FOCUS caught up with Jess to talk all things sweet… i Jess. Tell us a bit about yourself and your family. I’m a born and bred Port Macquarie girl, with a little stint spent in Sydney and Townsville. We are back here in our little piece of paradise to raise our two kids. I have an amazing little family; my main man and biggest supporter, Aaron, Piper, our little free spirit is six, and Finn is three - he’s our wild child! I like to think I’m a creative person; just don’t give me a pencil or paintbrush (ask my dad). I have a background in marketing and a little graphic design, but baking has always had my heart. Now I can stay at home with the kids, be creative and bake - it’s my dream job! What is the meaning behind the name “Fika for Days”? Fika by meaning is a Swedish tradition where you sit with friends and family and have a coffee and sweets, but it’s so much more; it’s a moment to slow down and appreciate the good things in life, to laugh and share stories with friends and family. My dream is for my cakes to create “fika” - for everyone to really enjoy the moment and be present in the celebrations happening, making memories with their loved ones. “For Days” comes from little Finny boy - he has taught us that feelings can never be big enough. He has always expressed his needs so large, that they are “for days”. The most common being, “I’m hungry for days” and, “I love you for days”. From the moment a client contacts me to completion I average about 10 - 15 hours per cake. This includes, conversing with the client, researching, buying ingredients, ordering specific items, baking, being referee to my two young children, making any toppings needed for the cake, stopping for five minutes to drink the now ice cold coffee, the many coats of icing, decorating and packaging up the cake. What are your plans for the future? Ohhh! I never expected to be where I am; in the foreseeable future, my plans are cake! I’m currently booked until April, so I’m pretty busy with that, BUT I do have a few workshops planned in Melbourne and hopefully a website up and running soon, to make the booking process more efficient! Basically, the plan is to keep on baking and stay true to why I started this venture - to be part of the celebrations of life and to keep bringing joy to people through my cakes! hy did you make the decision to have your wedding in Bali? We both wanted to have a fun and relaxed wedding celebrating with our close family and friends. Being that we come from opposite sides of the world (Courtney from Australia and Bleddyn from Wales, UK) a destination wedding somewhere between the two countries was the perfect solution, and it meant that everyone got a holiday as well! We have both travelled to Bali and absolutely love the relaxed and friendly atmosphere it has to offer and couldn’t imagine a more idyllic place for a wedding! What makes Canguu a special destination for you both? From the minute we found Sungai Tinggi Villa in Canguu, we knew it was going to be the one for our wedding! It is just amazing! It is surrounded by traditional rice paddy fields and has an amazing outlook over the ocean and a beautiful feel. It is located just down from Bali’s famous “Echo Beach”, which is well renowned for its chilled and relaxed vibe! We also wanted somewhere that allowed us to have the ceremony and the reception at the same location, creating a feeling of intimacy - Sungai Tinggi ticked all of our boxes! Did you have a wedding planner to assist with the overseas arrangements? 12 Special Edition 46 focus greater port macquarie focus.

We had help from beautiful Karen from Cher Ange Wedding and Events. She was simply out of this world! No detail was overlooked and our day ran so smoothly because of her; she was such a pleasure to work with. Describe a timeline of your wedding day. The bridal party stayed at the villa the night before, whilst the groom’s party arrived at 10am the wedding day. We were kept separate, with the bridal party in the “Main House” and the groom’s party in the “Joglo” (a traditional style house). The boys passed the morning by swimming, sipping on beers and enjoying a hair cut and shave from The Bali Barber; whilst the girls passed the time by sipping on bubbles and relaxing. We had a quick rehearsal separately at 12 and 1pm. Hair and makeup for the bridal party began at 1pm. Our guests were travelling to the villa together via courtesy buses and began arriving at 3pm, where they enjoyed ice cold cocktails and bintangs upon arrival. The ceremony began at 4pm and was a very quick ceremony, followed by canapés and cocktails whilst the bridal party had photos. Our guests made their way to the reception area at 6:30, where dinner and speeches started at 7pm. Once the formalities and dinner were finished, we cut our cake and shared our first dance, and that’s where everyone stayed for

