i Mandi. What led you to move to the Manning area, how long have you lived here now, and where did you relocate from?

I grew up in Sydney, and my career was based there too. As a kid I spent a lot of my school holidays in the Manning area visiting my aunty and uncle, who were teachers here and lived in so many beautiful places within the Manning.

I moved up here just over two years ago; a change of pace and location was needed when I was just about to become a mum for the first time, and my parents had moved here a little over six years ago.

Why did you decide to train and work as a makeup artist?

Where does your interest in makeup artistry stem from?

I cannot remember a time in my life where I didn’t know that I wanted to be a makeup artist. Fortunately, I knew with every fibre in my being that it was what I wanted to do with my life. Even as a young girl in dance and drama classes, I was doing everyone’s makeup. I remember standing behind my mum watching her do her makeup in the mirror when I was a kid, and making all the funny faces she would make.

What formal training do you have?

During high school I never lost sight of my dream and went straight from Year 10 into a one-year, full-time, training course in makeup, which covered makeup for: television; weddings; catwalk; photographic; film and special effects.

Since then, I have obtained a Certificate IV in Makeup, a Certificate III in Nail Technology, as well as a Certificate IV in Training and Assessment. This has enabled me to work as an education consultant within private makeup colleges, TAFE, and I have also run my own training programs and workshops.

Describe your experiences working within the industry ... what are some of the more exciting/interesting jobs you’ve worked in?

There have been many highlights during my career, one of which was travelling to New York to work on New York Fashion Week.

It was by far one of the most exciting times of my career, working alongside some of my industry idols.

Twelve years of working on L’Oreal Melbourne Fashion Festival also holds some special memories for me. And, working on television shows like Australian Idol, So You Think You Can Dance, X-Factor, The Voice, Australia’s Next Top Model, were so much fun, as you get to know all the contestants and watch them blossom into stars.

I have also had many years working in fashion shows and fashion and advertising shoots for magazines like Harpers Bazaar, Vogue, Cleo, Cosmo. I was never a morning person until I became

a makeup artist, then I quickly had to get used to waking up at 3 Levanah or 4am to be on location before the sun was up to get the perfect shot. GORDON GODWIN

Gordon Godwin was a husband, a father, a grandfather, a great grandfather, a brother and importantly, a friend to all he touched in his 86 years. Alexandra Godwin tells us more about her grandfather in this tribute story.

G

ordon Godwin was a generous man who devoted much of his life to the Forster community and helping others; it was one of his greatest joys dedicating himself to and participating in the broader Great Lakes community. He achieved this through his tireless volunteer work, with organisations such as the Forster Surf Life Saving Club and the Forster Fire Brigade.

Gordon was perhaps the kindest soul you would ever meet; his compassionate, warm smile, infectious laugh and calming nature made anyone who met him instantly feel at home, as if he had taken a blanket of comfort and wrapped it tightly around them.

I know this of Gordon Godwin because he was not only a best friend and hero to me; he was my grandad.

Gordon sadly passed away on Boxing Day 2013, leaving behind his loving wife, Rona, 5 children, 13 grandchildren, 11 great grandchildren, his brother and sister, numerous extended family and countless friends. Although he is no longer here with us his legacy remains and is a constant reminder of the great and selfless contribution Gordon made to Forster.

To honour Gordon’s extraordinary community involvement, on Boxing Day Forster Surf Life Saving Club will host a memorial swim in his name at Forster Main Beach. The event will be a social swim that will pay tribute to one the club’s founding members.

“Gordon was a very dedicated and brave man and lifesaver and was more comfortable in the water than on the water, which makes this memorial swim a very fitting tribute,” said Bruce Parsons, a long time friend and fellow club member.

A fitting tribute indeed, when considering Gordon’s history with the club. Gordon was one of seven people, who after attending a public meeting in 1944 founded and established Forster Surf Life Saving Club. He remained an active and devoted member throughout his life, spending 69 memorable years between the flags. In his time with the club he held many official positions, including Treasurer and President, and competed at masters level well into his 70s.

One man who knows Gordon’s history better than most is Ivor Elliot, who said: “I have known Gordon for over 70 years and although our paths took different directions, we did eventually end up at the same organisation, this being the Forster Surf Life Saving Club. Gordon was a foundation member [and] I became a member some time later. He held various positions in the club and took his jobs very seriously. I did admire his loyalty to the different clubs and all members he came in contact with.”

Gordon’s greatest passions within the surf club was the nippers program and teaching young children water safety, which is why all money raised through the memorial swim on Boxing Day will

Another of Gordon’s favourite past times was his morning swim at Forster Main Beach with the Turtles swimming group.

His ideal morning would consist of a swim at the beach before returning home for breakfast with his wife, Rona. One member of the Turtles was his younger sister, Joy Godwin, who said that in her retirement she was very happy to swim every morning with the Turtles and Gordon at Main Beach.

Gordon’s story and connection with the Forster community runs far and wide and begins when he moved to Forster in December of 1936 with his parents and six siblings; he immediately loved Forster and its pristine beaches.

He shared a very happy childhood growing up in the town. You won’t miss Neil and Jane Mackenzie when you see them roll into town! Their shiny silver Airstream van is a cleverly modified, high tech mobile kitchen, serving the most amazing meals. This van is the cornerstone of the couple’s business, “Neil’s on Wheels” …

W

here are you from originally and what brought you to this area?

We’ve moved to Tinonee direct from Hackney in the East End of London, so we’re still experiencing a bit of a culture shock. It still comes as a bit of a surprise that everybody is so friendly and has time for a chat. And that the weather is always so good!

I’m originally from Cooma in the Snowy Mountains but moved to England – for a couple of years – and ending up staying for 17 years! I met Jane there – on a blind date – and we’ve just celebrated our 11th wedding anniversary.

We always said that we would come to live in Australia “one day”, and a couple of Christmases ago we were sitting in our hotel in Sydney, with the aircon on to escape the 43 degree heat outside, and we’d had an amazing time with friends and family, and we decided that day was here.

I started searching the net looking for properties that we could run as a boutique retreat, within three hours of Sydney. We were flying back to the UK the next day, but when we got back we agreed that we were absolutely certain and we booked a flight back out to look at properties. Once we saw the property at Tinonee, we knew we’d found the right place and we fell in love with the Manning Valley.

How did the concept of Neil’s on Wheels come about? Have you had much of a background in hospitality?

I’m a chef by trade. I studied at Leith’s School of Cookery in London and then worked in several fantastic London restaurants – Kensington Place, Ottolenghi’s and Fishworks – before starting my own business – Lovefood.

Lovefood is a specialist business, catering exclusively for the photographic industry, so

I’ve fed some of the world’s most famous photographers and models – contrary to popular belief, models do enjoy good food!

