Many of you would know Andrew Farr as the voice behind the mic of the Brekky Show on Great Lakes FM. But now, Andrew shows a different side of himself … Due to a health scare he underwent recently, he’s prepared to share his personal story with the public, in the hopes that what he’s experienced can benefit others in the same situation …

H

i Andrew. Please tell us a little bit of your family/ work background ... what originally brought you to the Great Lakes area?

Although I’m originally from the UK, my Dad was born in Australia. He’d tell me stories about the beautiful beaches and vast outback which really inspired me, and so in 1980 I bought a one way ticket to Sydney.

It’s a decision I’ve never regretted, especially because I met and married a wonderful lady called Regina.

We originally rented a small flat in Sydney and with our first baby on the way decided it wasn’t a great place to bring up a family, so we moved to Gosford on the Central Coast. Even that got a bit crowded after a while, so we looked further north and discovered a pretty village called Nabiac. We’ve been living in Nabiac for the last 15 years and it’s a wonderful place, with the hinterland on one side and the beautiful beaches of Forster-Tuncurry on the other.

How and when did you first become interested in radio broadcasting?

It all started for me when a family friend said she thought that I had a nice voice and suggested that I should get a job in radio. That was in 2003, so I came knocking on the door of Great Lakes FM offering my services as a volunteer. Eventually I ended up hosting a show on a Sunday and took to it like a duck to water.

You’re currently the General Manager of Great Lakes FM (101.5 FM) - a position

you’ve held for the past eight years. What does this role involve?

My day starts at 4:30am, when I get up and prepare to host the Brekky Show, which goes to air from 6am to 10am, Monday to Friday.

After that, the day is taken up with meetings, interviews, rosters, production, voiceovers, correspondence etc.

You had a major health scare earlier this year. Please fill us in on what your early symptoms were, and how your condition was diagnosed?

The first indication that anything was wrong with me was in February this year when I began to turn a yellow colour and was diagnosed as having jaundice. Tests quickly revealed that I had a blocked bile duct. After having a small operation to insert a stent, I was told that it was a cancerous growth on the head of my pancreas that had caused the blockage. After consultation with Dr Chen from John Hunter Hospital in Newcastle, I was told that I only had six months to live, and the one option I had of extending my life was to undergo an operation known as a “Whipple” procedure.

Explain what the term “Whipple” procedure means; how did it get its name?

I think it is best summed up by Jill Margo, Health Editor of the Australian Financial Review, who recently described the procedure thus: “The operation evokes such dread that people whisper its name. Called a ‘whipple’ after Allen Whipple, the surgeon who devised

it early in the 20th Century - it is said to be among the most radical of all operations.

Brutal on the body, it involves the removal of the head of the pancreas, the duodenum, a portion of the common bile duct, the gall bladder and sometimes part of the stomach. Afterwards, the remaining organs are reconnected, a procedure requiring skill, experience and meticulousness. Less-thanperfect stitching can lead to leakage with life-threatening consequences.”

She’s quite correct in her description of this procedure in that it “evokes dread”, and that’s certainly what it evoked in me, particularly after doing much research about it on the internet. On the morning of my operation I vividly remember kissing and hugging my wife and three children without trying to make it sound like I was saying my final goodbye, which I was afraid it might be.

Since you underwent your own surgery on March 18, how have you been feeling?

What is your current health prognosis?

The operation lasted eight hours and I was in hospital for 12 days, but I’m glad to say I survived and I’m now back at work. I’m currently undergoing a course of chemotherapy which will last for another four months, and I feel very optimistic about the future.

What are some of the main points you’d like to share with the public about your cancer journey ... What’s been the steepest learning curve or eye-opening experience for you?

Life can change in the blink of an eye, and it’s never as precious as when you believe it’s going to be suddenly taken away from you.

Great Lakes FM broadcasts a regular programme called Good Health.

Oncologist Dr Edward Livshin will be a guest on this programme on September 9. What time should listeners tune into this broadcast, and what will you and Dr Livshin be discussing?

Good Health is hosted by John Healy and goes to air every Wednesday at 11:15am. On September 9th I will be discussing my illness and operation and ongoing treatment with Dr Livshin. My intention is to share this experience with the listening audience and hopefully reassure anybody that has a “Whipple” procedure looming over them that outcomes can be both positive and beneficial.

Final say: I’ve been very moved by the encouragement and support that I’ve received over the last few months. It’s been an incredibly stressful time for my family, and particularly for my wife, Regina, who has stayed by my side constantly throughout this ordeal.

The staff and volunteers at GLFM as well as listeners have sent me cards and good wishes, and friends have helped us out at home. It’s very gratifying to know that there are such caring people out there, and I’d like to sincerely thank everybody for their concern and support during this difficult time.

THE MANNING VALLEY CHORAL SOCIETY PRESENTS ITS 2015 CONCERT ON SEPTEMBER 19TH AND 20TH. IAN SAXBY FROM THE GROUP CHATS TO FOCUS ABOUT THE UPCOMING EVENT...

W

hat an exciting event; what will the group be presenting on the night?

This year's concert is entitled Hope and Glory. It celebrates the golden age of choral music in the British tradition, which started in the era of Queen Victoria.

The programme will be choral works of varied styles: from the grandeur of ceremonial anthems, through lighter fare including some rollicking folk songs and even a medley from the beloved Gilbert and Sullivan.

We are also including some works to reflect on and commemorate the immense tragedy that was the First World War. The programme was selected by me and the Society's musical director, Deirdre Sutherland.

I was personally inspired by the quality of the choir’s 2014 Christmas concert and had heard that the Society was looking for concert themes, so I proposed the theme, then started researching the available repertoire.

Where did the idea for the programme come from?

With the various World War One centenaries, it seemed natural to commemorate this world-changing event.

When I started researching the history of the music and background of the era, it struck me that the hundred years leading up to the War were one of the most peaceful and progressive that Britain (and its colonies) had ever seen.

It was a period which saw most of those changes - in science, communication, transport, health and politics - which are now taken for granted as the basis for our modern

Why has the choir chosen churches as the venues?

Deirdre and I felt that a church acoustic would be needed to do justice to much of the music. Also, the orchestral scale of sound possible with organ accompaniment will make the best of the grander pieces. Sydneybased musician, Heather Boyd, will be organ accompanist for our programme, while local legend Joan Saxby will play piano where required. Several of the items are performed “a capella”: that is, voices only.

What is the history of the Manning Valley Choral Society? Can anyone join?

The Society was started in the early 1980s by famed Taree singer Kevin Mills. It is a community-based open choir open to anyone and is a great way to develop your singing talents in a friendly and supportive environment.

Rehearsals are generally Thursday nights at 7pm in the Taree Church of Christ Hall, 95 Victoria Street, Taree. Members pay a small weekly fee to participate.

The Choir is run by an elected committee which appoints a Musical Director for each production. Current President is Robyn Rankin.

Milestones for the Society have been such events as The King and I (first ever show to be produced at the new Manning Entertainment Centre in 1988), Gilbert and Sullivan’s Trial by Jury performed in the Taree Court House and Faure’s Requiem performed with orchestra.

Current Musical Director, Deirdre Sutherland has also been coordinating a junior choir, the Valley Voices in association with the Society.

i Brian. Please introduce yourself ... What made you decide to call the Manning-Great Lakes area home originally?

Liz [my wife] and I met, married and lived in Wollongong, where we raised our two children and spent our working careers as Radiographers in the local hospitals and private practice.

When the children graduated from university, we took the opportunity to travel around Australia. We fell in love with the Manning-Great Lakes area because of its pristine waterways, stunning scenery and great lifestyle - especially fishing and bowling. We moved to Forster in 2010 and have not regretted a single moment since settling here.

What’s your first recollection of picking up a camera ... what got you hooked on photography?

My first camera was a second hand Zenith SLR in 1966, a clunky old thing with a mouldy lens, and I set about documenting family life.

My next camera was a second hand Olympus, but I never really got beyond the family and holiday pics. Rather, I pursued my interest in painting and became a professional Watercolour 8

Artist and Sculptor, which lasted for over 25 years, photographing our travels as a resource for my paintings. I am represented in collections throughout Australia and overseas.

In 1998 we joined Wollongong Camera Club as videographers, making travel, instructional and documentary videos. I moved on to develop an interest in stop frame animation using photographic stills.

Our house in Forster fronts on to permanent ponds, where we discovered a lot of resident birds, so in 2010 I bought a new Pentax Ultrazoom camera. Then I was hooked. I joined Forster Digital Photography Club, and being able to work in a digital environment where the only cost is the equipment and access to the internet all make photography a fascinating and enjoyable hobby.

Your photos of Australian birdlife are simply beautiful. Why birds - what fascinates you about them?

