The Garage Food Hall occupies two of the historic CocaCola bottling plant’s original garage buildings, just steps from the Bottleworks Hotel. The Garage sports masterfully restored art deco terracotta facades and design features that pay homage to the district’s rich history. More than 20 independently owned local and regional food vendors are set to take up residence in the 38,000-squarefoot marketplace. Continued on page 26

National Restaurant Association Show Cancelled Second Year in a Row Event organizers of the National Restaurant Association Show have announced the cancellation of ATIONA~ the National Restaurant As- RESTAURANT ASSOCIATION . sociation Show, which was scheduled to take place May 22-25 at McCormick Place in Chicago. Due to the COVID-19 pandemic, the state of Illinois has placed an order in effect until early June limiting gatherings to no more than 50 people. While this order could be modified prior to expiration, McCormick Place has indicated their ability to re-open for large events is currently prohibited by the state regulation. Event organizers of the National Restaurant Association Show have developed an extensive collection of resources—including live Q&As with leading experts, panel discussions, and webinars—all available to the food-service community free of charge. Organizers have also made it easier to connect with suppliers, with The Show To Go, a free digital marketplace created to unite the operators and suppliers. Foxtrot Market Gets $42M Investment, Aims to Double Its Footprint This Year

~

AtlasEmployment Services Expertise in Staffing Since 1999

We have the right people to fill your Food & Beveragestaffing needs. We handle the burden of hiring, firing and retaining staff.

Foxtrot Market, the corner store and café, has received a $42 million Series B growth investment. The round was led by David Barber's Almanac Insights and Monogram Capital Partners. Backers also include food and hospitality industry heavy hitters David Chang, founder of Momofuku; Nicolas Jammet, co-founder and chief concept officer of Sweetgreen; and Walter Robb, former CEO of Whole Foods. With this investment, Foxtrot expects to double its store count by the end of 2021. This growth will include adding as many as nine stores in Chicago and Dallas, where they presently have a footprint, and expansion into new markets including Washington, D.C. Funds will also be used to expand its line of private label packaged goods and gift offerings, and to continue the investment into nationwide shipping which launched in January. By accelerating its ecommerce capabilities and offering nationwide shipping on items like chef-driven packaged products, private label and exclusiveto-Foxtrot goods, and wine, Foxtrot will further itself as the nation’s premier corner store. “We have built a business that marries the local approach of a corner store with the convenience of e-commerce,” said CEO and Co-founder Mike LaVitola. “We know how our stores operate best and in which markets, which is where we’ll be going deep with our expansion efforts next.” Launched in 2014, Foxtrot combines an upscale corner store and café with app-based purchasing that makes its entire inventory available for delivery in under an hour. -Source: PRNewswire

Video gambling license and terminal fees located in unincorporated areas of Cook County have been temporarily cut in half as part of a coronavirus relief package for businesses the Cook County Board approved. For the rest of the year, applications for video gambling licenses will cost $250 instead of $500, while the per terminal fee that operators pay will drop from $1,000 each to $500. The fee reductions would cost the county about $74,500, officials said. This action was among other pandemic relief efforts commissioners approved, including a drop in liquor license fees and vehicle wheel taxes. -Source: Chicago Tribune

