hat a month May is shaping up to be … There’s so much happening locally: art exhibitions, shows, sporting events, festivals, anniversaries …

There are also a wealth of special events we get to celebrate only once a year, like Mother’s Day, and Wingham Beef Week.

Whatever you have planned this month, hopefully it includes spending some quality time with your mums and grandmums - there’s certainly no shortage of places and events to celebrate locally this May! On the Cover Speaking of Wingham Beef Week, which is celebrated from 9th to 14th May this year,

our front cover pictures Paul Relf, President of Wingham Beef Week, with one of his prize winning Limousin cattle at Warrigal Stud.

We also highlight some of the best businesses and services available in beautiful Wingham this month, with our special Wingham feature.

In this Issue Talented local artists Judy Bray, Timothy Clift and Yvette Hugill tell us about the various exhibitions they’re involved with at the moment; and Judith Conning shares the new direction her photography practice has taken.

Deanne Allan from Shen Wellness shares her passion for health and wellness, while Marg Lewis and Janelle Jefferies give us the heads up about Taree parkrun’s first birthday

A HARDWORKING COMMITTEE HAS BEEN BUSY ORGANISING THE MANY ACTIVITIES PLANNED FOR FESTIVAL DAY ON MAY 14TH … here, they share some of the many highlights ...

Share with us the history of the Cultures in the Manning Festival ... How/when was the original idea initiated?

In 2013 the Gallery held the first Indian Film Festival and MVNS held the first Africa Comes to the Manning Festival. In 2014 the Gallery and MVNS teamed up to hold the second Africa Comes to the Manning Festival. This was very successful, with the community asking for more.

So the partnership continued last year with the Asia in the Manning Festival. This was again a great success, being well attended by the community and involving a lot of our multicultural community.

When you are onto a good thing, you just keep going, so last year we decided we would like to have a festival that was inclusive of all the cultures we have in our community. With over 100 cultures here in the Manning, it’s impossible of course to represent them all, but we are doing our best with the Cultures in the Manning Festival.

What are the aims of the festival?

The festival is about bringing community together. It is an opportunity to showcase and celebrate the presence and contribution of various cultures through food, art, dance and music.

Who would you like to thank for making this festival possible?

We would like to thank the many volunteers who have been involved this year. It has been fantastic to have returning volunteers such as Amita Krautloher, who has been involved since the beginning.

Liz Rankin, Susie Ploder and parents from St Joseph’s Primary School continue to support the festival involving the children from the school, which is always fantastic.

Catholic Care is again providing our free kids’ activities, and the TAFE ESL class are providing a free interactive stall.

Of course, we would like to thank the many members of the local Aboriginal and multicultural community who have given their time and shared their culture with us through food, dance, music and art.

VALE The annual Art in the Vale exhibition is set to take place on Saturday 21st and Sunday 22nd May 2016 - from 10am to 4pm, in the Hannam Vale Community Hall. This exhibition is a fundraiser for the hall, and provides artists with the opportunity to exhibit their works in a beautiful rural setting. Meet two of this year’s contributing artists, Judy Bray and Timothy Clift.

i Tim. Briefly describe your background as an artist ...

Creativity has always been a big part of my life, having worked as a graphic designer for nearly 30 years. However, painting is still relatively new to me. I joined a weekly painting group in Sydney’s eastern suburbs about six years ago and this ignited my interest, which had been bubbling away inside me for years.

I was both honoured and shocked to be a Paddington Art Prize finalist in 2011.

Beginners’ luck perhaps, but a huge thrill to be a part of such an esteemed event.

I joined another group in Newtown and found the company of other amateur artists both inspiring and encouraging.

I received guidance from some wonderful teachers along the way. A small joint show in Surry Hills in 2012, followed by my first solo exhibition in April 2013, introduced me to the fear and excitement of having my work on display and the thrill of actually selling some work.

Midway through 2013, my partner and I moved to Waitui, near Hannam Vale, after having bought a property a few years earlier.

The lush green countryside and big open skies have been a constant source of inspiration to me.

I joined a painting group at The Other Side Art Café and was lucky enough to be both guided and supported by the wonderful Wendie Patch, who invited me to exhibit in her gallery café space in November 2014. She pulled in a large crowd, and the exhibition

was a big success for me. Another local artist, Sally Horton, has also been a source of inspiration for me.

How would you describe your style/ technique?

My style is in a state of slow change, as I strive to loosen up and create more with less.

I want my paintings to evoke a sense of calm or escape, rather than to confront.

This probably says a lot about my personality. I am a little obsessed with clouds and big skies, as they offer a constantly changing display of light and form and provide the opportunity to create works that a viewer can dissolve into.

You’re one of the contributing artists in this year’s Art in the Vale exhibition.

Please tell us a little about the work/s you’ve submitted for this exhibition ...

I am submitting paintings of local scenes, as I feel this adds relevance for those attending and to the event itself. Dramatic, moody skies are my focus.

What does it mean to you personally to be part of an exhibition such as this one?

Living in a small valley, it’s great to have the opportunity to support a local event, especially when people work so hard to make it happen.

Art in the Vale really is a highlight on the local creative calendar, and it’s an honour to be part of it.

AN INTERVIEW WITH THE FOUNDING CHAIR, JUDY HOLLINGWORTH.

he Manning Valley Push for Palliative group was formed just last year. Could you tell us what your aims are?

An estimated 70 per cent of people with incurable illness and their carers say they want the patient to spend as much time as possible at home, not in hospital - but only 30 per cent achieve that, especially as the end of life approaches. A major aim of our Push for Palliative Group is to raise community awareness of how palliative services help and to lobby to give better choices to all those impacted by such illnesses.

We are advocating for more and better palliative care services to support people of all ages facing these challenges and also their personal and professional carers. This is much needed, especially in regional areas like the Manning Valley. We are seeking the provision of more specialised staff - doctors, nurses, social workers, Occupational Therapists and Physiotherapists. And we are raising funds for such things as high-demand equipment to lend in emergency situations, and much needed respite care.

What have been some of the group's significant achievements since its formation?

In less than six months we have raised nearly $25,000 - from a combination of government, private sector donors and the community. We now have nearly 50 members.

And we have three active working groups: a fundraising group, an equipment provision group, and an advocacy and lobbying group.

The group is now a registered charity, which means people are able to make tax-deductible donations to assist you.

How and where can we do this?

Being granted charity status by government and permission to fundraise are rigorous

processes, so getting these endorsements is a considerable achievement, of which we’re proud. This means we are now a public body, transparent and subject to scrutiny and recognised as providing value to the community.

People can donate funds or specialised equipment by contacting one of us (see details below) and we will issue a receipt. We also really welcome contributions of time, energy and advice!

What upcoming fundraisers/events do you have planned?

Three fundraising events will be held in May and June: On Sunday, May 15, a garden party at the home of Marie O’Neill, 57 Bohnock Rd, Bohnock, from 2 - 5pm. Cost $15 each.

On Monday, May 23, a Taree Film Society fundraiser movie night. Cost $16 each.

On Saturday, June 11, a dinner-and-speaker event at Wingham Services Club sponsored

by Wingham Rotary. The speaker is world-renowned wildlife artist Peter Schouten, and the MC is ABC Morning Show’s Cameron Marshall. Cost $35 each.

POLSON 50TH TAREE SHOWGIRL

THE 50TH TAREE SHOWGIRL, LAURA POLSON, IS A WELL-KNOWN FACE IN OUR COMMUNITY, HAVING BEEN INVOLVED WITH THE LOCAL DAIRY INDUSTRY AND ALSO WORKING AS A JOURNALIST WITH THE MANNING RIVER TIMES. LAURA HAS FOUND HER TIME AS SHOWGIRL TO BE A VALUABLE EXPERIENCE AND ENCOURAGES OTHER YOUNG WOMEN TO CONSIDER ENTERING THIS YEAR’S COMPETITION …

H

i Laura. Late last year you had the honour of being crowned Taree Showgirl the 50th woman to receive this title. What’s been the most enjoyable aspect of the role for you so far?

I’ve found meeting the incredible and motivating young women at all levels of the competition has been the most enjoyable aspect for me. Locally I received guidance from the 2014 Taree Showgirl, Kim Harriden, and formed friendships with fellow entrants Kate Greenaway and Jessi Wainwright.