Jane’s background is in retail Marketing and she spent the last 10 years as Head of Marketing and Creative for Marks and Spencer in London. She’s the one who understands customers and comes up with ideas to get the message out about what Neil’s on Wheels stands for.

Your “wheels” look amazing! Where did you find your van - and how did you have to modify it for its current use…

We love our Airstream van! We bought it in Sydney… in fact, we bought two! A guy there had imported two, then decided he didn’t want to keep them. We had always loved Airstreams and had the idea to open a mobile catering van rather than open a static business. Neil’s on Wheels - the name - was one of Jane’s ideas, but we couldn’t believe it when we found we could register it.

Both vans were converted and renovated in Taree - one for accommodation on our retreat - and the other for Neil’s on Wheels. We used a mix of local specialists and professional catering equipment suppliers in Sydney and have created a super high-spec travelling kitchen.

What are some of the favourite items on your menu at the moment?

Our menu changes all the time - depending on the event, the customers, the weather and the season. We are absolutely passionate about using only the best ingredients and will source these from wherever the best is available. If we can get that locally, we will. But, one of our most popular dishes - the chorizo roll with Piquillo peppers and rocket - means that the main ingredients have to be sourced from Spain.

i Ron. When did you join the Great Lakes Historic Automobile Club (GLHAC), and what’s your current position on the commit-

tee?

I joined GLHAC in 2005 after moving to the area from Sydney. In 2002 I bought the property I now live in and used it as a weekend getaway. During the regular sojourns from Sydney, I attended a number of GLHAC display days and got to know some of the members ... so it was inevitable I joined the club once I moved here.

My first role was as the Web Master, then committee member and now I am President ... just starting my third term.

Give us a bit of a rundown on the club ... what led to its formation, and how long has it been established?

GLHAC was started in 1991 by two locals, Alan Curtis and Col McDonald, and a newcomer to the area, Chris Goodsell. Alan Curtis had a collection of historic vehicles and he and Col knew of other owners of historic vehicles in the area who were interested in forming a club. Chris Goodsell came from a car club and had the administrative knowledge to get a new club underway.

The club today still has six members of those who formed the original club. The foundation club had 27 members ... today we have 152 (partners included). GLHAC is an incorporated club and is a member of the Council of Motoring Clubs (CMC).

How did you become interested in historic automobiles?

I have always had an interest in cars. I learnt to drive in a 1939 Chev, owned by a mechanic friend who got me tinkering. My first car was a 1953 Vanguard I bought in 1964 for 125 pounds. My driving and a few

“accidents” kept me busy keeping it on the road.

Since then I have owned a number of vehicles, which today would be historical and sought after ... most of our members have similar experiences. I regularly attend car show days all over the state and interstate and love to visit car museums, particularly overseas. My photo library of classic cars is enormous.

Describe the vehicles you currently own - and tell us the story behind how you acquired them ...

When I came to the area and joined GLHAC, I brought with me my BMW 2002ti that I had fully restored from a shell. I built the vehicle to compete in Targa Tasmania ... so it handled very well and was quite quick ... but no creature comforts ... not popular with my wife, Jenny.

A couple of years ago a local friend who owned a 1990 BMW E30 Convertible, which I had always admired, unfortunately passed away and the car was offered to me. So I sold the 2002ti and now drive the E30. Jenny loves it. It is a sound car with excellent original body that drives well, comfortable, and it’s my first convertible ... I’m really enjoying it.

What are some of the more interesting and unusual automobiles other club members own?

GLHAC is a non marque club, so our members have a wide range of vehicles.

Cars that we see regularly on runs include a 1929 Chrysler, several 1930s cars (Chevs and Fords), a 1947 MG TC, a number of 1950s cars, amongst others a TR2, MG TF, MG A, Chev Biscayne, Zephyr, Mercedes and Jaguars. We have quite a few MG Bs, several Studebakers, a number of Fords and Holdens, along with Jags, Mercedes, Capris,

steve attkins Passionfruit is one of those delicious summer fruits that when ripe has a lovely aroma and is a joy to eat. A refreshing addition to smoothies, visually scrumptious on slices and deserts, makes a wonderful jam and freezes well.

We have just the right climate on the Mid North Coast to grow healthy abundant fruit. In as little as 18 months, plants start producing. The passionfruit tendrils will twine around large wire gauge mesh or chicken wire supported with steel or timber posts.

The best position for planting passionfruit is in a mostly sunny, relatively frost free location. The soil must be well drained to avoid water logging and with a depth of 20 - 30 cm. Passionfruit responds well to generous additions of compost, organic based fertilizers such as animal manure, blood and bone, pelletised chicken manure, liquid fertilizers home-brewed, or commercial ones that are ready to use.

I am the only woman in Australia who is actively broadcasting horse races, and as a Victorian, my work is primarily in my home state at non-tab tracks.

However, I do receive guest call invitations such as the forthcoming Tuncurry meeting on the 17th January, which I am really looking forward to. Not since Pamela Knox got up at Hanging Rock on New Year’s Day 1948 as a one off “rescue call”, do we have a recording of a woman broadcasting live racing other than that of myself - ironically at the same track, 50 years later, once again on New Year’s Day. I have since met Pamela just before her 90th birthday, and she told me she never wanted to do it again. Being New Year’s Day, the engaged broadcaster was a little “tired and emotional”, so Pamela took over as she knew some of the colours of the jockey’s silks.

I am still trying to break through for regular work, although opportunities are fleeting and it is very hard to build upon the regular work that I do have on the Victorian Picnic Circuit, which starts in November and concludes at Easter. I also host many racing luncheons and M.C race meetings, as well as being a regular

I originally wanted to work in radio and have also worked in television, but upon visiting Gippsland radio station 3TR in the early 1990s, it hit me whilst sitting in their foyer as I gazed up at a picture of the late great Bill Collins, former Victorian Race caller, that live radio or broadcasting at its best was race calling. here was your first job?

My first job was working as an apprentice in England with one of the current celebrity chefs, cooking mostly Mediterranean and French cuisine.

When it comes to creating a seasonal menu, what do you take into consideration?

The demographic of the area and the demand of the customer and also always with a touch of local produce.

What local produce features on the menu at The Sicilian?

Oysters from Valley Lake, lamb and fresh seafood including salmon and prawns from the local fishery.

What is your favourite dish on the menu?

Lamb halloumi. This is my family signature dish; my mum used to cook this at home.

When it comes to special events and functions, what can you offer?

We specialise in canapé parties, weddings, christenings, birthdays and conferences. You can hire the restaurant, or we have a special conference room upstairs that seats 100 people.

Where do you source new ideas from?

I travel to Italy, France, Melbourne to the foodahollic cities, like Rome, Milan, Venice. Two months ago I was in Italy, France and Sweden; I have brought back many new ideas and new recipes, which are on our menu.

