Election month has finally arrived, and I urge everyone to VOTE on November 6th! We live in the greatest country on earth and we should not take this liberty for granted! Guest writer, Judge Ron Spivey, has been kind enough to submit an article (see pg.75) that helps explain this year’s election a little more and just how important it is to fill in the whole ballot.

November signals the beginning of the holidays for me! Enjoying a Thanksgiving meal with family and friends is the perfect way to kick off the flurry of events that are sure to ensue! We have so much to be thankful for, and while I try very hard to maintain an attitude of gratitude year round…it’s nice to have this one day set aside to give thanks!

I’m super excited about the cover this month; doesn’t it make you want to just run right over to Old Salem with your family? It is certainly a gem for our city and one I probably take for granted.

Being a native from Winston-Salem, it’s just always been there, but not every city is so lucky to have such a vibrant history lesson right in their back yard.

This issue is packed to the max with ways to get into the holiday spirit. I wish you and your family a truly wonderful day of “thanks,” and I thank each and every one of you for allowing us to have been a part of your lives these past five years! Bring on the next five!

So You Think You Know... What or Who is Turning 100

in a century besides the obvious—100 consecutive years? I received a call from a dear friend whom I’ve known a little over a ¼ of a century, and she gave me a wonderful idea about many things hitting the 100 mark in 2012—thanks, Mary Alspaugh!

On March 6th, the Oreo cookie celebrated its 100th birthday; Oreo has been in the business of making life a little sweeter for a long time. Oreo says, “In a world that’s become far too adult, a couple of Oreo cookies, a glass of milk and a shared Twist, Lick and Dunk is all it takes to set your inner kid loose. Celebrate the kid inside all of us.”

The World Association of Girl Guides and Girl Scouts (WAGGGS) is celebrating 100 years of international Girl Guiding and Girl Scouting during three years, 2010 to 2012, because many countries founded Girl Scouting and Guiding in the years 1910 to 1912. In the USA, Juliette “Daisy” Gordon Low founded Girl Scouting in Savannah, Georgia on March 12, 1912. Oreo and the Girl Scouts missed a chance to spend the century working together, because Girl Scout cookies didn’t come along for nearly 20 more years.

And who can forget the famous French Chef, Julia Child—“Bring on the roasted potatoes.” Julia would have been 100 years old this year. Child’s show premiered in 1963, and she was the first cooking show on PBS. Did you know she was 6′ feet tall and played basketball at Smith College in Massachusetts? And another fun fact: while filming the Baking with Julia series, she used 753 pounds of butter. (She always said you needed fat in your diet to help absorb your vitamins.) Bon Appétit!

Here are some other notable centennial celebrations in 2012: The Life Saver: Beginning as mini-peppermint candies with a hole in the center, Pep-o-mint was invented to be a summer candy that could handle the heat better than chocolate. Life Saver now has a variety of assorted flavors and textures.

Hellmann’s Mayonnaise: Richard Hellmann created the egg-and-oil concoction in 1903 from his wife’s recipe, but it was 1912 when it was first bottled for market and called Hellmann’s Blue Ribbon Mayonnaise.

Universal Studios, founded in 1912 by Carl Laemmle, is the oldest movie studio in the US, and third-oldest in the world.

The electric blanket: The first electric blanket was invented in 1912 by American physician Sidney I. Russell.

This earliest form of an electric blanket was an “under blanket” under the bed that covered and heated from below.

The prize in the Cracker Jack box: Although Cracker Jacks were first sold at the Chicago’s World Fair in 1893, a prize wasn’t included in all boxes until 1912.

Cherry blossoms in Washington, DC: In 1912, the City of Tokyo gave 3000 cherry blossom trees to be planted around Washington at the Tidal Basin, East Potomac Park, and around the Washington Monument.

Now each year the Cherry Blossom Festival is one of the signature events in Washington.

Boston’s Fenway Park: This historic baseball venue opened on April 20, 1912, and is the oldest Major League Baseball Stadium still in use.

It presently seats about 37,000, which makes it one of the smallest Major League parks. This year it was added to the National Register of Historic Places.

8-Hour Work Day, 1912: India introduced the first 8-hour work day and was, by far, one of the more progressive countries regarding labor practices. It would be 26 years before the United States implemented the 8-hour labor law. What’s magical about 8 hours? If you think about it, that’s 8 hours of work, 8 hours of recreation and 8 hours of rest.

And I couldn’t leave out my dear sweet Ma Maw, who would have been 100 years old March 5th. It’s amazing how things have changed, but also how many things we encounter every day have been around for a century.

I received my Doctor of chiropractic degree from Sherman Chiropractic College in Spartanburg. Outside of the required continuing education courses, my staff and I study, attend seminars and train more than a hundred hours a year to provide the best care possible.”

One of the most important aspects of successful care is knowing when to have issues checked. The sooner you receive care, the better the result; this is especially true for children. “Studies show that children fall more than 10,000 times while learning how to walk,” said Locke. “These injuries and impacts to our body and spine add up, if not healed correctly. Most kids can’t tell us if they have a spinal disorder.

The Oscar Mayer Wienermobile rolled into Greensboro last month on its trek across the country. This American icon was the pioneer in mobile marketing, and has been hitting the roads across America since 1936, celebrating its 75th anniversary last year. There are actually six Wienermobiles in all, each with a different “name” on the license plate. We met “Big Bun” at its Greensboro stop in front of Walmart on Wendover Ave.

Hotdiggity!

Each Wienermobile has a team of two drivers. Big Bun is operated by “Hotdoggers” Eliot and Anggie for a year. They have already made stops in 40 cities since mid-June. Becoming a Hotdogger is no simple task. Each year, while around 1,500 apply to be “Hotdoggers,” only twelve are chosen to travel the country in the iconic Wienermobiles for a year.

Kids love to step inside and sit in the ketchup- and mustard-colored seats, and gaze up at the blue sky ceiling art. Unfortunately, the Hotdoggers don’t give out Oscar Mayer Wiener samples, but they do offer Oscar Mayer Wiener whistles!

Your Pilates Place: Building Stronger Bodies

consider pilates a new exercising trend that has blossomed over the past decade. While the exercise style has grown in popularity in recent years, pilates has helped rehabilitate war-torn bodies and professional dancers and the like for over 80 years. Pilates is a body-conditioning routine that builds strength, endurance, flexibility, coordination, and tones muscles without adding muscle bulk, through a series of controlled movements, done as mat exercises or with specially designed equipment. In addition, pilates sculpts the body while strengthening the body’s core, or “powerhouse,” and improves circulation and posture. Some may think it is a newer trend in fitness, but it has been the preferred exercise for gymnasts, dancers and celebrities for decades. Originally, however, it was developed by Joseph Pilates to help rehabilitate immobile or bedridden soldiers during World War I.

My First Pilates Encounter I had no foreknowledge of pilates. None. Zero. To better understand the mind and body integration exercise, I signed up with Your Pilates Place. Laura Shelton and her daughter, Ashlyn, are the core of Your Pilates Place at 4808 Country Club Road in Winston-Salem. They introduced me to pilates and have given excellent instruction. I have found it to be challenging, but not high-impact or strenuous. Laura said it is often maintained that, “Pilates is the hardest workout you'll ever get lying down,” and that’s the truth. The class sizes are small, usually only two to three others, so each class is nearly a private session, with the instructor paying close attention to my form to prevent injury and improve results. The equipment makes it possible to stretch and do “ab work” while also pulling weight in a smooth flow for a full body workout.

Over the past several weeks alone, I’ve become stronger, seen an improvement in my posture, and have lost inches. At the end of this series documenting my pilates journey, I’ll include the total inches lost (and perhaps pounds, if I muster the courage).

THYROID DISEASE

By Liston Orr, MD, Staff Radiologist—Triad Radiological Associates thyroid is a butterfly-shaped organ located in the neck just below the thyroid cartilage (Adam’s apple).

It gets its name from the Greek word for “shield,” after the shape of the related cartilage.

The thyroid produces thyroid hormone, which helps control the body’s metabolism by regulating how quickly the body uses energy.

Thyroid hormone also controls how sensitive the body is to other hormones. Important thyroid diseases include hyperthyroidism, hypothyroidism, thyroid nodules and cancer.

The

Hyperthyroidism In hyperthyroidism, the thyroid produces more hormone than the body needs. It is more likely to affect women, and is more common in younger persons. More than 70% of hyperthyroidism is caused by Graves’ disease, an autoimmune disorder in which antibodies are produced that attack the thyroid and release extra hormone. Another cause is toxic nodular goiter, where multiple thyroid nodules enlarge the gland and produce excess hormone.

Thyroiditis, inflammation of the thyroid, can cause initial increased hormone levels, followed by decreased levels. Post-partum thyroiditis occurs in 5% of women following childbirth.

This produces initial hyperthyroidism, with subsequent hypothyroidism. The majority of these women return to normal function.

Hyperthyroidism caused by Graves’ disease or toxic nodular goiter is most often treated with a single dose of radioactive iodine. Given in pill

form in the Nuclear Medicine Department, this iodine is taken up by the thyroid, where the localized radioactivity eventually removes all thyroid tissue from the neck. Once this happens, a daily dose of thyroid hormone (Synthroid) will need to be taken.

Hypothyroidism Hypothyroidism occurs when insufficient thyroid hormone is produced. It develops in about 5% of the population and is most common in women older than 60 years. Hashimoto’s thyroiditis, an autoimmune condition, is the most common cause. Hypothyroidism can also be caused by certain drugs, particularly lithium and the heart medication amiodarone. Once detected by laboratory data, hypothyroidism can be treated with a daily dose of thyroid hormone.

Symptoms of hypothyroidism: Weight gain, cold intolerance, dry hair and skin, decreased sex drive, fatigue, depression.