In my early teens I kept cage birds as a hobby and exhibited them without much success at the local shows. I love birds for their beauty, their character, and the marvellous diversity of colour, form and environment that they inhabit.

I know I will never live long enough to see and photograph all the birds in the world, but what a

What are some of the challenges associated with photographing birds? I imagine they can be difficult to capture well, as they’re often so shy ... and they move quickly!

Birds inhabit their environment very well, and the biggest challenge is to first find them. The Manning Great Lakes Birdwatching Club is a huge asset, as they have taught us how to look for birds.

The best photo is an uncropped photo, and this means getting very close, despite having big zoom lenses. The terrain can be a big impediment, be it beach, open water, swamp, desert, scrub, eucalypt or rainforest, it all contrives to make the birds difficult to photograph.

Some birds will stand still for long periods, while others are frantic and never rest for any more than a second or two - especially the small birds such as thornbills.

Forster Digital Photography Club allows me the chance to share photographic experiences and keep abreast of all the developments in the world of photography. Although I tend to specialise in birds, I try to enter images in most set subjects.

I am a member of The Feathers and Photos group and exhibit on their website. This is where some of the very best bird and wildlife photographers exhibit their work and offer constructive critique for those who require it.

i Minnie. I believe you started gigging around the time you were 15 - that’s impressive!

How nervous were you in those early days of

performing?

Actually, I’ve been gigging since I was about 12 - 13, but 15 was when it started to get more serious. The first few gigs I ever played were definitely a nerve-wracking experience - but that numbed down very quickly, as the enjoyment definitely started to override the nerves.

You originally hail from Crescent Head.

What did you most love about growing up there?

I was lucky enough to grow up in beautiful Crescent Head. The pub and the bakery were definitely a highlight! We lived just outside town on a big lot of land with no neighbours so I could play my instruments as loud as I liked and whatever time I liked. That was definitely a plus!

These days, you call Harrington home.

What brought you here to put down some roots?

I spend half of my time in Stuttgart, Ger-

many and half of my time touring over here in Australia and living out of the back of my trusty Hiace Van, but my folks decided to move down here a few years back, as it was time for a change. Whenever I’m not touring, it’s always nice to visit and get a good fish in. It’s a great little town with a great community.

From what I’ve read, you have some pretty big musical inspirations - Sarah McLeod from The SuperJesus and Suze DeMarchi from Baby Animals, among others. But, what inspired you to first pick up a guitar ... and how come you didn’t give up playing as so many other people do, when they find it isn’t as easy as it looks?

I was very lucky: when I was about six my eldest brother bought me my first guitar, and I stayed in my bedroom and played for hours and hours until my fingers bled. I didn’t give up, because it has brought me and still brings me so much happiness.

And of course, you’re a singer, as well as an amazing guitarist. Describe your current sound for us ...

Hmm ... I would say it’s kind of like dirty riff rock. I’ve fitted out my acoustic guitar with a few single coils, so I can get the grit like an electric guitar does but whilst still having the attack of an acoustic guitar.

How much songwriting are you doing these days? You tour and play very extensively, so how do you find the time between gigs to write?

I do a lot of songwriting in between touring and what not. I find most of the time I’m writing while I’m driving to the next show in my van - then I seem to try and trial it at the show that evening. Then if it works, it’s a keeper!

Your album, Voodoo and Honey, blew me away. How did you find the whole process of writing, recording and marketing - were there any valuable lessons learnt there?

Thank you, I really appreciate it. Voodoo and Honey was definitely a life changing experience for me, as I was experimenting with new sounds and styles. All of the tracks on the album seemed to just come out of nowhere.

It was my first real go at an album, which held lots of trial and error. It was a big learning curve for me with the recording and marketing side of it; I still love it for what it is.

You’ve been over in Germany recently.

What were you up to over there?

It was my fifth time heading back there to tour. It’s really hard to stay away from the place - the shows and festivals there are incredible. The last journey I made over there I recorded a brand new live album in the city I was living: Stuttgart.

Being there for majority of the past five years, I have really grown a connection to the place and thought I would love to make something special and have the community involved. The amazing Hussy Hicks featured on this, and it was a very special night for me, as we had to turn away people because it was packed full!

What’s the latest news ... anything exciting in the pipeline for you?

I’m touring Australia until the end of the year and have around 50 shows booked - so playing and travelling is on my agenda for the next few months. Then I think I’ll take a little bit of time off before heading back to Germany to prepare for recording my next album.

anic or opportunity?

The recent fall in share markets throughout the world has caused some varied reactions, with some seeing this as an opportunity to purchase quality shares cheaply, while others get worried and contemplate a flight to cash.

The paradox is that it is easier at the moment, to manage the more growth focused portfolios for people who are content to accept market volatility, compared to conservative portfolios that have a higher exposure to the lower performing cash and fixed interest asset classes.

There is also the challenge for people to be focused on their financial needs and objectives and not get caught up with trying to pick or strategically move in and out of asset classes.

Sure, there may be opportunities to re-balance portfolios while the market has retreated, in the same manner that taking some profit and re-weighting when there has been a surge in the market can be appropriate.

However, to totally move in and out of asset classes seldom works over the long term, and that was the mistake of some people in the wake of the Global Financial Crisis (GFC) Major World share markets (Australia excluded) have recovered the GFC losses and offered some significant returns to investors.

It has largely been overseas shares and listed property which have provided healthy returns in the balanced and growth type portfolios over the past few years.

and falling bond yields, traders can come into play and shorten the duration of portfolios or by selling higher yielding bonds at a profit, boost income from the portfolio. That opportunity no longer exists due to flat line interest rates.

What are the options?

Each individual should have their own longer term financial objective, and riding out market movements such as we are now experiencing is part of the deal.

Cash and fixed interest in a portfolio does, however provide a buffer, security and liquidity to ride out the volatility that equity markets have and regardless of low interest rates, having liquidity is a must.

Just as the solid performance of listed property and overseas shares carried the less favourable return from Australian shares, the cash and fixed interest assets in portfolio provided the buffer to lessen the impact of retreating markets and provided the opportunity for managers to capitalise on buying opportunities.

Maintaining a strategy that is appropriate to your individual objectives remains paramount in the face of yet another fall in world markets, rather than panic selling without first getting advice from your financial adviser. That advice may even be to grab the opportunity and invest more!

By contrast, the more conservative portfolios have suffered from low cash rates and a lack of volatility on bond markets.

inance Minister Dominic Perrotet has announced $1 billion worth of benefits for injured workers will be restored. Previously severe restrictions on who can receive compensation for injuries in the workplace will be relaxed.

The changes come after a determined campaign by Stacks Law Firm and groups representing injured workers against the harsh and severe cuts to workers compensation made by the government in 2012. These cuts resulted in the slashing of medical benefits to injured workers including those who had sustained serious injury in workplace accidents.

Perrotet said the government was now moving to a fairer system that will better support injured workers. Improvements in benefits will include increased entitlements to medical expenses, prosthesis and hearing aids.

The threshold for injured workers with permanent impairment who are entitled to lifelong medical expenses will be lowered from 30 to 20 per cent impairment to the body.

People who are currently denied benefits for prosthetics and hearing aids will get them for life. Medical benefits will be extended from 12 months to two years beyond when they last received weekly benefits for people

with less serious injuries that are up to ten per cent impairment.

For those with more serious injuries that involve 11 to 20 per cent impairment, medical benefits will be provided for five years beyond the date those people last received weekly benefits.

The lump sum death benefit will increase from $524,000 to $750,000 and funeral expenses will rise from $9,000 to $15,000.

The changes go to Cabinet on Tuesday. They also include a major overhaul of WorkCover to address a conflict of interest in its dual role as both safety regulator and insurer.

WorkCover will be split into three agencies to separate its safety and insurance functions.

“We welcome the restoration of many of the injured workers’ benefits that were drastically cut three years ago,” said Stacks Law Firm chairman Tim Stack OAM. “Those cuts had a devastating impact on many injured workers and their families,” he said. “Hopefully there can be further relaxations of these harsh laws in the future.”

“We hope these increased benefits will ease the pain for injured workers, but it remains to be seen how these latest changes to the scheme will work out in practice.”

CHATHAMHIGH 50th Anniversary

The following former Chatham High School (CHS) students were among the initial years’ intake of students: Geoff Leonard - attended 1966-71; Nita Pont (Cowan) - attended 1967-72; and Bob Worthington attended 1967-71. These tireless workers have been part of a committee planning the school’s 50th Anniversary celebrations, which will take place on October 3rd.

hat can you tell us about the history of Chatham High School? When was it established, and do you know how many students/staff there were in the beginning?

