Being the highest ranked town in New South Wales is a wonderful accolade for our stunning area - very well deserved! Each month when I’m gathering photos to include on our Social Scene pics page, I stalk the “Love the Great Lakes” Facebook page, now known as Barrington Coast; I love seeing all the incredible pictures our locals and visitors share. This month has been no different; there have been some incredible shots taken - such as the one behind our team photo! Don’t worry; we always give credit to our photographers. This year we’ve had a switch - instead of featuring a local bride, we decided to have a “behind the scenes” theme. From a childhood hobby to a thriving career as a professional photographer, we chat with Jenny Forrest about what makes her click!

here did your love affair with the lens begin? My interest in photography developed at a very young age, but it was in my school years at Gloucester High when I realised that I truly had a love of photography. I studied art for my HSC, and photography was my favourite class. At weekends I would photograph old farmhouses, bridges, animals, my family and friends on our little 25 acre hobby farm; in fact, anything that offered an opportunity to test and enhance my photographic skills. So many opportunities presented in the farmlands and villages throughout the Gloucester, Krambach and Firefly areas, that I was never short of a subject. When my family moved nearer to the coast at Rainbow Flat and then Hallidays Point, my eyes were opened to seemingly endless backdrops to indulge my passion, for now there were rainforests and incredibly beautiful beaches to turn my lens to. As my business developed, I found that I had a natural leaning towards photographing candid moments, as well as posed shots. I absolutely adore getting real emotions that leap out of the image. The little smiles, surprise, the obvious love that can be seen when you press the shutter at just the right moment. I love the idea that a photograph has the ability to make time stand still, and that when you have an image that embodies something or someone special, that you can forever revisit that moment in time. And finally, if you look back through your photos, you will notice that when you take your own images there is always someone missing - the person behind the lens. What inspires you to take photos? My inspiration comes from the fact that time goes by so very fast. Since my son arrived, I found that you blink and he’s turning one, two, three then four and soon five! Photos for me are a means of being able to cherish those little moments in life that might otherwise disappear forever. What have been some of the highlights of your career? Highlights come with every session. It could be the look of joy on a child’s face being photographed with their siblings, relatives and friends or animals. The satisfaction of getting that just perfect shot of a mum to be. Seeing the obvious closeness between a couple who have made the decision to capture their love in a photograph. The magic of pregnancy provides many highlights, with mothers-to-be forming a large section of my client base. You may have guessed that being a small part in providing a tangible memory of this special time is extremely rewarding. But I guess that, for me, the most important highlights come with receiving a message of appreciation and even amazement that my clients respond with, when they receive their finished product and realise that they have a special moment caught for all time to look back on. We spoke recently to Christeen about the amazing work that Koalas in Care provides to the sick and injured koala population in the region.

i Christeen. Can you tell our readers a little bit about the history of Koalas in Care Inc? Koalas in Care was established and began operation on 1st July 2005. Prior to this date, Paul and I were working with koalas in the area from September 1993. Koalas in Care is based in Taree and covers the area from Johns River in the north, to Bulahdelah in the south, and from the coast to Gloucester (roughly 873,000 hectares). Koalas in Care is run by a management team. Our purpose-built koala facility is not opened to the public. We have a holding capacity of about 20 koalas. We are licensed to operate by the Office of Environment and Heritage. When did you first develop an interest in working with koalas, and how did your journey unfold? We always had an interest in koalas, but initially we got involved when we heard a radio interview asking for rescuers to be trained in the Taree area in 1993. We underwent the training through the Koala Hospital in Port Macquarie and commenced doing rescues for sick and injured koalas. Over the years we took on more and eventually built our first koala holding unit, so we could house a koala if necessary. Home caring koalas soon followed, and then another unit was built. Today, our facility has two humidicrib units; two nursery units, four critical care units, three intensive care units, seven general purpose units and an outside enclosure. We can care for all areas in koala care, from pouch joeys through to

