This Summer will be James Turnham’s 20th year patrolling our beaches with the lifeguard service. He has grown up on the beach and has gone from getting involved in surf lifesaving as a youngster to his current role overseeing 130 lifeguards across the Mid North Coast.
H
i James. How did you come to be a lifeguard and what do you love about it?
You could say that water is pretty much ingrained in my family genes. Swimming was a huge part of my family's lives for the last few generations, so it was inevitable that I learned and followed suit, growing up as a competitive swimmer. Growing up in our coastal town I became involved in surf lifesaving, falling in love with the beach! As any lifeguard would say, it is an easy job to love, no matter how many major incidents we respond to, or how many rainy windy miserable days we might have. It’s the mix of events that occur, the people we meet, but the major factors are the lifestyle that the job brings and being able to work outdoors using our knowledge and skills to ensure public safety at our beaches. Can you tell us a bit about your role here in Port Macquarie and how long you’ve been involved with the Lifeguard Service? Not realising that lifeguarding would become my career, I began my first season as a lifeguard in December 2003, making this my 20th summer with the lifeguard service. I worked many of those years as a seasonal lifeguard, whilst undertaking university studies, and began lifeguarding in a full-
time supervisor capacity in 2015. I currently oversee 130 lifeguards and coordinate the lifeguarding services for the whole Mid North Coast between Urunga in the north and Seal Rocks to the south. My role now includes recruitment and training of our lifeguards, surf safety education in our schools, maintenance of our gear and equipment, and a rescue response to coastal emergency incidents.
relations are another big part of our job, where we are continually educating the public, and almost acting as a tourist information centre. So aside from patrols and working at the beach you also run surf education programs at local schools, can you tell us a bit about them and why surf education is so important?
What is a typical day like here on the beach and in your job?

What are some of the most common questions or concerns from the kids that participate in these education programs? What are some things you hope they take away from these lessons? The most common concern and the most important topic we cover is learning about rips; including how to spot them, what to do if you are caught in one, and what actions to take if you see someone needing help. In an ideal world, every child would know how to spot a rip by the time they enter secondary school. Rather than just turning up to the beach and swimming between the flags, we encourage anyone who doesn’t know how to spot a rip to speak with a lifeguard or lifesaver each time they arrive, so they can progressively learn how to spot them for themselves. Surf Lifeguards play an incredibly important role here in Australia, what 20 GREATER PORT MACQUARIE focus

What are some of the most common things that get people into trouble at the beach?
We want to encourage everyone to make the effort to go to a beach that is patrolled, even if that means having to park away from the beach and trek to the flagged area on those busy days. We are very lucky in Port Macquarie to have 6 patrolled locations to choose from during the peak summer period!
The most common issue at the beach is people overestimating their ability in the water, and not understanding the currents and water movement. The thing we ask every swimmer to keep in mind is that if they remain between the flags and at a

Being able to lifeguard in America for 2 summer seasons and working in Nauru training their lifeguards were both great experiences, as was the time I spent up in Cape York teaching the Indigenous Rangers how to use drones as part of their operations. In 2018 I was awarded the Australian Lifeguard of the Year, which was great to be recognised for the work I had done, even though I was just doing the job that I love. Thanks James. The Youngs loved Port Macquarie so much that they also participated in the Carnival of the Pines for several years during the 1970’s as well. What might we expect from a visit to Young’s Family Carnival? At Young’s Family Carnival we provide a night of entertainment that will have your family laughing and creating memories that will be cherished forever. One of the biggest aims for us is to be able to give every person, regardless of age, something that they can experience and enjoy, with the main attractions being our rides and games.
H

The first Young’s Family Carnival opened its gates in December 1973 to the public, located in the original Coles which is Officeworks nowadays. The carnival consisted of a small selection of rides, games and food. Back then

One of our most notable rides at the carnival this year is the Cha-Cha which is a prized family antique and over 50 years old! Another one would be the Ferris Wheel & Merry-GoRound which both featured in the incredible Baz Luhrmann movie, Elvis! Our Unlimited Ride Wristbands are also back this year and better than ever with a few new rides included as part of the wristbands. For those more food orientated, we have all your classic carnival food too! Plenty of fairy floss, dagwood dogs, slushies and candy.
Can you tell us about some of the travelling showman that have been a part of the show over the years?
One of our absolute favourites has been having the local Rural Fire Services bring their fire truck to the carnival for kids and raise awareness of fire safety during the 2020 fires.
Originally the carnival was started by Bernie & Margaret Young who offered the opportunity to their family and friends to help run the carnival that you see nowadays. The majority of the showman that set up at our carnival are 4th or 5th generation, meaning their parents and grandparents were also in the industry and that it truly does run in their blood. Every showman and staff member at our carnival plays a special part here and we are truly grateful to have such a wonderful team of people in our community. What is your role with Young’s Family Carnival and how long have you been part of it all? Young’s Family Carnival is truly a family run business, with each family member running different avenues. After the death of Margaret Young, her children and grandchildren stepped up to the plate to continue running our much cherished family carnival.
These roles vary depending on the strengths of the siblings and include communications, location and setting up, advertising and social media, organising of staff, transportation of equipment, maintenance and front of house. For us, running such a big event spread over December and January it really is a lifesaver having everyone work together, and really reminds you just how important family is. This year marks 50 years that you have been setting up in Port Macquarie! How has the carnival evolved over that time? Over the 50 years we have had multiple location changes. From 1973-1975 we were located near the original Coles which is now Officeworks, from 1976-1997 we were located where the current Coles in town is, and from 1998 we have been located in Westport Park. New Years Eve has always been a big night for us when it comes to community involvement. Prior to the fires a few years ago we had teamed up with the local Council to run the
New Years Eve Fireworks display. Throughout the years we have been lucky enough to have 2MC Radio attend our carnival on New Years Eve as well as many other local organisations including Surf Life Savers. Back in the day we also used to have one of the local churches set up a Lucky Numbers Game & Train Ride, as well as running a Disability Day. One of our absolute favourites has been having the local Rural Fire Services bring their firetruck to the carnival for kids and raise awareness of fire safety during the 2020 fires. Throughout the years we have made a conscious effort to donate funds back into the local community as a thank you for all the support we received from the community. The biggest improvement we have had at Young’s Family Carnival would be the introduction of Unlimited Ride Wristbands back in 2020, we had such a huge positive response to the Wristbands that we continue to do them now. There are many locals who have visited the carnival a number of times over the years, what does it mean to you to have these patrons continue to return to the show? For us, it is a very proud moment to see locals attending time and time again. It is what makes us want to continue to make this carnival happen and to continue to improve it for families. It is certainly not something we take for granted.
Do you have any special memories or things you enjoy about performing in Port Macquarie?
A lot of locals will stop to chat to you about how the year has been or that they are glad to see us again and honestly it’s so magical to have that sort of impact on peoples lives and memories.
One of our absolute favourite things about running this carnival is getting to see the children that attend each year grow up. A lot of the families have been coming for multiple years and you really do get to know the people and the faces. A lot of locals will stop to chat to you about how the year has been or that they are glad to see us again, and honestly, it is 26 GREATER PORT MACQUARIE focus
just so magical to have that sort of impact on peoples lives and memories.
Without a doubt the special memory that brings all of us together at Young’s Family Carnival is that we all classify Port Macquarie as our home. For the majority of us, we were either raised here or
we raised our children here. We celebrate Christmas here, it’s where we start our New Year and it’s where we have made life-long friends and memories. Our grandfather’s biggest memory is the 1986 hailstorm that caused an immense amount of damage. He often tells the story of how one of the portable toilets on the carnival block went flying through the air and landed on the roof of one of the caravans – luckily not injuring anyone! But for others that were standing outside trying to protect their equipment they weren’t so lucky, some were hit with hail
and got knocked out, others were okay but their equipment was extremely damaged, particularly the dodgem cars.

What are your hopes for the future of Young’s Family Carnival? We hope to continue growing our relationship

This for us means running a carnival that holds strong family values, allowing for families to create joy filled memories year after year and to one day see all the kids that currently attend bring their children. Tahni-Lee Griffiths stands out as a passionate and self-taught artist who turned her childhood fascination with a fluro yellow underwater digital camera into a passionate profession. From capturing school adventures to experimenting in the darkroom, Tahni’s journey has been a continuous exploration of her artistic flair. We sat down with Tahni to talk about the evolution of her photography, from high school electives to the birth of her own photography business, “Captured by Tahni.” Tahni shares the challenges of balancing solo parenthood, a full-time photography business, and her unwavering commitment to documenting life’s most intimate and unforgettable moments. 30 GREATER PORT MACQUARIE focus
I would volunteer at school sporting events and formal events where I would capture the images, then edit and return. My grandparents gifted me my first ever DSLR camera, a Canon EOS1100d at the end of year ten, as I was signed up to start photography as a year 11/12 elective in high school. I completed a year of the course before moving to a high school which didn’t offer this as a Tafe elective. Tell us about your photography journey so far?
W
After being predominantly self taught, I suppose you could say the real turning point in going from an amateur, passion driven photographer capturing images for enjoyment, to a professional business, was after the birth of my first child. I had thrown the ideas out there prior, but had never made any further steps into the process. Once my baby was born, I knew I didn’t want to return to my 9-5 office job as a solo parent. A photography business seemed daunting, running a business on my own in general…but it fitted my lifestyle perfectly. I was able to raise my child, and just duck out of an afternoon for an hour or so into the sunset capturing images of families and babies to begin with – well that is what I thought it would be like!
hen did you first discover your love for photography?
Captured by Tahni was a slow growth idea for me, something I could adapt and expand on as my baby grew older and became less demanding on me.
It all began with being gifted
I went on to have my second child, amidst the pandemic, so things were slow paced for a while.
my first ever digital camera in about year 6 primary school. I remember it so perfectly, it was a fluro yellow underwater digital camera. I began experimenting with it, using it as a documentation for adventures with friends, but it was obvious from an early age, I had some sort of artistic flare when it came to photography and staging images etc. I was then super lucky to attend a high school that offered photography as an art elective, so I was able to expand and learn the basics of using a DSLR and went on to loving film photography
It all really took off once Opal turned 1. I found my busiest Christmas period hit me in full swing and I was booked every day, including New Years Eve where I captured a lovely proposal at sunset. Things have moved so quickly, I have thrown myself in the deep end on new ideas. I branched out into families, and even this year captured my first ever birth from start to finish, (one of my most memorable photography moments for sure).

