. Once the pandemic is over, it’s likely that many more schools will not require SAT or ACT scores as a part of the admissions process.

Currently, we’re in the midst of the 2021 spring semester. Many schools are holding only virtual classes, and some schools are doing a combination of virtual and in-person classes with aggressive testing and contact tracing.

Online classes: A number of schools had been aggressively pursuing online classes. During the pandemic, every school had to adapt to a Zoom environment. On January 26, U.S. News & World Report released its 2021 Best Online Program rankings. North Carolina has some of the best online programs in the country, with local schools including North Carolina A&T University, Winston-Salem State University, and the University of North Carolina at Greensboro earning high marks for online programs.

What is the outlook for the fall 2021 semester? While predictions about the 2021 fall semester should be taken with a boulder-sized grain of salt, a number of areas were impacting colleges and universities before the pandemic. They included:

Tuition: Many students and parents are saying that an online education should cost less than a traditional, in-person education. Some schools have decreased their tuition costs by 10-20%. Where the tuition discussions land will be worth watching.

The Outlook for Fall College Classes

• Student debt at $1.6 trillion, with the average debt at $37,500.

Graduates with this much debt hinder economic growth because they are unable to buy homes and participate fully in the economy, according to Investopedia.

High-speed internet: Low-income students and students living in rural areas have a difficult or impossible time accessing high-speed internet.

While these discussions have been going on for years, there is now heightened urgency to bring high-speed internet to the entire nation.

• Tuition and fees have increased 285% since the 1970s, reports Forbes Magazine. Many elite schools top $70,000 a year; and many state schools cost more than $25,000 a year for tuition, fees, room and board.

Program inflation: Many schools aggressively added majors, hoping to attract more students. But for many schools enrollment has not followed program creation – leading higher costs. Many schools are now making cuts to their majors.

• Experts were predicting a 15% decline in enrollment by 2029 because of the declining birthrate, leading to lower tuition income and strained resources at colleges, according to the College and University Professional Association for Human Resources.

Officials with The National Research Center for College and University Admissions, say that most four-year schools did fine last fall and had modest enrollment gains or small declines. And, they report, fall 2021 may see pent up demand have a positive impact on traditional-aged undergraduate enrollment.

The best advice for parents and students: Think hard about what you want from a college education and look closely at those schools that will meet your needs in terms of curriculum and finances – today and in the future.

Here’s to

Strong Women

May We Know Them, May We Be Them, and May We Raise Them

Whether

it is our mothers, grandmothers, sisters, or aunts, we all have strong women who have influenced us in our lives.

These women have taught us valuable lessons, given us memorable advice, and have guided us through tough times. I know I wouldn’t be the person I am today without the strong guidance and influence from my mom and grandmother. Often times, we can also be motivated by historical women. March is known as “Women’s History Month,” a time to celebrate these powerful inspirational women and pass on their wisdom to the next generations. Let’s start by taking a look at some women in history who have impacted others and the lessons we can pass on.

MAYA ANGELOU: A poet, singer, writer, and civil rights activist, Maya Angelou stood up against racial prejudices and discrimination. In her works, including I Know Why the Caged Bird Sings, she wove her life experiences, tackled hard subjects and taught how to be a strong person to many people. In addition, this book made history as being the

first nonfiction best-seller by an AfricanAmerican woman and helped show others how to use literature to overcome racism and traumatic events.

won two Nobel Prizes, in chemistry and physics. Marie Curie still holds the title of the only person to receive two Nobel Peace Prizes in two different sciences.

MALALA YOUSAFZAI: Growing up, Malala was educated in an all-girls school in her village in Pakistan. This experience inspired her to speak out about women’s rights and a woman’s right to education.

However, her voices made her a target for the Taliban. At the age of 15, a gunman shot her in the head, but thankfully, she survived and continues to tell her story throughout the world. Two years later, in 2014, Malala won the Nobel Peace Prize, making her the youngest recipient ever.

She has been quoted as saying, “I tell my story not because it is unique, but because it is the story of many girls.”

Knowing, being, and raising strong women can have a different meaning to everyone, based on their life, experiences, and values, and that is okay.

First, determine what being a strong woman looks like for you. Think about how you want to mentor your daughters or other young girls in your life. Then, model that behavior. Don’t be afraid to stand up for what you believe in and go after your goals, big or small. Other ways to be a strong woman include making sure you take care of yourself, physically, mentally, and emotionally, as well as facing your fears while still realizing mistakes are a part of growing.

Focus on the positives about yourself, those around you, and your life, have a sense of humor, and understand that you are more important than your flaws and appearance. The future looks brighter for women, and one thing is for sure, no matter how you look at it, all women are strong women in one way or another.

MARIE CURIE: In order to raise strong women, it is imperative that girls see women who have succeeded in their passions and interests. Marie Curie changed the history of science with her discovery of radium and polonium, and development of a portable X-ray machine in a male-dominated field. She also

My Favorite Pen Pal

If

I had a nickel for every time I’ve been asked, “How did you find out you were adopted?” I would be a rich woman. There’s a widely held assumption that adopted children discover the buried truth about their familial history in a massive, emotionally-charged moment. My answer is surprising to some, but it shouldn’t be.

My adoption is part of who I am. It always has been. I have always known.

I was born when most adoptions were closed and details sealed from both parties.

I’m grateful for the commitment my parents and birth mother made to keep communication channels open, agreeing that it was in my best interest. At home, we talked about my adoption, birth mother, and the foster parents who cared for me immediately after I was born. We faithfully attended the annual Family Services picnic for adoptive families. My parents celebrated my adoption anniversary each year, telling me stories of the 12 years they waited for a baby. My mom and birth mother exchanged letters and, when I learned to write, I began penning my own.

Cheryl. I remember the day I saw her name for the first time. She was my favorite pen pal, and I brimmed with excitement each time Rebecca Nagaishi called from Family Services to tell us there was a new letter to pick up. We never shared identifying details, like last names, but knowing her first name was enough. Any time I saw the name Cheryl written somewhere—on a business card, at the dry cleaners, in a magazine—I’d secretly wonder if it was my Cheryl. Once, I saw “Cheryl” on a staff directory, and it was my Cheryl. I just didn’t know it at the time.

I was sixteen and interning at US Airways. On the first day, my supervisor introduced me to a few of the office employees before dropping me into a cubicle. I happily settled into my new digs, noticing a sheet of departmental contacts tacked to the cubicle wall. As had become routine, I quickly scanned the list for a Cheryl. When I spotted her name, I chuckled to myself. I saw many Cheryls over the years; none were mine. Had I peered around my cubicle wall to ask my neighbor for directions to the restroom or to borrow a pen, we would have come face-to-face.

The rest of my internship was uneventful, though I did change locations to work in a new department. I never met my cubicle neighbor that first day, but she knew me. She read the office memo about the intern.

She heard my voice. She knew this Hannah was her Hannah. Unbeknownst to me, quiet conversations were held. Urgent phone calls placed.

Arrangements made.

Months later, the story unfolded. Cheryl, my parents, and Rebecca had skillfully navigated an unprecedented, fated situation that day. We wanted to meet each

other, but not as a chance encounter among cubicles. The timing had to be right. A year later, we planned to meet at Family Services.

I waited nervously in Rebecca’s office while my parents stepped into the conference room. Their relationship with Cheryl had begun before mine did; it was only fitting they’d meet first. Before long, the office door opened. “Are you ready?”

Meeting Cheryl felt like seeing an old friend for the first time in a long while. Timid at first, our conversation grew more confident and comfortable as the minutes passed. I told her I had been accepted to Appalachian State University and was surprised to learn that she had once been a Mountaineer herself. We shared our mutual love of theater, and I learned more about her family and my half-siblings. I shared stories about my little brother, who was adopted through Family Services six years after me. When the time came to depart, we returned to our homes—only 10 miles apart.

Much has changed over the years. My mom sends me a text message on my adoption anniversary each year, but there are no annual picnics to attend. Facebook messages have replaced handwritten letters to Cheryl. Rebecca, a steadfast source of support for my family, still works at Family Services. The adoption program, however, has closed. Now, those program resources can be re-allocated to support the most critical and immediate needs of our community.

Though my story has taken many turns over the years, the foundation remains the same. I am a child of adoption, and my adoption has been acknowledged and celebrated at every stage of my life. I’m grateful to know Cheryl and to have been raised by incredibly supportive parents. I do not take this for granted, as I know that not all adopted children have the same experience. And I’m grateful to Family Services for navigating the waters of adoption for so many families. Their care and compassion have made all the difference in my life, and in the lives of so many others.

Summer camp is a wonderful, memorable, and exciting opportunity for your child. It’s a chance to experience new things, make new friends, and learn new skills.

Camping for the First Time?

Here’s Where to Start

the five-star resort for a tent and a sleeping bag this spring and summer? If you’re new to the camping world, here are some helpful tips to get you started.

Where to Camp If it’s your first camping trip, it’s important to know exactly what you’re getting yourself into—ahead of time. Are you the type of camper who wants to “rough it” in the woods with a more primitive campsite? Or would you rather have a warm shower every night and plenty of running water? Before setting up camp, it’s a good idea to research the amenities at certain campgrounds to find one that suits your needs. If you have small children, it’s much easier to choose a campground with full bathhouses and family-friendly activities, such as hiking trails, rivers, or playgrounds. If you’re a lowmaintenance camper, an isolated campsite with an outhouse may be all you need to survive in the wild.

When you’re camping with children, accidents and injuries are unavoidable with so many outdoor activities. Scope out a campground within a short distance to a hospital, pharmacy, or a McDonald’s (a Happy Meal always perked me up as a cranky toddler). Since more primitive campsites can be isolated, a campground closer to town is convenient for better cell phone reception in case of an emergency or the compulsive need to check your Instagram account.

What to Pack Unless you’re traveling to your campsite of choice by plane, when it comes to packing for a camping trip, pack more than you think you will need. Be sure to bring clothes that you aren’t worried about ruining with dirt and campfire smoke, and bring plenty of socks and extra shoes for unexpected rainstorms or muddy conditions. Flashlights and headlamps come in handy for midnight trips to the bathroom, but be sure to pack extra batteries just in case. Many campgrounds have certain requirements for firewood types used on the property to control the potential spread of insects or diseases that could harm the forest nearby.

Buy your firewood from the campground and research local fire bans ahead of time.

Insect repellant and citronella candles will be your best friend to ward off mosquitoes, especially if you’re camping near a beach. Additionally, depending on the terrain, some campsites may be lacking trees for shade, which can make for a toasty summer day in July. Consider investing in a canopy tent or an awning for a shady place to relax. It’s also an excellent idea to practice popping your tent in your backyard before leaving for camp to ensure that the tent is in perfect condition, with all of its stakes and poles included. Since few campers are fortunate enough to avoid dealing with rain during their trip, waterproof your tent using water repellents, such as Scotchgard, to seal the seams, along with placing tarps underneath and above your tent to prevent excess rainwater from gathering inside.