the rest of the night on the dance floor, literally dancing in the moonlight! Did you have a traditional ceremony, or did you write your own vows? For such a special day we wanted to make our wedding as personal and memorable as possible, so we wrote our own vows. Our vows simply summed up our relationship, promising to always love each other unconditionally and to always remember what makes us “us”, living, learning and loving together. We kept four lines unique and as a surprise from each other on the things we promised to one another. This added a dimension of fun and surprise to the ceremony and kept both us and our guests laughing. What was on the menu for guests to enjoy? destination wedding? 1. Work with a wedding coordinator! They know all the ins and outs and make life a lot easier when you’re making decisions from another country and dealing with people in another language. 2. If you can, plan a trip to the destination prior to the wedding. We went over to Bali in the January before our wedding and went to food tastings, hair and makeup trials and visited the venue, which meant we knew what we were going to be getting on the day! Plus, it is a perfect excuse for another holiday! 3. Send out your “save the dates” early; the more notice you can give people, means the more likely they are able to attend your wedding. 4. Have a recovery day. We had our guests back over to the villa the day after our wedding for a day full of swimming, relaxing, cocktail drinking and a Balinese barbecue. It was a great idea, because it meant we could all share stories from the night before whilst relaxing and curing some sore heads. 5. Choose your location wisely! Bali was the perfect location for us, because it is a destination that can be suited to all budgets and all different styles of holiday. KyleCrisp Kyle loves to tell stories with his photos - and weddings are his favourite thing to shoot. Not frightened to think outside the box and capture those often unseen, special moments throughout the day, Kyle loves to provide nostalgic memories of that most important day in a bride and groom’s life …

i Kyle. Where/when did your interest in photography begin? My mum gave a subscription to Nat Geo Magazine when I was around 15; I really loved all the nature and landscape photos I saw and thought, “I want to take photos like that!” So, I bought a camera and started shooting all over the Hastings area. At first I just wanted to take nice photos, but as time went on I realised that telling stories with my images was what I really loved to do. I still love taking nature photos, but I always like to try to add some people in there somewhere. I find that the deeper you go into learning photography, the more interesting it becomes; you could do it your whole life, and there will still be more to learn. A lot of photographers didn’t start out as such - many take a roundabout route towards fulfilling their dream of making a living behind the lens. How did you get to where you are today? My first job was in sales at Harvey Norman; I worked there five years, before leaving to focus full-time on my photography. I’ve always considered photography to be part of my life and not so much a job, since I take photos every single day - regardless if I’m being paid. What areas/locations do you cover with your photography services? I work mainly around the Hastings area, but I’ll go anywhere if the client covers my travel costs. I’ve shot a wedding all the way up in Tropical North Queensland. If you are having your wedding in some exotic holiday destination, give me a call! One of the biggest dread factors for a wedding … what happens if it rains, or it’s blowing a gale? As a photographer, how do you cope with these scenarios? Since I focus on telling the story with my photos, bad weather isn’t really a worry; it’s just another part of the day, and I enjoy finding ways to work around it. A real dread factor for me would be something like the memory card failing and losing all the photos; luckily, I’ve never had that happen. She chats to FOCUS about her new venture… i Aloka. Tell us about your connection to Port Macquarie … I fell in love with Port Macquarie 17 years ago, when I came over from Perth to visit a friend. The people, the characters, the beaches, the vibrancy, the colours and the pace of Port were so appealing, I thought this would be an ideal place to raise my son, and I never looked back. What is it that you do? Unique event styling, event planning, creative workshops. We also hire out our items from the studio, such as fairy lights, furniture, lamps, vintage decor, to name but a few. What services do you provide? We do event styling, fully customised and individualised to suit our clients' vision of their special occasion. For example, we did a Mad Hatters themed Christmas party for Hijacked, a local gym. They absolutely loved it. It was a nice break for them from all the hard training that they do. We converted their gym into a mad hatters playground. This involved an abundance of Alice in Wonderland zany decor. We got the creative juices flowing, making 3D mad hatters hats, clocks and signs for decorations. We had a great time sourcing fun, bright and colourful items that we needed to decorate and transform the room. It was for a Xmas Eve party, so we came up with the concept to turn them into a feature as stems for 14 giant paper flowers that we hand made. The end result was really quite spectacular. We were also given the challenge to transform a family living room for a 30th. By adding fairy lights, lots of candles, lamps, soft pink faux furs, lace bunting, cushions, we turned it into a intimate bohemian styled goddess den. What is the training regime like? I go to the gym about three times a week and also workout on the basketball court about four times a week, to stay sharp. Weekends usually include a beach session with sprints and parachute workout. I try to do something every day. No days off! You are also the captain of the Somali National Team. Do you travel back to Somalia often, and how is the level of playing there? No, we don't actually go back to Somalia; we meet about four days before tournaments at the location of the tournament and train. We don't have the funds to travel back, and I help pay my way with some support from the Somali community in Melbourne. Is it an honour to be the captain of your nation’s team? The position of captain, for my country is a great responsibility and a great honour, one that I take very seriously. What makes a good captain? The role of captain has its challenges, because you’re dealing with a lot of egos and personalities, and it requires a lot of patience and listening. You must be able to solve conflict on the fly and keep everyone on the same page. On top of all that, you can’t take things people say personally and need to try not to be too sensitive. Lead by example: that’s what Nathan Buckley told me at my time with Collingwood F.C, right before I played for my national team in 2014. Where around the world do the rest of