Outside of work, what do you enjoy to cook?

I like to cook Mediterranean food at home; it is a very interesting cuisine. A favourite is fresh local mud crab with fresh chilli and basil, which I grow

in my garden. I serve this with homemade bread that I enjoy baking at home.

Is wine matching important?

Very important. We have a selection of Italian wine that we will pair with your meal; our menu is tailored with the wine we serve. We have a professional Sommelier, who will offer expert advice on wine selection.

Do you have a favourite ingredient to work with?

As an Italian, I believe chilli, onion, garlic and fresh oregano are cousins; they blend well for flavours, and a touch of white wine becomes their niece. With these three flavours you could do anything - chilli, onion and garlic.

Throughout your career, what famous chefs have you admired?

Gordon Ramsay and Neil Perry; they have a passion about the food; both are aggressive about what they put on the plate. They care about what they serve on the plate to the customer; it’s not about the money. They love to be a chef.

Do you find restaurant patrons have higher expectations these days when they dine out?

You can’t fool people about food. The reason is that there are a lot of TV shows, MasterChef, My Kitchen Rules, Better Homes & Gardens that educate people about food. Some people who come to our restaurant know about food, the quality, the service - this makes our life easier as a professional restaurateur or chef to click with them. Before you could give customers anything to eat, but now they are more knowledgeable; they say, “Oh, this is lamb back strap, this is Black Angus, these are not prawns from Vietnam, they are local prawns”. People appreciate food more,

because of the TV shows; they have a higher appreciation of food they eat.

You have recently won an award; what was that?

The Sicilian was awarded The Best Restaurant Fit Out and Design under $1.5 million in the Master Builder Awards 2013.

What plans do you have for the future for the restaurant?

We are thinking of branching out to Newcastle and Brisbane and would like to work more in the regional areas.

How would you describe your style of cooking?

My style is a mix of fusion, Italian, Mediterranean and French cuisine. An example would be my seafood paella.

If you could cook just one thing for your family, what would it be?

It would be something with Sicilian chorizo.

How do you keep your skills as a chef up to date?

By travelling and dining at other restaurants locally and worldwide.

Do you cater to children’s menus?

Yes, of course. We have pizza, pasta and Nona’s chips.

What’s the most creative dish you have developed?

The lamb halloumi, my mum’s dish. I have developed this into a dish that I can sell in the restaurant. It is a lamb back strap marinated in lemon, garlic, cracked pepper and sea salt, cooked medium rare and served with tomato salsa, baby spinach, wild rocket, parmesan cheese and a touch of caramelised pomegranate.

You get invited to a party with friends what dish do you take?

I would take caponata – a cold Italian mix of cooked vegetables, olives, capers and capsicum, a special Sicilian dish that can be served as a side with everything.

Have you ever cooked for anyone famous?

Lots have come to our restaurants: Janette Jackson, Guy Sebastian, Kostya Tszyu, Kamahl, Molly Meldrum, Jennifer Hawkins and Alan Jones, to name a few. All the politicians, the NSW Premier and Police Commissioner and Dr Harry have been to our Taree restaurant.

What are you most proud of?

Employing young, local budding chefs and front of house staff, being able to give them the opportunity to learn all about the fine dining experience, because many don’t have an opportunity to go to Sydney or Melbourne to learn this. And to be able to create jobs locally and use local tradesmen and suppliers is something that I am proud that The Sicilian does.

The Sydney Morning Herald once asked me whom do I cook for - I answered that there are two groups of people who dine out. The first group go out to fill up on food; the second group go out to experience the night out, they go to an effort to get dressed up, they appreciate experiencing flavours and fine food. I prefer to cook for the second group.

We don’t aim or hunger to win awards, to be famous on the wall; my best award is when the customer recommends us to friends and family and they come into the restaurant. A full house is my best award. As Italians say, “When you’re in, you are a family”. This means when you come to The Sicilian, you are part of our Sicilian family.

Where and when did you guys all meet ... and why did you decide to form a band?

This band formed out of another previous band, but as the remaining members wanted to keep playing music, we decided to search for new members to fill the vacant positions.

Through school and through various connections, we all eventually came together to form what we are now.

It was a tough year for us in the sense that we had an EP waiting to be released, but we didn’t have a full line up to release it. Now we are ready to start playing live as much as possible!

Where did the name “Diamond Construct” come from?

Honestly, we had no idea what to call ourselves after months of arguments. We originally wanted to call ourselves “The Construct”, but since it was already taken, we had to find something new. The album “Diamond Eyes” from Deftones popped up one day in the studio, and we thought “Diamond” would sound cool in front of Construct, and the rest is history ha ha.

Describe the type of music you like to play ... How would you describe your sound?

We love to play all genres, but since we all grew up listening to heavier music, it was inevitable that our music would eventually evolve into heavy music. To describe our sound, we would say it is just a mixture of everything we listened to while growing up - a lot of metal and rock influences.

Who are some other bands/musicians you look up to, and what is it you admire about them?

The recently renovated beer garden has a new deck featuring beautiful 100 - 200 year old timber beams recycled from Circular Quay and Goulburn Railway Bridge and red Spotted Gum timber planks on the boardwalk recycled from Balmain’s Dawn Fraser Pool. It oozes character that is welcoming and fun with a distinctive and stylish seaside vibe. Guests will be entertained by local and touring bands and musicians amid swaying trees, warm sunny breezes and starry summer evenings. Being new owners and new to the area, please introduce yourselves?

The business is a partnership of long-time friends Steve, Jenny and Carter Doessel and Jade, Dave and Miles Craig - all foodies and music lovers at heart who shared a dream of

owning our own business, so coupled with the beautiful country/coastal location of Old Bar, Flow was an opportunity that ticked all the boxes. We are all very hands on owners and passionate about the community and all elements of the business. We are fortunate to be supported by an amazing team of talented individuals.

Have you changed the menu for summer?

What are some of the meals that customers can expect; which is your favourite?

Yes, we are in the process of changing the menus for summer. We are working on some delicious and exciting new dishes inspired by our beachside location, influenced by fresh seafood and the alfresco setting.

Our beverage and cocktail lists will surprise and delight you; with a focus on quality brands and fresh produce, you can expect consistently good cocktails, coffee and fresh juices.

You have just completed the new entertainment area at the restaurant, and it looks great. Tell us more about it and the other extension you have in store for Flow?

Thank you. It’s been a wonderful process seeing the deck come to life - a real dream come true.

The deck has a capacity to comfortably seat 80 people, 120 standing and 150 for whole venue (inside and out) for private functions. We are now in the process of renovating Boogie Woogie Beach House, the guesthouse above Flow Bar. The beach house boutique accommodation will

feature playful designer elements inspired by music and art.