Campground Etiquette Depending on the nature of your campground and how populated or close to other campers your outdoor living quarters may be, noise and privacy may be an issue. Although you’re spending time outside, it is still considerate to use your “inside voice” early in the morning or later in the evening. Pay attention to any quiet-hour policies the campground may have in place, and be sure to pack activities, such as coloring books and board games, to keep small children occupied. If you’re camping with animals, it’s important to remember that not all campers are as comfortable with your Great Dane as you are. Keep all pets on a leash to keep them from wandering into other campsites.

Before zipping yourself into your sleeping bag for the night, doublecheck your fire pit to ensure that the fire is completely out—you don’t want to be the cause of a devastating forest fire. Additionally, to avoid attracting wildlife, such as bears and raccoons, never leave any food items sitting out overnight. At the end of your trip, although you may be tempted to stay longer, always leave your campsite cleaner than you found it for the next lucky campers to enjoy.

Dutch Ovens and Camp fires

Throughout

the year, men and women, boys and girls anticipate the opportunity to sit in foldable chairs surrounded by a brilliant starry sky, a blazing campfire, and good conversation. But as the center attraction to most gatherings, the food is what encourages individuals to accept an invitation to flavorful “good eats.” Campfire food is much more than the tin-can-meal movie-goers often witness in Western films. In fact, it’s the opposite. In bringing a multitude of supplies, from aluminum foil and several Dutch ovens to a percolator, the wellprepared campers can easily make a meal and dessert worthy of the highest accolade, Michelin stars. Whether you decide to start now or wait until summer, consider adding a bit of pizzazz to a Tuesday or Friday night. A campfire meal may become a weekly anticipated family event!

15-oz. navy beans, drained and rinsed; one can of 10-oz. drained diced tomatoes; one can of corn bits; and one Tbsp. of Mexican spice blend (or more to your taste). Scoop out equal parts of the mixture into each foil square; then fold to ensure it will not leak or escape steam. Place on the grate of your campfire for up to 25 minutes, turning packets carefully to cook the contents evenly. Sprinkle with cheese and green onion before serving.

ALUMINUM FOIL

Although greater in weight, the Dutch oven is very simple to clean, especially if the kettle is still warm. Try making a breakfast soufflé, a low-country boil, lasagna, or a finger-licking cobbler. (It may be wise to bring several Dutch ovens to your gathering.)

Easy to transport and clean up with the snap of a finger, aluminum foil appears as a secret weapon in cooking. For the main meal, create a bowl or square with tall sides, approximately 18 inches by 12, with “heavy duty” aluminum foil. In the center, you will have a bowl to cook and eat in, once it has been removed from the fire (and cooled.) Consider making individual pockets for each member of your group.

KEY SUGGESTIONS: • First, coat the foil with cooking spray; then, place the ingredients that require more time to cook, such as meat and potatoes, on the bottom. And always include vegetables to prevent the meat from drying out.

• If your “bowl” ingredients are heavy, you may want to use two sheets of aluminum foil.

• Be careful when using olive oil. It may burn you or the meal; therefore, drizzle lightly.

• The bowls must be sealed. If steam escapes, the contents will burn or dry before they have a chance to cook.

• Place your meals on the coals, not necessarily directly in the flames of the fire.

TEX-MEX CHICKEN: In a Ziploc bag, combine four boneless, skinless chicken breasts; one can of

TIPS TO COOKING: • If the ground is cold or wet, place a fireproof barrier between the ground and your coals. (An old cookie sheet works great!)

• The ashes will reduce your heat; therefore, be aware of the moment to start adding more charcoal. (Weather conditions also will affect how long your charcoal lasts. One briquette equals 10 degrees of heat.)

• Keep your Dutch oven off the ground and consider hanging the kettle for convenience.

PEACH AND BERRY COBBLER: Spray the Dutch oven first with cooking spray before adding two 16-ounce cans of sliced peaches (do not drain), one pint of fresh blueberries, a halfcup of cake mix, and 1/3 cup of sugar.

Stir evenly. Afterward, sprinkle ground cinnamon on top of the cobbler. Allow to cook for 30 to 45 minutes. The top should be golden brown and crusty.

Raising RESILIENT Children

The

first time you hold your sweet, fragile, innocent child is a life-changing moment.

The desire to love, provide, and protect comes swiftly, and an unspoken bond is created. We safety-proof the house to keep our babies and toddlers safe, and continue trying to safety-proof their lives to prevent physical and emotional pain.

The desire to shield our children from the unpleasantness of life can be taken to the extreme, and in 1990, child development researchers Foster Cline and Jim Fay developed the term “helicopter parenting,” and defined it as “Parents who hover over and then rescue their children whenever trouble arises.” Fast forward to 2021 and Cline and Fay have updated their book and the term “helicopter parent,” stating, “We have come to call them the ‘jetpowered, turbo-attack mode’ of helicopter parents. These parents are obsessed with a desire to create a perfect world for their kids...one in which they never have to face struggle, inconvenience, discomfort, or disappointment.” One could read this and argue that, of course, they want to create a perfect world for their kids and prevent them from pain and suffering, because that is what a loving parent does.

However well-intentioned, these efforts are more and more research that points to the fact we may be doing more harm than good, because while there are few certainties in life, one absolute is that everyone experiences failure at some point. How we deal with failure contributes to our capacity for happiness and success. The Center on the Developing Child at Harvard University calls the ability to fail well “resilience”— stating that the capacity to deal with obstacles is crucial to raising healthy, productive adults.

In fact, The Center on the Developing Child at Harvard University has pinpointed a few key elements that support the development of resilient children. They say, “It is the interaction between biology and environment that builds a child’s ability to cope with adversity and overcome threats to healthy development” [emphasis mine]. We may not control biology, but we play a large role in creating an environment our children can thrive in.

The Center on the Developing child lists the following as vital pieces to creating an environment that fosters resiliency.

1. Facilitating supportive adult-child relationships. The adult in the relationship can protect the child from toxic stress while helping him or her learn to cope with developmentally appropriate stressors. Researchers from The Center on the Developing Child say, “Age-appropriate, health-promoting activities can significantly improve the odds that an individual will recover from stress-inducing experiences.

For example, regular physical exercise, stressreduction practices, and programs that actively build executive function and self-regulation skills can improve the abilities of children and adults to cope with, adapt to, and even prevent adversity in their lives. Adults who strengthen these skills in themselves can better model healthy behaviors for their children, thereby improving the resilience of the next generation.”

2. Building a sense of self-efficacy and perceived control. The Journal of Psychology Integrations defines perceived control as “an individual’s belief about his or her own capability of exerting influence on internal states and behaviors, as well as one’s external environment.” Let your child be a part of assigning/creating a chore chart or creating their daily schedule that fits in homework, physical activity, and family time. Check in with your child on their progress with their plan. Evaluate what worked and did not work. Identify natural consequences that arise and help your child create a new plan of action to try the next week.

3. Provide opportunities to strengthen adaptive skills and self-regulatory capacities. Adaptive skills empower children to independently perform activities of daily living as well as develop a sense of responsibility to their community. Brandy Wells, LSW, explains self-regulation as “The process that your child’s brain goes through that gives them the ability to control their behaviors and emotions in response to a situation.” It’s having the skill to calm yourself down when you get upset, adjust to a change in environment or expectations, and handle frustration without outbursts. Familiarize yourself with age-appropriate activities of daily living, community service, and self-

a Practical and Satisfying Skill

Through

direct contact with water, a bar of soap moves around the surface of your skin, dissolving dirt and layers of oil while lifting pathogens. While the mind knows the act of handwashing leads to proper health, there is also a distinct joy in handling the small weight. You may prefer oval, block, or square bars to manipulate, or smooth out the shape in every washing. Special occasions call for a texture of sea salt, or the appearance of lavender flowers or swirls of color.

Such pleasure cannot be compared to that of a liquid dispenser. Also, you may not find the gift of a plastic bottle as enjoyable as individually wrapped, homemade bars. Do you engage in taking a quick sniff before choosing a bar? The act is instinctual! Perhaps you wonder if soapmaking is difficult. I can tell you, with cold and hot processes available, safety is the first priority in every aspect of the process from start to finish, especially with the guidance from an introductory book. It’s vital to learn about the qualities of bases before purchasing a kit of supplies!

Ready to begin?

What is a Soap Base?

In making a classic, hard soap, the chemical formula comprises distilled water, alkali, glycerin (a substance that nourishes and moisturizes the skin), surface-active substances (which create a lather and bubbles), and additives, such as essential oil or dyes. The base will not contain any coloring, and most arrive in transparent or white blocks, while oatmeal appears a brownish-white, and charcoal is just as you would expect!

Value of Soap Bases After a few tries, you’ll feel like a potions’ master concocting a useful everyday item.

Here’s some vital information about a variety of bases: •A LOE VERA: By adding an anti-aging property, aloe vera will aid in soothing redness and other skin conditions. The base allows fragrances to become more potent when added.

•G LYCERIN: Derived from plant-based oils, it also occurs naturally in fermented goods, such as bread, beer, and wine.

Recipes will call for sodium hydroxide, also known as glycerin, as well as lye. They both provide a component of fats and oils, effectively balancing their moisture levels.

Adding sodium hydroxide will balance skin tone and texture, reducing fine lines and surface blemishes.

•G OAT’S MILK: A gentle cleanser high in lactic acid, which helps exfoliate and moisturize the skin.

•O ATMEAL: Perfect for toning and nourishing the skin. (Add an oatmeal base to glycerin to create the near-ideal bar for facial cleansing.)

Other Ingredients: Particular foods aid in our health. The same applies to milk and oils in a soap recipe. Coconut oil, for instance, contains antimicrobial properties to help kill bacteria and reduce inflammation. It is an ideal additive in soapmaking.

•C ASTILE SOAP, LIQUID: As a natural soap made from saponified oils with hydrating properties, it acts to remove dirt and germs; a balance offering gentleness and a powerful cleanser.

•C ASTOR OIL: As a unique, fatty acid, the oil offers a moisturizing quality in a creamy lather.

• COCONUT MILK: The natural fatty acid helps treat dry, irritated skin while preventing wrinkles, sagging skin, and age spots. The milk is rich in Vitamins B, C, and E and minerals.

• HONEY: Raw, unfiltered honey is a natural exfoliator. It can remove dry, dull skin and reveal new skin cells. The power of a natural humectant also draws moisture to the surface of your skin.

• SHEA BUTTER: Shea butter contains a high concentration of linoleic and oleic acids, which creates a mild, gentle soap.

Hot Process versus Cold Process

Soap makers often share preferences as to why they enjoy using a hot or cold process.

The best advice is to try both to determine your preferred method.

HOT: Instant gratification is one reason to enjoy the hot method. All ingredients come together when melted over a heat source for roughly 45 minutes; some people use the stove, while others use a crockpot. There is limited time to make swirls or add additions, such as flowers. Since curing takes little time, the bars are ready to use after one week.

COLD: Bringing together lye, oil, and a liquid mixture to trace takes little time.

