i Erin. Introduce us to “Make a Difference PMQ” … Make a Difference PMQ is a not for profit charity organisation that is based in Port Macquarie. The aim at M.A.D is to assist disadvantaged people living here on the Mid North Coast. Our main focus at the moment is to raise the funds needed to get an Orange Sky Mobile Laundry Van operational here on the MNC. What is the Orange Sky Mobile Laundry Van concept? Who are the brains and heart behind the project? Best mates Lucas Patchett, 22, and Nicholas Marchesi, 21, are co-founders of Orange Sky Laundry, Australia’s first mobile laundry service for the homeless. They were named the 2016 Young Australians of the Year for their unique concept. What is the aim of the van ... what will it do, and who will it help? The Orange Sky Laundry van provides the homeless free access to washing machines and dryers, whilst it also encourages conversation and community connections. The van will partner with local community services, so that we can provide the homeless community with free laundry, food, and most importantly, positive, genuine and non-judgmental conversation. Through laundry and the power of conversation, the Orange Sky Laundry aims to restore respect, raise health standards and reduce the strain on resources in the homeless community. How was a need for this service identified? M.A.D was seeking a community group or

project that it could get behind and provide assistance to. After six months of research, many phone calls and meetings with professionals in our community, including the Hastings Homelessness Group, it was apparent that homelessness is a major concern on the MNC. Homelessness at any age is concerning; however, the number of children/teens couch surfing is alarming. After researching various concepts, we liked the model and values of OSL. We contacted the Co-founders and requested to partner with them to get a van operational here. The boys were extremely excited that we were interested in getting a van operational here on the MNC. What areas/towns will the van service? The van will be based in Port Macquarie and will service Taree, Laurieton, Port Macquarie, Wauchope and Kempsey. Unlike a fixed service, the advantage of the van is that we can take the service to the people when and where it is needed the most. This sounds like a brilliant project, but it would come at a cost. How have you been raising funds to get the concept of the ground ... and where do you stand in terms of the funds/equipment you have available at the moment? Yes, it is a big undertaking financially, but so worthwhile. We have been working with schools, universities, church groups, businesses and non-government organisations to procure the funds for the van. M.A.D has been fundraising now since November and has raised $6,500. We keep telling people about the wonderful facilities we have here, but we are talking to our residents Harry and Lorna Hammond, so let’s ask them to give their perspective of life at Sunrise.
W
e had some lovely homes throughout our teaching careers in NSW and eventually retired to Forster. But our home started to become a burden, and we had to investigate other options. Our home became less pleasurable, the garden work was no longer easygoing, and we started to feel alone when health problems came along. Why did you choose Sunrise Supported Living? We needed help, comfort and companionship. We heard about “Supported Living” and that’s what we experienced when we came to live here in early 2015 - supported living, a caring and loving community. What is it about this lifestyle that is important to your needs? We have fitted in well to this wonderful lifestyle. We do not use all the services, but it is comforting to know that they are available when we require them. Lorna says, “I often use the village bus to do my weekly shopping, which is very convenient. I don’t have the added burden of trying to find parking, particularly during holiday periods when there are so many visitors around.” We also have functions organised, including musicians and bush poets. Over the Christmas period, pop-up shops were arranged which enabled us to do some of our shopping “at home”, rather than having to go into the chaotic shopping centres. We were also fortunate to have been host to the 2016 Melbourne Cup while it was enroute to Melbourne during the latter part of last year. We all got into the spirit of the festivities by dressing up for

I was actually lucky enough to be born in the Manning Valley region and able to grow up as a part of my father’s livestock transport business, which taught me an awful lot about running a successful business at a young age. I currently reside in Taree with my supportive husband, Curtis, where Illuminations Candles and Scents is now based. How did you develop an interest in candles and beautiful scents? I have always been interested in modern home styling, as a result of my home renovation background. I love making spaces feel complete and creating a welcoming atmosphere and ambience; admittedly, often amongst chaos! I believe that your home should always have at least one escape place, because let’s face it, life can get hectic! Wether it be your living area, bedroom or bathroom, I have always found this relatively easy to achieve with a few candles and minimal, affordable, home styling. Candles are amazing, as they serve so many purposes. Sometimes, something as simple as a certain scent, from a freshly lit candle, can evoke feelings of calmness or memories of relaxation. Remember, that one time, in Fiji as you inhale the delicious scent of Tropical Island Get Away. Oh, please, take me back, Vinaka! Enter the business idea for Illuminations Candles and Scents. I constantly had clients purchasing at home pamper gifts for their friends and family, and I was often being asked for add-on gifts such as candles to further the at home spa experience for their loved ones. You actually produce a range of gorgeous products. We also stock stunning reed diffusers for when flames are not permitted or practical, wax warmers, melts and of course, we do custom orders. All you need to do is ask! Being in business, sometimes road blocks and hurdles are thrown in your way and often, they can be hard to overcome. Let’s face it, that’s life, and we all go through it at some stage or another. So make sure to keep an eye out for the official launch on Facebook! I’m sure that many people are curious to know why you’ve called one of your scents “Monkey Farts”. What does it actually smell like? As much as I would love to take the credit for the naming of the Monkey Farts scent, I can’t. It is actually the name of one of the fragrance oils that I use from my supplier. But yes, when showcasing the range at markets, it is always a favourite and one of the first scents to be tested on the table. However, despite the name, and as horrible as it sounds, it is actually a sweet blend of banana and forest berries. It’s delicious! What raw products do you use to produce your creations? At Illuminations, we like to keep things as natural as possible. We use pure soy wax and quality essential oils, lab calibrated candle fragrances and rice paper reed diffusers - all of