Thyroid Nodules and Thyroid Cancer Thyroid nodules are small growths in the gland and are very common. The incidence of nodules increases with age and is more common in women. Nodules are present in 50% of 50 year olds and 70% of 70 year olds.

Approximately 95 to 99% of all thyroid nodules are benign. Usually they do not produce symptoms, and are often discovered during physical exam. Ultrasound is accurate for detecting and characterizing thyroid nodules.

Nodules which are not clearly benign by ultrasound criteria are eligible for fine needle aspiration (FNA). This is performed using

The most common types of thyroid cancer are treated with surgical removal of the thyroid, followed by treatment with radioactive iodine which removes any remaining thyroid tissue.

This treatment is also effective at removing any thyroid cancer cells elsewhere in the body.

While individual cure rates vary, depending on stage of the disease at time of discovery, overall cure rate for properly treated common types of thyroid cancer is high, at approximately 97%.

Periodic low dose radioactive iodine scans of the whole body are typically performed to ensure the absence of any residual cancer.

Certain laboratory tests also serve this function.

Stuffing Thanksgiving Stress North Carolina, we are blessed to enjoy all four seasons, and fall is the favorite of many people. Crisp air, fall festivals, changing leaves and college football are just a few aspects of fall that are enjoyable to many. Fall also brings thoughts about the upcoming holiday season, especially one of the first holidays to arrive— Thanksgiving. While most of those thoughts and ideas are positive, some cause stress and anxiety.

In

For some, just the thought of Thanksgiving brings stress! Stress can be overwhelming, if allowed. However, there are ways to reduce and hopefully eliminate the stress before it gets too serious. The following are some ways to keep the Thanksgiving holiday stress to a minimum.

Keep it simple. If you are having family to your house for the meal, keep it simple. Don’t hesitate to provide the main dish and ask others coming to take care of side dishes and dessert. What will be remembered for years to come is not the perfect meal, but the warmth that you create within your gathering.

Family ties. It is nearly impossible to please everyone, and really not necessary. If you are not able to travel this year due to finances or a situation within your family, it is OK to say, “We are celebrating at home this year.” If you are newly married, it is a good idea to set expectations on holiday visits early. Perhaps you can visit one family on Thanksgiving and one on Christmas. Or alternate visits every other year, especially if those visits are out of town. The stress of making an appearance at every function can be overwhelming. If you are physically unable to attend a gathering, consider connecting by SKYPE or FACETIME for a short time during the day

Keep the meaning. Give thanks. That is what Thanksgiving is all about. Avoid conversations that are controversial or negative. There is always a positive topic that you can discuss. Forgive those around you and hold off on any difficult topics until a better time.

It’s OK to say, “No.” If, for any reason, you cannot be the host of or attend the Thanksgiving gathering, be honest and let your friends and family know. If you do attend a gathering with your spouse or family, agree ahead of time on the arrival and departure times to eliminate any surprises. Make sure to communicate these times to your hosts if they are out of the ordinary.

If you are alone, or suffering from a recent loss. Be sure to acknowledge the normal feelings of sadness. If you can find a community or church activity to attend, it could help to keep you focused on being thankful. Volunteering is another way to lift your spirits.

Help! It’s Homework Time!

For some children, homework time can be tedious and stressful. Parents often seek advice at our center on how to make homework time run smoother. Here are some tips we recommend to help your child make homework time more manageable:

Assign each subject a color (orange for math, green for reading, and so on) and purchase folders, spiral notebooks, sticky notes, markers and highlighters in those colors to go with each subject. You can shop at Old Salem throughout November and December, but be sure to mark your calendar for Saturday, November 10 from 10 a.m. to 4 p.m. and take part in the Shops at Old Salem Holiday Open House.

This free day-long event will feature special music, food sampling, craftsmen, authors, storytelling, vendors and shopping. Stop by the Visitor Center, Moravian Book & Gift Store, the Horton Center and T. Bagge Merchant to sample products, watch craftsmen create their handmade wares, chat with authors as they sign their books and get a jump on your holiday shopping!

Old Salem’s Christmas by Candlelight Tours will enchant your soul! They are a great way to experience the holidays as the early Moravians did. Stroll the historic town, guided by the warm glow of candles as interpreters provide fascinating facts about life in Salem in the 18th and 19th centuries. Both tours include music, food and drink. Eighteenth-century tours take place November 16, 17, 23, 24 and 19th-century tours take place November 30, December 1, 7, 14, 15, 20, 21, 22 at 6:30, 7:00, 7:30, and 8:00 p.m. Tours last around one hour. Tickets are $20 for adults, $15 for children and $18 for Friends of Old Salem. Tours are available to a limited number of people and are booked on a first-come, first-served basis, so call 1-800-441-5305 to reserve your spot.

For a full day of holiday fun, come by Salem Christmas on December 8. This celebration of traditional Moravian holiday traditions will take place from 10 a.m. until 5 p.m. The day finishes with carol singing and the lighting of the Christmas pyramid in Salem Square at 5:15 p.m. Just a few of the Salem Christmas activities and demonstrations that you can take part in include: making your own marzipan treat, sampling traditional

Moravian Christmas cakes, puppet shows, wagon rides and hearth cooking. There will even be a visit with St. Nicholas! Activities are included with an All-In-One ticket, which is $21 for adults and $10 for children ages 6–16 (children under 6 get in free).

New this year are Saturdays with St. Nicholas. Join Old Salem for a day of fun activities for the whole family at the Museum of Early Southern Decorative Arts’ Frank L. Horton Museum Center. From 11 a.m. until 3 p.m., stroll through the beautiful historic neighborhood accented by holiday decorations and take part in special programming for the young and young at heart.

Enjoy the heirloom puppet shows, holiday shopping (including an opportunity for kids to shop for their parents), and the company of St. Nicholas. There will be photo opportunities with St. Nick, so bring your camera! Special-event tickets will be available for purchase.

On December 13 at noon, a free Christmas Lovefeast will be held at St. Philips African Moravian Church to commemorate the first service held in the African Moravian brick church.

Music was an integral part of Moravian life and today’s Old Salem reflects that tradition with a variety of musical offerings. During the holidays, music abounds at Old Salem. On Wednesdays at noon in December, you can drop in and enjoy a free recital on the Tannenberg Organ in the James A Gray, Jr. Auditorium in the Visitor Center. A different guest organist will perform each week.

What a great way to perk up your mid-work-week blues!

If you love holiday music performed in a fun, swinging jazz setting, then Swingle Bells, presented by Martha Bassett, Matt Kendrick and Friends, is the concert for you. This concert, offered by the Carolina Chamber Symphony Players, features a selection of holiday favorites and is perfect for young and old alike. It will be performed on Tuesday, December 4, at 3 p.m. and 7:30 p.m. in the James A. Gray, Jr. Auditorium, Old Salem Visitor Center.

Another great tradition at Old Salem is the abundance of hands-on classes and workshops offered throughout the year. The holidays are no exception. Not only is the Festival of Lights a magnificent experience all on its own, Tanglewood has many other events and opportunities during the holidays to keep you coming back again and again. “On November 10th, we will have the Walk for Wishes to support the Make-A-Wish Foundation,” said Kilpatrick. “On November 16th, Arts for Life will be hosting a family recreational event at Tanglewood, entitled Festival of Lights on Wheels.

This is a perfect event for bike riders, stroller pushers and wagon rollers!

During the Festival of Lights, people are able to see the magic of the show on a tractor-pulled hayride or on a horse-drawn carriage. We will also have the Festival of Lights Golf Tournament, which will be held on the Festival of Lights’ opening night, Saturday, November 17th. The entry fee for the tournament is $60 per person, or $50 for Tanglewood members. This includes lunch before the tournament, 18 holes of golf, prizes and one weekday ticket to the 2012 Festival of Lights. The event is open to men and women who will be competing as two-person teams in a best-ball format, and there will be prizes for net and gross winners. Also, the RV Campground will be open a week longer than usual (through November 25th), to allow campers to enjoy the Festival of Lights. On

During the Festival of Lights, attendees can peruse the Gift Shop, located in the Red Barn. “This season we will have more than 70 crafty vendors,” said Kilpatrick. “People will be able to find holiday crafts, wood workings and other fine gifts. The Gift Shop will offer customers eco-friendly, non-woven shopping bags, and if a customer returns to the Gift Shop with his or her bag, they can receive $1 off of Tanglewood merchandise (vendor merchandise is excluded) for helping us ‘go green!’ Concessions will also be available for people to purchase, including soft drinks, coffee, hot chocolate, sandwiches, warm pretzels, nachos and popcorn. As always, Tanglewood will have plenty of marshmallows available for roasting at our giant marshmallow roaster.”

For those wishing to spend some time with Santa and Mrs. Claus, there will be photo opportunities throughout the season, with photos available for purchase. “Hours that they will be available are Mondays, Tuesdays and Thursdays from 6 p.m. to 9:30 p.m. and on Fridays and Saturdays from 6 p.m. to close.”

This year, the Festival of Lights is offering a special shopping discount for those who complete an online survey. “If the survey is completed by December 19th, the customer will receive 10% off a purchase of $50 or more at the Gift Shop for Tanglewood merchandise (vendor merchandise is excluded),” said Kilpatrick. “The link for the survey is www.surveymonkey.com/s/festivaloflights.”

Maya Angelou Center for Women’s Health & Wellness: Celebrating Women By Kristi Johnson Marion Medical Center announced in May the creation of the “Maya Angelou Center for Women’s Health and Wellness” (MACWHW). It is the region’s first center to coordinate comprehensive healthcare and wellness services specifically designed to meet the unique needs of women throughout their lives. The MACWHW hosted its inaugural Maya Angelou International Women’s Health Summit September 27–29, 2012. The conference created connectivity with national and international presenters and attendees to discuss issues affecting women’s and girls’ health around the globe.