The temperature of oils and liquids must remain within 10 degrees of each other for the process to work. Afterward, creativity can include adding swirls, flower petals, or layering colors. After 24 hours, bars are cut. Curing, however, requires a wait of six weeks. Exposure to the air tends to change the potency of essential oils.

Und erstanding Your Sensory Child

What does the word sensory mean?

“ Relating to sensation or the sensory stimulation of the senses.”

“ Conveying nerve impulses from the sense organs to the nerve centers.”

The hard-wiring of electricity is similar to how our cerebral cortex connects to sensory inputs and motor outputs. Arms and legs move accordingly, as well as produce the enjoyment in feeling the warm sun on the skin or an outdoor concert. The body is extraordinary.

As the hypothalamus functions similar to a relay station, it can automatically adjust the body’s temperature and send messages to promote feelings of hunger, thirst, volume, light, and circadian rhythms. Without a neurological balance, children through adulthood will experience the world differently. Inaccurate sensory processing is a disorder that may perceive environmental factors, such as lights, as too bright. The body’s defense mechanism is “fight or flight.”

Personal Comfort Level To gauge your sensitivity, consider answering the following questions.

• Do loud, continuous sounds, like bells or whistles, make you cringe?

• Would the pop of a balloon cause a reaction?

• Are lights, at times, too bright?

• Do clothes sometimes feel like sandpaper, even though they are made from soft fabrics?

You may have responded with a fair balance of “Yes,” “No,” and “Sometimes.” SPD can range in sensitivity from very mild to severe.

In response, people seek a solution, such as wearing sunglasses, an extra layer of soft clothing, or donning hearing protection.

Coexisting Conditions Attention Deficit Hyperactive Disorder, ADHD, and Attention Deficit Disorder, ADD, are household words impacting 6.4 million American children. Neurological conditions cause an imbalance in the brain, affecting concentration, attention, impulsivity, and hyperactivity. While most genetic or neurobiological factors explain behavior, it often connects to a secondary diagnosis, a sensory processing disorder.

It can be difficult to diagnose ADHD and SPD, since many of the symptoms are identical.

SOME SUGGESTIONS: • Multidisciplinary “Early Intervention” programs are available for children under the age of three. Occupational therapists treat sensory issues; but a speech-language pathologist, special educator, or physical therapist may also evaluate, if recommended.

• You should maintain a file for every e-mail and conference you have.

• Aging out of a program requires only a written request to re-evaluate. Ask questions regarding transfers to new schools.

The Sensory Schedule Encourage a frustration-free environment by creating a pattern of organization, and a set routine. Parents, too, will appreciate a viable, predictable schedule to foster independence, while managing daily transitions. Jot down successes and hiccups in a journal. As patterns appear, parents can seek support or advice as needed.

• Drawers, boxes, and baskets can appear overwhelming; instead, use bins that include pictures of the clothing item.

Picking out clothes the night before is a positive habit for all children.

• Use small, transparent containers for individual toys, such as action-figures, Legos, or blocks. Create labels that describes the item, its purpose, and method to clean up.

• Sleeping spaces need to be three-sided, such as a tent or bunk bed placed against a wall. Weighted blankets are ideal for sound sleep!

• Establish tactile zones! A “quiet zone” includes headphones for listening to books or music and ought to include materials to create art. A “building zone” contains play dough, blocks, or Legos.

COLD PRESSING: Citrus oils require the extraction of the entire fruit. Luxurious scents such as bergamot, lemon, and lime can go through a process of agitation or grating to lift the oils to the surface. Once water mixes with the fruit, the oil separates and is collected.

Extracting the raw oils from plant matter is not a new phenomenon. In recorded history, the Egyptians in 4500 BC used their renowned knowledge of ointments and aromatic oils to make medicines. Across countries and generations, we learned the value of extracting oil from plant matter. As the popularity of essential oils grew, so did our understanding of the relationship of scent to healing.

The Making of an Essential Oil

Terms like “extraction” and “distillation” describe the general process of separating essential oils from plant matter to create a raw, botanical liquid.

You, too, can create essential oils by picking your favorite leaves. Choose quality, healthy or new growth from the second season of echinacea, peppermint, or lavender, for instance.

A distiller aids to create steam, which pulls or extracts oil from the plant and pushes the contents through a tube.

As the liquid condenses and cools, the oil naturally separates from water to be collected.

It’s hard to believe an essential oil requires dilution to apply it safely to the skin, but it does. Surprisingly, you benefit from this protection in massage oils, scrubs, salves, lotions, and balms.

The term “carrier” typically refers to a fatty oil. Jojoba oil, for instance, comes from seeds of the jojoba plant and provides a wax with powerful moisturizing properties. It’s believed to mimic the skin’s natural oil. Avoiding harmful processes of heat, carrier oils require cold pressing to safely release the botanical value to your skin.

It is vital to properly research an oil before applying it as a topical. The solution should contain up to five percent of essential oil and between 95 to 97% carrier. To protect yourself from irritation, dab the inside of your arm with the oil, place on a Band-Aid, and wait to see the impact across 24-hours.

Promoting a Healthy Self-Image in our Children

parents want to prepare their children for the world and hope that they grow into wonderful, happy, and successful adults. A chunk of this future (and current) happiness is ensuring that they have a positive self-image. Throughout our lives, a positive self-image can have incredibly positive effects, not only on our mental well-being, but also our physical well-being and interpersonal relationships. As well, the healthier our mental health is can improve our lives in all aspects—relational, professional, social, and everything in between. We can all clearly agree that having this positive view of ourselves is crucial to have and grow in our children, but what are practical ways to make this happen?

Compliment them This is probably the easiest and most obvious tip. If somebody you love is constantly telling you how awesome you are, you will most likely believe it yourself. If your child decided to wear an outfit that makes them feel good (even if it objectively looks a little on the crazy side), tell them how wonderful they look and how much you love their creativity when it comes to their wardrobe! Did they try a new hairstyle? Compliment the heck out of that expression of themselves! Have you ever been having an off-day, and then somebody compliments you, and it boosts your mood? Try to do that with your children every day.

Encourage Positive Role Models Think about the people who surround yourself with, and ask yourself if these are people who encourage positivity in themselves and those around them. If the answer is yes, that’s great! Do the same self-reflection when you think about the types of media you expose your children to. Do the shows they watch embody the types of self-image you want them to have? The same with books—there are so many great body-positive and overall- positive self-image books available. Ensuring that there are many body types represented in your library of books, movies, and TV shows is crucial to the quest for self-love.

Practice Affirmations Have you ever started your day by looking in the mirror and telling yourself what you love about yourself? If you have never done this, try it and see if you don’t feel like an amazing person for the rest of the day. This is a great way for kids and adults alike to start their days off on the right foot, and a great way to reinforce self-love to ourselves. Take turns every morning saying something good about yourself in the mirror as you get ready for school and work, and eventually, it will become second nature.

Teach Through Your Actions At the end of the day, the most important way to teach our children a healthy self-image is by modeling it ourselves. This can be difficult for many of us because of years of subliminal messaging in our society, but the more we show ourselves grace and love, the more our children will do the same. Just as the way kids will grab onto a slipped swearword and repeat it, they will repeat us looking into the mirror and saying that we hate our thighs. However, if they see us looking in the mirror and saying, “Dang, I look good today, ready to kill the day!”—that is the energy they will manifest in their being as they grow.

kitchen is the gathering place for family, the social center for party guests and night-owls. Supporting all that activity are whirring and spinning gadgets, appliances producing heat and the ability to freeze.

Totaling the financial investment of every kitchen tool, it’s not cost-effective to toss every inoperable machine into the landfill. Fortunately, DIY information offers step-by-step procedures to resolve the frustrating issues of blinking lights, beeps, or an automatic shutdown. The following information may help you get optimal life and performance out of each valued appliance and tool!

bowl on the lower rack and wash without detergent on a regular cycle. The acid will act as a cleansing agent and improve the outcome of your dishes!

COFFEEMAKERS: If you have hard water, mineral deposits are likely accomplices to gum up an automatic coffeemaker. Try a new cleaning system. Fill the tank halfway with distilled, white vinegar; then, fill to the top with water. Give the coffeemaker time, a half-cycle, to clean; then, turn it off, and allow 30 minutes to sit. Return the pot’s liquid back into the tank, and run; then, start again using clean water.

GARBAGE DISPOSALS: Disgusted by the smell of your sink? Then toss in a few ice cubes, orange rinds, turn on the cold water, and run the disposal.

Each unit comes with an L-shaped wrench. Use the tool on the bottom bolt, underneath the sink, to move the blades back and forth, shifting to dislodge food. Afterward, turn on the disposal to hear a purring sound; otherwise, wait five minutes for the motor to cool, push the reset button, and turn on.

DISHWASHERS: After a cycle, you may notice pieces of food encrusted on a plate or bowl. One solution is to check the temperature. Use a thermometer to measure the hot water coming out of your kitchen faucet. The ideal temperature is 120 degrees. If cooler, you may need to adjust the water heater (and warn the family!). A second solution is to pour two cups of white, distilled vinegar into a

TOASTERS: You can resolve the inconsistency of toast browning only on one side. The constant use without cleaning the interior walls causes heat to reflect back and unevenly. After unplugging the small appliance, turn the toaster upside down to remove the screws in the base holding the sides together. Remove the knobs and container. Begin to clean the interior shell with a sponge, slightly damp, with a spot of liquid dishwashing soap.

Add baking soda and use a toothbrush to scrub if you need to remove difficult stains.

Rinse with water and dry thoroughly. Wait a few hours before reassembling parts.

SCISSORS: Kitchen shears, like knives, require sharpening with a coarse stone to maintain sharpness. Lubrication helps.

Consider using water or oil. Open the scissors and allow one of the blades to rub against the stone perpendicular to the beveled edge. It’s vital to angle one blade towards the bevel, ensuring the entire blade sweeps across the stone two or three times. Sharpen both blades; then, open and close, and wipe clean with a cloth before storing.

BUTCHER BLOCK: Cutting boards need more than just soap and hot water after use to maintain their high quality. Scrub white vinegar into the board to allow the pH levels to remove germs or any residual food particles.

GIVE NEW LIFE TO KITCHEN WARES The old measuring cups, missing components of the set, can provide a new job around the house. How about using one to scoop liquid or powdered detergent, potting soil, fertilizer, or grass seed? Perhaps it would aid your effort to scoop out clean kitty litter or measure bedding for small pets, like a gerbil. Kids would appreciate a sturdy container to mix and transport paints or molding clay.

• An old spatula makes an ideal putty knife, or an implement for scraping paint from a can.

• Colanders missing a handle can still hold the garden’s bounty and offer an easy means for washing small objects outdoors.

A Mission to Help Others The mission of the Angelic Warrior Foundation is to raise awareness about colorectal cancer and to provide the financial and emotional support that patients, their caregivers, and their families need in order to thrive during a difficult time. The vision is to decrease the number of premature deaths, and young people under the age of 40 being diagnosed, by encouraging screenings and discussions about family history.