CINNAHOLIC, 1404 E. Golf Road, SCHAUMBURG, Ill.; 847-420-3831. This is a very unique concept: You can build your own gourmet cinnamon roll or choose one of their signature items. Start with your frosting. I ordered my cinnamon roll with cake batter frosting and bananas; plus I ordered the s’mores cinnamon roll that had marshmallow and chocolate. They also have brownies and cookies up front on the counter, and they sell raw cookie dough that’s edible. I wasn’t counting my calories here. CHICAGO TACO AUTHORITY, 4219 W. Irving Park Road, CHICAGO; 773-282-8226. Cleverly decorated with vintage Chicago Transportation Authority signage, photos and even faux “L” train siding and windows along one wall, this taco restaurant should not be missed. The menu boasts classics and contemporary takes from carnitas and chile relleno to barbecue bacon-wrapped shrimp. My favorite is chicken tinga tacos topped with house-made crunchy corn strips. CULVER’S, 7050 Mannheim Road, ROSEMONT, Ill.; 847-635-2005. It’s easy to pick up from here in the drive-thru. I have been here numerous times and usually order one of their butter burgers; either with Wisconsin cheddar or mushroom and swiss cheese. This time I wanted to try the cod filet sandwich: crispy, moist, flaky fish served on a hoagie roll with tartar sauce, cheese and lettuce. Yum! Plus, I ordered some fries and cheese curds. Check out the “flavor of the day” custard too. FURAMA, 4936 N. Broadway, CHICAGO; 773-271-1161. One of my friends ordered us some food from here. I cannot believe how many dishes he ordered. We started with some dim sum dumplings, pork and shrimp and scallops, kung pao shrimp and orange chicken, plus, some shrimp fried rice and an order of string beans. The food was amazing. We had a feast and there was still some left over. They do a nice job! HUB’S RESTAURANT, 3727 W. Dempster, SKOKIE,Ill.; 847-6777695. They have been around for a long time and are a neighborhood favorite. They offer great food, friendly service and delivery. They have burgers, chicken, hot dogs, kabobs, ribs, sandwiches, salads and so much more. Last time I stopped in, I ordered the gyros plate. The gyros are very good and they give you plenty. It comes with choice of rice or potato, tzatziki sauce and pita bread. Plus, they don’t skimp on their garnish of onions and tomatoes. MOLLY’S CUPCAKES, 5 Woodfield Mall, SCHAUMBURG, Ill; 224520-8469. You can find them on the first level of the Woodfield Mall. All of those beautifully displayed cupcakes caught my attention, and I picked up a few. My selections included strawberry Champagne; vanilla and pink frosting; cake batter, which had blue frosting; and a vanilla raspberry with pink frosting and sprinkles. They were absolutely delicious! They have numerous locations, so if you see one, stop in. MR. BEEF & PIZZA 1796 S. Elmhurst Rd. MT. PROSPECT, Ill; 847228-1210. This is a large, colorful restaurant with plenty of seating inside. I went through the drive-thru for my order. I ordered one of the Italian beef sandwiches with hot peppers, which was so juicy and delicious, plus some gravy bread. I also ordered some onion rings and fries to go with it. They have a big menu offering all the fast food staples, including pizza, which I plan to order next time.

Irving Park’s Big League Burgers Serves Up Hit

South Siders, beware: This burger joint is all Cubs all the time, done up in the North Side baseball team's colors with plenty of Wrigley-related souvenirs. Nevertheless, Big League's burgers hits it out of the park. Try The Natural, a single patty smothered in grilled onions, American cheese, mayo and on the side, cross-cut pickles and fries. The Northsider, a double burger with American cheese, dijonaisse and perfectly cooked crispy bacon on a fluffy sesame bun, is almost too big to hold. Wash it down with a thick vanilla milkshake dribbled with caramel syrup. The extensive menu also boasts salads, sandwiches and larger entree platters. For the competitive eaters, there’s the Big League Challenge: Finish an impossible amount of beef, bacon, eggs and buns in 25 minutes or less, and the meal is free. Big League Burgers is at 3734 W. Irving Park Road, Chicago. -C.C.

Your Insurance Company May Owe You Money for Roof Damage

This extreme winter unleashed devastation to roofs and properties throughout the Chicagoland area. Building owners should be aware that insurance companies, in most cases, may owe for the damage to interior and for roof replacement, due to the damage to roof systems if water infiltrated the roof system and trapped moisture in the roof and/or roof insulation. The amount of snow and ice wreaked havoc on buildings from a variety of causes, including frozen roof drains, sewers and gutter/downspouts, ice and water backup underneath roof penetrations, melting ice through walls, icicle damage, ice damming in valleys and gutter edges, roof collapse and many more unusual freak-of-nature water infiltration occurrences. The amount of damage this weather caused is unlike anything we’ve seen in long time. Many buildings and homes were not prepared for this. The amount of ice and snow build-up reached a point, where, in many instances, could not be removed without causing even more damage to the property. Hot pressure steaming with a hybrid pressure steam machine seemed to be the best defense to the ice problems. Care Roofing was very successful this year in providing many of its customers this steam service, which immediately stopped the leakage and helped prevent roof collapse. It is important that people know, however, that conventional pressure washers should NOT be used, because they can cause more damage to roofs and buildings. In addition, heavy duty heat cables should be an option explored by building owners looking for preventive measures. These cables must be installed and operating prior to any ice/snow events. Trying to install these after snow and ice is present may cause more harm because this could create even more ice from surface-only melting. See page 27 of this issue for the Care Roofing ad.