CHS was established in February 1965, with 280 students and 14 teachers co-located within Taree High School until 31st March 1966, when the CHS buildings were completed and officially opened.

Committee member, Bevery Warren (Smith) stated that in 1965 they were housed in demountables and shared class rooms at Taree High School, faced with the challenge of beginning a new era and establishing their own identity.

After the official opening, the number of students increased to around 400 across Years 1 to 3, plus 23 staff members as depicted in 1966 CHS photos.

What are some of the favourite memories from your committee about the time they attended the school?

Geoff Leonard: When CHS opened, it felt like it was our school; we were the pioneers starting afresh. We had the luxury of that close knit bond. Everything was new and there were not decades of culture to embrace; we created our own culture.

Our school was very competitive in athletics and sport. Representing the school in rugby league in the prestigious “University Shield” was a highlight, then to hear that Nita Cowan’s brother later played in the winning side gave me so much pride, as our school was small in comparison to other high schools. CHS went on to win a 2nd University Shield.

Around 1969/70 CHS started a branch of the Air Training Corps, which is still in vogue today. Former teacher Ivan Murray was our commanding officer. We learnt a great deal

Jenny Shepherd is one of our bookkeepers and joined BNM in August 2014. She is the firm expert on MYOB. Royce Novello looks after the corporate division, as well as the administration of BNM’s

accounting and payroll. Royce joined the firm in January 1992.

Carole Moss is one of our front desk people and provides invaluable support to the firm with her “motherly” touch and caring nature.

Eve Albury is the other front desk person.

She looks after all the typing of the business and supports all the other team members as and when needed, with whatever is needed.

Race Director Peter Camilleri gives us the rundown on this year’s event, while Vladimir Shatrov, a runner based in Newcastle and with his eye set firmly on competing at the Olympic Games in Rio in 2016, tells us what attracts him to this particular running festival …

i Pete. What’s new at the Brooks Forster Running Festival this year?

This year we are giving everyone 5,000 reasons to enter the Brooks Forster Running Festival, as a celebration of our 5th year.

One lucky competitor will win the big cash dollars of $5,000 in a random prize draw. All you have to do is enter yourself into any event, running, or walking.

The format for this year’s event is the same as previous years. It is important to allow everyday people the opportunity to be involved in the event and achieve their goals, whether it’s a 4 km walk or a 21.1 km half marathon.

The carnival atmosphere will see a jumping castle for the kiddies, music, and the latest and greatest of products featured in our expo.

When and where will the event be staged for 2015?

The Brooks Forster Running Festival will be staged on Sunday, September 13, 2015 from Forster’s main beach precinct.

What keeps them coming back to compete?

Since 2011 I have had the satisfaction of seeing local people progress from the 5 km fun run through to the half marathon, and I’ve also seen local people achieve their weight loss goals, all because of the Forster Running Festival.

Our Running Festival has inspired thousands of people by promoting health and fitness.

Over the past five years we have created a reputation of a family friendly event. My goal was to involve the whole family and encourage children as young as three years of age to participate in the kids’ fun run, whilst other distances are on offer regardless of age or athletic ability.

hanging tastes in wine styles is something very difficult to keep ahead of, because it takes years to establish productive vineyards in an effort to grow a new varietal that may or may not be popular in five years’ time.

But rather than plant new vineyards, we think there are other creative ways to diversify your wine drinking experience rather than just pouring it straight from the bottle to the glass.

Most of us have enjoyed a glass of Sangria at a Spanish restaurant or at a party where the red wine has been flavoured with fresh fruit and juice, a little brandy, a cinnamon stick, lemonade/soda water or ginger ale - served in a lovely big jug - it looks like a party in a jug and tastes delicious! This is just the beginning of a whole new world of wine cocktails.

There are many other creative recipes with wine as the base, and it's fun to experiment ...

So I thought a few ideas for wine cocktails minus the spirit is something different, and we'll choose a couple of recipes for Back Paddock Music on Dad's Day. There are numerous easy ones you can do without much effort and you would readily have access to the ingredients.

Champagne cocktails come in all sorts of flavours, so just go with whatever flavours you like. For me, a dash of pomegranate syrup and a sprinkling of fresh pomegranate seeds adds a lovely twist to the pre-dinner glass of Sparkling. Any fruit syrup or fresh fruit makes an instant champagne cocktail.

Got a piece of ginger in the fridge you don't already have plans for? Try muddling a tablespoon of chopped ginger with a teaspoon of sugar in the bottom of a cocktail shaker. Add some mint, crushed ice and white

wine and shake it up. Pour away ... Looking forward to this one; it should have a nice little kick to it!

That leftover medium bodied red wine mixed with lemon-lime mineral water, garnished with a slice of lime and poured over ice might be something very special.

Muddle a little apple juice and a few mint leaves in the bottom of a glass, top with Rose and add a little ice - another cool, refreshing combination.

Add some tonic water and a sprig of mint or slice of orange to your favourite dessert wine for a little zing that complements the sweetness.

A more extravagant wine cocktail that sounds enticing to me is “coffee-infused red wine with chocolate bitters”. Sounds like something to finish the evening off, combining three favourite flavours.

Three steps to make this: 1. infuse a bottle of quality red wine with coffee beans for 24 hours 2. make a star anise syrup with water, star anise and sugar (infuse the star anise for 30 minutes) 3. Mix a glass of the coffee infused red wine with a little of the star anise syrup and add a dash of chocolate bitters. Garnish with either a cinnamon stick or in warmer weather add ice ... mmmmm.

So there are a few wine cocktail ideas to get you started - don't limit yourself to just pouring wine straight from the bottle - have some fun with it!

In a small village frozen in time - close to the labyrinth of the marshlands and rice paddies - a serial killer has taken residence and caused the disappearance of several adolescents that no one seems to have missed. But, when two young sisters disappear during the annual festivities, their mother forces an investigation that brings two homicide detectives from Madrid to try and solve the mystery. Juan and Pedro both have extensive experience in homicides, yet are very different in methods and style.

They will soon face obstacles for which they were not prepared. A strike by local labourers jeopardises the rice crop and distracts the detectives, who are soon under pressure to solve the case quickly. To their surprise, ongoing enquiries uncover another source of wealth for

the village: illegal drug traffic. The detectives are then ensnared in a web of intrigue fed by the apathy and introverted nature of the locals.

Nothing is what it seems in this isolated and opaque region, and the investigation encounters unexpected difficulties. Both men realise they must put aside their professional differences if they are to stop the person responsible for the disappearance of the sisters before more young girls go missing.

Alberto Rodriguez’s thriller Marshland was the clear winner at Spain’s 29th Goya Awards ceremony, winning 10 statuettes including best film, director, screenplay and actor.

Sweet Corn

Corn dates back to ancient Americas, from where coloured corn and unique heirlooms originated. In Australia we mainly use the super sweet varieties that are available year round. Originally corn comprised a balance of starches, sugars, vitamins and minerals.

Sweet Corn can be planted from September - February. Provide fertile soil in a full sun position. Seeds are sown direct where they are to grow, and ample water must be provided up until the first cobs form. For optimal pollination, plant corn in a block formation with a minimum of 3 - 4 rows, with at least 12 plants.

They are mainly wind pollinated and assisted by the bees. The pollen from the top male tassel of the plant pollinates the cob below.

Several cobs can be produced on one plant, depending on the variety. Harvest cobs when

the silk turns a light brown colour. Another way to check if it’s ready is to peel back the top of the sheath a little to see if the corn kernels have filled out and have developed good colour. Leaving the cob on the plant too long will result in starchy corn. Other varieties include Popcorn, which grow only 1.5 m high and are ideal and fun for children to grow. These produce 4 - 6 small cobs per plant. Maize has traditionally been planted for animal feed and fodder, although cobs can be picked as sweet corn at a very young stage.