Angel’s focus on others during the hardest time in her life wasn’t surprising to her family at all.

Angel came into this world 9 minutes after her twin brother Antonio and grew up in her hometown of Williamston, NC. “Angel had a big, radiant smile and an even bigger heart. She brought joy, excitement, love, compassion, and a spirit of giving and sharing to everyone around her. During her teenage years, when I wasn’t around, Angel became the mother-in-charge, a role that fit her well due to her caring and nurturing nature,” recalled Paulette.

After graduating from high school in 2006, Angel attended WSSU, receiving a BS in Business Administration, leading her to a job with Bank of America in Greensboro, NC. The corporate life didn’t quite fit with Angel’s calm, laid back, personality, so she began working at Forsyth County Department of Social Services, where her heart of servitude and caring for others was right at home.

Quite possibly, Angel’s legacy of helping others will have the greatest impact in the years after her passing.

truly is nothing more devastating than losing a family member to cancer, but when the loss is your daughter, the pain is even deeper. Finding a silver lining in the loss is impossible and going on is a day to day journey.

For Paulette Duggins, the loss of her daughter Angelica Da’Juana “Angel” Duggins, to colorectal cancer at the age of 32 came after a three-year battle that began in 2017. During her treatment, Angel was blessed to have a supportive and caring family who put their trust in God to see them through.

Angel knew there were many who didn’t have health insurance or the emotional support she had, so she shared with her family her desire to start a non-profit to help others dealing with cancer. In June 2020, after Angel’s passing, The “Angelic Warrior Foundation,” AWF, was established by her family.

The Beginning of an Unexpected Journey At the age of 29, the last thing you would expect is a diagnosis of stage IV colorectal cancer, but that was the news Angel and her family received in July 2017. Angel’s diagnosis came as quite a shock and without warning or any obvious signs or symptoms. Chemotherapy followed a few weeks later for Angel; it was during these treatments that Angel noticed patients who were alone, while she had several loved ones by her side. “Angel had discussions with myself and her siblings about seeing other cancer patients alone, as well as her concern of how those without health care afforded expensive chemo treatments. It was Angel’s wish to start a non-profit to address patients without health insurance and without emotional support. To honor Angel’s wishes, last June, her siblings and I established Angelic Warrior Foundation,” commented Paulette.

Honoring a Life Well-Lived Since its establishment in June 2020, the Angelic Warrior Foundation has launched its official website, and developed a following of over 500 on several social media platforms, such as Facebook, Instagram, Twitter, and LinkedIn. “We have shared educational blogs about colon cancer, started a Colon Cancer Screening Stories Campaign, raised over $4000 through selling AWF clothing merchandise, along with the generous donations from our supporters. The AWF board members consist of those closest to Angel during her journey, to include myself, her twin brother, as we were her caregivers, and her siblings Jasmine, Cameron, and Joy. Since our founding, we have provided support to two families, where with one an entire family of five was screened for colon cancer due to an extensive family history with the disease. Our goal is to continue to raise awareness, and support patients, caregivers, and families as we work with other like-minded organizations,” Paulette said.

Family was at the heart of Angel’s life and in her final few years, she became a first- time aunt and by 2020, she was blessed to be an aunt to 5 nieces and nephews and they all added much joy and happiness to her life. A

new version of the SECU Family House’s signature Men Who Cook fundraising event, presented by Wake Forest Baptist Health, is on the front burner for March.

Typically, Men Who Cook brings together local male amateur chefs and their cooking teams who battle it out to please the tastebuds of nearly 400 hungry attendees. Participating chefs come from all sectors of the Winston-Salem community from banking to clergy, lawyers to realtors, higher education to local media, and everything in between.

“Anyone who likes new experiences and has a love of food and wine, will enjoy this culinary journey,” says Mikeal. “I have always enjoyed finding wines that are diamonds in the rough and virtually unknown. This meal was driven by those unknown gems paired with food that creates something better than the sum of its parts.”

The Family House, which is conveniently located near WinstonSalem’s two major hospitals, has served as home base for folks from 95 North Carolina counties and 45 states and has welcomed more than 41,000 overnight guests since opening its doors in 2011. When families come to our area with their loved ones for medical treatment – whether planned or in emergency situations – the Family House provides a welcoming, comfortable atmosphere for rest, food, community and more. There is a small overnight fee for guests, and a Family House assistance fund is in place thanks to faithful donations and events like the Men Who Cook fundraiser. In typical years, Men Who Cook events raise an average of $140,000 for the SECU Family House.

“While I’d rather be together with all my friends and neighbors at our typical in-person event, I think this version will create some really unique memories!” says Kathy Carr, executive director of the Family House. “I encourage you to bid on the experiences and support our wonderful families.”

Leigh Cameron-Atkins has attended the event every year since its inception. “The first year, my friends came to support me as a member of the Family House board. Since that first evening, they now ask me when tickets will go on sale each year because they don’t want to miss it. We enjoy the fellowship with each other and the amazing food, but it’s more than that. The room is filled with giving hearts and a genuine love for the Family House that is unlike any other event I’ve attended. Men Who Cook has become one of our favorite social outings of the year.”

The coronavirus pandemic iteration of Men Who Cook will entail an auction of private dinners provided by some of your favorite Men Who Cook chefs plus some new venues and chefs. This year, people will bid on their own personalized dining experience.

Whether it be an outdoor barbeque with ten friends, an intimate in-home three-course meal, or a casual picnic and wine pairing at a local winery, there will be a safe option for you and those in your pandemic bubble.

“I expect the 2021 Men Who Cook event to be just as successful this year, if not more so. My friends and I have already talked about the new format and are eager to see what options might be available for us to bid on as a group. Why the Pen is Mightier than the Keyboard:

Five Important Benefits of Cursive Writing

When

America was in its infancy, good handwriting was so highly esteemed that penmanship experts were sought to hand-copy important documents such as the Constitution and the Declaration of Independence. Today, we still refer to one’s signature as their “John Hancock,” a nod to the bold, iconic signature of this first signer of the Declaration of Independence.

From colonial times until the mid-1900s, cursive writing was an essential part of every school’s curriculum. However, with the invention of the typewriter, the importance of handwriting began to decline. Today, fewer and fewer American schools are even teaching cursive writing, opting instead to emphasize keyboarding skills. It’s easy to understand why: it’s impossible to send a text, compose an e-mail, or log on to a website if you don’t know your way around a keyboard. Unfortunately, this very legitimate need to master the keyboard has all but eclipsed the skill of cursive writing. While swapping keyboards for pens may be a sign of progress, it may not be as smart a tradeoff as it seems. Cursive writing benefits cognitive and academic skills in ways that keyboarding simply cannot.

Here are five reasons why the pen is—and always will be— mightier than the keyboard:

Learning how to write by hand makes one “cursive literate.” Those who never learn cursive handwriting have trouble reading it. Iris Hatfield, the author of New American Cursive, notes, “When individuals cannot read cursive, they are cursively illiterate in their own language.” Thus, people who cannot decipher cursive writing may find themselves at a disadvantage in certain circumstances.

Cursive writing develops fine motor skills. Younger students need the neurosensory experience that handwriting provides. That is, they need to feel the pen in their hand and they need to feel the paper. They must learn how much pressure to exert upon the pen and how to position the paper to best accommodate their writing. Then they must apply the proper motion needed to form each letter. By contrast, typing requires only repetitive motion. According to Candace Meyer, CEO of “Minds-in-Motion, Inc.,” cursive writing “builds the neural foundation of sensory skills needed for a myriad of everyday tasks such as buttoning, fastening, tying shoes, picking up objects, copying words from blackboards, and most importantly, reading.”

Taking notes by hand enhances learning. Older students benefit more from taking notes by hand than typing them onto laptops. Why? Consider the difference in the thought processes that occur with typing versus writing.

When someone types notes onto a laptop during a lecture, it’s easier to capture the teacher’s words verbatim. The focus is more on keeping up the pace of transcription than on what’s being said. Alternatively, when taking notes by hand, since we cannot write fast enough to capture a speaker’s words verbatim, students are forced to process what is being said and to summarize it in words that make sense to them. Thus, they’re more engaged with the information and more likely to understand it better.

Handwriting improves spelling. When writing on a computer or tablet, or when texting on a smartphone, it is all-too-easy to become dependent on the software’s spell check and auto-correction features. In fact, kids may hardly notice that the device even corrected their spelling errors. With handwriting, of course, there is no such automatic aid, making it more likely that they will learn to spell the old- fashioned way!

Cursive writing boosts literacy. According to www.pens.com, the practice of handwriting improves children’s literacy. The explanation is that children who can “quickly translate the mental image of a letter into its physical form on paper have a clearer understanding of how letters form words, sentences, and meaning.”

In 1977, the Writing Instrument Manufacturers Association (WIMA) created National Handwriting Day to remind us all “to re-explore the purity and power of handwriting.” WIMA’s suggestions for observing the day include sending a handwritten note to a friend or paying with a check. WIMA’s choice for National Handwriting Day was, appropriately, John Hancock’s birthday, January 23rd.

January is a long way off, so you may want to jot a Handwriting Day reminder on your next year’s calendar right now—in cursive, of course!

Since

1986, AirCare at Wake Forest Baptist Health has flown approximately 40,000 patients, helping them get the trauma and critical-care services they need.

The work AirCare at WFBH does is crucial, because statistics show patients who receive treatment within an hour after a traumatic injury have up to a 20-percent higher chance of survival. AirCare is a part of an EMS network serving patients in North Carolina, Virginia, West Virginia, Tennessee, and South Carolina that responds to the scene of a trauma incident and transports anyone who is injured or needs care to a medical facility suited for trauma. AirCare treats adults and pediatric patients with a variety of conditions, including trauma, cardiac, stroke, and burns. But there’s more to AirCare at WFBH than the services provided; those who care for the patients transported are dedicated medical professionals.

Beth Driscoll, RN: Brenner Pediatric/Neonatal Transport Nurse For Beth Driscoll, “busy,” “stressful,” “unpredictable,” and “challenging” are words she might use to share her experience in a nursing shift with AirCare, and words that led her to the clinical pathway and her role in AirCare at WFBH. “My senior year of college, I worked in the emergency department and experienced the coordination of a medical team on the ground and helicopter transport, when a patient with severe injuries after being struck by an airplane propeller was transported to the hospital.

The challenge of providing critical intensive care to patients in a transport environment became the nursing focus I pursued. My goal of becoming a critical-care transport nurse didn’t happen overnight.

Years of nursing experience and many rotations through various clinical areas as well as required certifications were necessary. I was fortunate to spend 20 years at UNC Hospital in Chapel Hill with the Air Care Pediatric/Neonatal Transport Team before moving to Winston-Salem, NC, to continue my nursing career, transporting the critical neonatal and pediatric population with Brenner Children’s Critical Care Transport Team. While no day is ever the same, there’s always an opportunity to be of service to patients and family members in their most vulnerable time of need,” said Beth.