which are free from animal testing and vegan friendly. When you are not busy working with wax and aromas, what other activities keep you busy/what other business interests do you have? As discussed previously, Illuminations stemmed from my involvement with The Body Shop at Home. I have a team of 65 beautiful ladies predominately based in The Manning Valley and Great Lakes area but span from far North Queensland to Melbourne. However, most locals know me as a business marketing consultant with Localsearch, where I work with local business owners to devise marketing strategies to promote their businesses through online, mobile app and print directory advertising. A career that I adore, as I get to work with a team of wonderful Localsearch representatives and amazing clients. Stupende and String Musicians Australia in Tuncurry’s beautiful John Wright Park on March 4. Rotary Great Lakes’ Club President Brian Bruton tells us more about the event …
H
i Brian. We heard that last year's Opera by the Lake event was a huge success. What was some of the feedback you received? We had a capacity audience, which was fantastic for a first time event. We received a lot of positive reviews, such as: “Fabulous event. All performers were superb”.” A well organised and run event”. “Delicious food”. “Great location”. “Volunteers did a great job - the local SES, RFS, St John Ambulance, TAFE students, Great Lakes Pearl Dragons and Rotary members and their families. It was a real community affair.” “Disabled parking. Seating was excellent and public conveniences were suitable located.” We had a raft of attentive volunteer ushers offering the audience free cups of cold water and making sure everything ran smoothly and will repeat that method this year. Where will the event be held this year? The event will be held at John Wright Park, Manning St, Tuncurry, overlooking Cape Hawke Harbour. Patrons can enjoy the fine food, wine and music all brought together in this beautiful setting with a predominant nor-easterly breeze and the backdrop of the blue waters and iconic twin towns bridge connecting Tuncurry/Forster. Run us through the event program ... Gates will open at 1:30pm. Enjoy the rich sounds of a trio of Australia’s finest string musicians playing Mozart and Bach from 2:40pm, while relaxing with a glass of wine or a cold drink and enjoying a freshly made cheese platter, sandwiches or local oysters. Food and beverages will be reasonably priced and offered for sale until 3:50pm and again during interval through the main performance. At 4pm a unique musical experience will begin, with a superb performance by Voci Stupende. These young opera singers will deliver arias, solos,

duets, trios and ensemble pieces from some of the world’s best known operas and a couple from musicals. This recital will feature such treats as a poignant Ave Maria, an enthralling lover’s duet from Puccini’s La Boheme, the very famous and much requested Pearl Fishers duet for tenor and baritone, rousing ensemble pieces from Strauss and Bizet’s Carmen, musical theatre from Phantom of the Opera and The Prayer, made famous by Celine Dion and Andrea Boccelli. You’ll be enthralled by the fresh vibrant voices of these young singers, all classically trained at the Sydney Conservatorium of Music. The event will be finished by 6pm, leaving plenty of time for dining and socialising at one of our local restaurants or clubs. Tell us more about Voci Stupende and String Musicians Australia ... Voci Stupende staged their first three performances in Armidale in June 2013 (at which time all the original members were at the Sydney Conservatorium of Music). The performances were brilliantly received, with standing ovations after each recital. Such success inspired Hugh and Jane Fraser to incorporate Voci Stupende as a not for profit organisation. Their aim is to publicly offer audiences the privilege of hearing stellar young voices. The project also gives emerging singers the chance to experience wider performance opportunities in different venues. raig volunteered his time and expertise to help when Maggie the Foxie, who had been recuperating from a life threatening illness, fell down a densely wooded cliff face at her home in Bootawah on Monday morning. A number of men had tried unsuccessfully to find her in the dense growth by abseiling down the cliff face. Because of her depleted physical condition, time was fast running out. Thelma Ferris, Maggie’s owner, made a desperate call to Craig in a last ditch stand to find her beloved “pup”. Craig immediately agreed and arrived at the remote property in less than 45 minutes. Within a few minutes, Maggie was located and her “father”, John Harris, was able to climb to the precarious spot where she was sheltering and carry her to safety. Apart from
being very thirsty and tired, Maggie survived this latest adventure unscathed. Thelma and John wish to publically thank Craig for his generosity in coming to their aid at a very trying time and to applaud the technology that he has embraced, primarily in his commercial photography business based in Forster, but to use it so willingly to help members of the community in their hour of need. Craig explained that a colleague in Gosford had very recently been instrumental in locating a lost little girl using his photography drone. It appears that this new technology, together with very generous professionals who know how to pilot them, is making a great contribution to our communities. Story supplied by: Fiona Campbell.

ANNE ARRIVED IN OLD BAR THE WEEKEND OF THE 2016 JUNE STORM. MOST DAYS SINCE THEN SHE HAS TAKEN HER CAMERA AND LABRADOR TO THE BEACH FOR A WALK, AND WATCHED THE BEACH REFORM. “I have really enjoyed capturing the ‘art’ of the beach as sand and rocks are moved about by water and wind,” she said. Anne grew up on the western plains of NSW, where she learnt to appreciate the enormous skies and the morning and evening light displays. “Landscape is new to me; my passion has been
macro photography,” she said. “It has been a joy capturing those big skies and sandscapes.” Old Bar at the Bean Bar is Anne’s first solo exhibition. The exhibition has both canvases and framed prints and runs from 14th January to 23rd March at the Bean Bar Café, 1 Pultney St, Taree.