At the next level of the competition I made connections with showgirls from across northern NSW and learnt about various leadership opportunities, as well as ideas to bring back to the Taree Show.

What are some of the official functions you’ve been a part of as Taree Showgirl?

As part of my prize as Taree Showgirl, Taree Agricultural and Horticultural Society funded my attendance to a showgirl development weekend led by former Miss World contestant Karen Pini, who was a brilliant mentor.

In February I attended the zone final in Grafton. Here, myself and 16 other showgirls sat an interview, had a luncheon and attended a formal evening where we had to answer three questions on stage. I was unsuccessful at this round of the competition, but it was a great experience and I learnt a lot.

I joined youth initiative Footprints in Ag, which was started by Wauchope Showgirl Ashley Olsen.

The group’s purpose is to encourage youth involvement in their local shows. Earlier this

year Footprints in Ag held a “Dance 4 Drought” fundraiser and raised over $5,000 for drought affected farmers.

Locally, I have been the guest speaker at community organisations’ meetings, such as Probus, where I have shared my story as a dairy farmer’s daughter and a journalist with the Manning River Times.

Recently I attended the Royal Easter Show to accept the Royal Agricultural Society Foundation’s Community Future Grant. I applied for the grant to purchase further seating and shading at Taree Showground.

What have been some of the most valuable lessons you’ve learned through this experience?

To not be afraid to ask yourself questions about your future. One of the questions I was asked in my zone interview was, “Where do you see yourself in five years?” I definitely stumbled around this question! I had a rough idea, but I think it is valuable to ask yourself what you care about and what you love to do, to guide and motivate you further.

What makes a good Showgirl?

Contestants are judged on personality, confidence, ambition and life goals, general knowledge, rural knowledge, presentation and speech.

However, in my opinion a good Showgirl should also possess a willingness to challenge herself. I didn’t possess all of the above skills at the start of the competition. But in just having a go, I was able to improve and develop in each of these areas. I also think holding a passion for your community is paramount in the role of Showgirl.

The Manning River Agricultural and Horticultural Society Taree Inc. will be holding its annual Show on October 8 and 9 this year, and a new crop of entrants will step forward to see if they can become the next Taree Showgirl. What are the criteria for this year’s entrants?

Entrants need to be from 18 years to under 25 years as of May 1, in the year of the State final (2017). They must also reside, be educated or work within NSW for at least three months prior to their local Showgirl competition. You will also need to be available to attend an interview and lunch in the weeks leading up to the show in October.

How do women register to become an entrant for Taree Showgirl?

Women register by contacting Taree Showgirl co-ordinator Val Weller. Val will supply entrants with an entry form. Registration opens closer to the show and cut-off occurs around two weeks before the 2016 Taree Show.

What’s one piece of advice you’d like to give this year’s entrants?

Just go for it! I think a perception sticks around the competition that you need to have come from an agricultural background; whereas, I think if you are involved and passionate about your community and have a strong vision for its future, then you are definitely showgirl material. To me it’s a leadership role and is a great step for young leaders in our community.

Spud and I have owned “Dream Acres” for five years now. We love living and sharing the magic of this place with good people.

The new outdoor entertainment area is in constant use by our groups. The boutique winery style area overlooks the main lawn, which features a magical ceiling of fairy lights.

Our latest upcycling project has produced cable barrel outdoor settings, which enable groups to have relaxed gatherings under the stars. The Lawn Stage is now under cover, so it doubles as an outdoor room for guests on winter afternoons before they settle in around the campfire. The Barn Area is a great addition to the retreat for family functions, meetings and wet weather activities. The tipis have also been refurbished.

TAREE VOLUNTEER RESCUE ASSOCIATION

The annual Art in the Vale exhibition and sale of local artworks will be held in 2016 for its fourth consecutive year as a fundraiser for the Hannam Vale Community Hall.

O

rganised by local artists and the Hannam Vale Hall Committee, it is an opportunity for artists and their communities to come together in celebration of their creative work.

The aim of this event is to provide an opportunity for local artists to display their work and to raise money for local community organisations. Art in the Vale has grown each year with the support of well-known local artists Ken Strong, Sally Horton and Harold Le Jeune, together with a growing collection of local artists, including those showing their work for the first time.

All works will be offered for sale, and two viewers’ choice prizes will be awarded.

Opening Night - Friday 20th May 2016 - 6pm to 8pm.

The exhibition will be opened by Noella Lopez, Director of the Manning Regional Art Gallery at 7pm.

The Taree Volunteer Rescue Association (VRA) will be holding our annual fundraising event “Weekend On Wheels”, May 28th and 29th.

T

he main event will be held on Sunday the 29th at the Jack Neal Oval, with a huge variety of hot rods, trucks, bikes, food stalls, emergency service displays and live bands, along with a surprise visit from Big Dog for the kids.

The event opens at 8am, with all proceeds going to the Taree Volunteer Rescue Association to upgrade and maintain vital life saving equipment and vehicles.

The Taree VRA is the primary rescue agency for the Manning District, and has been since 1975. Each year we attend hundreds of emergency calls, varying from motor vehicle accidents, cliff and confined space rescue, inland water rescue, search and rescue, animal rescue and industrial and domestic rescue.

We also provide emergency assistance to the New South Wales Police and New South Wales

Ambulance when required.

This year, we will be holding a Show ‘n Shine on Saturday between 10am and 12pm at Bunnings Warehouse Taree, followed by a Poker Run to Harrington for all Weekend On Wheels entrants. Members of the public are welcome to participate in the Poker Run for a $10 donation.

acular degeneration is a chronic disease requiring early detection and diagnosis, so testing is essential.

In Macular Degeneration Awareness Week, the Foundation is urging all Australians over 50 to have an eye test and ensure their macula is checked.

Risk factors for macular degeneration include age, smoking, and those with a direct family history resulting in a higher risk of developing the disease.

“Whilst general awareness of macular disease has increased over recent years, more than 80%² of Australians over 50 are unaware of the symptoms of macular degeneration,” says Julie Heraghty, Macular Disease Foundation’s CEO. Symptoms of macular degeneration may include one or more of the following (4Ds): • Difficulty with reading or any other activity with fine vision • Distortion where straight lines appear wavy or

bent • Distinguishing faces becomes a problem • Dark patches or empty spaces appear in the centre of your vision.

Along with having an eye test and macula check, Australians over 50 should incorporate the good eye health practices of diet and lifestyle into their everyday health routines. Eat dark green leafy vegetables, fresh fruit and fish. Quitting smoking is also critical, as smoking can lead to blindness.

i Judith. We've spoken to you at FOCUS in the past about your beautiful wildlife photography, and you've just come back from another trip to Canada. What were the highlights of this latest journey?

Wapusk National Park in Manitoba, Canada is one of three major polar bear denning areas in the world and the most accessible. I use the word accessible loosely, as it is an extremely inhospitable environment to humans - frozen tundra, temps below -30 and the ever present north wind. A limited number of people, mostly photographers, are able to spend periods of 6 - 9 days in a small lodge in this challenging place.

Naturally the absolute highlight was seeing two families - mothers and their twin cubs. I was mentally prepared for the possibility of no sightings, so we all considered ourselves truly fortunate. The cubs spend hours crawling over their mother, seeking feeds from time to time and just being energetic babies. Watching them, I felt an incredible sense of desperation as to the fragility of their

What options do you offer families and individuals for portraits - e.g. indoor or outdoor shoots? Are you available to travel for your photographic work?

Photo sessions can be occur indoors and/ or outdoors depending on people’s style and how they see themselves. The local beaches also make the most fantastic setting - just wish I could encourage people to come to the beach nice and early (sunrise) for the opportunity to create amazing images.

I have a studio at my home in Diamond Beach, which has been especially furnished with photography in mind, and the garden is being developed as an alternative setting.

Sometimes people want their session in their own home or garden; others have a favourite spot or somewhere at a particular time of year that appeals to them - what is often called a “lifestyle” shoot. There’s no limit to the possibilities!

How would you describe the term "contemporary portraiture"; how does this differ from more traditional portraiture in your eyes?

I use the word “contemporary” for those portraits that are mostly shot in the studio, using natural or studio light and being about the person - subtle background, few, if any props, muted colours and in classic and timeless style. These portraits can often form part of a portfolio for someone who is considering modelling or acting, or as something striking to display on a wall. This type of portraiture can encompass all ages.

