ou both have an interesting background in the sheep and wool industry. Could you tell us a little about your respective family

histories?

David: Growing wool has been a continual part of life on “Eastview” since my grandfather purchased the property in 1949.

As a young boy, shearing was “conveniently” organised around my school holidays, and I have fond memories of these times.

On leaving school, I bought my own property and continued to work on the family farm alongside my father and grandfather, gaining invaluable experience and knowledge.

I obtained my wool classing certificate and worked in many woolsheds classing and preparing woolclips.

Angie: Sometimes I feel that I have wool running through my veins! I am a sixth generation wool producer and very proud of my history. My great grandfather was a very well respected and accomplished wool

Alongside our commercial flock, we also operate our own stud, Tarrangower Merinos, to achieve greater control over our genetics. From the stud, we offer rams for sale in January of each year.

For the last few years, while wool prices have been depressed, we have diversified into cross breeding with White Suffolks from a small portion of our breeding flock, to capitalise on high lamb prices and to improve cashflow. We also run a herd of 100 - 150 cattle, but these numbers fluctuate with the season.

You’ve achieved some phenomenal success with your wool, winning the Ermenegildo Zegna Superfine Wool Trophy for the second time in a row. To what do you feel you owe this success?

We won this incredibly prestigious prize for the first time in 2017, and that was great motivation to do it again. Thrilled and very proud, we won the competition for a second time in a row this year.

As for the recipe for success, it comes down to not only persisting with superfine wool through some very tough years, but also continually improving and, importantly, having the right product. This is the result of ideal genetics and much hard work growing and preparing this amazing fibre - wool!

We both really love what we do. It gets us

This variability makes finances challenging to manage.

We work alongside each other as much as possible and always make the big decisions together.

Working on the land requires knowledge in so many different fields - animal husbandry, agronomy, machinery mechanics, chemical use, reproduction, nutrition, biology - just to name a few, as well as keeping up with today’s technology.

What do you feel is the most challenging and conversely, the most rewarding - thing about operating a merino stud?

The greatest challenges we face are

all but eliminated wild dog attacks.

Industry accolades and competition success are great rewards, but working for yourself and doing something you love is by far the most rewarding. Some days you forget it is even work!

What are your plans for your property and livestock moving forward?

Our plan is to continue growing wool and expand our wool growing enterprise further.

We would love to purchase more land but, currently, are expanding our stock numbers through improving pastures, soil fertility and pasture management.

Our property will always have sheep on it, and we will continually improve them and the wool they grow.

t's only been a short time since we last featured you guys, but you pretty much haven’t stopped since Festival of the Sun! Foo Fighters, Harry Styles...

We’ve done a truckload of shows; its all a bit of a blur … we did the Harry Shows;

that was really cool. Playing festivals, hanging out, having an Australian summer, thinking about what we’re going to do with the next record, I moved house ... I actually spent a couple of weeks up in Scotts Head; we do that every year. We’ve had a house up there ever since I was a kid.

So, you mentioned a new record … anything you can give away?

Not sure yet - still writing and trying to figure it out. Some vibes set, but nothing I really want to give away yet; I want to sit with it for a while.

Let’s talk about Girlhood. It's been just under a year since its release, with a massive response. Is this what you expected?

I think it was really difficult to have any kind of expectation, especially around Yanada and how that was going to be received, and to have expectations around that we would kill it. I was trying really hard not to have expectations and then at the same time, of course, you’re human and you just want it to go gangbusters.

But, it was great in some ways, because it was such a different record for us to make.

I think some people were surprised by that record; for us it was just it had been so long, we had spent so long in the studio - it was nice to just be like, "Hey, it's out; go grab it, get it!"

And with the title, Girlhood - as a woman, how has this been received, and what have you taken from it?

Yeah well, I mean it's interesting with this, because obviously it's been five months since all the stuff with "Me Too" in the community; we’re having lots of different conversations now.

And before we put the record out, I struggled so hard to talk about those sorts of things in August of last year and when we were doing the long lead press, which was

in June/July of last year ... Maybe that was just cowardly on my part, that I didn’t put my opinions out there, but I don’t think I was alone in that as a woman feeling like I couldn’t. There wasn’t a place for those discussions in the music industry.

You’re bringing Ali Barter along for the ride on this tour. What's your connection with her?