i Kristen. Tell us a little about yourself and your family's life in the Manning ... My husband, Tony, and I are originally from the Central Coast. After having our first two children, we were in search of a more child friendly life away from the hustle and bustle where we could raise our now three young children, and we believe we found it right here in the small town of Old Bar. We feel so incredibly lucky in such a beautiful beachside village with so many amazing local people around. Your beautiful four year old daughter, Tae'ejah, is an up and coming star in the modelling world! Her name is beautiful too - what's its significance? Yes, she sure is! The next Jennifer Hawkins - "watch this space"! Ha Ha. We get asked this question all the time. We actually made her name up (on the train on our way to Big Day Out music festival about a year before she was born). I wanted her to have a unique name; something that made her different from everyone else and stand out. Perhaps I knew modelling was her calling, and we absolutely love it. Tae'ejah is actually learning to spell her name, and she is almost perfect at her apostrophe now - it's really sweet. For short or when people can't pronounce her name, we just call her Tae. Describe Tae'ejah's personality - what's she like? TAE IS A BIG FAN Tae is a funny little girl, very sweet and kind also quite the OF DRAWING diva - and I have no idea why with two brothers; one younger AND SINGING. and one older. LOVES THE BEACH. What are some of the most remarkable shoots/companies Tae’s been involved with? She has modelled a lot, but a few of her standouts are Baby Gap, Guess, Dollcake. Tae'ejah won the face of the Paul Frank Dream Team in 2013 and spent a year daily for photo shoots in different locations in the clothing/accessories they have been sent on the wall in Big W. i Neil. How long has the Beatles Festival been going? This will be our fifth year. Are there any changes to the previous four years of the
festival? Yes, this year the Car Show ‘n’ Shine at Westport Park will be on over two days instead of just Sunday. It also has the themes “Beetle Mania” and “British Invasion” to welcome Vee Dub and British car owners to join the Fords, Holdens, Muscle Cars and Hot Rods to compete for the trophies and prizes What entertainment do you have planned for the festival? Our headline act this year is “Beatle Magic”, a fabulous Beatles tribute band from Sydney. They will be performing concerts at the Laurieton United Services Club on Friday 11th and at Port Panthers on Saturday the 12th. We are also excited to have the “Australian Army Band” from Newcastle performing at the Glasshouse forecourt on Saturday morning. Who are the guys posing with the Big Red British Post Box, and what part does it play in the festival? They are members of “The Day Trippers”, one of six local bands performing at Westport Park over the festival weekend. The Big Red Post Box will feature at all the festival events. Visitors to the festival will have the opportunity to win a $500 cash prize, courtesy of Coast Front Realty, simply by “posting” a survey form in the Post Box. Are children welcome at the festival? The Day Trippers is a band dedicated to playing 60s-style rock ’n’ roll, mainly Beatles as the band name suggests, but also the Easybeats, Kinks, Rolling Stones, Shadows, Roy Orbison, Eddie Cochrane, Queen, Dire Straits, and more. The three band members who make up The Day Trippers bring their own unique musical pedigrees to their shows: Guitarist Michael Spooner spent time touring as “George Harrison” with the “Australian Beatles Show” both in Australia and overseas. Michael is also equally as comfortable in the orchestra pit, lending his guitar talents to musical theatre productions such as Chess, Bye Bye Birdie, Oklahoma, Sweet Charity, Joseph, Annie, and most recently the Port Macquarie Player’s Theatre’s 2016 production of Grease. any have been drinking “Anything But Chardonnay” for the last number of years as a result of the overoaking of the wine, which makes you feel like you are licking a plank of wood. But for those who have hung onto the love of Chardy throughout the last 10 years or so, you are now being vindicated with a huge swing in public approval back to Chardonnay. Chardonnay underpins many of the world reknowned wines, being the variety used to make White Burgundy, Chablis and Champagne. These wine are labelled according to the wine growing region, rather than the grape varietal used to make the wine. In Australia, we do it differently - typically labelling our wine according to the grape varietals.

Chardonnay has been the backbone of Australian wine varietals since the ‘70s, during which time it established its popularity in the industry due to its disease resistance and hardy temperament and early ripening characteristics. It performs well in a variety of climatic conditions, from the humidity of the NSW coastal and Hunter regions, the cooler climates of the southern NSW coast, Yarra Valley, Adelaide Hills and Tasmania, to the more intense heat of Barossa and Margaret River. With this climatic adaptability comes diverse characteristics in the end product. Chardonnay’s recent history in Australia is reflective of the collective personality of australian winemaking. Unlike traditional wine regions of the world, Australian winemakers have been adventurers of winemaking, forging a
reputation for the new and innovative. The use of new and old oak, malolactic fermentation, whole bunch pressing, wild yeast fermentation ... There are endless creative winemaking techniques being applied, which provides the diversity of characteristics in our wines. Chardonnay peaked in popularity in the ‘80s, when everything was big - it was the decade of excess and that came through in the wine we were drinking. Big oaky, buttery, toasty, bold loud fruit coupled with bold, loud oak. Long lunches, generous expense accounts, big hair, broad shoulders and bold wine. In the ‘90s, life changed. The fashions and fortunes became more restrained, and so did our collective wine preferences. We moved to the Sauvignon Blanc, that was arriving on our shores from New Zealand. This wine was a complete opposite of the bold oaky Chardonnays, and the “ABC” acronym (anything but chardonnay) was on everyone’s wine sipping lips. Since this time, Chardonnay has still been strong, but has definitely taken the back seat while we have drifted to other varietals such as Pinot Grigio. This downswing in popularity caused winemakers to rethink their treatment of Chardonnay and they have listened to the white wine drinkers, emerging in recent times with a renewed style of wine, without the punchy, buttery, dominating oak ... Elegant wines with restrained use of oak and in many examples, “unwooded”. Chardonnay is definitely back in a big way and accounts for more than half the white wine production in Australia. It isn’t going away and is definitely worth revisiting if you haven’t been willing to go back there. manning-great lakes focus.

aving an active two year old, how does family life mix with being the owners of one of the biggest franchises in the country McDonald’s? We are very fortunate to have an incredible business partner in McDonald’s. We work hard to represent the McDonald’s Brand in the best way possible, and at the same time have the flexibility to ensure family always comes first. As one of Forster's largest employers and the largest employer of youth in the area, what do you think has driven the growth of your business? Business growth is two-fold. McDonald’s develop exciting platforms, and we hire and train the best talent to execute them at store level. We have seen McCafé Drive Thru, which has totally transformed our breakfast business and 2017 looks exciting, with the continued development of our Create Your Taste business - this being
available in Drive Thru in March. McDonald’s offers outstanding training and development opportunities for its staff. Tell us about those and how you help your employees to advance their career and future prospects? We offer courses from Cert II through to Advanced Diplomas in Management. We have employees in school completing a Cert II and III as part of their HSC, and managers working towards Advanced Diplomas. into your busy schedule to prepare for this? I’ve achieved it only through dedication to hard work ... I’m not interested whatsoever in living life in the grey comfort zone. I did my first Ironman in 2014 after a lifetime competing at the top level in Surf Lifesaving. Ironman Triathlon attracted me, as it’s the hardest one-day physical test of mind and body available. I don’t do it just to finish; I want to see how hard I can prepare for it and even more, how much I can suffer on race day. I qualified for the World Championships in my first attempt in 2014, and again at my next attempt last November, for this coming year. I’ll be competing to honour the sacrifices my family make by leaving nothing on the road. Thanks Hayden.