You've also been fortunate to shoot some beautiful weddings recently. What do you most enjoy about this type of photography, and how can you help make a bride and groom's big day just

Weddings always pose a special challenge - it’s a portrait shoot multiplied by 50+, it’s a special and unrepeatable days in a couple’s life, it’s an incredible mix of personalities, and it’s often at the mercy of the venue and the weather. I love that challenge of trying to create the best possible story through images of that amazing time. I know it has been said so many times before, but it is the opportunity to capture the love, emotion and joy of that day.

It is so important to meet with the couple before the wedding so we can get to know each other a little and to tease out what sort of images they are hoping for. It also provides me an opportunity to explain how certain shots might be achieved and the need to allot some time for those intimate images of the couple.

judeconning photography.com is simply stunning. How much of your time as a photographer is actually spent on the post-processing side of your work, as opposed to the framing and shooting phase?

I do spend considerable time on the post production, as it is something I enjoy. It is extremely satisfying to see a special image emerge from something that’s a little ordinary at the beginning. Having said that, there is the mantra of getting it right in camera, and I work hard on that so the routine post processing is fast, but there is more time for the creative aspect.

What plans do you have for developing your photographic business over the next year or so?

To date I have been working a nonphotographic job full-time and working on my business every other minute I am given.

I did take eight weeks leave to develop the business side and now will be reducing my hours to give me more time to build my

business. With hard work and happy clients, I aim to make this a full-time venture.

I want to explore what people want from their photographs, look at different ways of capturing and presenting and be flexible and responsive. I also want to provide people with the opportunity to see their images in “hard copy” - prints, canvas, acrylic, aluminium and photobooks, as well as receiving the allimportant digital files. It’s not just about pixels - there are so many ways to bring your images to life. It’s great to have those images on your phone and share with your family and friends, but it’s important to preserve those memories in a more tangible and lasting form.

SPECTACULAR DRAGON FRUIT! YOU MAY HAVE SEEN OR TASTED THIS UNUSUAL TROPICAL FRUIT, ALSO CALLED PITAYA, WHICH GROWS TO THE LIKES OF AN OVERSIZED DARK RED OR YELLOW EGG ON THE OUTSIDE, ADORNED WITH FRILLS WITH EITHER DARK RED OR WHITE SWEET FLESH INSIDE.

A

s an epiphytic plant, it climbs the trees of the South American jungle. The long, green, fleshy leaves easily attach themselves to a tree. The large funnel shaped cream flowers are spectacular when they open in the evening and close by early morning.

The flower is pollinated by moths in the evening and bees early in the morning. A small brush can also be used for hand pollination.

Fruit development is quick, maturing within 6 - 8 weeks from pollination. Flesh is eaten fresh, refreshingly juicy with a firm jelly consistency. Varieties available are white, red and yellow.

Dragon fruit is usually grown in the northern regions, in tropical or subtropical climates. They can be grown successfully on the Mid-North Coast. Choose a sunny position that faces north-west with protection from the south.

A well drained mounded soil with added

sand will help keep the roots free of excess moisture and encourage better flowering in the warmer months. Add composted animal manure, compost or organic fertilizer in spring. The plants enjoy a deep watering during dry periods plus a thick mulch to retain soil moisture and suppress weeds.

Dragon fruit requires a strong structural frame which allows the stems and fruit to hang down. A two metre high solid timber post is ideal, with a strong circular metal or timber frame at the top to 1 metre wide.

The fungal disease leaf spot could be a problem during the cool, damp months. This damages the leaf with round orange spots.

This disease can be minimised by watering the plant from below. Look out for snails and slugs, which can be controlled with ducks and chooks, beer traps, coffee grounds or pet friendly snail pellets.

Matters. [ w ith Ala n Tickle ] Last month’s edition spoke of the benefit of diversifying investment assets and how income from Australian Shares and Property securities is more than double what is available from fixed deposits.

The need to be patient and taking a longer term view on such exposure when it comes to capital growth opportunity was also discussed.

Volatility was also discussed, and how swings in markets at times has been illogical of late.

This was well illustrated the past couple of weeks, when the equity markets spiked about 4%.

To put that in perspective, a new investor not only was able to look forward to increased income from dividends compared to fixed deposits, but were cheering at the capital growth they picked up in such a short time.

We do know that markets have no clear direction at present, but it does illustrate that being invested can result in such rewards; whereas, sitting on the sidelines and entering after there have been some rebounds, means that invested are left wishing.

It all comes down to maintaining a structure and an individual strategy, then sticking with it.

Trying to time the market in periods of volatility is problematic.

Pre-June considerations It’s time to seek advice from your taxation adviser on taxation planning strategies.

It’s of utmost importance, for those who are salary sacrificing to superannuation, to ensure that they do not exceed contribution thresholds.

The pre-tax contribution cap for the current financial year is $30,000 p.a. if you are under 49 years and $35,000 p.a. if you are 49 years or over on 30 June 2015.

Pre-tax contributions include:

• employer contributions (including Superannuation Guarantee) • salary sacrifice contributions • the contributions that you split with your spouse • personal contributions by eligible persons that are allowed to be claimed as a tax deduction • any fund costs paid by your employer on your behalf such as administration fees and insurance premiums.

Excess pre-tax contributions will be taxed at an individual’s marginal tax rate, plus an interest charge (rather than the top marginal rate as it was previously).

The post-tax contribution cap for the current financial year is $180,000 p.a.

Imputation Credits Retirees with managed funds or direct shares that are not part of their superannuation can claim back the tax credits, even if they are not liable to pay tax.

Because most companies pay tax before their dividends are distributed, the amount of tax already paid is shown on dividend advices as a franking credit.

That tax is available as an offset and can be claimed as a refund by non-tax payers or offset against taxation liability by those paying tax.

You can claim past years, so it is worth gathering your records. “Googling” refund of imputation credits, to locate the claim form or see a taxation agent will enable the application for refunds.

Justin Stack PUNITIVE LAWS AGAINST CYCLISTS DO LITTLE TO INCREASE SAFETY

T

ough new laws governing cyclists and motorists sharing the roads came into force from March 1 in NSW, and those who breach them face stiff fines.

• Drivers must leave at least one metre of space when passing a cyclist in speed zones of 60 km per hour or less. In higher speed zones, drivers must leave more than 1.5 metres. The fine: $319 and two demerit points.

• If it is safe to do so, drivers can cross centre dividing lines or continuous lane lines to pass a cyclist. If it is not safe, drivers must slow down and wait to pass with the one metre gap.

Good drivers have always done this, but it does clarify the law on crossing the dividing lane when passing a cyclist. Stacks lawyer Nathan Luke says this legal common sense hasn’t been applied to cyclists, with fines jacked up by almost 500 per cent.

• All bike riders must now carry photo ID - no ID and cyclists will be fined $106 from March 2017. It is to help identify cyclists in an accident, but many see it as an unnecessary crackdown on riders and cite these fine increases from the current $71: • Not wearing a helmet - $319 • Running a red light - $425 • Riding dangerously - $425

• Holding on to a moving vehicle - $319 • Not stopping at pedestrian crossings $425 • Riding at night without lights - $106.

Transport NSW says the increased fines increase safety as more and more cyclists share the road with motorists. But cyclist groups say the stiff fines are anti-cycling and not based on evidence they improve safety.

Nathan Luke, a solicitor with Stacks Law Firm, sees more and more cyclists with injuries caused by poor driving by motorists.

“The emphasis must be on driver education.

No bull bar toting 4WD driver ever got killed in a collision with a cyclist,” Mr Luke said.

“These laws seem to be just about trying to make cyclists ‘obey the rules like drivers do’ which is a common complaint of driving hoons. Cycling should be recognised as an activity which is good for roads, reduces traffic, is zero pollution and is healthy.

Drivers should exercise patience and common sense to avoid accidents.”

Mr Luke lives on the North Coast and feels it would be excessive to fine a surfer cycling to the beach with a surfboard under his arm for not wearing a helmet.

“It’s worth it for both motorists and cyclists to get legal advice on challenging fines, as magistrates often recognise good records.”