We’ve played a couple of gigs with Ali. I really liked her record; there have been huge amounts of transparency about talking what it's like to be a woman in 2018 and Ali’s record, I thought, was a lot more cohesive a record than ours was. For a debut record, I thought it was really honest, and it kind of reminds me of Cardigans, and like early 2000s bands. Shirley Manson and her partner Oscar, who helped produce the record, is in Holy Holy, who tuned with us a couple of years ago.

What's up next, after you guys wrap up this tour?

I’m going to go travelling for a bit and do some writing and hang out with my dad, spend some time with my family and just start writing for the next record …

Illumined is the title of an exhibition of landscapes and figurative works

by Armidale artist Arthur Chaffey.

These works were created over the past two years and reflect shifts in approaches to painting over that time.

T

hey will be on display at Gallery 126 in Armidale from 10th August to 8th September.

Within the selection of the landscape works are the Forest series, detailing the changing views of the natural world. These sift from the harvesting of the State Forests to New England landscapes, where farming and forests rub up against each other. Or where the ordered plantings of the pine forest are in ways evident.

Several of the paintings record the nocturnal shifts in this forest world, as day moves toward evening, or a full moon moves among the trees.

Other landscapes focus on the Gwydir River as it moves through the country, painted in response to a jazz composition by former Armidale and now Melbourne based musician Joshua Kreusler.

Both works record the shifts in the river and human contact over time and space. Both can be experienced together on the exhibition’s opening night, Friday 10th August, 5pm to 7pm.

i Laurel. Give us some background into your history as a founding member of Circus Oz? I’ve been with the company for 40 years. I’ve done other work, as I’m a freelance costume designer, but the core of my work have always been Circus Oz - and that started in 1977, when I was working at a theatre company and we created a circus project. This seemed to develop its own life - we joined with a small circus company from South Australia, and Circus Oz was born.

Tell us about the first ever Circus Oz performance …

The first proper public show in the tent that we built in the basement of the theatre company where I was working, was Moomba.

That was in Melbourne, and we went on to the Adelaide Festival - so they were the first two shows.

Before this we had done a lot of street theatre and a lot of smaller events, but I always think of that first tent as really being the launching pad for us as a touring circus company.

How does it feel being in the industry for 40 years? What have been some of your greatest achievements or fulfilling moments?

It’s a surprise that I’ve been doing this for 40 years - or even longer really, because my work started slightly earlier in a theatre company in Melbourne. I learnt all sorts of things that have really helped me; I was a lighting designer and rigger for a while, and studied under a senior lighting person. I was a stage manager, I did a whole variety of jobs, and I was always costume making on the side.

I think learning all those other skills and a bit of acting actually gave me a great understanding of all types of performance - and especially circus. I had a bit of a go at acrobatics (I was terrible) but I had a go, so I feel like I do have that knowledge of what it takes for performer to successfully get on stage and do what they have to do and communicate with an audience.

Have you had a go on the high trapeze or any other daring tricks?

Daring is probably going too far! I was a clown, and ran around doing that, and as mentioned a little bit of acrobatics. I was part of the group acrobatics, but in the early days it was as much about what we were talking about in the show - the message that was as important as the skill level. So no, I didn’t do anything daring! I did plenty of training climbing up web ropes and sat on trapezes, but I never seriously trained for any of those acts.

And what do you love most about being a part of the Circus Oz family?

Theatre productions always have that family feel. Circus Oz has such a long history, and we have a special structure in our company where performers, technicians and people in admin can become company members once they’ve been with the company for a certain number of years, so we now have a big pool of people who are distributed all over the world - as well as all around Australia - who at one time or another have been part of the company and have worked with us.

They’re now family - it’s like you have lots of wise uncles, aunts, cousins who can be drawn on to help on whatever the company is doing at the present moment. It’s a pretty special thing, the Circus Oz family.

How do you ensure costumes are high visual impact, yet still able to be moved/

T

ell us about your new role.

I have been appointed as the Art Museum Director of New England Regional Art Museum. I am responsible for managing staff, strategic planning, and the overall concept of the museum. I work with NERAM’s board, staff and community and make the important decisions about the direction the museum will take.

NERAM has a small, excellent team of staff, and we all wear many hats over the course of a day. For me, that includes planning and project management, marketing, fundraising and writing grant proposals, curating, engaging with our community, making speeches at events, lots of meetings, and the list goes on.

It can feel very frenzied, but I enjoy the challenge of a hustling pace and being involved in all the different areas of NERAM’s operations.

What plans do you have for NERAM? Over the past two years I have been at NERAM in the role of Manager, Exhibitions and Curatorial and have been fortunate be involved in a wave of development and growth that I think has really established a sense of momentum and enthusiasm at the museum.