i Ian. FOCUS readers who are familiar with your career as a violinist would know you travel constantly, touring and performing. Where in the world are you at the moment? I’m actually at my home in Sydney. I’ve just returned from Germany, where I was performing with guitarist Tommy Emmanuel for a month in some beautiful theatres and concert halls. There’s so much heritage and tradition in those old European opera houses; it was such a thrill. I was Tommy’s guest for 20 concerts. Congratulations on your recent ACE award as 2016 Australian Instrumental Performer of the Year. It’s great to see that you are bringing another big show back to The Glasshouse and Manning Entertainment Centre on 11th and 12th March. Thank you! Yes, I’m absolutely thrilled to be presenting An Afternoon at The Proms together with 35 performers. We have a complete new program for 2017, where we’ll be giving a salute to the famous BBC Proms Concerts of London’s Royal Albert Hall. Who will be in the show with you? THE FRUIT SALAD PLANT THE FRUIT SALAD PLANT IS A TANTALISING DELICIOUS TROPICAL FRUIT ALSO KNOWN AS MONSTERIA DELICIOSA. THE NAME SAYS IT ALL!
T
he plant was quite commonly used indoors, as it required low light conditions and the large Swiss cheese, glossy green leaves that can measure up to 60 cm wide helped its popularity. This plant has gone under the radar for too long. It is a hardy plant that is coming back into fashion and has an attractive, unique leaf pattern that fits in well with other large leafed plants. Sometimes they can be discovered thriving well in gardens with abundant fruit set. The fruit salad plant is a beautiful addition to a corner garden, where it will easily fill the space with its greenery and bold leaf shape. Fruit salad plant grows well in a mostly shady position with little sun, any average soil will do, and it can benefit with some added goodies such as compost. To establish the plant after planting, initially provide frost protection to get
it through the cooler months. For best growth results, provide ample moisture in the summer months. Overall, they are easy to grow and not fussy. The fruit matures in one year from emerging, measuring to 25 cm long - 6 cm wide. It ripens during February - March. It’s important to allow the fruit to fully mature on the plant and allowing the small green outer segments from the base to fall away before cutting. Store in a paper bag, where a section will continually ripen each day, exposing the cream coloured, edible portion. Fruit is eaten fresh, and the flavour is a mix between fruit salad, banana and pineapple. The small black pieces found amongst the flesh can prickle the throat if the fruit is unripe, but becomes less obvious when the fruit is picked fully mature and allowed to ripen. Happy growing!

Anna Salleh and Guy Strazz will bring the emotion and passion of Brazilian music to the Mid North Coast on their upcoming tour. With powerful vocals and sublime guitar mastery, this duo is a perfect match …
H
i Anna. When we last spoke, you were touring around the Mid North Coast in 2015. How much did you enjoy this experience, and what type of feedback did you receie? The band and I got a lot of love from audiences in 2015. They were literally dancing in the street at 5 Church Street in Bellingen, and the Port Macquarie Glasshouse staff said people were coming in the next day just to tell them how much they enjoyed the show. The tour also played a key role in getting the band studio ready for my latest album, which was done - old school style - in one day, with just one or two takes of each tune. In fact, the album's cover images were taken during the Mid North Coast tour! [http://www.cdbaby.com/ cd/annasalleh2] Remind us again why you love the music of Brazil so much ... The combination of syncopated African rhythms, melancholic yet uplifting melodies, poetic lyrics and jazzy harmonies are a winning combination, as far as I'm concerned. This music has such broad appeal - it seems to speak to the heart, whatever your age, and no matter what walk of life you are from. You're touring again, this time with brilliant guitarist Guy Strazz. How did you and Guy meet and discover your shared passion for Brazilian music? Even though I discovered bossa nova as a child, and I got a guitar for my 12th birthday, it was only in the past 10 years I learnt how to play Brazilian music. I started off teaching myself from a book, but

then a friend recommended I get some lessons from Guy Strazz. Guy is an award-winning guitarist, composer and recording artist, who is well known for his albums and collaborations with artists as diverse as Slava Grigoryan, Ashok Roy, Dale Barlow and Vince Jones. Instead of using Google and Facebook to track down Guy, I went to one of his gigs - the hit musical Keating! at Sydney's Belvoir Street Theatre. I wasn't able to catch him after the show, but I did write a note for him with my number on the back of a coaster and left it withn the barman to pass on to him. The rest is history! I wasn't the most diligent guitar student since my singing has always distracted me from becoming a guitar hero. But Guy taught me a lot - about stagecraft, as much as anything else. Lessons were a real conversation, and this good communication laid the foundation for what has now become a partnership. Like me, Guy has also had a life-long love affair with Brazilian music and encouraged me to go to Brazil - which, as I'm fond of saying - is the best thing I've ever done in my life [http:// www.abc.net.au/radionational/programs/earshot/ bossa-nova-beyond-how-cult-film-inspired-mymusical-quest-to-rio/7672986]. After returning from Rio, I started performing Brazilian music in earnest, developing my show and a successful residency at Sydney's Foundry616 jazz club. With Salleh & Strazz, you'll experience intimate guitar and Portuguese/English vocal versions of classics like Aguas de Marco (Waters of March), Chega de saudade (No more Blues) and A Felicidade (Happiness - from the film Black Orpheus and later made famous by singers like Astrud Gilberto). But as Guy says, the duo has both "delicacy and power". You'll also be treated to lively rhythmic samba, playful of Choro (an instrumental-based Rio de Janeiro music style that came before samba), some Afro-samba, a haunting ballad about the “flower and the thorn” by one of the most important singer/ composers of Brazilian samba, Nelson Cavaquinho, and even some music from Cape Verde, sung by the late great Cesária Évora. All this, topped off with a sprinkling of new and preloved glorious non-Brazilian ballads and cheeky swing tunes. "We unravel the songs, adding colourful nuances so that they become interpretations as opposed to covers," says Guy. What type of vibe or atmosphere do you feel you both manage to capture on stage? The mix of repertoire in the show, the different moods, and the way we approach the music is guaranteed to entertain and engage the audience. Learning the songs has brought with it strong experiences of joy, sorrow, irreverence or beauty that are now a part of me. I see my work as a musician and performer as interpreting and channelling these feelings to audiences - no matter what language I sing in. What do you think are your individual
strengths as performers? I think Guy puts it best: "Our rapport with the audi-
ence is based on the understanding and feeling of the music. Anna’s range of emotions is clearly a feature of the show, as are Guy’s multiple guitar skills and engaging solos". Your Mid North Coast tour will take in Kemspey, Wauchope and Taree. What are you most looking forward to about these gigs? We're looking forward to staying with the locals and connecting with as many of you as possible - both on and off stage. MAYBE IT’S BECAUSE WE RUN ON A HIGH, ALL THAT ADRENALINE GIVING US MORE ENERGY BECAUSE THERE IS A BAG OF GOLD AT THE END OF THE RAINBOW IN THE FORM OF A BREAK. I HAVE ALWAYS BEEN A FAN OF THE MINI BREAK - A FEW DAYS SPENT SOMEWHERE CLOSE, SO WE DO NOT SPEND ALL OF OUR TIME TRAVELLING TO OUR DESTINATION.