Equipment I couldn’t work without... The obvious, my mirrorless camera. Switching from DSLR to mirrorless because of a malfunction has been the biggest blessing for me, I don’t know how I would function if my baby (camera) was to stop working. I also couldn’t work without my array of memory cards and batteries, I get so much anxiety worrying If I have enough charged prior to each big event. And also my camera harness, I couldn’t function with just a neck strap, the harness has been a huge game changer for me, and creates so much ease when shooting. What do I enjoy most about photography? I love people and I love knowing that I get to capture peoples most favourite and memorable moments with my own twist on it. I love creating a relaxed, stress free experience for all of my clients, whilst also bringing out the fun in everyone in a comfortable way. I love then seeing my work shared, it still makes my heart warm seeing my images being used as a print, a display picture or uploaded to a social account. I love story telling documentation, but also a part of posed candid imagery and everything in between. I love capturing the moments either side of the prompts, the laughs, the raw emotions and all of the smaller finer details that are often left or forgotten.

I still remember getting the heads up that it may have been go time, and trying so hard to get some sleep that night in case, but instead found myself checking my phone literally every thirty minutes. I still feel so honoured that I was welcomed into such a sacred space to capture such a powerful moment. Peta Alexopoulos and Belinda Johnson are the women behind Positive Energy Adventures & Retreats, creating and guiding a combination of holistic and sustainable wellness retreats and hiking adventures here on the Mid North Coast. They recently won a Silver award in the prestigious NSW Tourism Awards for 2023 for their entrepreneurial new business.

ello Peta and Belinda. Can you tell us a bit about Positive Energy Adventures & Retreats and where the idea for this came from?
Peta Alexopoulos says, "It's about connecting deeply with the land, culture, and finding your inner balance.". Our three-day hiking and wellness retreat will revitalise your body, mind, and spirit. There's no better place to hike than the Mid North Coast of NSW. Belinda Johnson says, "Inspired by our own experiences, we're thrilled to share this active, yet rejuvenating tourism experience with our 38 GREATER PORT MACQUARIE focus
region." What were some of your goals in starting this business? What was the main idea behind it?
Belinda Johnson, a Wellness Innovator, Pilates & Fitness Instructor, Remedial & Allied Body Specialist, and former professional athlete. Her expertise comes from a deep understanding of body mechanics WHEN IT and wellness principles COMES TO benefiting our hikers.
REDEFINING WELLNESS, WE’RE A BIT OF A DYNAMIC DUO WITH OUR DIFFERENT BACKGROUNDS.
We combine wellness retreats, sustainable practices, and hiking adventures. We also promote well-being, practise sustainable practices, and learn from Aboriginal Elder, Dr. Aunty Rhonda Radley, who joins us on retreats to share stories and help us care for the land. By combining these elements, we can offer a holistic approach to hiking.
Peta Alexopoulos, the visionary founder, has over 20 years’ experience in events, health, and tourism. Her three businesses, Bachelor of Economics, and current studies in Mentorship, Events, and Yoga, make the retreat an experience of the highest standard with a pretty awesome run sheet. Peta's event facilitation skills combined with Belinda's fitness mastery creates a positive
energy experience that transcends the tourism experience. You also both act as guides within the business, what do you enjoy about getting hands on and immersing yourself in the experience as well as running everything?
INSPIRED BY OUR OWN EXPERIENCES, WE’RE THRILLED TO SHARE THIS ACTIVE, YET REJUVENATING TOURISM EXPERIENCE WITH OUR REGION.
We love being outside, staying fit, swimming in the ocean, and finding everything good around us," Belinda says. As guides, we get to share our passion for the outdoors with our clients. “It's our job to ensure our hikers are well prepared and everything runs smoothly” says Peta. In preparation for our guided hikes, Belinda creates an 8-week fitness program. Our hikes are enhanced by Peta's knowledge of National Parks and Eco Pass accreditation. We are able to connect with our clients as guides. What has the feedback been like so far from the people that have attended? We're humbled by the great reviews on TripAdvisor and our website from our hikers. There's a beautiful section on our website called "Postcards of Reflection" and the words speak for themselves. Our TripAdvisor rating is No.1 for Crescent Head activities. Since then, we've gained a lot of followers, sold out hikes, and even had repeat customers. Their support makes our retreats
better and better. Congratulations, we hear you won a Silver Award in the New Tourism Business Category of the prestigious NSW Tourism Awards for 2023! What did it feel like to hear this news?
“Thank you so much. Celebration continues. We are not always about acclaim, but this moment stands out” say Peta. Working together in various businesses for eight years led to Positive Energy. Although it is only a year old, it has been brewing for quite some time, so this award is very special because of this journey and the recognition of this new business. In front of hundreds of delegates, seeing our company's name on the big screen was a real thrill when we were announced as medallists. Can you share a bit about how you were nominated and what has been recognised as your strength in this category? We won Silver at the North Coast Tourism Awards earlier this year, and were invited to enter the NSW Tourism Awards. Reaching the State Awards is an accomplishment in itself. An 8000-word submission on business processes and a 90-minute interview are part of the entry process. Innovation, marketing, customer service with small groups, sustainability, cultural tourism, and being the first of this kind of tourism
experience on the Mid North Coast of NSW were our strengths in this category. Peta, you were able to go to Sydney to accept this award, can you tell us a bit about the Awards event? “Before leaving the hotel room to attend the Black-Tie Gala Award ceremony at White Bay Passenger Terminal in Rozelle, I sent Belinda a video. I became emotional due to the pinch me moment” say Peta. Due to work commitments, a retreat 48 hours later, and geography, we couldn't be together when the award was announced, but we were there in spirit. Dr. Aunty Rhonda Radley was fortunately in Sydney for other engagements on the night, so she joined Positive Energy for the event. What goals or plans do you have for the future of Positive Energy Adventures & Retreats? Exciting developments await in 2024! Recently, we introduced Self-Guided and Camp & Carry hikes to enhance customers' outdoor experience by offering diverse pricing options and flexible timing. In the winter, we are also planning an incredible Men's Expedition. Additionally, Positive Energy Life, the sister company to Positive Energy Adventures & Retreats, is being meticulously crafted. Featuring an online series of transformative courses, this promises to redefine and positively impact lives across the globe. Get ready for a year filled with new adventures and lifechanging positive energy experiences. GREATER PORT MACQUARIE focus 39

ince 2000, Margret has been a leader in the international field of arts, health and creative ageing and founded Arts and Health Australia to promote the positive impacts on health and well-being for individuals and communities through engaging with the arts. Margret moved from Sydney in 2006 and relocated to Port Macquarie to create an artistic legacy for her new community. In 2010, Margret embarked on developing a public art project, ‘Hello Koalas Sculpture Trail’ (www.hellokoalas.com), launched by the NSW Premier in September 2014, with 50 one metre high fibreglass sculptures hand painted by local artists. Since 2015, The Trail has won tourism and business awards, including gold four times in the NSW Tourism Awards for ‘Cultural Tourism’ (2017, 2019, 2021) and ‘Tourist Attractions’ (2022). Now encompassing 88 sculptures, the Hello Koalas Sculpture Trail won gold for ‘Best Sculpture Park or Trail’ in the 2022 Australian Street Art Awards and Silver for ‘Best Landmark Sculpture’ for the Trail’s 2.5 metre Big Koala.
2022 at the new educational and tourism precinct ‘Guulabaa, Place of Koala’, being developed by the Forestry Corporation of NSW on the corner of Burrawan Forest Drive and the Oxley Highway. Regional Australia Bank sponsors the Big Koala. Other Guulabaa project partners include Koala Conservation Australia (The Koala Hospital), Bunyah Aboriginal Lands Council and WildNets Adventure Park. Since 2013, sponsors have played an important role in maintaining and expanding the Hello Koalas Sculpture Trail as a free and accessible public art attraction for the local community and visitors to the region. We greatly appreciate their ongoing support. All sponsors are acknowledged in the free Hello Koalas Sculpture Tail Guide & Map. In 2017, The Hello Koalas Gallery and Gift Shop was also opened to further support the educational work of the Hello Koalas Sculpture Trail. Every sculpture has an important and unique message about the arts, heritage, environment and wildlife conservation, especially “Caring for our Koalas”.
This 2.5 metre sculpture was created by local artisan John Belfield (who makes all the Hello Koalas fibreglass sculptures in John’s River) and designed and painted by local artist Pauline Roods.
In 2021, Hello Koalas Sculpture Trail invested in the opportunity to create a special ‘Monopoly Port Macquarie’ edition to raise funds to build The Big Koala and create unique educational programs and initiatives. These include children’s books and arts activities such as ‘Paint your own Koala’ sets, available in-store or online.