I want to keep that momentum going and to build upon it in new ways. We have more plans to improve the building and expand what the museum can support in terms of events and engagement spaces.

HINTON: Treasures of Australian Art has been a tremendous recent achievement for NERAM. It presents 103 works from our

seminal Howard Hinton Collection and is a beautiful salon hang. This has addressed a long-standing need to have a permanent display of some or our most significant and popular artworks, and we have had such a resounding positive response. This does now give us an opportunity to focus on other aspects of our collection, including the Coventry Collection and ensuring that NERAM is showing modern and contemporary art and that we are being responsive to recent practice and developments.

One of the key things I would like to delve into is how we engage with our New England community and the many groups that it includes. Our current exhibition, Myall Creek and beyond provided a critical opportunity to engage with this region’s history and Indigenous communities, and I would like to ensure that engagement continues to grow in meaningful ways. We have also started to explore how the museum can work with the newly settled refugees in Armidale, to provide opportunities for cultural and social exchange. These kinds of programs can have significant benefits for the cultural life of the region that then can also attract national visitors and tourism.

What is the best part of your new role?

ne of our town’s biggest challenges has been the impact of our empty spaces on not just our tourism experience, but on our businesses and the communities they serve. Indeed, every empty space in our CBD is a missed opportunity. Renew in a Box is a travelling exhibition designed to inspire property owners, business owners, entrepreneurs, start-ups, artists, artisans and makers to partner in activating a city, one empty space at a time.

The renowned Renew in a Box program in Newcastle has been very successful in filling its empty spaces - carefully, ensuring occupiers of space are complementary to and not competitive with surrounding businesses.

The program has also delivered an increased sense of community, provided opportunity to experiment with business opportunities, and has measurably contributed to their economy. Renew in a Box offers a proven model for us to engage with.

The Renew in a Box exhibition is on display at the Armidale War Memorial Library until 20th August 2018.

We’ve formed a steering group to further the aims of Renew in a Box, and will include the whole community in developing and implementing ideas, to best take advantage of this exciting opportunity.

I

entered the Active and Outdoor wear section at this year’s Fleece to Fashion Awards. I chose this section because it was something totally outside my area of expertise, so I didn’t feel any pressure or expectations on me to produce a particular style of garment.

I sourced some sample pieces from one of my suppliers and created an outfit to fit my daughter, Alex, who was

modelling in the event. I made a pair of tights, an exercise top and a hoodie.

The entire outfit was made from 100% Merino fabric.

I was incredibly surprised to win the section, and having Alex on the catwalk with me was very special. Bluey Merino was the sponsor of this category, and I am very excited about the opportunity to spend time looking into the knitting of their fabrics and working with people

along their supply chain. To think that at least part of my design may be produced commercially is such an honour.

Wool is such an amazing fibre to wear and work with. The diversity in its use has grown over the years, following developments at the spinning and fabric production stages. I thoroughly enjoyed making this outfit and working with such unique fabrics.

Fat Hare Colleen Gibson, the owner of The Fat Hare, Armidale’s newest café, sits down with FOCUS to talk about her long career in the food industry and where it all began.

W

hen did you first discover your love of cooking?

It all started with parents who couldn’t cook, so I took it upon myself to experiment - with a little help, of course. When I was about five years old, my aunt, who was a great cook, would have me standing on her little kitchen stool helping her in the kitchen.

The first thing I ever made was an apple crumble, and I remember being so excited when we pulled it out of the oven; I’m sure I probably ended up eating half of it too!

From there we progressed through the basic stuff, making a lot of pastries on the way. She was my first real teacher and taught me all the basic skills I needed. I started working as a chef at The 7C’s Restaurant, originally starting in the take-away section of the fish and chip shop connected to the restaurant. Jenny Creagon was the chef at that restaurant when I started working there and still is to this day! I would start at the fish and chip shop at 9am, and I’d go from there to cooking in the restaurant out the back in the afternoon until 12 at night.

For the past 30 odd years I’ve been associated with Jean Marc Pollat, who is a French à la carte chef and was actually one of the first founding chefs in the Hunter Valley for à la carte. I started working with him at Chez 16 New England focus.

Pok and Peppers Guesthouse; the first day I walked into that kitchen, he was swearing and hollering - and I just stopped in my tracks and thought, “Hang on a second; do I really want to be here?” There was something about him that I really liked behind the swearing, so I started off as a kitchen hand and progressed from there. Years later we worked together at the Mercure Resort in Hunter Valley Gardens.