It is familiar to farmers on the North Coast as mud eye. A heritage Mid North Coast maize variety is Manning White, which grows to 3 m high and was bred in the 1930s. The favourite and familiar yellow sweet corn produces 1 - 2 cobs per plant. Delicious eaten fresh, steamed, on the BBQ, and you can freeze any excess for later use.

n every country on this planet, when you hear the word coastline, the first thing that comes to your mind is the fresh breeze, soft sandy beaches, the birds soaring above the ocean, and the most important thing for me obviously would be the seafood - not frozen, fresh. The coastline in Italy gives us great, inspiring ideas to cook what the ocean offers us. If you go to Thailand, Bali or the Mediterranean coastline, when it comes to food presentation they all have something in common. Seafood. Each one can offer something different. There are shallow-water fish and deep-water fish. We also have fresh oysters and abalone, which grow in shallow waters. And in Atlantic waters, they are filled with shellfish and lobsters. But, if we want to monitor our NSW coastlines consisting of the Manning Valley, we would find a great range of seafood such as Mullet, Snapper, Flathead, Bream, oysters, crabs, prawns, and the list goes on and on …

Seafood can also play a big role in our daily diet. Recently, I viewed a programme about the Paleo diet on TV. One of the main sources of this diet is seafood and as a chef, I get excited when I watch or read about this cuisine. A lot of top chefs in the world that I know absolutely love to work with seafood. They regard it highly because of its health benefits and variety. There is a lot to play with presentationwise and even more when it comes to cooking them; you can simmer, poach, grill, barbecue, steam and even roast them. I believe because of how dynamic it is, it’s a great, humble dish to present when impressing your guests. You shouldn’t haggle around expensive or cheap produce. Don’t forget, all seafood has its own, unique taste when you cook them right. It’s not like meat or poultry. There’s not too much fuss about seafood. It’s quick to prepare if you want it to be, and you can match it to all sorts of side-dishes including salads, rice or mash.

You can even garnish them with old-fashioned lemon-butter sauce like we do at The Sicilian Restaurant in our Angry Barramundi dish,

which is fresh-grilled Barramundi topped with vegeta seasoning and fresh-crushed garlic chilli served with crispy chat potato, salad and drizzled with a freshly-squeezed lemon-butter sauce. Such a beautiful dish served in such a humble manner.

I’d like to tell you something. I am proud of this dish, because this is a favourite. For us, it’s a hero of our menu. We don’t kill ourselves to make it, but our patrons seem to love it! For instance, with our meat dish, Lamb & Haloumi, it takes a lot more time and receives less recognition. This is a clear message that we have fallen in love with our seafood. Especially fresh. I’ve spoken before about fresh oysters from Barclay’s Oysters, but I know of another local store that offers fresh seafood from local fishermen. There may not be everything you want at any given time like a supermarket, but as a chef I can guarantee you that they stock directly from the source to present to us. When was the last time you visited the Fishermen’s Co-Op in your town? I buy from the Taree and Tuncurry Fishermen’s Co-Op often. It’s just beautiful to be able to get my hands on such fresh produce from fishermen. I recently visited Tuncurry’s Co-Op to check it out and see what the local fishermen dragged in. I then saw some freshly-cooked prawns in the display fridge. I treated myself to one kilo of the prawns like a child with a bag of lollies and drove to a nearby beach to enjoy them and watch the ocean. What a feeling!

I’ve said it before, and I’ll say it again.

Support local. Support local fishermen.

They are well deserved of recognition and reward. As the Executive Chef of the Sicilian Restaurant, I just want to say a monster-thanks to you boys out there bringing us your catchof-the-day. I know for a fact that without local fishermen, there wouldn’t be local seafood.

“ hat’s your career/ education background prior to establishing your business, Garden to Table Permaculture?

I have a Certificate IV in Horticulture, a Permaculture Design Certificate, a Permaculture Teachers Certificate with a combined 22 years’ experience in horticulture, permaculture and outdoor education.

For the past 10 years I have been on a sustainable living journey with my husband and two children, building a solar passive, Rammed Earth home with Permaculture Gardens at Pacific Palms.

Some career highlights have been working at the Forster Community Garden, teaching children about growing organic produce in the Kitchen Garden Programme and working with Council and the local community teaching a “Gardening for Sustainability Programme”.

For those of us who don’t know, what exactly is “permaculture”?

There are three main ethics in Permaculture: Earth Care, People Care and Fair Share.

Permaculture (Permanent Agriculture) is a holistic ecological design system for creating sustainable human environments that can be applied to the inner city balcony, a suburban block or a farm on acreage. It is about designing households and communities that are productive, sustaining and largely self reliant that have minimal impact on

the environment.

With the cost of living soaring, many people are choosing to become more selfsufficient, from growing their own produce to having solar panels on their roof.

You’ve travelled to Malawi in Africa recently, to further your studies. What did you learn from this experience, and how will you implement what you’ve learned into your day to day life?

Whilst in Africa, I completed my second Permaculture Design Course. In Malawi I met some of the most inspiring people in the world, whom I regularly talk to. Hardwell, a friend I met who is 21 years old, has been practising permaculture in his village for many years. Some may earn as little as $12 per month; they live in mud huts, grow a lot of their own food. I learnt that growing big monoculture crops is not the way forward for food security around the world.

Small, diverse farms with animals and a diversity of plants is a much more sustainable way to farm. When I returned from Malawi, I decided to start Garden to Table Permaculture and donate part of my profits to Hardwell’s village. At the moment they are building a chicken pen, so they can eat fresh eggs. In Africa, it’s not just a matter of buying chook food; they need to grow food for the chickens as well as themselves, so it’s a sustainable system. It’s much easier in Australia to

grow our own food.

We’re just experiencing the beginning of spring now, and people are starting to get back out into their gardens and enjoy the warmer weather. What are some of the best seasonal tips you can give them at this time of the year about plants/gardens/ food and produce?

It’s time to plant lots of fruit and vegetables, and the key to growing great produce is all about soil preparation. This helps prevent attack from pest and disease. Healthy soil produces healthy plants and that equals healthy people.

Don’t be put off if you don’t succeed at first, as FAIL stands for the First Attempt In Learning! Tomatoes, basil and marigolds are great companions and for a free companion planting guide and video, you can visit www. gardentotable.com.au Just start by growing a few salad leaves and herbs in a position that gets about three hours of sun right near a place your walk past each day on the way to somewhere else. In Permaculture, we call this Zone 1. Start with Certified Organic Seed, which is available from locally from Greenpatch seeds, Diggers in Victoria or join the Great Lakes Seedsavers Group. Many of our readers will know you from one of your other roles, as manager of the Forster Community Garden. How is this project travelling along at the moment?

For the last seven years I’ve had the privilege of working with volunteers at the garden as the horticulturalist and loved growing food and solving the world problems over a cuppa with the

awesome volunteers. There is still a great crew of volunteers; however, The Forster Neighbourhood Centre is always looking for volunteers. For more information, call 6555 4351.

You’ve regularly worked with children, in schools and at workshops. A lot of people may think that kids “hate their veggies”, but children are often very open to new ideas as well. How rewarding have you found it to work with our younger generation?

Working with preschool and primary school children is such an awesome experience. It amazes me how many kids don’t know basic vegetables, and it’s great to watch their reactions to smell and taste new things. I found if they are involved in growing the food, they are much more likely to eat it. There are some simple recipes on our website that my kids love, like Banana Muffins and even Kale Chips!

What are some of the upcoming events/ workshops you have planned?

We host monthly Organic Gardening Workshops and Harvest Lunches. Readers can join us for a Local Organic Harvest Lunch on September 13th prepared by Chef Sarah Wilton.

Guests will enjoy the delicious flavours of spring, and they will harvest some of the food for their lunch on the Edible Garden Tour. Our focus is on local, seasonal, organic, sustainable, whole foods.

JUST A FEW HOURS NORTH, ONE OF AUSTRALIA’S BIGGEST COMMUNITY CULTURAL EVENTS IS HEATING UP. WOOLGOOLGA – A SMALL COASTAL TOWN ON THE NORTHERN REACHES OF THE COFFS COAST – IS ABOUT TO CELEBRATE A DECADE OF THEIR MUCH-LOVED AND INCREASINGLY POPULAR CURRYFEST.

n 2015 the Destination NSW’s Flagship event, Curryfest, celebrates its 10th anniversary, and organisers have promised this will be the best event yet, with more than 15,000 people expected to attend.

Woolgoolga is home to the biggest Australian Punjabi Sikh population outside of capital cities. Woolgoolga’s population is only 5,000, but the town boasts two Sikh temples and hundreds of citizens for whom Punjabi is their first language. On September 26, the whole town celebrates its unique heritage with Curryfest, a food and cultural festival that has grown into a flagship event.

Curryfest features curries from all over the world, ethnic foods, Punjabi music, dancing and other cultural displays … a feast for the eyes, ears and for the stomach.

This year the fun begins with the “Tastes of Woolgoolga” restaurant experiences, starting with a banquet on September 5, followed by a Moroccan night on September 12. Woolgoolga The Bollywood Musical will wow audiences on September 24, and the warm up for Festival Day on September 26 is the much-loved Bollywood on the Beach outdoor movies on the evening of September 25.

On the big day, Saturday, September 26,

the festival begins at 9am. Entry is only $4 per adult; kids are free. There are more than 100 stalls, two stages with lots of cultural and traditional entertainment, cooking demonstrations, mindfulness and meditation workshops, kids’ activities, henna tattoos, market stalls and lots of opportunities to try and buy curries and spice products for you to take away and experiment with in your own kitchen. To put it simply, we just love rocking out! Doesn’t matter where we do it; it’s always a pleasure to jump on the stage and play to people, so we are really excited about it.