The event culminated in the Celebration of Women fundraising awards dinner on September 29, 2012, to help fund programs, including health and wellness programs for adolescent girls, women’s preventative care testing and community health outreach for underprivileged women and girls.

After dinner, Dr. Chere Gregory and Kirsten Royster of The Maya Angelou Center for Women’s Health & Wellness presented awards to women whose efforts have strongly impacted the health and empowerment of girls and women nearby and abroad.

Regional Award: “Healthy Girls Save the World.”

The Regional Women’s Health Award was presented to Camille McGirt, UNC-Chapel Hill student, basketball player, and Co-Founder of Healthy Girls Save the World. Healthy Girls Save the World promotes “healthy bodies, healthy

minds and healthy relationships for girls ages 8–15 in North Carolina.” Healthy Girls Save the World offers free fitness and health education activities, “meet and greets” with college athletes, and promotes healthy lifestyle accountability for girls.

National Award: “Girls on the Run” The National Women’s Health Award was presented to Molly Barker, Founder of Girls on the Run. Girls on the Run was begun in 1996 in Charlotte, North Carolina and has grown from a grassroots project into an international Dr. Maya Angelou non-profit organization. The program inspires girls aged 8–13 “to be joyful, healthy and confident using a fun, experience-based curriculum which creatively integrates running.”

Global Award: “Kybele” The Global Women’s Health Award was presented to Dr. Medge Owen, Obstetric Anesthesiologist and leader of Kybele, a childbirth safety organization.

Kybele is dedicated to improving childbirth safety world-wide through educational partnerships, bringing professional medical teams into host countries to work alongside doctors and nurses in their home hospitals, and to train them and improve their healthcare standards. Kybele is

The Nutcracker: Brought

to Life by The Ballet & Perf orming Arts Centre of Winston-Salem

December brings with it many community holiday traditions: the Moravian Candle Tea at Old Salem, the Jaycees Holiday Parade down Fourth Street, and The Nutcracker ballet, performed by The Ballet & Performing Arts Centre of Winston-Salem.

This fantastical Christmas ballet was adapted from the story, The Nutcracker and the Mouse King, by E.T.A. Hoffmann and scored by Russian composer, Tchaikovsky. The ballet depicts the timeless, magical story full of toy soldiers come to life and sugar plum fairies. Young and old alike enjoy the holiday spirit and fantasy of this beautiful classical production.

Natalie Mizell, owner and artistic director at Ballet & Performing Arts Centre, has been producing The Nutcracker here in Winston-Salem, for 15 years. She and her world-class trained staff direct their students, ages 4 to 60, in bringing this Christmas fairytale to life.

Performance Dates This year marks the 15th Annual The Nutcracker ballet performed by The Ballet & Performing Arts Centre. The production will be performed at the Festival of Trees (located at the Dixie Classic Fairgrounds), on Saturday, Photo by Tanya Odom November 17th, at 1:45 p.m. to benefit Brenner Children’s Hospital, and at Reynolds Auditorium at 301 N. Land of the Lost Discovered at SciWorks

with their permanent educational exhibits and learning activities, SciWorks is currently showcasing an exhibit called “DINOSAURS!” through January 12, 2013. Mayor Allen Joines attended the Grand Opening on Saturday, September 15th,and proclaimed Hanes Mill Road “Honorary DINOSAUR Drive” in honor of the exhibit.

In the exhibit, visitors will find full- and half-sized “moving” animatronic dinosaurs, including a Tyrannosaurus Rex, Stegosaurus, Triceratops,

Deinonychus, Pterodactyl and others. It’s not Jurassic Park (thank goodness), but visitors will be amazed by the lifelike movements and sounds of the dinosaurs as they fight, feed, roar and care for their young. Children are particularly fond of the “baby” dinosaurs hatching from their eggs in a nest and the two juvenile triceratops. Parents and kids alike are intrigued by the “naked” dino robot, which shows what the dinosaurs in this exhibit look like underneath all that faux-reptilian skin, and lets visitors have a go at directing the robot’s movements via a control panel. Although touching most of the dinosaurs in the exhibit is prohibited, SciWorks does offer two “photo-op” dinos: a Tyrannosaurus Rex head for “scary” up-close-and-personal pics and a Triceratops on which kids can climb for photos.

Fossils and petrified wood are also on display, and kids can build a Keva dinosaur in the new KevaWorks area.

Family in town this holiday season? Treat them to the “DINOSAURS!” exhibit and join the festivities at the SciWorks’ “Festive Family Friday” on December 14, 2012, from 4:00–8:00 p.m. Enjoy refreshments, entertainment and a visit from Santa himself! UNCSA’s Acclaimed Nutcracker Returns December 8–16 are a few local holiday traditions that families just can’t miss: Winston-Salem’s annual holiday parade, candlelight tours in Old Salem and the University of North Carolina School of the Arts’ (UNCSA’s) The Nutcracker. Directed by Ethan Stiefel, former Dean of the UNCSA School of Dance and now artistic director for the Royal New Zealand Ballet, the 2012 production of The Nutcracker remains one of the most-anticipated Triad holiday traditions for kids and adults alike.

UNCSA’s heralded ballet The Nutcracker received rave reviews from critics and enthusiastic audiences since the re-imagined production debuted in 2009. Last year, the Winston-Salem Journal’s Ken Keuffel said the UNCSA production “enchants and enthralls…The Nutcracker sweeps us up in a spell.” In a similar sentiment, Jessie Ammons of SavorNC praised the performances as “timeless and majestic…a tradition for all ages.”

The 2012 production of UNCSA’s The Nutcracker promises to be more thrilling than ever!

This year, guest artists Veronika Part (Principal, American Ballet Theatre) and Charles Askegard (Principal, New York City Ballet and Soloist, American Ballet Theatre) will dance the roles of the Sugar Plum Fairy and her Cavalier Prince at the performances on December 13 at 7:30 p.m. and December 14 at 7:30 p.m. Douglas Gawriljuk, a former faculty member of the UNCSA School of Dance who now teaches dance in West Palm Beach, Fla., will return to supervise the 2012 production of The Nutcracker.

The immensely popular Tchaikovsky Nutcracker ballet music will be performed by the UNCSA Nutcracker Orchestra under the musical direction

of special guest conductor Charles Barker, Principal Conductor for the American Ballet Theatre. 2012 also marks the first production of The Nutcracker under the leadership of Susan Jaffe, who was named dean of the UNCSA School of Dance.

Declared by the New York Times as “America’s Quintessential American Ballerina,” Susan Jaffe danced as a Principal with American Ballet Theatre for 20 years and now is a respected choreographer and dance teacher.

For illusionist Richard Spainhour, for many years, the days of his life have been filled with a love of “magic” and illusion, but the season that is Christmas has a special meaning and magic to him as a believer. “My faith is very much a part of my life and being able to give a visual representation through an illusion of my beliefs in Jesus Christ makes many of my presentations very special. My interest in illusion or ‘magic’ started when I would watch magicians on The Ed Sullivan Show, leading to checking books out of the library, teaching myself the basics of illusion. Now, my illusions have become a wonderful way of sharing my beliefs,” stated Richard.

Illusion and Truth Seeing an illusion up close is something you won’t soon forget. Watching every move, just knowing that you can figure out where the coin “disappeared” to or how something that started in one place, “appeared” in another. “No matter what groups I perform to, illusions bring out the kid in all of us, from 9 to 90 years old. I do my tricks and sleight-of-hand at birthday parties, business functions and holiday gatherings. Whatever the group or theme, I can tailor my presentation, and should I be requested, share a few illusions addressing my faith,” Richard commented.

Those illusions that address Richard’s belief in Jesus Christ are simple, yet profound in their meaning. “I’m not a preacher, so I don’t do a 40-minute sermon during my illusions. I usually start with what I like to call ‘illusions for the eye’ and then, with permission, do a religion-based ‘trick.’ One very popular faith based ‘trick’ is that of taking 3 pieces of rope, all of different lengths and telling my audience the ropes are all the same, which you can see they aren’t. By the end of the ‘trick,’ the pieces are joined into ‘ONE,’ representing the strength of the Trinity—God, the Father, Jesus Christ, the Son and the Holy Ghost. This ‘trick’ is again a great visual for what many have been taught about the Trinity their entire lives,” said Richard.

Addressing the “Times” Richard has found over the years that tailoring his illusions to his audience is the best approach. “If I have a woman celebrating her 90th birthday, I do illusions with items that she would’ve grown up with; the same with a 10-year-olds’ party. Personalizing the party to the person or group keeps the ‘magic’ fresh for me and for my audience,” Richard commented. There’s one “trick” that gets very personal with everyone, no matter their age.

As we head into the Holiday Season, there is no doubt that we’ll see more than one red kettle outside a storefront with a Salvation Army volunteer ringing a bell alongside, cheerfully asking for your spare change to help the less fortunate.

Whether you drop in some change or find yourself “all tapped out,” you’ll most likely at least smile and say, “Merry Christmas,” to the bell-ringer.

Unfortunately, in the early days of the Salvation Army, its “soldiers” weren’t offered such pleasantries. In fact, the so-called “Salvationists” faced brutal persecution in the streets of London. The barkeeps and brothel owners resented the Salvation Army for converting their customers and putting them out of business!