aged koalas. In 2018 we undertook major renovation of our facility, with a new intensive care area, a new treatment room/office and a new roof on the enclosure. For over 20 years, Donald Hood, Taree Veterinary Hospital Vet and Patron of Koalas in Care, has overseen the care and treatment of koalas in our facility. Our team of volunteers consists of 15 and includes the koala facility team, that assists daily in cleaning, treatments and feeding; leaf collecting, which is undertaken every second day to provide leaf for the koala patients; soiled leaf must be taken to the waste depot on a weekly basis; rescues are done at all hours of the day/ night by the rescue team; and many general jobs are done by all. What is it that you love most about the work you are doing with koalas? Koalas are a very specialised species to care for, and it is rewarding to have worked with them over 25 years and to be able to use that experience to help every one of them that comes to our facility. Each one can teach you something - you never stop learning. While we do have a good deal of success with our patients, sadly, we can’t win them all. Koala care is extremely hard work, and we volunteer our time every day to care for our koala population. What situations do you find that you’re dealing with a lot? 68 Years and still going strong It’s quite an achievement to make 68 years! WE TALK TO BERYL AND BRUCE STEBER about what makes a long and happy marriage.
C
an you tell us how you first met? Beryl: We were both just kids when we first met during my family’s holidays at Narrabeen Beach. Bruce buddied up with my older brother John, and many hours were spent playing on the beach with the local kids. I was the tormenting and annoying little sister. Then came the war, and it was some years before my family spent much time again holidaying in Narrabeen (fuel was rationed, so travel was minimised and access to the beach was restricted) - Bruce had always lived in Narrabeen. After the war, now teenagers, for sport we played tennis and John introduced us to ballroom dancing, so we started going to dances. Bruce needed a partner, so the friendship blossomed. We were the first of the “kids on the beach” to marry. Was it love at first sight? Bruce: I was pretty certain Beryl was the “right one”. Looking back, I know she was. I’ve been very lucky to have her in my life. We’ve had a very happy and fulfilling life together. We are a team; we are buddies, as well as a married couple. When you said “I do,” did you imagine you’d still be married 68 years later? Do you think you fully comprehended what it meant? Beryl and Bruce: Sixty-eight years together was probably the last thing we were thinking about. Learning to trust each other, support each other and listening to each other, creating a home, becoming parents and raising a family, being partners in business and trying our best to make each other happy was more important than how many wedding anniversaries we would share. Sixty-eight years married is an incredible achievement. What’s your secret to a happy

The Manning-Wallamba Family History Society has A WEALTH OF LOCAL HERITAGE INFORMATION WHICH HAS BEEN BROUGHT TO LIGHT DUE TO THE MANY TIRELESS HOURS spent by volunteers searching through old newspaper articles and family history resources.
e spoke recently with Vicki Fletcher and Janine Roberts from the Society about their upcoming event ,“A Journey Back in Time”. Hi Vicki and Janine. Can you tell us about your involvement with the ManningWallamba Family History Society? We both volunteer with the society, helping people to research their family history. The society has volunteers at the library six days a week. Vicki is also the Membership Secretary and Publicity Officer. What’s the story behind the event “A Journey Back In Time”, which the Manning-Wallamba Family History Society is planning on holding in February? Last year Janine was approached to organise a walking tour in October for a group of men from Hallidays Point. Several society members helped Janine with this walk along the Manning River from the Rowing Club to the bridge and part of Victoria Street. Along the way, society members shared stories of historical significance and stories about various local identities. The group was also shown some old photos of what the area looked like over the years. The walk was enjoyed by all involved and as a result, we have been inspired to plan more events like this. A previous tour of the Scott’s Creek Church and Cemetery was also well attended. Who has been involved in setting up the event, and who came up with the idea and why? Tuncurry Coaches Secret Weekly Farmers Market The Secret Weekly Farmers Market continues its drive to help sustain farmers and businesses across the Mid North Coast region and is keeping on with its fresh local, chemical free, and organic seasonal produce. Couple that with handcrafted products, such as kimchi, pesto, pasta, curry, wine, traditional preserves, cheese and bread, and terrific atmosphere, there’s no better place to taste the difference! Even in the heat of the summer this year, local produce has provided us with many crops, including snake beans, asparagus, tomatoes, all manner of Asian veggies from the leafy greens to bitter cucumbers, also creamy avocados, flavoursome berries, honey and corn, right through to the juiciest mangoes, plums and rockmelons, to name a wholesome few. You could say wild fermentation is to wine what raw milk is to cheese. Fermentation is a biochemical process where the yeast consumes the sugar and converts it to alcohol and carbon dioxide. Yeast has a significant role to play in the winemaking process, influencing aromas, alcohol level, texture, acidity and other key characteristics.

season PEPINO This fruit is not usually seen in the grocery shop! Pepino is oval shaped, grows to the size of a large apple and has soft, creamy yellow skin with a distinct mauve striped pattern. The juicy and refreshing fruit smells and tastes similar to a mild rockmelon. This is an amazingly easy and fast growing perennial that is short lived and native to South America. The plant will produce delicious fruit within 12 months from planting. It has a low bushy habit of approximately 60 cm high and 90 cm wide. The small, attractive mauve and white striped flowers are followed by fruit that start looking like an egg! The plant enjoys a mostly sunny, frost free location with fertile soil and good drainage. If available, the addition of compost is beneficial. In dry periods, provide extra moisture. Pepino takes up a minimal amount of space in the garden and can grow well in
the corner of the veggie patch or earn a spot amongst the flowering plants. It fruits well in a large pot, on a sunny verandah. The fruit is ready for picking when the skin changes to a mellow yellow colour and has an aromatic smell. The fruit will store up to two weeks at room temperature. Pepino is delicious eaten fresh, blends well in a fruit salad with other fruits such as apple, grapes, rockmelon, and pawpaw. It is also a welcome addition to smoothies. Pepino is related to the tomato and encounters similar pests such as caterpillars and fruit fly. To reduce fruit fly numbers, bait traps are helpful, as is a fine exclusion net over the fruit to protect it from both insects. Handy tips: during wet periods, keep fruit off the ground to avoid rot. Prune mature plants to encourage new fruiting stems. Happy Growing!