Back in 2010 you guys were a relatively fresh band. Over the past five years, how have you shaped the band, and what’s been your focus?

We’re always focused on writing basically that’s how we progress the most. Putting out albums ... We are back writing now for a new album.

What will the audience be hearing at your FOTSUN set? Will it be a collection of both old and new material?

It’ll be a nice mix; we don’t like cramming too much new stuff down people’s throats, so it’ll be a greatest hits package with a few newies chucked in there for good measure.

The best advice I could give to young bands is definitely just write. It sounds really simple, but that’s the key to everything in this industry, just keep writing ... You’ve gotta write sh*t songs to write great songs; just never stop. That’s the secret, I think!

SUNDAY THE 2ND AUGUST SAW THE PRESENTATION TO RHIANNON CURTIS FROM RONALD MCDONALD HOUSE NORTHERN NSW OF THE TOTAL FUNDS RAISED THROUGH THE RECENT TOUR DE TAREE.

P

aul Allan and Carl Guy, President of Club Taree, were delighted to present a cheque to Rhiannon for a total of $17,556.15.

The presentation was met with applause from the members and guests who joined in on the day, because they had been part of the promotion and knew how much passion and commitment Club Taree staff had put in to raising this amazing amount.

Funds were raised through the le Tour de Taree, which was Club Taree Community Team’s tribute to the le Tour de France.

The idea of the le Tour de Taree was conceived

during our regular quarterly creative planning meetings, perhaps on a whim, when while talking about worldwide events in July and reference was made to the le Tour de France, we decided it would be a great idea to develop the “le Tour de Taree”.

Instantly the team knew they wanted to support the great work of Ronald McDonald House, and staff began riding on Saturday 4th July, and completed the “Tour” on Sunday 26th July. The team jointly had a target of 3,344 km, the distance of the tour de France to achieve across the 22 days. Congratulations to all involved - a really great effort by all.

BILLABONG ZOO Visit Camden Haven The Camden Haven district, on the NSW Mid North Coast, offers a great range of accommodation, from tent sites in our great holiday parks to luxury tree houses and B & Bs. There are also motels, self-catering apartments and holiday houses.

The beautiful Camden Haven is located thirty minutes south of Port Macquarie and forty minutes north of Taree. This “Valley of Villages” hugs the Camden Haven River as it makes its way from the lush Comboyne Plateau to the blue Pacific Ocean.

afield you will find Port Macquarie, the region’s “capital”, with its great shopping, beaches, history, and attractions. Wauchope lies to the west of Port and is a beautiful town with a range of attractions and activities in a magnificent rural setting.

A key drawcard to the district is the myriad of waterways which make up the Camden Haven Inlet. Watson Taylors Lake, Queens Lake, Pilot Beach and Gogleys Lagoon are some of the natural features which are home to an abundance of marine and bird life. These waterways offer something for all lovers of water sports, with fishing, boating, surfing, swimming and kayaking on offer. One of the best ways to experience the Camden Haven is aboard Camden Haven Cruises’ vessel Far-Lap; its shallow draft and low profile allow it to navigate a large area of the district’s beautiful waters.

Billabong Zoo is delighted to announce the much anticipated arrival of our two cheetah brothers, Warrior and Vongani (the name means “to give thanks”). These brothers have travelled all the way from Cheetah Outreach in Cape Town, South Africa and they’ve come with an important message. The cheetah is well known for being the fastest land mammal, capable of reaching speeds of 100 km per hour - but they are losing their greatest race of all - the race of survival.

Since the turn of the century, their population numbers have dramatically declined from 100,000 animals down to as few as 10,000 today. They are rapidly losing their habitat and natural food sources, and this leads to regular conflict with farmers as the cheetahs are forced to hunt domestic prey. Warrior and Vongani are here to raise awareness and support for the conservation efforts being undertaken by Cheetah Outreach and their livestock guardian programme. A special thank you to our friends at Mogo Zoo, who

Local Trevor Cooper organises annual variety concerts with a twofold aim: to highlight the talents of young performers from around the Mid North Coast, and to raise money for worthwhile charities. This year’s two performances will take place in Taree and Tuncurry on September 12 and 13, and two of the wonderful performers are Ronan King-Rose and Abigail French …

All funds raised by these two concerts will go to Camp Quality.

ONAN KING-ROSE Hi Ronan. Tell us a bit about yourself …

I was born in Brisbane, Queensland, but I've lived most of my life here in the Manning Valley. I live with my mum, dad, sister and two little brothers here in Taree.

When and why did you first become interested in singing?

My parents listened to a relatively eclectic range of music - lots of pop, rock and all kinds of alternative music. I was exposed to many types of music from a young age, including classical music. I remember when I was about six or seven I was given a hand-held cassette player with headphones. My parents put classical tapes in it for me to listen to on the bus trips to and from school. I believe these are some of the reasons I developed my love of music and my receptiveness to music of all kinds.

My interest in singing wasn’t really apparent to me until I was encouraged by my parents and teachers to take up singing lessons when I was about eight or nine. Since then, I've been developing my skills with and love of music.

What style/genre of music do you most enjoy singing?

My forte lies with classical singing, which I thoroughly enjoy performing and learning about. However, I really enjoy performing pop and some alternative or more contemporary music when I get the chance. Anything that I feel moved by and am capable of singing (or perhaps sometimes not so capable), I enjoy!

What type of musical training are you currently undertaking?

I've just recently completed my AMEB (Australian Music Examination Board) level 7 practical singing exams, which I received an A+ for! I'm currently studying for the accompanying theory exams with my singing teacher Deirdre Suther-

land, which I hope to complete this year. I'm orchestra. ABIGAIL FRENCH Hi Abi. Tell us a bit about yourself …

Nearly six years ago I came to visit my grandparents in Laurieton from Perth. We were supposed to stay three months, but I have been living here with my parents and younger sister, Tahlia, ever since! Mum has just started her own behavioural optometry practice in Lake Cathie and Dad works for the Red Cross Blood Service all over the Mid North Coast. Both Tahlia and I go to St Columba Anglican School (SCAS) in Port Macquarie.

How did you first become interested in the violin?

In Perth, my Mum played the flute in a local

dramatic change of mood and tempo in these pieces and how you get to play it differently depending on how you feel.

And you’ve just come back from music camp?

This is the first year any students from SCAS have attended the regional independent schools music camp held at Stanmore Topps near Woolongong. It was a fantastic experience for the seven of us who went - we have never been to a music camp with over 400 other musicians!

The camp ended in a concert of all the ensembles at Sydney Town Hall - such a beautiful building inside and out. I made lots of new friends, and I’m looking forward to seeing them

again at next year’s camp.

You'll be one of the fantastic talents to perform at this year's Showcase concerts. What does an experience like this mean to you are you nervous leading into the shows?

I feel lucky to be able to play my violin and have people enjoy listening to it. So many people volunteer their time and energy to so many great causes. I feel lucky that I can help others by doing something I love. When Trevor (Cooper) asked me to play in last year’s Showcase, I was really disappointed that it clashed with another commitment, and I promised him I would play this year.

I do get really nervous before a performance, but I always seem to leave my nerves behind once I start playing. Apparently I play with a smile on my face a lot! I hope these concerts are no different, and I really hope they get to raise lots of funds for Camp Quality. Last year I had to say goodbye to a grandmother here and just last week a grandfather in Perth - both died from cancer. I can’t imagine how hard it must be for families with children with cancer - they must be the bravest people. Thank goodness for people like Trevor, who organise concerts like the Showcase - I hope they both go really well for everyone.

he Prostate Cancer Foundation of Australia reports that prostate cancer is the most commonly diagnosed cancer in men. There are 120,000 men and their families living with prostate cancer, 20,000 men will be diagnosed this year, and 3,000 men will die from prostate cancer. Prostate cancer is an age-dependent disease, which means the chance of developing it increases with age.

The risk of getting prostate cancer by the

age of 75 is 1 in 7. By the age of 85, this increases to 1 in 5.

A prostate cancer diagnosis is least common in men under 50 years old (less than 3%). However, compared with other cancers, prostate cancer has one of the highest five-year survival rates after diagnosis (92%). Men over age 50, or 40 with a family history of prostate cancer, should talk to their doctor about testing for prostate cancer as part of their annual health check-up.

COLD

SORES Cold Sores are inflamed blisters that occur on the face.

T

hey are a common skin infection that is caused by the herpes simplex virus, the same virus that can cause genital herpes. Once infected with the virus, the person will have it for life however, it may lie inactive. People with cold sores can transmit the virus through saliva or by contact with the sores.