“All over the country Salvationists were faced with angry mobs who used ammunition in the form of dead rats and cats, tar, rocks, rotten vegetables and even burning coals and sulfur to show their hatred of the new movement. In one year alone (1882) 669 Salvationists were brutally attacked.” (http://www.stlsalvationarmyarc.org) However, as the faith of its members began to bear fruit, the perception of the Salvation Army slowly began to change, and opposition began to fade. According to the Salvation Army’s website, “...[by early 1900] The Salvation Army had served 27 million cheap meals, lodged 11 million homeless people, traced 18,000 missing people and found jobs for 9,000 unemployed people...” “...when people began to see the value of the Army's work and the beneficial effect on the lives of those who responded to the gospel message, attitudes changed. Now active in all five continents, The Salvation Army has gained universal respect and loyalty. Musing About…

Compound Interest

daughter, Katie, has a T-shirt that she got when she was part of CCYM, a youth leadership council within our denomination. Now, as any teenager would, she has a myriad of T-shirts, some generic, some are reminders of places she has been, and others symbols of pop culture. While many of them are ones that really don’t capture my attention much, this one does; not because of why she has it, but instead, what it says. It has a haunting statement, which exhorts, What we do in life echoes for eternity.

I was reminded of this appeal just the other day as I attended the funeral of a friend. He was the father of a close family friend and thus became a friend as well. The funeral service was a fitting tribute to the man, but it was something that one of the pastors said that reawakened my memory of that T-shirt phrase. He said, “Each person here is better off because of this fine man.”

The statement was one that probably most of us have heard countless times as we remember friends who have died. I nodded in agreement, as did many, but I began to wonder, how did he affect my life? After all, my relation to him was predicated on being friends with his daughter and son-in-law, so how did he really affect my life?

That’s when it happened. My mind began to race through scenario after scenario, and it came down to this...he probably made a huge difference in my life. If he had not met the young girl who several years later became his beloved wife, and had a daughter, then this daughter would have never married a certain preacher.

This preacher may have never become the Senior Pastor of a church, to which I would probably not have even become the Associate Pastor there.

I shared this revelation with my family, to which my youngest daughter, Emily, then added her steroid-laden supposition that if I had not become the Associate Pastor of this church, she may have become a pole-dancer rather than being a college student today. Sometimes I wonder about her, but that’s another story.

I brought my hypothesis back on the main road and relayed that it was at this particular church I learned to respect and love contemporary worship, which meant if I hadn’t been there, I most likely would not be at Sunrise UMC today, and you would not be reading this article today.

Wow! That means he has affected your life, too!

Okay, maybe that’s a stretch, but it is a very plausible theory. Here’s something that I can

attest for sure. Jim had a long and successful career with Wachovia, which meant he understood and appreciated the financial concept of compound interest. Though I am not all that financially savvy, I know the basis of this concept is that as interest is added to the principal, the interest gains interest, and it continues to do so. That’s how a small investment early on in life can result in a big return later in life. But what if we morph that concept out of the financial arena and apply it to how we interact with each other? That would mean that a little good that you do today might produce exponentially positive results in the future, and by people that you can’t even imagine today being affected.

What we do in life echoes for eternity...such a simple statement found on the front of a T-shirt.

But this statement took on flesh in the life of a friend, who probably never knew what an impact his life had on so many people. Thank you, Jim Carlisle, for living a life that made a difference.

Should You Buy an Extended Warranty/Service Contract?

“The Christian Car Guy Radio Show!” I am frequently asked the question: “Should I buy an extended warranty, or a service contract?” I did my show on this recently and had mixed experience with folks calling in. Some callers had had nightmare experiences, but others had gotten the deal of a lifetime, spending $600 on a service contract that paid for a $3,500 engine a few months later. One big issue is the understanding of what service contracts are, and what they are not.

It has been my experience that few folks even understand what these terms mean, which leads to untold problems right from the start. I am not aware of any real extended warranty from any manufacturer. Service contracts, yes, but actually extending the new-car warranty? I never heard of that happening, except where there was a defect the manufacturers are covering beyond the original warranty period.

“What’s the difference?” you might ask. The difference between a warranty and a service contact is significant. With a warranty, the manufacturer is warranting to repair your vehicle if there is a defect in material or workmanship during a specified time and/or mileage.

Service contracts are contracts, based on an agreement between you and the underwriting institution, that certain repairs will be made under specified conditions that may or may not have anything to do with any defect; and so a covered part that is ruined by an un-covered part may not meet the conditions of the contract . Read the contract, which is essential in all cases, and you will find there are a multitude of conditions. Most service contract companies are not even the manufacturer, and in the few cases in which they are, they use their finance and insurance division to administer service contracts.

Service contracts are essentially insurance policies, and so you will find they are regulated by most State Departments of Insurance, and claims are handled by insurance adjusters in most cases. Many, many, many times, here is where the problems start. Insurance adjusters have no incentive to keep you as a customer, or give you the benefit of the doubt, as a car dealer would. So when the contract has language such as, “The vehicle may not be altered from the original factory specifications,” and you went from P225/75 R16 tires to P235/75 R16 tires, the adjuster can and will deny a claim even if it was the alternator that failed, not a suspension part. Reading the fine print on a service contract is paramount in getting claims paid. Often, maintenance records have to be kept meticulously.

I have seen more that one customer jumping-up-and-down mad because their service contract clearly said that it would not cover worn-out parts, and the adjuster said that the main bearings had worn 66 • forsythfamilymagazine.com

out and they would not replace an engine, even though the service contract period went to 175,000 miles and the vehicle had only 145,000. Makes no sense, but I am telling you many service contracts have that stipulation. So the quality of what you get depends on the company that is backing the service contract.

In my experience, the worst companies are the ones that badger you either on the phone or by mail, telling you that your warranty is about to expire. Go to http://www.consumeraffairs.com/auto_warranty/index.html and you can read the horror stories. Here are just a few, and I got so depressed I had to stop.

Alternator claim denied because transmission fluid was ½ quart low.

Service contract sold to elderly, impaired widow; would not refund to family within weeks of sale.

Insurance adjuster started the car in the inspection process. Car had no oil; engine failure resulted, denied despite dealer protest.

Sold a $4000 service contract on a Land Rover, then wouldn’t pay over $60 an hour on claims; this resulted in a $745 shortfall on repair.

(On a Land Rover, try finding someone under $60 an hour.)

Insurance adjuster required the use of used parts, a transmission in this case.

“Get Your Money Back If Unused.” Company went bankrupt.

I hope you get the picture; the fine print in these is mind-blowing.

Then they can be placed in the hands of an insurance adjuster whose expertise is not usually mechanical auto repair, but structural.

It also bothers me a lot that credit unions, banks and insurance companies sell these. To me it’s like going to veterinarian to get a heart bypass. Why would a vet agree to attempt something where he has no expertise? How would one of these institutions have a clue in discriminating between good fine print and bad when it comes to repair coverage? Read a few complaints, and you will see that not only did these institutions pick a bad contract, but they didn’t have the expertise to explain to the consumer what he or she was buying.

With all that said, I will say that the manufacturers in most cases sell them through dealers, who should explain to the consumer what they are buying and then have the incentive to try and keep the person in a Chrysler, or Honda, or whatever. The manufacturers also rarely, if ever, use insurance adjusters, but rather the dealer’s technical staff to administer claims. So, if I would recommend them at all, this would be

Winston-Salem School of Choice my only choice. But, like all insurance, there’s a chance it will pay off and a chance it won’t. Car dealers often sell the manufacturer’s service contract and also off-brand service contracts that are less expensive—and most of the time you get what you pay for.

Strong Academics Family Values

Another issue, brought out on the radio show I did, was that the prices on these plans are negotiable, very negotiable. One listener had been quoted $3000 at the dealer for a Honda plan from Honda and then went online to find another dealer who would sell the same plan for $1,200. He went back to the dealer and negotiated that plan for $1,400 at his dealer where he gets his service. I felt this was wisdom at work, both getting a good price and taking care of the dealer he may someday need help from.

Small Classes, Personal Attention

I do have to say that, personally, I like the odds better (this part is all my opinion, not fact) for setting aside that $150 a month for 20 months. Then you would have $3000 if your car is in need of repairs, and oh, by the way, you get to keep the interest…just sayin’….

Fine print—it doesn’t seem fair. The contract clearly says, “The wages of sin is death, BUT, the gift of life is ours through Christ Jesus our Lord,” Romans 6:23 (emphasis mine). God is the ultimate insurance adjuster.

His adjustment is that Jesus pays the claim with his blood on the cross; again, there is a but—“that whosoever believes in Him.” Have you really believed, so much that you have turned back to Him and asked for forgiveness, told someone you did, and now are willing to follow Him? This warranty extension is for eternity; God Himself warrants that you will have eternal LIFE.

Since then, I have no idea how many boxes we have packed, but we increase the number each year, with a goal of 80 for this year. Last year my husband Frank surprised me by packing 10 boxes in honor of my birthday! My son Brandon who recently turned 30, requested for people to bring items for shoeboxes or to pack a box in honor of his big day. Brandon and his wife, Jennifer, are getting their daughter, Emerson, almost 2 years old, involved by setting their own goals for packing boxes this year, which is very exciting to see,” Cindy Miller stated.

For the Millers, packing shoeboxes for Operation Christmas Child is not just a Christmas tradition.

“My older grandchildren, Madison, 10, Dayton, 7, and Braydon, 6, spend time with me after school and during the summer, and we shop throughout the year for items to be packed in the shoeboxes. This has been a great way of teaching them about loving and doing things for others,” commented Cindy.

A Mission of Love We’ve all tossed a pebble into a pond and seen the ripples that a little pebble makes. Sending a shoebox, even just one, can ripple and reach not only the recipient, but a family, perhaps a tribe or community and a nation. “Each year we hear of a story of how one shoebox changed the life of a child. personal note inside the box. We’ve had children write back, sharing their lives with us. Some have come to visit the States and even become involved in packing shoeboxes themselves; this is what we call a ‘full circle story,’” Chris said.

This holiday season, don’t miss the opportunity of touching a child’s life.