are so blessed by the beauty of our region, and there are so many choices of great accommodation. This holiday is a bit more than a mini break, and a bit further afar; for me, three weeks is a mega break, and after the heatwave we are experiencing, Oxford is going to be a bit of a shock weather-wise. I am almost all packed and as long as I can get my luggage down to 30 kg, I will be pleased to get on that plane on Friday. Back to what is great about our region; as you know, I have always been an ambassador for locally grown produce. It is not only tastier, but it is much more sustainable for our planet and it allows us as restaurateurs to tell the story of our region through the food that is on the plate. We can enrich the visitor experience and encourage people to appreciate the region’s culture and history through food. The inaugural TasteFest on the Manning was held on Saturday 14th January, with food and wine demonstrations and around 60 stallholders. Although not all local, some of the region’s favourite producers were selling and tasting their wares for the community. Speaking of marriage, our very special friends Di and Phil Rayson celebrated their 30th wedding anniversary on Saturday 21st January with an ‘80s extravaganza, and that it was. We all had a fabulous time, dressed up in our favourite tasteless ‘80s gear, dancing (sometimes badly) to ‘80s music and even dining on ‘80s cocktail food (with a twist, of course). I couldn’t quite gather the strength to taste the blue lagoon punch, but I did have myself a few devils on horseback. It was a beautiful evening shared with wonderful people who have all played important roles in Di and Phil’s lives. We had a great time preparing for the event, with a few of their friends and family getting together over a glass of wine or a beer to prepare the ‘80s feast. “ i Gordon and Niki. Share with us a bit about yourselves and how you came to call Forster your home? Gordon: I was lucky enough to grow up in Forster. Shortly after school I moved to Sydney, where I studied and worked to build a career in photography. I met Niki, my partner in life and business and we’ve had three beautiful children together. We always talked about raising them outside of Sydney, and eventually made the move. I am happy and lucky to call Forster home again; it really is one of the most beautiful places in the world. Niki: From the moment I met Gordon, we spent a lot of our holidays in Forster. Once we decided to have a family together, we loved the idea of raising our children in Forster. Since moving here, I have always said it was the best 34

decision we have ever made. We love it. Who or what sparked your interest in photography originally? Gordon: My father, Gary Cooper, was a motorsport photographer, so I started learning the craft alongside him (he also inherited his love of photography from his father). Whilst I loved taking motorsport photos, I found myself drawn to the personal shots of the drivers - capturing the emotion of the drivers out of the cars and through the visors of their helmets. The human eyes can show so much! After that, my interest and passion for photography had taken over my life, so I decided to study portrait photography and expanded the business to weddings and portraits. I am lucky to say twenty years later, the interest for photography still grows every day.
Niki: I have always painted, and from very early on I found myself surrounded by oils and canvases. However, it wasn’t until 2009 when I met Gordon that he showed me the workings of a camera, and my interest took a turn. I found myself telling people's love stories through the lens of a camera. I have been incredibly lucky over the past 10 years to be working alongside a person as enthusiastic as Gordon. Your wedding pictures are truly stunning. Why do you love doing weddings? Gordon: Love is the most powerful thing in the world. When two people decide they want to spend eternity together and share this moment of celebration with their families and friends, it is my favourite thing in the world to capture. The day has so many emotions to it - from the bride and groom, who have been planning the day and are now living it, to the parents watching their children start another
chapter, to the guests who can remember their own special day, or are still looking forward to planning this day one day themselves. The excitement and nerves of the bride and groom preparing for the ceremony with the closest people in their lives ... The love shared with all of the guests during the ceremony and the fun of the reception afterwards. It all comes together for such an amazing celebration. Joan Miro once said, “You can look at a picture for a week and never think of it again. You can also look at a picture for a second, and think of it all your life”. On our clients’ wedding day, we try to capture pictures they will think of for all their lives. Niki: In some ways, weddings are very orchestrated events; you know where people are going to be at what times and what is going to happen. However, in some ways - you know nothing. Every wedding is completely different, and everyone has a unique and wonderful love story to tell. It is our job as the photographer to tell the story of your day honestly and naturally as it unfolds. You won't find me at a wedding telling people how to stand or where to look or making sure the