I’ve been through many restaurants to get the experience of different cuisine and that’s where the love of it all comes from; it’s exciting to learn new stuff!

How long have you been in the industry?

About 35 years now. I’ve done everything from kitchen hand to take-aways to cafés to restaurants to steak house to fine dining. I’ve covered a fair amount across the board. I’m lucky; I like all different styles of cuisine, and I’ve had the opportunity to experience so many.

What brought you to Armidale?

I had a café in Glen Innes at the standing stones called Crofters Cottage, and I got a phone call one day saying this business was available. I had tried to buy this place a few years ago, but just didn’t quite make it in the door back then. This time I decided we would uproot the family and make the move to Armidale and really get stuck in; now here we are.

What do you take into consideration when preparing a menu?

There are a lot of things to consider when

Opera North West is set to host another fantastic event this year; stars such as Teddy Tahu Rhodes, Peta Blyth and more will take to the stage to perform at Banquet, A Musical Feast. FOCUS chats with Opera North West to find out more …

T

his will be Teddy Tahu Rhodes second visit to the north under the Opera North West banner. How did you persuade an opera star with so many national and international commitments to fit these concerts into his schedule?

Quite simply, Teddy loves coming up this way, so it has taken little persuasion, although an artist of Teddy’s standing is booked at least a year ahead. It does take a bit of juggling. He is fitting these performances in between Rossini’s William Tell and Romeo and Juliet for Victorian Opera and Mephistopheles in Faust for Western Australian Opera.

You have attracted major artists to Opera in the Paddock over the years, and Teddy is perhaps the artist with the highest profile...

Teddy has performed in many of the major opera houses of the world - San Francisco, Chicago, Vienna, Hamburg, Paris - to name a few. For Opera North West it is a real coup and for audiences in the New England and North West, a rare chance to hear such a prominent artist. He is in demand throughout the country, both for opera and concerts. Most recently, Teddy won the Green Room Award for Best Male Artist in Leading Role for Don Giovanni and also a MO award. For Opera North West, it is a rare great chance for audiences in the New England and North West to hear such a prominent artist. He is the total professional and a joy to work with.

What is involved when you put together a program for a concert like this, with several artists living in different areas? How do you manage rehearsals, and how do you choose the items for the program?

The reputation of Opera in the Paddock has become well established. The artists, especially young singers, are always keen to perform with the company. They all enjoy the experience quite unique, really.

Over the years Opera in the Paddock has employed many local musicians. How important do you think it is for local artists to perform with national and international figures at the top of their professional careers?

I believe very much in regional cultural development on a professional basis. I know the event has been important for many regional players. If we want people to live in the country, we really have to invest in this side of things.

Opera in the Paddock concerts at “Mimosa”, your property at Delungra, have now finished. What are your plans for Opera North West?

Life changes, different responsibilities, perhaps time for another to take on the mantle ... time will tell. We have set up much infrastructure over the years.

Imagine sitting, enjoying food drinks and singing some cool songs with a bunch of like-minded people! Well, now you can! THE ARMIDALE PUB CHOIR HAS FOUND A NEW HOME AT THE NEW ENGLAND HOTEL and FOCUS chats with Brendan and EJ all about it.

W

hat is the Armidale Pub Choir?

The Armidale Pub Choir is a fully inclusive, no experience needed, no commitment required, community music making event … at a pub! What could go wrong!

The basic idea: Pub Choir convenes a couple of times each month to construct large-scale public pop-song performances. It is like a flash mob, live concert and slightly inebriated social experiment mashed up together, blurring the line between audience and performers.

How did the A-Club Choir begin?

The pub choir concept seems to be a bit of a global phenomenon at the moment. All over the world people are turning up to licensed venues to have a bit of a warble with their mates. This particular choir was initially the brain child of Armidale Club managers, Al and Kate. Al was looking for a choir director and thanks to the healthy Armidale muso network, Emily and Al were linked up! Not long afterwards, we witnessed the birth of this beautiful musical baby!

Initially, the choir was directed solely by Emily and accompanied by Louise Nano on piano and crank humour. Brendan’s musical boffin brain and effortless talent saw him come aboard as musical co-director of the project last year. A union to

High Country Theatre are presenting a stage adaptation of George Orwell’s classic satire “Animal Farm” in the Jackson Centre at Saumarez Homestead from 31st August to 8th September. We spoke to director Benjamin Thorn.

So why should everyone come and see it?