Consumers More Likely to Order Delivery Keeping the Food Industry Pest-Free

Since 1860

Restaurant operators say the year of pandemic-related shutdowns has changed habits and preferences. And those changing consumer trends are reshaping the industry, from the way restaurants operate, to their dependence on off-premise and the design of brick-andmortar locations. 53% of adults say purchasing takeout or delivery food is “essential to the way they live,” and 68% of customers say they are more likely to purchase takeout or delivery food than they were before the pandemic.- Source: Restau-

At-Home Coffee Consumption Grows The increase in at-home coffee consumption has spurred an uptick in consumer demand for readyto-drink specialty coffees, such as nitro cold brews and functional varieties, according to several ingredient and flavor suppliers. Consumers are also seeking a wider variety in coffee drink flavors, with fruit-based pairings expected to increase, said Finlays Americas coffee marketing manager Stephanie Thornton and Synergy Flavors applications manager Angie Lantman. - Source: Beverage Industry America's Fruit and Vegetable Consumption Crisis: New Research Shows Habits Are Eroding

Burgers Still Have A Huge Impact

Golden Corral is venturing far beyond buffets in its quest to sustain business through the pandemic and beyond, with tests already underway of such draws as drive-thrus, frozen margaritas, a la carte menus, a virtual concept specializing in comfort foods and even a more sanitary riff on the brand’s signature chocolate fountain. “We will forever have to operate differently from how we did before the pandemic,” CEO Lance Trenary explained during the Deeper Dive, a restaurant business podcast. “We had to completely change our business model and innovate with new ideas— different types of access points for our guests.”

No doubt that chicken sandwiches have gained a lot of attention over the past few years. The question is though, have these sandwich sensations knocked burgers off their perch as the long-standing top entrée item ordered at U.S. restaurants? That’s a hard “no,” says The NPD Group. In the year ending 2020, burgers were included in 13.5% of all restaurant orders, which translated to 7 billion servings of burgers. Chicken sandwiches (breaded and grilled) were included in 6.7% of all restaurant orders in the U.S, which amounts -Source: Restaurant Business to 3.5 billion servings, according to NPD, which “The most effective daily tracks consumers’ way to do it use of restaurants and is to do it.” other food-service out—Amelia Earhart lets. - Source: NPD Group

‘Restaurant Hustle 2020’ Sequel OK’d

“Restaurant Hustle 2020: All on the Line” premiered to rave reviews at the 2020 Doc NYC film festival, receiving critical acclaim for its raw, intimate chronicling of how chefs/restaurateurs Marcus Samuelsson, Christian Petroni, Antonia Lofaso, and Maneet Chauhan navigated the unimaginable challenges their restaurants faced from the beginning of the pandemic through the end of 2020. The Emmy Award winning “Diners, Drive-Ins and Dives” tandem of Guy Fieri (pictured left) and Frank Matson (right), founder/executive producer of Citizen Pictures, co-directed the documentary. Food Network has greenlit a sequel to this critically acclaimed feature length documentary, which can be streamed on Discovery+. The new documentary picks up with the same four chefs in January 2021 and follows them as they struggle to get back to a full house again. -Source: PRNewswire

When Is It Time to Change My Frying Oil? From from quick service to gourmet restaurants, deep frying is a very popular way to cook. Done right, the fried goods are delicious, served quickly and deliver a perfect crunch. However, frying oil degrades if it’s used repeatedly. During the deep frying process, heat, air and moisture are brought into the oil, which causes it to break down. Conversely, the lower oil quality also influences the quality of the fried food. It affects the color, taste and texture of the dishes. How exactly do we know when it’s time to change the frying oil? Guessing the quality It is still common for many chefs to use the sensorial determination method by comparing oil samples or deciding if they can still see the frying basket through the oil. Oil turning darker during its lifetime is mostly caused by caramelization of sugar brought into the oil, which is not harmful nor does it influence the oil quality. Changing the oil by schedule is also widely practiced but since the amount of food prepared, the temperature of the oil, microparticles and water added to the oil,

april 2021 9-16.indd 15 half page ad march 2021.indd 1

light and air are never the same, it is not a sustainable nor an accurate practice. Getting an idea of the oil quality Measuring the free fatty acids in your frying oil with the help of testing strips is a common practice. Those strips measure the free fatty acids (FFA) content. This is an improved determination method. Knowing the oil quality The safest and most reliable way to measure your oil quality is with the help of digital oil testers. They measure the full range of the oil quality, rather than picking just one component like the testing strips. All common versions of testers available are also performing a temperature check during measurement, to keep you in the optimal frying temperature range.