There are four main stages of a cold sore, including: Tingle - a burning/tingling sensation can occur around the lips or nose up to 48 hours before the cold sore appears.

Blisters - red, sore lumps appear which turn into fluid filled blisters which can last for a couple of days.

Weeping - the blisters burst and fluid weeps out, and the virus can be spread.

Scab - the cold sore dries up and forms a

Cold sores will heal without treatment; however, this can take up to three weeks.

There are a variety of medications to treat cold sores, such as antiviral creams, ointments, patches or tablets. These medications can reduce the pain, speed up the healing and even prevent the weeping and scab stage.

If you have a cold sore, make sure you clean the area and keep it dry, avoid breaking blisters or picking the scab, wear sunscreen, avoid stress triggers and always wash your hands before and after applying cold sore products.

What is going on with our kids? We all want to raise our children to be healthy, consciously aware and thriving adults. Sadly, our children seem to be getting sicker!

D

id you know Australia has one of the highest allergic incidence rates in the developed world?

Just two generations ago, allergies were uncommon. Who knew what an EpiPen was, and peanut butter at school was not the issue it has become today.

A 2013 study by a team of researchers found that one in 10 children aged 12 months living in Melbourne had a food allergy - apparently the highest incidence of food allergy ever reported in the world. The biggest rise in food allergies is being seen in children under five. The incidence of eczema and hay fever has tripled in the last 30 years.

As well as this increase in allergies, the number of overweight children in Australia has doubled in recent years. Currently 25% of young Australians are considered overweight or obese, predicted to rise to 65% by 2020.

Health disorders in children like type 2 diabetes, high blood pressure, asthma, hypertension and sleep apnoea can be directly attributed to childhood obesity. According to some studies, childhood obesity increases the risk of asthma and food allergy, and there is emerging evidence that children of overweight mothers have an increased asthma risk.

We also have a striking increase in cases of Autistic Spectrum Disorders (1 in 91 children diagnosed) and ADHD (1 in 10 children diagnosed).

The statistics that really concern me are these (ref. Beyond Blue) One in 16 young Australians is currently experiencing depression One in six young Australians is currently experiencing an anxiety condition One in four young Australians currently has a mental health condition Suicide is the biggest killer of young Australians and accounts for the deaths of more young people than car accidents What can be done? We know we need medicine, but there is so much more research coming out that has a very strong bias toward using diet and other more natural interventions

as long term and proactive measures.

Short term, drugs like Ritalin seem to be working - long term, the results are not so comfortable. A large US clinical trial that has followed 579 ADHD children showed that children on medication did the best in the first 14 months; however, at the end of six years medication use was “associated with worse hyperactivity-impulsivity and oppositional defiant disorder symptoms” and with greater “overall functional impairment”.

Excellent studies have been done in NZ that show treatment with micronutrients helped depressed patients get well across the board, their sleep improved, stress and depression reduced and they no longer had a need to rely on tobacco and alcohol. A test study of a 10 year old boy with psychosis underwent a six month in patient treatment with medication, which was unsuccessful.

Treatment with micronutrients eliminated his hallucinations and delusions at 2% of the inpatient cost, AND these changes were maintained six years later!

What do we know? We should no longer be focusing on managing isolated symptoms but instead use a holistic approach, often yielding more lasting improvements ensuring a solid foundation for good health into adulthood.

Children are particularly susceptible to gut/ brain/immune dysfunction as their brain gut and immune systems are still developing. A holistic healthcare practitioner will focus on repairing the systems in the child that are not operating optimally. Nervous system rehabilitation, detoxification and gut healing, introduction of very specific supplements and micro-nutrients, elimination of foods that cause inflammation of the gut and enteric (gut) brain as well as providing tools to deal with emotions and stress using kinesiology and so much more.

I’ve been a local here in Taree for 21 years; I work in the Education Department. Our family consists of my wife Majida , Nicola, her little sister, and two little brothers. The four children are very close and probably even closer now.

Describe the accident that not only changed Nicola’s life, but that of your whole family …

It was a very difficult time when Nicola had the accident and having to do what was best for her, but also what was best for the other three children, because it’s always the whole family that are involved in situations like these - you need to take a holistic approach in how you deal with everything.

The accident occurred on the Bucketts Way, Tinonee, on the 12th September last year. Nicola was 16 and a half at the time. Another vehicle lost control and hit the vehicle that Nicola was travelling in head on.

Nicola was flown to John Hunter Hospital by helicopter. She had substantial injuries - a head injury, a broken kneecap, broken foot, a broken jaw and a broken elbow that both had to be wired back together. She’d also cut her tongue in half and had bleeding on the brain.

Nicola spent two weeks in a coma, and another week gradually coming out of the coma. It was ascertained early that she would have a brain injury and that there would be a very long road to recovery.

How long did Nicola spend in John Hunter Hospital, and what difficulties did she experience during this time?

We were at John Hunter for about eight months. It was about six weeks after Nicola had her initial accident that she fell out of bed, and she suffered a cerebral haemorrhage; this was again life threatening, and she spent another

What kind of improvements in Nicola have you noticed since she came back to Taree?

The improvements since Nicola has left John Hunter have been amazing. The feeling was that she had recovered and improved as much as was likely in Newcastle, but being able to come to the Mayo as a transition before returning home has been integral in her recovery.

She’s improved, physically, emotionally …

Physically she’s a lot stronger and walking much better. Her coordination has improved so much; and it continues to get better. What I’m enjoying the most is that she’s controlling her emotions much more now - they were very up and down, but they seem more stable now.

Her memory’s starting to some back too, and it seems as if all her prior knowledge is still there.

The difficulty is going to be in stimulating the pathways to learn and acquire new knowledge.

She’s capable of doing this, but it’s going to take her longer to “rewire” her brain to achieve this.

What’s Nicola’s prognosis now? She’s home with you now, so looking ahead, what are your plans?

I was told that for two or three years after the occurrence, there’s usually an improvement with this type of brain injury. At the moment, physically Nicola is very independent. With the brain injury though, it’s the impulsivity and not being able to make the safest or best decisions, which are the major issues.

There are lots of things we need to do over the next 18 months to maximise the regeneration of neurological pathways, but we’re looking at Nicola becoming independent; that would be wonderful. Our focus for the next couple of years is to continue to ensure we have all the people and information in place to ensure we can get Nicola to as close to pre-accident condition as possible.

Without this current team, we would have had to spend many more months in Newcastle.

I’d like to say just how much if a lift it has given us as a family to have the support of the Mayo and our community behind us - it’s just so empowering.

tephen Bromhead, Member for Myall Lakes has said he is pleased to be again hosting the Prostate Cancer Awareness Family Fun Day. Mr Bromhead said he has been touched by the high incidence of prostate cancer in Myall Lakes and the need to raise funds to help those individuals and families who have been affected.

The prostate awareness event aims to improve the understanding of prostate cancer symptoms, so that early intervention may be possible.

All funds raised on the day will be donated to the Prostate Cancer Foundation of Australia, which includes providing funding to the Manning and Great Lakes Prostate Cancer Support Groups, to maintain their role in the local community.

“I look forward to hosting the day with local 2RE personality Anthony Zanos, and I encourage families to come down and enjoy the day with dad on his special day.”

Great Lakes Prostate Cancer Support Group members Phil Rodham and Phil Webster and Manning Valley Support Group member Peter Lindwall tell us more.

Why do you feel it’s important to spread awareness of prostate cancer in our local area?

The Great Lakes and Manning Valley, with a high proportion of retired men, fits squarely within the demographics for prostate cancer. The Prostate Cancer Foundation of Australia reports that prostate cancer is the most commonly diagnosed cancer in men. There are 120,000 men and their families living with prostate cancer, 20,000 men will be diagnosed this year, and 3,000 men will die from prostate cancer. Prostate cancer is an age-dependent disease, which means the chance of developing it increases with age. The risk of

getting prostate cancer by the age of 75 is 1 in 7. By the age of 85, this increases to 1 in 5.

A prostate cancer diagnosis is least common in men under 50 years old (less than 3%). However, compared with other cancers, prostate cancer has one of the highest five-year survival rates after diagnosis (92%). Men over age 50, or 40 with a family history of prostate cancer, should talk to their doctor about testing for prostate cancer as part of their annual health check-up.

The Father’s Day event will be huge, with entertainment and over $10,000 in prizes to be won on the day. What else will be on offer for families to enjoy?