The 11 room guesthouse will be a mix of family rooms, king and queen suites and an additional surf shack that sleeps 6, all with ensuites (family and king suites include a bath), entertainment units and air conditioning. The property will include a small 20+ seat conference room, is 100 m from the beach and with Flow Bar downstairs, being a fully licensed bar and restaurant.

It is ideal for short getaways, destination celebrations, weddings, local workshops, retreats or business meetings. We are planning to have at least 5 of the rooms open this summer and a complete launch by late January/early February.

Flow has live music almost every weekend.

What’s the lineup through December and January?

We’ve got a real treat in store for December - a great mix of local and touring artists, such as local band The Travelling Teardrops, an acoustic, folk, blues band; Chris Shermer, touring singer/ songwriter with a mix of folk and blues; The Workshop Duo, local blues and broad country with a raucous edge; Mettaphor, touring nu jazz soul sistas bringing some sweet jazzy funk and all things groove. ongratulations on securing the headline spot for Festival of the Sun for 2014 - you must be pretty pumped!

Yeah, it's going to be fun!

We actually did the festival; I think it was one of the first festivals we played five or six years ago, so it is going to be really good to go back.

I guess it's a nice journey for you to be able to look back on - being a smaller act then and now progressing to the headline act in just six years?

Yeah, totally. It has been a long time and so much has happened since then. We’re just thrilled to be able to go back and play in Port Macquarie.

Reflecting back then just to the last two years tell us about your journey and how the band has evolved.

Two years ago we would have just released our album, Prisoner, and have been perhaps a year into international touring, and that changed everything for us - going overseas and opening up the world.

We got to realise how many bands there actually are in the world and how big the industry is.

It tires you out being on the road so much, but it is a cool thing to do.

Last year you played almost 200 shows - what have you learnt from that experience?

You definitely learn about your limitations and your health and how far you can push yourself on the road.

We’re pushing our relationships as well, and it gets tough.

How will you change that, or what will you do to manage it so you can continue with your success?

Well, you definitely have to work at it - and think hard about why you do it and try to remember the first few years and keep that spark alive.

You have a new album out, The Brink. Tell us about that ...

It's our newest album - we recorded it overseas in London with a guy called Dan Grech-Marguerat, who is awesome. We really focused on trying to write really tight songs - which is something we didn’t totally focus on with Prisoner; I think we were trying to build more of a palate of sounds, whereas The Brink is more song based.

Who writes most of your music?

We all do it together. We found a rehearsal space and we said, "Let’s do 10am - 6pm weekdays". We soundproofed the place and we all went in every day and chipped away at it. We did that for about three months, then we changed it up a bit whereby Hayley and I would go in by ourselves and do half a day, then Sam or Nik would come in and we’d work the songs. Sam and I

actually switched instruments,and that’s how we wrote Angel of Fire, which kind of changes it up a bit.

You’ve played to the Port Macquarie crowd a few times. How important is it to stay connected to your regional fans?

It’s so important. Regional touring is some of our favourite touring; I guess not all bands do regional touring, so they are always very awesome people to play for and are always up for a party.

Why do you personally enjoy it?

I guess because the crowds are so different and you get to see parts of the country that you might not normally visit. It is definitely a different vibe to the city where people are spoilt with the entertainment that they get - you can see it written on their faces, like “impress me” (laughs). Whereas, if you go to a regional spot, it's more that people just want to have a good time.

FOTSUN is great for that local vibe and encouraging bands to visit the are. What do you love about our little festival?

It’s in a nice spot! I remember it was torrential rain the last time we were there! So hopefully not this year.

I

t is tradition at our house, just as Boxing Day cricket on the beach is one of my favourite things to do.

Spending time with loved ones is what this season is all about, and the way we are all working ourselves these days, there is less time to relax. I hope you have some down time and enjoy some special time with your family too; let us spare a thought for those who have nowhere to go and maybe invite them into your home this year.

When I was living in Sydney, I often didn’t get home for Christmas because of work, so my terrace at Paddington was open house for what we called the “Orphans’ Christmas”; I cooked for days so that there was a feast for all, everyone came dressed up in their best outfits, and we had a fabulous time in the garden. We often invited some of our customers along, as we had many elderly ones who had nowhere to go. We did drink very well, due to the fact that most of my friends and I were in the wine industry; I will always treasure those times.

Back then, Christmas Eve was always at the Four in Hand, and when I came home for Christmas, it was at the Bellevue in Tuncurry, where I caught up with old friends who had left the area and were visiting their families. That’s also why I love being in the café over Christmas; getting to see all the lovely families together is what makes my job so wonderful. Doing the

Welcome to the season to be jolly. I must admit, I love December; I know we will work a lot harder this month, but it is all worthwhile when we get to have that first drop of sparkling with our croissant on Christmas morning.

BAS on the other hand ... well, I do not enjoy.

While on dressing up, Wingham hospitality excelled on Saturday 22nd November for our vintage day. It was a bit last minute in its planning, but thanks to Marcia Bourke from Ashlea Road and Nicky Stevens from Manning Valley Books who joined me to advertise on radio, and to the Wingham Chronicle for giving us front page, we were visited by many beautiful people who dressed up for the occasion.

Luckily, we know the right people for this kind of event; Steve and Judi Wills arrived with three vintage Triumphs, so Grahame Nash got the Daimler out of the garage, and then Tim Jones arrived on his vintage Ducati. My “other mum”, Lyn Catt, arranged her beautiful mannequins and promoted the play “Isabella”, after dressing some of my staff up in vintage style. Everyone looked awesome and the day was a huge success; we hope to do it again soon and make it even bigger. We are the heritage town, so it is a perfect fit.

In the last few months we have catered for two beautiful country weddings, and this month I would like to introduce you to Rachelle Honeyman and Bevan McLachlan. This beautiful couple was married at Rachelle’s parents’ amazing property in Coolongolook on 11 October. When we arrived at the location, we felt like we were in paradise; Rachelle’s family

have created 7 acres of tranquil landscaped gardens over the years, and there were nooks of beauty everywhere. The wedding was celebrated with close friends and family with perfect weather and views over the Coolongolook River. A marquee was stunningly decorated and was a perfect abode for dancing the night away. The couple was married by their good friend, Sally Port, and the photography was by Justin Worboys. They enjoyed canapés in the garden followed by a sit down meal in the marquee. Next month I will bring you Megan and Ben’s beautiful wedding.

The evening of 22nd November brought local producers together for a social media activity; otherwise known as a twEAT up, this is where you eat and tweet. ABC Rural reporter Kim Honan joined us and many of the producers who are responsible for what we put on the plate at Bent on Food were also present; including pork/egg/vegetable producers Andrew and Therese from Near River Produce, Poultry producers Beth and Hayden from Burrawong Gaian, Steve and Robyn from Great Lakes Wines, Les and Annette from The Edible Forest along with many locals and visitors to the region.