Food and food packaging are highly unlikely to spread COVID-19, the U.S. Food and Drug Administration, US Department of Agriculture and the Centers for Disease Control and Prevention said. "Consumers should be reassured that we continue to believe, based on our understanding of currently available reliable scientific information, and supported by overwhelming international scientific consensus, that the foods they eat and food packaging they touch are highly unlikely to spread SARSCoV-2," the FDA wrote in a statement. The three agencies said they wanted to stress the lack of credible evidence to suggest that food or its packaging are associated with transmission of the virus. COVID-19 is a respiratory illness spread from person to person, unlike foodborne viruses that can make people sick through contaminated food, the FDA said. “Given that the number of virus particles that could be theoretically picked up by touching a surface would be very small and the amount needed for infection via oral inhalation would be very high, the chances of infection by touching the surface of food packaging or eating food is considered to be extremely low,” it added. “Considering the more than 100 million cases of COVID, we have not seen epidemiological evidence of food or food packaging as the source of SARS-CoV-2 transmission to humans.” -Source: CNN

AROUND CHICAGO With Valerie Miller NONNINA RESTAURANT Nonnina, the neighborhood Italian destination in Chicago’s River North and sister property to Piccolo Sogno, has welcomed a new executive chef, John Boudouvas. Having joined the Nonnina team in October, he spent the monthslong closure revamping Nonnina’s menu to debut this winter.

Chef John Boudouvas

Boudouvas brings an extensive, seasoned background to Nonnina, having worked in numerous Italian and Greek restaurants in Chicago including Francesca Restaurant Group, Mia Figlia, Lettuce Entertain You Group and more. Most recently, he served as the executive chef at Avli River North. Boudouvas received his culinary degree from Kendall College and is a Chicago native. Chef Boudouvas aims to redefine Italian cuisine and ensure Nonnina stands out among others in the area. Additionally, Nonnina has brought on Joe Bazzi as general manager. Bazzi joined the team last summer and brings years of experience to Nonnina. Previously, Bazzi was the manager at True Food Kitchen and Quartino, where he oversaw the bar and wine programs as well. He was with Quartino for seven years and started his career as a server before working his way up to manager. Combining his classical training with a unique flair, Boudouvas takes classic dishes a step further by infusing different flavors and acids to reinvent them. Boudouvas is passionate about including different textures and flavors within his dishes. This is showcased on new items, such as a twist on the classic Caesar salad, by adding homemade focaccia croutons, crispy pancetta and shaved brussels sprouts. Also on the menu, Boudouvas has added a grilled baby octopus dish featuring roasted peppers, potatoes and a Calabrese pepper marmalade to give the dish a sweeter flavor while also incorporating heat. Other new dish items include a burrata served with thinly sliced imported prosciutto di Parma and fennel, topped with blood oranges, arugula and a green goddess dressing; and a new breaded eggplant dish which is served with local mozzarella, roasted cherry tomatoes, arugula and topped with balsamic, perfect for those who are vegetarian. On the dinner menu, new items include a lobster and corn-filled ravioli that comes served in a lobster broth, with leeks, cherry tomatoes and fresh herbs.

Nonnina, 340 N. Clark St., keeps the family tradition alive, continuing in the steps of their esteemed sister eatery, Piccolo Sogno by chef Tony Priolo. Nonnina serves authentic Italian classics using locally sourced, seasonal ingredients and elevated cooking inspired by Italian family dinners within the warm hospitality of a neighborhood trattoria. Five Warning Signs of a Bad Supplier

Every supplier and marketer across the globe can tell a good story and lure in buyers. It’s up to each of us to look deeper into doing business with them and form our own opinions. Here are a few thoughts on how to identify suppliers that may fall short into delivering on their promises: 1. Full Voice Mail. How good can a company be if the voice mail box is constantly full? Occasionally this may happen, but if it is consistently full, they may be avoiding calls from unhappy customers. 2. Unreturned Calls or Emails. Every so often a message may slip through the cracks or get lost, but if this is consistent, beware. They may be avoiding you for fear of correcting problems that they cannot afford to fix. 3. They Have a Reputation of Not Paying Bills. This may be tricky and may not matter to you, but the companies who can’t pay their bills are always at the bottom of the barrel when it comes to them getting product from their suppliers. If they say that their supplier is “out of stock” is it out of stock because they don’t pay their bills and their supplier will not sell to them? If you are buying food from a supplier that does not pay their bills expect inferior quality. 4. High Turnover. The best companies always attract the best employees and retain them. If employees come and go often, you know what that means. 5. Do They Advertise? The best companies publicly advertise and never hide. Good suppliers are not afraid of having more visibility. Warning: If a supplier tells you they like to keep a “low profile,” it may be because they are hiding something. And if they rely on word of mouth to get new business, it may be because they know that increased visibility for a bad company drives negative publicity, which is why they want a stay under the radar.