The programme of events starts at 10am with local entertainer Mat Zarb and concludes at 1:30pm. Prime Possum makes an appearance at 10:30am. Other entertainment includes the international renowned Marching Koalas band, who have recently performed at the Calgary Stampede in Canada, Taree PCYC Gymaroos, who have returned from competing in Finland, and the Wingham Pipe Band. The Forster-Tuncurry Lions Club will be cooking a delicious barbecue with steak and sausage sandwiches for sale, and the Great Lakes Hospice will have a Devonshire Tea pavilion with freshly baked scones provided by the Forster Country Women’s Association.

Bunnings will be providing free giveaways, and Graham Barclay Marine will have a special price on New for Old Life Jackets.

The day will end with the draw of the monster raffle, with prizes valued at over $10,000. The lucky winner will walk away with a three-day pass for four persons in a Corporate Box at the 2015 V8 Supercar series at

Sydney Olympic Park. This prize is valued at over $8,000. Second prize is a 55” LED High Definition

Television, third prize $500 Port Central Shopping Centre gift card, and 4th and 5th prize is $250 Port Central Shopping Centre Gift card. If the prize winner is on site at the draw, they will win an extra $200 seafood voucher from the Wallis Lake or Taree Fishermen’s Co-op.

Tell us about the involvement and support from the local Men’s Shed organisations.

We are very fortunate in having eight Men’s Sheds participating on the day. They will be demonstrating and selling their hand crafted items. The men will be creating an item that will be auctioned on the day, and the proceeds will go to the local prostate support groups. Other items to be auctioned include accommodation at the 5 star Sydney Radisson Blue Hotel and a framed 10 year Bathurst Poster donated by SuperCheap Forster. The support that the Men’s Sheds have given to raising awareness for prostate cancer has been exceptional.

How can people get involved with the Great Lakes and Manning Valley Prostate Cancer Support Groups?

The Great Lakes Support group meets every fourth Tuesday of the month at Club Forster at 6:30pm and the Manning Valley group meets at Club Taree at 2pm on the fourth Thursday of the month. All men and their partners are welcome to attend these meetings. The aim of the meetings is to be help each other, discuss shared experiences and learn more about the disease and how to manage it.

HUNTER VALLEY UROLOGY Urinary incontinence (UI) is a problem that can be difficult and uncomfortable to discuss. Also known as involuntary urination, UI is defined as any leakage of urine.

Urinary incontinence is often regarded as trivial; it is either viewed as a personal problem or accepted as a normal part of ageing. But in reality, UI affects people of all ages, and can be a symptom of something much more serious.

Recently I saw a patient whose only complaint was sudden onset incontinence. Upon further examination, it was found that she had high grade bladder cancer. It should be emphasised that this is rather an uncommon way of presenting with bladder cancer.

In the past, UI therapy was limited to

conservative and pharmacologic methods, the next resort being drastic surgical procedures.

Thanks to advancements in the field of Urology, this is becoming rare. Now there are more efficient and less invasive modalities: among them is Sacral Neuromodulation. Over the last decade, Sacral Neuromodulation has become the eminent treatment for urge incontinence and non-obstructive urinary retention. And finally, it is now available in the Manning-Great Lakes area.

Always remember - you do not have to live with urinary incontinence. If you are experiencing symptoms of UI, please seek help.

DUETS

Joy Cooksey and Lyn Bemét are both members of Taree Artists Inc. Recently, a combined project between Taree Artists and the Taree Scribblers has resulted in a rather unique exhibition. With too many pieces to display in just one venue, The Bean Bar Café, Taree, and the Harrington Library will both showcase the completed works.

I

ntroduce yourself to our readers please ... where in the Manning-Great Lakes area do you call home, and what originally brought you to the area?

Like many retirees, both Lyn and I decided to move to the Manning-Great Lakes area.

While Lyn chose the hills, I chose the seaside.

We both joined the Taree Artists, a group which meets every month in Taree and organises art-related activities for members and others interested in art.

We were given the task of organising workshops. This year we chose a different kind of workshop. We collaborated with the Taree Scribblers (who also meet each month in Taree), and in March we began a project that has taken several months to complete and has stretched everyone’s creativity.

What do you think encouraged the participants in this project to become involved?

All people are creative in various ways and from an early age have an innate need to express thoughts through words or pictures, but not all are lucky enough to have the encouragement or means to develop their skills and techniques. Young children don’t doubt their abilities, but many adults do.

Those involved in this project came from throughout the Manning-Great Lakes area and were varied in their level of confidence, ability and age.

the Taree Artists group and the Taree Scribblers have combined their efforts for recently ...

The writers provided written pieces of work to inspire new paintings, and the painters provided paintings to inspire new pieces of writing. The exchanged works were allotted randomly, and without titles, so as not to influence or restrict interpretations, and the plan was to display them later, together with the newly inspired work, as a duet in paint and print.

I believe there have been some interesting discussions that resulted from writers’ and artists’ own interpretations of the shared work. How much of a challenge has this project been - and what have you enjoyed most about the whole process?

Imaginations have been stretched and many of us have been thrown out of our comfort zones, forced to consider new ways to interpret subjects not usually dealt with and have had to find new ways to communicate feelings and thoughts.

In the process we have enjoyed playing with ideas, developed a better understanding of each other’s creativity, and produced a body of work for all to see. Hopefully there will be some viewers who decide to join us in our future ventures.

Although frustrating at times, it has been an invigorating project, enthusiastically tackled by everyone.

How do you feel artworks and literary

works complement each other?

We all see and respond to our world differently. As writers and painters we try to depict a place, object, event or emotion, so that our perception of its uniqueness can be shared with others.

Who are some of the individual artists and writers that have contributed to the project?

Some had only recently taken up writing or painting. Ruth Rankin, whose artwork is in the exhibition and who is a long-time member of Taree Artists Inc., will soon have her 98th birthday.

Painters like Helga Visser, Beryl Moriarty, Yvette Hugill, Fred Bullen and Lyn Bemét, to name a few, have previously had solo exhibitions of their work, while Jacqui Winn, Joan Stanfield, Maureen Larter and Gary Taaffe are a few of the published authors and poets among the exhibiting writers.

The completed results (artworks and writings) will be on display at a special exhibition throughout September. What are the dates/times and venues for this exhibition?

The Duets in Paint and Print will be on display throughout September. Due to the large number of works, the exhibition will be split between two venues: The Bean Bar Café, Taree 1 Pultney St. Taree: phone 6550 0022 Hours: Breakfast and lunch - every day; dinner - Thursday, Friday, Saturday. Those in charge of both venues have been most supportive of the project, and we are very grateful they have provided us with such excellent spaces for exhibiting the works.

Jane Hosking, Assistant Director of the Manning Regional Art Gallery, is our special guest and will officially open the exhibition at the Bean Bar, Taree, on Saturday 5th September, at 3:30pm.

Admission is free, and everyone is welcome.

Will the artworks and accompanying writings all be for sale?

The aim of the project was to have a different kind of workshop and to then display the outcomes. This we have done, and the works will be for sale as a “duet” package.

That ski-in ski-out chalet in the snow – Oh no! After dark, there’s no transport but for a steep uphill trot on Shanks’s pony. The alluring website images: so far from the awful reality on check-in. Booking the right spot to serve as our home away from home is the single most important component of a happy holiday. No matter how much we live it up, we’ll spend about a third of our time there. It’s the base that will see us bathe and rest in comfort (or not) for tomorrow’s foray, whose restaurant will (hopefully) nourish us, the make or break essential element to getting the most for our precious time and money.

And so the Hilton Waikiki Beach stands out, not only for its prominent position smackcentre of Honolulu’s famous beach, surf and ocean environment. Look at the pictures: by day, a sunny panorama of blue Hawaii, the turquoise waters off beautiful Waikiki Beach just steps away. By night, glittering fairy lights climbing palm tree trunks and traffic in a golden ribbon along Kalakaua Avenue - the main shopping, dining and entertainment strip, named for former monarch King Kalakaua mark your location at the peak of the Oahu, and Hawaiian Islands’, vibe.

Added to its ideal address the hotel offers guests the assurance of the Hilton brand: luxury appointments; immaculate rooms with a “lanai” (balcony, actually) for watching the

fireworks displays; 24-hour dining; professional hospitality; free access to its outdoor pool and 24-hour fitness facilities, and tropical gardens.

Yet importantly, unlike many Waikiki hotels, no daily resort fee. See images at TripAdvisor. It’s the perfect spot with littlies: minimal walking, moments to zoo, aquarium, surf and sand, no need to bundle them in and out of taxis (on tap at the foyer, along with fun trolley rides and tour-bus stop). If you’re hiring a car, there’s a valet parking service. (Hilton also operates the nearby Hilton Hawaiian Village Resort and adjacent Grand Vacation suites and apartments: make sure you’re booking the correct hotel).