It’s been a while since I have had the opportunity to go to Gloucester. I always think of it as a town a bit like Wingham, with lovely shops, cafés, and that friendly country feel you get when you wander the streets. What is also similar is that the main street can become a bit of a ghost town after 3pm on a Saturday afternoon.

The theme was Gatzby, so the flappers were out in full force, with the stunning ladies all enjoying a few obligatory games, home made sausage rolls, petite little cakes and sandwiches, and a few glasses of bubbly. Gillian’s friends and family travelled from all over the state to be there for her special occasion, and it was lovely to spend an afternoon hanging out with some great ladies. We were well looked after by the friendly people at Café 57, and I look forward to being back in Gloucester for Gillian’s wedding to Kloud in February. Malcom Wallace celebrated his 70th birthday in his garden at Red Head, Hallidays Point with a stylish mock aristocratic English tea party. Fifty guests were encouraged to come in period dress, with the gentlemen attired in coats, top hats and wearing medals, while the ladies wore dainty dresses, handbags and jewellery. Medieval games were played, including croquet and boules, while a jousting contest using children’s bicycles was
staged. Afterwards, wafer-thin cucumber sandwiches were served. The afternoon was thoroughly enjoyed by all who attended. We sat down for a main meal and formal proceedings at 7pm and were all finished and ready for the fun to begin at 9pm, where those that wanted dessert could help themselves and the dancing would begin. Tell us about the location of your ceremony - why is this place special to you both? Having our wedding at Forster was our chosen location, as it has always been a spot for both families to holiday. Specifically, my family came every year to visit my grandma, who lives on One Mile Beach, which happened to be very convenient for my 87 year old grandmother, as she could nearly walk home from the reception at Cape Hawke Life Saving Club. For Ryan, his family always holidayed at Pacific Palms, so it was quite special for him as well. It was also special to me to have the ceremony at the Catholic Church, as I had completed all other sacraments - also, to get one up on the sisters and be in Grandma’s good books, as the other two didn’t get married in a Catholic Church! Whereabouts was your reception, and who did all the decorating? Our reception was at Cape Hawke Function Centre. We had a blank canvas with the most perfect back drop, being One Mile Beach. Most of the decorating was DIY jobs by me (with a lot of tips from Pinterest), my father, who made the photo booth backdrop himself and the table seating chart, Rosita’s flowers for the centrepieces, and family friends Janice and Ross, who made plant stands and the most beautiful flower arrangements for the church and bridal table. I had an army of help, especially my maid of honour and family, with my uncle and Ryan’s parents putting up lights and setting tables. I did have a few pieces hired from White Palms Wedding Hire to finish the look! Who were your bridesmaids and groomsmen? My bridesmaids included my older sisters, Helen and Louise, and my maid of honour was
my best friend from uni, Sally Buchanan. Ryan’s groomsmen were his two best friends from uni (Angus McVey and Matt Svarc), whom he couldn’t really split, so both were considered his best men (even though he made them go through a series of tests/games to deem a winner - Angus McVey). What was on the menu for guests to enjoy? We were very lucky to have the ladies from Mums on the Run catering, who did a superb job. We had a tray of antipasto platters to begin, six canapés to start, including Peking duck crepes, salt and pepper squid, mini beef wellingtons, satay chicken skewers, arancini balls, and coconut crumbed prawns. For mains we had alternate chicken topped with basil, sundried tomato, bocconcini and steamed greens with a kalamata sauce, or an eye fillet served on chive and garlic mash with peppercorn sauce. For dessert it was a dessert bar with my mother’s famous slices, Grandma’s biscuits, a Candi B cake and donuts. How far in advance did you start planning? Any hot tips for brides-to-be? I started a few weeks from the engagement. We actually originally wanted to get married in Mudgee, as it was equal distance between Port Macquarie (Ryan’s home town), West Wyalong (where I’m from) and Moree (where we resided). However, we made a weekend trip there and decided the prices just were not going to fit our budget, so we decided to go with Forster. Once we had set a date and confirmed the place, we started booking all the major things first - the photographer, venue and caterers. I also had to get on to local businesses that hire things early. Some of this proved difficult being away; however, White Palms were great to deal with and were happy even if you only wanted to hire a few bits and pieces. A major tip was researching hair and makeup artists in the area, as a lot of hairdressers in Forster don’t open on a Saturday. We were lucky Ryan’s brother lived in Smiths Lake, and we met Helen there. Did you find it easy to source everything you needed for your wedding locally? Read above, but it is very easy with most businesses being online, which helps - or in the know with their own contacts to help
guide you on to the right people. Again, the Information Centre that gave out the Forster packs was very helpful. What was your favourite part of your wedding day? There were a few! We had my nephew walk up the aisle, who only started walking two weeks prior, so we were a little worried he wouldn’t be able to perform on the day - but he definitely did his job to a tee. Another was just spending those intimate times during the photos, where you could relax as a couple and have fun with the wedding party. Another would have to be Ryan’s speech. hen it comes to choosing a wedding photographer, there are a few really important points to consider. Below I’ve outlined our recommendations for dos and don’ts when it comes to choosing your wedding photographer - this isn’t necessarily specific to a wedding photographer; these tips should be spanned across your entire wedding. DO: First and foremost, choose a photographer who has your best interests at heart. Choose a photographer who wants you to have a fun and memorable day. Choose a photographer who is technically skilled, with backup equipment and a sound knowledge of how the day will run from start to finish. Choose a photographer who will cover the day based on the events of the day, not a time limit. Choose a photographer with a portfolio you absolutely love don’t settle for cheap, poor quality images. Ask friends and family for advice - ask what they thought was good and bad about their photographer, and take that into account when planning and booking. Ask your photographer if you can view more works than what are advertised on their website or Facebook page.
DON’T: Don’t choose a photographer based on price - you get what you pay for. Don’t necessarily take the first recommendation you receive find what you love and work with that photographer to ensure you get the best. Don’t ask friends and family to take your photos for you. he time limit for ordering a wedding cake: most DIY guides will tell you to order your wedding cake just two - three months in advance. Depending on your selected decorator, this is way too short notice. When you pick your venue, lock in your cake and caterer. * Copying other cakes - while pictures on Pinterest are lovely, a lot of these photos are of cakes made in the USA. The buttercream is different; the flowers are different. While we all give you a cake you absolutely love, cake decorating is an art, and plagiarism is real. Talk to your cake artist about creating something unique to you. * It’s a naked cake, so it must be way cheaper - a naked cake actually requires a lot of work. To make sure the crumbs don’t come off in the icing, refrigeration and a special baking technique is required, which is more time consuming. While not as time consuming as hand piping, sugar flowers, or edible lace, it is still a special skill to get it right. * She works from home, so she must be cheaper - WRONG. I still pay a special insurance for cake decorators, I buy quality ingredients, and I need to cover expenses. You are getting a quality cake for the right price. * Wedding cakes must be fruit: WRONG! Your wedding cake can be whatever flavour you like! I do recommend that if you’re having a two or three tier or more, that the bottom be mud to support the weight. I offer five different types of mud cake and 10 different fillings, so you can enjoy your wedding cake. * Your wedding cake should be white: Wrong! It’s 2019, people! Why not have a coloured wedding cake! You can have any decoration you like on your special day. It is about you and your partner. Why not choose something to represent your relationship? Not only are you not limited by design, why not have a rainbow inside? Now, that’s fun. * It’s cheaper to make the cake yourself: maybe. It may be cheaper, but it may not. Unless you are well equipped with tins, scrapers, ingredients, baking paper, levels, dowels, boards, icing and a box, then making your own cake can be a disaster. And no professional will be able to fit in a three tier cake two days before a wedding. Not to mention, who wants to be decorating and delivering a cake on their own wedding day?

