is flying by at warp speed, and here we are already with kids and teachers returning to school at the end of the month! I’m certainly not ready for summer to end yet, and I feel quite sure they are not either! A huge note of thanks to all those involved in educating our children. It’s such an important task and one that I’m sure parents have a new appreciation for after having to deal with virtual learning.

It’s wonderful to have all the options available now, so whether you stick to virtual or are looking forward to returning to in-person learning, we hope you have an amazing school year!

I was so excited to start our Kids’ Morning Out events back in July, but the weather had other plans. The NC Tennis folks were doubly disappointed we had to cancel because of the rain Hurricane Elsa brought. We hope to reschedule a tennis event in the fall, so stay tuned for that! With vacations and everyone’s busy schedule, we will not have an event in August but are looking forward to one of our most popular Kids’ Morning Out events at Salem Gymnastics & Swim in September. Beth Morphis and her staff do an incredible job with multiple stations set up for not only fun but to challenge the kids with new skills, as well! Don’t forget to bring your swimsuit if you’d like to give their pool a try! Kids under three must be accompanied by an adult in the pool.

few of us can look back on our high school yearbook pictures and think, “Wow! My hair looked awesome!” Instead, many of us cringe at the memory of “bangs gone wild” or other dumb haircuts we wore. Besides the obvious – hairstyles, like fashion, come and go (though whomever thinks it’s a good idea to bring back the mullet…please – just stop). The main issue many of us faced with our hideous middle and high school hair was a simple lack of know-how. Back-to-school is hard enough, and if you have a student returning to the classroom, help them get back-toschool confident with a great haircut and awesome tips on how to style and maintain their new do.

Bobbie Skinner, owner of Paparazzi Hair Salon, said, “Our recommendation is to go low-maintenance. Pick a style that is easily maintained without a lot of product.

We all know how bad it is when a teenage boy gets a hold of a bottle of Axe body spray – imagine that with hair products!

But, in most cases, a little goes a long way when it comes to hair products. Our team can help teach students the right amounts they need to maintain a great style that lasts throughout the day.

“Hair hydration is also important,” Bobbie continued. “Especially if your student has dry or curly hair. Get a handle on frizz by making sure locks are properly moisturized.

If your student uses a lot of heat elements on their hair – make sure they have heat protection. Also – consider a satin pillowcase for your child. The satin minimizes static and is gentler on the hair than other fabrics.”

As a hairstylist and mom to two girls, Bobbie knows the dreaded mass of tangles well.

“Make sure you use a detangling brush, and go slow! Or, a wide-toothed comb will help. Start at the bottom and work your way up. And, if these tangles are coming from very active kids – invest in some good hair accessories – metal-free hair ties, sports bands or fabric hair bands to help keep the hair from flying away.”

And, of course, there’s the L word – the most dreaded four-letter word ever to be uttered in a school hallway. We are, of course, referring to “lice.” Bobbie shared, “It’s so common for kids to want to share hairbrushes, combs, accessories and hats. But, no matter how many safeguards you put in place, lice can happen. One easy preventative is to make use of peppermint oil or even a peppermint-infused shampoo. Lice do not like the scent of peppermint. And still, if the worst happens and your child comes home with lice – mayonnaise is an effective way to kill them naturally without harsh chemicals.”

Recognizing the importance of immunizations

“National Immunization Awareness Month”

As

a society, we are now able to say we have lived through a worldwide pandemic— COVID-19. The feelings of fear, isolation, and helplessness are all still very fresh in our minds. By no means are we able to say this pandemic is over, but many can now see the light at the end of the tunnel. Today, feelings of hope, optimism, and anticipation are replacing the previous sentiments. Why have these feelings changed? What has made the tides shift so dramatically?

Much of this is thanks to a large percentage of the population getting the COVID-19 vaccine.

According to the CNBC article, “Half of Americans 12 and older are fully vaccinated, as daily Covid case counts remain below 15,000,” today almost “52% of the U.S. population has received at least one dose of a Covid vaccine and 42% are fully vaccinated, government data show.” This progress has helped lower the rates of infection dramatically. According to the article, “about 14,400 daily cases are being reported in the U.S. on average over the past week.” This figure is down 17% from only a week prior.

With numbers like this, it is easy to see why many are signing up to get their COVID-19 vaccine. Once one is fully vaccinated, he or she begins to feel like they can “somewhat” return to normal life. This is thanks to many of the previous restrictions being lifted.

Today, many stores have an optional mask mandate. Large venue events like concerts, sporting activities, theater

productions, etc., are also beginning to occur after a yearlong hiatus.

Considering all of this, August seems like the ideal and perfect month to recognize the importance of all immunizations during “National Immunization Awareness Month.” As this nation slowly begins the healing process, we need to investigate why there is an entire month dedicated to immunization awareness.

First, since this article has been primarily focused on discussing the COVID-19 vaccination, is there a difference between immunization and vaccination?

The short answer is no. According to the Centers for Disease Control, “immunity” is protection from an infectious disease.

Once one is considered “immune to a disease,” one can be exposed to it without becoming infected. A “vaccine” is a product that stimulates a person’s immune system to produce immunity to a specific disease, protecting the person from the disease. Therefore, a “vaccination” is the act of introducing a vaccine into the body to produce immunity to a specific disease, while “immunization” is the process by which a person becomes protected against a disease through vaccination. In summation, immunization is often used interchangeably with vaccination.

Why is it important to have one’s children and adults in the family immunized? There are a variety of important reasons to support doing so.

First off, immunizations protect children from numerous dangerous childhood

diseases. Any of these diseases can cause serious complications and can even kill. A few of the many diseases these vaccinations prevent include Mumps, Measles, Rubella, Influenza, Hepatitis A and B, Diphtheria, Pertussis (“Whooping Cough”), Polio, Rotavirus, Tetanus, and Varicella (“Chickenpox”).

Secondly, these diseases, which significantly hurt previous generations, are now becoming rare, due to vaccinations. According to the Centers for Disease Control, “some diseases (like polio and diphtheria) are becoming very rare in the U.S.” This is thanks to children and adults getting vaccinated.

The National Immunization Awareness Month does its best to help raise awareness of the reasons why people should consider getting themselves and their loved ones vaccinated. However, at the end of the day, it is each person’s personal decision whether they do so. A great analogy the CDC uses to support why parents should consider getting themselves or their children vaccinated is that becoming vaccinated is like “bailing” water out of a slowly leaking boat. “When we [the American people] started bailing, the boat was filled with water. But we have been bailing fast and hard, and now it is almost dry.”

Considering all of this, this is not to say we should “throw away the bucket and relax.” The leak (infectious disease) has not stopped. However, thanks to becoming immunized, “we all will notice a little water seeping in.” Then, as a society, we can all work to stop the leak before it gets out of control.

Is Sleep Divorce a Solution for You?

“ I take thee to be my wedded wife/ husband, to have and to hold from this day forward, for better, for worse, for richer, for poorer, in sickness and in health, till death or snoring or insomnia or restless leg syndrome or sleep apnea do us part.”

In which case, a Sleep Divorce might be the best solution.

I am not making this up. If you Google “sleep divorce,” you will find the following definition: “A sleep divorce occurs when you or your partner suffer[s] from snoring or sleep apnea and think the only solution is for you to sleep in separate rooms.”

According to a survey from Slumber Cloud mattress manufacturers, 12 percent of American couples have “filed” for a sleep divorce, and 30 percent have discussed it.

Until recently, I would have scoffed at this idea! And perhaps you are doing the same now.

However, as my husband of almost 25 years and I have come to learn, sometimes a solid, good night’s sleep is more valuable than snuggling!

In fact, The Centers for Disease Control and Prevention recommends most adults get at least seven hours of sleep per night, and missing out can cause friction between you and your partner, as well as impact your health. A 2016 study found that sleep issues and relationship problems tend to occur simultaneously, and another 2013 study adds that when one partner gets

a poor night’s sleep due to the other’s nighttime disturbances, it results in conflict the next day. So, what are the signs that you and your partner should consider a sleep divorce?

Going to Bed Creates Anxiety Do you find yourself taking care of just “one more” chore or choosing another episode or two of your favorite Netflix series? It could be that you are subconsciously delaying your bedtime.

Or maybe you’re purposely going to bed much earlier than your partner in an effort to be asleep before they join you!

Your Ear Plug Collection If your nightstand has more earplugs than books, because you’re trying to drown out the noise of your partner, it may be time to consider another way to find nocturnal peace.

Inventory Your Medicine Cabinet The pharmacy aisle is filled with hundreds of temporary fixes for sleepless nights. While pills temporarily put you at ease, they come with a cost.

Side effects of common over-thecounter pills and sprays include headaches, vomiting, nosebleeds, dizziness, and drowsy driving, not to mention the toll they take on your pocketbook.

Your Nightly NightCap Having a glass of wine or a couple of beers acts as a light-switch dimmer in the brain, inducing relaxation and sedation, so it’s no wonder a nightcap helps ease you into sleep. However, long-term reliance on

late-night libations can cause increased risks of heart disease and cancer, and at a minimum, prompt daily fatigue.

The Boob Tube Crutch Adding noise to drown out your partner’s snoring is probably one of the safest ways to help achieve a good night’s rest. However, leaving the TV on is up for debate. Self.com notes that the light and inconsistency in noise could have an adverse effect on the quality of your sleep.

Want to give “sleep divorce” a try? Keep one very important fact in mind: it’s not necessarily a permanent situation. You might choose to sleep solo right now because of a newborn or mismatched work schedules, but in a few weeks or months, those needs may change.

Instead of going “all in,” take a scheduled approach. Pick two nights a week, like Mondays and Thursdays, to sleep in different rooms. W. Chris Winter, MD, Men’s Health sleep advisor and author of The Sleep Solution, says, “It works because you don’t have to make the decision every night, and it’s kind of fun to have these periods where you’re away and then reunite.”

Luckily for my husband and me, there’s a brand-new mattress in our guest room, so we can use the excuse of needing to make sure it’s comfortable for guests. I think we are going more for a “trial separation” arrangement than a full-on sleep divorce. Extra snuggles are being added throughout the day. Win-win.

Giving the JOY of a Swing Set to Children in W heelchairs

the many childhood memories I have, one comes to mind often; the day I was on my first swing set. I remember feeling like I could touch the sky and always wanted to be pushed higher. That love of chasing the clouds only intensified when my parents gave me my own swing set. Life just didn’t get better than that for a six-year-old. I can’t imagine not being able to be on a swing set and feel the wind in my hair and get as close to the clouds as possible, but for children who are in wheelchairs, unless there is a specially designed swing set, this joy that most of us take for granted as children isn’t possible. With the goal of bringing the joy of a swing set to children who are wheelchair users, IFB Solutions, the Kiwanis Club of Clemmons, the Carolina Kiwanis District Foundation, and Scout Troop 964 have joined to purchase and install one of a few of our state’s only swing sets designed to accommodate wheelchair-bound children, located on the playground of Tracy’s Little Red Schoolhouse in WinstonSalem, NC. When Good People Come Together, Good Things Happen It was through the networking of good people that the special swing set project came to be.

“Local Lewisville, NC, resident, Joel Schanker, volunteers at IFB Solutions and is also a member of the Kiwanis Club of Clemmons. Through his work with IFB Solutions, Joel met Chris Flynt, Director of Programs and Community Vision Centers.

Chris also is responsible for the S.E.E. (Student Enrichment Experience) program, which includes Tracy’s Little Red School House, a place where blind and visually impaired kids learn skills to be as independent as possible in a sighted world.

“We have four participants in our S.E.E. program who are wheelchair-bound, so it was evident the positive addition of the swing set would be to Tracy’s Little Red School House. In our S.E.E. program, we have a member of Scout Troop 964, so things fell into place with the troop being involved, too,” said Chris Flynt, Director of Programs and Community Low-Vision Centers with IFB Solutions. It’s one thing to have a good idea, but getting people behind the idea is another, especially during a pandemic.

Joel Schanker, IFB Solutions volunteer and member of the Kiwanis Club of Clemmons, was involved with this project from the beginning. “What was interesting about this project to me was that it took eighteen months to complete, because our two vendors fell through. Finally, we used Swingset Mall, then we had the pandemic and school closings to deal with. But all involved stayed with it all, focused on giving children in wheelchairs the joy of a swing set. The funding, a little over $3,500, came from the Kiwanis Club of Clemmons and the Carolinas District Kiwanis Foundation. Members of the Kiwanis Club of Clemmons committed close to 50 hours of work throughout the acquisition and installation. Troop 964

joined us to assemble the swing set. This was a complete community effort, and seeing the swing set in use for the first time reminded us of what the project was truly about,” Joel commented.

Reaching for the Sky The swing set is for registered S.E.E. children that want to feel the wind in their hair, reaching the sky a little at a time.

Chris Flynt stated, “In addition to my role with IFB Solutions, I am also a member of the Kiwanis Club of Clemmons, so this was an extra-special project. Within the S.E.E. programs, we have four kids that are wheelchair users. They have use of the swing set during business hours and programming activities. Because the use of the swing set requires some assistance when loading the wheelchair, we ask that use of it be reserved, so there is a staff member at the area to help.”

It is often the little things in life that are taken for granted, and many go a lifetime before they realize that. Fortunately, the volunteers involved in this worthwhile project knew the joy of a swing set and have brought it to kids who may never have been able to experience it.