father of a bride kisses his daughter before he walks her down the aisle. These moments are real and will happen. Instead, you will find me in the background, capturing real smiles, real emotions and moments shared between people. What tips do you have for couples when they are looking for a photographer to shoot their wedding? These are my top three: 1. You need to have a photographer who you have a good rapport with - they spend so much time with you on the day, you need to be comfortable with them and be sure you have a connection with their vision for the day. 2. Pick someone who respects your ideas and style and can build on them - who will place importance on all aspects, both the big details and the little ones. 3. Someone who will give an honest cost evaluation. Some photographers you hire by time and some by the number of images you will receive. A passionate photographer will not put limitations on the day, but will work with the couple prior to the wedding so the day runs smoothly and everything can be captured from the day, start to finish. What have been some of your most
memorable shoots? There have been so many over the years. The Channel Ten Bondi Rescue boys were probably the most popular photos we have taken on social media. Through Runners Magazine we photographed a lot of people who were running for good causes, raising money for illness or picking up rubbish for the community. It is always so inspiring meeting amazing people committed to helping others. Weddings vary so much; it would hard to single one out. We have photographed beautiful weddings in Tasmania and even Europe. One that comes to mind right now is the last one we did for 2016 at Mansfield on the Manning, because it really was such a beautiful local venue with an amazing countryside as the backdrop. You don’t only photograph weddings ... can you tell us about the other photography services you offer? We can shoot anything you need. We love doing portraits as well, whether it be couples, families or newborns. We also photograph Santa on the Beach - Forster, which people from the community and outside love. This year we had so many people from the local community excited about getting their Santa
picture on top of Forster’s iconic sand dune. We even had people from the UK, Newcastle, Tamworth and Sydney travelling up to Forster, just to get a photo with the big guy. I often joke that the motor sport photography was a good start. Once you can shoot something travelling at 340km/hr, everything else is easier to capture! Some fast facts about you: The camera you use? Canon 1D X: it's the best. Favourite time to shoot? Anytime. When the camera is in hand, we are having fun and doing what we love! Prefer indoor or outdoor? Depends on the
subject. We love the outdoors, but the studio is also fantastic. Something you can’t live without? 85 mm 2.8 lens. It's an amazing portrait lens. Your favourite place to take photos? ell us about yourself and your family ... My name is Deb O’Brien, and I grew up in the local area. After ten years of travelling Australia, my husband and I realised that “home” was a pretty awesome place and made the decision to move back. I would describe myself as a unique blend of quirky and earthy, and I believe Wayward Jerseys Farmstay reflects that. Wayward Jerseys would not be, without the love and support of my husband, Lauri Pulkkinen. Lauri is the type of man who not only supports his wife to follow her crazy dreams, but also says, “Fine, you want to buy a milking cow … Well, let me build you a dairy”. We also have three beautiful little girls, ranging in ages from six to eleven, who love their way of life and love sharing it with other people. I have always loved animals and am passionate about the New England area. I truly believe I have the best job in the world! What prompted the beginning of Wayward Jerseys? The name “The Home for Wayward Jerseys” (shortened to Wayward Jerseys for convenience) was initially a term that my husband jokingly used to describe my penchant for Jersey cows. Our guests are a pretty open minded lot and even if incredulous at the beginning, it is not long before they get into the spirit of things and are milking cows like a professional. Actually, one of my favourite things is being introduced to a child at the beginning of a stay who has their head down and focused on their favourite video game, and by the end of their stay they couldn’t even tell you where their gaming device is. Do you think locals like us take for granted what’s in our own back yard in regards to primary produce? Yes and no. Yes, because I think we are truly spoilt here in regards to our primary produce. But just because we are spoilt, doesn’t mean that most people don’t know they are on a good thing by living here. It’s like this area is a wonderful secret, and all us locals are in on it. There is a lot of buzz around local food and produce at the moment - justifiably so - and there are also a lot of amazing and dynamic people starting to really do some incredible things. I would have to say that it is pretty exciting times here in New England. Plans for the future? Yes, yes and yes. relocated from Newcastle with my husband, Dale, in 2003, intending to use our Koorainghat property as a bed and breakfast; however, circumstances changed our original plans. I had worked in an accounting support role prior to the move and then faced the challenges of seeking local employment. I attended many business and social functions and selected groups and have met some wonderful and supportive people. This encouraged me to make the jump and start my business, “Your Office Genie”, offering support to small business and accounting offices. Since then I have trained as a Celebrant - trading as Lovebirds Wedding Ceremonies and oversee the process of marriage, conduct naming ceremonies, and funerals or as my husband cheekily suggests, “match, hatch and dispatch”. Tell us what motivates you given your differing professions. I find that I have an inherent interest in people and a drive to help them achieve their personal or professional goals. As a celebrant and born romantic, I connect with couples approaching marriage by asking each of them to recount to me the story of how and where they met and how they fell in love. I’m passionate about ceremony and the power of the spoken word and encourage couples to use their imagination when planning their ceremony. For a funeral, I strive in the ceremony to honour the life of the deceased through personal stories by friends and family to celebrate their unique contribution in this world. Time Management must be of a premium for you. How do you juggle client expectations? The short answer is that there are two disparate businesses requiring two different 38

approaches to time management. Sometimes the ducks are in a row, and sometimes late nights and early mornings are required to meet client expectations. In accounting, the deadlines are normally dictated by the financial year or the ATO and lateness can incur financial pain. In terms of weddings, the interrelationship of so many different parties as well as weather conditions can impact on the event and only the bride is forgiven for being five - ten minutes late. Death doesn’t have a timetable, and when I receive a phone call from the local funeral director, the bereaved family becomes the focus and I ensure that they are treated with dignity and respect in a timely manner. The Manning-Great Lakes is the perfect wedding location. What is it that makes our backyard such an attraction for newlyweds? We have the most amazing array of locations, some still to be found. We are spoilt for choice, and I am often amazed by couples who have such foresight and initiative in how they structure the service to integrate the natural beauty of the area to create their own special atmosphere of celebration. We all know that weddings can be a big expense. Often it comes down to price and the convenience of facilities that makes our backyard such an attractive option. MidCoast Council facilities compare favourably to areas such as Newcastle and Sydney, and it’s unlikely that you will have a problem with parking here. From my own wide experience, I can confirm the professionalism of the local wedding industry providers. They offer extremely helpful advice to couples planning their wedding.

Chia Seed Pudding When chia seeds are soaked in water overnight, they take on a tapioca-like texture. Add some cinnamon or other spices and a bit of stevia, if you like, for sweetness and you’ll have a pudding-like treat that can be eaten morning, noon or night. 2. Toppings Chia seeds can be added to virtually any dish, from raw yogurt to applesauce to smoothies. Y
ou’re a passionate foodie, of the fermented type. What was it that inspired you to get into this? I have a background in nutrition and natural health and have always loved the idea that food, health and nourishing our family and community are all inextricably linked. In 2001, I visited my family in Poland. They really connected me to the food of my ancestry; it stirred something inside me and planted a seed about the value of traditional foods in our diet. After becoming a mum, and having struggles with my own health, I really started to research the importance of fermented foods in the diet. My research on the health benefits - from digestive and gut health to curing food intolerances to benefitting immune health, mental health and supporting the body through weight loss and even cancer - was compelling. I was hooked! Fermenting appealed to my love of traditional foods and interest in foods from diverse cultures around the world. Every “culture” has its own unique “cultured”, or fermented food. It also appealed to my curious nature and experimenting with new things - fermenting foods were part science experiment, part food preparation and part preventative medicine all in my kitchen! Flash forward from these early days of selftaught sauerkraut, and I am now the proud business owner of Fermenting Australia. I am a Fermentation Revivalist who has taught “Mastering Fermentation” workshops all over