We also showcased Comboyne Culture cheeses, Rudi’s meats, Karl Bayer’s local sourdough, Ewetopia sheep’s cheese, Meadow Ridge zucchini flowers and Bob’s peaches. Six

courses of amazing food were accompanied by Great Lakes Wines, with talks by the producers and by my chef Simon Livingston, along with a guinea fowl impersonation (my contribution).

It was a great night, and we can’t wait to bring you another event.

On the same night we were visited by the knitting Nanna’s family lantern walk, a peaceful stroll that started beside the beautiful scenic Manning River beginning at the Wingham Boat Ramp. This particular walk was to “Shine a Light” on the effects of climate change with particular concern of major unconventional gas projects, like the one in Gloucester. Children dressed up in fancy dress, and we were serenaded by the fabulous choir. It was a sight to behold and showed how many people are concerned about this.

A few Friday nights ago, 5 ladies got together at the restaurant for a 20 year re-union; these ladies were ex Wingham-ites, and have all since moved away. Kerryn Goddard, Sue Davenport, Libby Colless, Margaret Stephenson and Shani Donohoe had a story or two to tell, but of course my ears were blocked, as it is my job to be discreet. They had a great night for their “Back to Wingham” reunion.

i Pete. Where did you grow up, and more the following year. I was still working at a bottle shop, what were you like as a child? and I left that bottle shop gig in the start of 1999 for the I grew up in the Northern Suburbs of Rove pilot. That’s a pretty quick progression, I guess, early Melbourne in a place called Bundoora, in a career and there are pros and cons, I think, that come and I was a sport loving kind of kid. I with that. But, it was great to quit a job to go do a pilot, and had good mates who are still my mates even if the pilot hadn’t gone ahead, which thankfully it did to this day. ou’re pretty much a big deal in the comedy up this way; where are you looking forward to visiting the world; how did you first get involved in the most? You’re touring in Forster, Port Macquarie and Coffs. Is industry? there a favourite place that you like to take your family?

FORTY YEARS, AND STILL GOING STRONG! LAURIE METCALF FROM ROTARY TUNCURRY FORSTER INVITES EVERYONE TO THE CAROLS BY CANDLIGHT EVENT TO BE HELD AT JOHN WRIGHT PARK, TUNCURRY ON DECEMBER 15 - AND AS THE EVENT IS CELEBRATING ITS 40TH ANNIVERSARY THIS YEAR, THE PROGRAMME WILL BE EXTRA SPECIAL!

i Laurie. This year marks the 40th anniversary for the Tuncurry Forster Rotary Club Christmas Carols.

What’s the history behind

the event?

The carols were started as a community event back in 1974 and were held on Pilot Hill, Forster, but the wind was too strong. The next year they were moved to the front of the old School of Arts hall in Little Street, where they remained until 1992. The stage was a truck table top/semi trailer supplied by either Mr. Stan Bennett or Mr. Jim Fazio each year. Chairs came from a school and were set up where the Bus Station now stands - a lot of work for the members; however, there were only small crowds. If it rained, they moved into the hall, but candles were banned due to the fire hazard.

The Salvation Army Brass Band from Taree provided the music right through to 1992 and for several years later.

In 1993 we moved to John Wright Park in Tuncurry and the newly completed Music Shell; here we had a much larger area for the public to sit on the grass or bring their own chairs.

The Salvos were still playing, but, after a couple of years, the Great Lakes Band became strong enough to perform and have been with us ever since; as a result, they have grown in numbers and quality, becoming the backbone of our programme.

To brighten up the stage, a large canvas backdrop some 24 metres long was designed by the late John Bosward and painted by a number of members and wives in John’s garage and driveway, depicting the skyline of the Holy City; it is still being used today.

Why do you think this event has lasted as long as it has?

We believe that it has fulfilled a role within our community and is increasing in popularity every year; we now draw crowds in excess of 3,000 people. In preparing our programme, we have engaged our local schools and young people in the band. The event was starting to lose its way several years back and was becoming a variety type concert. We have now reversed that trend and have got back to the Christmas spirit and restored the Christian beliefs.

We believe that Carols by Candlelight is the longest running community event in the twin towns today, which speaks for itself.

Being a free community event, how does Rotary fundraise for the Carols?

In early years the club received financial assistance by a donation from Council, but this ceased some years ago. We then commenced to do catering by way of a BBQ serving steak and sausage sandwiches and drinks etc. to the public; the funds raised on the night pay for the sound system, which is the largest expense, and other small items.

Great Lakes Council still assist by allowing the use of the Park, supplying power, waste disposal and additional toilets by way of Portaloos; they also ensure the park is in first class condition on the day.

Well, Christmas is fast approaching, and before we know it there will be wrapping paper all over the house, gifts exchanged and lots of food to be eaten. Christmas by the sea is a totally different way to celebrate than in other parts of the world.

Sun, sand, seafood and cold drinks are essential in the hot weather here.

northern hemisphere Christmas is associated with snow, freezing weather, pine cones, snowmen and many of our traditional Christmas winter based themes.

In years gone by, these were our only choices in decorating our homes, as we were influenced by traditions taken from other countries and by the purchasing from retailers overseas.

We have come a long way to developing a coastal Christmas style. Now driftwood, shells, starfish and other sea influenced images have taken on a a distinctly Australian flavour.

This look has grown from Scandinavian trends which have strong influences of white, pale timbers, natural fabrics, simple shapes and textures.

Decorating your home for Christmas by the sea can be done in a more formal way, using a traditional green tree or using a more loose look with wood shaped into trees and painted branches.

The more rustic this looks, the more coastal themed it will be. Shells and starfish that are made to hang replace more normal decorations; paper, string and wood are materials that you can combine to give texture and variety. A walk along the beach could give you lots of places to start; create your own decorations, simply collecting shells, small pieces of driftwood and other relics that you like and find.

Get the kids involved to help collect and tie your finds together; they will love the adventure and get a

lot of pride out of the finished decorations.

If a bit more bling is needed, you can mix these home made creations with coloured or shiny baubles ... pick a colour here - this could be blue, turquoise, gold or silver, and use this to tie together your natural elements and to bring your tree to life.

Take your inspiration from nature and the coast.

The wreath on your door does not have to be green with holly; try raffia, vines or twigs, again use your coastal elements to style this up, tie a starfish to the top as a "star", use natural ribbons or string to hang it on your door. There are a great selection of battery operated LED garlands available in stores that you can tie into this for some extra lighting effect.

Fill vases that hold your branches with sand and shells; this looks great, and you can use this arrangement not only at Christmas. Hang your decorations from your branches - the natural forms of the branch will make this display more interesting and informal.

Table decorations for Christmas Day can be easily created by scattering driftwood, baubles and shells down your table. If you have individual place settings, tie a sliced shell to the napkins or glass.