August 14th is the date of many historic events. It is the day when Winston Churchill and Franklin D. The fourteenth of August also holds another historic meaning by being known as National Navajo Code Talkers’ Day. The Navajo code talkers were a group of Navajo Native American men employed by the Marines to create a complex and secret language to help with phrasing military words and tactics. The group would soon become known as the “inventors of the unbreakable code.” Today, they are mainly remembered for their contributions in World War II, but still little is known about their history.

The Navajo code talkers were born out of a need by the U.S. military during World Wars I and II. The military discovered they needed a quick and protected way to communicate to others in the military and keep their messages hidden from enemies.

The Choctaw code talkers in World War I paved the way for the Navajo code talkers in World War II. During World War I, the Germans had broken every American code used up until the introduction into combat of the 142nd Infantry Regiment, 36th Division of the U.S. Army National Guard. The regiment included a company of Native Americans, particularly Choctaw Indians and members of the Cheyenne, Comanche, Cherokee, Osage, and Yankton Sioux tribes. Twenty-six different languages and dialects were spoken by the various tribes. Soon, the languages were used by 18 Choctaw soldiers to transmit messages to others. These messages were about troop movements and tactical plans and were unbreakable by German code breakers, leading to the group being renamed “code talkers.”

About 20 years later, the Marines and Army brought back the code talkers to help with communications in the European and Pacific theaters during World War II. Philip Johnston was a World War I veteran and son of a missionary working with the Navajo tribes. Johnston based his recommendation on the code talkers’ experience in World War I and the complexity of the Navajo language. In 1942, 29 Navajo soldiers started boot camp and then moved to Camp Pendleton in California to develop the Navajo code, dictionary, and words for military terms. After training, a code talker was sent to the Pacific theater to work with the Marines.

Throughout the war, the Navajo code talkers were praised for their precise skills and ability within the military. However, their work remained classified, leaving little room open for public recognition until 1968, when the work was declassified. In 1982, President Reagan gave the code talkers a Certificate of Recognition and named August 14th Navajo Code Talkers’ Day. Then, again, in 2000, President Clinton awarded the Congressional Gold Medal to the original World War II Navajo code talkers.

Further honors came in 2001, 2002, 2008, and 2017. To this day, the dedication and commitment of the Navajo code talkers is celebrated and their story continues to be shared with future generations.

FUN FACTS: • Many Native American languages had never been written down until the code talkers.

• The Navajo language is complex and unidentifiable to anyone without any familiarity with it. There is no alphabet or symbols within the language.

• The code talkers took part in many important events and battles, including D-Day, the Battle of the Bulge, and the liberation of Paris. Major Howard Connor once stated, “Were it not for the Navajos, the Marines would never have taken Iwo Jima.” At the beginning of the battle of Iwo Jima, six code talkers worked for the first two days straight without a break. The six sent out over 800 messages without any errors.

• While basing their codes on their native languages, the group also developed words for military terms that never existed in their own language. For example, “colonel” became “silver eagle,” “fighter plane” became “hummingbird,” and “pyrotechnic” became “fancy fire.”

• In addition to the Pacific Theater in World War II, code talkers served in North Africa and Europe. After the end of World War II, some Native Americans continued to serve as code talkers during the Korean and Vietnam wars.

The Checklist for Middle School

smiles will greet this year’s class of sixth graders. Many will be eager to finally meet classmates, merging from other elementary schools to form their future class of 2028. Students seeking friendships and information will ask, “What’s your name, and what school did you come from?” While the immediate tripling or quadrupling of classmates may feel overwhelming, students will discover a new phenomenon in attending a much larger school—hallway congestion. Don’t worry!

Classroom rules, routines, and expectations are part of the learning curve! One of the best ways to feel leaps ahead of the class is to have a plan for managing time and organization.

Here are a few tips to help students feel well-prepared and successful!

Backpack Packing Guide: Many students will transition from “cubbies” to lockers, while others will miss the opportunity and live out of their backpacks. Well before day one, get to know the depth and width of every zippered area and pouch. Start thinking about where to place essential items, such as pencils, highlighters, erasers, index cards, and other class supplies. The goal isn’t to dig, but to reach in and extract with ease!

TIP: Even if you have trouble finding shoes on school mornings, it’s wise to maintain a tidy backpack, expectedly placed by the front door.

1. Where Did that Paper Go? In elementary school, students learned in math and science how to utilize a spiral

notebook. The self-contained format prepared students for the next step—a three-ring binder. Parents can assist by using color to differentiate subjects. For instance, red could indicate math, while green connects to ELA. Teachers will model set-up by insisting that each page include a headline and date. Both are essential if the unspeakable happens— prongs remain open, and months of papers spill onto the floor.

TIP: Don’t buy economy; instead, accept the expense and purchase durable binders!

2. T he Handy-Dandy Planner: Yes, it’s rather large in size and cumbersome, but it has appealing aspects, such as that students can record assignments both long and short-term, and reminders, such as “wash gym shorts,” “bring in dryer lint for Wednesday’s science class,” or “math test on Friday.” One helpful feature is each month’s full-page calendar, which can help students better visualize long-term deadlines. It may be a life-saver!

3. H omework Folder: Who wants the embarrassment of flipping through binders, folders, and a backpack in search of homework? The easiest solution is to designate one eye-catching or colorful folder for assignments.

Mark the left side as “assignments” by keeping handouts or directions for longterm projects. The right side will contain completed work.

TIP: As students pack up at the end of the day, they should always remember to take home the homework planner and folder.

4. H omework Hour: Sitting down to begin homework can feel exhausting; therefore, organize your evening ahead of time. For instance, chose the hour to start. How about 4 PM? Many students will know how long homework takes most nights; so, choose to complete one subject before taking a ten-minute break!

TIP: Always begin with the most challenging subject and finish with your favorite class.

TIP: Save time by opening the planner to the day’s date at the beginning of class. As teachers call out reminders or instructions, a student can jot them down without having to rely on his or her memory.

TIP: Eliminate distractions by completing homework in a semi-quiet place, such as the dining room table or den. Turn off or leave behind all technology during student sessions.

TIP: Each day, start by setting homework goals, especially for long-term assignments. Just remember, procrastination never results in a satisfying grade!

Creating a “homework” schedule and using strategies for time management will most certainly help all sixth-graders be successful and prepare for new challenges and greater responsibilities! Have a great year!

THE VALUE BEHIND PERSONAL MAIL IN A DIGITAL AGE

day that you open your mailbox and pull out the infamous random assortment of junk mail, you find the same things.

You fiddle through the perfectly addressed envelopes from random businesses; bills for which you already subscribed to the paperless option, yet keep receiving; the grocery store mailers that leave ink on your fingertips; and other pre-paid postage disappointments.

Some days, before you toss the bulk of it in the trash, you may even let out a sigh, remembering when checking the mail was actually a bit exciting.

Perhaps that was a long time ago, but a time nonetheless.

The majority of our personal correspondence follows the rest of the digital age and meets us in e-mail inboxes, text messages, or social media direct messages. From party invitations to birthday wishes, it’s become more and more rare to receive a physical piece of mail from family and friends. Even outside of the big celebratory gestures, how often do we see care packages shipped any more or even a simple four-

line postcard dropped in the mail? The way that we keep in touch, show we care, and give life updates has simply changed over time.

It can be so easy to forget just how special it can feel to receive a little “happy mail” from someone we care about.

Each generation has different memories around the experience of sending and receiving personal snail mail; the time we’re living in could use a reminder of just how valuable the experience really is.

When we send someone something personal through the mail we’re showing we went the extra mile. Taking time to send something as simple as a birthday card really stands out, when you could have just written that 30-second birthday message on Facebook covered with emojis. It shows the person on the other end that you chose a card just for them, took time to write something personal, paid that small stamp price and made sure it got all the way to greet them at their home. Simple as it is, it makes a difference.

Think about the height of the Pandemic, when most of the United States and other countries were on a strict lockdown. Now, imagine how a handwritten letter in a grandparent’s mailbox must have felt in those moments.

How opening an envelope filled with printed photos of their grandchildren could change their entire mood!

We often hear the sentiment “It’s the little things that count,” and when it comes to personal mail it really rings true!

If you’ve ever had that special feeling of opening your mailbox only to be surprised by a little happy mail yourself, then you know exactly what it can do for your day. What if each of us started making it our mission to add that same excitement to someone else’s day once in a while? Grab some interesting stationary, a book of stamps, and some fun-colored pens and get started!

Maybe you write a few personal letters to old friends or decide to send a birthday card to your sibling for the first time in years. Remember, it’s the little things! You don’t have to go overboard and create enormous, fancy care packages to make it exciting for someone--doodle a fun drawing on the outside of an envelope or a sticker to make the recipient smile when they pull the card out.

In our technology-centered world of correspondence the act of sending something may not feel good only to them, but to you, too.

There is so much value in going back to the basics and sending a little sunshine to someone you love.

Challenge yourself this week to think of someone who could use some of that sunshine and put a little postage on it. You won’t regret it!

How to Help a Shy Child Survive Starting School

After

a summer away from school, many students are itching to return to the classroom and spend time with their friends. For some children, however, this is far from the case. Public school is perfectly designed for children higher in extraversion and lower in neuroticism, but for introverted and anxiety-prone children, being surrounded by their peers with little control over their daily schedules can make them dread returning to school each year.

From personal experience, I was a child who became so nervous leading up to the start of a new school year that I experienced sleeping problems the night before the first day of school, along with an upset stomach during the first couple of days while I adjusted to a new environment.

In fact, my first day of middle school almost didn’t happen, as my stomach began acting up on the car ride to school. I somehow made it through the discomfort of my first day; but in hindsight, I now wonder if there were steps that could have been taken to make the experience less miserable.

Pull Some Strings If you know your child suffers from social anxiety and does not acclimate well to change, it might be worthwhile to talk to your school’s administrators about your child’s individual struggles. Although it’s not a guarantee that the school can make changes on your child’s behalf, oftentimes, parents know the needs of their children better than anyone; and a sincere conversation with someone in charge might open a few doors that will reasonably accommodate your child’s needs. Maybe taking initiative and scheduling a meeting with your school will result in your child being placed in a class with a teacher who is highly empathetic and comforting, or making sure your child has at least one other close friend in his or her class so he or she feels more content. While it is not always possible for your children to be given special privileges and often sets unrealistic expectations for when your child enters the “real world” later in life, if a minor adjustment can make a world of difference in your child’s school year, why not give it a shot?

Make After-School Plans Perhaps planning one of your child’s favorite activities after his or her first day of the new school year will replace your child’s anxiety with excitement or anticipation. Taking your child to his or her favorite restaurant,

or making sure your children have their favorite snacks in the car upon picking them up from school in the afternoon can make a world of difference if a child has had a bad day. When I moved schools after Christmas during my sophomore year of high school, my mom graciously took me to my favorite Mexican restaurant immediately after school for the first few weeks. I found solace in knowing that I would be chomping on my favorite chips and salsa after fourth period. If your children know that there is light at the end of the school day tunnel, they will soon learn that persevering through their distress is possible (and eventually not that bad).

Know When to Make a Change While mild to moderate levels of school anxiety are normal and will fade with time, it’s important to recognize whether expecting your child to push through is doing more harm than good. If your child expresses interest in home-schooling or online school, consider whether one of these options could be better suited to your child’s personal needs than a public school environment. If your child is under prolonged distress on a daily basis, his or her mental health can deteriorate, as well as the health of his or her immune system. If you’re hesitant to enroll your child in online learning programs or homeschooling due to the potential sociological consequences, gently push your child to find a church group or extracurricular activity that he or she genuinely enjoys to offset any potential social setbacks.

Teaching children to build resilience is imperative to their development and preparation for adulthood, but not if it means causing long-lasting psychological and physiological consequences.

“What-if?” the worrisome words, arrive constantly in the consciously spinning topics in our minds, from safety and financial security to loved ones and pet health. Asking, “What can I do?” leads to a proactive decision to invest time in the ultimate insurance policy—valuable life skills comprising security, shelter, food, water, and medical care! First, create a campfire and heat them for at least 45 minutes before dropping the bricks into the only container which maintains its shape while not releasing toxic fumes—a stainless-steel pot. The container will require a heatproof and fireproof platform, such as bricks.

Congaree National Park: Located in Hopkins, S.C., Congaree National Park is 18 miles south of Columbia. It is part of the Congaree Biosphere Region. The park, which is free, is the largest intact area of old growth bottomland hardwood forest in the southeastern United States.

The most popular activities at the 27,000-acre park are boating, fishing and hiking. Congaree has 2.4 miles of boardwalks through the swamps and 25 miles of hiking trails, according to the National Park Service.

Because a majority of the park is located in a floodplain, the trails are mostly flat and there is little change in elevation.

Throughout the park you’ll see otters, wading birds, loblolly pines, oaks, maples, bald cypress, tupelo and holly trees. Fishing is allowed throughout the park with a valid South Carolina fishing license. But only recreational fishing is permitted. Catch and release sportsmanship is encouraged.

Kayaks and canoes are the only boats permitted in the park.

Three Regional Trips for July and August With the dog days of summer here and travel back in full swing, a road trip may be the best option for those looking to lock in a getaway.

Here are three options to consider: Chattanooga, Tenn., Congaree National Park in South Carolina and New River Gorge National Park and Preserve in West Virginia.

Chattanooga: As of late June, there were not any COVID-19 travel restrictions in Tennessee. But it’s a good idea to check state government websites for COVID-19 updates before you leave.

Rangers lead paddle tours and walks throughout the park, telling visitors about the natural and cultural history.