Linen suits - casual styles in light tones with softer constructions are still a strong choice for a beach wedding. To achieve a more casual look, forget the jacket and opt for a matching linen vest. Country style weddings are very popular. Suits in blue tones look particularly good in these settings. The blue colour finds a balance between the formality of ceremonies at the wedding and the formality of rituals. The navy suit is very versatile and flatters most complexions.It will also contrast with most surroundings, giving you a more defined silhouette. Garden or vintage weddings - consider an entirely different alternative to the traditional suit. You can try out just a vest and roll up sleeves, or add braces and a bow tie for a rustic, vintage look. Black wedding suits - black is a high-formality colour, mostly suited to formal and black tie weddings. ou specialise in weddings and events; how did you get started? My partner and I were married at Wallamba Downs in September 2017. Following this, we did some research and launched our business with an Open Day last April. We were thrilled with over 100 people passing through the gates. You had your own wedding on the property; did this inspire you to start the business? Absolutely it did. We had not thought about a wedding and event business prior to our wedding. But after several guests encouraged us to share the stunning location and relaxed, rustic vibe, we decided to do some research. Wallamba Downs is located on an 168 acre property; tell us a bit about it? My parents own the property and have done for just over a decade. They are house proud and hardworking, putting all their spare time into maintaining the property and cottage gardens. It is pristine! Wallamba Downs is a working cattle farm situated 20 minutes inland from Forster/
Tuncurry on the NSW Mid North Coast. The property offers a combination of rolling paddocks with immaculate riverflats that flow into the Wallamba River. Tree covered hills surround the property, with Talawahl mountain appearing in the distance. The main farm house gardens complement the rustic surrounds. The PERFECT place for a wedding. You’re a relatively new business; what have been some of the challenges you’ve faced? Beginning any business has its challenges. From designing a website to gaining approval from local council - these are just two of the behind the scenes hurdles that needed to be completed before we could further promote the business and offer the location to the public. You’re a busy mum of two. How do you juggle work and family life? I have a wonderful support network. My husband and parents are second to none. Can astrology affect your relationship? We speak to Jenny Ashton, marriage celebrant, about how astrology can give an insight into your relationship.