Animal Farm is a classic piece of 20th Century English literature, which is often part of the school syllabus, and which has continuing relevance for our time. Like many, I’ve known some marvellous places; maybe we realise it more when we have comparisons.

T

wo important tools in getting the most out of life are curiosity and optimism. A sense of humour always helps. It’s up to us to take advantage of the possibilities, showing the rest of the world why we think it’s tops. Fill the gaps! Strike out!

There’s a lot of jargon talked today and lots of words in CAPITAL LETTERS (so we understand?).

There’s great benefit in keeping things direct and simple. Hearing about disruption and conflict shouldn’t stand in front of well-researched, realistic ideas. Teams of people make a living telling other people how to do things. Just listening doesn’t get you to the end game.

The shouty, uncivil behaviour we hear so often from many of our politicians is being blamed for spreading into the community and encouraging bad behaviour in schools. Why should we let that happen? We all share responsibility for what sort of country we are. NFF’s head Fiona Simson says, "People are really frustrated at the moment with the politics" and "what people are wanting now is outcomes". She sees climate change as opportunity in the energy market.

There’s been much talk about the importance of STEM subjects in education - Science, Technology, Engineering and Maths. I’m glad to see that now there’s talk of STEAM, inserting Arts into the mix. Importantly, it’s study of the Humanities that can make ethical sense of STEM. Students aren’t just "customers" - there’s much more to it than that. If the new Super School is as super as hoped, plus our other good schools, plus UNE; well, there’s another strand to making us "Tops" as a great place to live for families. Multicultural cities our size should be equipped to give everyone a fair go.

City letter writers and commentators are always talking about "liveability", "affordability" and "sustainability". Let’s lure them up here to contribute, making sure we deliver what they look for, including a lively fun city centre? Visit Renew in a Box at the library. Can’t Council convene a Round Table with Mall landlords and tenants for mutual benefit? The State Budget smiled on the region, with Adam Marshall announcing

Apart from NECOM’s problems, any word where the Archives’ important historical resources are going at UNE? They need a special climate-controlled home and accessibility.

I learnt an interesting snippet from heritage guru Graham Wilson. Did you know during WWII the Armidale Teachers’ College had the Defence contract to assemble and paint model aircraft for distribution to "spotters"? I love those human interest stories adding to recitals of basic information. Judith Wright’s influential national story, the 1866 Dangars Gorge wire walker, the Armidale Jack the Ripper link - such stories bring history alive, and visitors love and remember them.

Let’s trend-set nationally with friendly town signage, e.g. "Please pop your rubbish in this bin…"

Method Poach chicken in simmering hot water for 15 minutes, or until cooked through. Remove chicken; leave to cool and shred. Mix garlic, tomato ketchup, mustard and curry powder in a large pot; add the chicken and cook over a low heat for 10 minutes.

For the fried mash, boil potatoes, drain and mash together with cream and butter. Roll potato mash into 25 g balls, coat with flour, egg white and flour again, then shallow or deep fry in oil until golden brown. Dust with paprika, salt and pepper mix.

To create the salsa, combine all ingredients in a bowl, adding salt and pepper to taste.

Serve pulled chicken, chickpea salsa and fried mash on a plate, garnish with parsley and enjoy with a crisp white wine!

FOCUS chats with Caroline Downer about this very special milestone …

W

hat has the Armidale Youth Orchestra been doing this year?

AYO has a busy program of events from a Music Camp in Sawtell in February, the Garden Party in April, performances at the Armidale Eisteddfod, schools concert to sell out audiences in June. Coming up is our annual gala concert, as well as performing as the orchestra for the secondary school choir for New England Sings, and a daytrip for the ensembles to Glen Innes, Tenterfield and Bellingen.

What is special about this year for the Armidale Youth Orchestra?

We are celebrating our 50th birthday!

In fact, AYO has been a vital part of Armidale’s musical life for 50 years.

- and there are very few community youth orchestras in Australia that can boast that record. It only started with one orchestra of 30 players, but now has three ensembles with 100 players. Previous highlights of the orchestra have included an overseas tour of New Zealand and performances in Sydney.

Are you planning an event?

Of course! On Sunday 19th August at 3pm we have our 50th Birthday Bash at Lazenby Hall. It is an opportunity for the community to see all the ensembles in action, from the Armidale Youth String Orchestra (conducted by Joanna FairsWu), the Armidale Youth Wind Ensemble (conducted by Paul Marshall) and finally the Armidale Youth Orchestra (conducted

by Russell Bauer).