The only accommodations within the park are two campgrounds, which require reservations. And within the park there are not any food services, though there are limited options in Gadsden, about 10 minutes from the park.

Following CDC guidelines, fully vaccinated visitors to South Carolina do not need to wear a mask or physically distance in any setting except where required by federal, state, local, tribal, or territorial laws, rules, and regulations, including local business and workplace guidance.

New River Gorge National Park and Preserve: On Dec. 20, 2020, The park consists of the 53 miles of the New River and the 70,000 acres of the gorge that were created by the river – and there is no fee to enter the park.

There are an abundance of a activities: primitive camping throughout the park, an 83-mile scenic drive, guided activities throughout the year, 1,400 established rock climbs ranging from 30 to 120 feet in height, whitewater rafting, hiking trails ranging from ¼ mile to 7 miles in length, a range of easy and intermediate biking trails, fishing and hunting.

Interestingly, it’s not just lettuce defining the term, but also a diverse family of “weeds.” Kale, the nutrient powerhouse, also includes relatives, namely arugula, cabbage, Brussels sprout, broccoli, Mizuna, radish, collard, and turnip greens. Each type has unique nutrients, flavors, and textures! For all the extraordinary health benefits, inside the body and out, it’s one of the healthiest foods you can eat!

KALE This dark green, leafy vegetable is considered one of the healthiest. A one-cup serving provides over 100% daily value of vitamin C, over 200% of vitamin A, and almost 700% of vitamin K. In addition to adding it to salads and soups, you can find recipes for juicing, smoothies, and meals.

Mini-Dessert Shake Recipe: Place in a blender, add up to three cups of coconut milk, two cups vanilla, one cup kale leaves, up to ½ cup of avocado, two drops of peppermint extract, and liquidize.

Tropical Smoothie: Add the following to a blender and liquidize: 1½ cup coconut water or pineapple juice, one cup of frozen mango chunks, half-cup of kale leaves, and a squirt of lemon juice.

It is a misconception that calcium only derives from dairy products. In addition to nuts and seeds, like almonds and chia seeds, leafy greens can offer a 10% daily value. Calcium, among other essentials, promotes safe blood pressure, heart health, and strong bones and teeth. Since it has a strong, bitter and spicy flavor, it’s best if prepared through steaming, stir-frying, or boiling. Pickling, however, retains important plant compounds and antioxidant properties. Ever try Mizuna? It’s a Japanese mustard green! Delicious!

MUSTARD GREENS & LEEK FRITTATA Try making the following recipe for lunch. It serves two people generously or three to four individuals as a side dish.

Heat 1½ tablespoons of olive oil in a cast iron pan. Add two cloves of thinly sliced garlic, one pound of mustard greens (cut leaves in half; then crosswise into strips.) Add a pinch of salt. Sauté until the leaves appear wilted, roughly two minutes. Set oven to broil. Wisk five eggs to a froth and pour over vegetables. Top with crumbled goat cheese or sharp cheese. Cover the pan and cook on medium heat for a few minutes until the eggs set around the edges. Move uncovered pan to broiler and cook until eggs appear puffy and golden. Before serving, allow the dish to remain in the pan for a few minutes. Delicious!

WHAT ARE MICROGREENS? Who would consider arugula, celery, sunflower, or radish to be on a specialized list of “small” greens? Imagine consuming four to 40 times more vitamins and minerals in the smaller plant version. It’s true! Microgreens are jam-packed with nutrients. “Micro,” meaning “small,” is a young vegetable green approximately three inches tall.

The baby plant is older than a sprout and takes from one to three weeks to reach harvest. As a garnish adding color to a main dish or salad, it’s no wonder the “small plant” is a household favorite!

Key Tips Every Middle School Parent Should Know

school is an interesting time for many children and parents. A great deal can happen during the three years between elementary and high school. A student goes from having a couple of teachers to at least six, rotating classes multiple times a day, and being given more independent work.

Also, children develop physically, emotionally, and mentally as they turn into a teenager. All of these changes can be overwhelming and confusing for everyone.

However, don’t fear if you have a child heading to middle school, because these years are filled with fun and great memories.

To help bring out the good and stress-less times, here are key tips every middle school parent should know.

Model and Teach Organizational Skills - Organization is key for middle school. You are now juggling extra homework, extracurricular activities, and more. As a middle school teacher, I see daily struggles with organization, but have found the best way to teach these skills is to have adults model them and guide the student in several areas.

School Supplies – You will probably have more than one supply list for school, as well as several binders, and multiple notebooks. Organize your school supplies to what works for you.

Some teachers may be specific on how they want their materials labeled and used, while others don’t mind you sharing a binder for their class and others.

• Designate and label items for each of your classes.

• Pack your book bag the night before every school day to make sure you have everything you need.

• Color coding is another strategy to use, as well as designating a certain folder for completed work and a separate folder for work that needs to be done.

• No matter what items are on the supply list, a planner is the mostneeded item in middle school.

• Teaching your child the importance of writing down their homework at the end of every class, crossing it off when it is completed, and marking due dates of projects and dates of activities will be a lifesaver. Start this habit the summer before sixth grade and reinforce it throughout the next three years.

Time Management – At any age, time management and prioritizing tasks, skills most people struggle with, can be difficult. Create a schedule and a daily to-do list to manage time. Work with your child on building to-do lists for after school, the weekend, etc.

Block out time for individual activities. Keep in mind, middle schoolers will need assistance staying on track and getting committed to a schedule at first.

An example of an afterschool schedule is: • 3:00 – 3:30: Snack and walk the dog • 3:30 – 5:00: Homework • 15 minutes to look over science notes • 15 minutes to complete math problems • 30 minutes to study for social studies test • 30 minutes for independent reading • 5:00 – 6:00: Swim Practice • 6:00 to bedtime: - Dinner - Finish any remaining homework

- Shower

- Prepare book bag for tomorrow

Enforce Homework and Study Expectations – This tip also connects to organizational skills.

Studying for tests may be a newer concept. Each night or at least once a week, it is important to sit down with your child and go over their homework (making sure it has all been completed), upcoming tests, and their grades. Teach your child how to study. This can be covered in classes, but it is always helpful to reinforce at home. Create a study schedule. Starting well ahead of the test, assist your child with organizing his or her class notes and activities, and review these often. Then, encourage the use of different studying techniques, such as flashcards, review games, and practice tests/problems. By setting the norm of analyzing homework, recording due dates, as well as setting study habits, parents are teaching their children the expectations and importance of completing these tasks.

While these key tips are valuable, the best thing a parent can do to help their middle schooler is to get involved. Students do gain more independence at this age, but they need help figuring out what that independence truly looks like. As always, don’t hesitate to reach out to your child’s school for assistance.

Middle school is a new world and it takes a village, among the child, parents, and school, to be successful. The more support you can give your child in any capacity, the better middle school experience they will have.

Cue panic.

I, myself, am a professor. Education runs through my veins. I’d do anything for our teachers, and any chance I get, I sign up to bring baked goods, buy supplies, or send a thank-you note, but apparently remembering to make cupcakes is a challenge. I only had one job and I failed.

“ Organized Chaos: a situation in which there seems to be a lot of confusion and no organization, which makes you surprised that the results are good.”

– Cambridge Dictionary Organized Chaos is the title of my life.

When I was younger, I used to dream about having my own family.

I’d line up my dolls and make pretend. The mom would have on a pretty dress and the kids would be playing nicely together. The dad would be mowing the lawn and the family dog would be curled up on the couch sleeping peacefully. All with the smell of freshly baked cake wafting in the air….

Ha! If only.

More often than not, I find myself rushing out of the house in my pajamas, socks with sandals, hair in a messy bun and a baby on my hip, all while rushing my teenager out the door. I usually hand her a $10.00 bill for school lunch and quickly wave as she slithers out of the car, secretly hoping no one sees me in my cool outfit. (I think she may even run a little.)

Why is my life organization chaos? Picture this: The night before I prepped for the morning. I am the queen of prepping for the next day. It makes me feel like I have some semblance of control over my crazy life.

I made a nice lunch for my daughter, laid out an outfit for me and the baby and had breakfast prepped. Problem is, in answering work e-mails, and trying to stop an 11-month-old from climbing into the fridge, pulling the dog’s tail, and defusing a major fashion meltdown from my teenager, I managed to leave the lunch out all night. And the outfits? Well, my alarm never went off, so pajamas it had to be, otherwise we’d be late and that just wouldn’t do.

As I drove away from my daughter’s school, an e-mail from the school PTO dinged (I danced in my seat a little that it wasn’t work yet), reminding me that I had signed up to bring cupcakes today for the teacher appreciation day.

Gone are the days of daydreaming of being a perfect mom. Reality has set in. Parenting is tough.

In the middle of my pity party, I glanced in the backseat and my son smiled at me, babbling happily with some drool dribbling down his sweet little chin, and I realized my organized chaos is all worth it. I pulled quickly into the grocery store, bought the best, most premium cupcakes, snagged a few coffee gift-cards, and headed back to my daughter’s school. I got a few looks as I struggled with the massive baby stroller, my messy bun bobbing on top of my head, but the looks weren’t dirty, they were looks of understanding, compassion and solidarity, because other parents get it. This job ain’t easy, but we do it with our full hearts.

The receptionist greeted me with a smile, without any judgment, just kindness. She sang my praises as she took the goodies and commented, “It’s parents like you that keep things going.”

As I walked away in my disarray, remembering the stressful night before, and even more chaotic morning, I realized, I will never be a PTO mom. I won’t ever have everything in my life together and more often than not, I will be buying baked goods from the grocery store.

But you know what? I will never let my children down, renege on a promise to them, or miss an event. I will cheer them on every step of the way and be “the mom” that is proud of her children no matter what.

Perfection and parenthood do not go hand in hand.

What works for one parent most definitely will not work for the other. So, I commend all the PTO moms and dads who manage to participate and make it look so darn easy! Know that I will always be there to buy you some delicious treats and support you however I can—I may just look a little crazy doing it. Because at the end of the day, I will always show up.

Vacationing on a BUDGET

that the world is reopening, it’s time to go celebrate by going on vacation! As much as we would all love to go on glorious, tropical, monthlong vacations at all-inclusive resorts, realistically, we all have a vacation budget identified, and it’s important to stay within that budget. In addition—the tighter we keep to the budget, the more vacations we can go on! There are a lot of ways to cut costs on vacations, but here are some great tips for how best to keep everybody happy, including your wallet.

CAMPING Most campgrounds, especially state and national parks, are within the $15-$30/day range, which is an absolute steal in comparison to pricy hotels! Campgrounds also tend to have a lot of great free activities—you don’t even have to leave your campsite if you don’t want to. Most have hiking trails, and many even have playgrounds and swimming beaches. There is an initial investment for camping, in order to purchase the supplies needed, but if you go camping often enough it evens itself out over the years. Camping also has the added perk of saving money on food, as meals cooked over the campfire are significantly tastier than any other meals—and way more fun to cook.

STAY WITH FRIENDS OR FAMILY In our early twenties this was known as “couch-surfing”—but as adults with families it’s more positively known as “spending quality time with our loved ones.” It may not be possible, or the best situation from some families with complicated relationships, but if you have the right interpersonal chemistry this is the perfect solve. Not only will you get more time than usual to bond with your loved ones, you will get time to hang out as just adults when the kids go to sleep. Bonus points if you happen to have friends or family who live near a tourist attraction. (I’m looking at you, relatives with beach houses!)

AIRBNB Okay, hear me out on this one. I fully recognize that some of the options on Airbnb can be quite expensive, but there are many affordable options, especially if you travel outside of peak times and book ahead. Most places also offer a discount if you book a place for at least a week. If you are able to find a good one, many rentals can actually be cheaper than a hotel room—and you are more likely to be able to have separate bedrooms from your children. The biggest savings, however, is in food costs.

When staying in a rental you essentially just keep your normal food budget—adding in a dinner out or two into the vacation budget. By having space and facilities to cook and store food, you can save upwards of hundreds of dollars in dinners out and takeout food!

STATE PARKS When you find a place to stay, figure out what to do while you’re there. One of the cheapest (often free) options is to enjoy nature in a state or national park. Some of these are free, but some of them have a daily fee—make sure to do your research before you go, so you have the necessary cash. Our state and national park system has a huge variety of sights to see, and many free activities, hikes, and ranger programs to choose from. Spending time outdoors has also been scientifically proven to improve mental well being and increase a feeling of relaxation, so it makes it the perfect vacation destination.

RESEARCH FREE ACTIVITIES The best way to do vacation on the cheap is to do your research in advance. Most towns have town websites that include a directory of activities—many of which are free or low cost. In addition, there are loads of lists online of free activities in most areas, especially high traffic tourist areas. Festivals usually have free kids’ activities to attract the parents, so, as long as you trust your willpower not to buy everything in sight, these can be a great option. Finding a Facebook group for the area that you are traveling to can open up a lot of events you might not find otherwise, as well.

We all know how important vacation is, both for resetting our bodies and minds and making memories as a family. With these few tips I trust you can make amazing memories and come back feeling relaxed and refreshed, without having to juggle around any finances to make it work.

THE KIDS ARE GOING BACK TO SCHOOL The Good, The Bad And Let’s Hope For The Best!

How

will the past year be known in history books? The COVID year? The year of social isolation? The year the kids didn’t go to school? And what will the long term effects be? No one can know that yet.