celebrant is not the run-ofthe-mill profession. Why did you choose this career path? I considered the idea of being a celebrant for years. Always the romantic and having a love of ceremony, I felt that being a celebrant would be a wonderful way to connect a couple and to tell their love story. It was a comment by my now daughter-in-law after my grandson’s baby naming 11 years ago; she suggested that I should become a celebrant. I began thinking more seriously about idea. I have an inherent interest in people and the power of the spoken word. As a humanist, I am passionate about ceremony and the impact ceremony has had on our lives throughout the ages. It takes a special person to be part of couples’ intimate moments. What personal qualities are essential to perform this vocation? Marriage Celebrants were first appointed in 1973, by the then Attorney General Lionel Murphy. When it came to the selection of Celebrants, “He looked for disciplined professionals who were aware of punctuality and who were efficient in record keeping and legal procedures. Meet Valda MSS has made such a big difference in my daily life. When I first linked in with MSS, my husband had recently passed away, and my kids were worried about my health and wellbeing and how I was going to cope. MSS staff came to see me on Monday to discuss all available services. After talking with staff, I signed up immediately, as MSS could offer all I required, or could arrange others to provide anything they could not. As soon as I engaged with MSS, I went out on my first outing and had the best time ever. MSS has also assisted me in my home with domestic services and a lawn/gardening
service to help me with keeping my yard clean and tidy. When I was sick and returned back home, MSS staff and volunteers visited, to make sure I had meals and personal assistance to assist with my recovery. The most important thing I love about MSS is their social outings, their volunteers and staff who help out to make all the social outings so much fun; I have never laughed and enjoyed myself so much. The staff and volunteers are well trained for any emergency. I know, as I have had plenty over my time with MSS, and they have all been there to assist.

What a trail of history Quota International has ... 100 years in February since Wanda Frey Joiner invited five women to join with her in starting the first International Women’s Organisation. Quota was founded in 1919 as an international service organisation that links members of all ages, occupations and nationalities in a worldwide network of service and friendship. Quota was named by one founding member, paging through the dictionary, who came upon the Latin word "quota," meaning "a share of one part to a whole". The founders latched on to this idea as a true reflection of their mission. As Wanda Frey Joiner wrote in the first edition of the Quotarian magazine in July 1919, "And how more appropriately could we have named a club to express our ideas and aims. Share and share alike. Cooperate and extend the hand of friendship and good fellowship to all members. Band yourselves together by links of unselfishness, loyalty, generosity, fairness and comradeship, all five as many letters constitute the name, and you have a true
definition of Quota". Quota means a share. In 1942 Wanda Frey Joiner wrote, "I am grateful for all you have done to make our dream come true. The basis of happiness is the love of something outside self and rises superior to all conditions. I know now, as then, we will not fail in our devotion and service to any cause - the rights and liberties for all”. An amazing lady. How proud current members of Quota International can be to bring this momentous year to fruition. Quota clubs all over will be holding special parties to celebrate. Taree Quotarians are planning a party on February 16th for Region 11 of Quota International, including Quota clubs from as far north as Coolangatta/Tweed
Heads to Gloucester in the south and west as far as Quirindi. Taree Quota, now 72 years old, has contributed to our community in many ways. In 1947, the first President of Quota was the first Lady Mayor of Taree, Miss Gertrude Richardson, the only woman mayor of a Municipal Council (her classification was real estate). Quota Taree has always been proud of the women who have led us over 72 years - also of the service to our beautiful Manning Valley. At the first meeting, Dr. Corin-Sheddon pointed out the need for a Day Nursery in Taree and suggested it as a project for Quota to consider. An account was opened with the Commonwealth Bank to receive monies paid. This was the first of many projects, including a rose garden at the hospital. These roses have been moved several times, due to extensions. They are situated in the round garden at the entrance to the hospital. Taree Quota had the Hearing Loop put in the Manning Entertainment Centre and in Ormsby House. Another major project was the quiet room Bundabar, when the new library opened. As we work for the hearing impaired, we also instigated a weekly lip reading class run by Judy Cowan, speech therapist, an Honorary Quotarian, and Quota member Elva Hermann, later taken over by Quotarian Tine Varvel. For ten years we raised funds and pleaded with the hospital to allow us to furnish an All Faiths Chapel; at last it came to fruition in 2010. Hearing equipment for the itinerant teachers of the deaf has been a major fundraiser over the years and also collection of used hearing aids to support people in Fiji. We also help finance the deaf camp held for hearing impaired school children attending every year, from Coolangatta to Forster and out west. Another great project is our ongoing help to Manning Gardens Early Intervention Centre. We have been giving a book to the baby born nearest to our birthday in November and flowers to the Mum since 1976. We have worked on many, many more projects locally, as well as supporting Quota Clubs through our Quota World Service program. Our discussion demonstrated the link between prevailing interest rates to inflation and how investors generally struggle if relying just on fixed interest. Because the investment money came from the sale of their home and they met downsizer contribution rules, we managed to establish a superannuation account with part of the proceeds to fund tax fee account based pensions, thus removing the potential of future income tax. By employing diversified assets, the expectation is that their capital will be maintained long term, and income needs easily met. The rules around making a downsizer contribution include placing the money within 90 days of the property sale being completed. Patience is a Necessary Virtue when Investing My son, Jonathon had just finished reviews with three different clients who had been clients of mine for over 20 years, when he walked into my office to remark how well educated the clients were financially. You see, all three clients were able to re-quote what was said to them all those years ago when
their diversified portfolios were established, demonstrating that there was trusted communication and acceptance of what was recommended. All three had experience the highs and lows of markets and the inherent volatility that at times comes with the territory of being invested. Rather than just parking money and suffering from the challenge of declining interest rates, they benefited through increased capital and growing income. I also met with a client that same day. That client relationship was established in 2011. They remembered that I had explained in 2011 that the challenge for them as a pensioner couple was ensuring that the survivor of them could manage financially on a single or even a part pension in years to come. A managed fund was established in 2011, where very little was taken as income and the rest reinvested for the needs of the survivor. They also managed to build up some further savings since 2011, which resulted in their modest investments growing by 43% from savings and fund performance over that time. They lived somewhat frugally, admittedly, but they too recalled the reasons for the strategy and the importance of being patient. Having a strategy is vital when it comes to funding retirement, but patience and resilience when equity or property markets take a battering is essential for investors to reap the reward of being invested, rather than being literally parked and at the mercy of interest rates. A future edition of “Money Matters” will talk about “downsizer rules” and some associated strategies.