Welcome to 2024! The start of another year… I hope by the time this goes to print, we are all sitting back sipping Pina Coladas in the sunshine and reflecting on the year that was, and the year that will be, but right now if I’m being honest the reality is far from that!
H
aving said that, it’s at this time of the year my heart often skips a little beat. I don’t know about you, but I love the anticipation of this time of the year. It’s the little rituals and traditions that come along with summer holidays that make my heart sing. You know what I mean, when you wake up to the incessant chirping of cicadas and there’s a stillness to the air; you know it’s going to be a scorcher and there’s no place to be other than the beach (or in the aircon). That’s my kind of start to a new year. But of course “real life” must go on. Businesses still need running and for us personally, this is the time where we welcome a massive influx of visitors and it’s full steam ahead catering for a totally new, albeit transient clientele. We love this time of year in town. The atmosphere is in full holiday mode and there’s a buzz wherever you go. It’s no secret that most of us who choose to live in Port have a little bias when it comes to how easy our town is to negotiate on a good day. How you can normally get a park pretty much directly outside your fave coffee shop… but it’s important to remember too that sharing our slice of “paradise” (as so many refer to our

We’re into our second decade of running a local small business, and I cannot tell you how nice it is to see our “regular visitors” return; all bringing with them stories of what’s happened in the past year since we saw them and what they plan for the year ahead.
So as we begin another year, it’s time for a gentle reminder to do what makes your heart sing. Spend the entire day at the beach, drink the coffee and the wine, eat the oysters and the crayfish, buy the dress (and the earrings!) and make sure you come back and do it all again next year… we’ll be ready and waiting for you, as always! Marine Rescue PMQ is part of our State’s official volunteer marine rescue service, committed to saving lives on the water. We have 230 volunteer members and are an integral part of both our local community and the broader rescue network serving the Mid North Coast and Northern Rivers. As for our display at Lady Nelson Wharf, look out for a Search and Rescue Demonstration involving our main rescue vessel, PM30, and communication with our Town Beach radio base. Plenty of noise, white water and rescue skills to experience. On Town Green, our

Why do you feel an event showcasing these organisations is important for the community? What is the overall message of the day? Everyone has a busy life and finding time for yourself is not easy. However, our volunteer organisations show that sharing a passion or pastime with like-minded, enthusiastic people is a great way to bring some balance and enjoyment into your day. Our groups may be different, but they all share a passion to teach skills, encourage teamwork and provide a sense of shared enjoyment and achievement. If anyone wants to learn some new skills, make new friends, or feel they just want to give something back to our community, then come and see any of our participating organisations and learn about how they can help enrich your life.

It’s all FREE and we have a rolling program of active displays throughout the day by the PMQ Dog Club, PMQ Rowing Club and Billabong Zoo. I love all the new friendships that I have made through sports. This year sport has taken me from Wagga Wagga to the Sunshine Coast and many places in between, and I say to my Mum all the time, think about all the new places I have taken you too for my sport! My favourite is rugby league, next would be touch football. I love any sport and I will give anything a go. At school this year I was a part of touch, cricket, soccer, dance, rugby union, rugby league, netball, swimming, athletics and cross country teams. Could you share with us some of your sporting achievements so far?
This year has been a big year for me. I have made three North Coast PSSA teams, touch, rugby league and rugby union. This is something that no one at Wauchope Public has done before. To make even one North Coast side is massive so I was really proud to make 3. This year I was also selected in the Northern Eagles Touch side which was cool. I got to play on the Sunshine Coast at Nationals. I also won the Rugby League MOD Player of the Year two years in a row, which is also a first. I have won Sportsman of the Year 2 years in a row at school and have also just found out that I have won Camden Haven Lower North Coast Sportsperson of the Year. You recently won the Nanga Mai Award for excellence in sport, how did it feel to hear you had won that award?
I was really surprised, excited and proud. This award means a lot to me. I want to be a role model in my community and for the younger Aboriginal kids. I was surprised to hear about it as I didn’t even know I was nominated for the award.

Warren Thom has been a trained chef for 47 years and has called Club North Haven home for the past 11 of those. Warren has a highly trained team of chefs and cooks whose experience is fast reaching a combined 150 years!

arren’s protégé David, who happens to also be his son in law, has worked at Club North Haven
for over 8 years starting out 2 nights a week helping and is now second in line as a chef within the bistro. Club North Haven is proud to have many chefs within their team such as Ranji, our dessert guru who has been with us for 4 years, Rick has been here for 2 years, Dylan, 4 years and Fergus who started his apprenticeship with Warren and has now returned to the Club where it all began. Karen, our resident Kiwi, has 40 years’ 56 GREATER PORT MACQUARIE focus
experience under her belt after starting her career in New Zealand before heading to Australia in the 80’s. Kirsten has worked in all areas of hospitality for over 30 years but her favourite place to be is behind the grill. Both of these talented women have been within Club North Haven for almost a year. How did you become interested in cooking, and what inspired you to become a chef? I was never a big fan of school and much preferred to be helping Dad who had a truck business, so I chose to leave school at 15 to pursue work. I worked alongside my Dad for a bit, thinking I could work my way up to taking over the business, however Dad said it was important
for me to have a trade behind me, so off I went to look for an apprenticeship. I always funnily enough wanted to be a mechanic, but struggled to find an apprenticeship. After a little while looking I stumbled across an ad in the local paper for a chef’s apprenticeship and thought, why not? I’ll give that a crack! Now at 63, I have been fortunate enough to have trained my son, son in law, grandson and godson in the profession I love. Can you share a memorable or challenging experience from your career that has shaped you as a chef? I had lived my whole life in Port Macquarie and I started my apprenticeship at the Sandcastle Motor Inn before moving onto the old RSL on Short Street in the bistro. The RSL
bistro had a French theme to its restaurant which is where my love for French cooking began and inspired my fascination with sauces.
I try to stay as up to date with on and upcoming trends as I can. Participating in online education, videos, food magazines and my favourite monthly Food Journal.

would be too many to list. I do however love making sauces, so anything with a sauce.
What is your favourite dish to cook, and why?
Can you describe your cooking style and the techniques you enjoy using the most?
A lot of my 47 years of cooking has been in the club industry which has been paired a lot with French techniques and influences.
Over the last 47 years I have come across so many favourites there would be too many to list. I do however love making sauces, so anything with a sauce.
I do however believe the key to most people’s heart is a beautifully cooked steak, perfect sauce and well paired sides – so you will mostly find me behind the grill ensuring that your steak is cooked to absolute perfection.
How do you stay updated on food trends?
What are some essential tools or gadgets
you always have in your kitchen? A good Chef’s Knife and a good team of staff. How do you come up with new recipes or dishes, and what is your creative process like? A lot of trial and error. Over the years I have tried many different things with different ingredients to see what works well together. Listening to my staff and other chefs and cooks allows me to implement other ideas and dishes I may not have considered or thought about. They have so many different and varying ideas and are great to bounce ideas off. Describe Club North Haven’s dining experience in one sentence. Mainly, the value for money. At Club North Haven we try to ensure our pricing is a comfortable level with varying options for all those who visit. Whether you premix or make the mimosas individually, make sure the wine and orange juice are well chilled. Premix mimosas in a jug just before your guests arrive but don’t do this too far in advance because you will lose some of the carbonation. You can then keep the jug in the refrigerator until your guests arrive.