Krisi Linton, RN: AirCare Critical Care Transport Nurse Krisi’s mom has been an RN her entire life and inspired Krisi to follow in her mom’s footsteps. “I became an LPN in 2002 and worked in a telemetry floor and the emergency department in a small community hospital in my hometown of Long Beach, CA. I returned to school and received my associates’ degree in nursing in 2005; a year later, I became an RN, rotating in medical, surgical, and cardiac ICUs. In the summer of 2013, I married my husband, a native of Winston-Salem, and we moved here. I was hired for a position in the Trauma ICU at WFBH and was then hired in June 2017 to be on the critical care transport/air medical services, which has always been a dream of mine. After I did my ride-along in the ground ambulance and then from an airbase, I knew I wanted to be part of this team. I am one of the full-time nurses at our AirCare 3 base, located in Martinsville, VA, and occasionally I work at our AirCare 1 base, which is in Lexington. Not many people can say they love what they do, but I do! I work with some of the most amazingly smart, talented, witty, caring, and brave human beings on the planet that I get to call my partners. There’s nothing more rewarding than serving your community, and my husband, a firefighter for the city of Kernersville, and I both love what we do, those we help, and the people we work with daily,” Krisi commented.

Kate Rumple, Paramedic: AirCare Critical Care Paramedic Since the age of 12, Kate knew she wanted to work in emergency medicine. “I have always been intrigued by medicine and was drawn to the excitement and diversity of emergency medicine. I decided to start in EMS with the intent to transition into emergency medicine. I graduated from an Associate Degree program and began working as a paramedic at 19. With an interest in furthering my knowledge and the scope of practice, I was drawn to AirCare. I love that we care for all types of patients and learn about all specialties in medicine. The AirCare team works together to get the helicopter ready for our patients’ needs and on any shift, we could be requested to transport critically ill or injured patients from smaller community hospitals to WFBH, as well as being requested to fly directly to the scene of an incident for patients that require more rapid transport. Becoming part of this amazing team included studying and preparation, leading to my board certification as a flight paramedic. In addition to my work with AirCare for the past two years, I am currently a fulltime nursing student, graduating this May, working toward serving AirCare as a cross-credentialed Paramedic/RN. I can’t imagine doing anything else,” stated Kate.

The AirCare at WFBH provides a unique medical service bringing critical care support to communities and people in their most vulnerable times. Although you hope you never need the services of AirCare, it is good knowing they are part of our community.

words in the English language cause the immediate reaction of a scowl; yet, “fat” tends to conjure up a self-reflection of body image and years of restrictive dieting. In the desire to leap away from the connotation, it’s time to differentiate between good and bad fats. Let us explore the facts and fallacies.

GOOD FAT Americans invest 25 million dollars annually in the goal of losing weight. Most fad diets reject the principles outlined in basic food groups by controlling the intake from a specific list. In every debate about dietary fats, the body cannot live without, or manufacture the structure and nutritional properties, of the omega-3s and omega-6s. Did you know particular foods provide a source of energy, particularly at rest and during lowintensity exercise?

THE FOUR FATTY ACIDS On a molecular level, fatty acids comprise carbon, hydrogen, and oxygen. As the chemistry changes, chains of atoms impact how each fatty acid behaves.

SATURATED: The chain’s weight bears heavily on carbon. Think of foods that feel comprised entirely of fat, such as butter, hard cheeses, palm, and coconut oil. Collectively they raise LDL cholesterol levels and increase the risk of heart disease, if not consumed in moderation. To improve heart health, limit your intake to less than seven percent!

MONOUNSATURATED: One hydrogen atom creates an incomplete chain, forming double bonds between carbon molecules. Although much healthier than saturated fats, MUFAs provide the principal source of fat in avocados, nuts, seeds, and oils, such as olive and canola.

TRANS FAT: Processed foods require trans fats to create a shelfstable product; therefore, the chain’s structure is artificial. It is manufactured by adding hydrogen to vegetable oil to create a semi-solid product known as hydrogenated oil. Avoid products with the label, including fast foods, vegetable shortening, processed and baked goods, and pizza.

POLYUNSATURATED: Derived from linoleic acid, the Omega-6 group contains corn, safflower, soybean, and sunflower oils.

Additionally, Omega-3s include linoleic acids from rapeseed and

evening primrose oils, walnuts, and oily fish.

THE BEST DIET

Consuming foods with Omega 3s, such as fish, enriches brain health, lowers the risk of heart disease, digestive disorders, arthritis, and muscle pain. Omega 6s, on the other hand, are necessary for skin health. Try adding the following foods to your diet.

AVOCADOS: Trendy and a versatile superfood, the fruit is well known for its healthy fats and fiber. Eat an avocado daily!

BROCCOLI: Did you know eating broccoli helps conditions related to inflammation, specifically joint pain? It contains the chemical sulforaphane. Don’t skip your broccoli, which is high in nutrients, vitamins, minerals, and a good source of fatty acids.

CHIA SEEDS: Rich in fiber, protein, Omega 3s, antioxidants, and micronutrients, the seeds aid in weight loss, and reduce inflammation, blood cholesterol, and triglycerides. Try cooking with Chia seeds, or consume as a protein-enriched drink.

EGGS: Befriend a neighbor who has a coop. The happy chicken will produce a bright-orange yoke and support one cup, or 12%, of your daily needs!

FISH AND SEAFOOD: The top source of fatty acids is in halibut, mackerel, oyster, salmon, and sardines. Mackerel contains 174% of your daily requirement, while herring and salmon provide 45%.

It’s a great excuse to eat sushi daily!

FLAXSEED OIL: For health inside the body and out, most users take either a capsule or teaspoon of oil daily. Start researching the benefits to see if you should start taking the supplement daily.

SUNFLOWER OIL: Available in a high-oleic version, sunflower oil produces a healthier fat than olive oil.

VITAMIN E: this antioxidant fights inflammation and protects the body from cardiovascular disease, eye disorders, and cognitive decline.

WALNUTS: A half cup of dry walnuts contains 66% of the necessary intake!

Fat doesn’t have to be a dirty word. Start making promises to avoid processed foods and start incorporating healthy fats in your diet. Your body will thank you for it!

Coming Home after Life in the Big Apple

a child filled with wanderlust and for as long as I can remember wanting anything, I wanted to live in New York City. The BIG Apple, the place where anything is possible in a city that never sleeps! It beckons you at every turn… on TV, in the movies…you read about it in magazines and books. To a young, precocious girl in North Carolina, it seemed like an impossible dream…but fate said, “Girl…keep dreaming BIG”!

By the age of 17, I found myself in college in Manhattan, living a life I could hardly believe was mine. I pursued my college degree, then a few different careers and ended up living in New York City for 12 amazing, lively years. The tragedy of 9/11/2001 was what brought me back home.

Moving back South brought me back into the bosom of my family, the nostalgia of my past. It was a different kind of dream come true. Something I ached for inside, but didn’t realize it until I came back. In the South, I found that I could slow down and catch my breath, I could think about buying a house and I could have babies. Those were all things that seemed impossible living in such a fast-paced, expensive place like New York, and they were all things I was really craving in my life at the time. But there were the other things too, the more subtle “welcome homes” that twist around a cold Northern transplanted heart like

a vine of Kudzu on a hot summer day and don’t let go. Things like…

• Family telling you to come hug their neck or give them sugar; • One of your 12 great aunts telling you not to be bashful about going back for seconds; • The smell of thunderstorms…they smell different here; • Knowing when you order tea, it will be cold and sweet; • Allowing the Y’alls to wash over you and remind you, you’re among your people; • Deviled Eggs!

• Listening to the stillness and only hearing the crickets sing; • Seeing the stars; • Catching a whiff of honeysuckle in the air; • Your plate arriving at breakfast with the biscuit completely drenched in sausage gravy and a heaping side of grits;

Heaven on earth!

I never did like things too fancy. I live now in a sensible three-bedroom ranch house with a husband, two kids, and a dog, where once it was just me…five flights up… in ONE pretty small room of my own… in New York City. I don’t regret a thing!

I loved where I lived then, and I sure do love where I live now…especially living in Winston-Salem! It’s my favorite of all the North Carolina cities…and I’ve tried all the big ones!

Bless my heart, am I glad I came home! I want my children to know their roots, to know their grandparents, the people and places they come from and their traditions.

My father always told me this would matter to me one day…that this history, this place of ours would be important to me, and now I can say he is absolutely right. It took me a while to understand.

My Northern friends never quite understood how Mama and Daddy, sweet tea, biscuits, and babies could compete with life in the Big Apple, but they weren’t from around here, and I could never really explain it…no matter how far you try to run away, even if you’re sure it’s for good this time…the South always has a way of calling you home.

“To Thine Own Self Be True” Shakespearean Favorites for Kids!

is here, and another line from a Shakespeare play enters the scene. . . “Beware the Ides of March,” warned the soothsayer in Shakespeare’s Julius Caesar as a prophetic precursor to the assassination of Julius Caesar (“et tu Brute?”) Whether the brutal overthrow of the Roman ruler and other dramatic Shakespearean tragedies (e.g., Romeo and Juliet and Anthony and Cleopatra) are more your cuppa tea, or whether you are fonder of complexly crafted comedies that tickle your funny bone (e.g., Much Ado about Nothing and As You Like It), share your passion for Shakespeare with your young ones.

Whichever you fancy, explore masterfully woven narratives, complete with plot twists, character complexities, and poetic verbalizations that woo the most romantic of us. Shakespeare buffs rejoice! Methinks you’ll be excited and entertained with these kid-suitable Shakespearean suggestions.

SMARTLY SELECTING SHAKESPEARE Gauge a child’s maturity level and interest to know what to share when. Consider beginning with comedies, especially with the youngest children. Numerous resources and adaptations are tailored towards children. Don’t overdose on Shakespeare and overwhelm the kids. Forgo the adult approach by having them read and watch the entire play until they are ready. Shakespeare’s works are timeless classics and are available in multiple multimedia options. Explore the possibilities in children’s books, audio versions, BBC radio, and animated games.

Best advice? Be creative! Young ones often have shorter attention spans, so think like a kid and engage them with fun, interactive experiences that are interesting, stimulating, and challenging (but not too challenging). As a responsible parent or guardian, filter before sharing. Some adult themes in Shakespeare’s work you may want to save for later.

“ALL THE WORLD’S A STAGE” – PERFORM YOUR OWN SHAKESPEAREAN PLAY Pick a fav or string together snippets of Shakespeare plays with a home-theatre performance. Let an adult be the casting director and hold non-stressful auditions that challenge kids to engage with their audience and explore different roles.

Have kids swap roles, trying different interpretations. Ask them about their fav roles and encourage them to be playwrights and write their own monologues and dialogues inspired by Shakespeare. Adapt the scenes for modern-day, and try a more contemporary and real-atable approach.

Coach your actors in rehearsals to get them show-ready, and plan out the other production aspects like set design, costumes, audience invitees, and concessions.

SING SHAKESPEARE: FROM SONNET TO SONG For the musically inclined, create Shakespearean songs. Collaborate

My “Sanctum Sanctorum”

It’s

an unseasonably mild evening in late March.