HIS PASSION FOR CHILLI AND HOW HE GOT STARTED IN A BOUTIQUE INDUSTRY.
ell us how you came about starting Australian Extreme Chilli Condiments? In 1995, I started a window and pressure cleaning business. The business was growing, and success was unfolding. This success came at a cost. In 2014, I received news that I had over exerted himself for too long with this high impact, labour intensive work, and spinal surgery on my neck was imminent. I was forcefully advised to seek alternative employment. Whilst recovering from surgery and watching a Jamie Oliver DVD on cooking with chilli, a “light bulb” went off in my head, to create different chilli infused salts and sauces. Australian Extreme Chilli Condiments was born. We are now proud sponsors of the “Weber Kettle BBQ Team Australia” and “Symens Family Motorsport”. Where did your passion for the humble chilli begin? In 1984, I had developed a friendship with an Italian colleague, at a large telecommunications company. Joe used to eat chillies every day with his lunch. “How hot are they?” I asked. “Not too hot,” he replied. He offered me one. I threw it in my mouth, and he laughed. My eyes watered and I started hiccuping, much to the amusement of my workmates. It was at that moment, my love for chilli was born! After leaving my job in telecommunications, I entered into the hospitality industry, where I spent the next 10 years. This is where I developed my new passion and mastered the art of cooking. It’s a family run business; who’s involved? I’m responsible for planting, picking, watering and fertilising. I also make all of our products by hand. I bottle, package, post internet orders, restock our distributors and stockists and finally, I ensure quality control. Rachel, my beautiful wife, is responsible for keeping the accounts up to date and hand making our range of “Australian Extreme 46 Manning-Great Lakes focus
Apparel”, existing of aprons, bandannas, hair scrunchies, hand towels and more. Jordan, our eldest son, is the official heat rating man, due to my very high tolerance to chilli. Jordan gives us his opinion of what would rate as hot or not. Sophie, our youngest daughter, is responsible for labelling of products, the official time keeper when setting up and packing away, sales and taste testing at events. Last but not least, Maureen, my beautiful mum, waters our plants while we’re at events and festivals. Together, we are “AUSTRALIAN EXTREME CHILLI CONDIMENTS”. Tell us a bit about the process; what goes into making your sauces? Our range of chilli infused sauces, salts and BBQ rubs are all gluten free and vegan friendly (except our Get Nutted, which contains crustaceans). Our products do not contain emulsifiers, preservatives or artificial colours/ flavours. We currently have nine sauces, five salts and 11 BBQ rubs. Our sauces range from “Mild to Wild” in heat. Our mildest sauce is “Blushin Berry” - a combination of strawberries, blueberries, blackberries, raspberries, lemon juice and a touch of chilli and sugar to balance the tartness of the berries. This is delicious as a dessert sauce or as a glaze on pork, lamb, duck, turkey or chicken. Where do you source your chillis and other ingredients? We grow the majority of chillies at our home in Krambach. Friends and family also grow for us: Ross and Karen Bailey from Bayleaf Chilli and Herb Nursery; Todd Ward from Todds Hot Chilli; a friend who lives in Bulahdelah; and my dad. Phil Warren of Boogaloos Nursery grows our fresh herbs and fruit. We love supporting fellow family businesses. Is there an art to growing chillis? Do you have to be a green thumb, or is it relatively easy?