YVETTE HUGILL, A LOCAL MANNING-GREAT LAKES TALENT, IS ONE OF THE ARTISTS WHOSE WORK WILL BE SHOWCASED … i Yvette. We’ve been privileged to see your beautiful artwork in FOCUS on several occasions, but what’s been keeping you busy since we last spoke?

Since the Gloucester Gallery exhibition last November, I’ve been asked to exhibit at the Weswal Gallery in Tamworth next year. So, I’m once again busy in my studio getting enough work completed to fill the gallery space. This will be another joint exhibition with Peter, my husband, who will have his ceramics on show.

We enjoy exhibiting together, and this will be our fifth.

How would you say your style/technique has developed in recent times - what’s been capturing your imagination and influencing your work?

Landscapes are still the major subject of my practice, and I’m working more with oils at present and hope to do some larger works.

I’m still inspired by the local and regional environment.

I challenged myself last year by doing a daily journal depicting my everyday happenings. I used an A5 journal with ink and watercolour as the media. I filled the journal with 68 paintings, which proved very popular and as a result, I’ve been asked to do a “colouring book” of Tamworth scenes. Once published, I will then finish painting the drawings, which will later become part of the Weswal exhibition. I found it disciplinary to achieve one finished painting each day, averaging three hours per work.

You’re one of the contributing artists in the Northern Exposure 4 exhibition, to be held at the Glasshouse Regional Gallery.

Please tell us a little about the work/s you’ve submitted for this exhibition...

I have submitted an oil painting of the Gloucester mountains. This particular work 18

is a culmination of many ideas and previous paintings of the Gloucester region. I have often driven to Gloucester, but I’m always happier as a passenger, enjoying the view of the high mountains and deep valleys that surround the region. It’s more inspiring early or late in the day, when shadows are deep and long.

In this work, I’ve used a linear approach to shape the valleys and contours, enjoying the process of working with slow drying oils.

This has allowed me the luxury of mixing and blending soft colours. With this piece I wanted to develop the idea of the line ... not long, sweeping strokes, but short, definite lines using close tonal hues, which upon closer inspection, shows lots of colour which is not apparent from a distance.

What does it mean to you to be part of an exhibition of this kind?

This is the second time that I’ve entered Northern Exposure and have been accepted both times ... Which is nice. It’s also great to have my work shown further afield. I have always enjoyed exhibiting with other artists who are keen to promote their work and have it viewed by the public. There’s always such diversity of subject matter, genre and technique, which makes for a vibrant and interesting exhibition.

utumn is the perfect time to prepare your garden and plant your seedlings with your favourite winter crops.

Remember to always plant what your family likes and will use on a regular basis. Also try to get your kids involved in the garden, either by giving them a section to look after themselves or by helping you choose what plants to plant. This will help encourage them to eat the vegetables that you have grown, because they helped grow them and will also encourage them to try new things that they might not have tried before. By using your seasonal home grown herbs and vegetables from the garden, you can give your favourite classic dishes a new twist the whole family will love.

I remember growing up as a boy in Italy and going around to my grandparents’ house. I would always be helping out in the vegetable patch. I would help harvest the remainder of the summer crops and then prepare the garden so that we could plant the new seedlings for the cooler months with vegetables like broccoli, cauliflower, Brussel sprouts, parsnips and turnips. This is a family tradition that I have continued on with my own children, who love to help me out in the garden.

Now that I am an experienced chef, I look back on these memories, and it inspires me to use these seasonal products with new ways to reinvent home style dishes.

I remember going with my parents to my grandparents’ house and arriving and as soon as you opened the door, the smells from the kitchen would just hit you - rosemary, garlic and lamb. There would be slow braising lamb shanks in the oven cooking away. Memories like these remind me how my passion for quality food has been shaped and encouraged by my family over the years and also how important it is to start 22

My family has always supported local business, and the butcher is no exception. Now that we live here in the beautiful Manning Valley, one of our favourite butchers for our meat products is McGraths Meats, Taree; they have fresh meats like veal, pork, beef, chicken and also great lamb shanks and meat balls. They buy local livestock, so you know it’s going to be good quality and support the local farmers. I think we need to support our local butchers; just go to your local shop and grab fresh lamb shanks and start cooking. It’s very simple food, but is delicious.

People think that braised lamb shanks are very hard to make; they aren’t - they are only time consuming. Here are some simple steps on how to make the most out of our fresh local lamb shanks this winter.

All you need to do is sear the shanks on all sides and then place them into a roasting dish with your fresh herbs. Add some ingredients for flavour like fresh garlic, chopped tomato, carrots, rosemary, oregano, onion or red wine, then cover with either stock or gravy. Cover the whole dish with foil and place in the oven on a low temperature; just don’t forget to check on them and turn as required.

I am teaching my chefs the traditional way that my grandmother cooked her lamb shanks, so that everyone around our local area can come and enjoy my family’s food and immerse themselves in Italian culture and cuisine.

am looking forward to hearing from Donna Rankin and the group of local ladies who recently travelled to Vietnam for a very special Mother and Daughter tour for her organisation, Heart to Heart. Happy Mother’s Day to all the lovely mums out there. I am sure I will see some of you; we always look forward to a busy day, and I love looking after all the mums, including mine, as that’s the only way I get to see her. Don’t forget to shop local when choosing a gift for your mum.

On the weekend of 2nd and 3rd April, I took time off to attend a weekend pallet furniture making workshop at The Green in Tuncurry, taught by the talented Shaun from the Pallet Palace. This workshop was just one of the many in the series of “UpLovers” initiatives that help to teach people how to turn trash into treasure. I had the most amazing time and felt incredibly empowered and inspired.

Sometimes empowerment can come to us in the most unusual ways; in my case it was the mastering of the dropsaw that made me feel like I could conquer the world ... Well, the pallet anyway. It was also a very special bonding day, where I met new people who were so very helpful and happy to share their

skills. And finally, I got to take a piece home, a lovely little hallstand that I am in the process of painting with Chalk Paint. The Green at Tuncurry is a fabulous initiative in itself, with passionate people who love what they do; this is an incredible example of what can be done with Council support, a keen community and great staff.

On Saturday, April 2, Bent on Food Cookery School was the setting for a workshop showcasing how to cook the low FODMAP way. Hosted by Dr Kerith Duncanson, an Accredited Practising Dietitian with great experience in the dietary management of IBS, the cookshop had a social focus, encouraging participants to share their own tips as well as build confidence in the kitchen environment.

The 22 participants all pitched in to prepare 25 low FODMAP recipes, sharing their tips and then enjoying their tasty creations at the end of the session. Kerith made sure the recipes made on the day featured a range of cuisines and meals: some of the recipes made included Japanese-style chicken, pumpkin soup, fish cakes, pesto, spaghetti bolognaise, low FODMAP grain crackers with roast carrot dip/tzatziki, granola and chocolate. Assisting Kerith were a group of dietitian colleagues, all

of whom love food, love cooking and know their FODMAPs. They helped to facilitate the workshop and answer questions within the small groups as they worked through their recipe preparation. The cookshop was designed to feature foods people following a low FODMAP diet can eat, rather than foods they can’t.

We were privileged to cater for the intimate wedding of Jayson Ryland and Heather Mather on Sat 12th March 2016 at the beautiful home of the groom’s parents’ home in Darawank. It was a small family wedding of 20 guests set amongst the beautiful gardens with a splendid backdrop of tall gum trees.

Heather is from Toronto, Canada, and the couple have recently moved to Melbourne after living in Vancouver, Canada for seven years.

Heather’s mother and father, Linda and Don Mather travelled from Toronto, Canada for the wedding, and this was their first trip to Australia; they later enjoyed travelling around Australia.

Heather’s friend, Emily Moore-Wickham, also travelled from Canada to be her witness, and Jayson’s friend, Tom Henger from Melbourne, also attended as their witness.

The lovely Sarah Julian from Tuncurry did her usual fabulous job as the celebrant.

The party dined on tasty canapes, including baked butternut pumpkin, local feta and spinach filo triangles, mini crab and Comboyne camembert quiches, sticky chicken wings in teriyaki sauce, mini pastrami muffins with mango and lime chutney and much more.

After canapés, a tasty cake made by Barbara’s Special Occasion Cakes in Forster was served.

The couple chose the backdrop of Black Head Beach for beach photos.