Accommodation settled, it’s time to go sightseeing, dance a luau, play a ukulele, explore the attractions in this ever-warm climate. Honolulu, Oahu and the Hawaiian islands overall attract an average 6000 Australians every week. But I’m not alone among Aussies in observing you don’t come here for the food. The American palate has much to learn from premium Oz cuisine, not to over-think and overdo its food. (Though I love the refreshing US penchant for cilantro/ coriander garnishes, much as we use parsley). I like the terrace at Il Lupino, a trattoria near the Sheraton complex; “best restaurant 2015” Alan Wong’s, tucked anonymously in Chinatown; and Moana Surfrider beachside garden for snacks and drinks. None is cheap. But nor was Wolfgang’s Steakhouse in the Royal Hawaiian (Hotel) Arcade, where we were unimpressed.

The New York chain served disappointing oysters, prawns and steak. Yet many Japanese tourists seemed to love it: perhaps this restaurant’s cheaper than its two Tokyo outlets!

Anyhow, la di dah; I can dine well at home.

You will cool down as soon as you get to Glen Innes. With our alpine climate, we refer to our summer as being air-conditioned. You will notice the change in temperature as soon as you arrive.

Some of the wonderful reasons to come to Glen Innes in the summer include our National Parks. Within the National Parks there is ample opportunity for swimming, bird watching, experiencing beautiful waterfalls,

bush walking, mountain bike riding and more - you can do all of this in a world devoid of humidity!

Another wonderful activity to enjoy in summer is fishing. Fabulous fun for the whole family, and no-one will complain about being hot and bothered! Pack a picnic and find a cool, shady place by Rocky Ponds Creek or enjoy a drive through our stunning countryside. Soak up the history and do a historic walk through town and visit the Land of the Beardies and History House Museum.

i Donna. Remind us please, what the Heart to Heart programme is all about ...

Heart to Heart is a School based social programme that focuses on re-engaging youth who have faced great challenges in their lives.

The programme incorporates art, youth workers, health workers and mentoring, with the final culmination of a self-fundraised humanitarian journey to Vietnam, where the girls finally take their newfound art and life skills and share them with children from an orphanage in Vietnam, simultaneously donating significant funding to the orphanage.

The programme is a holistic and life changing event for all involved, revolving around the power of art for healing, social enrichment and personal development.

What’s your role with the programme?

I am the founder of Heart to Heart. My role is to run and co-ordinate the programme within the school, within our community and with the Orphanage School in Vietnam.

I work closely with the young people chosen for the programme, acting as art teacher and mentor, only made possible with the help of others such as my assistant, Tanayah Tooze, community leaders such as Anne Curtis and Vanda Gooley and teachers Wendy Yarnold and Tonia Hopley.

The challenge for the mothers and daughters is to raise at least $1,000 per team for Heart to Heart. This empowering journey offers a bonding experience for mothers and daughters and a chance to enjoy the beautiful people and stunning country of Vietnam. I am so excited to take my own daughter, Holly, on this journey.

f these figures aren’t staggering enough in their own right - the fact that they actually refer to the amount of content produced EVERY MINUTE OF EVERY DAY is completely mind blowing!

And there’s more - by 2020, the amount of web-based information (most of it consumer-driven) is expected to increase by 600%. Think about that for a moment. If you can imagine the vastness of the internet today, in six years we will have six of those.

This is a phenomenon that Mark Schaefer calls “Content Shock”, and its implications for businesses and industries everywhere is massive.

In short, Schaefer says that our ability to create and distribute content has far surpassed our ability to consume it. And that gap is only going to widen.

So what does this mean for tourism businesses and destinations? We’ve finally begun to make the transition from mass broadcasting media to targeted digital mediums and are aggressively developing and activating our own content strategies to support our brand and business. But this is seemingly not going to be enough.

We must now consider what we have to do with our content strategies to get anyone’s attention, when we’re competing not just with

other businesses, but with every global news, celebrity and sports feed, our kids’ math teacher and even our dentist - all of whom are producing content and delivering it 24/7 to any digital device they can gain access to.

It’s hard to deny these facts or the implication that in an eco-system of way too much stuff, SOMETHING is going to have to change. But what? How do we break through this information density and win in a hyper-competitive content market?

Whilst Schaefer offers 10 Suggestions to Battle Content Shock, it’s the last one that I think gets to the core of marketing and indeed business “Human Connection”.

Connecting in a human way is what leads to trust. Trust leads to loyalty. “Being more human” is the killer app for Content Shock. The best way to build long-term relationships that lead to business benefits isn’t going to be through backlinks, sponsored posts, or native advertising. It is going to be through authentic human connection.

What is the single most important thing you advise your client about their marketing? GET YOUR BRAND RIGHT FIRST. Without this, you are really putting the cart before the horse and marketing your business becomes much more difficult. If you don’t, your business brand usually pans out something like this: You need signage, so the sign manufacturer’s art department designs your sign. You need business cards, so the printer designs your cards. You need a website, so the web developer builds your site.

Then nothing matches! The colours are different, you have three different logos and many different fonts. It does not sit right, and you

Once your brand is established, marketing is much easier. You don’t have to choose fonts, colours, photos and design a logo every time. You just have to roll out what has already been established, knowing it appeals to your customer.

garygersbach AS THE MAIN LOCAL BODY FOR THE AREA’S BUSINESSES, IT IS ALWAYS DIFFICULT TO BE SURE OUR ACTIVITIES REFLECT THE CURRENT AND LONG TERM CONCERNS AFFECTING OUR MEMBERS AND ALL BUSINESSES.

o this end, the Chamber has requested all whom would like to be involved to ensure all appropriate issues are brought forward for action. There is now a programme within the Chamber to highlight its real aim in determining short and long term issues in its business and strategic planning review.

The Chamber sees its relationship with the Great Lakes Council, both Councillors and staff, as extremely important and endeavours to foster and develop this partnership as an instrument for businesses to have ease of access to the Council when necessary.

A recent example of the above was the Council’s proposed reduction of critical parking in Memorial Drive, for the introduction of a Cycleway and an enhancement of the greening of the foreshore. This was actively opposed by the business community, resulting in a short term compromise by the Council to introduce electronic parking control to better assess the more efficient use of the existing carparks.

Although this is not seen as an end result, it is a sharp reminder to all businesses within the waterside area of Forster, of the value of each parking spot to the main street commerce.

The Chamber has again raised the difficulty of exiting the Head Street carpark in peak times, as a result of the pedestrian traffic lights operation, when it would appear a more logical solution would be to reverse the entry and exit access points. Apparently, the existing arrangement is the result of complying with

certain traffic codes for safety. We believe this situation could still need a closer review.

Despite the GLC advising they have every intention of jumping on board the Business Friendly Council promotion by the Small Business Commission and the Council’s executive pursuing this, there hasn’t been any concrete proposals along these lines to date.

Again, the Chamber has raised with the Council, the departure by them from the initial Community Civic Centre and Library Plans displayed in consultation with the community, to a more expansive plan involving repositioning of the Library and possible commercial developments. This later plan has not had community consultation and is a radical departure from the initial plans.

The Council does not see the consultation process for this as necessary. The Chamber will continue to question this project until some resolution is achieved.

In addition to the general upturn in the business environment in the Great Lakes, the Tuncurry Jockey Club has finally achieved its ultimate aim of hosting an official TAB race meeting at the Tuncurry Racecourse. This can only be considered a resounding successful venture in the face of many, many doubters.

The Jockey Club Committee is congratulated for this achievement, that will further increase the Great Lakes’ business turnover. If only for this reason, the businesses within the area should continue to support this club wherever they can.

SAFE AND SUPPORTIVE TRANSITION Each new year brings many changes around a school. Students of all ages change classrooms and teachers, but no group experiences a bigger upheaval than those entering a new school for the first time. At Manning Valley Anglican College, transition programmes for students entering Kindergarten and Year 7 help to make the move as comfortable and seamless as possible.

As we move towards the end of the year, we invite our new enrolments to join with us in the Transition to Kindergarten programme.

Throughout Term 4, new Kindergarten students will attend a number of short, informal events designed to ease them into life at school.

Students take part in art and craft, music, storytime and play sessions and even a Japanese lesson, allowing them to meet their classmates

and their teachers and become familiar with their new school.

Meanwhile, students in our Year 6 class have already begun to spend time in their Transition to High School programme, heading in to our specialised Secondary School facilities to experience Science and Technology in new ways throughout Term 3. As Term 4 begins, they will continue to be introduced to new teachers and subjects. Most importantly, they will be given the chance to meet with their new classmates joining them from other Primary Schools during Orientation Day. Both of these programmes are open to students and families eager to experience life at MVAC before enrolling for 2016. We encourage you to contact the College to get involved.