Digital Market POS, Heartland Team Up Burr Ridge, Ill.-based Digital Market POS recently partnered with Heartland Restaurant Point of Sale to provide its base of hospitality customers with options designed to save money and drive new sales. According to Digital Marketing POS president Carlos Medellin, “Heartland is endorsed by the National Restaurant Association with good reason. Their systems include a built-in online ordering marketplace platform, as well as many customer engagement tools including loyalty programs, gift cards and an email marketing platform. Also included are contactless payment options at the point of sale station, curbside ordering, QR code receipt scan and pay at the table. In the past, we’ve seen customers needing to pay separately for each module, Heartland adds value by now including all of them. This really is a great value for our hospitality clients”. Villa Park-Based Coker Service Enters Commercial Soap Business For over 36 years Coker Service Inc., based in Villa Park Ill., along with two branch locations in Texas, has been keeping kitchens cooking with their planned maintenance and emergency service on every type of restaurant kitchen equipment. Because of the hard work of owner and founder Mike Coker, support staff and their CFESA certified technicians, Coker Service earned The 2018 Illinois Restaurant Association’s Vendor of the Year Award. Coker Service has taken this awardwinning service model and opened their new division, Commercial Soap. Commercial Soap leases and sells low-energy dishwashers and related equipment that has earned the Energy Star rating from the U.S. Environmental Protection Agency. These machines reduce water, electricity and gas consumption versus non-Energy Star approved machines. They sell a full line of high quality, competitively priced institutional cleaning chemicals and EPA-registered sanitizers to clean dishware, glassware, pots and pans, equipment, floors, hands, laundry and more. Commercial Soap provides chemical dispensing systems for use with their products to deliver cost-efficient diluted chemicals. The company provides scheduled maintenance visits to ensure that customers’ equipment is in peak running condition and produces clean, sanitized dishware. Commercial Soap also provides outstanding service to customers who own their own dish machines as well with planned maintenance, emergency service and chemicals. Which Restaurant Positions Should Be Outsourced? In the food business, balancing overhead cost and staff morale is always quite difficult. Restaurant employees are typically the most important people in your establishment: They are sales people, customer service specialists and proPhoto via Pixabay vide the first and last impression for your business and your brand. Giving them tasks they don't like will result in higher turnover and even poor attitudes. With this in mind, more owners and general managers are outsourcing cleaning, janitorial and general maintenance services. The trick is not hiring just any company. You must find one that is trusted, local, and with experience and understanding of the specific needs for restaurants. The firm should also be local and nimble enough to give you immediate attention and service when needed. Now more than ever, guests' expectations of cleanliness must not just be met, but exceeded. Deep cleaning and sanitation, along with updated operational procedures, should be at the highest level of importance and built into all food-service operation budgets to insure and reflect consideration for the health and safety of staff, guests and the local community. According to Mark Ciot, president of Elmwood Cleaning Corp., "just as the restaurant staff is the heart and soul of any operation, taking great pride in what they do, our team takes equal pride in what we do, and by using the proper tools and experience, we can often do deeper cleaning of restaurants faster and more cost effectively than hourly employees can. Outsourcing the cleaning also insures the job is consistently done right, every time and without overtime." There are many firms you may consider, but very few are fully insured and follow risk management and internal safety audits like Elmwood Cleaning Service does. This reduces potential liability, legal and citation fees by following trusted CDC guided sanitation practices, and may help ensure less stressful public health department inspections. Outsourcing is a proven, reliable way to lower labor costs, reduce cleaning supply and maintenance material costs, increase staff morale and safety. Now more than ever, it is critical for every food business to exceed guests' cleanliness expectations while also preserving and enhancing the overall appearance of the establishment. You can see Elmwood Cleaning Corp.'s ad on page 8.

Hershey Sees S’Mores Sales Rise in Areas Hit Hard by COVID-19

Each Year, Century Energy Drives at Least $20,000 in Savings and Rebates To My Bottom Line!