On Sunday, April 10th we were the chosen venue for the Thunderbird Owners Club of Australia to do lunch on the final leg of their Great Lakes Manning Valley visit. They had been staying at Diamond Beach and spent time out at Forster, where they displayed their amazing vintage cars. Twenty-five of them enjoyed lunch in the café, and their vehicles provided a great display in Isabella Street, admired by many locals who stopped by to take photos. Thanks for visiting our region.

First birthdays don’t come much bigger than this! 21st May will see the Taree parkrun celebrating one year since it first kicked off. It’s one of the area’s favourite all inclusive, social, community events, that encourages health, fitness and having fun! Why not get down to Endeavour Place Reserve to see Event Director Margaret Lewis and Run Director Janelle Jefferies and find out what all the excitement’s about …

H

ow did you first find out about parkrun, and why did you decide to become involved?

Margaret: My parkrun experience started in early 2014 when I visited my daughters in QLD. They asked me to run with them in parkrun at Sandgate. I was amazed at what I saw. There were over 400 people in the park warming up and getting ready for this 5 km run.

I did this on two occasions at Sandgate; the second time I paid a bit more attention to “who” the parkrunners were. What I saw was a community event that was empowering, inclusive, encouraging and fun. There were people of all ages and levels of ability, encouraging each other with smiles, comments and high fives. It didn’t seem to matter how fast you ran, or if you ran at all, just a sense of belonging to this community was what people were there for.

Janelle: As a runner myself and a member of the Facebook group “Running Mums Australia”, I was always reading about mums beating their PB (Personal Best) at parkrun or how much fun they were having at parkrun. I’d never heard of parkrun before, so I Googled it.

I immediately thought of Taree and what a great positive impact it would have on our community. I also straight away thought of the Taree foreshore as an awesome location for it. I never dreamed at that point that we would be up and running six months later.

Please give us a brief rundown on what parkrun is, and how it works ...

Margaret: parkrun is a free, weekly, timed 5 km run which takes place at the same time and in the same place every Saturday. While each event has a dedicated event team and Event Director, essentially, it is run each week by the participants. They put their hand up to take on one of the volunteer roles every now and then; this

What have you found to be the most rewarding part of being involved with parkrun?

Margaret: Definitely the most rewarding bit for me is the fact that parkrun is changing lives. I have had people families comment that parkrun is the single thing they have found that they can ALL do as a family. People who live with a disability say it’s the first time they have really felt part of a community. Being part of bringing parkrun to the Taree community and that in a small way, what I did has had a positive effect on someone … That’s really powerful and humbling. I’ve always loved my Saturdays, but now I love them for an entirely different reason.

The Slice of Haven Food & Wine Festival has become a leading

gourmet lifestyle event on the Mid North Coast social calendar, attracting tens of thousands of people to the Camden Haven region.

ach year organisers of Slice of Haven challenge stallholders to use locallygrown key ingredients, embrace the event’s vibe of indulgence and get creative to meet the yearly theme.

In 2016, Slice of Haven will be “Magic Beyond the Plate”.

For the first time the event will branch out into quirky, non-food related stalls. In sticking with their mission to support local small businesses, organisers stipulate all stallholders must meet the essential criteria of residing within 100 miles of the Camden Haven and provide fare that is predominantly made within the region, with a touch of magic thrown in.

In 2016, the entertainment at Slice of Haven steps up to inspire the senses too.

Bands such as Elk and Ghost Road will keep visitors grooving. Magicians Jay Scott Berry - the Virtuoso of Magic - and Magic Jake will perform on stage, as well as roam the crowd and surprise you with random tricks.

The beautiful actors from Bago Magic Theatre will bring the tale of Peter Pan (along with their incredible props) to Slice of Haven.

For a dash of quirky, musicians from CHUMS (Camden Haven Ukelele Musicians) will get strumming.

Dancers from Movement Studios will get visitors moving.

There will be plenty of space to sit back and chill, so bring your picnic blanket.

Little appetites will be well-catered for, with plenty of kid-friendly food, rides, face painting and the gigantic sand pit.

Held on Sunday, May 29, 10am - 5pm, and now in its ninth year, the 2016 festival will once again be

held on the scenic riverbank behind the Laurieton United Services Club. Entry is by gold coin donation, which goes towards assisting the volunteer groups which help make Slice of Haven so successful.

Parking is available at Bruce Porter reserve. This is a licensed event, so please no BYO food or drinks, and kindly leave your pets at home.

SPECIAL GUEST Chef Clayton Donovan will attend the 2016 Slice of Haven Food and Wine Festival.

The Nambucca-born celebrity is Australia’s only hatted indigenous chef.

He has written and featured on television shows such as Wild Kitchen on ABC TV. Clayton Donovan grew up on Gumbaynggirr and Bundjalung land on the Mid North Coast.

He started learning about native produce when he was four years old, out walking with his aunties and grandmothers.

Clayton trained as an apprentice chef in Sydney, before moving to England and absorbing knowledge and experience from the finest chefs and restaurants.

In 2008 he returned to Nambucca Heads to open Jaaning Tree (pronounced “jaa-nee”), a restaurant which combined Clayton’s international experience and his love of Australian native foods.

Clayton won the Australian Good Food Guide chef hat four years running. The Jaaning Tree business has now evolved to include media work, long lunches, pop ups and education.

“Native foods are something that a lot of chefs would die to get a punnet of,” Clayton said before the screening of Restoring Earth, a new grassroots documentary.

WINGHAM BEEF WEEK. WINGHAM BEEF WEEK HAS BEEN RUNNING SINCE 1987 AND IS NOW IN ITS 29TH YEAR IN 2016. CHRISSY JONES HAD A CHAT WITH THE PRESIDENT OF WINGHAM BEEF WEEK, PAUL RELF, AND FOUND OUT JUST WHAT’S ON DURING THE EVENT. ingham Beef Week (WBW) has a long proud history in the Manning Valley, with 2016 the 29th consecutive year of the event. What’s on, and where will the events be held?

The week-long event will be held again this year at Wingham Showgrounds on the 9th - 14th May. Over its 29 years, the event has grown and evolved to not only match the changing beef cattle dynamics within the Manning Valley, but also the beef cattle industry.

Originally, the event was largely aimed at the un-led carcase competition. However, due to the large involvement and interest of schools and local producers in led cattle, the led aspect of the competition has boomed. We are expecting 80 plus led entries, with 40 un-led entrants. As the number of younger competitors has increased significantly, the committee have recognised the importance of education and promotion of the beef cattle industry. This is the main reason why an education day was set up by the committee; the younger generation are the future of the beef cattle industry.

A relatively new addition to the Beef Week programme is a Live Auction. This initiative is aimed at improving financial returns of those animals auctioned. The auction will consist of the first three ribbon winners of the first three led classes, as well as champion and reserve champion led and un-led steers. This provides local beef wholesalers/retailers, restaurants, as well as the general public the opportunity to purchase the best of the best prime quality

beef.

Interested purchasers will bid for steers, which will be auctioned off by a local auctioneer. The winning bidder of the animal will also receive the ribbon won by the animal to display in their shop window to promote their quality of product they are providing. Over the years interest in the auction has grown, as people are starting to realise the great opportunity to purchase MSA graded beef.

The committee feels very strongly that Beef Week activities should centre on the education of children.

The Beef Appreciation and Cattle Judging and Parading Competitions have proved to be very successful, and we have had schools who have not competed in the past showing an interest in being involved this year. We are most fortunate in having Wingham Beef Exports as our major sponsor and through the cooperation of its staff, we are able to conduct educational activities for the students. Hoof and Hook Competitions are a great way for producers to follow their animals through the production chain and analyse their production methods to see if changes need to be made.

The Wingham Beef Week Committee has spent a great deal of time and effort in organising the various competitions and activities; because of this, Beef Week 2016 should be an outstanding success.

Grand Champion Steer - a 500 kilogram Limousin. One of your own, Paul; tell us about that …

Yes, they have. Twelve-month old Warrigal Levi, affectionately known as Levi, placed first in his class and then went on to win middle weight champion at the Sydney Royal Show. He competed against the champion school steer, lightweight champion and heavyweight champion to take out the Grand Champion steer of the show.

He also won his class and a silver medal in the carcase competition. He was the first steer that my wife, Janelle, and I have shown at the Sydney Royal.