Although 100 million shoeboxes sounds like a lot, that number represents only 5% of the world’s children. There are so many children who don’t know the love of God, and with just a small investment of money and time, you can give a child a smile this Christmas, letting them know someone cares.

with her innocence was probably the hardest part,” recalls Linwood. Linwood and Ceci Davis are the proud parents of Caroline Davis. Today she is a healthy and happy toddler who was born last year, three months premature and weighing just twoand-a-half pounds. “From the get-go we knew that she was facing very enormous challenges which were no fault of her own. And as parents, it was difficult to watch, day after day.”

“Coping

The Davis family spent four months in Forsyth Medical Center’s NICU (Neonatal Intensive Care Unit) following Caroline’s birth. Like so many other parents of children born premature, there were times when it was not clear as to what type of condition Caroline would be in when she came home, if she came home at all.

“It is pretty incredible if you sit and think about it. Caroline spent the last third of the pregnancy in our arms. A lot of good and bad things could have happened,” said Linwood.

And they did. Her family celebrated Caroline meeting developmental milestones. They also watched helplessly as she fought infections and bouts with apnea. Linwood can recount a time when, after being in the NICU for two months, Caroline developed a condition known as NEC (necrotizing enterocolitis). “We discovered it on Thursday. The doctors told us that if we could keep her alive until Saturday we could probably save her. That got our attention!”

Today Caroline is home and does not exhibit any signs of complications that can be attributed to her premature birth, other than overly protective parents. Linwood and Ceci credit Caroline’s success to her will to live, their faith, love, family and community support, and outstanding medical care.

“Before Caroline was born I would drive by Forsyth Medical Center oblivious to the miracles that were happening daily on that 3rd floor,” said Linwood. “Not every child has the outcome that we do, but if it were not for the doctors and nurses at Forsyth Medical, and research and education

provided by the March of Dimes, some babies would not even have a fighting chance for survival.”

Many people do not see the generosity of others until they are in an emergency. And when it has passed, they often try to return the favor.

Linwood and Ceci are no exception and are serving as the 2012 Winston Salem Signature Chefs Auction ambassador family. Said Linwood, “The mission of the March of Dimes is to have healthy babies and moms.

We experienced first-hand exactly what that means by being direct beneficiaries of its research and applied science. I can tell you from experience that every baby and their mother are healthier because of them.”

The Winston Salem Chefs Auction will be held Friday, November 16, at the Embassy Suites, beginning at 6:00 p.m. This event pays tribute to the culinary excellence of chefs and caterers from the community, while raising significant revenue to help the March of Dimes in the fight to save babies. During the evening, local chefs present their signature dishes during a cocktail reception, which includes a large silent auction. A live auction follows with packages that may include unique dinners, hotel stays and weekend getaways, donated by participating chefs.

November is also Prematurity Awareness Month and a time when the March of Dimes focuses the nation’s attention on premature birth. The awareness month kicks off on November 1, with activities planned across the country and state level.

Every year, more than half a million babies in the United States are born too soon. Our country’s premature birth rate has risen by 36 percent over the last 25 years and is the numberone killer of newborns.

November 17 marks World Prematurity Day, and the March of Dimes and its partnering organizations world-wide will be spreading the word of the serious problem of prematurity globally. Fifteen countries, including the United States, account for two thirds of the world’s premature births.

Man Vs.TODDLER

so many articles about new dads have noted, I, too, have subconsciously, or otherwise, felt the need to compete for my wife’s attention in the presence of our two-year old son. And with us all infected with election fever, my son and I have been known to engage in a fiery campaign to grab the lion’s share of my wife’s devotion. We stand toe-to-toe, attempting to secure control of the household as the male of choice. It is a friendly race and I respect my son’s attempt to take exclusive possession of his mother’s confidence and adoration. But, with this article, I shall lay out my entire argument. I will show how my opponent, while cute, unknowingly hilarious and advanced for his age, does not deserve the title of “most favored male.”

Let it be known that my little worthy opponent will have you believe that his command of the English language is formidable. And while it’s true that he can easily recognize any and all letters on signs and flashcards, he sometimes stumbles once he reaches “H,” when reciting the alphabet. Do we really want someone in charge who cannot recount the entire alphabet in the proper order? I say, “No!” Who is going to write in dry erase-marker on the refrigerator calendar when Kindermusik rolls around each week? It certainly will not be him.

He will never remember to get that “k” on the end of the word.

I also believe my interpretative skills are beyond reproach. I can translate from “toddler” to “adult” seamlessly. He, however, can only speak and write in “toddler.” He does not have the skills to translate his words or phrases for the benefit of the older people in the home.

For example, he pronounces words like “quesadilla” as “kez-dia,” requiring someone to ask him for clarification. Do you really prefer someone who cannot communicate effectively? I offer a resounding “No,” again.

And sometimes he complains and fusses seemingly for no particular reason. While some voters might feel that these emotional expressions make him human and are an adorable way to connect to the public, I find the crocodile tears manipulative. Oh sure, it seems genuine, but I don’t think that having a parent tell you, “No, you may not have caramel kettle corn for breakfast,” should elicit such an overthe-top reaction. It is disingenuous and takes advantage of everyone’s empathy.

As for my opponent’s character, I also believe he has a lot for which to answer. What sort of person would lie to his parents when asked a direct question? My opponent time and again has proven his inability to set himself free with the truth. I can recall on a number of occasions when he was asked if he had been responsible for a pile of 72 • forsythfamilymagazine.com

cereal in the living room, ink on the couch cushion, or an entire toilet paper roll left unrolled upon the bathroom floor. Each time he has been confronted with these small incidents of chaos, he has flatly denied responsibility.

Also, this toddler needs to be called out for his increase in spending and taxing…of his parents’ patience. His insatiable need for gummy bears, organic milk, Fig Newtons and Greek yogurt is unyielding. And his usage of diapers by the boxful has brought this household close to an unwanted deficit.

I realize that this might be crossing the line for some, but I also call into question my opponent’s personal hygiene and sense of style.

Just look at him as he stands there with peanut butter and strawberry jam on his tiny denim shorts. And I hear he must be told on a daily basis about the importance of brushing one’s teeth. And speaking of his teeth, he doesn’t even have all of them!

So there you have it. I have laid out my points of contention to gain a vote of confidence in this election. I do realize that my son should be given equal time to write out his rebuttal to these charges; however, if he were to do that, I would surely lose, and I am well behind in the polls as it is. He has many valid points to have me unseated, as he is clearly the true winner in the family. Besides, those baby blue eyes and fantastic smile get us every time! I don’t stand a chance.

What Causes Discoloration Of a Child's Teeth?

by Dr. Tina Merhoff Parents often ask about discolorations on their children’s teeth, and I have a variety of answers. Different colors can represent different causes – but this is usually determined during an exam and just talking about nutrition and hygiene habits with the child and her parents.

Dark Stains – Sometimes causes by high iron levels in vitamins, this type of stain usually doesn’t have any long-term affect on the health of a child’s teeth. Good brushing habits or perhaps changing to a vitamin with lower iron levels will eliminate the problem.

Berry and Tomato Stains – The acidic nature of some fruits, tomato sauce and similar foods can cause stains, so it is important to brush - or at least rinse with water - as soon as possible after ingesting these foods. A simple and healthy trick to eliminate some stains is to add a salad before eating sauces, soups or pizza can help. Lettuce leaves a protective film on the teeth so the stains don’t stick!

Yellow Stains – Yellow discoloration may be caused by excess plaque buildup which is a “sticky substance” and retained chromogenic stains from foods, drinks, etc.

Though good hygiene is always our best initial defense against surface stains, it is important to discuss any type of teeth whitening with your child’s dentist BEFORE trying at home. Not only do young patients usually have a mix of primary and permanent teeth, but the ingredients in some whitening products can cause gum irritation.

Imprints Informs: On Location at Westgate Pediatrics

By Julia Toone of my greatest fears as a new parent had to do with feeding my baby. I was breastfeeding for the first time and it was hard. I knew that babies often spit up some after each feeding, but Noah spit up a lot. It seemed that everything I fed him was coming up again. I wasn’t sure he was getting enough to eat. I turned to his pediatrician for help. Fortunately, in addition to her medical degree, she was a mother and had personal experience with breastfeeding.

She assured me that my baby was getting enough to eat.

Surveys indicate that most new parents turn to their pediatrician for parenting advice. Pediatricians hold a wealth of parenting information and knowledge. We visit them regularly for check-ups, and when our children are ill. Unfortunately, there often isn’t enough time during our well- and sick-child office visits to get all of our questions answered.

Long ago, Imprints recognized the need for more parenting information at pediatric and family practitioner offices. Our vision was for parents to visit their pediatrician, receive all their health and medical information, and then have the opportunity to meet with an Imprints Child Development Specialist, to have their developmental and behavioral questions answered; a one-stop shop for all your child and parenting needs!

That vision became a reality a few years ago with our first piloted locations. Imprints has a long history of working closely with medical sites to provide parent education and support. We have had offices at the Downtown Health Plaza (DHP) for many years, offering expectant families education on how to have a healthy pregnancy and how to prepare for a baby’s birth. Three years ago, we expanded our services to include education to parents visiting their pediatrician at DHP and at Winston East Pediatrics. And thanks to funding from the Northwest Community Care Network, we’re happy to announce our partnership with Westgate Pediatrics. Beginning in October, an Imprints Child Development Specialist will be available to serve parents as they come for their baby’s or young child’s check-ups. Parents will have the opportunity to meet one-on-one with our well trained parenting expert and discuss all the common issues we face as parents in the comfort and convenience of their pediatrician’s office. For parents with new babies, we’ll even offer regular home visitation services for added convenience and resources, including lactation education. For parents with older children, we’ll be available to meet with families either before or after their child’s check-up, or during specially arranged meeting times.