I’m sure some kids must have thrived in virtual school or at least stayed at status quo. But for many, virtual school was stressful…emotionally, mentally, psychologically, and physically. There were technology challenges, lack of peer interaction, limited quality interaction with

teachers, general confusion and a lot of uncertainty. It all took a toll on parents as well. In a CDC survey, almost half of all parents reported increased levels of stress and nearly a quarter of them said their drug or alcohol use had increased and/or they were having trouble sleeping.

And that’s just the tip of the iceberg.

As we inch closer and closer to our new normal and get ready to send our kids back to school full-time, how do we prepare them? How do we prepare ourselves? What are the good parts of returning to school after a long absence, and what are the challenges?

THE POSITIVES The best part (for most kids) will be the opportunity to be with their friends regularly and have one-on-one face time with their teachers. This will not be the case for all kids, however, as the past year (for some) has created anxiety related to being back in a crowded classroom.

Another great benefit of reopening schools is having the opportunity to participate in sports again. If this is an outlet for your kid, they may really be missing the opportunity to keep themselves physically and mentally balanced.

I know this is true for my kids and we have done everything we can to supplement the lack of sports over the past year….but it was still a huge loss and took its toll on the whole family.

Having improved structure is something kids can get when they are present in school every day. They are held accountable in a different way when they are physically present and it’s harder to hide when you’re front and center in a classroom with a teacher nearby. Granted, I have teenagers so I’m speaking from that perspective!

THE CHALLENGES Kids of all ages may not rush back to school with the same energy and excitement we might have hoped for. It’s important to realize that this transition back to “regular” school has been a long time coming. They have gotten used to a different kind of life and readjusting to full-time school may be accompanied by some anxiety and questions.

There is also historical evidence showing mental health problems related to social isolation can last years after the event has ended. Parents should stay alert to their child’s psychological well-being even if it has never been an issue before.

Things to look out for would include: difficulty sleeping or too much sleep, lack of motivation, lack of enjoyment in their usual activities and uncharacteristic irritability. Try your best to be present, predictable and consistent. You might be the only area of their lives that feels that way right now.

If your child’s grades slipped during the pandemic, it may take some time for them to regulate. It may also take time for them to get back on track socially. Any socializing may feel awkward for a while.

What’s more, nearly everyone’s routines look different than they did before COVID. Sleep cycles are off. Meal habits may have shifted. Routines will have to change again to coincide with in-person school. Parent and child will need to set realistic goals and expectations with the understanding that finding your new groove will take some time.

The more you can plan ahead as a family, the more it will alleviate any anxiety your child may have and will instill in him or her the confidence needed to move forward. You may also discover that the fears you think your child has are really just your own and that your child is more excited than nervous and is really looking forward to seeing people again in person and learning in the classroom environment.

Mirror, mirror on the wall, Help me face my dietary downfall.

Everyone has those days when the reflection doesn’t offer a pleasing sight. Perhaps it is blemishes, chronic dryness, eczema, dark circles, or oily skin problems. When changes occur, begin by looking at your diet. Did you know that eating cooked tomatoes helps fight off the oxidizing effect of UV rays; carrots protect the skin’s outer layer; and turmeric is an effective anti-inflammatory and free-radical fighting option, claimed as a superfood? Our lifestyle habits directly influence those irritating skin conditions.

Acne Consuming pre-packaged foods may be convenient; yet, the outcome is a rise in blood sugar and inflammation throughout the body. The result is an oily substance in the skin called “sebum,” which leads to acne. Begin by eliminating white bread, corn flakes, potato chips, French Fries, doughnuts, pastries, sugary drinks, and other foods on the high-glycemic foods list. Change to fresh, colorful fruits and vegetables, which can calm inflammation. And, look at foods that are superfoods, rich in antioxidants, such as fish oil, oregano, Rosemary, watermelon, and oranges to balance your breakouts!

Chronic Dryness Are you, by chance, addicted to salt, or do you often sprinkle the mineral too heavily on meals? When the body has too much salt, it overcompensates by holding on to water. While it may explain the recent development of puffy cheeks, it also leaves the skin dehydrated. The solution is the following foods: • COCONUT OIL: Whether applying as a topical or using the oil to prepare meals, coconut’s healthy fats and antibacterial makeup add to healthy skin while moisturizing.

• AVOCADO: The blend of healthy fats, proteins, and vitamins equals a powerhouse to support collagen structure and maintain the skin’s moisture levels.

• SWEET POTATOES: Give yourself a healthy glow with this orange food. It can assist with skin renewal and dry, flaky skin.

Eczema The inflammatory skin condition, known as atopic dermatitis, results in skin irritations, oozing blisters, and rashes. Heredity and the environment play a role, starting in children younger than two years old. Studies show that mothers who take probiotics and avoid milk

are less likely to develop eczema. In addition, breastfeeding for a minimum of three months helps minimize problems.

The common foods to avoid are cow’s milk, eggs, soy products, gluten-based foods, nuts, fish, and shellfish.

Foods that contain a plant-based flavonoid called Quercetin are apples, blueberries, broccoli, cherries, kale, and spinach. Not only are these fruits and vegetables rich in color, but they offer the body powerful antioxidants and an antihistamine as well, aiding in reducing inflammation levels.

Dry Circles The body speaks through visible signs—the dark pigment and sagging skin point to a lack of water. Try an infusion, add fruit to the water, or start snacking on hydrating, regenerative foods, such as watermelon, cucumber, celery, blueberries, and tomatoes!

Raw honey is another natural, miracle food. Since its antimicrobial, anti-inflammatory, and an excellent moisturizer, add just a dab around the eyes and face. With essential vitamins and minerals, honey can improve blood circulation, promote skin-cell growth, and help form collagen. Follow the process regularly. It takes only a dab!

Oily Skin Trying every over-the-counter serum may not be the solution; instead, nutritionists and dermatologists recommend a dietary change.

• Salt causes dehydration, water retention, and an increase in oil levels. Look at canned foods, especially beans and soups, to assess sodium levels.

• Proteins high in saturated fats can produce excess oil.

Switch, for a while, from red meats to poultry or fish.

• Sugar causes an overproduction of sebum. Try switching to apple slices and peanut butter or oatcakes and guacamole.

• If frying foods, invest in an air-fryer or use Olive or avocado oils!

Healthy “skin foods” are the key to maintaining a beautiful complexion. Rather than find beauty in a labeled topical, the right foods can play a role in your skin and wellness.

Ways to Take Care of Yourself When You’re the One Taking Care of Everyone Else

BY KAREN COOPER “Take good care of yourself!” well-meaning friends and family say as they bid you goodbye…and you really do appreciate the sentiment, but you may be thinking, “Sure, I’ll get right on that, maybe sometime next year....”

So many of us tend to put our own care at the bottom of the priority list. We have children and partners who need us, aging family members who require a lot from us, work demands, volunteer obligations, friends who are going through difficult times, etc., etc. We realize (too late) that we may have taken on too much and feel there is no way out but to accept all the responsibility and do what is asked of us. To be there whenever we are needed. But what about our needs? How do we make sure we are taking care of ourselves when we are taking care of everyone else?

Research shows that the outlook for caregiving as it relates to health is troublesome. For example, a caregiving spouse between 65 and 95 who is experiencing emotional strain has a 60% higher chance of dying than people who are not acting as caregivers. Additionally, working adult children caring for their parents and also raising children are at an increased risk for depression, chronic illness, and a major decline in quality of life.

People of any age who are caring for someone, whether it be children, spouse or parents, are less likely (than non-caregivers) to keep up with preventative healthcare and practice regular self-care, such as exercise, getting enough sleep, eating nutritious foods, and resting when sick. Caregivers are also at an increased risk for high cholesterol, high blood pressure, and obesity.

We must make it a priority to ensure that caregivers are taking time for their own selfcare. Here are some ways to get there: Schedule self-care sessions To be your best self and the best caregiver for the people you love, it’s so important to take responsibility for your own well-being and make sure your own needs are being met. If you need to put this time on the calendar, make sure to schedule self-care appointments to occur regularly.

Ask for and accept help from others Many caregivers are hesitant to ask for help, and even when it’s offered, they decline. They may not wish to admit they can’t handle things on their own. However, knowing how to ask for help is essential for caregivers. People really do want to help! It’s just up to you as the caregiver to tell them how. Don’t wait until you are overwhelmed and exhausted. Reaching out for help when you need it is a sign of personal strength.

Learn to manage stress Identify sources of stress. Do you have too much to do, family problems, financial concerns, your own health issues…or something else? Identify what you can and cannot change and think about ways to concentrate on what you can change. Even a small change can make a big difference. Taking action to reduce stress can give you back a sense of control. Identify stress reducers that work for you, like meditation, walking, spending time with a friend, or anything you enjoy that gives you peace.

Communicate Effectively Being able to communicate effectively is one of a caregiver’s most essential tools. When you communicate in clear, concise, and productive ways, you will be listened to and most often get the results you desire.

Being a caregiver can be exhausting and demanding, and it is not at all selfish to focus on your own needs and care. Only you know what your true needs are; being able to speak up for yourself and get these needs met is critical to being at your best for anyone else who is depending on you. Make yourself a priority, stay healthy mentally and physically, and those in your care will thank you for it.

Becoming a Master Gardener

N.C. State Cooperative Extension, Stokes County Center agent, Bryan Hartman, performed a non-formal educational and horticultural demonstration for just one person.

He traveled to my home to assess the health of three poorly developing fruit trees. After several hours of discussing nectarines and apples, pears, and a large field of blueberry bushes, I couldn’t help but ask, “What is your title?” Getting excited over the arrival of seed catalogs and being thrilled to talk with another individual who is a plant-lover, I found meeting a master gardener to be indeed an extraordinary pleasure. With wide eyes, I learned many counties throughout the state schedule yearly classes for anyone seeking consumer horticulture knowledge and the opportunity to become a certified volunteer. Feeling elated, I asked, “How do I register?”

REGISTRATION Immediately, a gardener questions, “Do I know enough? Would I be eligible to sign-up?” The Extension Master Gardener Program is open to anyone who has a passion for all plant life. Topics include introductory botany, soils, plant nutrition, growing vegetables year-round, small fruits, trees, shrubs, the purpose of fertilizers, plant diseases, classes of insects, and defining a weed.

Anyone can register to attend classes whether they live inside or outside the county. Consider the opportunity at N.C. State Cooperative Extension office in Danbury. In-person classes will occur on Tuesdays and Thursdays starting October 19th from 1:00 to 5:00 p.m., ending on November 18th.

Participants can expect two hours of classroom instruction followed by a three- hour hands-on demonstration and application, or a group field trip.

A fee of $150 covers a handbook, supplies, and course excursions.

JOIN THE GROUP Of course, it’s not just the title we covet. Upon completion of the course, men and women are given the opportunity to become an “Extension Master Gardener Volunteer.” In addition to forming new friendships, attending monthly meetings, and receiving educational hours, master

gardeners assist in planning public workshops, events, and beautify gardens, benefiting the community.

After four years, I most enjoy visiting gardens, farms, and businesses and trying new gardening ideas with the other members on a shared goal!”

“Gardening was always a favorite activity, but it wasn’t as easy as I thought,” expresses Alice Kiger. “I needed to learn more, and the class was ideal for me. There were times in class the proverbial light bulb turned on, and I learned proper techniques.

Each year, I build on the previous year’s education, which brings more success. I have a grand feeling of accomplishment and enjoy sharing with like-minded friends. As my flower beds fill in with more plants year after year, it is hard to remember the days when they didn’t exist!”

“I joined the group because my cousin was involved, and I loved her enthusiasm for gardening,” writes Martha Hauser. “I fell in love with landscaping, preferring natural habitats to draw in pollinators. I have learned a great deal about the purpose of planting specific bulbs and annuals. One added plus to the annual membership is great friendships among the members, even in other counties. We have common goals and enjoy working together. So, come and join us!”

Each individual joins for different reasons; so, whether you are new to gardening or want to increase your knowledge, consider registering for the upcoming Extension Master Gardening course! It’s an opportunity well worth the investment of time!

Cilantro is the leafy part of the spice, coriander, and is most often mistaken for parsley. Unlike the clean, peppery flavor that parsley gives to a variety of dishes, cilantro is a bit stronger in flavor.

Its tangy citrus notes make it an excellent addition to basmati rice, chili, coleslaw, stir-fry, pasta salads, and of course, our Grilled Cilantro-Lime Chicken Tacos (see below). However, this cilantro-lime marinade can carry the fiesta beyond these simple tacos. Try the marinated chicken in homemade enchiladas, burrito bowls, and on top of your favorite savory salad!

Fun fact: Despite Julia Child’s exquisite palate, the famous gourmet chef and author, carried a gene, OR6A2, that made her perceive the aromas of cilantro to be like the smell and taste of soap. In an interview with Larry King in 2002, she stated, “I would pick it [cilantro] out if I saw it and throw it on the floor.”

Now, you may be wondering, are there even any health benefits behind those tiny green leaves? The answer is yes! Cilantro has a high concentration of antioxidants, which may offer protection against a variety of degenerative diseases, such as arthritis, heart disease, diabetes, Alzheimer’s disease, and cancer. It has also been known to naturally raise energy levels, as well as promote healthy hair and skin.