hat is your connection to the Coffs Coast? I had lived in Coffs Harbour for many years and wanted to come home to the Coffs Coast. After spending over 15 years in Sydney and then marrying Barry, who works on the Pacific Motorway construction and moving every few years, it was time to return to the area. Two Tails Wines was the perfect opportunity with us to fulfill our passion for a return to the Coffs Coast. As soon as we saw the property, we fell in love with it and knew that the ideas we had would work really well. Supplying flowers and bromeliads from their farm to both the local market and to the cities, they have worked hard to build a loyal following of clients. FOCUS sat down with Adam and Jane at the end of a long, hot day to find out more about what they do.

i, can you tell us a bit about your connection to the local area? We moved to beautiful Coffs Harbour after a three year stint in Far North QLD. We had relocated from the Tweed Coast to Mission Beach to focus on our tropical range. In 2011, Cyclone Yasi literally flattened our flower farm, so we turned tail and ran back to NSW! We came to Coffs Harbour due to the sub-tropical climate, proximity to Sydney and Brisbane, and the fantastic amenities that Coffs has to offer families. What is it that you do? We grow flowers, foliage and unusuals on our property in North Boambee Valley, which we sell directly to florists on the Coffs Coast, Clarence, Mid North Coast and New England regions. We also sell to Sydney and Melbourne flower markets via our agents. How did you become involved in this industry? Adam always had a strong interest in landscaping and garden design. He studied at TAFE, three nights per week, to complete a Diploma of Horticulture, whilst still working as a veterinarian. We relocated to our 10 acre property on the Tweed Coast after I fell pregnant with our daughter, Annalise. From there we started a very successful landscaping business in Casuarina - Kingscliff. How long have you been a photographer, and where do you draw your inspiration? I started photography in Year 11 and continued for my HSC. As we have a team of photographers, we all draw our own inspiration from our clients themselves. Do you specialise in weddings? We also do family portraits and newborns in our studio at Toormina. However, we have also

introduced our new in home newborn photography, as we recognised it’s hard to get out of the house when you’ve just had a baby! So we come to you, to photograph you all in your own environment. hat is your connection to the Coffs Coast? I moved to Coffs from Sydney with my parents and two younger sisters when I was 13; the folks were after a sea change, and this is exactly what we got. How long have you owned a bridal shop? Whilst working some three very different roles over a 10 year period, I definitely learnt varying skills from each position, all of which had a positive impact of me owning and running my own business. I had always imagined myself having my own business. I spent several years researching and analysing existing businesses and franchises for sale. Eventually a bridal store came up for sale and I looked at purchasing this business; however, after much deliberation I opted to open my own bridal store. So after many months of planning, RSVP opened at the Jetty, February 2005. Do you have any advice for a new bride?