H
i Pam. Can you give us a bit of background on who you are as a musician and where your love of music comes from?
Music is my therapy. It helps us through the best and worst of times and has been a sanctuary for me for years. It is a reconnection to home and for some to memories that move and inspire. I love music because it is a universal language that moves people physically and emotionally; it brings people together. Truly great music inspires wonder and that is just modern day magic. Can you tell us a bit about your process, whether you’re writing and putting together songs or working on a set list? For a covers show honestly I play what I want to play, no ipads. Although I can read charts music and chords I think if you’re going to pay me the least I can do is know and learn the music by heart. I love taking requests and will ask my crowds to heckle me regularly, 62 GREATER PORT MACQUARIE focus
LOL its all part of the fun, anything 1920’s to today is my repertoire. I can remember over 500 songs but I can't remember why I went to the kitchen.. go figure. I write all my best songs when I am travelling. Driving for hours on tours gives you a lot of time to think and I sing pretty much all the time, everywhere I go. When I drive I get to see and experience places I've never been, often alone, and I love that because I get to drink in new horizons and it is awe inspiring, especially in Australia. From the mountains to the coast, and deserts to the tablelands that feeling of witnessing something beautiful is what I want to put in my songs and it's quite the challenge. There is no one method for me in song writing though. My single Big River Run was written years before the floods, but was never finished until after I experienced it. I've written songs after being inspired by burning cane fields outside my kitchen window while I was doing the dishes, the words and melody just make themselves. My cultural songs are probably the most structured because
they stem from tradition. We sing our blessings first, and we call our ancestors to assist in the performance to stand with us. Our native language has a structure, a formal welcome, giving thanks to everything else before ourselves. The language itself is so special to so many New Zealanders far from home and it's a privilege to be performing it and celebrating how beautiful First Nations cultures are. I find translating well known Maori songs that I've found are surprisingly special to Australians that date back to Anzac, or songs they've learnt in school and never heard in English means the whole show is shaped by the people I perform to and how they receive it. You’ve played alongside some pretty big names, and at some great festivals and venues over your career, what are some memorable gigs that stand out to you and why? My first sold out festival was actually right here in Port Macquarie, I played along with Pete Murray, Busby Merou and, Chris Rose and
that's when I realised I wanted to do everything I could to be all I could in this profession. ASB stadium Auckland NZ sold out and my late Nan was my entourage. I never really talked with my family about my career so to see how amazed she was made me feel proud. In 2023 the Grafton Jacaranda Festival main stage was EPIC and my first big stage in-language show with all original songs and film in production in front of thousands! I loved it; a stand out for sure! Then there's the iconic Flow Bar! I’m touring with Songwriters In the Round in all the obscure places in regional NSW. I love to play small halls, historic theatres and on that list was Flow Bar and WOW, we broke the record for the tip bucket! I had a luxurious bath in the Blondie Room, danced on tables and performed an encore unplugged with the crowd singing back to me, it was amazing. You’ve played many local gigs in and around Port Macquarie over the years, do you have some fave local venues? I LOVE Hello Sailor in Port Macquarie, great people, a great team and such a vibe. My husband would wear all their Music is my merch all day everyday if therapy, it they made sweat pants helps us through too haha! Long Point the best and worst Vineyard again has a great Gasshouse. I'd love of times and has team doing great things to see more locals on been a sanctuary for music and recently stages like that just for me for years. Little Turkey that's got bringing their art to the this wonderful outdoor people; the world needs boutique feel. I wouldn't more of that. mind playing Bar Capone What were some of your highlights of 2023, because soul and R&B is my style, but I'm pretty and what are you looking forward to in the booked up as it is lately. year ahead? Are there any local gigs coming up that we can look forward to? Absolutely! During holiday periods I live in Port Macquarie and hang with family. I'll be at Hello Sailor Dec 22 and Little Turkey again Dec 23. Over and above touring, writing and recording, I’m really looking forward to building an orchestral showcase for my latest unreleased original works. I'm being totally indulgent but I'm dying to challenge myself to put culture, soul and orchestra together with AV and perform a big show somewhere like the Sheraton, or the
Highlights 2023. I received my moko kauae (traditional Maori woman’s tattoo) and wrote a song for it that played on air live for the first time in Wauchope and continues to educate on my culture and traditions through song. I GOT MARRIED to a little piece of Australian Rock history, bass player of SYNAPSE, Kane Dorrington and we live happily ever after in a 100 year old milk shed cottage on an island in the Northern Rivers. He's way cooler than me, Triple J unearthed, signed to Warner Bros and
just taking me to school on how to perform my best every day! So in love it's SICKENING. I had an entire rock concert sing me Happy Birthday after my set with the only soul band I know who can keep up, haha! We played at a festival where Salt and Steel played straight after me, best birthday ever. My singles have started playing on ABC and high rotation local radio in the Northern Rivers for the first time EVER. I performed my first culture show on a big stage with full AV, 100% all my own works produced by Flat Jack’s Sound Shack and Derry Moroney, touring with Songwriters in the Round and Songs from the Porch of Life with my good friend Geoff Paul. Music has been and will continue to be a source of inspiration for my music through to 2024, I’m so excited. Thanks Pam. GREATER PORT MACQUARIE focus 63

Tammy Middlemiss has always been a creative person and after trying her hand at candle making she has now created a small local business selling her beautiful handmade candles, wax melts and reed diffusers. Her attention to detail is obvious when you see her beautiful Rose-Mary and Jean creations!

H
i Tammy. When did you first start making candles? What made you decide to give it a go?
I’ve been making candles for 2 years now. My eldest daughter owned a beauty salon at the time, and she loved to have a candle lit throughout the day but burning them all week became costly. That’s when I decided I would give it a go myself. I’ve always been hands on with craft, sewing, handmade projects etc and I thought, how hard could it be. It was very overwhelming to begin with, and my very first batch of candles were far from perfect and anyone that knows me well, knows that I’m a bit of a perfectionist. I gifted my first batch to friends and family for their 68 GREATER PORT MACQUARIE focus

My biggest challenge would have to be believing in myself and to stop doubting myself which is something I do a lot. When the positive feedback from friends and family came back strong and I introduced I decided to take that a Father’s next step with my Day candle range candle business, I had and called them to trust those closest to Mandle’s. How do you usually come up with new fragrances and styles? All the fragrances used in my candles are from an Australian made company based in Sydney. They are a team of professional perfumers that mix and pour each fragrance used in my candles. They also help me find the perfect fragrance requests from my customers. Obviously the candles themselves are beautiful but you have also clearly put a lot into the way they are packaged and presented. How did you decide on the aesthetic you wanted, and what was the design process like? I spent many hours in front of the computer coming up with a design that was unlike others, I wanted to go for a ‘less is more’ approach with an organic look that was simple but stylish at the same time. I use Canva to design my labels and I also use a Cricut cutting machine to help me with my labelling process. It's very time consuming
I absolutely love attending the local markets. I get a lot of positive feedback from customers and other stall holders. I have regulars that come and see me at each market to buy their favourite candle fragrance, or they choose a new fragrance from a choice of 20 fragrances. I feel a great accomplishment knowing that the community keeps coming back each month to enjoy my candles. I also have a regular candle order that I send to Newcastle each month. Do you have any other handmade products available or in development at the moment? I introduced a Father’s Day candle range and called them Mandle’s. (Man-Candle). I went for the more masculine scents, in a lookalike forty-four-gallon drum and these were a huge seller. I’ve decided to keep this range in stock for the men out there that love their candles. I also had to think outside the box and cater for those that don’t like burning candles. I also have a range of wax melts and reed
diffusers. These 2 products are also made using the same amazing fragrances as the candles, so no one misses out. Where would you like to see Rose-Mary & Jean heading into the future? Any particular goals or plans on the horizon? What started as a few candles being made each month has led to 50 or so per week. I placed a few ads on Facebook about gifts for Mother’s Day Stalls and fundraisers for schools and sporting groups and I hit the ground running. I had 6 local schools and Wauchope Physical Culture Club placing orders which saw me make over 300 candles. The response was amazing, and I was blown away. I will continue to offer this to these groups each year as I love to see my candles being enjoyed by the community. My goal for the future.... I would love to see RoseMary and Jean products venture out to the beautiful little boutiques in places like Byron Bay, Kingscliff, and Nelson Bay. I’d love to sit with the owners and create a whole new range of fragrances that would suit the character of their space. Where can people find Rose-Mary & Jean or get in touch? My website is very close to being finalised and in the meantime for those wanting to make a purchase I can be contacted through Facebook (Rose-Mary & Jean) and Instagram (rosemaryandjean). I also attend Kendall Markets on the 1st Sunday of every month. Thanks Tammy. GREATER PORT MACQUARIE focus 69

UPDATE with RACHEL LEMAN
F R O M M I S S M O T I V AT O R
As we usher in the new year, it’s the perfect time to renew your commitment to your own health and well-being. This article is not about new year, new you! You are amazing just the way you are.
A
t Miss Motivator, we believe that true health extends beyond physical strength; it’s about nurturing a holistic connection between the mind and body. In this January Fitness Update, let’s explore the top five benefits of incorporating mindfulness into exercise and daily activities. I wonder, do you practise mindfulness at all? I’m not talking about long meditation sessions, but small windows of mindfulness throughout your day as a habit? Let’s discuss a few reasons why I recommend it, particularly from an exercise perspective.. Mindfulness is the art of being fully present in the moment, and when applied to fitness, it brings a new dimension to your workouts. By focusing on the sensations of movement, the rhythm of your breath, and the engagement of muscles, you create a mind-body connection that enhances your overall exercise experience. This heightened awareness not only improves your form but also fosters a deeper connection with your body. Exercise is a powerful stress reliever, and when combined with mindfulness, its impact is even more profound. Mindful movement allows you to release tension and stress stored in the body,
promoting a sense of calm and emotional wellbeing. Whether it’s a mindful yoga session or a contemplative walk, these practices contribute to a positive mindset, reducing anxiety and boosting your mood. One of the key benefits of mindfulness in fitness is the development of body awareness. As you tune into the subtleties of your body’s movements, you become more attuned to posture and alignment. This increased awareness translates into improved posture during workouts and daily activities. Over time, mindful movement can help alleviate chronic pain and reduce the risk of injury by promoting better body mechanics. Mindfulness fosters a non-judgmental awareness of your body’s capabilities and limitations. This self-compassion is essential for building sustainable fitness habits. Instead of pushing yourself to the limit, you learn to listen to your body and adapt your workouts accordingly. This approach promotes consistency, preventing burnout and injuries, and ensures that fitness becomes a lifelong journey rather than a short-lived resolution. We encourage the practice of tuning into your body before and after the session to set your intention for the session. Some days you feel the need to work harder, and some days
you might need to move more gently. It’s important to listen to your body and move in a way that is helpful to your body and mind. Incorporating mindfulness into your fitness routine doesn’t have to be complicated. Try activities such as mindful walking, where you focus on each step and your breath. Yoga and tai chi are excellent choices, combining movement with breath awareness. Additionally, body-scan meditations can be integrated into your cooldown, promoting relaxation and recovery. At Miss Motivator, we encourage women of all ages and stages to embrace mindfulness as a transformative tool on their fitness journey. By weaving mindfulness into your workouts and daily activities, you’re not just exercising; you’re nurturing your inner strength, finding joy in movement, and creating a foundation for a healthier, happier you. Stay mindful, Rach x P.S - If you need a little help getting started, come and try the Miss Motivator Method to have you feeling strong, energised and fit! GREATER PORT MACQUARIE focus 71