I’m standing in the field on top of the hill overlooking the lower pond on my parents’ farm. Above the western horizon, the constellation Orion is setting and will not be seen in the eastern sky again until the early predawn hours in November. A gentle breeze blows from the south. The change of seasons is in the air as I listen to peepers, tiny frogs that do just what their name says, peep loudly, by the hundreds. The warm wind carries their high-pitched songs up the hill to my ears as I feel an incredible sense of inner peace. Off in the distance, in a wooded section of the farm, I can hear the lowly cry of the whippoorwill. Standing in the dark, my senses are all working together in unison to absorb the serenity that surrounds me.

“Heaven,” “God’s country,” “Sanctum Sanctorum”—these are just a few of the nicknames I have for the farm my adopted parents purchased in the Shenandoah Valley of Virginia in the late 1970s. Even with all of the travels under my belt, there is really only one place where I find a sense of peace like no other—the family farm. It has been a blessing in my life and has given me countless unforgettable memories and experiences that most people on this earth will never be fortunate enough to know for themselves.

In the summer months, years before the present-day house was built, my adopted father and I would go out to the property almost every weekend, and on many occasions we would camp there overnight. I spent countless hours helping my father dig postholes, put in fence posts, and install wire fencing. If we weren’t repairing or building fences, we were cutting firewood, digging up thistles or clearing areas of land that had been taken over by brush. After a few hours of work in the morning, my father would release me to “go be a boy.” Running through the fields, as grasshoppers shot out of the tall grass and butterflies fluttered lazily from wild flower to wild flower, I would make my way down to the pond and the gurgling creek that ran next to it. There, I would spend hours exploring and catching salamanders, frogs, snakes, and crawdads. Learning

about nature in my very own outdoor classroom, I grew to love the wonders and living organisms that were all around me. In the warm summer evening my father and I would sit under the moon by a campfire and watch a small group of deer cautiously walk out of the nearby forest and begin munching on the juicy clover at the edge of the field. Together, we would observe them without making a sound as they filled their bellies. And then, just like that, a tail would quickly flip up and with flashes of white; they would bound back off into the moonlit woods they had emerged from.

In autumn, the mountain range directly behind the farm would start to change.

It was as though God Himself was dripping a box of melting crayons upon it from above. Barely noticeable at first, various hues would start appearing at the top of the ridgeline. Day after day the vivid colors—reds, oranges, yellows and browns would slowly ooze down the mountain until they finally appeared in the trees around our fields. These were some of my favorite times of the year. The beautiful blue skies, pleasant temperatures and colorful tapestry of the deciduous forest made for nearly perfect days. Walking through fields of grass that were preparing for the cold winter months ahead, one could smell the distinct aromas of autumn—goldenrod, the season’s final cutting of hay in a neighboring farmer’s field, and the almost pungent smell of leaves beginning to decompose on the forest floor. Animals such as squirrels and groundhogs were preparing in their own ways for the lean months ahead by storing acorns and fattening up. The sound of crickets announced the coming changes with their chirps, which became slower and more intermittent as the days grew shorter and colder.

In the winter months, the farm seemed to be in its own state of hibernation.

The ponds would freeze over, and if it stayed cold long enough, we would venture out onto them, pretending to be hockey players or figure skaters. The bare brown mountain and colorless fields would wait patiently to be painted in white. And then, almost magically, the snows would arrive, leaving the fields and mountain behind us frosted and frozen. In the winter, work was kept to a minimum. The piercing wind out of the north, or as my dad called it, “the Hawk,” could make being outside brutal. If there was work to be done, it was done quickly and efficiently, or else you were going to pay for it with numb fingers and toes. Instead of doing work that could be saved for the warmer months, we partook in the sorts of activities that should be done in winter— building snowmen and snow forts, having snowball fights, or pulling a sled up the hill to whiz back down it again and again, laughing and screaming.

Which brings me back to standing on top of that hill listening to the peepers.

As it always does, the promise of new life and spring returns to the farm.

Newborn lambs and goats jump and frolic behind me in the barnyard that had lay frozen for months. Now the smells of animals and manure fill the air. The once dormant grasses and trees begin to awaken. The mountain starts to turn various shades of green, except in the opposite direction. Each day, from the bottom to the top, the budding of new leaves slowly climbs up the slope until it has been completely cloaked in a beautiful blanket of emeralds. New life abounds and all is right with the world after the long cold winter.

To this day, I still look forward to my visits to the farm. When I walk through the same fields that a much younger version of myself used to run through, I reminisce fondly about all the wonderful times I’ve had there—times that will always remain near and dear to my heart. I know how fortunate I am to have been a part of the piece of heaven on earth, which has become my holy of holies, my Sanctum Sanctorum.

we continue navigating around COVID and pandemic life, it is fascinating how creative and ingenious people are in altering philanthropic events to meet the guidelines that the CDC has implemented and still have a successful event. The annual Winterlark event is always an anticipated evening that benefits the Wake Forest Baptist Health Cancer Patient Support Program. The Cancer Patient Support Program (CPSP) is at the heart of the Comprehensive Cancer Center at Wake Forest Baptist Health. It provides support and deep-caring for cancer patients and their families and caregivers as they

navigate their cancer journey from diagnosis to survivorship. The goal is to see no one faces cancer alone. These services remain crucial for patients and those who care for cancer patients.

In lieu of the traditional black-tie event, the month of February has been dedicated to a crowdfunding campaign for CPSP with the tagline asking – What would you give to see no one faces cancer alone? There are 38 fundraising pages, and as of February 15th, 73% of the goal to $300,000 has been met. The community has been given the opportunity to become champions of CPSP. These champions are able to set up their own fundraising page and share their own story, mission and connection to the cancer center.

Sharing a personal story is powerful and helpful for others to hear that they are not alone in their journey. Companies and individuals also have the chance to make contributions for CPSP. Forgiveness

fact about me — I love to watch truecrime documentaries. I’ve done my fair share of reading true- crime books, too, but those can sometimes scare me more than the documentaries. And when a book scares me, it goes in the freezer, which leads to all kinds of awkward explanations to my family when they think I’m weird. So true crime documentaries are my preference. I can always watch something goofy if the details of the documentary get too intense (versus a book that stares at me from across the room—hence, the freezer).

Recently, my husband and I were watching an episode of Cold Case Files. At the end—the man on trial (who was a serial killer) faced his victims’ families. One by one, they told him in no uncertain terms what they thought of him and where he could go. “You’re evil.” “Hell is too good for you.” “I hope you rot.” And he sat there, stony-faced. No emotion. Until one man got up and began to talk about his daughter. And he looked up from his notes and into the eyes of his daughter’s killer and said, “I forgive you.”

That was the serial killer’s breaking point. During accusations, he was unresponsive. But when he was confronted with forgiveness and grace, he broke down, weeping.

In our anger—we think holding on to hatred gives us power. But here’s the truth—forgiveness, grace, mercy, and love are far more powerful than any kind of hate, no matter how justified we may be in our hatred. Hatred weakens us; it eats away at everything good in us and poisons so many areas of our lives. As I watched that documentary, I realized—there was NO ONE in that courtroom who was more powerful than that forgiving father.

He who would have been justified to damn us all to hell—extended forgiveness.

Sit on that for a moment. Think about it.

We get mad at someone for cutting us off in traffic. Or outraged by those who are brazen enough to go through the “10 Items or less” line with 11 items. We get offended by the slightest things and de-friend people who disagree with us. And yet—the Savior of the world, beaten to the point that He no longer looked human (Isaiah 52:14)—spoke forgiveness.

Jesus modeled His words in Matthew 5:44 and put them in action: “But I say to you, love your enemies, bless those who curse you, do good to those who hate you, and pray for those who spitefully use you and persecute you.”

Forgiveness isn’t optional. For those who say, “I can’t,” we have to remember that Jesus also said, “And whenever you stand praying, if you have anything against anyone, forgive him, that your Father in heaven may also forgive you your trespasses” (Mark 11:25).

We give forgiveness because we need forgiveness.

But we also must realize that forgiveness isn’t for the one who needs forgiving or excusing their sins against us. It’s for us. For us to reclaim our own freedom, so that we can release that hateful burden that is too heavy to carry.

Here’s the good news — God doesn’t expect us to forgive others in our strength. We have His to rely on!

That kind of forgiveness isn’t possible without Jesus Christ. This grieving father gave a beautiful example of what we’re called to do—forgive as Jesus did on the cross.

Philippians 4:13 says, “I can do all things through Christ who strengthens me.” Let’s do a fill-inthe-blank exercise with that. “I can do all things, [even forgive _______________], through Christ who strengthens me.” And then start working on forgiveness, remembering Christ has promised to help You.

“Father, forgive them, for they know not what they do” (Luke 23:34). If you grew up reading the Bible or hearing the story of the crucifixion, you may be so familiar with this prayer from Jesus that you fail to meditate on the words. The Creator was being crucified by His creation— executed for sins He never committed—and yet,

It’s not easy. And sometimes, depending on the degree of hurt, it’s a moment-by moment thing.

But forgiveness was modeled by Jesus, and sometimes, even by a brokenhearted father who misses his daughter. And perhaps you, too, can forgive and be an example of Christ’s forgiveness for someone else.

We praise God for redemptive stories like this, but we are all too aware of the targets on the backs of our PKs, and the destructive battle for their souls.

The One Conspiracy I Believe In

Like

many Americans during the pandemic, my wife and I have been marathoning our fair share of Netflix and Hulu series. One series explores the world of conspiracies. One might think, living in the “information age,” that conspiracies would go the way of the beeper. Instead, they have grown like a chia pet.

I realize conspiracies have been with us for a long time. As a kid, I read several that claimed that Hitler escaped his bunker and made his way to Argentina where he or his followers would get the Reich back together. Thank God that one never amounted to anything! One of my more recent favorites is that Elvis and Michael Jackson are still alive living together on some remote tropical island. If that was reality, think about all the dance moves that could emerge from that dynamic duo!

The one consistent thing I learned over the years about conspiracy theories is that they are almost never, ever true.

I am sure there is a reader out there that can prove me wrong (and please do!) but I honestly can’t think of one conspiracy theory that was later proven right. However, let me share about the one conspiracy I do believe in with my heart, mind and soul.

The late philosophy professor at UCLA, Dallas Willard, wrote the book The Divine Conspiracy. In it he makes the claim that God in Christ entered our world not only to deal

with our sin problem, but also so we can share in the “divine life.” We are not talking about some New Age concept that involves crystals, hallucinogenics or expensive retreats. He is simply describing what Jesus tells his disciples in John 15. In this foundational passage Jesus describes the “secret sauce” of the Christian life. It all has to do with abiding, residing or dwelling in an intimate relationship with God. And by doing so, disciples or followers will experience the life we were created to live, or the “divine life.” A life of love, joy, peace, goodness, kindness, generosity, etc. In short, the “conspiracy” that Dallas is referring to is God’s plan for us to live in constant communion or companionship with Him. Which, by the way, was God’s original thought behind Adam and Eve in the Garden, but those two blew that one.