Grilled Cilantro-Lime Chicken Tacos INGREDIENTS

For the Cilantro Lime Marinade 1 l b. Chicken Thighs, boneless and skinless 2 Limes, juice and zest 2 Tbsp. Fresh Cilantro, chopped 1 Tbsp. Extra Virgin Olive Oil 1 tsp. Chili Powder 1 tsp. Garlic Powder 1 tsp. Ground Cumin 1 tsp. Salt ½ tsp. Black Pepper

To Assemble the Tacos: Tortillas Pico de Gallo, or Salsa Shredded Cheese Fresh Cilantro, for garnishing Avocado, thinly sliced

INSTRUCTIONS: 1. P reheat the grill.

2. I n a large bowl, whisk together all the marinade ingredients, adding in the chicken, once well-combined. Transfer the mixture to an airtight container or sealable bag, then refrigerate for 30 minutes to 2 hours.

3. R emove the chicken from the marinade, then place directly on the grill to cook until internal temperatures reach 165°F, turning as necessary. For added flavor, brush the chicken with the leftover marinade occasionally.

4. O nce completely cooked, set aside for 3-4 minutes to rest, then chop or shred into bite-sized pieces.

5. W arm the tortillas while the chicken is resting, then assemble the tacos with pico de gallo, shredded cheese, sliced avocado, and fresh cilantro. Enjoy!

When Your Child Has a Dream That Doesn’t Come True

all have dreams for our children, and they have dreams for themselves.

Their dreams may be unrealistic at times… like my son’s alternating dreams of being a pro basketball player or the winner of Wimbledon… but that doesn’t make them any less real and important. Childhood dreams are self-esteem builders. They fuel the passion inside us to make ourselves better. They are dreams worth supporting…up to a point.

We live in a world where it can be easy to get too wrapped up in sports culture, fame, fortune, movie stars and the like. For most of us, these are not the goals we want our children to aspire to, but the appeal is strong, and a child dreams of fame, fortune and of being a star!

As a parent, you are their reality check. It’s important to let your child know he or she can do many things, and dreaming big is always a great thing to do. It’s also important to keep them grounded in the real world and remind them that they are special no matter what.

Here are some no-nonsense ways to help support your child’s dreams: Let them know you love to participate—whether it be watching a game, coming to an orchestra performance or watching them dominate at chess…you are THERE FOR IT!! Whether they win or lose, you will always be there for it.

Stay realistic—help your child keep his or her goals realistic.

People love to say, “You can do anything if you put your mind to it”…but that’s not really true! Not every person can do everything. Home in on your child’s skills and talents and encourage what they’re best at. It doesn’t mean the professional sports dreams

have to be shelved, it just means encourage them to have more than one dream. It’s okay to fantasize about that one-in-a-million dream, if you acknowledge it as a one-in-a-million chance. A realistic dream is something you have more control over, such as getting a degree or visiting another state. Help your child know the difference.

It’s okay to change your mind—just because you have one dream one day, it doesn’t mean you can’t have a different dream the next. We grow and change and our desires for ourselves change with us. Support that growth and change in your child.

Most dreams require effort—many people have big dreams, but some are not organized or motivated enough to do what’s necessary to make them actually happen. If your child wants to be a star athlete, it takes good genetics, skill, determination and years of sacrifice and practice. If your child has his or her heart set on attending an Ivy League university, he or she will most likely have to forgo a lot of socializing to spend time hitting the books to be at the top of the class. Even then, natural abilities and proficiencies will be required to get them there…not to mention financial resources. They may need to get a job to help finance any big dream they have. If things aren’t falling into place, and if your child’s dreams are not coming true, be sure they are taking the appropriate actions to help get them there.

Normalize this message—even if you work hard and do everything right, your dream still might not come true…sometimes it’s just not meant to be, and it it’s no one’s fault. Instead of fighting so hard for something that’s not paying off, it might be better to step back and let life choose the course for you. Try being patient and you will eventually be shown a new path. When something is meant to be, you may not have to fight very hard at all to make it come to pass.

Having something to strive for gives our lives purpose. Dreams allow children to develop their imagination, their passion, and their work ethic.

As their parent, we should always celebrate their accomplishments and teach them to put things into perspective by giving thanks for all the dreams that come true in their lives…the big ones and the small ones…and teach them to enjoy all the steps along the way.

ASKING QUESTIONS

I recently watched an interview with famed “Why” guy Simon Sinek who stated very simply, “I’m an idiot.” He shared about a meeting he sat through where he was clueless about what was being said. He said that he just kept asking questions, admitting he didn’t know or understand the presentation.

I can relate. As a freelance writer, part of my job is to interview people, listen to them as they tell their story or share what they do, and ultimately – translate that in an articulate way for whomever my reading audience may be. In order to do my job, I show up at every interview as an idiot who doesn’t know. I ask a lot of questions.

Asking questions isn’t a bad thing. But, I think we go through comfort levels with our questioning…a three-year-old has no qualms about asking “Why?” every 2.5 seconds. But, a 13-year-old may hesitate, fearful of looking stupid in front of the class. And, in college, questions may be more boldly asked and explored to make the most of higher education.

Then we get to be adults. A young adult may be selective about whom they ask things…

Mom, Dad and friends are safe, but asking questions as a newbie in Corporate America may feel intimidating.

We’ve got to be okay admitting we have questions. Especially about the Bible.

I’ve heard it so often in Bible study groups – people are afraid to speak up for fear of looking like idiots. But, what if Billy Graham had thought that way? Or Greg Laurie? Or Max Lucado? Or Charles Stanley? We all start at the same place – a blank slate. There’s nothing wrong with asking questions about Scripture. There should be no fear of feeling stupid because this is about eternal matters! Besides all that – we never stop learning! I’m convinced that even on his deathbed, Billy Graham was still learning about God. We’re never going to reach a place where there’s nothing left to learn about God and the Bible.

And, if I can take a little trip down a rabbit hole…it’s important to understand that there’s a difference between asking God questions and questioning God. God doesn’t mind our questions as long as we don’t question His authority or His promises.

God welcomes our questions when they come from a place of sincerity. He has promised to be found when we earnestly seek Him (Jeremiah 29:13). And, in James 1:5, it says, “If any of you lacks wisdom, let him ask of God, who gives to all liberally and without reproach, and it will be given to him.”

So, don’t worry about feeling like an idiot. If I can take us back to Simon Sinek’s story…as it turned out – no one else understood either. Simon was just the only one who was okay admitting he had questions. By being bold enough to ask questions, you may be helping out someone else, too.

MINUTE for your Minister HURTING PASTOR’S WIFE

BY PHIL LEWIS I recently came across this post from “weary, hurting pastor’s wife.” She shared“Today I gladly hand in my ‘Pastor’s Wife’ title…a church member came up to me after a Bible study to tell me how inconsiderate I had been and how I had hurt someone’s feelings. The Sunday she was referencing, I had had a sinus infection along with a migraine headache and had barely made it through the service. I then went home to sleep through the next two days. I do not even remember much from that service, but I’m being reprimanded because I didn’t do whatever she thought I should have or should not have done, and I’m just tired!”

Maybe you are a pastor’s wife who has been in this exact same spot, or maybe you are a church member who never thought about all the pressures a pastor’s wife faces, trying to please and meet the expectations of so many people.

Some days are just hard, and we all need to give grace to each other.

Next time you are tempted to criticize your Pastor’s Wife, can you take a minute and try to imagine what it is like to walk in her shoes and to live in a glass house with so many named and unnamed expectations? Can you, instead of sharing something negative, take that opportunity to #betheone to write her a thank-you note and show her what it is like to be encouraged, supported, and loved? Maybe God could use you to allow her to happily reclaim her “Pastor’s Wife” title.

God, Guns and O, Lordy…

It

is important for you to know this about me before we go any further. I am a veteran. I was deployed with the US Army First Division to the Balkans in 1995. I am not looking for a medal here, but just giving you background. I have owned and shot pistols, shotguns, and rifles since I was twelve. I was a member of the NRA. I come from a family that had a healthy respect for firearms and enjoyed shooting and hunting. I currently own a rifle and pistol. I don’t believe all guns should be banned. It is important that you know this, so you don’t write me off as a rabid anti-gun type. Okay, now that is out of the way, let me tell you, I do have an issue with guns.

us armed to the teeth like a John Wick movie? Sure, if we want to defend our gun ownership, that is our right as an American citizen.

But it really has nothing to do with being a citizen of the Kingdom of God. So, if you are a big gunrights advocate, please defend your position referring to the constitution, academic research or legal arguments, or logic. But whatever you do when it comes to this topic, please truly, for God’s sake, don’t drag our Christian faith into it.

Here is my problem. Too many of us have convinced ourselves that our faith supports, even promotes, gun ownership and the rights to bear arms. Like the bumper sticker/ T-shirt I have seen countless times at Myrtle Beach or Gatlinburg, “God, Guns, and Glory!” Seriously? Do we really believe that Jesus, the One who taught us to “turn the other cheek” and to “forgive, so we will be forgiven” and told Peter to put down his sword in the Garden of Gethsemane, wants

So, what am I getting at with all this? First, trying to bolster our gun rights position by dragging God into it makes for bad theology and even worse testimony to non-Christians.

Frankly, it is laughable in an unfunny kind of way. Second, gun violence is spiking. The highest it has been in decades. We hardly blink an eye now when we hear about mass shootings, because they occur almost daily. Whether you are a Jesus follower or not, this should keep us up at night.

It is clear from the Scriptures Jesus never owned a sword, and I am convinced if he was physically with us today, he wouldn’t be fighting for the right to own an AR-15 or AK-47.

But if we have committed our lives to following Jesus, who lived a life of peace, perhaps we, first and foremost, should be at least open to sensible gun control measures.

I confess, I enjoy shooting assault rifles at targets, but out of love for others, I am willing to give up that right if it might allow a husband to come home to his wife.

Yes, reloading is tedious, but I am willing to restrict extended magazines, if, by doing so, it will spare a mother so she can watch her children grow old. Sure, it might be more convenient to bring that hunting rifle home the same day we bought it, but I think it is worth the wait, if by doing so it means a father will live to give away his daughter at her wedding one day. As Jesus followers, loving our neighbor means perhaps at times we give up a right to prevent a terrible wrong.

And even if you disagree with everything else I wrote, can you at least stop wearing the T-shirts and peel off bumper stickers? If you are like me and own a gun, let’s be real.

It has nothing to do with God and certainly has nothing to do with His glory. I am just shooting straight with you.

The Truth of Old Wives’ Tales

Even at her most solitary, a cook in the kitchen is surrounded by generations of cooks past; the advice and menus of cooks present; the wisdom of cookbook writers.” ~ Laurie Colwin We think someone with generations of experience must know more than we do; therefore, unconditional belief in advice can bring exponential good fortune. We witness family, friends, and strangers who secretly throw salt over their shoulder to ensure a cosmic balance in order to feel safer, happier, and, while wishing upon a star, healthier. Is it that simple?

Psychologists note that our brain remembers and stores information. But after a time, the knowledge isn’t just stored; the old wives’ tales are believed (most of the time!).

JUST A FEW NOTABLE OLD WIVES’ TALES: Eating Chocolate Causes Acne: Wise parents suggested to their children that a high-sugar diet was connected to the arrival of pimples; yet, it takes a high quantity of foods on the glycemic index combined with increased levels of hormones and insulin to make this belief accurate. (Maybe the stash of chocolate was coveted by the parents who sought a reason for the kids to stay away!)

White Wine Can Remove a Red Wine Stain: Unfortunately, sugars within the wines will eventually create a significant problem. A clear liquid is correct, however. The best strategy is to blot the stain with a damp cloth before sprinkling it with baking soda. Using white distilled vinegar also helps.

Carrots improve Eyesight: Many a youngster ate carrots just in hopes he or she would develop x-ray vision like Superman! While the orange vegetable contains vitamins E and C and vital minerals, such as beta-carotene, lutein, and zinc, it takes more than one serving to fulfill the desire for impeccable eye health.

Spilling Salt Brings Bad Luck: Be very careful with salt. Each fallen grain links to a tear you’ll shed in the future! So, quickly, toss it over your left shoulder to ward off the devil! He’s lurking there. With an unexpected toss, he’ll promptly flee.

Carry an Acorn for Eternal Life: Almonds, cashews, and macadamia nuts are excellent sources of vitamins and minerals and beneficial for overall health, while an acorn is the seed of a tree known for long life. Perhaps it’s a talisman of hope!

Eating an Apple Daily Keeps the Doctor Away: consumption of fruits and vegetables promotes daily health.

Eating an apple certainly can’t hurt you.

It helps digestion!

Spicy Food Causes Ulcers: Pointing the finger at a spicy meal is quite unfair! Eating chili peppers can boost metabolism levels, support immunity, thin the blood, prevent strokes, and reduce inflammation. So, what can a person blame for ulcers?

Interestingly enough, frequent intake of over-the-counter medications, which include aspirin, ibuprofen, and naproxen sodium.

Swallowed Gum Takes Seven Years to Digest: According to doctors, the body’s digestive acids cannot break down the gum base, although they will extract the sugars and preservatives.

The gum can pass immediately.

Swallowing an occasional piece of gum will not cause harm.

A Peeled Potato Absorbs Salt: Bad meals happen. Crafty solutions create interesting results. For example, an over-salted soup will absorb some water, if one adds a peeled potato.

It may take five potatoes and an additional 30-minutes, and the promise isn’t necessarily a palatable soup.

Testing Eggs: In a bowl of water, allow an egg to settle at the bottom for a few seconds; then, observe what happens.

Eggs that remain horizontal are fresh; however, if one end rises slightly, eat soon! Never consume an egg standing vertical or floating.