This look is fun, relaxed and very summer, but remember most of all - don't stress too much and enjoy the company of family and friends..

he holiday season is a time for family, fun, and, of course, food. The holidays are marked by the easy availability of a variety of tasty treats and delicious meals.

Regrettably, all that yummy food is rarely healthy - making unwanted weight gain all too common during the festive season.

Unhealthy eating during the holidays is not, however, an inevitability: here are seven tips for keeping weight off and eating nutritiously during the holiday season.

1. Be disciplined. The foods of the holidays will present you with many delicious temptations. Now, it would be absurd to resist completely, and thereby miss out on one of the most enjoyable aspects of the holidays. Rather, the goal should be moderation. Instead of having two pieces of pie, limit yourself to one small one. Self-control is difficult in the face of a myriad of delicious treats - motivate yourself by remembering why you are trying to restrain yourself. Focus on the positive side of moderate eating: better health, lower weight, and the like.

2. Exercise. As always, regular exercise is vital to good health and the maintenance of a healthy weight. The holidays present a special challenge to regular exercise, since they often disrupt normal routines.

If, for example, you go home to your parent’s home for Christmas, the changed circumstances might break your normal habit of exercise. Don’t let this happen.

Work out wherever you find yourself.

While some (such as gym-goers) might find their normal routine impossible, exercise is always possible - even if it’s only for a short walk, get out and move. Exercise will also give you a little more leeway to indulge in a particularly tasty treat.

Yes, veggies and fruits aren’t what mostly people think of when they dream of a holiday meal. Nonetheless, they are vital to fitness and healthy eating, and the calendar turning to the holiday season can’t change that. Remember, vegetables and fruits can be delicious in their own right.

Perhaps more importantly, they will make it easier to resist fatty options by helping to fill you up.

6. Watch your alcohol intake. Alcohol is fattening and unhealthy, but also presents another danger: it lowers inhibitions.

Drink too much and you will find your

Don’t promise yourself that you’ll start a diet in January to make up for indulging yourself. Instead, use the tips presented above to eat healthily during the holiday season.

With the warmer weather, many of us will enjoy time outdoors and relaxing with friends and family. However, some people can down tools and relax much more easily than others. What is their trick? A good question to ask yourself is, “Do I value activities that are relaxing and fun as much as activities that are achievement oriented like doing chores and working?”

In order to enjoy downtime, it has to be important to us, prioritised and scheduled into our increasingly busy lives.

Perfectionists and high achievers often feel guilty when they are not doing something they consider to be “productive”. If this sounds like you, relaxing without guilt can take practice. I have worked with clients who cannot even name one activity they enjoy, because it has been so long since they have had fun.

Make a list of activities you enjoy, or used to enjoy, and put specific time aside to start doing them. If this is hard for you, use your thinking to remind yourself you need a balance in order to enjoy life. On a serious note, all work and no play can be a recipe for stress and depression related problems. So go have some fun!

100th Cardiac Cath Lab Patient Local resident Mr Richard Quinn was the 100th patient to be treated by local cardiologist Dr Sesh Narasimhan in the Mayo’s cardiac catheterisation laboratory. This is a significant achievement, given that the laboratory only opened in May this year. This puts the hospital on track to treat in excess of 250 patients in its first year of operation. As mentioned in previous FOCUS articles, this means that the flow of dollars and health resources to

Newcastle and Sydney is being reversed.

The lab has also attracted the services of visiting cardiologist Dr Suku Thambar from Newcastle, and he is now doing a regular monthly list.

Visiting vascular surgeon Dr Phil Colman has completed four monthly patient lists, and pain specialist and local resident Dr Wade King is now consulting locally at the Mayo and will commence work towards the end of this year.

‘DROOPY UPPER EYELIDS’

y eyes feel tired after I read for a while and I cannot keep them open by the end of the day” is a common complaint in some patients. Patients tend to consult their doctor, wondering if they need cataract surgery.

However the problem is often due to Blepharoptosis or drooping of the upper eyelids.

The eyelids have two major groups of muscles, those that close the eye and those that open the eye.

While closing the eye is usually a voluntary act, opening of the eye is almost automatic, ie. one does

not consciously open the eyes as the upper eyelids stay elevated to permit one to see out of both eyes.

Blepharoptosis can be congenital (a birth defect), but more commonly, is due to ageing. In some patients, the problem is seen in their thirties and forties, but more commonly is seen in patients who are older.

The main cause of the problem is a stretching of the muscle which draws up the upper eyelids like a curtain. In addition, the attachment of the muscle to the eyelid is also frayed. Corrective surgery, ie. Ptosis Surgery, involves shortening and reattaching

the muscle. In addition, excess upper eyelid skin, muscle and fat is removed (upper blepharoplasty surgery), all of which makes the eyelid lighter and hence easier for the eyelid to be maintained in a good position. The furrows in the forehead will decrease as the forehead muscle no longer needs to work overtime doing the work of the eyelid lifting muscle.

Commonly, the problem involves both sides and surgery is done on both sides simultaneously or one after the other, with the worse side done first.

Where there’s smoke…..

I was at a conference in Adelaide last month and caught up with an old mate.

This doctor had been a smoker and was pretty chuffed to have finally quit. For the last month, he had been buying electronic cigarettes on-line and already felt less short of breath.

What are e-cigarettes? E-cigarettes look like cigarettes but are battery-powered products which are activated when the user breaths in. This causes the canister of liquid nicotine, flavourings and various chemicals to turn into a fine smokeless mist.

Will e-cigarettes save lives or cause addictions? On this point, the experts are divided.

It is a bit suspicious that the tobacco industry now monopolises most of these businesses.

They are flogging them to children, prison in-mates and the mentally unwell. By the beginning of this year there were 466 distinct brands with an estimated 7,764 unique flavours. Advertising messages include branding e-cigarettes as safer than conventional cigarettes or else emphasising their multiple flavours as able to complement every lifestyle.

The concern is that e-cigarettes may promote nicotine addiction, especially in children, which may then be a gateway to smoking tobacco or cannabis. They may re-normalize and reinforce smoking behaviours.

So do e-cigarettes help people stop smoking? Several studies have compared e-cigarettes to placebo e-cigarettes (placebo means there was no active ingredient). At the end of the trials around one-third of both groups continued to use their e-cigarette (even if it was placebo) and similar numbers were smoking tobacco. On the other hand, a survey of 5863 English smokers who had had a recent quit attempt, found those who had used e-cigarettes

were 60% more likely to have quit than those who used no support or who used Nicotine patches.

Are the e-cigarettes safe? Well, we don’t know. They make fine particles similar to pollutants which cause lung damage. They also contain chemicals, such as nitrosamines, which cause cancer and known poisons such as diethylene glycol. Commencing tobacco smoking in the teens is known to be associated with the onset of panic disorder, depression and suicidal thoughts. We do not know if this is from the nicotine and/or the tobacco. In any case, emerging evidence indicates nicotine may itself cause problems such as cancer.

