As a bird nerd I just had to take a spur of the moment road trip out to the Pungo Unit at Pocosin Lakes NWR in eastern North Carolina to see the Sandhill Cranes that have been hanging out with the Tundra Swan and Snow Geese. Sandhill Cranes are rare for North Carolina especially in eastern NC. What a sight to see! Seven Sandhill Cranes have been spotted hanging out with the Tundra Swan for a few weeks. Not only was I impressed with seeing the cranes but I was blown away by the sheer number of Tundra Swan. Thousands of them are here wintering on the shallow lakes and surrounding farm fields of eastern North Carolina. Sandhill Cranes are large, long-legged birds much like herons. Adults are gray with red crowns while the immature cranes are gray with rusty patches. They enjoy shallow freshwater marshes and agricultural fields where they eat primarily grains and seeds but they may also include berries and small invertebrates and vertebrates in their diets. They fly with their necks outstretched, unlike herons that tuck their necks while flying. Cranes can live for over 35 years in the wild.

Tundra Swans are long-distance migrants. Those breeding and nesting on the Arctic tundra winter all along the East Coast, with the coastal mid-Atlantic hosting the majority of the wintering swans. Destruction of southern wetlands has reduced their former food sources in wintering areas, but they have adapted by feeding on waste products in agricultural fields. Peak numbers of Tundra Swan often exceed 25,000 at Pungo Lake.

2 cups of ketchup 1/2 cup of Jim Beam Vanilla Bourbon 1/2 cup of water 1/2 cup of apple cider vinegar 1/4 cup of regular sugar 1/4 cup of brown sugar 1/2 tbsp of onion powder 1/2 tablespoon of garlic powder 1 tablespoon of ground mustard 1/2 tablespoon of ground pepper 1 tbsp lemon juice freshly squeezed 1 tablespoon Worcestershire sauce

Directions : Mix all ingredients in medium saucepan over medium-high heat and bring to a boil. Reduce heat to medium and let cook stirring frequently for about an hour or until desired consistency. Let cool completely down before refrigerating. Serve this like you would your regular barbecue sauce or with these amazing wings.

WINGS Place wings on a half baking sheet salt and pepper generously place in a preheated 375-degree oven and cook for about 20 minutes. I know the wings are not completely cooked and this is the trick we used in our restaurants. Allow the wings to cool down and place in an airtight container and refrigerate for at least 4 hours or overnight. Preheat oil preferably peanut oil or vegetable oil to 350 degrees and a heavy bottom to pot or your frying machine. Place Wings in preheated oil and cook until golden brown toss in the Jim Beam Bourbon BBQ sauce and served with carrots and celery. You are going to love this recipe.

The African goose is a breed of domestic goose that ironically, has no connection to Africa.

These birds are actually descendants of the wild swan goose. African geese are quite large compared with other breeds and have been known to have more docile temperaments.