Sixty-four percent of people have tried a home remedy or an old-time belief for an ailment. It’s a means of support in times of discomfort to promote health and wellness. According to a poll, 49% of people believe in eating an apple a day, while 58% affirm carrots improve eyesight. Are they wrong?

No. But many old wives’ tales have a “bite” of truth!

Choosing

a school for your children is hard, and the choice system in Winston-Salem can be confusing at times, especially to those of us who come from small towns that only had one public school option.

The city is designated into zones, each of which has schools assigned to it.

There are 11 zones for Elementary and 7 for Middle. Within each zone, there are separate boundaries for each school.

Where you live will determine your residential school—this is the school that your child will be guaranteed acceptance into.

To find out what school zone you are in and what your residential school is, go to the following website and enter your address: assignment.wsfcs.k12.nc.us/ locator/home/.

To any other schools within the school zone you can apply to be “choiced in”— this is called the “school choice system.”

Acceptance into these schools will depend on how many spots are open at the time. You can also apply to out-ofzone schools, but no transportation is offered for these.

In the Winston-Salem Forsyth County School System, there are 44 Elementary Schools, 14 Middle Schools, and 13 High Schools. You should certainly do additional research to make a good decision based on what qualities would work best for your family, but we have done profiles of a few Elementary School options below!

Speas is a very special school in Winston-Salem, in that it has two separate tracks that families can choose from. There is a standard class option, similar to most schools, and then there is a dual language immersion class that teaches all classes in English and Spanish. Movement is so important for all humans, but especially children.

Petree Elementary has developed an innovative way for the children to be active with their Yoga Program.

A local yoga teacher comes to the school weekly (and via zoom during the Pandemic shutdown) to engage students in yoga for their minds and bodies. Each week she has a different theme, including compassion.

Kimmel Farm Elementary is a very diverse and engaged elementary school. Greatschools.org rated this school 10/10 for student improvement, which is a fantastic accomplishment. Their active PTA does a great job of supporting the teachers, as well as providing volunteers to enhance the students’ school experiences.

As one of the local magnet schools, Brunson Elementary focuses on STEM learning with a thorough HAG (Highly Academically Gifted) program. With a 14:1 student to teacher ratio, Brunson’s test results are consistently higher than the state averages. In addition to their academic programs, they also have a bilingual program that transitions native Spanish speakers into comfortably speaking English at school. Their STEM program uses a project-based curriculum called “Engineering is Elementary,” to challenge their students to grow academically and creatively.

restrictions are lifting from Covid 19, people are eager to resume living and getting back to their routines and passions. Countries around the world rely on others to help feed those in need who have not been spared by the pandemic. On June 26th Pine Grove UMC held the Rise Against Hunger event. Rise Against Hunger is a global movement to end hunger by empowering communities, nourishing lives and responding to emergencies.

The concept of this mission began while Ray Buchanan was serving as a U.S. Marine during the Vietnam War. He recognized that accomplishing the mission required “commitment to something larger than yourself.” Later as a United Methodist minister, Ray embraced the vision of a world without hunger and co-founded Stop Hunger Now in 1998 alongside and with generous donor support from entrepreneur John Hewitt. Stop Hunger Now rebranded in 2017 to become Rise Against Hunger.

The focus behind Rise Against Hunger’s operation is the appreciation that ending hunger is more than just feeding people, which has led Rise Against Hunger to concentrate

its feeding programs in areas where a real impact could be felt and expand its hunger-fighting programs beyond meal packaging and distribution.

Rise Against Hunger facilitates meal packaging events all across the country through 19 domestic locations, and through their 5 international affiliate locations in India, Italy, South Africa, Malaysia and the Philippines. Groups gather and package dehydrated ingredients in assembly lines, then box and palletize the meals, and truck them from Charlotte to Charleston in 40’ containers with 285,120 meals all together, where they are then shipped to distribution partners around the world.

Pine Grove UMC packaged 14,256 meals (66 full boxes) at their event on June 26th, and they have now hosted 10 events since 2010 totaling 170,412 meals packaged (789 full boxes). We don’t know the destination for this year’s meals yet until we have enough inventory to fill our next container, but their previous year’s meals were shipped to: Nicaragua supporting our Latin American school feeding partners: 5/4/2019 - 10,152 meals to ORPHANetwork

Within a few years, I myself was wearing the Boy Scout uniform and learning the same Scout Law. (Yes, I can say it as fast as Charlie.) As I made my journey through scouting, I had a plethora of wonderful experiences and made great friends. Bonding with young men my age, going on camping trips, attending scout meetings, climbing in rank and earning honors, combined with the invaluable skills I picked up, prepared me for so much in life.

My favorite memories center around the annual pilgrimage to summer camp. The fun times I had earning merit badges, performing skits or singing songs around the campfire, surrounded by hundreds of other scouts and leaders, will never be forgotten. But just like anything in life, there were a few times I did not particularly enjoy. In all the years I attended summer camp, 95% of my memories are wonderful. The few unpleasant experiences, though not horrible, still taught me just as much as the positive ones.

A Scout Is… Shortly

after I was adopted, I was introduced to my new mother’s brother, Uncle Charlie. Uncle Charlie was unlike anyone I had ever met. He had a boisterous, jolly personality and was the kind of person you couldn’t help but feel good around. If he wasn’t doing hilarious impersonations, he was telling stories that had everyone in stitches. One of my favorite things Charlie did was recite the Boy Scout Law. Except Charlie did it in a way that left me laughing and perplexed at the same time. He would start out veerrrryyy sssllooowwwlllyyyy. “A Scout is….” and then as quickly as he could, would fly through the rest, “Trustworthy, loyal, helpful, friendly, courteous, kind, obedient, cheerful, thrifty, brave, clean, and reverent!” He would say it so fast, it sounded like one long word. I would laugh every time because it sounded so ridiculous. At the same time, I was in awe that a human could talk that fast. And I was boggled, because I was too young to know what half of those words even meant.

One experience recurred at every summer camp and was really more of a nuisance. Every year at the beginning of camp, there was a ritual that all scouts had to go through—the dreaded swim test. Now, I wasn’t worried about the swimming portion (I was an excellent swimmer). It was another part that I dreaded. You see, the test took place in a lake. A lake that had God-only-knows-what living (or dead) in it. Think about it—you had to jump into a lake in which you couldn’t even see your own feet, much less the bottom. Take a murky lake, a young boy’s wild imagination, and a myriad of horror films that took place AROUND LAKES!!, and you’ve got a recipe for paranoia. After I easily passed the swim portion, it was time for the dreaded moment. Each scout was required to dive down to the bottom of the lake and grab a handful of…well, whatever you could grab—weeds, mud, muck, a severed hand…I absolutely hated this part! With my luck, I was going to put my hand right into the mouth of a waiting snapping turtle. But I knew what I had to do, and I sure as hell wasn’t going to wimp out with all these other boys around me. Talk about a humiliating week at scout camp! Oh well, here goes nothing.

Taking in as much air as my still-forming lungs could hold, I dove down, kicking furiously and pulling the water with my arms just wanting to get this over with. It probably wasn’t more than 10 feet deep, but it seemed like 100. The entire time, the hideous things that awaited at the bottom raced through my head. No turning back now. Finally, my hand would hit bottom. If a scream could travel through bubbles, I’m sure everyone at the surface would have heard me. As my hand groped through muck and God knows what else, I quickly closed it, and turned back toward the surface. Again, kicking like a madman, I made my way back toward lifegiving air. Bursting through the surface of the water with lake muck oozing out from between the fingers of my outstretched hand, I had passed the swim test. The rest of camp would be a breeze.

Every single summer until the age of 18, I returned to summer camp. And every year, even though the test got easier, I never did completely get rid of those horrifying images of what lay in wait at the bottom of the lake.

decent amount of “dry” wood. Now to get it lit. With empty stomachs, we repeatedly attempted to light the tinder. And repeatedly the flame would die, along with our hopes of going to sleep with full bellies. Around us, other small groups of scouts were dealing with the same issues—counselors being jerks and wood that wouldn’t light. It wasn’t long before the low morale started creeping into the groups. Arguments, bickering and even crying started to set in.

Another not-so-fond memory involved one of the required outings for a merit badge. I had only been a Boy Scout for perhaps a year or so—a Tenderfoot. I was still fairly new to this (Cub scouts and Webelos only prepare you for so much) and I was still learning the ropes—literally and figuratively. I was taking the camping merit badge, which was a required badge for the Eagle rank. All week long, things went fine. We attended classes learning all the skills that would turn us into “Master Campers.” The big, culminating event for the camping merit badge was that every boy in the class headed out on Thursday evening for “Outpost.” Outpost was more or less the Final Test. There were always rumors and tales the older scouts would tell the younger ones about outpost to scare them. Most of these stories were ridiculous—a scout getting dragged off into the woods by a bear, stuff like that. And then there were stories that didn’t seem too far-fetched. Little did I know that the outpost I would be going on would become one of those stories.

Late Thursday afternoon, we all met up at the camping merit badge site. The skies overhead were threatening. We were allowed to bring very few things. We would be roughing it. Most of us had a sleeping bag and some matches; probably a few pocket knives as well. But that was about it. We could have no food. The camp counselors had everyone’s food for the night. We would earn our food when each small group had a fire built. No problem for a group of Boy Scouts, right? Not so fast. As soon as we started our hike, the heavens opened up. The rain came down hard and fast. By the time we reached Outpost, everyone was soaked and spirits were low. Immediately things went from bad to worse. The camp counselors, who were soaked as well, began treating us horribly. They started smoking cigarettes, cussing at us, and acting like anything but scouts. It left an indelible mark on me to see people who were supposed to be professional acting in such ways.

My group was determined not to fail and let those jerk counselors win. After what seemed like hours, we finally had a small flame. Slowly the wood started crackling and bigger pieces started catching. Carefully, we continued to feed the flames until it grew into a nice blaze. We had done it! Almost with surprise, the counselors gave us our meals—ground beef, potatoes, onions , carrots and celery, folded up in aluminum foil. As the food slowly sizzled in the foil, the smell began to emanate through the air. I can actually remember feeling bad for the other scouts still trying to start their fires, while we were enjoying ours. I would have gladly given some of our embers to others, but we were not allowed to help other groups—it kind of makes one question the point of the “helpful” in the Scout Law. That night, my group was the only one to eat, other than the counselors. There was a lot of whimpering and moaning, as we all tried to sleep after a very long evening. The experience, while not nearly as traumatic as I might make it seem, has never been forgotten.

Between the lake and Outpost experiences, I learned that when you don’t give up, you keep a positive attitude, and you use teamwork, you can indeed succeed. I also learned that life isn’t always easy. You aren’t always going to get what you want and there will be times you may go to bed hungry. That’s just part of life.

All of my scouting experiences, good and bad, have helped contribute to the man I am today. All these years later, I still try to embody the qualities of what a scout is…

Problem—all the wood was soaked. The rain had stopped, but the sun was setting. There would be no drying out of anything. Fortunately, a few of the guys in my group were a little older and more seasoned. We began looking up into the standing trees for the driest dead branches we could find. Anything on the ground was useless. After a good deal of searching, we were able to gather a fairly AUGUST 2021 / 71

wise individual said, “If you’re old enough to love, you’re old enough to grieve.” Learning of a pet’s illness impacts the entire family, especially young children. They immediately want the role of caregiver, ensuring their four-legged friend has a quality life even in those final weeks or days. Caring for a fragile pet is much different than the act of placing gauze and tape on a stuffed animal’s boo-boo. While parents might feel hesitant to allow their child the opportunity to help, the moment presents an emotional connection to instill the values of compassion and kindness towards a sweet friend.

Help with Grooming Most animals, when feeling poorly, do not have the energy to groom themselves. Start with the act of petting before offering a brush to a child. Point out sensitive areas and model using the tool first. In lieu of baths, use a damp cloth. Cotton balls are helpful in cleaning waxy ears.

Hide-and-Seek When animals no longer seek comfort of familiar locations, it’s time to start searching. Usually, animals will want to hide. Explain to young children how similarly animals act when compared to humans. When the body feels bad, it’s okay to seek a quiet environment, such as a bedroom with a comfortable bed, and sleep.

Together, you can check on your sweet pet or consider lying on the floor at a distance to build reassurance.

The Rule of Absorbent Pads or Pet Diapers Children are good observers and will be eager to inform their parents or babysitter of notable changes, both positive and negative. Pets suffering from cancer may leak fluids, such as mucus or blood. It should be a household rule never to admonish a pet for accidents, and only adults should remove bedding or diapers from bed-bound animals.

TIP: Animals can contract bedsores, too. Only adults can help ailing animals change their position.

TIP: For an animal’s stiff joints, consider adding extra blankets underneath absorbent pads. The goal is plush comfort.

TIP: Hydration is vital to health. Keep a water bowl close to the bed.

Changes in Food and Feeding A turned away nose or skipping meals is an immediate sign your animal requires an alternative diet. Start researching various foods

and combinations to ensure your four-legged friend, for instance, can eat without repercussions of stomach upset, which may include gas, nausea, constipation, and diarrhea.

The best meals for dogs include: •b oneless and skinless chicken breasts, shredded, with rice •u nseasoned, boiled, shredded chicken •p umpkin, an easily digested food high in fiber, vitamins, and minerals •b one broth, an ideal liquid for dogs with reduced appetite The best options for cats include: •w et canned food, including a seafood-based variety •p ouring a low-sodium, warmed chicken broth or tuna juice over the food. Avoid broths containing onion powder, onions, garlic, or chives, all toxic to cats.