Are they legal? In March 2014 Western Australia banned them but elsewhere they are technically legal. However, the nicotine liquid remains illegal under the Therapeutic Goods Act of 1989, but may be purchased in some NSW shops. Importation of nicotine for personal use may not fall under this ban. However, the laws differ between states and may vary quickly: so best make your own enquires.

Past experience tells us that marketers sell the sizzle not the sausage. The tobacco industry is trying to make e-cigarettes seem cool. Despite a lack of safety information on them, they are being branded as a no-risk form of Harm Reduction. This may encourage teenagers to take up smoking e-cigarettes or other drugs. So, while my mate is doing well, the jury is still out on whether the risks outweigh the benefits for e-cigarettes. In my opinion, those smokers wanting to quit would be best to see their GP for counselling and/or conventional nicotine replacement therapies and/or Champix® (Varenicline).

Dundaloo Support Services is proud to have been part of the local community for 61 years. CEO Shelly Sabey explains how Dundaloo has supported adults in our community with an intellectual disability throughout this time,, but she’s also very excited about the organisation’s future, as there are some very special events planned …

W

hat are the main day to day responsibilities associated with being CEO of Dundaloo Support Services?

My role as CEO is primarily about leadership and ensuring that the people we support are living a life that is meaningful to them. A CEO sets the vision for the organisation, meaning that part of my role is to ensure that we know the direction we are taking and that everything runs smoothly.

Tell us about Dundaloo Support Services ... where is your main office located, and how long have you been established in the Manning and Great Lakes area?

Dundaloo Support Services provides accommodation and support to adults living with an intellectual disability. At Dundaloo we believe in the innate worth of all people; we are about being inclusive, celebrating diversity and upholding integrity.

Dundaloo has been part of the local community for 61 years. It was established by local families living in the Lower Mid North Coast. Initially it began as a school, as children and young people with a disability during the 1950s and ‘60s did not attend mainstream schools.

With the assistance and commitment of its community, the school prospered and over the years Dundaloo, which is based on a Biripi word meaning “happy place”, began to offer week day accommodation to students.

In the 1960s and ‘70s, the Men’s and Women’s Hostels were established, with a group home being established in the 1990s and the Outreach Service in 2002.

Today, we are forging ahead and with a significant grant from the NSW State Government, we have been able to recreate and re-develop the accommodation facilities of Dundaloo; we are building state of the art new homes, which will provide accommodation to 26 people. There will

be four new homes and a group of villas, two located at Old Bar, one at Wingham and two in Taree.

While the new houses will accommodate all of the people currently living in the hostels, we will also have a number of vacancies, so we look forward to working with a number of new people.

We are very appreciative of the proactive support that the NSW State Government and the Hon. Steve Bromhead have provided us.

What core services and facilities does Dundaloo offer?

Dundaloo’s accommodation services range from being actively supported twenty fours a day and having what we call “drop-in” support, which means that people receive daily support of about four to eight hours per day.

Our outreach team provide support to people living independently in the community; many people receiving outreach support have a funded package, which means that the NSW Government through Family and Community Services (FACS) provides the funds for people to learn new skills and live a lifestyle that they have chosen.

The disability sector has changed dramatically over the past ten years and will change even more with the introduction of the National Disability Insurance Scheme. People receiving support will be at the centre of their own lives, making decisions and living a life that is fulfilling and is meaningful to them.

People with an intellectual disability have the same wants, needs and desires as other people living in our communities; the only real difference is that they require additional support to achieve their aspirations. At Dundaloo people are central to everything that we do, with many contributors, such as the staff group, the family members, the Board of Directors and people who choose to use our service. Dundaloo works because we always try to listen, work collaboratively, provide leadership and uphold people’s human rights.

Dundaloo supports approximately thirty three people in supported accommodation and about thirty people in our outreach service.

Additionally, we have about sixty dedicated and skilled staff members. The Dundaloo staff group are good and decent people; they care about what they do and are very proud to be part of this inclusive and creative organisation.

How do people in need within the local area access the support Dundaloo provides? Do they need a referral?

Anyone seeking accommodation or support must be registered with Ageing, Disability and Homecare (ADHC) and this can be done by calling Information, Referral and Intake on 1300 205 268. If anyone has any questions, they can ring Dundaloo and we are happy to provide assistance and guidance. Dundaloo does not make any decisions about who gets funding or priority; these decisions are all made by people who work for ADHC. You’ve held some unique and exciting events in recent times. Share some details with us about the cooking day you held ...

Michael has a passion for cooking and with support from his mum and Dundaloo, Michael has developed a cookbook made up of his favourite recipes. Donna at Bent on Food provided the kitchen training facilities and Michael, his mum and friends and the Dundaloo support workers trialled some of the recipes. The day was a great success, and everyone was happy and well-fed!

Michael’s passion for cooking was identified in what we call his PATH. Each person at Dundaloo has a PATH and it is a process that ensures that the person is at the centre of their own decision

making. For Michael, developing his own cookbook, trialling his recipes and having the cookbook professionally printed is a realisation of one of his dreams. Congratulations Michael!

At Dundaloo we are proud and honoured to be supporting people to firstly have dreams and aspirations and secondly, to actually realise them.

On 3rd December 2014, which is the International Day for people with a Disability, Dundaloo service users will be playing the first in a three game “Gungie Origin” football series. We have partnered with the Aboriginal Community Liaison Officer (ACLO) Team from the Manning Great Lakes Local Area Command in a community initiative that promotes inclusion and safe communities by making connections and having fun together.

ACLO team member Will Paulson has engaged local businesses so at the game there will be physiotherapists to loosen the muscles, a BBQ to keep up everyone’s energy and drinks to keep us hydrated.

It is fair to say that we are all very excited about the game, and our sincere thanks go to Will and the Local Area Command.

aving been a past Peugeot owner, I had a reasonable expectation that I was going to be driving a classy piece of chassis when I took up the road test of the all-new Peugeot 308 Allure.

Most of us would be aware that the shapes and contours used by Peugeot in the past have been quite unique, so it was a surprise to see that the new 308 has been designed from the ground up and across both outside and in.

To look at it, the 308 takes on a more sleek and classic shape, but retains the trademark look of the past models in the front-end. The innovative and carefully constructed body uses a combination of laser welding and hot stamping, which adds to the 308’s classy look and feel.

Taking a closer look at the materials used in this new offering, Peugeot have invested in materials with maximum resistance to damage and scratching, such as the anti-scratch lacquer.

On the road, the 308 1.2 litre Turbo Petrol performed extremely well and the precision in handling was of worthy note. MidCoast Water is urging all residents to take some time out this summer to do a simple water meter check, as part of the summer water saving program.