AYO is a full symphonic orchestra with some quite endangered instruments, like oboe, French horn, bassoon and trombone. We are excited that Armidale is able to have a youth orchestra of this calibre.

What is on the program on August 19th?

All the ensembles have chosen festive music as their theme - so there will be a wide variety of pieces to suit everyone’s taste!

But the most exciting part will be the world premiere of a piece written especially for the orchestra by Paul Marshall.

Tell me a bit about Paul Marshall.

Paul, Woodwind and Ensembles Teacher at NECOM, moved to Armidale from Sydney in 2013 with his family. He is a multi-instrumentalist and teaches saxophone, clarinet, flute, bassoon, trumpet, trombone and double bass.

He is also a very accomplished composer and published by Reed Music (17 books - saxophone, clarinet, bassoon, viola, cello, bass, chamber music and concert band). Paul’s orchestral suite, Landscapes, was premiered Beecroft Orchestra 2008; a year later the same orchestra premiered his Saxophone Concerto.

The AMEB has included pieces on the syllabuses for saxophone, clarinet, cello, bassoon and in 2016 Paul was accepted as a pedagogical member of the Australian Music Centre.

And the world premiere?

It is certainly not every day that an orchestra has a work specially written

for them. AYO was fortunate to receive funding from Regional Arts NSW through the Country Arts Support Program to commission Paul to write a work.

Paul has written a number of evocative compositions which reflect landscape, and which highlight the individual timbres of a number of orchestral instruments.

Our commissioned work, Where the mountains kiss the sky is an orchestral tone poem inspired by the wild mountains in the areas surrounding Armidale. The opening depicts a frosty winter morning, the sun burning off the overnight mist, then moving to spring and the start of new life. There is a brief interlude of a hot, dry summer’s day, before the final flourish to complete the piece.

Who will be performing this work?

AYO will be joined by the strings of AYSO, but we are also looking for any alumni who would like to come and play with us. Contact NECOM 6788 2135 to arrange for your part to be sent to you.

There will be a rehearsal on the Sunday morning, and optional Tuesday evenings.

Wildgirl and the Wasp arrived at the spectacular Scotts Head NSW after a chilly three-degree Celsius ride through quiet winding roads.

cotts Head is a coastal village in the Nambucca Shire located at the southern end of the Gaagal Wanggaan National Park. Stunning tranquil beaches with excellent surf breaks, swimming and fishing spots.

Wildgirl parked Wasp her 650 cc companion at Little Beach, Scotts Head. After a short walk up the track to Elephant Head, Wildgirl enjoyed superb ocean views. Four majestic Humpback Whales were spotted frolicking, breaching and tail slapping on their annual migration along the Mid North Coast of NSW. The water giants glistened in the sun as their backs broke the surface in a wonderous display of elegance and grace. Awe inspiring sight.

Continuing along the pristine Little Beach across squeaky clean sand, Wildgirl walked into the village. Ocean Street Diner was the restaurant of choice, being close to the beach.

Inside was warm with a funky vibe, great music and an intriguing display of ornaments and curios. After riding Wasp through a three-degree morning, Wildgirl was keen to try her signature drink, The Turmeric Latte (on almond milk). Smooth, tasty, flavoursome and warm, scoring a 10/10 - the perfect winter warmer and healthy immune boost.

The homemade Diner tomato relish topped off a wonderful breakfast experience in Scotts Head. The food was excellent, complete with friendly, attentive staff and the music of Joni Mitchel, Bob Dylan and Don McLean.

Beach, which is just a short stroll from the Diner; the north facing crescent shaped arc of sand was beyond measure, Sounds of the ocean landed on her ears; the sea was singing a symphony. The pulsing water was a vibrant turquoise blue, vast and clear. Cylinders of light moved across the waves. A harmonious ebbing tide softly doused the shore. Wildgirl climbed the stairs and made her way around surf club headland. The path was easy to follow. The view was profound. The horizon appeared to be stitched with a line of pure blue thread. A pod of dolphins entertained and swam playfully around the headland.

Whales, dolphins, sea birds and a Green Sea Turtle - Scotts Head does not disappoint. It was a difficult place to leave. After returning to Wasp at Little Beach, it was time to head for the hills through Yarriabini National Park.

How long has it been your home?

I moved to Armidale when I was five, after my family relocated from Sydney. I started school at St Mary’s and finished high school at Armidale High, and then spent a few years travelling.

Eventually I returned to Armidale, and decided to raise my family in this community.