For both dogs and cats: • s tage-two baby food, especially meat-based meals that do not contain garlic or onion powder.

• Young children can assist in making small-portioned meals while offering positive praise. Parents can encourage hand-feeding, which usually is well eceived.

TIP: A void trying to hide a pill in food. It will cause disinterest in meals; instead, consider popping the pill directly down their throat and adding a syringe of water afterward.

Open Dialogue and Reading Books Children will continue to have a lot of questions concerning their ailing pet. Since the words may not always come easily, consider using a book or two.

Wake Forest Demon Deacon Football is BACK!

leaves are changing, the weather will soon be getting cooler, and best of all, everyone has gotten the opportunity to be vaccinated—so, Deacon Nation, it’s time to play FOOTBALL! Wake Forest head football coach Dave Clawson and the entire University community are so excited to see all the Truist Field stands filled and in a frenzy this season. They are not alone as all of Deacon Nation feels the same way. Wake Forest announced plans earlier in May to be at full capacity this season.

They added, in consultation with local, state, and University officials, that any necessary health and safety protocols to ensure the safety of everyone in the Winston-Salem community will be announced before the season begins.

There is no better place to be on Saturday afternoons this season than at Truist Field. But first, it all begins on Friday evening, Sept. 3rd at 7 p.m. when Wake Forest takes on Old Dominion University. The Monarchs did not play in the 2020 season, so both sides will be eager to get started. In a nationally televised game on the ACC Network, this is sure to be an action-packed evening, so let us fill the stands with Old Gold & Black.

Then at high noon on Saturday, Sept. 11th, Wake Forest welcomes the Spartans of Norfolk State University, under new head coach Dawson Odums from Shelby, N.C. Next up, on Sept. 18th is the ACC home opener against Florida State at 3:30 p.m. The Seminoles are more experienced this year with some new talent at quarterback, which should deliver an intense battle.

The Louisville Cardinals come to Winston-Salem on Oct. 2 for the annual “Family Weekend” event. The Deacs will be looking to avenge last season’s loss in Cardinal Stadium. Homecoming Weekend on October 30th begins the “Big 4 Championship,” as Wake Forest hosts the Duke Blue Devils. After a trip the following weekend to Chapel Hill to take on the Tarheels (non-conference game), they come back home on Nov. 13 to complete the championship series and face the Wolfpack of NC State. The Deacons finish the regular season with two road games at Clemson and Boston College.

month this series will provide important facts and tips surrounding child safety in an effort to support parents and caregivers as they attempt to reduce risks and create the safest environment possible for the children in their lives.

Curiosity and kids go together like Macaroni and Cheese.

Regardless of how recently you skimmed a room for risky items before a child enters, it seems as though they have a knack for finding the one threat in the room. It may surprise you that one of the most deadly safety hazards for children is batteries, which can be found in more than dozens of household items, including children’s toys. Before you toss every battery-operated item you own in the trash, let’s talk about how to understand the risk, avoid incidents, and what to do in the unlikely event something does go wrong.

Understanding the Dangers of Household Batteries The real risks that batteries pose to children come into play when batteries are either swallowed or cause external burns.

If swallowed, batteries can cause a severe choking hazard and can also create mayhem once inside. For burns, this is typically the result of a rechargeable battery-operated device that was irresponsibly placed during charging, allowing it to overheat. On the other hand, burns can happen when something is spilt on the charging battery and it is not turned off immediately. In general, all batteries can pose both of these threats, with some being more severe than others.

Among all battery-related injuries to children, button batteries, such as those used in watches, key fobs, thermometers, and singing greeting cards constitute the highest risk. Once swallowed, the child’s saliva mixed with the battery creates an electrical current which severely burns the esophagus in a short amount of time, causing serious damage.

According to Safe Kids Worldwide, “Each year in the United States, more than 2,800 kids are treated in emergency rooms after swallowing button batteries.

That’s one child every three hours.”

Reducing Risk of Battery Related Incidents INSPECT ALL BATTERY-OPERATED TOYS AND ELECTRONICS While most children’s battery-powered toys are perfectly safe, it’s still important to inspect the toy for any issues, from easily opened battery compartments to any spills that could cause damage to the batteries. Making sure that anything needing a charge doesn’t get too hot is imperative to avoid burns or even the rare occurrence of exploding devices.

MAKE A ROUTINE WHEN ADDING/REPLACING BATTERIES As a general rule, when purchasing batteries for a new toy or other electronic devices, make a habit of opening the package someplace out of reach of little hands. Additionally, count how many batteries came in the package you opened, and how many old ones you may be removing from a device. This will help keep you aware if something goes missing.

CREATING SAFE STORAGE FOR BATTERIES Have a specific container to store all loose batteries, and make sure that it includes a lid or other type of closure. This should, of course, be kept somewhere out of sight of curious kids. Make sure any electronics containing batteries are stored in their devices properly with screws or snaps in place. When devices have an opening that may be simple for small hands to open, consider adding a piece of duct tape to enforce the closure.

DISPOSING OF BATTERIES SAFELY Not all batteries can be disposed of equally, as lithium-ion batteries, for example, need to be recycled responsibly to avoid the risk of injury and environmental issues.

Also, never place large quantities of used batteries together to throw away, as this can also cause a dangerous situation.

TAKING ACTION IF A BATTERY-RELATED INJURY OCCURS Despite every avoidance, sometimes, unfortunate accidents happen. If you notice a missing battery in proximity to your little one or suspect he or she may have swallowed it, look out for the following symptoms, according to SafeKids.org: • Coughing • Excessive Drooling • Discomfort • Decreased eating or drinking • Difficulty swallowing • Hoarse voice • Vomiting Due to the severity of risk associated with ingesting batteries (especially a lithium or coin battery), if you are unsure but have a concern, don’t wait to head to your nearest emergency room.

8 WAYS TO BUILD YOUR CHILD’S SELF-CONFIDENCE

BY TMOM BLOGGER DENNETTE BAILEY (ALSO AN EDUCATOR) Self-confidence is a necessary attribute for anyone who not only wants to become successful, but also keep themselves safe and healthy. There are many successful people who are not well, because they do not see their worth and they may feel they are fake or going to fail any minute. Developing self-confidence early is imperative and it can be easily fostered with no fear of creating conceit, narcissism, or any of the negative connotations that one might falsely tribute to self-confidence.

The following is a list of 8 ways to help you in your endeavor to boost your child’s self-confidence.

1 – Set Goals During the preschool years, teach your children how to set goals for themselves. This is a life-long skill, and it should be taught beginning at the age of 3. Ask your child what they would like to learn or what they wish they could do.

Use the answer to that question to teach your child to set a goal. For example, if your child says he or she would like to know about the planets, you could set a goal to learn about one planet each week.

Consider also using problems to set goals. If your child gives you a hard time about what they will wear, give them a goal to learn their colors so they can get out their own matching outfit once or twice a week. Setting goals can become solutions to problems and reduce tantrums. Just make sure the goal is something your child is interested in, and not what the caregiver wants the child to know. You want your child to be motivated to achieve their goals. Life already gives us many lessons on how to complete tasks that we have no choice but to complete.

2 – Model Positive Talk It is important that your child hear you speak positively about yourself. If you notice that sometimes when you make a mistake, you refer to yourself as stupid or dumb or crazy or not thinking, quickly reframe your speech. Say aloud—Daddy made a mistake or Mommy made a mistake—but I can fix it because I am smart. Often, our children pay more attention to what we do than what we say. Our actions must match our words, and both must be positive. If you made a wrong turn and yelled, “Oh man, I missed the turn—I can’t believe I’m so dumb,” and then you make the correct turn but do not talk about how

you fixed it—the negative perspective will outweigh the fact that you eventually made the right turn. Your children love you and they want you to succeed. They, more than anyone else, want to hear what you have to say. So, make sure they hear you saying positive words.

3 – Acknowledge your Child’s Interests Sometimes as parents, we have preconceived ideas of what our children need, what they must learn, and what they will like. However, consider observing your children during their play or during conversations with family and friends, and gauge what they seem to enjoy.

What do they talk about? What do they ask to do? Use that information to plan activities and opportunities for them.

Also, be mindful that engaging does not always have to be a big event. When I was a child, I liked to change the furniture around in the house. My parents permitted me to do that. They complimented me, and they would leave the furniture in the place I arranged it. That grew my self- confidence because it made me feel like my opinion was valued and that what I was doing benefited the family. This was something that did not involve my parents at all. They made no contribution, set up no specific date or time and provided no furniture shopping trips. But this allowance was significant in boosting my confidence and surely served to counteract some of the negative interaction they imparted during my childhood.

4 – Reinforce What They Already Know Help your child see the relevance of what he or she is now learning to what they already know. For example, knowing colors helps your child decide what to wear or how to pick out their own bedding. Show them that because they know the sounds of the letters, they can learn how to read, or because they know about plants, they can plant their own garden. Also, acknowledge aloud to your child that you notice they know things. Comment on how they helped you or how, if it were not for their knowledge, you, the parent, might not know some specific information. Let them hear you say that the things they learn are helpful to them and to the people around them.

5 – Ask Questions and Allow Them to Answer If we had an opportunity to listen to ourselves throughout the day, we might be surprised, particularly in interacting with young children under

the age of 6 years, at how many times we ask them questions and then answer the questions ourselves. We must give children the opportunity to answer. Please understand that it may take some time for your child to answer. Be willing to tell your child that you will go and do a task and come back to them for an answer. If you ask If they want a drink, they will not die of thirst if they do not tell you immediately. If your child has difficulty making decisions, show them that they can think about it and even answer another time by not, for example, having a drink until the next time it is available. Also, be sure to ask them open-ended questions, not just “Yes” or “No” questions. This is how our children learn to think.

6 – Encourage your Child to Share and Help Others on Purpose Children as early as three years of age can have a project to be a helper. When we do things for other people, it makes us feel good about ourselves. Ask your child how they felt when they shared or helped another person. This will help them as they grow older to have the words and actions already available to them that help them boost their self-esteem and help them move themselves away from negative thoughts and feelings.

7 – Praise your Child Offer praise about your child in front of other people. Make sure the praise is relevant to the conversation at hand, but let your child hear how you love and respect them and think of them in front of other people.

Talk about how they have helped other people, so that they understand there is value in their praise coming as a result of their thoughtfulness regarding others, and not just in how great they can be in their own eyes.

8 – Believe in Them Purposely let your child know that you believe in them.

Leave notes for your preschooler that say, “I love you,” or “You are special to me.”

Tell your child that you value what they think and what they say. Model this by picking times that you might otherwise be distracted and instead, play a game or talk. For example, if you already know you have a work call during a drive, play a short word game first or say an affirmation or ask your child what they hope will happen during the day and make positive comments about their hopes. This way they feel that they are a priority even when they must share your time.

The Importance of Planning Many years ago, when my husband and I were planning for our first child, we did what most new parents-to-be do: we bought furniture, painted the nursery, decorated, set up a diaper service, and procured everything we were told we needed for our bundle of joy. My sister was expecting her first child as well, and our due dates were a mere 12 days apart. Needless to say, our parents were thrilled as both my sister and I had been married for several years, and they were wondering if they would ever have any grandchildren. They needn’t have worried, as they ended up with five granddaughters.

When our daughter was a few months old, we were visiting with friends who had two older children.

They were planning a trip without the children and were telling us about it. They mentioned that they were taking different flights. I assumed it had to do with a schedule conflict with one of them, but was told that they never flew together unless they had the children with them. In case the plane went down, they didn’t want their children to lose both parents at once.

After being with our friends, my husband and I decided we needed to get with our lawyer to update our wills. My sister and I had an understanding that we would take care of each other’s daughter if anything happened, but we wanted to include this legally. Years later, and with having three daughters, we knew we needed to revisit this decision.

There was no doubt that my sister and brotherin-law would love them unconditionally, but it was not economically feasible for them to add three children to their situation. They also lived in another state, which would have meant our girls

leaving their home, school, friends, and everything they knew from their everyday lives. My sister and I discussed it, and it was decided that we needed to change their legal guardians. A change was made, and, fortunately, was never needed to be used.

Recently, this issue has been raised with our daughters as regards their children. When our eldest daughter’s children were born, my husband and I were named as their guardians. We lived an hour and a half from them, could easily move them when they were young, or move to their home if they were older. A couple of years ago, as we are aging and now live three and a half hours away, they changed guardianship to her husband’s sister and her husband.

This change made our other daughters re-examine who would have guardianship if the need arose.

Since these two not only live in the same town, but soon will live next door to each other, it makes sense that they would be responsible. The cousins are growing up close to each other and their aunts and uncles. It meant making a legal change, but definitely made the most sense.

It is important for everyone involved to make sure that plans and decisions made in previous years are still the most viable and correct ones. Lives and situations change with time and circumstances. Do you know who will take care of your grandchildren if the unspeakable should happen? It may be a conversation you should have if you don’t, and maybe even if you do.

Skywatcher Tricks to Explore the Skies The

night sky leads to a fascinating discovery of light.

Even if a telescope isn’t available, the naked eye possesses the ability to see mythological stories presented as constellations in the heavens. Finding Ursa Minor leads to more than just one bright star. Consider the extraordinary study of the universe. You, too, can learn the stories bridging constellations and Greek Myths, Native American culture, and other skywatchers living close by who seek the knowledge of the cosmos.