This program asks all Manning, Great Lakes and Gloucester residents to watch their water use during the summer months by refraining from using fixed hoses, sprinklers and watering systems during the hottest part of the day – between 9am and 4pm.

Supporting the summer water saving program will not only help water supplies, it will help when it comes time to pay your bill, general manager Robert Loadsman said.

“Keeping an eye on your water meter is the easiest way to save water,” Mr Loadsman said.

“Undetected leaks on properties can end up costing property owners when it comes to account time and the best way to ensure you don’t have something untoward happening at your place is to perform a meter check every now and then.”

Mr Loadsman said this is as simple as reading the meter last thing at night and then first thing

in the morning – or during another period when you can be certain no water is being used.

“If you are concerned about the amount your water meter ticks over when you know the household is not using water it is a good idea to get a plumber in to investigate.”

Even a small split in a pipe can leak a substantial amount of water over time, wasting a resource and unnecessarily raising your bill.

aree Central Meats was recently opened on the back of their huge success in Wingham, their more established business.

Already, the Taree market is finding out why their butchery

is so popular.

How long have you been a butcher?

Well, I started working as a wash up boy from the age of 12. My father has always owned butcher shops, so what started as working for some pocket money was always going to turn into a career choice. I started working full-time as an apprentice at the age of 17. So I have been butchering for 17 years … I guess that’s telling my age also ha ha.

You’ve transitioned in the business from butcher to partner. What have the biggest changes and challenges been for you in this transition?

Great question! Well, the biggest change has been in myself. Now that the “buck stops with me”, I have really had to ensure that every little thing is perfect for our customers.

Sometimes when it’s “just a job”, it’s easy to be complacent when it comes to quality and service. I strive to ensure that not only am I never complacent, but that my staff also never think that ”good enough” is OK. People have a lot of choices these days on where they can spend their hard earned cash, so when they come to my business for a dinner idea, I consider it a privilege and do anything I can to ensure that they are satisfied.

The biggest challenge has been learning the facts and figures behind business. There is so much that goes on behind the scenes to ensure that not only do we supply an absolute premium product and experience

for our customers, but we do so at both a cost effective way for our customers and a profitable way for ourselves.

How do you compete with the multinationals?

On most levels I try not compete with the multinationals. I believe that if we offer a great product, a fair price and exceptional service, then the customers will and do come. I think in the busy world we live in that calling in and seeing your butcher is a great experience - and in many ways a soothing one. It can really change the course of a bad day. You are always greeted with a big smile, have a chat … It doesn’t matter if it’s about the weather or politics. Then we can fix you up with some fast ideas for dinner, and you leave feeling satisfied.

I guess that’s where we compete, even if its not consciously. I think great value for money should include a smile, some human interaction and a good feeling - unlike the supermarkets, that can be so cold and lifeless.

You walk in, pick up a tray, and walk out. You don’t even need to speak to another person now with the self-serve counters. I think that is quite a sad experience. Imagine if we all spent a few minutes each day asking a stranger how their day was and listening to the reply. I think the world would be a happier place. That’s what we are bringing to our little town of Taree. A happier shopping experience.

What’s different about your businesses?

I think to wrap it up in a nutshell, our point of difference is we care. How many times have you been shopping and left a store feeling unsatisfied, or like you were a burden for the shop attendant? Our customers don’t experience that here.

T R E VO R K N I G H T Many of you would have seen Trevor at an entertainment venue, as he’s well known for performing locally, and he’s been fortunate enough to win Golden Guitars for some of his songs. What many of you may not know is that Trevor also has a long history and affinity with horses – much of which he developed while working with brumbies and as a stockman in the Snowy Mountains. Trevor will be holding a “Wisdom of Horses” workshop on December 14 at his property near Bulahdelah …

revor, please tell us about your background …

I was born just outside London, within the grounds of Hampton Court Palace (Henry VIII’s residence). In the mid-1960s I travelled to America in search of adventure and folk music; it was there that I first met a major influence in my life, John Denver. After returning from the States, I became a semi professional musician travelling around Europe, the Mediterranean, and back to the USA as a solo act and with various Folk and Rock bands ... in 1974 I decided to go for a 6 month holiday to Australia, but after winning National Starquest on Channel Nine and working in the Snowy Mountains as a singer and later as a stockman at Tom Groggin Station, I fell in love with the mountains and the wide open spaces; so, I became Australian (something I’m very proud of!)

How did your interest in horses develop?

I saw horses every day when I was a kid mostly cart-horses - the milkman, coal-man and Gypsy caravans were all common sights around our town in England, but, when I was 5 years old, my parents took me to a Wild West Show, and there I met a cowboy called Tex Ritter ... I knew then what I wanted to be when I grew up ... A COWBOY! But, there weren’t too many cattle roaming the streets of Hampton, so I put that dream on hold.

I did learn to ride (English style) at my school, but it was not until I got a job as a stockman that I learned my most valuable lesson from my boss, Sandy, when I asked him how to ride an Australian Stockhorse ... He said, “Well, my boy, you don’t bloody well fall off, for a start!”

Describe the “Wisdom of Horses” workshop you’ll be presenting on December 14 …

My time as a stockman was an incredible experience; it was an exciting and romantic time.

with my songs about the Snowy Mountains, but it was also incredibly brutal. The Brumbies were a seemingly inexhaustible source of riding horses in those days; if 20 were mustered and 10 were “broken” for sale as mounts, it really didn’t matter what happened to the rest, as a profit was made; sadly, the dogs were well fed.

I couldn’t relate with this - surely the Australian Stockmen were some of the finest horsemen in the world, but a percentage of the wild horses were dying in the “breaking” process ... there had to be a better way!

So, I’ve spent the last 40 years leaning how to communicate with horses and developing a non-combative system of training them without having to break their spirit; this way, there is understanding on both sides, the horse learns to trust and not to fear, and the rider gains a faithful companion who will ride through hell and back for you ...

I am not exaggerating this ... in the mid ’80s I had a fall with my horse Balfron Mabella during an Endurance Ride, where I sustained life threatening injuries and would have bled to death, had it not been for her courage and determination to carry me unconscious 20 miles through rough country to home base. It was only after I had left the intensive care ward that I was told Belle had also been injured and could hardly walk the following day! That day, Balfron Mabella saved my life!

I will go through the process of bonding and training a horse to saddle, horses with problems, fitness for horse and rider and how to strap a horse after a long run ... and much more.

The topic of conversation everywhere I go at the moment is “real estate”.

It would be hard not to notice the large number of sold signs around our Valley - especially residential. If you are thinking that the signs are going up and almost the next day a “sold” sticker is quickly slapped across its face, you are right. Average days on market in Taree is down to 19, with our beachside suburbs even quicker.