Regional NSW - and a Fermenting Tour of Queensland - for the last four years. At the end of last year, I was really excited to sell out my first Sydney Workshop at a well known cooking school. I am bursting with excitement for 2017. It will be a huge year of workshops and touring for me. I have many local and regional workshops planned, a couple of regional tours, ongoing Sydney workshops, Melbourne workshops and more exciting, guest presenting roles lined up. Phew! I can’t wait! Why should we eat fermented food? There are so many wonderful benefits in eating fermented foods! Firstly, fermented foods are naturally teeming with probiotics (good bacteria) that are necessary for good gut health. You need a healthy gut to digest and assimilate nutrients from our food. As scientists increasingly research the amazing human micro biome, we are learning that about 80 percent of our immune system is based in the gut. We also know that roughly 95 percent of our serotonin receptors are based in the gut, so good gut health is really paramount for good mental health. Fermented foods are such a great way to supercharge our health in so many different ways! They are also delicious and fun to make. What are the fundamentals of fermenting vegetables? When we ferment, our primary objective is to create an environment that allows the natural lactic acid bacteria present on vegetables to proliferate. This allows the fermentation process to happen. All you need to do is create a salty, or mineral-rich, anaerobic environment - and you can create fermented food! My workshop gives you the theory, as well as
practical experience with fermenting. It really is very simple once you know how! Favourite fermented food to eat? I love to ferment (and eat) anything! To be honest, I am a bit of a traditionalist and can’t go past a delicious, mature, home-made sauerkraut. I absolutely adore kimchi too and recently made 20 kg of it to give as Christmas gifts to my family! In my house you will find sauerkrauts all of different flavours (including curried kraut and “flower-kraut”- with edible flowers!) many types of kimchi, lacto-fermented pickles (my son’s favourite), fermented carrots, radish, beetroot, lemons, olives. In my fridge, you will also find homemade fermented bean paste, lacto-fermented tomato sauce and fermented mustard, kimchi sauce, chilli sauce and fermented Mexican sauce. You’ll also find a variety of fermented drinks such as a fair few litres of different flavoured kombucha, Jun, milk kefir, water kefir, 6 litres of homemade apple cider vinegar and fermented red wine vinegar. You may also find a sourdough starter and a ginger “bug” to make ginger ale! What do we need to get started? Is it expensive? I love that fermented foods are inexpensive and easy to make - they really are accessible to everybody and not hard at all! To make a simple sauerkraut, all you really need is a cabbage, some salt and a clean glass jar! I don’t like to use expensive or specialsed equipment. I much prefer to teach people how to make simple fermented foods at home and feel confident that they are able to support good food and good health for them and their family. A great starting point is one of my workshops ...
You run fermenting workshops locally? What is involved in one of your workshops? Yes! I absolutely adore teaching them and they are so much fun! They are wonderful, hands-on workshops. I cover a lot of interesting information about the history, culture and health benefits of fermented foods, as well as the simple, but important safety parameters. Workshop participants get to create a take home 1 L jar of their own-made sauerkraut and 1 L of a fermented, brined vegetable of their creation. They also receive a Kombucha SCOBY (you want one of those mothers!) and lots of delicious tastes and samples. I also demonstrate kimchi and pickles. Such a fun and informative day. Michelle has recently moved into one of Dundaloo Support Services houses, and is now living happily with two other young women with similar interests.
M
ichelle was seeking to live in a shared living setting, so when a vacancy became available, Dundaloo thought that Michelle would be a positive match for the other women. Michelle’s journey to moving into her new home began with Dundaloo making contact with her family and undertaking what’s called a sustainability process. This process includes a series of get-togethers and helps to ensure the person is well-suited to the other people living in the home before they move in.
“Michelle has matured since living independently and there have been no regrets in moving Michelle into shared accommodation.” Mark also said, “Dundaloo staff were very empathetic to the family’s emotional needs, given this was Michelle’s first move out of home. Meetings were held to assess Michelle’s requirements before she moved. All aspects of Michelle’s working and personal life were considered and accommodated. I am appreciative that Dundaloo have maintained the lines of communication open and contacted us whenever a need has arisen.”
For Michelle, this move was her first time out of home. To assist in Michelle’s move, Dundaloo initially provided 24-hour support. Once comfortable, the Dundaloo team then supported Michelle in developing a range of new living skills, such as “stranger danger” skills, what to do in an emergency and other important living skills.
As a result of moving into her new home, Michelle is now an avid cook, who enjoys playing board games and is leading a very busy and happy life. When Michelle was asked what she liked about living with others and being supported by Dundaloo, she said, “I like living here and the people here” and, “I like listening to my music and going to work.”
Michelle’s brother, Mark, is happy and confident that Michelle is being looked after and living the life she wants. When asked how he felt the transition to her new home has gone, Mark said,

So what does NDIS MEAN? The NDIS, or the National Disability Insurance Scheme, commenced in 2013 with launch sites across Australia, our closest being the Hunter. Since 1st July 2016, the scheme has been available for eligible participants locally. The NDIS is for people living with disability to access supports that are reasonable and necessary to live an ordinary life. Plans are available for people with permanent and significant disability, and mental health is now included in the scheme. Prior to the NDIS, service providers received government funds to assist people with disability in accommodation, skill building and other programs. Now, the NDIS funds directly the person with disability, offering choice and control in the type of assistance that can be accessed, and gives wider freedom in the support provided. Have you noticed part of Centrelink has gone purple! Whilst the NDIS is separate to Centrelink, both are administered by the Australian Government, so both services share the building in Taree’s CBD. The NDIS is an empowering time, and changes are just beginning. It is expected to take years for the scheme to have full impact, and until then we continue to benefit from a community based on inclusion.