Wingham Beef Exports paid out the top money, $8,250, to take home the Grand Champion steer during the Sydney Royal Show purebred steer auction. The Limousin steer, after being sold in cents a kilogram for 1650c/ kg (liveweight) surpassed last year’s auction top price by almost $2,000.

How long have you been breeding Limousins?

For around 10 years. We have been breeding Limousins on our Wherrol Flat farm, Warrigal Stud, with 25 breeding cows in the herd. We have shown stud cattle at the Royal Show

before, but this was the first time we have ever taken a steer down.

he facility processes up to 800 head of grass fed and grain fed steers, Eu steers and yearlings per day, 80% of which are British breed cattle, well known for their predisposition to quality marbling. As a testament to Wingham Beef Export’s further commitment to quality, it has also developed the Wingham Gold MB1 and MB2 grass fed programme, a regime that performs exceptionally well given the facility’s fresh pastures. The resultant product shows many of the characteristics usually found in grain fed beef, thereby delivering quality and value for money.

Livestock are sourced from NSW and Northern Victoria. Wingham Beef Export buyers purchase based on Weight at Works (WAW), which means they are bought directly from the producer and transported straight to the processing plant. This

purchase method has advantages by reducing handling and mileage, while ensuring quality control from paddock to plate. As an additional purchase option, Wingham Beef Exports has representation at all major livestock markets across NSW and Victoria.

WINGHAM SERVICES CLUB.

WARRIGAL LIMOUSINS. Founded on the banks of Caparra Creek 10 km west of Wingham, the stud name, “Warrigal”, is Aboriginal for Dingo.

Owners Paul and Janelle Relf first purchased a Limousin bull to use over their commercial cattle, and in 2006 purchased their first Limousin cow from Kippax Valley Limousins.

And after numerous visits to Kippax, Paul and Janelle were offered the herd of elite females, which have had success at Royal shows. These cows became the foundation females to Warrigal stud.

In 2008 they travelled to South Australia to Mandayen Limousin, the largest registered Limousin herd in Australia, having over 350 cows. Impressed by what they saw, the following year they purchased a stud sire, who did an excellent job, including winning sire’s progeny at the Sydney Royal 2012.

At this year's Sydney Royal Show, the stud bred either the sire or the dam of three of the six first place getters in the Junior Bull section, and went on to win Champion and Res Champion Junior Bull.

How does the future look? There are exciting times ahead. Our steer, Warrigal Levi, took out Grand Champion Steer at the Sydney Royal this year.

Levi had 12 mm fat on the rump and 6 mm fat on the rib and a massive eye muscle of 119 cm, live weight of 500 kg and dressed 300 kg; all this at just 12 months of age.

Later on this year, Warrigal Stud will have their first bull sale in Tamworth with two other studs, Red Rock and Harlees Limousins.

The Longyard Limousin bull sale will be held on the 31st August at the Tamworth sale yards; there will be 35 bulls plus potential show steers on offer.

You have a new chef; tell us about him?

WINGHAM AKOOSTIK. NO BULL. Wingham Beef Week will kick off on the 9th May. What involvement does No Bull Artificial Breeding and Training have in the event? On the 10th May between 9am - 12 pm I will be presenting information and a demonstration on Artifical Insemination for cattle at Wingham Showground. Students from around the state as well as this area will be attending.

Tell us a bit about your business ... I started in this industry 35 years ago. This began with growing up on a dairy farm at Marlee. After completing my dairy farm apprenticeship, I began my own business, which became No Bull Artificial Breeding and Training.

What services do you offer? The services I now provide; daily insemination, pregnancy testing, embryo implants, calf delivery, freeze branding, dehorning, castrating, semen sales and equipment. Also, refresher courses for farmers in Artifical Insemination and all other cattle husbandry.

How long have you been in this field? For the last six years I have been accredited to train people in Artifical Insemination from the National Herd Improvement Association of Australia.

This has taken me to Tocal Agricultural College in the Hunter, to Queensland and around the state of New South Wales.

Over the years I have been a guest speaker at: Cows Create Careers, Landcare field days, Ryag Youth in Agriculture and Manning Valley Beef Week.

A DESTINATION FOR MUSIC LOVERS IN OCTOBER Each October splendid sounds mingle with the stunning surroundings when the Wingham Akoostik Music Festival delights music lovers. This three day musical feast of local and travelling musicians has relocated to the Wingham Showgrounds, facilitating an ever growing array of performers, workshops, quality food and creative market stalls. Dennis “Jindaboonda” Jeffers was a much loved and respected community member and family man. His passing due to complications from pancreatic cancer related surgery has left a gap that can never be filled - but his family have remained positive in the face of their difficulties. Dennis’ wife, Kim Jeffers, nephew Daniel Kranz and daughter-in-law Amy Jeffers have organised some fundraisers to raise money for the Australian Cancer Research Foundation (ACRF) … the next one is a Postie Bike trek that will cover 3,391 km in May!

He passed away in January 2015 from complications due to surgery from pancreatic cancer related issues. He was an incredibly devoted, loving husband, father and adored pop.

The “tipped ya last” quote you may see associated with the trek is in regards to a game he always played with his grandchildren, where he would endeavour to be the last one to “tip” them before departing; they all loved that!

Dennis was passionate about our native environment and animals and generous with his time for our local community, including the Hallidays Point Surf Life Saving Club.

He was respected by our local Aboriginal communities, working closely with them in regards to bush regeneration.

Dennis was incredibly welcoming and compassionate to everybody he met, making you feel instantly relaxed and comfortable within his presence.

His passing affected so many people so deeply, and he will forever be a role model for us all to look up to!

The name Jindaboonda was given to given to Dennis by a family friend, Terry - meaning keeper of the lake.

Daniel: The Hallidays Point Lions Club came on board in February and in a relatively short time, have achieved so much for our cause.

Not only have they helped us to raise money locally, but they have organised various other Lions Clubs to assist us with lunches and fundraising along our way. Their enthusiasm and drive to assist us is astounding. Thank you so very much to Ray, Deb, Noel and all the other Lions Club members who have eagerly jumped on board.

A massive amount of thanks and gratitude also has to go to Kate at Thargomindah and Haley at Coonamble for organising our stay in their towns, as well as getting those local communities involved.

High intensity in short bursts will increase your metabolic rate (the amount of calories you burn even when not exercising), your fitness, your fat burning capacity and your muscle tone. And best of all: it gives you a kick of happiness hormones that will take you through the winter with a smile!

hat can we expect from you at the Mental Health Forum?

The Mental Health Forum will give people an opportunity to reflect on and express their thoughts and experiences about mental health and recovery. People who may have experienced mental illness or cared for a loved one who has experienced it will be able to give hope and even some guidance to others about how to maintain or regain mental health and wellbeing.

This is particularly important when we know that mental health services often struggle to cope with demand and are not well linked to the range of other services people often need in order to achieve recovery.

Stories about how people can achieve recovery with or without the assistance of formal mental health services are particularly important when services are not able to cover the population who need them due to inadequate funding or service design. Currently, this is the case and is likely to be so until the full implementation of the NSW Strategic Plan for Mental Health is implemented across NSW and funding and resourcing at the federal level reach the necessary levels.

There is a lot going on in health and mental health reform under the NSW Plan and other processes like the funding of Primary Health Networks to commission new community based mental health services or even the new community services called for under the NSW Plan, but for these services to be truly effective and actually meet the needs of our most vulnerable citizens, they need to be based clearly on the needs of real people. We can only attempt to tailor our services in this way if we hear from such people about mental illness and how our services have impacted their lives and

Why is it important to acknowledge the need for quality services for people living with mental illness?

Mental health issues are usually behind all of the problems we have in delivering services to people with so called “complex needs”. The best way to address such complexity is to address the problems early, when they are easiest to resolve (just as for any other health problem), and this means having a system that is adequately resourced and of sufficient scale and scope to meet the needs of all Australians who require them. After all, people experiencing mental illness are often poorly placed to insist on quality in the services they receive, and their carers are often excluded from knowing enough about what is going on to help them. This places a high level of obligation upon us all, and the services in particular, to ensure that the services which are provided are of a high quality, even if the recipients cannot complain when they are inadequate.

i Deanne. What’s your background in the Great Lakes area?

I moved to Forster in 1985, where I worked in hospitality at a lot of places, but two iconic ones were Tudor House and Forster Beach Motel.