I very much enjoy the clapping of hands in appreciation when we near the completion of each trip. I enjoy providing access to tours, performances and events to those who wouldn’t normally be able travel on such adventures. I enjoy seeing my guests making new friends and in some cases, close relationships whilst on tour. Our on-tour dinner banquets are a great example where these situations arise. My highlight of the past year was taking 46 guests on a stroll through a wild seal colony at Seal Bay on Kangaroo Island - one of the only two places on Earth where you can walk amongst rare Australian Sea Lions. Can we have too many tourists? A destination’s perceived success is almost always tied to visitation. An increase in visitation can help destination leaders justify funding for their organisation, because they can reference the direct economic benefit their industry receives.
H
owever, as tourism continues to grow rapidly worldwide, more and more of today’s destinations are grappling with the challenges of overcrowding, or “overtourism”. Overtourism describes destinations where hosts or guests, locals or visitors, feel that there are
too many visitors and that the quality of life in the area or the quality of the experience has deteriorated unacceptably. It’s a pattern that is playing out in many muchvisited parts of Europe and beyond. Anarchists in Barcelona captured the headlines recently by holding up tourist buses in protest against the cost of living that they say is inflicted by tourism.
Can anything be done to get the visited and visiting into a more sustainable balance? Whilst many in the industry would probably say no, I believe that tourism is what we make it; Barcelona does not inevitably have to be the victim of mass tourism. Certainly governments have a major role to play, to ensure adequate and appropriate infrastructure in tourist areas, using taxes to shape visitor demand etc. But most governments prefer things as they are. Why wouldn’t they? Tourism is now the largest employer on the planet, with one in every eleven people relying on the industry for work. Unsurprisingly, few governments want to put a squeeze on such a source of wealth. Fortunately, more industry leaders are recognising that tourism yield is becoming more important than sheer visitation numbers and are challenging the notion that increased visitation is always a good thing. Better yield is good for business. More dollars per visitor means that a destination needs less visitors to thrive and can avoid the dangers of mass tourism. But it goes further than this - a place is more than a business or a product to bring to market. As Steve Jobs once said, “Marketing is about values”. Healthy tourism therefore means more than just visitation or yield. Destination strategist Frank Cuypers believes we have forgotten that the essence of tourism is a community-based model in which every host
treats their guest the way they would want to be treated when they visit another country as a guest, and vice-versa. Of course, many destinations aren’t currently struggling with mass tourism or unsustainable visitation. Why should they be concerned? I guess the answer is to not assume it can’t happen here. Only last year Byron Bay held a “Beyond The Byron Boom Tourism Symposium”, in an attempt to raise awareness of this issue. The local community has had enough. “We are not going to sit by and watch our housing stock disappear, our amenities disappear and our cultural and community integrity disappear”. With our “hyper-seasonality”, Barrington Coast to a degree also experiences some of the negative elements of overtourism. Whilst our summer period currently keeps most of our businesses afloat, I am sure most would prefer a more even seasonal visitation, combined with a higher spending visitor. We should all be aware that one wrong decision can cause damage. Our region’s Destination Management Plan therefore makes very clear provision for ensuring that seasonality and regional dispersal is addressed as a priority and that new visitor markets are targeted specifically for their greater propensity to both visit out of high-season and to spend more once they’re here. The DMP also firmly reinforces the interdependency between destination promotion and destination development, which cannot be ignored.

upspAcE Taree We’ve seen amazing changes in the way we work, with many small and medium startups operating in the “virtual” or online space. In larger cities, this has seen the rise of coworking spaces and “hot desk” opportunities. One enterprising local businessman, Kyle Brown, has embraced this new way of doing business by establishing a unique co-working space called “UpSpace”, right here in Taree.