Where did your interest in skincare begin?

I’ve been passionate about skincare since I was a teenager. A full skincare regime is essential but for skin health, hydration is key. The ingredients you use and where they come from is vital. I didn’t want to use a product with a string of ingredients I didn’t recognise that were packed full of synthetic preservatives. The product I always wanted is the product I now make; Mountain Lotus products are organic, Australian, naturally preserved with organic beeswax and made up from a simple formula with recognisable and natural ingredients.

What are the origins of your business, Mountain Lotus?

Mountain Lotus has been operating for five years now. It started in the home and spread through the community. Over the years our products have continued to grow in popularity and are available across Australia and internationally.

Patrick McGrath says he has always been intensely interested in how things work ... Taking apart and re-assembling electrical or mechanical items helped him focus and stay calm through his anxiety, which was later diagnosed as Autism. That love of figuring out how things worked led him to start collecting old cameras, and eventually he started using them and realised he had a very good eye and a talent for taking beautiful photos.

i Patrick. Tell us a little about your connection to the Coffs Coast?

I moved to Coffs Harbour with my family in 1995 when I was 10 years old and have called this city home ever since. I went to Coffs Harbour Community Christian School, both primary and high school campuses.

So, having spent most of my life here, I feel more comfortable with my Coffs Coast surroundings than I do when visiting larger cities like Sydney or Brisbane. I’ve been on a few short photography expeditions to places further afield in recent years, but I’m always happy to come home.

I love the ease of access to nature here on the Coffs Coast and exploring the beach or the hinterland with my camera and a friend or two makes me feel really happy and relaxed. But I also enjoy it when locals smile and say g’day in the street or shopping centre. It makes me feel part of this community.

I like hanging out with friends I’ve made at Lifehouse Church, and spending time with family members who also live here. I’m not sure I could live happily anywhere else.

What's your “back story” behind the lens … What inspired you to first pick up a camera?

I’VE BEEN TOLD I HAVE A UNIQUE PERSPECTIVE, AND SOMETIMES THAT DIFFERENT PERSPECTIVE COMES OUT IN MY PHOTOS. IT’S JUST THE WAY I SEE THE WORLD.

I’ve been intensely interested in how things work since a very young age, before I even started school. In fact, my parents once caught me hiding under my blankets in the dark with a broken radio I’d just got to work, after I’d been put to bed. I believe I was about four years old at the time.

I had major learning difficulties and anxiety as a child, and tinkering with unwanted electronic or mechanical items used to help me focus and calm my anxiety. People would often give me broken radios and electrical appliances, and I would pull them apart, figure out how they worked and build something new.

In my early teens I was diagnosed with Autism, which helped explain a lot of my anxiety and enabled my family to seek appropriate medical assistance for me.

So, my very first interest in cameras was purely to see how they work. After a while, I started to gather a collection of old cameras that I would pick up at garage sales and charity shops. A few years ago I was offered a short course in photography and discovered that it’s also fun to use a camera to express how I see the world and the environment around me. I found out I was good at taking photos and with the encouragement of my family and

mentor, decided to try to turn my hobby into a part-time business.

Where do you draw your inspiration from?

I guess I’m inspired by nature to a large degree, but I’m also drawn to the quirky and unusual, things that other people may miss. I can look at an incoming wave and see a face hiding inside it, or a piece of rough timber and see a bird or an animal within the grain.

I’ve been told I have a unique perspective, and sometimes that different perspective comes out in my photos. It’s just the way I see the world.

What are some of the most memorable photos you have taken on the Coffs Coast and why?

My personal favourites are my photos of the old bunker near Gallows Beach, which is a Coffs Harbour icon that looks especially good in black and white. It’s part of the town’s history.

Sawtell Headland and Urunga Wetlands are places I also visit frequently, as the environment is always changing in those places.

What do you love most about photography?

I love the sense of freedom that comes with

getting out into the local environment, finding something that catches my eye, and capturing it with my camera, then sharing it with my audience. I feel so lucky to live where I live, because the photo opportunities are abundant.

For me, every time I get to go out and about with my camera it’s like an expedition of exciting new discoveries.

Where can people see more of your work?

I’m always taking new photos, so my portfolio is constantly growing. Most of my work can be seen and purchased as wall art or digital downloads on my website: patrickmcgrathphotography.com I also have Facebook and Instagram platforms. How did you first discover CrossFit? I have a good mate who owned a CrossFit box on the coast. We were talking about training and he suggested I might enjoy CrossFit, as it was pretty much how I was training already. I loved it!