We travelled for a few years, had some awesome adventures and ended up living in Far North QLD, where I worked in some beautiful five star retreats.

We returned to Pacific Palms in 1990 to build our home and begin our family.

Pacific Palms has been an amazing place to bring up my two beautiful children and create a business.

You’ve studied extensively in the health and wellness fields, and have qualifications in many areas - including massage, Pilates, and personal training. What inspired you to work within the health industry?

When my children were born, I was inspired to learn as much as I could about health, to give them the best start in life, so I was always reading and doing workshops on nutrition. Working in hospitality involved night work, which was not easy with the kids. I remember at one stage I had four jobs on the go as a casual, just to make ends meet.

I decided one day I would create my own business and before I knew it, I was studying to be a Naturopath. My first step was to complete my Massage Diploma to get my business established.

What’s the history behind your business in Pacific Palms, Shen Wellness?

A personal goal is to offer workshops to assist people with RRV. We’re hosting a relaxation night at Pacific Palms Community Centre on Wednesday 4th May. The night is open to everyone. It will only be $5 to cover costs.

The most new and exciting thing happening with Shen Wellness is hosting workshops specific to women’s health. Women need support and reassurance as their lives and bodies change; it can be very confusing, especially with fluctuating emotions. Learning simple tools to get through hot flushes and body image has been invaluable to me.

hat circumstances led to the establishment of The Heart Centre in Commerce Street, Taree ... and when did the doors first open for business?

The Heart Centre opened its doors to patients on the 1st Feb, 2016. Dr Sesh moved to this location as a part of the natural evolution of his practice. As it has expanded, so has the need for a space where Dr Sesh can efficiently provide evidence-based comprehensive diagnostic and management strategies for cardiovascular conditions. The Heart Centre offers state of the art non-invasive cardiology services (echo, stress echo and consultation) for the Manning Valley and Great Lakes communities. Dr Sesh continues to provide invasive cardiology services (angiograms and stenting) at the Mayo and Newcastle Private Hospitals.

Who are the staff/individuals involved with the business, and what are their various roles?

Tell us a bit about the building the business is housed in at 39 Commerce Street.

What is known about its history?

With thanks to the Tinonee Heritage Museum, we were able to discover the early history of the building. It was originally located in 2 Manchester Street, Tinonee and was known as the Freemason’s Hotel. It was operated by Mr. Arthur Else during the mid 1860 - 70s, Mr. William Dumbrell, and Mr George Else until the late 1880s.

It was closed down in 1890 and subsequently occupied by Mr. Thomas Badger and family. It was reopened in the late 1890s as the Royal Hotel and operated by Mrs Elizabeth Ball. Mr William Mooney followed as the proprietor from 1911-14.

It was later closed in 1919 and the last proprietor, Mr George Bird, had the building moved to its current location thereafter.

Unfortunately, since its move, any historical documentation is unavailable to us. Anecdotally, it has been a private residence, The Blood Bank, The University of Newcastle, and the Pre-natal Clinic for the Manning Base Hospital.

Extensive renovations occurred to ensure the building was ready for business.

Describe the changes made (externally and

internally) and how these have helped the business …

We started on the inside, removing the original floor boards to ensure the structural integrity of the building. Unfortunately, we were only able to retain a small portion of the boards, and they are now located in the entrance/waiting room of the building.

A couple of partial walls were removed and beams put in their place, in addition to two extra walls. The bathroom was demolished and is now the patient toilet with disability access. Internally, we have attempted to restore the building to the Edwardian era.

As the building is Heritage Listed, we did not make any external changes, only to replace rotten windows and boards. A fresh coat of paint and landscaping has provided a breath of life, and the building is now disability access friendly.

Given the layout and the interior decoration, we are able to provide our patients and staff with a calm, friendly and aesthetically pleasing environment.

What were some of the interesting details/ items uncovered once renovation began?

As the building has had a long and varied history, initially, the internal space had been heavily modified to accommodate the Blood Bank.

However, after stripping back multiple floor coverings, we uncovered original floor boards and walls. Unfortunately, there were too many patches in the floor to be able to keep it all.

There were what appeared to be messages for the Blood Bank written on the original walls! We kept some of the boards from the internal walls that now make up the reception desk. They were sandblasted to remove the old paint (which was probably lead paint).

ow did you first become involved with the Mother’s Day Classic event what’s your personal experience with cancer?

My mum passed away from breast cancer, and ever since then I had always wanted to be involved somehow to raise funds for breast cancer research, but I just didn’t know where to begin.

Mother’s Day morning in 2013, I was watching Sunrise and they were promoting the event, which I thought was a fantastic idea. I looked up their website, saw that there was a run in Forster that day, but I had missed it. It got me thinking that as I hadn’t heard or seen any advertising for it, maybe I could help to make it bigger and better. So I got in touch with the organiser, Marg Lewis, told her my story and that I wanted in - and have been organising it with her ever since.

How many years have you been involved with the event for now, and what have been some of the highlights of your involvement?

This will be my third year of being involved - and many more to come. There have been many highlights over the years but to me, just seeing the participants, young and old, come all dressed up in pink ready to support the cause has been the biggest highlight for me; just knowing there are so many people 42

Whisper of Lace After many years of helping the women of the Manning Great Lakes and beyond with their post breast surgery bra and prosthesis fittings, Jennifer Presland has retired and Fiona Jude from Whisper of Lace will now be taking on the role.

Fiona has owned and operated Whisper of Lace in Tuncurry for 3 years. Fiona is currently undergoing training and courses to ensure that she can guide and correctly look after women who are in need of prosthesis bras.

This is not something that Fiona is taking lightly and would like to ensure her customers that once she has completed her course she will be fully equipped with the knowledge to help all women when it comes to this type of bra requreiment, whether it be for a proper fitting for a brand new bra or for customers wanting or needing to update their exsiting forms.

The Medicare rebate of $400 will still exist for each breast form needed and for customers every two years.

TRAVEL EDITOR SUSIE BOSWELL TOOK A WEEK OFF IN 2016’S PICK DESTINATION, THE COOK ISLANDS. SHE’S STILL OVERWHELMED (AND TANNED).

here are some 20 different descriptions for the colour blue. Yet the word hasn’t been coined, nor the camera invented, that can capture the exact shade of blue that greets visitors to the world’s most amazing lagoon: Aitutaki, Cook Islands.

More ethereal than acclaimed Maldives and Bora Bora – the latter a mere hour to the east – the hue defies belief, even right here with my own eyes. From the catamaran I dive in, hoping to grasp it somehow; yet, submerged, the lagoon is crystal clear and I’m face to face with six blue-finned silver-skin trevally – big boys, a metre long. A school of rainbow fish pirouettes insouciantly by, then I’m among hundreds of dainty garfish, cookie-cutter copies of each other, slicing the surface diagonally like a canteen-full of tiny silver knives flung aloft.

What a wonder, the Cooks!

My visit to Aitkutaki is a full-day tour by air, sightseeing “truck” and cat from the main island, Rarotonga. The flight’s around 45 minutes by smooth Saab jet and the tour worth every bit of NZ$493 (say $450) for adults, with transfers, snorkel gear, lunch.

I prefer the mini-car option for carrying heaps of beach gear and in case of showers. But by whatever means, explore you will: Rarotonga – with a stunning jagged-peaked volcanic mountain at its interior - is encircled, yes, entirely, by a magnificent wide lagoon, no exclusive beaches at the waterline. A circumnavigation

of Rarotonga covers just 32km on a pretty sealed road, yet with many surprises. You’ll find your own stretch of sand at maybe 50 appealing spots: park free under a palm and plunge into the amazingly warm, translucent golden-based lagoon. Buy a coconut from a boy’s roadside stall. Pause on the grass at Charlie’s charming outdoor eatery with fresh food choices, kitchen housed in half a silver shipping container. Call in at The Hidden Spirit, a simple cafe set in the island’s lushest gardens: giant ginger plants, trailing heliconia, a lovingly-tended oasis; no need to dine if you’d rather just wander. Take a beach buggy into the interior, picnic by a waterfall. Admire scarlet hibiscus, sunny allamanda, fragrant frangipani everywhere.