Hershey is seeing strong demand for its chocolates and seasonal candies as people are cooped up inside their homes, searching for every small occasion to celebrate. “Throughout the entire year, seasons was one of the key drivers as consumers really wanted the comfort and the normalcy associated with seasonal traditions and rituals at a time when COVID-19 uprooted their lives,” said Hershey CEO Michele Buck in an interview with CNBC’s Sara Eisen on “Closing Bell.” One notable example was a trend Hershey spotted that as coronavirus cases spiked around the country, demand for s’mores ingredients rose. No doubt, families were seeking pleasure by setting up barbecues in their backyards and roasting s’mores by the fire. Hershey said its chocolate sales were 40% to 50% higher in areas with an increased number of COVID-19 cases than areas that were lower. “This past year, we noticed that wherever COVID case counts were elevated, we were seeing increased sales of s’mores ingredients and then we were able to use the case count trajectory as a foreshadow of where we should focus some of those efforts and build displays and put media in those markets,” said Buck. Retailers are wise to the trends and have stocked up on candy for Easter earlier than ever. -Source: CNBC

A Brief History of Instantwhip Foods

It all started during the height of the depression, when the Instantwhip founders, Dr. G. Frederick Smith, his brothers Allyne H. Smith and Clarence Smith, brought aerosol whipped cream to market for the first time. Dr. Smith and his brother Allyne devised a system to take dairy cream, process, package and pressurize it in returnable containers to produce Instantwhip whipped cream for use in restaurants, ice cream shops and soda fountains. The Smiths’ returnable container and filling system, a process invented and patented by Charles A Goetz, was economical and commercially viable. Since 1934, distributors of Instantwhip Foods have grown to become international manufacturers and distributors of dairy and nondairy refrigerated food products to the food-service and bakery industry. Instantwhip Foods distributors provide products under many popular brands such as Instantwhip Cream, Instantwhip Topping, B/C Topping, Instantblend Coffee Creamer, Baker’s Finishing Touch, YAMI Yogurt, Ambrosia Gourmet Frozen Yogurt and many others. IRA Continues to Work for Pragmatic Reopening Regulations, Larger Events, Financial Support The Illinois Restaurant Association continues to advocate for more favorable regILLINOIS ulations and financial and regulatory relief RESTAURANT for the restaurant and hospitality indusASSOCIATION tries at the local, state and federal levels. In early March, the city of Chicago and Cook County announced that indoor capacity at restaurants, bars and events can increase to 50% or 50 people within one room or space (whichever is less) and establishments can remain open for on-site liquor service until 1 a.m. Additionally, larger establishments that can fit more than 50 people within a room at 50% capacity can now use impermeable barriers such as plexiglass in order to divide rooms into multiple spaces. “Chicago restaurants are ready and eager to serve more diners safely,” said Sam Toia, president & CEO of the IRA. “These updated regulations are another step in the right direction that will give needed flexibility to operators across our 77 neighborhoods, protect hospitality jobs and allow businesses to welcome more customers back with extensive public health measures in place." Additionally, the IRA continues to call on the state to advance restaurant and hospitality workers into the Phase 1B of vaccine distribution, which will provide enhanced protection to essential workers. Looking ahead, the IRA is also lobbying to secure passage of a dedicated restaurant relief fund at the federal level, and is urging the state of Illinois to work with stakeholders on innovative solutions to allow larger gatherings, which will bolster our struggling tourism, events, and conventions industries.

A revolutionary business concept in food processing is being built from the ground up in Lockport, Ill. B and B Food Service, a full-line Hispanic food distributor and meat supplier, is building a 32,000-square-foot distribution facility with food processing rooms for rent. Fisherman’s Pride farm-raised salmon is cultivated at sea among the glaciers and deep fjords of Norway. It’s sustainably farmed, high in Omega-3s, moderately textured and a flavorful buttery tasting fillet. It is delicious, easy to prepare and each portion comes packed skinless, boneless and vacuum packed to preserve the quality. Fisherman’s Pride yellowfin tuna steaks are processed from fresh whole tuna. They can be grilled, pan-seared, or used for sushi to make a gourmet seafood dish. This wild-caught yellowfin tuna steak has a rich and flaky texture. Each steak is vacuum packed to preserve freshness and provide that just caught flavor. Our yellowfin ahi tuna steaks can be quickly thawed and prepared in minutes. Our all-natural Alaskan, wild-caught, SSC certified sustainable flounder has a mild sweet flavor and texture. Pizza Sales May Be Leveling Off Pizza sales have soared during the pandemic, but there are signs the trend is lessening as pizzerias compete with a wider array of delivery options. Papa John's and Domino's both reported slower same-store sales growth in the fourth quarter after business surged in the earlier months of the pandemic. -Source: AP