Jenny Watts has been a volunteer with Bravehearts since she moved to Port Macquarie 8 years ago. She and the other local committee members at Bravehearts are determined to make the Mid North Coast a safer place to raise children, tirelessly fundraising to provide free Child Protection Education in our local primary schools.
H
i Jenny. Could you share with us what Bravehearts is and what they do?
Bravehearts Incorporated is Australia’s leading Child Protection Organisation. It was founded in 1997 and offers counselling for child sexual abuse survivors of all ages and their families to help overcome the trauma. There are support services for children, young people and families affected by child sexual abuse. Adult survivors can find help and support including advice and information on Redress. There is also an Information and Support Line - 1800 272 831.(If anyone is in immediate danger please call 000). Can you tell us a bit about what Bravehearts does locally? Specially trained facilitators deliver a fun, interactive live incursion in the schools filled with song and dance and starring our loveable lion cub, Ditto. The children learn how to keep their bodies safe, that IT IS OKAY TO SAY NO and how to remove themselves from an unsafe situation. I love to watch the children and see that they understand and enjoy the songs. What is your role with Bravehearts and how did you come to be involved?

What motivated you to become involved and put your time into this particular program?
To be honest I was very unaware of the impact and prevalence of child sexual abuse! I knew of it of course, but still thought of it as mainly stranger danger. Whilst that is still a thing, the main danger is in our homes, our neighbourhood and extended family.
The statistics are horrifying - 1 in 3 girls and 1 in 5 boys are sexually assaulted by the age of 18!! These stats (and others) are my motivation to make sure children are educated and to try and get conversations started within the community so that child sexual abuse is no longer hidden, and most importantly, that children are believed if they disclose abuse. What outcomes do you hope to see with the work Bravehearts are doing? How does this program help children, families and the community? Our mission is to make the Mid North Coast a safer place to raise children. Education is our only weapon. We educate the children who in turn have conversations with their families and hopefully the families have conversations with extended family and friends. At all of our fundraising functions I take the opportunity to talk about the subject, give statistics and the latest information I have available. I encourage people to have conversations about this. Revutionary LASER TREATMENT FOR GUM D IS E AS E
Early stages of gum disease (gingivitis) is the inflammation of the gums. This occurs when bacteria in plaque and calculus are not removed through brushing or regular scale and cleans, causing damage to the gums. Advanced stages of gum disease (periodontitis) occurs when the inflammation of the gums gets worse, causing the bone supporting our teeth to degenerate.
W
ithout any professional intervention and treatment, over time the teeth can become loose and may need extracting by a dentist.
24% of healthy Australian adults aged 18 and over have moderate to severe gum disease (periodontitis), while 60% of Australians aged 74 and older suffer. How to determine if you have gum disease? • Red, swollen, tender or bleeding gums • Gums have shrunk from teeth • Bad breath or bad taste in the mouth • Loose teeth • Abscesses between teeth and gums Treatment of Gum Disease The treatment for gum disease will vary with severity; mild to moderate gum disease can be treated with brushing, flossing and regular visits to your hygienists and dentist. With more severe gum disease, treatment can vary from sub gingival cleaning to treatment with a specific laser called LANAP. LANAP means Laser Assisted New Attachment Procedure. This laser therapy for the treatment of gum disease is unlike traditional gum surgery; there is no cut and sew. LANAP is a minimally invasive and highly effective treatment. It is used for the treatment of moderate and advanced gum disease. LANAP is the world’s first ever and only FDA approved laser for the treatment of gum disease. Patients have come back with true regeneration of tissue and new bone formation. Traditional gum surgery is a cut and sew procedure and can cause sensitivity, long 78 GREATER PORT MACQUARIE focus
teeth and requires ongoing maintenance. Unlike traditional gum surgery, LANAP uses a multivariable pulsed laser to kill the infected tissue, rejuvenating the gums, connective tissue and bone that support your teeth. The laser attacks pigments in the infected tissue, leaving healthy tissue undamaged. LANAP treatment not only helps the body to regenerate tissue and heal itself naturally, it also helps patients to keep their natural teeth and save smiles! How does LANAP work? Before any treatment, a consultation is necessary, as it allows the dentist to identify diseased tissue and whether LANAP is suitable for you. At this time, a 3D Xray will be taken and a treatment plan will be provided, with all costs, appointment lengths and any follow up appointments necessary. LANAP usually occurs across two dental visits. Half the mouth is completed during the first visit, and a week later the other half of the mouth is completed. The process involves: 1. A perio probe determines the degree of excessive pocket depth and helps the dentist better identify diseased tissue and areas of bacterial infection. 2. The laser removes diseased tissue, while the heat of the laser kills the bacteria. 3. The dentist removes the tartar from the root surface using an ultrasonic scaler and special hand instruments. 4. The laser is used to clean the pocket one more time. 5. The gum is sealed closed to prevent further infection.
6. Any high biting spots are smoothed down to create even force on the tooth. 7. Over time, the bone regenerates and the periodontal ligament re-attaches to the tooth. Benefits of LANAP • Saves your natural teeth • Safe, precise and effective treatment • Bone regeneration up to 50% in patients who follow the protocol and have normal healing • One-time treatment • Less discomfort • Improved recovery time • Little to no recession in gums and regeneration in bone levels. • Reduces inflammation and bleeding • Helps long term health • Safer and gentler than traditional gum surgery Contact us to learn more about this revolutionary treatment. If you've ever been told you have gum disease or need gum surgery, you can take advantage of the tremendous benefits that LANAP laser gum therapy offers. If your gums have become swollen, red or infected, we can help. Our very own Dr Peter Elfar was the first dentist to study and offer this treatment in Australia, with over eight years’ experience and satisfied patients who travel from all over Australia to be treated by him. The club is celebrating their 50th year in 2024, a huge milestone that they are all excited to celebrate with the community.
H
i Deb, can you tell us a bit about when you became involved with Pirates Rugby and what your role is there ?
I have two boys, Jesse and Jake, both of whom were enthusiastic sportsmen during their primary school years. They both participated in the Friday night junior rugby competition. However, a change in rules within the Mid North Coast Zone mandated that U14 boys play on Saturdays. Jake briefly switched to league for a few years before returning to rugby, while Jesse was actively involved in both hockey and rugby. Given my husband Darren’s previous association with the Pirates, joining the club seemed like a natural progression for us. Upon joining, I immediately felt a strong family connection, and we have remained actively involved with the Pirates Club ever since. Over the years, I’ve taken on various roles within the club, including General Committee member, Junior Vice President, Club Vice President, Team 80 GREATER PORT MACQUARIE focus

Being President, especially as the first female President of our great club, was never on my ‘Bucket List.’ I was content just being a part of the club and helping wherever I could. When asked to lead the club as President, I hesitated, having observed many amazing and hardworking presidents over the years. Leading the club into its 50th year, and having never played ‘the game they play in heaven,’ I felt extremely daunted by the task.
What are some of the things you most enjoy about being a part of the Pirates Club? The Pirates Club is like a big family to me, from our little U6s right up to our senior men and women. I feel so proud when I see them, both inside and outside of the season, wearing our club kit, displaying all of our wonderful sponsors, and being proud to be a Pirate! Over the years, many players have actually referred to me as their ‘footy Mum,’ and that warms my heart. I love the vibe the Club has, the connections, and the camaraderie. As the first female President, how has the reception been and what do you hope
To say I was overwhelmed by the numerous messages and phone calls of support I received since putting my hand up would be a massive understatement. The main message was to continue being myself, leveraging others’ strengths, and seeking help from past presidents, life members, and Pirate members in general. Utilising my ‘skill set’ as a mother, I feel wellprepared. My family is the Pirates, and I will use my ‘Mother’ skill set to continue instilling respect as a core value throughout our club.
Having been involved for quite a while ‘inside’ the club gives me more insight through experiences that others coming into the club haven’t seen, and I believe this is a valuable tool as well. The club is celebrating 50 years of rugby in 2024, how will you be marking this milestone ?