And if we are honest, we would have too.

My point in all of this? If you are Jesus’ follower, I urge you not to get wrapped up in all these fringe conspiracy theories. They don’t help us to love God and love people (a summation of the Greatest Commandment)—in fact, they tend to do the opposite. I do urge you instead to get wrapped up in the divine conspiracy especially during this season of Lent. To pray, to meditate on Scripture, to serve, to give, to create space in our lives to experience God. Not only do I believe this conspiracy is true, I believe it has the power to transform the world.

What to Expect after the Baby Arrives

As

a first-time mom, I prepared endlessly during my pregnancy. I read all the books, ate the “right” foods, did all the exercises. While I prepared myself for every last detail leading up to the birth, I forgot to prepare for the result—a baby in my arms! I was even less prepared for what would happen to me after baby’s arrival. I was unprepared for what my body would go through, physically and emotionally, and what those first few days, weeks, and months of motherhood would really be like.

I was told a few things about what to expect postpartum, but the true details were neglected. My personal birth experience was a vaginal birth with an epidural.

Every mother’s experience is different, but what remains constant is the lack of realistic information provided to women about postpartum recovery. I believe it is imperative to talk openly about what a mother truly goes through after the baby arrives.

Why had nobody told me I would be bleeding for weeks? I was sent home in a 3-layer diaper that helped keep the bleeding under control. My new bathroom routine took about three times as long as before, and I had to make sure I had all my “equipment” before going in. I was terrified to the point of tears of having to poop. I had no idea I wouldn’t be using toilet paper for weeks, but instead using a water bottle (and God forbid, you don’t

use warm water)!! Where was that in the baby books? And don’t get me started on sitz baths. Sitting naked on the toilet soaking my wounds…talk about glamorous!

Why hadn’t anyone told me breastfeeding would be one of the hardest things I had ever tried in my life? If anyone tells you breastfeeding is easy, they are lying (or forgot what it was like at the beginning). It hurts!

Baby doesn’t know what he/she is doing, and neither do you! I had cool gels for my nipples, nipple shields while feeding my baby, nipple guards for after feeding, and nipple cream on constant repeat. I couldn’t let my nipples touch my shirts for almost two months, because they were bleeding and sore, not to mention the three bouts of mastitis and countless clogged ducts. It took three months for my son and me to finally get the hang of it. THREE MONTHS! Oh, the sleep deprivation! Now this is something that was definitely mentioned before I had my son, but I never really understood this until my first night with him. That morning, our doctor came in asking how the night went. We proudly declared that our son had slept five long, glorious hours! The doctor looked at us with a concerned glance and

told us we could absolutely not let our son go that long without eating.

He explained it was imperative that he get back up to birth weight, so he would need to eat at least every three hours for the next few months!

Cue the tears, the confusion, and the dreadful feeling of failing as a mom, not even 12 hours after he was born!

I had to feed this child every three hours?! With feedings lasting up to an hour each, that didn’t give me much time to rest (let alone eat, bathe, or, with my lengthy new bathroom routine, even go to the bathroom).

That was the last time I slept five hours straight for five long months.

I truly believe that so many new parents and moms are unprepared for this time. It could be because other moms forget what this stage is really like. After our children grow up, it becomes easy to block it out or convince ourselves it really wasn’t that bad. But I’ve learned the female body is incredible, and you are made for this. You will heal, you will get your strength back, and every day gets a little bit better. Those days will pass, and you will see the sun again, I promise you. There is no way to fully prepare for everything motherhood throws at you, but never forget you are resilient, resourceful, and strong as a mother!

Come to Your Senses

For

those of us blessed to have all five senses in our power, it is not unusual to take them for granted.

Most days, we aren’t even aware of the myriad experiences we have. However, every now and then, one of our senses will hit us and the memories come flooding back when a sight, sound, taste, touch or smell brings them front and center. It in turn leads to other wonderful events eliciting smiles and touching a chord, brightening an otherwise ordinary day.

I have so many fond recollections of times spent with my grandparents. Living more than 1,600 miles away from them, we didn’t get to visit often. And yet, I remember outings, special meals, every room in their homes, their voices, the aromas, their hugs and most of all their unconditional love. Oftentimes, something seemingly common will trigger a memory out of nowhere. One day, the smell of bacon cooking will carry me back to my grandparents’ house. No explanation for it, I have had bacon more times than I care to admit, but there it is.

I asked our daughters what came to mind using each of the five senses when remembering their maternal grandmother. Each answer they gave triggered stories to share, illustrating and illuminating the importance of keeping these memories close. They found, as did I, that one story morphed moving from one sense to another.

I loved hearing how my mom (the girls called her “Honey”), always made them her number one priority when we were together. Before we went for a visit, she called to make sure she stocked the kitchen with what they liked to eat—she didn’t ask that of me—although, that is probably because she knew I liked everything she made, but I digress. Their answers included special outings, playing dress-up, Honey singing lullabies when tucking them in, the scent of her perfume, the butter mints she always had in a candy dish, coming up with something to make every day special, making jelly with

the crab apples they picked, being there for important events in their lives; but most of all, how she loved them unconditionally. As they grew up, new memories came to mind. These are equally important, but it is their childhood recollections that, to me, are the best, as they show this special bond was formed early on in their lives.

This made me wonder what will bring up memories of me from our grandchildren, hopefully, many, many, many years from now, that they will tell their children.

My desire is that their recollections will be much like my girls. Right now, it would be playing hide and seek, chasing them in a game of tag, reading to them, watching them play sports, being there for school programs and special events, being there with them and for them, but most of all loving them unconditionally.

I am fortunate that I live in town with four of my grandchildren, whose ages range from two to eight. The other three are a mere three and a half hours away and their ages are 13, 10 and seven. I want the three that live away to have special times spent together, so they feel as important in my life as the ones who live nearby. In a way, it is easier to be more complacent in the times I am with the ones close by. I hope that I will always make time with every visit to play a game or do at least one thing they are eager to include me in doing. For, as with my own grandparents, it will be the quality of time spent together, not the quantity.

others with love, respect, and kindness are skills that are always valuable in life. These skills are for all ages to practice each and every day. Love, respect, and kindness help us put our differences aside and work together to make the world a nicer place. Showing kindness doesn’t have to be a monumental activity; it can start small and spread between people in a “pay it forward” way. For example, one person or family completes an act of kindness, whether it is through volunteering, holding the door open for a stranger at a store, or writing cards for a local nursing home, and hopefully that act inspires others to do the same. These acts of kindness can have a lasting impact on the community and world.

To continue with spreading kindness, meet the 31 Days of Kindness Challenge. In this challenge, individuals and families are given an act of kindness to carry out each day for all 31 days in March. By the end of the month, 31 acts of kindness have been performed and lessons of love, respect, and kindness towards others have been instilled in many people. Below is a (sociallydistanced, pandemic-appropriate) calendar full of ideas for you and your family to follow. All you have to do is set time aside each day and fulfill the act of kindness. It is that simple and worth giving a try.

March 1st – S tart a spare change jar. At the end of the month, give the collected money to a person, family, or charity in need.

March 2nd – G ive a compliment to a loved one or stranger if you are in public.

March 3rd – Write and send cards to spread love and cheer to a local nursing home.

March 4th – D o a favor without asking for anything in return.

March 5th – D onate food or a meal to a homeless shelter.

March 6th – G o device-less for the day and spend your time talking with your loved ones, giving them your undivided attention.

March 7th – C reate and send care packages to military members local or abroad.

March 8th – D oing some spring cleaning? Donate clothes, blankets, and toys to those in need, including animal shelters.

March 9th – Pay for someone’s meal or groceries.

March 10th – Walk a neighbor’s or friend’s dog.

March 11th – Pay for a stranger’s library fees.

March 12th – S urprise a loved one with a homemade gift or meal.

March 13th – H ost a virtual girls’ night out or family game night.

March 14th – Feed the birds in a park.

March 15th – P ick up trash and litter in a park or playground.

March 16th – B ake a treat for a family member or neighbor and leave it on their doorstep.

March 17th – D on’t complain or say anything negative for a day. Only think about the positives.

March 24th – Leave coupons you don’t need throughout a grocery store.

March 25th – Send a gift card to your church, school, or favorite charity.

March 26th – Hold the door open for people you see coming behind you in public places and at home.

March 27th – Let someone go in front of you in line.

March 28th – Buy school supplies and donate them to a teacher or school.

March 29th – Plant a tree in your yard to help the environment.

March 30th – Write positive chalk messages on sidewalks.

March 31st – Call a relative or friend you haven’t spoken with in a while just to check-in.

These ideas are only a few in a list of many. Be creative and have fun—the most important thing is not to limit your 31 Days of Kindness Challenge to just a month. Turn it into a 365 Days of Kindness Challenge and continue to extend love, respect, and kindness in everything you do.

is here, and so is St. Patrick’s Day when you wear green or get pinched!

Whether celebrating amidst shamrocks, leprechauns (friendly, not scary), and everything Irish and green, or are looking for creative ways to spend your time this month, here’s a list of ideas.

SHAM-ROCK-IT-OUT! • Search for that elusive 4-leaf clover and then pot some shamrocks and bring them indoors.

• Get some shamrock confetti and adhere it with a dab of eyelash glue for decorative eyes, paired with some green eyeshadow.

• Make shamrock cupcakes or cookies (use green M&M’s and green frosting).

• Plan a treasure hunt with a pot o’ gold at the end of the rainbow, with prizes for all participants.

• Watch the sunrise and sunset and sing along with songbirds.

• Get your funny on. Nab inspiration from your fav comedians and compile a collection for when you need a laughter lift.

• Be a kid again and hang out with the kids. Wear a fun and funky outfit (like a onesie), head to the playground, break out the bubbles, and end the day with a bubble bath (rubber ducky included).

• Plant herbs (or shamrocks!) in Mason jars or empty cans and enjoy an indoor herb garden.

Make the most of fresh herbs as edible garnishes for bites and beverages.

CREATIVELY CELEBRATE ST. PATTY’S! Leprechaun Fruit Snack INGREDIENTS: One green apple, one clementine, raisins, cashew or strawberries, toothpicks, and peanut butter INSTRUCTIONS: 1) Cut a thick apple circle slice and stand it straight up. For a leprechaun hat, cut a piece of green apple into a small square or rectangle and secure above the circular face (apple round) with a toothpick.

MATERIALS: Craft paint in rainbow colors, fabric scraps, paper towel rolls, dried rice or lentils, scissors, glue, masking tape, glitter (optional), and cotton balls INSTRUCTIONS: 1. Cut a square of fabric and adhere it to one end of the paper towel roll with glue, and wrap a few times with tape to secure.

2) Use dollops of peanut butter to adhere raisins for the eyes and nose, and add a cashew or strawberry piece for a smiling mouth.

2. Put 2 to 3 Tablespoons of rice or dried lentils into the tube and add another fabric square to the opposite end of the tube.