When looking for your “dream” dress, I definitely suggest booking an appointment and allow approximately 1.5 - 2 hours. This ensures you receive the attention you deserve. Keep the number of people that you invite to go with you to a minimum of no more than two or three people. When a bride comes in with an entourage and everyone has an opinion, it can be quite difficult for the bride to express her actual opinion. Keep an open mind. More often than not, brides choose dresses that look nothing like what they think they walk in wanting. So try everything the bridal consultant brings you.

hat is your connection to the Coffs Coast? I moved to this wonderful area in 2002 after escaping high pressure corporate life in the big smoke. I knew I’d made the right choice, but the removalist made a bet with me that I’d be back in Melbourne in less than five years. He was wrong! Here I am 14 years later and still loving this area. I live in Nana Glen on my own little paradise acreage, with dogs, cats, goats and even alpacas. Why would I ever want to leave the best place on earth? Why did you become a celebrant? It’s hard to describe in just a few words the privilege I feel in being able to conduct a ceremony that expresses so much love and joy that couples feel on their wedding day. Before I became a celebrant, I had attended some wedding of friends where the celebrant was a bit bland, and couldn’t be heard, and I decided then that I would do my utmost to become the best celebrant possible and help couples express their feelings on one of the most important days in a person’s life. As a celebrant I work with my clients to write a ceremony which is beautiful and touching and funny and expresses their

personalities. In other words, a ceremony which is just right for them. Wedding days can be stressful; how do you help to ensure the day is as relaxed as possible? Sometimes things go wrong. It’s important for a celebrant to take things in their stride and smile and keep everyone relaxed. The most common problem is weather, so it’s very important for couples to have a back up plan if they want to get married outside. A less common problem is forgetting the rings (which does happen from time to time). I remember one wedding where we used substitute rings from the bride’s mum and dad. Looking back, it probably made the wedding ceremony even more special.

Making the day even more special for the bride and groom means a lot to me, and it’s a privilege to be a part of the bridal party’s special day. What is the favourite when it comes to wed-

Do you have any advice for a new bride? Commitment and patience comes to mind. Marriage isn’t 50/50; you both have to give each other 100 percent. Always respect, support and be honest with your partner. Choose to love each other, even in those moments when you struggle to like each other. A “perfect marriage” is just two imperfect people who refuse to give up on each other. Enjoy your time together to the fullest and make laughter the soundtrack of your marriage ... Share moments of joy, even in the hard times. Find reasons to laugh. If you do that, it will all work.

Cedar Bar and Kitchen reached its first year milestone in December. We chat with co-owner and Events Manager Victoria Harper about hosting weddings, parties ... anything in the 108year old church in Bellingen.

H

ow is the business going since we last spoke to you guys? It’s been a non-stop first year, and we’ve loved getting to know the locals and hosting some great celebrations. The business is growing, and at the head of that growth are our functions and events. We’ve hosted every type of party at Cedar - engagement cocktail parties, sit down 50th anniversary, first birthdays for little bubs and even a great grandmother’s 90th birthday party. There have been high tea baby showers and glamourous hens’ parties, but my favourite has been hosting the beautiful wedding ceremonies and receptions. The location and building must make for an idyllic wedding celebration? Yes, the old church makes for such a picturesque setting for a wedding. The 7 metre high ceilings and original stained glass windows provide a backdrop of a traditional white church, but our venue has all the modern touches that today’s couples demand. Aside from our grand function room, there are our lovely wide undercover balconies, perfect for cocktail hour, our stylish front bar for drinks afterwards, and our outdoor terrace, where you can get your boogie on under the shade of fig tree lit up by twinkle lights. Our decor is modern with a rustic edge, and we

provide all celebrations with a huge range of included furniture, such as banquet tables, bar tables and chairs. What can people expect from the culinary side of things? For cocktail hour we like to offer our grand style grazing platters - with local and imported cheeses, cured meats, house pickled vegetables, plus an assortment of tasty canapés utilising the best of the local produce that we have on the Mid North Coast. For sit down receptions, it’s all about sharing. Our entrees and mains are served in the middle of the tables, so guests can enjoy sharing, feasting and chatting together. It’s always an icebreaker and so much nicer than alternate serve, when you are trying to barter with your dining companion about who gets to have the fish and who ends up with the scotch fillet! Cocktail receptions are definitely growing in popularity, and we offer a range of canapés, standing mains and help-yourself dessert bars. We appreciate that every celebration is different -