FEARING THE UNKNOWN

I wait and wait for someone to want me. I have claimed the top shelf in the shelter as mine. I curl up and watch all the activity below, day after day after day. Cats and kittens are all over the place. Every day people come and pick out a favorite. The next day they return and take their favorite home with them. The shelter does not feel like home. Why am I never chosen? There must be something dreadfully wrong with me. Is that why my family left me on the doorstep downtown?

One day I hear someone say, “I’m M, and I am looking for a special cat.” I know that leaves me out. I do feel sorry for her, however. The cats, and especially the kittens, pounce all over her and yowl. She keeps peeling them off. Then she looks up, straight into my eyes. She comes closer, gently reaches up her hand, and in a soft voice she says, “You are so beautiful. You are the one I choose.” I sniff her fingers and, in that moment, I choose her.

I want to go right now with this soft-spoken woman. But she leaves me behind.

Will she return?

She is there, bright and early, the next morning. The helper puts me in the box with openings that she has brought. “I had no idea Sterling was so heavy!” M says as she tries to carry me to the car. If I’m too heavy, will she keep me? I don’t like the box.

It feels like a cage, and I want out. It isn’t even big enough for me to turn around.

What is going to happen to me? I don’t really know this person, M. Where are we going? Will I like my new home? Will I get fed? What if I don’t like the food? What if there are no cats and kittens for me to watch? Will there be a place I can call my own? And I have to go to the litter box, soon!

I feel the car moving and I begin to yell, and I do mean yell! M talks non-stop in a soothing voice. I scream so loudly I only hear her when I stop to catch my breath.

M turns on music. I yell even louder, so she turns off the music. It is then I see a finger poking through a hole in the box. The finger is wiggling. I sniff at it and stop howling. Just like that.

Mewsings We can feel lonely with lots of others around.

We may feel “not okay.”

It is easy to give up hope.

We need to hear a voice that says, “I choose you.”

Fill in the Whole Ballot

By Ron Spivey Day 2012 is here. It’s a Presidential election year in the “battleground state” of North Carolina. That means millions of dollars have been spent—seemingly around the clock—on television, radio, newspapers and mailers to our homes to attempt to persuade us to vote a particular way. It has also meant frequent visits to our State by the candidates or their surrogates.

Election

It’s also a Gubernatorial Election year. The two major candidates have navigated the State and have also spent millions advertising their campaigns. This election cycle has had more than its share of ads in the wake of the US Supreme Court’s 2010 Citizens’ United decision, which opened the door for unlimited contributions from corporations and unions for political ads that are not affiliated with a particular candidate, but clearly take the side of a particular candidate. They usually have a patriotic name to make them sound like a group of well-meaning citizens who got together to pay for an important ad.

These two races probably received 99% of the voter’s attention, because of the vast amounts of money spent to make sure you notice them. But in 2012, there are many other important races on the ballot that are equally important; some potentially more so, because of their potential direct impact on a local voter.

In 2012, the entire Counsel of State—Lt. Governor, Auditor, Commissioner of Agriculture, etc—is on the ballot. So is a race for the NC Supreme Court, several Court of Appeals races, and local judge races. There are also races for the US House, NC Senate and House, County Commissioner and Soil and Water Commissioner.

How important is your informed vote in these races? You only have to look back to 2008, the last Presidential election year, for strong evidence that your vote has an even greater impact the farther you progress down the ballot. 166,133 people in Forsyth County voted in the Presidential Contest.

That dropped to 164,606 in the Governor’s race. To 161,422 in the Lt. Governor’s race. To 158,162 in the Secretary of State’s race. Way down to 125,715 in the race for Supreme Court Justice. Further down to 115,791 in a race for the Court of Appeals. And down to 109,426 in a local District Court Judge race. So, 55,000 people lost interest somewhere between voting for President and a local judge.

Part of the reason is that a straight party vote will not cast a vote for judicial candidates who run non-partisan. But voter returns from years when judges ran as partisan candidates still reveal that voter participation eroded further down the ballot.

All of these elected positions will decide some extremely important issues in the next few years. The qualifications and credentials of these candidates can easily be found in voter guides and on the Internet. Please take the time to find out about these candidates, and then take the time to exercise your right to vote in every race on the ballot.

My Top 10 Tips for New Moms

only have nine years of parenting experience and two kids to show for it, but I can say that along the way I learned a few tips that are worth passing along. I had one very easy baby and one colickywanna-pull-your-hair-out-baby. Many of these tips worked for both.

If you are expecting, best of luck, and I hope these tips can help!

10. The cuter the burp cloth, the worse it actually works. Buy a package of cloth diapers and use those as the burp cloths on a daily basis. Save the cute monogrammed ones for special occasions.

9. When your baby is overly tired, and you have tried to get her to sleep without success, try this—hold her sideways in your arms, bounce gently and lightly blow on her eyes. When you blow, she will close her eyes and many times she will realize how good that feels and actually keep them closed!

8. As often as possible, put your baby down for naps and nighttime while he is still awake.

Place him in the crib or bassinet, tell him it’s time to go to sleep, and leave the room. Most babies will play for a while and eventually fall asleep. If they make noises or sound like they are crying, do not go in right away. They need to learn to put themselves to sleep.

7. One of my favorite bits of advice was from "http://triadmomsonmain.com/_blog/My_Blog/post/Secrets_ of_The_Baby_Whisperer/" \t "_blank" The Baby Whisperer.

It is called EASY (Eating, Activity, Sleeping, You). I love this simple plan for a baby's schedule. You can start this routine as soon as you come home from the hospital. This plan is a recurring period that is usually about three hours long. It is a middle ground as far as baby regimens go and is in-between tough-love and on-demand. Your child will learn that after they eat they get to play (which sometimes just means a few minutes in a bouncy seat), and then after they play, it is nap time. The child learns to put herself to sleep without being breastfed or needing a bottle. Babies usually don’t like surprises, so this will get your baby used to the natural order of things. strategy and it worked well for me. I could write an entire blog on this EASY method, so I would suggest purchasing the book and reading up on it for yourself!

6. Don't assume that every time your baby cries, he is hungry! There are many other reasons a baby may cry, so keep to your feeding schedule as much as possible.

5. Don't take tags off items until you actually use them. I know you had your baby shower and you can’t wait to put all the clothes in drawers, sheets on the crib, stuffed animals around the room, etc.

All babies are different, which means they grow differently and enjoy different products and toys. We went through three different bottle types and probably three pacifier types, as well, before we found ones that worked for our first child. If you keep items in their packages until you are ready to use them. you still have the opportunity to return them! This is especially true for clothing, because more than likely you will have an abundance of clothes in one size and not many in the others.

4. Don't register for blankets. You will get a thousand, anyway.

3. Accept help. Someone wants to bring you dinner? Bring it on!

Someone wants to babysit while you take a nap? Yes, please! Don’t try to be SuperMom. Take the help when you can get it! You need it more than you realize you do.

2. Don't micromanage your spouse. If your spouse does not change the diaper the way you would, or hold the baby the way you would, that is OK. Remember to keep things in perspective. If your spouse’s method is not going to harm the baby—let it go.

Jonathan Felts & Indie G. Felts: Never Leave a Friend Behind…Part 3

By Carolyn S. Peterson 4 years in the White House behind him and an epic bout of cross-country wandering checked off the “Things-to-do-before-I-get-a-real-job” list, Davie county native Jonathan Felts was intrigued when an email came to him about a job in Afghanistan.

With

“I replied that I might be interested,” said Jonathan, “at which point the sender questioned my mental stability. But c’mon! How many jobs are there for a Republican political hack that would not only allow my Road Trip Beard to remain intact, but even flourish?”

And so it was, a few months later, he found himself flying over Iran en route to Kabul to work for the International Republican Institute (IRI).

IRI and similar groups work in emerging democracies seeking to help facilitate the elections process and promote good governance.

An Afghan Femme-Fatale?

Once in Afghanistan, Jonathan settled into a routine on the compound where he would live from May 2010–June 2011.

“I lived with 2 other Americans in a house—some called it a ‘compound’—and we worked with approximately 35 Afghans,” Jonathan said. “Soon after arriving, I noticed a puppy playing outside. About ten days in, I stopped to pet the puppy. Big Mistake! Up ‘til that point, the most attention the puppy had gotten was maybe an Afghan guard brushing her a bit with his boot. The puppy was very shy, but when I pulled out my phone to take a quick picture, it was as if her mother taught her, ‘If a crazy American ever pulls out a camera, your fate will be decided in the next 30 seconds.’”

Jonathan when he stepped outside. “I don’t need a dog,” kept running through Jonathan’s commitment-phobic mind. Despite this, Jonathan found himself wandering outside with a bit of his lunch later that day, sharing it with the puppy and from that point, it was pretty much over.

Jonathan had already named the dog “Independence”— “Indie” for short. Through a fluke of timing, Indie came to live inside the compound on the 4th of July, after getting her shots and being checked by the local vet.

Indie settled into a daily routine of playing outside during the day with her mom and dog friends, but then headed back inside at night. She soon had the residents, and most Western guests, wrapped around her paw.

Indie…From Afghan to American When Jonathan’s time in Afghanistan came to an end, leaving Indie behind was never an option, so finding a way to get her to the States was the next step. “The logistics were a challenge, and in the end I used a ‘pet relocation specialist,’ who handled Indie’s travel from Kabul to Dulles International Airport where she began her life as an ‘American Dog,’” said Jonathan.

With all the issues and obstacles in getting Indie to her adopted homeland, when asked if he ever considered leaving Indie behind, Jonathan replied, “No, of course not.

I rolled my eyes and laughed that second day, when she excitedly came running to me. I believe my exact thought was, ‘This is going to cost me a bundle.’ But she’s worth it,” commented Jonathan.