Is there anything exciting happening for the club in the year ahead that you can share with us ? We have some exciting new sponsors joining the Pirates, and I believe this is guiding our club in the right direction, appealing to families, younger players, as well as our senior players. Additional age grades are being added to the season for juniors so we’ll have mixed U9, U11, U13 teams on top of the usual mixed U6, U8, U10, U12 teams. U14 and U16 girls teams are being revitalised to provide an avenue once again for that growing area of the game. To commemorate the milestone of 50 years, commemorative playing jerseys will be worn that have a nod to the past in terms of the design featuring the original club logo and old school collars but not the heavy rugby knit the old jerseys used to sport! Every home game will be a special one, as it always is, but with a real drive to bring in the past and present club members of all ages. These will be very much focussed on celebrating our game and club, across the vast diversity we have in this club and community. Additionally, we will be offering special club

BUSINESS
VOICE with
H
ALEX GLEN-HOLMES
appy New year! I hope that you had the opportunity to start the year off with a bang and are now raring to get going with 2024. Make this your year to shine! Have you done a Business Plan for 2024? I find many small to medium business owners don’t have a business plan and I have to admit up until a few years ago neither did I. Many business owners are so busy doing business from day to day, week to week, year to year that they don’t think to plan for what they would like to achieve. We are so busy working IN our business that we don’t work “ON” our business. I like to make the analogy of business compared to a sports team. Let me explain… In sports to achieve and keep going they need to train, but prior to the training they have a plan of what they would like to achieve in the season. This plan is not set in stone and can be amended/changed when things don’t work the same as our business plan should. Without a plan in place the end goal is not clear, and the team aren’t sure of what their training needs comprise of. In business we also need to be sharpening and practising our skills and keeping up with the changes. In marketing, being able to pivot with changes in consumer behaviours; understanding the financials and not just relying on accountants. Being able to explain our business practices to financial institutions when we go for a loan and keeping up with changes in legislation as these come into place (there were a few of these in December with more to follow).
As a business owner we also worry and have a fear of failure. Let me tell you there is no such thing as failure, it is just a learning opportunity. We assess the situation and work out what did and didn’t work, learn from it and adjust our direction. Like sports teams, they don’t loose a game and say that’s it, the season is over! They go back and train for the next game, assess the weaknesses, improve and go out there again. But at the end of the day what was it that they wanted to achieve? It wasn’t all about that one game, it was a stepping stone as to where they wanted to be at a set time. In this case it is usually to make a grand final. In that team the players also have their own personal goals that they would like to achieve. Maybe it is to be player of the match, maybe just to step up a level but as a team they come together to achieve the big goal. Have you discussed the bigger goals with your team? For them to help the business achieve this, we need to know what their personal goals are and help them to achieve these too. Yes, at times things get hard in business. We feel that we are banging our heads against a brick wall with extra challenges like fuel prices, electricity, wages, interest rates and CPI, but what was the dream we had that propelled us to start or buy our own business? With sport teams they may not make the semi finals or the grand final but that doesn’t stop them coming back next year and trying again. Even for the team that won the grand final, they have to start all over again in the new season with the added expectation and pressure to uphold their previous performances.
You see we all chase a goal, but what happens when you achieve that goal? We don’t stop do we? No, by then we have set new goals and are striving for them. When we were learning to walk, we fell many times, but it didn’t stop us, we persevered and kept going until we could walk. Then once we had achieved that, it was run, jump, skip and climb. We are still on that projectory. What will your next step be? At Business Port Macquarie we are there to support you on your journey. We provide opportunities for you to meet and form alliances with other businesses, educational events and also access to HR and legal responsibilities. We love being part of, and hearing about your journey and watching you shine. We hope that you can join us to kick off the 2024 with our Networking evening cocktail party 23rd January at Sunset Framing and Gallery. A great opportunity to network and hear what we have planned for the first half of the year. To register go to www.businesspmq. com.au/events/. We’d also love to hear what your needs are and what information you would like us to deliver. When we work together as a team, we can achieve more wins for all. Also mark your calendar for 6th February where we will be launching the 2024 Coastline Credit Union Greater Port Macquarie Business Awards. Entering the awards is an opportunity to reward yourself and your staff for the amazing job you do. I hope to see you at the launch, and again at the Gala dinner on the 18th of May. Until next month, dream big and make a plan! GREATER PORT MACQUARIE focus 85

Congratulations Class of 2023
From the Principal — Mr Allan Guihot It is always gratifying to see the young men and women who have traversed the steps of our school, reach this academic milestone. The Higher School Certificate is another step along the way, another input into what is the complex algorithm of one’s life. On behalf of the St Columba Anglican School community, I congratulate our Class of 2023 on their hard-earned meritorious results. Their Higher School Certificate results continue the school’s excellent record of academic achievement. The school placed strongly in the HSC Top Schools rankings at 121, placing it clearly at the top of schools in the region and among the top few north of Sydney. Our class of 2023 have, throughout their time at SCAS, displayed a wide range of talents and they graduate with much more than a great set of ATAR numbers. They graduate with a range of educational and cultural experiences, skills and dispositions that have prepared them for the evolving world into which they enter. They have been given an insight into what it takes to be productive, responsible and engaged members of our society and will hopefully each contribute something to make a better world. They are now ready to engage this world through their plans for study, work, travel and service. They leave behind their school days but do not leave our community as we will always welcome news of their exploits, future visits and new learnings. We wish them well in their future and are firm in our belief that their time at St Columba has been well spent and their bright futures will reflect the value of the “world of opportunities” they have been offered in their time with us.
A message of congratulations from the Head of Secondary School — Mr Paul Rikmanis The School Council, Principal, and staff of St Columba Anglican School proudly celebrate the exceptional achievements of the Class of 2023, marking our 17th Higher School Certificate candidature. This class has continued the rich academic legacy of our school, building upon the accomplishments of their predecessors. St Columba Anglican School boasts a distinguished academic tradition alongside the development of essential dispositions for our students’ future success. In this academic year, our students have once again demonstrated outstanding Higher School Certificate results, with an impressive 76 entries in the Distinguished Achievers list attributed to 37 students. Notably, Jed Kirkman secured first place in the state for Mathematics Standard 2, achieving a perfect score of 100—an extraordinary accomplishment that reflects Jed’s unwavering dedication to his education. Georgia Stanfield Gates is also to be congratulated on placing 7th in the state for Textiles and Design. Approximately 36% of our students featured in the Distinguished Achievers list, showcasing exceptional Band 6 results. Standout performances include Georgia Stanfield Gates, achieving outstanding results in six subjects, and Ban Rashdan, excelling in five subjects, both earning their places on the HSC All-Round Achievers list. Further noteworthy achievements include Ben McLean, Aarohi Deshmukh, Cormac Flynn and Evangeline Martin, who achieved impressive results with four Band 6 outcomes. Georgia Stanfield-Gates also achieved the highest ATAR for 2023 with 99.55. Congratulations Georgia. In specific subject areas, our Dance students achieved a remarkable 100% in the top 2 bands, while 70% of Music 1 students and 71% of Textiles students attained Band 6 results. Additionally, 90% of Drama and English Extension 2 students secured positions in the top two bands, with 83% of Physics and 83% of Extension 2 Mathematics students achieving similar distinctions. St Columba is at the forefront of collaboration with the University of Melbourne in credentialing students’ achievements in Deep Learning competencies. This initiative is designed to equip our students with the capacities necessary for success in their future endeavours. We extend our heartfelt congratulations to Lila Browning, whose creativity was acknowledged with inclusion in Callback, the prestigious HSC Dance showcase. Noteworthy accolades for Critical and Creative Thinking skills were awarded to Aarohi Deshmukh and Nicalie McPherson, who respectively secured first place Young Scientist of the Year and first place for Technological Innovations in Years 11-12 in the STANSW awards. Earlier this year, Milly Dunbar’s outstanding citizenship was acknowledged with an Order of Australia Youth Community Service Award. The entire St Columba community applauds the remarkable achievements of the Class of 2023, embodying the School’s commitment to excellence in education and holistic development.