i Tony. What brought you to the Great Lakes area initially, and for how long have you been a “local”? Hello Jo. As retirement approached, my wife, Irene, and I went searching for our little bit of “paradise”. We explored the NSW coast from Eden to Tweed, and simply fell in love with climate, people and facilities of the Forster/Tuncurry area. We have been residents here for a little over four years. What’s the history behind the club you established, the Great Lakes Sporting and Companion Dog Club? I had been involved with dog training obedience, behavioural and “Dances with Dogs” - for several years, but starting a dog club was not on my retirement bucket-list. Shortly after arriving in the Great Lakes area, I went in search of the local dog club, to no avail. I approached the then Great Lakes Council and was told there had not been a club in the region for some time. Following discussions with Kerry Simmons (of the Council), I was offered the used of their off-leash dog park at Tuncurry as a training field if I would set up a club that focused on the good behaviour of canines and owners (yes, both); something to which I and the Council were both very committed. The club arose from these humble beginnings and now has a regular membership of more than 60. Why did you feel there was a need to establish such a club locally? We cover many other issues, such as waiting, reducing barking, and socialisation (with both dogs and people). It has been wonderful to hear all the great success stories because of the training they experience at the club. What types of people/dogs would benefit from being a member of your club? All dog owners and their pets can get something from the club. It is about having dogs fit into their owner’s family, not the other way around. WHAT A SUMMER SEASON! WOW! WHAT A SUMMER SEASON! THE THORNTON CLAN VISITED THE BEST ADDRESS IN AUSTRALIA THIS CHRISTMAS PERIOD … BY STAYING HOME. WITH THE IA OFFICE CLOSED FOR THREE WEEKS, IT GAVE US A CHANCE TO CHILL OUT AND EXPERIENCE THE BEST MANNING-GREAT LAKES HAS TO OFFER.

s expected, it was HOT! The week starting Christmas Eve started nine days straight over 30 degrees, with four in a row over 35. Then through January we were hit hard by big peaks in temperature, followed by a short period of relief. Some of the heat may have impacted movement around the area, but there were only pockets of this. Talking to local business people over our “staycation”, they reported record sales or interest. Real estate contacts in both Taree and Forster reported very high interest. Some even had to forego time off due to increased enquiry. Retailers - in the main - had good returns, and our tourism providers had bumper seasons. Talking to Brian at Taree Wingham Race Club about their January 5th race meet, he advised, “Food, beverage, admission and race book sales being double that received for the comparative meeting in early January 2016”. These stories were common over the season, and it was even relaxing sitting in the traffic to get over the bridge at Forster to grab a hamburger at Dasher’s! This is not to say some did not experience the same results, but in the main it was a very positive summer that business owners now need to lever off and grow through the coming months. In The Manning, one of the most memorable days was also one of the hottest of summer. The Saturday of TasteFest on The Manning was absolutely magic. It almost happened in two waves, with the early starters enjoying the morning official elements and samples of food, then we weaker souls hiding in air conditioning until late afternoon,
came out to enjoy an evening of cooler entertainment and dinner on the riverfront. To see our community together, smiling and having fun with travellers from all over the state in town for the annual rowing regatta is something that will stay with us for a long time. Even standing talking in the licensed area late in the day, you saw a buoyant side to Taree that probably hasn’t come together like that for some time. Yes, we have a number of other events that bring us together, but this was almost carnival like and brought the best out in the community. The foods were fantastic, the entertainment non-stop and the layout with pallets and marquees on the riverfront a site to behold. These events drive tourism, which drive business. Don’t rest on your laurels now the season is over. It’s giving tourists and the community memorable experiences every day of the year that will keep them coming back time and time again and empower locals to be positive ambassadors for The Manning-Great Lakes. Events are a quick hit, but the positivity it creates in a community is contagious. For business owners, we now need to ensure every day we are providing top level service and positive solutions to visitors and the local community. This means great service becomes a habit that is a tangible selling point for our region. A big year coming up for business in MidCoast Local Government Area! Hopefully a more united year, where we embrace change and lead by example. would suggest that the travel and tourism industry is right at the forefront of this unprecedented shift in the way we do business. From apps like Uber and Airbnb that reengineer entire markets to mobile, omnichannel commerce, virtual reality and a whole plethora of social platforms, the breakneck pace of digital disruption has completely altered the way consumers shop for, book, share, and ultimately experience travel. Planning and booking a holiday used to be so easy! Today however, this predominantly online booking journey is incredibly complex, with an unimaginable number of customer touch points to identify and manage. Technology has empowered consumers like never before to take control of every stage of the travel cycle and in the process, has created an unbelievably exciting opportunity (or headache, depending on your outlook!) for travel providers and marketers. “The modern traveller is always connected and always on”. Instant access to product information and reviews means travellers can now shop around on their own time - during their commute, in the bedroom and even while in the bathroom! Facebook, instagram and other social media channels guarantee that our travel brands are on full display to anyone with an internet connection. “It’s a multi-device world - and increasingly mobile”. People now need the ability to complete any task in any location, or at the very least to start a process or journey in one location or on one device and seamlessly complete it on another. For example, if they start shopping for a holiday on their laptop at work during lunch, they want to be able to pick up a tablet at home that evening and then perhaps continue that transaction on their mobile device the next morning. This is the rule, not the exception. In short, travel consumers expect the option
to read reviews, board a plane, call a car service, order a meal, check into a hotel, see a concert, book a tour and much more on their own terms and all through the technology embedded in their phone, watch or any device they choose. So what does this mean for the travel industry? “Travel is an emotional journey; meeting expectations requires a personalised touch”. Travel consumers crave a customised travel experience, with a large percentage now demanding a booking experience which is tailored to their needs. As travellers use multiple screens to compare, we need to create seamless, one-to-one experiences. Creating a single view of each customer to understand their cross-device journey is imperative. Data gathered at the various points in the travellers’ journey needs be integrated into one cohesive customer view, so that this seamless experience is delivered, whatever device is being used or action is being performed. The art and science of merging these disparate data sources in a cost effective way is something that most businesses will continue to do battle with for many years to come. However, get it right - and this profile data can be used to deliver real rewards. Customer profiles get richer with every interaction, allowing travel providers to provide the most relevant messages in real time and engage in ongoing, cross-channel conversations to ultimately build brand loyalty. All this means that we now have a strategic mandate to lead, or at the very least, keep pace with this unprecedented change in travel consumer behaviour.