Ill. Restaurant Association Installs Officers, Board of Directors and Announces Award Recipients Recently, the Illinois Restaurant Association hosted its annual meeting. Held in virtual form, the event was open to all members of the hospitality industry and included the installation of new members of the IRA’s board of directors and advisory council and the organization’s annual awards presentation. The meeting also announced Sam Sanchez as the newly elected chairman of the board. Stepping into the role held for the past two years by Gregory Schulson, CEO of Burrito Beach and Lunan Corp., Sanchez most recently served as the IRA’s first vice chairman and is the founder and CEO of Third Coast Hospitality Group. “We are thankful for Gregory’s contributions over the past two years,” said IRA President and CEO Sam Toia. “His efforts during the COVID-19 crisis leave us in a hopeful place. “As we look to the future, we are honored to work alongside Sam Sanchez,” Toia added. “As the first Mexican-American to step into this role, his story is one of resilience, hard work and passion. As restaurants begin to slowly reopen, his vision and expertise in entrepreneurship

will prove to be invaluable on the long road to recovery.” In the mid-’80s, Sam Sanchez moved from his family’s hometown in Sabinas Hidalgo, Mexico, to start what is now an accomplished hospitality career in Chicago. With an extensive background that spans concept development to daily operations, his extensive knowledge of all things restaurant-related drives the success in his businesses. He is the principal partner overseeing operations and business development for Moe’s Cantina, Old Crow Smokehouse, and Tree House. In addition to his restaurants, Sanchez owns EMC Construction, a full-service construction company that handles renovations of existing properties and new construction. In June 2020, he founded SDS Blocker Manufacturing, a company producing high quality disposable face masks. Highly involved in civic, charitable, and mentorship activities, he is highly regarded as community leader and was named Restaurateur of the Year from the Illinois Restaurant Association in 2015. “I’ve been involved with the association in many ways over the years, but it is a proud moment to be the first Mexican-American operator to serve in this role,” said Sanchez. The IRA also announced its annual award recipients in four categories: restaurateur of the year to Schulson; vendor of the year to Gordon Food Service, Performance Foodservice, US Foods and Sysco; the Sara Rowe ProStart company of the year to Mariano’s; and a special lifetime achievement award to Phil Vettel of the Chicago Tribune. Vettel recently left his post as the Tribune’s dining critic after more than three decades. For more information about the Illinois Restaurant

Bakery owner/sleuth extraordinaire Hannah Swensen must solve a mystery when her sister is accused of murdering the not-so-beloved mayor of Lake Eden, Minn. Joanne Fluke’s heroine yet again swaps her standing mixer and apron for cloak-and-dagger intrigue. Sweet recipes are sprinkled throughout the novel as Hannah races against the clock to save her sibling. We recommend trying the coconut cream cheese frosting or the Peeps Easter cupcakes. -C.C.

Southwest Airlines Launches One Million Acts Of Kindness Challenge

Unsurprisingly, Americans Spent More on Groceries in ‘20 A new data study found that Americans are spending more on groceries than ever before. TOP Data analyzed spending at grocery stores across the U.S. and found that the average annual grocery bill rose by 9.4% in 2020, with the average person spending $4,442. The study also revealed that the biggest increase in spending has been on spirits, which was 33% higher in 2020 than in 2019. Spend on meat jumped by 16%, with the meat alternatives subcategory seeing a huge 34% spike. The biggest subcategory increase was storage, which saw a huge 605% increase. A side effect of people stocking up on essentials, perhaps? -Source: TOP Data

april 2021 41-48.indd 42

Now through Dec. 31, Southwest Airlines customers and employees can participate in the challenge by signing the airline's Kindness Pledge and committing to doing Acts of Kindness for others, such as delivering a meal to a neighbor, cleaning up a park or sending a note of encouragement. Each signature on the Kindness Pledge and Act of Kindness that is shared on social media using the hashtag #HeartinAction will count toward achieving the one million Acts of Kindness goal. The Southwest Kindness Pledge reads as follows: “I pledge to spark acts of kindness—one at a time, sprinkling compassion around the world. I will practice hospitality, making people feel welcomed, cared for and appreciated. I will treat others with courtesy, politeness and respect. I will do little things, because little things make a big difference. I commit to putting my heart in action, sharing a smile and little bit of love, and making someone's day a little brighter.”