Hello 2024 & Happy New Year to all! I hope that you all had a wonderful celebration over the Christmas and New Year period stayed safe and well, and made lots of beautiful memories with your loved ones.
T
here is something so exciting about the clock ticking over to a New Year. The feeling of so much promise for the year ahead with all of our good intentions put out into the universe to manifest the life we want. So, are your finances set up to support you in achieving your 2024 goals? Let’s talk about how a mortgage broker can help you get ahead this year. For those looking to get into the market and purchase their first home. The first step in the process is to speak with a mortgage broker to understand your borrowing capacity and the deposit required to get you into the market. There are a number of schemes and grants available to first home buyers that your broker can talk you through to understand your eligibility. A pre-approval is highly recommended prior to making an offer. This can help to speed up the process to exchange when you have had an offer accepted and can help to reduce the chance of loosing the property to another buyer. For those ready to take the next step in their property journey and purchase an investment property. Speaking to a broker who can tailor your loan products and structure your lending to assist you in achieving your property goals is a must
when purchasing an investment property. The current interest rate environment has negatively impacted borrowing capacity and has made it harder then ever to purchase an investment. A mortgage broker can help to increase borrowing capacity by restructuring existing facilities, making purchasing an investment property more achievable. Different banks have different policies and therefore just because you don’t service with one bank doesn’t mean you won’t with another. Those wanting to upsize/downsize but don’t know where to start. Did you know that you do not always have to sell your existing home before moving to your next? I have seen an increase in bridging loan enquires toward the second half of 2023. Not all banks offer bridging products and there is definitely a great cost and policy differential between the banks that do offer this. A broker will work to understand your situation and provide product comparisons for lenders hand picked based on your individual circumstances. Bridging finance can be costly so ensuring you understand all of the fees and charges is a must. Those who want to pay off their mortgage sooner, haven’t reviewed their loan for over 24 months or whose fixed rate has recently expired.
There are a number of strategies one can use to pay off their mortgage sooner, and a mortgage broker can talk you through these options. Offset accounts and redraw facilities can reduce the amount of interest you pay on your loan meaning you pay down your principle sooner. Additional repayments is another great way to get ahead. An additional $50 per week on a $500,000 mortgage at 6.18% could shave 4.9 years off a 30 year loan, saving you over $115,000 in interest. Believe it or not, borrowing to buy an investment property can also help you pay off your home loan sooner by taking advantage of the capital growth from the investment. As time goes by our circumstances change and just because a mortgage product was working for you when you took it out, it doesn’t mean that it is right for you now. Don’t get stuck paying a loyalty tax to your bank and review your loan to ensure your product is still competitive. If any of the above scenarios resonate with you then reach out today! I have helped hundreds of clients achieve their financial goals by understanding what truly matters to them and tailoring lending solutions to meet their needs. Lets get you set up to make 2024 a year to get ahead of your finances! GREATER PORT MACQUARIE focus 91

You could be forgiven for thinking that Emma Walker is everything, everywhere, all at once. Regularly seen with a camera or iPhone in hand stealthily capturing the spirit of a regional event or charity project, she and hubby CJ have swapped the inner city of Sydney for creative collaboration and community in coastal Port Macquarie.
Y
ou have immersed yourself in many corporate and community initiatives including Port Macquarie Surf Life Saving Club, Ride the Wave and Heart of Courage to name just a few. What was the appeal of our coastal community and how did you find your place? Each year I came to Port to support my parents in Ironman, and found myself eyeing local real estate during their bike legs with my nowhusband Chris (CJ). We discovered that a house in town was the same rent as our one bedroom apartment in Sydney. Shortly after, we made the move, and within a month in 2013, we bought a house, got married, and welcomed our first child. We joined local groups, connecting with incredible people. Living in a region with constant innovation, I’ve witnessed groundbreaking businesses in and around Port Macquarie, solidifying my belief in being exactly where I should be. connects and celebrates our community through the medium of social media. Who or what inspired the passion within you, and to take on this journey? Where did it all begin? Back in my uni days, I loved creating yearly DVDs for friends, complete with cheesy music, star wipes, and Comic Sans font. This experience highlighted the incredible impact of visual storytelling. Given the strong sense of community in the Mid North Coast region, when we moved here I saw an opportunity to use my skills to benefit local businesses through social media, which is essentially about ‘building community.’ I feel privileged to help these businesses share their stories. As a creative and business mind do you subscribe to a firm business plan or move more with energy and flow? At Gem Socials, we’re big on using clear processes and frameworks. But social media can be pretty dynamic, so we’re all about thinking on the fly when needed. We aim to be an extension of our clients’ teams, working together towards common goals. I started off thinking of myself as the
business brain in a creative world. However, since launching my own business and building a team, I’ve become a hybrid model. I take pride in bringing on people with a mix of skills to cover all bases. In this ever-changing business landscape, being good at ‘going with the flow’ is crucial. It’s all about adapting and making the most of whatever comes our way. How do you envision you would make an impact as a small business in a regional/ coastal community? I untangle the social media puzzle for those finding it challenging - my goal is to simplify social media for businesses as its value grows. Just five years ago, social media managers weren’t a thing, but now they’re a must-have for most businesses. Social media, the glue that brings people together, supports in tough times, lifts spirits through challenges, and celebrates local heroes. Working with resilient people in this region, I’m inspired by their mutual support. It’s a privilege to be part of a community that strongly values connection and lifting each other up. What have been your most effective tools or attributes as a business owner that have
enabled you to make a difference? I pride myself on being a do-er, but I’ve also learned the importance of being a listener. It’s a two-way street, and engaging with clients is vital for understanding their challenges and goals.
I take pride in bringing on people with a mix of skills to cover all bases. In this everchanging business landscape, being good at ‘going with the flow’ is crucial.
Being self-aware and genuine is a natural strength for me. I’m passionate about what we do, and while it may take a bit for people to resonate with it, I believe in the value we bring. Gaining traction, I’ve learned, comes from genuinely believing in what you put out there. My hardworking team values flexibility, which I’ve found works best for us. Operating between Port Macquarie and Sydney, we adapt to ensure that we have a work/life balance. What has been your greatest challenge and greatest achievement during your time as a business owner?
A major win for us was the 2023 Ride the Wave Festival, injecting $2 million into the local economy and raising over $100K for the disadvantaged of the region through Make A Difference PMQ. Social media played a key role, driving 30K hits to the website and increasing ticket sales tenfold from the previous year. You have a flair and passion for digital storytelling and we can regularly see you adding some cheeky down to earth fun and themes to your projects - is there a particular project or event that stands out in your mind as a game changer for you? Artwalk was crucial for our business. We shared local artists’ stories and captured the event excitement, with amazing community feedback.
Navigating client expectations is challenging. With new platforms emerging, staying on top of changes and communicating these to our clients is crucial.
Pop-up events with Port Fresh Seafoods, like fish taco cooking for Barramundi Day and prawn peeling for National Prawn Day, were a hit. Our ‘live feeds’ from the lobster tank, including lobster yoga, went well in the early days of Instagram reels.
The key lesson: back yourself. Inspired by women in the region, I’ve learned to recognise my value and balance business and family.
Currently, we’re deep into filming a cheeky awareness campaign for koala road safety with the Council - stay tuned!
You have curated a collaborative of passionate and fun creatives – how important is this creative community to the success of the business? In a regional context, referrals are key. Crafting a positive impact in the local creative network ensures our work circles back through mutual support, respect and valuing every collaborators role and sharing that with our client. As a business owner, a creative network provides invaluable support, easing the isolation of entrepreneurship by sharing highs and lows. How instrumental have sages and critics been in the evolution of your career/ business? What is the most valuable lesson they have taught you? Our connection to the local creative network is invaluable for us. Regularly, we dip into this well of creativity, exchanging experiences and insights within the industry. These interactions have been absolute game-changers on my journey. The most valuable lesson I’ve learned has been to ask for help and utilise the strengths of others. We’ve figured out what we excel at and where our true value lies. There was a phase when we attempted to do it all, but that strategy didn’t work. Now, embracing the power of collaboration, we’re in a much better place. Thanks Emma. GREATER PORT MACQUARIE focus 93

INTRODUCING THE MORA RANGE
n the ever-evolving world of interior design, one trend has been making a steadfast comeback, adding depth and warmth to contemporary spaces: the resurgence of mid-tone and darker woods. This shift marks a departure from the dominance of lighter wood tones that have graced homes in recent years. Today, we explore the versatility and timeless appeal of darker woods, shedding light on their transformative role in coastal and tropical interior schemes. Coastal interiors have long been associated with a palette of whites, blues, and sandy neutrals, reminiscent of serene beach-scapes. Yet, the influx of mid-tone and darker woods introduces a new chapter in coastal design. Imagine a dining room adorned with a stylish on-trend oval table surrounded by linen slipcover chairs, or a living space featuring an espresso media console against a backdrop of soft oceanic hues. The contrast is striking, infusing the space with a sense of depth and sophistication. The beauty lies in the unexpected harmony between the coastal aesthetic and the warmth that darker woods bring to the table. One of the key advantages of incorporating darker woods in coastal interiors is the introduction of coziness. While coastal design tends to emphasise light and airy atmospheres, darker woods counterbalance 94 GREATER PORT MACQUARIE focus
this by adding a layer of comfort and intimacy. Darker woods also seamlessly integrate with the vibrant and leafy green colours synonymous with tropical or resort-style interiors. The marriage of deep, earthy tones and lush, botanical greens, gold decor accessories and natural linens creates a visual interior style that refers beautifully to the timeless appeal of tropical landscapes. Picture a dark hue coffee table anchoring a living room adorned with palm fronds and emerald accents – the result is an oasis of tranquility that transcends geographical boundaries. Fortunately, the misconception that darker woods are reserved for traditional or oldfashioned aesthetics is quickly fading away. In fact, when applied to more contemporary furniture styles, darker woods become a canvas for contemporary elegance. A dark wood bed frame adorned with sumptuous white or neutral toned bed linen, as well as rustic linen cushions or throws can create a sumptuous, dreamy and cozy sleeping space. Darker furniture also ‘pops’ when set against tropical or botanical wallpapers, once again creating depth and a little drama. The clever pairing of dark woods against clean lines and uncluttered spaces exemplifies the marriage of classic and modern design elements. As I’ve mentioned already, darker wood furniture also complements the rising trend of using natural textiles and fabrics. Whether it’s
a beautiful darker toned console paired with linen upholstery or an espresso-stained table adorned with crisp linen napery, the synergy between darker woods and natural materials ads a tactile dimension to interiors. This tactile quality not only enhances the overall sensory experience but also elevates the design by introducing layers of depth and texture. In the world of decor, accessories play a pivotal role, and darker woods provide an ideal backdrop for showcasing art, ceramics, and other decorative elements. The contrast between the richness of the wood and the vibrancy of the decor creates a dynamic interplay that captures attention without overwhelming the space. Darker woods, therefore, offer a versatile canvas for selfexpression, allowing homeowners to curate spaces that are both visually compelling and deeply personal. OpenHouse Furniture has welcomed the resurgence of mid-tone and darker woods with the debut of our exciting new MORA collection in stunning ‘espresso’. From coastal retreats to tropical havens and modern sanctuaries, darker woods weave a narrative that transcends design boundaries. Come to our showroom at 171 Lake Road, Port Macquarie or find us at www.facebook. com/openhouseportmacquarie to see how the ‘Mora’ collection might suit your interior space.