Optimize Your Vision The retina has two types of receptors that are stimulated as light enters the human eye. While the “cones” respond to color, the “rods” help clarify vision. Peering out into the darkness, it takes time for the rods in your peripheral vision to adjust to the dimness. Be patient and do not look directly at light. If you look at it from an angle, hues will appear based on the stars’ temperature. Cold stars are orange-red, yellow-orange, and yellow-white, while super-heated stars show variations of blue.

Why Twinkle, Twinkle Little Star?

Have you ever wondered why starlight tends to dance and shimmer? The answer has to do with the thick layers of the atmosphere. Upon reaching turbulent layers, the light must pass through, causing the shine alternatively to diminish and grow stronger. It is not a glitch. A telescope will not help to improve visibility in this instance; instead, the image will appear cloudy.

Ursa Major Leads North to Polaris The “Big Dipper” is the ideal place to start when scouting constellations. Face north, looking up at the horizon. You should be able to spot its orientation halfway up. It has a fourstarred handle and rectangular cup. Depending on the season, the bowl may face up, sideways, or down. Once found, you can follow the two vertical stars on the cup northward to find the North Star, Polaris and Ursa Minor’s tail. It too has a cup, although smaller in size and its handle comprises four stars.

Sky Hopping Using Ursa Major Following the curved handle of Ursa Major, continue the arc until you reach the fourth-brightest star in the sky, Arcturus.

The orange star’s light takes 36 years to extend through to our solar system. Look at the constellation leading to Arcturus. It resembles the shape of a kite.

The Green Flash In the dog days of summer, start spending the evenings gazing at the sunset with a purpose. A fleeting mirage will result from the heat emanating from our atmosphere. At just the precise angle, the light will separate from white light into a spectrum of colors.

The red, yellow, and orange hues will disappear, leaving behind the green, blue, and violet light. Pay close attention; if you are at the right angle, the remaining color spectrum of the prism will flash not red, but green!

Perseids Meteor Shower Mark your calendar for August 12th and 13th. North Carolina’s best meteor shower of the year arrives! Named after the constellation Perseus, this meteor shower can produce a volley of over 100 meteors per hour, a quality shower! If you have not witnessed the phenomenon before, the fireballs leave long trails of light and color as they streak across the sky. Don’t worry about locating the constellation before viewing. They aren’t necessarily connected! Try to view the shower in the hours after midnight.

The Man on the Moon Fortunetellers and astrologists speak of timelines connecting the planets to upheavals on earth, with words such as “retrograde” and “alignments.” Stay away from the beach, for instance, during an alignment of planets. You’ll experience flooded roads. Is it a myth that the full moon influences behavior? Studies prove seeds germinate faster, and water rises and increases its pull during a full moon.

An Extraordinary Place for Adults with Intellectual and Developmental Disabilities

you ever wondered how people plan for their adult children with intellectual and developmental disabilities (IDD)? The parents of these children have to think long-term. They need to put in place a plan that will care for, protect and help their children grow as people and as a part of our society. This planning can be very stressful for the parents.

But what if there were a place, a community if you will, that would welcome these adults, provide them with housing, employment, programming, and social engagement as part of a long-term sustainable solution? The creators of Thrive Community NC are working towards creating a place like this right here in the Triad.

Creators Erika Mielke and Kathy Murray initiated the idea for Thrive out of a need that was close to their hearts. Both of these women are mothers to children with these needs, and are faced with long-term planning for them. Mielke said, “We both had been looking at what our options would be when planning the future for our children. There were models around the country for communities where children like ours could work and live to sustain themselves beyond the years that their parents would be able to care for them. Unfortunately, there isn’t anything like that in our community.” By working together, they were sure they could create a community in this area that could serve their children and many others. And they also believe that as parents, they could have an inside perspective that could help them create this community in a very thoughtful and serving way.

Thrive Community has taken great care to assess the needs of our community. Focus groups were held in WinstonSalem, Kernersville, and Clemmons, and the resulting report determined that the need for this type of community is strong and so is the desire to support it. They also looked at the statistics. North Carolina ranked 41st in the effort to support individuals with IDD. Only 15% of individuals in NC with IDD work in competitive employment settings, versus the national average of 19%. And only three other states have higher rates of institutionalization for individuals with IDD. This information serves to validate the need for Thrive Community.

The vision for Thrive is to build a community with three components: residential, programming, and commercial. The residential component will start with a multi unit residential

building of one and two-bedroom units to provide independent living. They’re also hoping to provide a housing subsidy for at least half of the units, which would address parental concerns about how their children will afford sustained living, and the number of housing resources available. Housing is primary but longer term goals include a community center, featuring amenities like a gym, a restaurant, gathering spaces, classrooms, and a media center and partnering with community organizations to utilize the spaces for programming and vocational training. The commercial component would be adjacent to the residential section and be available for businesses to locate to. The goal would be for those businesses to participate in vocational training programs and offer employment to the residents, building bridges and breaking down stereotypes and misconceptions about adults with IDD. Getting this fantastic vision up and running will take a community effort, and on August 7th, Thrive Community NC will be hosting its first fundraiser at Tanglewood Pizza Company.

TPC will donate a portion of the revenue from that evening’s sales to Thrive Community, so come out and enjoy dinner in a family-friendly environment. There will be a cornhole tournament at 3 p.m. Two-person teams can register for $20 per person. TPC will donate all registration fees to Thrive and will provide the winning team’s prize. There will also be a silent auction which will begin online about a week before the event. By downloading the app Event.Gives, you can bid and get notified if you are outbid, so you won’t need to be at the event to participate. Finally, there will be a concert by the band Hawthorne Curve from 6-9 p.m. with raffles on the halfhour during the show. There is still a need for volunteers and donations for the raffle and silent auction items.

The View from My Section – A Father’s Perspective

A Pandemic Lesson

nearing the end of summer, and (hopefully, at the time I’m writing this) we’re continuing to make good progress on the virus to move back towards a sense of normalcy. The strangeness of this time is still present; but, at least we have a sense we’re on the back nine of this treacherous journey.

taking a different road to get to a destination I had longed to reach. The interesting thing was, although the undesirable actions continued on this person’s part, they no longer had the same impact on me as before. And that’s when I realized what was happening.

As I reflect on this moment in time, I’m beginning to understand things that you don’t often see when you’re in the middle of something uncomfortable. Among the difficult and challenging rules and regulations we had to follow (and still are, somewhat) to save as many lives as possible, there were the occasional benefits from all this.

You see, it wasn’t that I suddenly appreciated or liked these actions that prompted this new outlook. It was that I no longer was trying to control these actions. In doing so, I no longer felt the burden of trying to fix something in the way I felt it should work. Instead, I began to accept it the way it is. I learned that my choice now was to adapt.

As the saying goes, “God, grant me the serenity to accept the things I cannot change; courage to change the things I can, and wisdom to know the difference.” Sounds easy, or maybe not, but either way, acceptance is hard sometimes.

Not so, at this moment. Maybe it was the pandemic. Maybe it was knowing that there was a possibility that on any given day, one or the other of us may get sick, and not be able to have a proper goodbye.

There’s one thing in particular that I benefitted from through all the quarantine and isolation. When you’re “confined” with someone 24/7 you get to see what you “feel” is their negative traits flourish in front of you. Often, the person no long perceives the need to appease you by controlling some of their undesirable traits, because, after all, what can you do about it? We’re all stuck in here together. This produces a difficult situation to be in, for sure.

Of course, I know this person could say the same thing about me. So, let’s just get that truth out of the way from the outset. I mention this not to belabor the negative, because what resulted was actually a positive. The day-in-and-day-out of this experience has allowed me to see beyond their exterior. I’m not shallow; I’ve looked beyond the surface in the past, but the extended isolation can force you to look deeper than you ever have before. If you want to live happier, that is.

I saw not only what this person did that was irritating, I began to understand why they did it. I understood more fully this was a part of them, and wasn’t being done simply to bring me discomfort. Initially, to be honest, this was disappointing. After all, if this was inherent in their nature, then a change might never happen. But one day, almost by design, as if someone were trying to open my eyes, I felt compelled to abandon the failed approaches I had made in the past to address my concerns. This was not done out of any sense of surrender or failure to make things better. On the contrary, it was merely

Regardless of the reason, it changed me. It changed how I responded to them. It changed how I saw them. It lowered my stress level. I no longer felt the need to concern myself with these types of things. It’s not that these things were never important, or any less important; it’s just that I realized there are some things in life you must learn to work around. And again, that goes both ways. I’m older now, I’m more set in my ways, so I can’t be surprised when someone else is, too. We’re not perfect, we all have flaws. Age and experience can teach us, if we’re open to it, to learn to adapt to the “perceived flaws” in our loved ones. The important thing is for both sides to work in unison to make life better for all, whether that requires acceptance or change; and not forget the things about them we love so much.

Realize, I’m not saying one should accept everything in every case. Some things are not acceptable. This wasn’t the situation for me, though. I had found myself swimming against the current and tiring out needlessly. When I turned around and let the current take me (acceptance), maybe I didn’t get to the precise result I wanted, but it was certainly a much more relaxing approach.

If your kids, like mine, are not fans of sandwiches, or they’d just like some variety in between the sandwiches, here are some great healthy “Bento box” ideas to put into your lunch rotation!

What is Bento? Bento is of Japanese origin, and at restaurants often means “a little bit of everything.” Bento has evolved from rice or noodles and fish or meat to become a creatively packed, often healthy, balanced lunch in a tray with portioned compartments. Additional ideas include chicken quesadillas, breakfast for lunch (think oatmeal, yogurt, fruit, and a boiled egg), and hummus with chips or mini-naan flatbreads and veggies.

INGREDIENTS:

2 c ups cooked Chicken (a great use of leftover rotisserie) ½ cup plain full-fat Greek Yogurt 1 Tbsp. grain Mustard 1 tsp. Honey 1 tsp. fresh Parsley, chopped ½ tsp. Cumin 1 Apple, cored and chopped ¼ cup Pecans, chopped 2 Tbsp. Cranberries, dried and chopped Salt and Pepper to taste

½ cup shredded Chicken (optional) 1 cup cooked spiral Pasta (or other favorite shape) 2 cups Basil, de-stemmed 2 cloves Garlic ½ cup Parmesan Cheese ½ cup Olive Oil 5 Cherry Tomatoes, sliced in half 2 Tbsp. Corn Kernels, cooked 4-5 small Mozzarella Medallions, sliced in half Salt and Pepper

FOR THE CRUST: 2 English Muffins, mini-naan Flatbreads, a Pita pocket or Flatbread, ½ cup Mozzarella Cheese (shredded), 2 Tbsp. Pizza Sauce, Marinara or Pasta Sauce, Mushrooms, sliced (or their favorite toppings)

DIRECTIONS:

1. In a food processor or blender, pulse basil, lemon, garlic, Parmesan cheese, salt and pepper a few times, then run at full speed while drizzling in the olive oil. Blend for 20-30 seconds until well incorporated. If you like, add ¼ cup of pine nuts or walnuts, and reduce cheese to ¼ cup before blending.

1. In a medium bowl, mix together the yogurt, mustard, honey, parsley, cumin, salt and pepper.

2. Stir in the cooked chicken, apple, pecans and cranberries until well mixed.

Serve in the Bento box with crackers, cucumber slices, melon (cut out with a star cookie cutter if you’d like to make it extra fun) and sunflower seeds. Don’t forget to pack a spoon!

DIRECTIONS:

DIRECTIONS: 1. Toast your crust of choice for 5-7 minutes until crispy on the bottom.

2. Top with sauce and favorite toppings and broil on low until the cheese is melted.

Serve in the Bento box with small salad with dressing, or baby carrots and sugar snap peas with ranch dipping sauce and applesauce.

2. In a medium bowl, place cooked pasta, chicken (if desired), sliced tomatoes, corn and mozzarella. Stir in 2 tablespoons of the pesto sauce (more if you like lots of pesto), until all ingredients are well blended. Store the remaining pesto sauce in the fridge for 5 days or 3 months in the freezer.

Serve in the Bento box with black olives, berries.

She was eager to return to her earliest roots as a pastry chef. “I started my career in Charleston, SC, after falling in love with food and the process of baking,” said Stacey. “There’s an emotional connection we have with food, and I love to tap into favorites that help my customers not only enjoy the taste but utilize the senses. Our pastries not only taste incredible, but they are visually appealing.

They address the sense of smell, often triggering warm and comforting memories. And, our every bite includes the texture of the pastry that adds to the experience of taste. Add to that the sound of fresh coffee brewing – and Baked Just SO becomes the total package!

“I especially love to bake cinnamon buns,” continued Stacey. “There’s something therapeutic about the process, and of course – cinnamon buns are a customer favorite, along with our croissants. Though – for some customers, their favorites depend on what

While Stacey’s passion has been (and remains) the baking side of the business, she’s formed a great partnership with local roasting company, Magic Beans. “We love the way Magic Beans air roasts beans,” said Stacey. “We exclusively carry their coffees in both our stores, and you can taste the difference in every cup. We offer traditional drip coffee as well as a wide variety of signature lattes. My personal favorite is the Lavender Latte made with oat milk! It’s delicious with a fresh croissant!”

Besides amazing coffee and pastries, Stacey and her team also serve North Carolina-made Homeland Creamery ice cream. “Our ice cream flavors are so popular. And, we love to pair the ice cream with our own house-made cookies for the most incredible gourmet ice cream sandwich!”