After COVID-19 caused delays in rolling out Flashfood to all its stores across the Midwest in 2020, Meijer is on track to complete implementation of the food waste reduction program this year. While also cutting down on instore food waste, the initiative allows customers to purchase food nearing its sell-by date—like meat, produce, seafood, deli and bakery products—at up to 50 percent off on the Flashfood app, and then pick them up at Meijer stores. "We're pleased to expand our relationship with Flashfood throughout our footprint and offer this opportunity to all our customers," said Don Sanderson, group vice president of foods for Meijer. The retailer launched the app-based pilot program in November 2019 at a handful of Meijer supercenters in metro Detroit. After reducing in-store food waste by 10 percent, Meijer opted to expand the offering to all its stores across the Midwest. To date, an estimated 240 Meijer supercenters have Flashfood. "We are incredibly excited to be rolling out with Meijer and to be expanding Flashfood all over Michigan and into Illinois, Indiana, Kentucky, Ohio and Wisconsin," said Eric Tribe, chief marketplace officer. "Meijer continues to show their commitment to supporting the communities they serve through reducing waste and creating value.”

2021’s Best Cities for Pizza Addicts Deep dish, thin crust or somewhere in between— America is a nation of pizza addicts. That craving has only grown while we’ve been sticking close to home during the pandemic as pizza is the ultimate comfort food. But which 10 cities take the biggest slice out of 2021’s best cities for pizza addicts? LawnStarter compared the 100 biggest cities across five key factors, including prevalence of pizzerias, average cost and search popularity. New York, Chicago and Pittsburgh took the number 1, 2 and 3 spots. Highlights and Lowlights: ■ Big Apple? Call it the Big Pizza: New Yorkers love their tomato pies, so much so the Big Apple sits atop the best cities for pizza addicts. Who hasn’t heard of—or tasted—New York-style pizza? The hand-tossed crust is wonderfully crisp and airy at the edge and thin in the middle. Savor it by the slice, folded for easy eating. ■ Best in the Midwest: Chicago and a slew of other Midwest cities took top 10 spots: Pittsburgh, Cincinnati, St. Louis and Cleveland. The Windy City, of course, is renowned for its deep dish. Each slice can be a meal in itself. Pittsburgh has the most pizza places per resident, with the other cities also sporting impressive numbers. St. Louis boasts some relatively cheap pizza, along with its own named-after-the-city thin crust style. Rocky Mountaineer plans to bring its luxury train journeys to a new route in the Southwest United States in 2021. The Rockies to the Red Rocks route will be a two-day rail journey between Denver and Moab, Utah, with an overnight stay in Glenwood Springs, Colo. Rocky Mountaineer operates multi-day, daytime train journeys that feature incredible scenery, regional cuisine and attentive service in its spacious, glass-domed train coaches. The company has long had the goal of expanding its routes to bring its train travel experience to showcase new destinations. This new route will be in addition to the three rail routes that run in Western Canada, between Vancouver and the Canadian Rockies towns of Banff, Lake Louise and Jasper. “Rocky Mountaineer will bring a new luxury train tour to explore the historic rail route between Denver and Moab. Over the past 30 years, Rocky Mountaineer has become renowned for our world-class train travel experiences, and now we are opening our newest train experience in the region where train travel history began,” said Peter Armstrong, founder of Rocky Mountaineer. “This region, with its magnificent scenery, national parks, vast opportunities to explore, will delight millions.” Rocky Mountaineer will launch the route with a preview season of 40 departures across 10 weeks from Aug. 15 to Oct. 23. The company is working with local tourism organizations, hotels and tour operators to  curate custom vacation packages that feature tours, activities, and stays in Denver and Moab, so guests can experience even more of the region. “The work to find a new route has been underway for several years as we needed to find a special location with many of the same features we have in Western Canada: incredible Photos by Rocky Mountaineer scenery, iconic destinations and the option for an all daytime, multi-day journey that is best experienced by train. Rockies to the Red Rocks will have all of this and more, and is an opportunity to bring our award-winning Rocky Mountaineer experience to showcase the epic scenery of the Southwest United States,” explained Steve Sammut, president and chief executive officer of Rocky Mountaineer. “The coronavirus pandemic has had a devastating impact on the travel industry, and there is continued uncertainty of when tourism will recover. However, we believe American travelers, and those from around the world, will be eager to explore this region by rail with us and we look forward to welcoming them in 2021 and beyond.” The two-day rail journeys, including a one-night hotel stay in Glenwood Springs, will start from $1,250 plus tax per person. Travelers can reserve a place on a 2021 departure by contacting their travel professional or Rocky Mountaineer directly.