i Kyle. Can you tell our readers about your background and your connection to the beautiful Manning-Great Lakes? I was born in Taree 30 years ago and grew up here enjoying all the things the Manning Valley had to offer - the calm lifestyle, the weekends at the beach and on the river and the close knit community that you just can’t find in bigger cities. I then moved away to Sydney and Newcastle to study what ended up being accounting after a few years in hospitality management and property valuation, before eventually returning home to start my own family with my wife, Cristen, who is also local. Co-working is something that’s really gaining in popularity, and we are seeing coworking spaces emerging in cities and major centres. What is your take on this concept? There are two main benefits to co-working, and they are the reduced costs and overheads, and the community benefits. The reduced costs is the main driver for co-working in the large cities, as through access to these co-working spaces many smaller companies are able to afford an office in the main CBDs, as well as allowing access to a wider array of resources such as meeting rooms and technology, including video conferencing. However, with lower rents in the Manning, although UpSpace is cheaper than renting your own private office space, it is not as significant as our larger city counterparts. The main benefit we see for local businesses is the ability to gain access to the community and the network of other people using the space. For example, you may be having an issue setting up the website for your new business - feeling frustrated. If

NORTEC Stories Success
All too often we hear stories about young people having to move away from the Manning-Great Lakes in order to find work. However, as we discovered recently, there’s a fantastic initiative that’s been set up by McDonald’s Taree together with Nortec Taree, a local employment Service provider, known as “A Day in the Life” - which provides long term unemployed locals with valuable work experience and training to improve and increase their future employment prospects, and, as a result, the opportunity for long-term and sustainable employment. We spoke recently with Colin Russel, Monique Barber and Rebecca McKellar about their involvement in this initiative and their career journey so far.

i! Please tell our readers a bit about yourselves. Colin: I have lived in the Taree/Forster area most of my life. I have a partner and three children - who are all a big part of my life. Rebecca: I’m married with four children. We moved from the Hawkesbury to the Manning Valley in 2015, with my husband becoming the carer for his mum. Monique: I’ve been living here all my life. I come from a happy-go-lucky hard working family, and I’m an only child. Can you give us a snapshot of your education background, together with the challenges you faced when trying to obtain employment in the past? Colin: I attended Chatham High School until Year 8, when I left to work as a diesel mechanic, which saw me working in a few different jobs throughout my teens before taking on work in the family business. I actually found it quite easy to gain employment, but sustainable employment in the area was certainly hard to get! Rebecca: I left school at the end of Year 11 to marry and raise a family. My husband worked so that I could be a stay at home mum to our four children. When our youngest child went to school and I started to look for work, I found it very daunting! I had no idea what to put in a resumé, as I had never worked. I knew I could do lots of things (as a mum, you do lots!) but I found
it hard to gain employment, as I had no work experience, or the certificates that certain jobs required. So, my options were very limited. Grill ‘n’ Graze is good to go. The Global Care trailer is the latest addition to Resonate Church in Taree, and its members are now ready to be of service to our community during times of crisis.
M
ates helping Mates is the Global Care logo, and Graeme Armstrong and Garry Tyrie are two mates who have worked together for around 10 months to give life to the Grill ‘n’ Graze trailer. Graeme, what is Global Care, and how will the trailer help our community? Global Care is the social justice and disaster relief arm of the church, and this trailer will hopefully be used to service anywhere between Newcastle and Coffs Harbour. The idea is that when there is a crisis, such as a bush fire, and where there is a need for emergency food and power, we can be asked to grab say, 10 kilograms of sausages, and get to a location to feed fire fighters and people involved in providing emergency help to our community. It’s basic, practical help that can support people when they are tired and hungry. The Grill ‘n’ Graze trailer looks wonderful, but I understand it needed a makeover after its delivery. Garry and I have worked on it, as much as our old backs would allow, for about 10 months. It came to us with a broken four-burner barbecue in the back and a couple of gas cylinders tied to the back of it. So, I’ve fixed the gas line, we have kitted it out with a new barbecue, put in a gas hot water service, we’ve got a stainless steel water tank mounted underneath it. There’s also a sink, so we can

wash up, a little stove, and a generator, so people can charge their phones, or we can provide power if other equipment needs to be charged or operated. We’ve got some lights that need to go in so we can operate at night, and a long-term goal is to have refrigeration. But right now, the trailer is at a standard of safety and usefulness that means it is ready to be used by our church members, but we are also happy to talk with other groups or organisations who may also want to use it for community service. Resonate Church is known in the Taree community for its hands-on, practical community support; the Global Care Food Pantry, the Global Care School Snack Packs and its Work for the Dole frozen meal program. Graeme, what are these initiatives - and why have them? We are not “Sunday Sitters”. In the book of James it says, “Faith without works is dead” we are meant to be in our community, and we are meant to be helping people in need! There are so many vulnerable people and families, and our Global Care Food Pantry helps people. The food is trucked up from Sydney and then provided to the community for next to nothing, compared to what they would have to pay for the same items in a supermarket. The pantry is open on Thursday and Friday from 9am until 1pm. Garry and his wife, Shirley, also provide snack packs to some of the local primary schools, because a lot of children come to school without having had breakfast or may not have