Since that first workout he gave me, I have been hooked and eager to learn more about the CrossFit methodology each and every day.

Over the years have you noticed some change in how we exercise? The big changes I have seen have been a movement towards more practical and for want of a better term, functional, training. People have wanted to be more capable of everyday tasks, much rather than training just to appear a certain way.

With that we have seen more emphasis on form and intensity through to quality coaching and a more individualised approach, especially in a group environment. So even though people are

How do you adapt to these changes? We have been the leaders in these changes in Armidale over the last eight to nine years. We introduced CrossFit and the concept of constantly varied, functional movements performed at high intensity to Armidale in 2012.

n all that time of riding, Mark has gone through a lot of gear especially jackets, jeans and wet weather clothing. Anyone who’s ever purchased motorcycle clothing will know that it’s generally very expensive and all too often, the quality doesn’t live up to expectation, from zippers that don’t last, jeans that wear through, pockets that fall apart, and jackets that just don’t keep you warm.

Mark recently decided to take a stand against poor-quality clothing and teamed up with Mallee Bull Clothing Co. in Armidale and created Fjellskinn. Together they designed and tailor made a range of motorbike clothing that is made by people who ride, for people who ride, with quality, comfort and affordability as their highest priority.

Mark, what does Fjellskinn mean?

Fjellskinn is Norwegian for mountain skins.

Ayush, how long have you been in the restaurant business? I have been in the restaurant industry as a chef for over nine years and a restaurateur for over three years.

Have you noticed any changes in the industry? There are always changes in the hospitality industry, just like fashion. Recent trends are things like craft beers, molecular gastronomy cooking techniques, organic and free range foods, Asian influences etc.

Tell us a little about Chaucer on Bridge Street and how long you've been there.

Chaucer on Bridge Street is a gallery and studio which was originally opened by my father, David Evans, in 2000.

We still sell his paintings and calligraphy, and a couple of years ago we added coffee to the items we sell. The amazing fabric books produced by my mother, Helen Evans, also continue to be a highlight of the gallery experience for visitors.

Personally, I concentrate on making a variety of ceramic pieces which are glazed with spectacular crystalline colours. This year I have also placed greater emphasis on making pottery lessons available on Saturdays. These lessons concentrate on developing throwing skills on the wheel for participating students.

I had my first go at pottery when I was in high school, and briefly made pots for sale at markets during my university studies. It was not until I had my own studio in Robertson in the 1990s that I began making pottery on a larger scale.

Tell us about yourselves, and how long have you been around? Rob graduated in 1989 and completed post graduate qualifications in musculoskeletal physiotherapy in 1992.

He has been a titled musculoskeletal physiotherapist since 1993 and moved to Armidale in 1998, where he’s been happily serving the community for twenty years. During this time, we have forged strong relationships within the community.

We sponsor St Albert’s and Robb College and Barbarians Rugby and provide the physiotherapy services to the UNE Lions in the National Women’s Rugby 7s competition.

Tell us about your business. Show Us Your Crack is a mobile, mobile repair business in Armidale NSW. My business specialises in the repair and data recovery of most mobile phones and tablets, utilising a full mobile workshop that comes to you, fixing your device on the spot.

How did you start your business? I first began repairing phones in late 2012. At the time I was studying Primary Education at the University of New England and broke my phone whilst on a teaching prac in Wauchope. I was unhappy with the thought of buying a brand new phone, so I looked into it further and discovered the parts were, in fact, replaceable. I repaired my phone for a fraction of the cost of a new device, and word quickly spread!

What can you tell us about explorer John Oxley's connection with the Walcha

region?

John Oxley was born in Yorkshire in 1784. At 15 he joined the Royal Navy and travelled to Australia twice; he served on the ship transporting Governor Bligh back to England and returned to Australia to become Surveyor General of NSW. His 1818 expedition brought the first “European” to the Walcha District, in search of new farming and grazing lands and the inland sea.

On September 8 and 9, 1818, he camped by a good waterhole on the Apsley River, only 1.5 km south of the current Walcha township, near where present day Langford House stands naming the river after Lord Apsley. He wrote in his journal of the area being “the finest open country, or rather park, imaginable. A country of running waters, on every hill a spring and in every valley a rivulet”.

On 14 September 1818, after several attempts to cross the gorge, he discovered the falls and named them Bathurst Falls (now Apsley Falls). He wrote in his journal, “We were lost in astonishment at the sight of this wonderful natural sublimity”.