Aside from the occasional bout of Afghan obstinance and two very unhappy Felts family Dachshunds, Lucy and Sally, back here in Winston-Salem, NC, Indie has adjusted well with a bit of good training from local Winston-Salem dog trainer, Jim Hodges.

“Indie and I go on a long, early-morning walk on the National Mall three times a week and then she goes to doggy daycare twice a week. She enjoyed her first experience at Ruff Housing, a dog daycare in WinstonSalem, NC, and she looks forward to her time at the one in Washington, DC,” Jonathan said.

As Jonathan looks back on his time in Afghanistan, Indie played a large part in making the situation less stressful.

“Indie forced me to get outside on a daily basis, and I got to interact with the Afghan guards and some of the neighborhood kids, two groups I otherwise wouldn’t have spent time with. And she definitely helped most fellow Westerners relax a bit more when visiting the IRI compound (including Governor Mitt Romney),” recalled Jonathan.

“The entire experience, not just finding the dog, was a great opportunity and a blessing,” Jonathan concluded.

“But, yes, finding Indie there was pretty cool. She’s a lucky dog. But, as she is frequently quick to remind me, I was just as lucky to find her.”

108 Years Young - Aging Can Be Beautiful

By Carolyn S. Peterson Ina Neal Cook looks forward to celebrating her 108th birthday on November 18th, 2012, she can also look back to times that most of us only read about in history books; but her stories are much richer than anything that could ever be written.

As

The Richness of a Life Well Lived In 1904, there were many great accomplishments: the debut of the ice cream cone, construction began on the NYC Grand Central Station, Wilbur Wright had his first airplane flight, the Gillette razor was patented and the very first New Year’s Eve celebration in Times Square was held on December 31, 1904. Among those varied historical and life-changing events, one little girl was born in Asbury, NC. As one of six children, Ina Neal Cook began life very simply, living simply, but with the richness that comes from a life well lived.

“At the age of 14, my family moved to Westfield, NC, from Asbury, NC. I went to school through the 8th grade, when I left to stay home and help Maw take care of the babies (siblings). On Saturday nights, we’d ride the horse and buggy to a ‘frolic’ at a friend’s house, moving the furniture off the floor, dancing to a fiddle, banjo and guitar,” recalled Ina. At the age of 18, Ina left home and married Garl Cook, whom she was married to for 60 years, for a pretty interesting reason: “I thought he was the best looking 84 • forsythfamilymagazine.com

man around, and I was a pretty good looking woman myself and we’d make pretty babies,” Ina said with a smile.

The Cooks established their family, with 2 sons, now deceased, and two daughters, on farms in Westfield, Liberty and WinstonSalem, NC, raising corn, tobacco and wheat over the years. Days were filled with hard work, but an appreciation for what you had.

“The only things we bought at a store were coffee and sugar; we raised all our vegetables, beef, pork and chicken. Every morning we had biscuits, and my favorite dessert to make was sweet potato pie,” commented Ina. The memories of Ina go far beyond the farm, on many topics.

From Church, to Childbirth, to Laundry...Ina has a story!

“We went to church every Sunday for Sunday School; preaching was only held once a month by the travelling preacher. I made clothes, from blue jeans to dresses to winter clothes, with material costing 10¢ a yard.

The doctor would come to the house when babies were due, charging $20 for delivery; childbirth was the hardest pain I ever felt,” Ina stated. Several things that we take for granted changed life on the farm for Ina… “Laundry was done with a wash board and tub, boiling water over a fire and making our own soap. Dogwood sprouts were used as rakes and we’d cut wheat and tie it together to

make a broom. All our cooking was on a wood stove, which makes the best bread,” said Ina. The stories and recollections are many from the worst times of life, The Depression, to riding the train to King for the Fair, to pranks played on neighbors. Through it all, Ina has set her mind on several things, which at 108 probably are not going to change…

“I loved when the radio came to be. We’d light the lantern and walk to our neighbor’s house and listen to the Grand Ole Opry. My favorite TV show is ‘Andy Griffith’ and I love to crochet, read and play Bingo. If I have a guest and Bingo is ready to start, I excuse myself and get to Bingo!” Ina commented.

With 108 years of life, you’d think that Ina probably wouldn’t have many bad habits, but she admits to one, “I love to dip snuff and I’ve been doing it since I was 10 years old; gosh, that’s almost 100 years. It hasn’t killed me yet!” When asked about her future, Ina is firm in her faith, reading a Bible chapter a day, and her thoughts are as simple as her beginnings, and as touching as her memories. “Oh, yes, I’ll be going to Heaven; you know one can live way too long.”Happy Birthday, Ina, and for all you’ve given your family, we hope you continue to celebrate life as only you can do!

“We’ve Got Spirit, Yes, We Do; We’ve Got Spirit, How About You?”

By Maria Glazener is a chant that is heard at every football or basketball game and many times we do not give it much thought. But if you did take the time to think about it, the voices shouting that cheer are hard-working dedicated girls, whose main job is to get the crowd excited and on their feet, even under less-than-ideal situations.

This

Most of us think of cheerleaders as fixtures on the football sidelines and basketball court; they smile and entertain us during breaks, but how many of us know the time, dedication and perseverance that it takes to be a cheerleader?

The cheerleading season is the longest season of any high school sport.

Team tryouts are in May, the girls will practice through the end of the school year and some take camps over the summer. By the end of July, the cheerleaders are back practicing.

Roberts (West class of ‘77) reiterate that fact by saying, “Cheerleading is a group effort. If one person is off their game, or gets hurt or sick, it affects the whole dynamics of the team.

Everyone is moving and working together, so communicating and teamwork are key to having a successful team.”

When asked about the highs of cheerleading, Daphne and the girls said “Friday Night Lights “and the “Boys of Fall”! Teri says the highs of cheerleading at Reynolds would be watching the girls form relationships and bonding. The squads are very diverse, as is the school, so it is great to see relationships made that may not have had the opportunity otherwise.

Every high must have a low, and both teams agree that cheering in the rain, being cold and also trying to stay positive while losing, is one of the toughest parts of their job. But they wouldn’t trade it for the world! Below are two quotes from high school seniors which give a glimpse of how cheerleading has made such a positive impact on their lives.

Maura O’Donovan, a senior at West says, “I love cheerleading, because it is my passion and has shaped me into the person I am today. I live for Friday nights with my teammates and the crowd reaction whenever I go up in a stunt or tumble across the field. Cheerleading has given me the ability to form inseparable, lifelong friendships and to have determination in everything I set out to do. It’s my life!”

Jordan Gross, Reynolds senior and Captain, says, “Cheerleading has taught me of the importance of what it really means to be a team. There is nothing that we do in cheerleading that does not affect the entire team as a whole. This is not an individual sport, but a group effort that is accomplished by perseverance, cooperation and dedication.

Cheerleading has always meant a lot to me, and my favorite part about it is the bond that we have.

My high school cheerleading team is full of diversity and differentiating ideas, yet these things are what bring us together and ultimately make us better.

Anything we endure, we endure together, and I believe that we grow stronger from that.”

Their season will last until February or March, if the teams make the post-season. That is 8 months of practices, community service, strength training, tumbling, stunting, traveling, games, practices and more practices!

Most cheerleaders travel with the teams to away games, cheer for more than one game a night and during holiday tournaments, as well—all the while keeping their grades up and supporting the community! Whew, that is enough to make even the most energetic person tired!

Besides the training and physical effort, Teri Meeks (RJR class of ‘77) and Ashley Witherspoon, Head Coaches at RJR, expect their girls to be role models. “The hardest thing for the girls is to stay focused,” says Teri Meeks. “We expect them to have model behavior at all times. They are expected to be leaders in the classroom, as well as on the field. We have a zero tolerance for conflict, due to the fact that there are so many safety issues of stunting and teamwork. If there is ever an issue, the girls sit down to discuss it.”

The cheerleaders also take overnight trips and have dinners at each others’ houses, so they can eat and get ready together.

The cheerleaders of West Forsyth and Reynolds High School each know how tough a cheerleading season can be. That is why they find time to get together and bond over their love of cheerleading. Meeks’ daughters also cheered at West under Daphne and Beth, and Meeks used to drive the bus for the West cheerleaders. It’s a family atmosphere!

During football games, the home team always bakes goodies and treats for the visiting team and shares them before the game. They volunteer for similar events and support each other in their fundraisers and school activities.

You can see the West and R.J. Reynolds cheerleaders at any of the football and basketball games. Look for the Reynolds cheerleaders at the Brenner’s Festival of Trees on November 17th and 18th, and you can also see the West Forsyth cheerleaders at the Shrine Bowl in Spartanburg, S.C., on December 15th.

When you do see them, give them a “Shout out”! Football and basketball would not be as much fun without these dedicated Girls of School Spirit!

To me, Thanksgiving is a time to spend with your family and to think about what you’re thankful for the most. I am thankful for several things this year, but I want to focus on a few people that have had a big impact on my life.

This is going to be my first Thanksgiving without my Granny Rose, who passed away in July of liver cancer.

Granny Rose was the reason why Thanksgiving is one of my favorite holidays. Being from a large Italian family, Granny Rose was our matriarch, and all Thanksgiving plans revolved around her. She always brought a smile and laugh along with the best meatballs you’ve ever tasted. Those meatballs would put any so-called Italian restaurant out of business. But, if everyone was not ready to eat at two o’clock on Thanksgiving Day, when Granny was ready to eat, then she would let the seventy-plus people in our family know. She would often give the blessing before dinner, which would remind everyone how fortunate we are to have each other in such a big loving family. On Thanksgiving Day we all will miss her tendency never to get to the

punch line of a joke, because she was laughing at herself too much to finish. I personally will miss all the great advice on how to survive my teenage years from the woman who raised eight teenagers herself.