ou have recently undergone a name change to Sorensen Caldon Ferris Builders… what other exciting changes have taken place
in 2023 for you?
We recently completed a very special project that was two years in the making - an architecturally designed, modern resort-style home. It was our biggest single home to date and it is a showstopper! 96 GREATER PORT MACQUARIE focus
SINCE 1958”
We’ve also been planning our head office relocation to 13 Cornwall Street in Taree - a beautiful space that we are all excited to open this month and introduce to our clients when they visit for their new home selections process. Otherwise, 2023 has been another busy year in the building industry and we have been hard at work catching up and getting our lead times back to pre-COVID timeframes as the industry starts to normalise once more. We are featuring one of your recent award-
winning homes. Can you tell us about the award and the criteria that made this home eligible? This accolade was awarded by The Master Builders Association at the recent 2023 Newcastle Regional Excellence in Building Awards in the custom-built home $600 - $700K category for our entry ‘Coastal Essentialism’. Take us through the home and some of your favourite features. Nestled on a 953sqm block, this contemporary
coastal home has a sense of authenticity and integrity.
The large span of the floating shelf coupled with the large rangehood cover created a challenge for the joiners to install and get this perfectly aligned with the splashback window below.
Unique in its design, this home is a formed C, shaped around an internal courtyard. Lexicon White Linea weatherboards, oversized timber fascia and a sweeping skillion roof in shale grey are reminiscent of mid-century beach houses. One of the unique design features was the size of the fascia and barge board to allow the eaves and the internal ceiling to be at the same level and conceal the LVL roof framing. Clean lines elegantly combined with paired back coastal beach plantings, gravels, and natural timber highlights, really set the scene as you enter through their custom-made hardwood gate into the first of our client’s private alfresco spaces and internal courtyard.
On entering, the modern masculine feel of this home is quite striking; square set ceilings, windows, door frames and skirting boards, combined with 9 foot and raked ceilings at interesting angles. Extensive use of louvres, most with solid anodised aluminium blades and fixed panel windows, connect the inhabitants to both the front private courtyard and the extensive rear green space and pool area. The external treatment of the windows to the Linea cladding was achieved by using a reversed aluminium angle as the stop mold to the Linea cladding to create a very minimal external window reveal. This achieves the client’s desired look and created a very neat detail.
Burnished concrete floors lend a leathery texture to a muted modern palette of Dulux Lexicon quarter strength and green slate. Many design elements in this home were chosen with a mind for quality and practicality. The joinery has been selected with a mix of finishes and texture, from the Laminex Ultimate Matte range to the 12mm Dekton benches, and premium appliances to finish off the space. The large span of the floating shelf coupled with the large rangehood cover created a challenge for the joiners to install and get this perfectly aligned with the splashback window below. A favourite element is the Cheminees Philippe fireplace adorning a custom formed concrete hearth, set in front of the monotoned Brickworks Nickel blocks with matching mortar. The block feature wall and striped back woodfire sets the scene for the media room that overlooks the two outdoor spaces, sunny in the day on one side, shaded on the other and at night a cosy fireside. Minimal use of downlights throughout, and thoughtfully curated use of mood and task lighting are just some of the subtle design details. These highlight the simplicity of the finishes and feature elements. Was this home designed by your team? Tell us about the design process and how you work and collaborate with your clients? This beautiful home was designed in house
and was a collaborative effort between SCF and our clients. The design is a direct response to climate, place, function, materiality, and structure and is much loved by its new owners. What are the company’s must do’s/have when building a home? If possible, have more than one block option shortlisted for the builders to assess and educate yourself on how important orientation is when purchasing a block. Have a good understanding of your budget and your wish list and, equally important, what you don’t like. If the budget is tight, stick to flatter/level blocks. Where do you find inspiration from when putting your designs together? All designs start to evolve from assessing the following: views, orientation, passive solar design, energy efficiency, site constraints, land contours and privacy. Most importantly are our clients’ design ideas and how to incorporate them to achieve the best build outcomes and buildability. Tell us what you and the team have in store for 2024. We have lots of large upscale custom designs in the Manning Valley region in the pipeline. We’re pushing forward with our branding changes and the evolution of our business into SCF Builders. We will also commence the preliminary planning of our next exciting new display home and we’re looking forward to bringing our in-house interior and colour consultant on board as a more permanent fixture of SCF. Adam Kiers is a local man who bought some property at Flynns Beach with a plan to create a multi-residence design that allowed each family home to feel spacious and open whilst still making use of the single block, and that suited the environment in this relaxed beach suburb. After teaming up with local architect Chris Jenkins, he has definitely succeeded in this goal, with ‘The Flynn’ receiving a prestigious award from the Australian Institute of Architecture.
H
i Adam, can you tell us about ‘The Flynn’ and how this project got started?
I grew up in Port Macquarie before moving to Sydney. In 2014, I’d saved enough to buy some land and property in my hometown. Originally, there was a lovely old blue weatherboard cottage on the land. My parents are keen renovators, so growing up I had some exposure to what was involved, and was excited to start my own project. Flynn’s Beach has always been my favourite part of town. I like that it’s still up and coming. What has your role been in the project? I’ve studied and work in film, so I feel in some ways I was like a creative director on this project. I had a vision of spacious, light filled

townhouses, like a modern take on the beach shack, inspired by my local surroundings and ideas from coastal destinations around the world. I planned to build three luxurious townhouses, which was a huge challenge given the land was originally only intended to host a single dwelling. Can you tell us a bit about the architect who designed The Flynn? Chris Jenkins is a highly respected and renowned local architect, and has a unique design approach to modernism and Australian architecture. In addition to being the architect and construction manager, Chris was a great mentor for me during the project - and a very patient one! It was a massive learning curve, because whilst I had a vision, the design and construction process was something different
altogether. I’m so grateful to Chris that he was brave enough to entertain my idea in the first place, to bring his expertise to this project and work with me to make it a reality. What was the brief or main concept behind this design? I was hugely determined to do something different. To make it unique, to celebrate the beach lifestyle, surroundings and provide a distinct sense of place. It was important to me that each home felt spacious and luxurious, even though technically, we were very limited by space! This type of property is not something we see a lot of in this area, what has the response been like from the community here in Port Macquarie? I’ve definitely had a very positive response

A
s we roll into 2024 I am enjoying the fact that I have now been camping with my family for two whole weeks already. This time to spend with our 3 daughters is wonderful, especially considering one is moving to Canada in February so our time together is priceless. On the flip side, this is unheard of at this time of year, we can NEVER get away prior to Christmas and the fact we have managed to means two things: we have gathered amazing staff in our business and we’re able to confidently get away knowing things are in good hands. The other significant factor is that this has been a quieter Christmas for us, and from my conversations with other business owners, almost everyone is feeling the same. We did head into 2023 expecting a very different financial climate and that’s definitely what we’ve seen…. as a small business what have we done to try to weather the downturn? Largely what we have tried to do is use this time to prepare ourselves in readiness for the financial pickup when it arrives again. We have used the time to implement long overdue and much needed software to help us improve our

systems and functionality and we have also updated our website and set up our new showroom. Most of you would know by now we purchased Shades 2000 in 2022, which means we now manufacture a number of our own products. This has enabled us to gain some more control over our supply chain which we anticipate will come to even more fruition in 2024. This year has been a big learning curve on the manufacturing side and now 14 months into it we have ironed out some of the crinkles. For Robert and I the last three years has been a huge time of growth in our business - this time 3 years ago there were 5 of us now there are 16 staff. Whilst this appears from the outside to be a sign of success, on the inside it has been largely unplanned and more a necessary response - starting with the demands of COVID and then continued by the strong building and economy in our region. The growth of our business has certainly come with huge challenges - some things I think we did well, other things we have room for
improvement. Looking forward we have some exciting new products coming soon which we can’t wait to share with you all.
The curtain comeback is going strong and the joy we get from all the beautiful new fabrics is bliss! Feel free to come into the showroom you can touch and feel all the fabrics and even if you don’t need curtains right now you might just want fabric to make cushions or bed linen or table cloths - some are even good enough to wear! We are now covering Forster to Coffs Harbour so please let friends and family know in those regions. We are open from Tuesday January 2nd so if you need a quote or service call get in touch. And lastly be on the lookout for our new TV ad! Happy New Year, may 2024 be a positive one for everyone.