3) Peel the clementine and layer the pieces like a scarf around the bottom of the apple face. Use toothpick pieces or peanut butter to secure.

3. Paint bright bands of rainbow colors around the cardboard tube.

St. Patty’s Green Cookies (6 Dozen Cookies) INGREDIENTS: 2 cups softened butter, 1½ cups sugar, 2 cups brown sugar, 3 eggs, 2 teaspoons vanilla or almond flavor extract, 3 cups green powder (matcha, moringa, and/or spirulina) or green food coloring, 3 cups flour, 1½ teaspoons salt, 1½ teaspoons baking soda, 4 cups mint chocolate chips (or white chocolate chips, butterscotch chips, or M&M’s) INSTRUCTIONS: 1) Mix sugars and butter in a large bowl and add in eggs and vanilla.

2) Stir in other ingredients till blended, and work in candies.

3) Spoon cookie dough onto greased baking tray.

4) Bake for 10-12 minutes at 350°.

’Tis the season to make a tip o’ the hat to the Irish! Make St. Patrick’s Day fun for the whole family and celebrate the luck o’ the Irish with these delicious comfort foods, with options for breakfast, lunch, and dinner!

CINNAMON SUGAR SCONES INGREDIENTS: 3 cups All-purpose Flour One-third cup Granulated Sugar 1 tsp. Salt 1 Tbsp. Baking Powder ½ tsp. Baking Soda 1½ sticks Unsalted Butter, cubed & frozen 1 cup Buttermilk 2 large Eggs, divided 1 tsp. Vanilla extract 1 c up Cinnamon Baking Chips (or dried Fruit of your choice) Coarse Sugar (such as turbinado) for sprinkling DIRECTIONS 1. Cube and freeze butter ahead of time. Adjust the rack to center position and preheat the oven to 400° F. Line baking sheets with parchment paper.

2. In a large bowl, combine flour, sugar, salt, baking powder, and baking soda. Add the butter and cut with a pastry cutter or fork until the butter is the size of large peas.

3. In a small bowl, whisk the buttermilk, 1 egg, and vanilla.

4. Make a well in the middle of the flour mixture and add the liquid mixture. Mix just until combined.

(Be sure not to overmix.) If adding dried or frozen fruit or nuts, add now.

5. Transfer the dough to a floured surface and divide into two equal parts. Lightly knead each into ¾” thick, 6” rounds. Cut each round into 8 equal “triangle” wedges and place on baking sheet about 2” apart. (Note: At this point the unbaked scones can be refrigerated overnight, or sealed and frozen for up to one month. If baking from frozen, add about 2 minutes to baking time.)

6. In a small bowl, combine remaining egg with 1 teaspoon water. Brush over the scones. Sprinkle with the coarse sugar and bake 12-15 minutes or until lightly browned. Best served warm or within a few hours of baking.

IRISH POTATO SOUP INGREDIENTS: 1 large Onion 3 medium Potatoes 2 oz. Butter 4 cups Chicken Stock (or vegetable stock) ½ cup Cream Salt & Pepper to taste Parsley (optional) DIRECTIONS 1. P eel and dice the potatoes and onion.

2. I n a large saucepan on medium heat, melt the butter and add the onion. Stir, cooking for one minute.

3. S tir in the potatoes. Cover and cook the vegetables for 10 minutes, shaking the pot every few minutes to prevent them from sticking.

4. P our in the stock and simmer for 20 minutes, until the potatoes are tender. Turn off the heat and cool.

5. P urée with a hand-held immersion blender or in batches in a blender.

6. A dd the cream and stir well.

Garnish with parsley, sour cream, bacon, shredded cheese or other favorite toppings.

SHEPHERD’S (COTTAGE) PIE INGREDIENTS: 1 Tbsp. Oil 1 lb. Ground Beef 1 clove Garlic, minced 2 Onions, finely chopped 2 medium Carrots, finely diced 2 sticks Celery, finely diced 1 c. Peas 2 Tbsp. Tomato Paste 4 cups Mashed Potatoes ½ c. Cheddar Cheese, shredded ½ tsp. Salt ¼ tsp. Paprika 2 Tbsp. flour One and one-third c. Beef Broth ¼ tsp. dried Rosemary ¼ tsp. dried Thyme 1 tsp. Parsley, finely chopped

DIRECTIONS 1. P reheat the oven to 400° F. In a large skillet, brown the ground beef on medium high heat, then add the chopped vegetables and sauté until softened.

2. S prinkle flour, salt, pepper, and paprika over the beef and vegetable mixture.

Cook for 2 minutes, stirring often. Stir in the tomato paste and stir about one minute. Pour in one-third cup of the beef broth and scrape the brown bits from the bottom while stirring.

3. P our in the remaining broth, herbs, and peas and simmer for 4-5 minutes. Stir and spoon mixture into a 7”x11” baking dish and let cool.

4. M ake 4 cups of your favorite mashed potatoes. Spread the mashed potatoes over the cooled filling. For crispier potato topping, use a fork to create a crisscross pattern on the potatoes. Sprinkle cheese on top. Bake for 20 minutes. Note: If baking dish is very full, place on a baking sheet to catch spillage.

The View from My Section – A Father’s Perspective

Tomorrowland: Life after Covid-19

BY A. KEITH TILLEY I was fortunate to visit the Carousel of Progress Exhibit that opened in Walt Disney World in 1975. I remember being awestruck at such futuristic innovations as huge flat-screen televisions, microwave cooking, and what amounted to zoom calling with the other party projected live on a large screen. All this seemed far off at the time, but then again so did the year 2000. Of course, in 2000 we were supposed to have flying cars as well. So, not everything came to pass. Innovation is tricky though, more often it’s born out of necessity, rather than having your kite be struck by lightning. And in 2020 there was ample necessity before us, and thus plenty of opportunities for new ideas, along with perfecting existing ones.

Customer “experience” is the new buzzword in marketing these days.

Making the online shopping experience easier, with product offers more attractive, shipping prices more economical, and faster access from pickup at store to same-day delivery and more.

Additional consumer priorities include “convenience” and “speed,” meaning the time between when an order is placed and when they receive the items. This opens the door to more innovative ideas in the delivery of just about everything.

So, what’s our world going to look like after this time we’ve all been through?

Here are just a few of the interesting items I discovered in my research.

On the office-front, I/T workers get ready, because it’s about to get more complicated. An even greater priority will be placed on important areas like preventing network outages and protecting vital data, now that more external, remote laptops and PCs are being used. Artificial Intelligence is becoming more mainstream and companies are looking into innovative uses in the immediate term. Cloud technology will be used more expansively, allowing remote workers to interact with systems and communications internationally.

For consumers, look for contactless checkouts to become increasingly more prevalent. They’re faster and safer to use and people like them. According to NBC News and Nrf.com, a post-holiday study showed that 58% of consumers said they would shop more online even after the pandemic has passed. So, this trend has gotten a super-octane boost that’s not likely to go backward in the future. If it’s something the customer doesn’t have to pick over, then they’re likely to order it online.

Look for fast-food chains to become more drive-thru centered and less dine-in, if at all. Customized mobile ordering allows you to “reorder” the same menu items, increasing order accuracy and reducing wait times. You can also get advertising promotions tailored to your preferences.

Telehealth, or virtual doctor visits, have also benefitted from this time. Patients that were first reluctant to use these medical advances, when other options were available, made the leap and were satisfied with the results. This area is sure to take on a new life for such things as routine office visits, simple checkups, follow-ups to procedures, and prescription refills.

Education has seen technology take on an even bigger role. Students will need greater access to technological resources and the internet to provide

balance among all demographics and level the playing field. Innovative digital approaches designed to captivate and integrate the student into the learning process simultaneously will develop naturally.

On his podcast, Bill Gates (from “Bill Gates and Rashida Jones Ask Big Questions”) indicated that the way we make vaccines will change. The new mRNA process of creating vaccines is much faster and is said to be equally as effective. Meaning our medical community has a better defense weapon against newly-formed viruses in the future. This approach was used for Covid-19. On the social side, he added that bedroom community restaurants, pubs, and entertainment outlets should boom, as more people move out of the cities and into the suburbs, nicely accommodating the greater emphasis on socializing with friends outside of work.

Work from home, which many have done so effectively this past year, is here to stay in some form or another. The coronavirus has forced this method of doing business to address the needs quickly and efficiently, and subsequently, this approach was refined sooner than expected. Look for satellite offices with limited workers in-office and conference space for routine meetings. More businesses see the benefits in terms of cost, work/life balance, employee satisfaction, and productivity, among some of the advantages of using this approach. Though this method is not appropriate for all positions, those that are have proven to overcome the obstacles and worked successfully.

This is just the tip of the iceberg. It’s not a matter of if our world is going to change as a result of Covid-19, it already has.

We’re about to discover a new way of life for all of us that we never envisioned just over a year ago. And I have to say it’s nice to have something positive to look forward to for a change.

An Inspired Culinary Experience!

no surprise that you’ll notice the word “inspired” pop up when you first click on the website for Winston-Salem favorite Hakkachow Asian Eats. The Chung family has introduced locals to the finer points of Asian cuisine with a fusion twist and earned quite a following thanks to the restaurant’s unsurpassed menu offerings and exhilarating contemporary ambiance. Hakkachow welcomes you with a sophisticated setting, the warmest hospitality and food that will leave you already planning your next visit!

Inspired to be even more creative during the Covid shutdown, Hakkachow not only ramped up its takeout game, they created an expanded sake menu that is already a huge hit with customers since the restaurant has fully reopened. Being creative is an absolute essential skill in today’s competitive restaurant business, and Co-owner Jonathan Chung – also the business marketing guru – knows every dine-in visit to a restaurant is a very personal experience; determined by the food of course, but also enhanced by the level of service and the overall setting.

“You cannot focus on food alone and neglect service,” said Chung. “All three factors plan an important role in the customer’s experience.”

Customers won’t come back a second – and third – time if the service is poor, and providing an excellent ambiance means diners will be likely to consider the restaurant when it’s time to celebrate a special family occasion! Hakkachow is all about family, too, and being a family owned restaurant has given the staff a unique bond; one they share with their dedicated team, even amid the challenges of the last year and the already hectic pace of the restaurant business. Keeping up an insane seven-daya-week-schedule (except for a few holidays here and there) requires dedication, and Jonathan is grateful that being family owned gives them the ability to fill in when employees are sick. It also strengthens their personal relationship with the staff in a different way than if they just operated in the background.

As for what’s on the menu, you can rest assured Hakkachow will never veer from focusing on their top dishes – among them, Crab Wontons, General Tso Chicken, Mongolian Beef, Kobe Beef Dumplings and Hakka Chow’s Fried Rice – but Jonathan loves seeing Winston-Salem expanding city-wide with even more of an international flair, allowing them the opportunity

to experiment with more authentic Asian dishes that might be a little out of most local folks’ comfort zones!

His own travels through the years have also inspired new elements they weave in to the Hakkachow menu on a regular basis.