I am so proud to be named after such a wonderful woman!

One of the biggest things I’m thankful for is the return of my best friend, Emma. She ventured out to Montana for her first year of college, hoping to learn more about horses and to explore the west.

While we kept in touch through Skype and texting each other, her absence was difficult to handle. You realize how much someone contributes to your life in a positive way when they aren’t there on a daily basis anymore. I really missed those late-night Wendy’s runs and those midnight shopping experiences at Wal-Mart with my partner-in-crime. After a few months in Montana, Emma decided to return home for school, which I have to admit left me with bittersweet emotions; on the one hand I was proud of her for taking the brave step of attending a college so far from home. On the other hand, I was secretly happy that she was coming back. Her return in December will be a great Christmas present and I’m very thankful to reunite with such a good friend.

These two people have made me thankful for the life I have and how blessed I am. Several others in my life have been loving through the hard times I have had to go through in the past two years, after the loss of my father.

My advice to the teens of Forsyth county would be to realize how blessed your life is and be thankful to those in your life. You never know if they will be there tomorrow to give you that hug you may need.

While my Granny Rose may not be there for Thanksgiving anymore, I am very thankful for all my family, and I hope that you are as thankful as I am on this holiday! Have a great Thanksgiving and get an early start on your Christmas list!

Here Today, Gone Tomorrow!

Recently, this old cliché came to life for me with a very visible and thought- provoking event that took place in our neighborhood. Down the street from us lived an older lady who used to sweep the street in front of her house several times a day and check out the surrounding recycling bins with great interest. We didn’t know each other really well, but she always had a pleasant smile, a friendly wave and her broom was always in hand. As time went by, she was unable to care for herself and her family moved her out, although her house remained filled with all of her belongings. After her passing, her family conducted an auction of her things to a huge crowd that came to the sale. Shortly thereafter, they also sold her home.

On a recent Monday morning, a collection of machinery and equipment suddenly appeared on our street (which our 5-year-old son enjoyed immensely—even gathering all of his toy earth moving and demolition equipment, and watching with great excitement) and minutes later the giant excavator and bulldozer were tearing down the old house. It was so outdated and in such disrepair that remodeling was likely not an option. It took them only 2 days to tear down and remove the debris of a lifetime of living and memories.

Three days later, the grass was already coming up through the freshly laid straw on the newly vacant lot. Here today, gone tomorrow—a visible example of just how true that old saying can be.

I’m sure my elderly neighbor would have never dreamt that her home would be demolished in mere hours. On the flip side, I’m sure the new owners will be creating new, lasting memories when they build their new home.

Watching that old house disappear in two days, and thinking about all of the memories we make in our home every day, served as a not too subtle reminder to attempt to live each day with happiness, enjoy each other’s company, forget the small stuff and run this race with no regrets—because our tomorrow isn’t promised.

Honoring & Remembering Local Artist Anne Kesler Shields at SECCA

Kesler Shields was a local artist, nationally recognized and instrumental in establishing Winston-Salem as The City of the Arts. She served on the Board as one of the original members of The Winston-Salem Gallery of Fine Arts, which became the Southeastern Center for Contemporary Art (SECCA) in 1970.

On September 13 & 14, the Southeastern Center for Contemporary Art (SECCA) held a 2-day reception and opening of the largest showing of Anne Kesler Shields’ work to date in the exhibition: Anne Kesler Shields: 50 Year Retrospective.

Hundreds of Shields’ personal friends from the area, as well as her alma mater Hollins University in Roanoke, Virginia, gathered for this unveiling, and also to celebrate the artist’s 80th birthday year.

On October 6th, Anne Kesler Shields passed away, and the community lost an iconic, artistic pioneer.

Mark Leach, Executive Director of SECCA, says, “Anne Kesler Shields steadily applied her considerable talent, rigorous visual-art training and incisive critical intellect toward developing a masterful body of work over her career of five decades. SECCA was privileged to be a part of her life.”

The current exhibition, Anne Kesler Shields: 50 Year Retrospective, curated by Tom Patterson, will be on display until January 6, 2013. SECCA is open Tuesday–Saturday and admission is always free!

Small Stories for a Big World

I was in the first and second grade at Forest Park Elementary School, I had a friend named Danny.

In the third grade, I went to a different school and that was that.

I didn’t see him again.

When

have lived. The day before we were to meet, my back went out.

That hadn’t happened in a long time, and I wondered whether that was a coincidence, or having to hobble into the restaurant was life’s way of having a little fun while reminding me that it’s best just to be who you are and to let the rest of it go.

Since I moved back to Winston Salem, something would remind me of those days every now and then, and I would wonder about how the lives of Danny and my other friends had turned out and whether they are still around. Not that I did anything about it. You know how strong inertia tends to be when it comes of following up on such thoughts. I never even took the rudimentary step of seeing whether Danny’s telephone number was listed. Then came the day when I received an email about a student winning an award. Right there, after “daughter of,” was his name— updated to Daniel sometime during the more than 50 years since I last saw him.

I cannot tell you that I would have immediately recognized Daniel if I had walked by him on Trade Street. I can say that, when he walked into the restaurant, there was no doubt about him being what you would get if you imagined Danny eating right and exercising regularly on his way to becoming a husband and a father of award-winning children. He looked good. He had brought along our class photos from the first and second grade.

When we showed them to our waitress, she pointed right to me in our first-grade photograph. I was glad that the 6-year-old I was once is still recognizably there.

When I inquired as to whether he might be the same person, the answer was yes. An email or two later, we made arrangements to meet for lunch. We were meeting the following week, so I had plenty of time to think about my life in the time since I saw him.

Whenever I think about the life I have lived so far, I inevitably fret about some aspects of it. I find myself wishing that I had more money in the bank, that I had spent more time writing and that I had eaten fewer powdered doughnuts along the way.

I wasn’t one of those boys who went through a period of not liking girls. I always thought they were pretty swell, and I was in love with Miss Summers, our second-grade teacher. We talked about her and about our classmate Ronnie, who had the first color TV I ever saw. And we filled each other in with lunchlength versions of our lives since those days. He was easy to talk to, and I found myself telling him some things that I would have skipped with many others.

Of course, such thoughts don’t stop me from choosing to eat another doughnut the next time one is offered. Those petty disgruntlements aside, I feel grateful that I was given the life I

Mmm..Mmm..Comfort Food!

November chill in the air calls for warm seasonal comfort foods like pumpkin and sweet potato and soups. Here are some of our favorites, including “The Day After” Turkey Soup, that help you put those Thanksgiving leftovers to good use.

The

Pumpkin Hazelnut Bread (adapted from the Vegetarian Times recipe)

By Kat Bodrie Ingredients: 1 cup whole-wheat flour 1 cup all-purpose flour 1–2 Tbsp. ground cinnamon 1–2 Tbsp. nutmeg 1–2 Tbsp. allspice 1 Tbsp. ground ginger 1½ tsp. baking powder ½ tsp. baking soda 1 cup pure maple syrup ½ cup vegetable oil 2 eggs 1 cup canned pumpkin 1 Tbsp. vanilla extract ½ cup chopped hazelnuts Directions: 1. Preheat oven to 350º F. Coat 9 x 5 loaf pan with cooking spray.

2. Whisk together flours, spices, baking powder and baking soda.

3. In separate large bowl, whisk together syrup and oil. Then, whisk in eggs, then pumpkin, then vanilla.

4. Add about a quarter of the flour mixture to pumpkin mixture and stir, then another quarter and stir, then another and stir, then the rest. Stir thoroughly.

“The Day After” Turkey Soup

By Kristi Marion Ingredients: 2 quarts chicken broth 1 turkey carcass, all meat removed 2 onions—1 halved, 1 minced 2 carrots—1 halved lengthwise, 1 minced 2 celery stalks—1 whole, 1 minced 2 bay leaves 3 c. dark turkey meat, diced 2 garlic cloves, minced 2 Tbsp. olive oil 3 c. leftover, cooked Thanksgiving side vegetables (green beans, sweet potatoes, Brussels sprouts, etc.)

1 Tbsp. fresh sage leaves, chopped Directions: 1. In a large stock pot, bring the chicken broth, turkey, onion halves, carrot halves, 1 whole celery stalk and 1 bay leaf to a boil; then simmer for about 1½ hours.

2. While that simmers, finely chop the remaining onion, carrot and celery, and set aside. Dice the turkey meat into chunks (no larger than a soup spoon).

3. Remove large turkey bones and carcass from the broth with tongs. Strain the broth with a sieve covered in cheesecloth. Discard the solids. Transfer the broth to a bowl and place in a bath of ice water to cool the broth quickly and help keep it fresh longer. (Note: This step can be done the night before and stored in the refrigerator overnight.)

Return to a simmer. Add diced cooked sweet potatoes to the center of the soup and gently push them down. Turn the heat off and cover. Allow to sit and steam for 7 minutes before serving.

Sweet Potato Biscuits

By Emily Eileen Carter Ingredients: 1 cup all-purpose flour 3 tsp. baking powder 1 tsp. salt ⅓ cup butter (softened) 1 tsp. cinnamon 1 Tbsp. brown sugar 1 cup cooked sweet potatoes (mashed) ½ cup milk Directions: 1. Preheat oven to 400 degrees.

2. Mix flour, baking powder, sugar, cinnamon and salt. Cut in butter. Add potatoes and mix thoroughly. Add milk to make soft dough.

3. Turn out onto lightly-floured service. Roll into ½-inch thickness.

4. In a large soup pot, slightly brown the garlic in the olive oil. Add the minced carrots, celery and onion. Soften over medium heat for 7–8 minutes.

4. Cut into round biscuits with a glass and place biscuits on ungreased baking sheet.

5. Dice the leftover Thanksgiving vegetables.