By night, join a three-course progressive dinner hosted by a trio of welcoming Kuki (Cook Islander) families, or an “ura” (hula style) dance display. Buy local black pearls.

Collect striking CI stamps. Souvenir the remarkable $3 CI note or frilly-edged or triangular gold coins (you can’t cash them at home). Fish!! Dive. Kite-surf. Cruise in a glass-bottom boat. John, tell us about your background in exercise physiology ...

It’s been a wild ride, but I’ve been an exercise physiologist for nearly eight years now. I’ve had a pretty diverse career, starting out in sport with athletes working on performance and injury management, but for the last six years I’ve been lucky enough to work with real people with real problems like rehabilitation and chronic disease management.

You mentioned your work with athletes and sporting groups. What did you take away from this time?

What sticks out in my mind is that just because you’re big, doesn’t mean you don’t have tough times. I think it’s how you handle those tough times that matters. After being a frequent visitor to the Mid North Coast in my youth, I decided that this is where I always wanted to end up.

When I finished uni, we got married and I was working several jobs and just as I was offered one in Sydney, something in Taree popped up. We had such great support once we moved up here, that we just know this is where we want to raise our family. We’re here to stay.

Good news! Where do you hope to see Kinetic Medicine over the next five years?

We’ll be opening our dedicated rehabilitation facility in the middle of the Taree CBD in the next few months, and I’m hoping in the next few years that we can see our satellite clinics in Harrington and Wingham outgrow their current homes.

I want Kinetic Medicine to be a part of a change in the healthcare landscape, and locally our vision is to have helped 20,000 people in our community by 2020.

“This event is really important, because it brings creative people together and provides a forum for us to talk about ourselves as a collective industry, and not just a bunch of individual artisans.

Cath Young from My Bearded Pigeon will be talking about her experience in designing, printing and sewing fabric into cushions and wall hangings and selling them from home in Bellingen to people across the world through Etsy.

"Etsy is ideal for anyone wanting to start a business; the outlay is tiny, and your shop can

elcome to Great Lakes Weddings. Whilst there may be a perception that weddings are a thing of the past, figures from the Australian Bureau of Statistics show that the actual number of weddings has continuously increased over the past five years. 118,962 weddings take place in Australia each year; that's 326 each day.

More than you thought? Well consider this - the Australian wedding industry is worth a staggering $4.5 billion p.a. with the average wedding costing $36,200.

And the good news continues. 89% of weddings are performed in the bride's home state. This not only makes segmentation and targeting easier, but also enables us to leverage off our existing customer base by cross promoting via our digital and social media platforms.

The most popular months for weddings are November and March, followed closely

by April. Social researcher Mark McCrindle also documents this migration away from the traditional summer wedding, citing greater competition for venues, increased prices and increased flexibility with taking leave from work.

This growing preference for the shoulder season is clearly a desirable option for a region looking to grow visitation outside of the traditional holiday periods. And who knows with our warm winter months and all that they bring with brilliant water clarity, stunning sunsets etc. we might yet be able to extend this preference further into our off-season.

Many emerging wedding trends also play very much to the strengths of the Great Lakes. Today, couples are looking to offer guests a location and celebration that is truly unique and bespoke. There is an increasing desire for more varied locations for ceremonies, importantly with an outdoor aesthetic.

Beach, lakeside, outdoor cathedral, winery, lighthouse - the list of options is endless ...

The wedding is also being turned into a minibreak for guests and the wedding party alike.The economic impact can therefore be considerable and stretch way beyond traditional wedding services. The flow on effect of a wedding can

be very visible - I know my queue for a Sunday morning coffee is sizably longer when there's a wedding in town!

And of course, it gives us all an amazing opportunity to showcase our region and implement strategies to attract these wedding guests back for another visit. However we have some key issues to consider if we're really going to make the Great Lakes the wedding destination of choice in NSW. Collaboration Just like the wider tourism industry, the only way to grow a regional brand with a consistent message and deliver a coordinated professional product is for businesses to work together.

Getting Online & Social Aside from a few large corporate online wedding platforms, it appears that very few wedding businesses have a strong digital or online presence. Indeed one of the most common complaints we receive is how hard it is for brides to source information on Great Lakes wedding suppliers.This is probably not that surprising when you consider that most within the wedding industry are independent small businesses and are therefore reflective of the general lack of digital uptake by SMEs (only 33% of SMEs had a social media presence, Sensis Social Media Report 2015). Putting this into context, brides and grooms may be getting older, but 86% of them are still under 34 years old, which means that most are “digital natives” who will research and plan their wedding almost entirely online. How many potential customers are we losing by not being visible and active online?

But, this problem is not insurmountable. With a successful "Great Lakes Weddings" launch at the Sydney Bridal Expo last week behind us, we are excited to look to the future and work with our wedding partners to help build a wedding industry that is the envy of destinations up and down the coast.

COUNCIL MERGERS THE TOPIC OF THE YEAR HAS BEEN, AND MOST LIKELY WILL BE, THE POSSIBLE MERGERS OF THE THREE LOCAL COUNCILS. I WOULD LIKE TO APOLOGISE FOR INADVERTENTLY STATING IN THE PREVIOUS COLUMN, THAT THE GREATER TAREE COUNCIL WAS VIEWED AS BEING “FIT FOR THE FUTURE”, WHEREAS IT HAD BEEN ONLY DEEMED AS A STAND-ALONE COUNCIL.

ot withstanding previous announcements from the State Government, every option re these mergers is now back on the table. All three Councils are declaring their first preference as stand-lone Councils. However, the Great Lakes Council has decided that if the State decides to go with mergers, then the GLC will support this on the basis the merger is to be set up with a structure and support that will enable it to succeed.

In this regard, it is notable that the GLC community stood up to be counted. The public meeting held by the appointed independent facilitator in Forster was extremely well attended and had nearly 50 speakers largely in favour of the GLC being left alone, and very few for mergers. This response was far in excess of other Council areas.

As the State Government seems bent on merging Councils at any cost, it would appear that after all the argy-bargy has passed, mergers of some form will happen. So, there will be change.

Any change in the environment, be it climate, social or political, will present new and exciting opportunities and it is up to the business communities to assess these, accept the change and adapt as well as able. Not all change is necessarily progressive, but progress is only achieved through change!

Social Environment There is no doubt that we live in a very great part of Australia. This was emphasised to the Forster Tuncurry Business Chamber at a

breakfast meeting, when it was addressed by Detective Chief Inspector Peter Mckenna. As the manager of all crime investigations for the total Great Lakes area, he is in a position to advise on the level of criminal activity therein.

In a captivating address, the Chamber’s members present were made aware of many insights to local crime. In doing so, the Chief Inspector highlighted the results of many recent operations, ranging from the more serious to the juvenile.

It seems farcical to say that they manage crime in the area, but that is exactly what they do, with their level of proactivity and relationships with the community. Currently, although there has been a lot of publicity in relation to drugs, the major concentration of effort is centred on domestic violence, which will continue as a priority.

This has resulted in the Great Lakes being recognised as an area with a low, if not the lowest, level of all types of crime in the state.

Obviously another reason to live in and enjoy the Great Lakes.

Entertainment The FT Business Chamber would like to announce to all members, interested businesses and public, the holding of a formal “Glitz and Glamour Ball” on the 30th July 2016 at the Forster Club premises.

It is intended to be the social event of the year within the community, and an invitation is extended to both staff and customers to attend. A prestigious band has been engaged, which should set the theme for the event.

Hank and Robyn built the business from scratch some 38 years ago, starting the operation side on 1st August 1978.

Now in 2016, son Dane Heller, Manager and his wife Jennifer, Office Manager, have purchased the business.

At the beginning, Hank and Robyn had started to assemble wall frames for their construction company, Heller Constructions, and at this time were sourcing trusses from John Harrington of Dyers Crossing. As the demands of the building industry in the Manning Valley kept increasing, WFT had to source larger premises and purchased a property at 2 Flett Street,

Wingham, in 1977. Assisted by many people, working with the construction company at the time, Hank and Robyn commenced building the current factory site, where they started to produce assembled wall frames to the general public.

John Harrington was experiencing the same problem, so asked if he could come and work in the factory premises. They eventually purchased John’s truss making business and commenced manufacturing trusses at 2 Flett Street, Wingham, in the factory known today as Wingham Frames & Trusses Pty Ltd.