so menus can easily be customised to suit the tastes of the couple. It is the perfect place to include live music at your reception; do you find that this is popular? Yes, we have had some incredible musicians play at our wedding celebrations and with our high ceilings and timber walls, the room has fantastic acoustics. When a musician kicks off, it just changes the atmosphere in a room. I believe live music can really make an event, and you don’t need to spend much to give the party an extra edge. Do couples need to book well in advance to be able to reserve the venue? Although we have only been open one year, word has been spreading, and weekends in May and September are already booked with limited availability in July and October. Midweek weddings are a great option too, and we have plenty of spots available throughout the year. Where can people find out more? an you tell us a bit about your connection to the Coffs Coast? I grew up in the area. I have lived in different cities in the past few years, but each time I come back to the coast, I am reminded of how beautiful it is. When did you become interested in Cuban dance? About three years ago, a friend wanted to try to learn dancing. I went along to support her, and stayed on ever since. How did you begin learning? One foot in front of the other. As each class progressed, I found myself wanting to learn as much as I could to improve as fast as I could. What do you love most; what keeps you going back for more? Meeting cool people; learning more about the rhythm. Definitely the music - I love Cuban music. Is it difficult to get the hang of? A lot of dance teachers will tell you it’s just walking with attitude. It took me a long time to understand that, but it's true. I would say it’s different, but not difficult.

Who has being teaching or instructing you in the ways of Cuban dance? Christina Monneron. She is amazing. I have learnt a lot and continue to learn and be inspired by her. When you see native Cubans dance, are you blown away by how they move and how amazing they are? Always. It is quite humbling every time I see them. I have a long path ahead of me, and I look forward to diving in and learning. How long do dances go for; is it an all night event, or just a short after dinner exercise? As long as music is on, there will be dancing. Classes go for an hour, social events go for the night or the weekend. Once you start, you'll take whatever opportunity there is to dance. Is it physically challenging; do you need to be fit? I would say it makes you more aware of your body - to be comfortable with who you

are. The less tense you are, the freer you are to move. You had a bit of success at a recent event. Can you tell us a bit about that? Our team came third at the Sydney Rueda Championships. It’s an event where truly incredible dancers and people come together to do workshops, learn more about the dances of Cuba and surrounding countries, and share their skills and showcase dances and choreography they have been learning. Awards were given out that night, and I was lucky to get one of the best male dancers. It was quite a shock, and again, quite humbling, as there are so many good dancers at these events. I consider them my peers, and I continue to learn and be inspired by them. What are your plans for the future? For dancing, I plan to go to Cuba to experience the origins of the dance I love. I also look to learn more about the roots of Cuban Salsa, namely, the Afro-Cuban dances. Thanks Owen.

hat is it about Owen that makes him a great student? Owen is so open to learning new things and has totally connected to the roots of Cuban Salsa, so it’s been easy to teach him! He is also very analytical and technical and eager to breakdown the moves to gain a thorough understanding of the body’s connection to the rhythm. Did he pick up the dancing quickly? Yes, he picked up Salsa very quickly compared to most people - especially for the average Western man who was not brought up on dance! He was in his first Salsa performance with Kulturithmik only three months into his learning! That was at Utopian Dream Festival in 2013! What makes a good student? A good student to me is one who is fully open to the learning experience, who has emptied their cup of other learnings and is willing to take on new methodologies. You can be a total beginner dancer and “get it” after only a short time learning, like Owen, if you are open; or, you can be a more experienced dancer whose cup is already filled and you have no room for new teachings. I have been teaching Cuban dance for nearly 20 years, and yet I am still learning new things every year! What advice would you give to someone who is thinking of giving Cuban dance a go? It’s as easy as walking with attititude - that has been my motto for years! You will also be transformed - rhythmically, physically and spiritually! “ i Gordon and Niki. Share with us a bit about yourselves and how you came to call Forster your home? Gordon: I was lucky enough to grow up in Forster. Shortly after school I moved to Sydney, where I studied and worked to build a career in photography. I met Niki, my partner in life and business and we’ve had three beautiful children together. We always talked about raising them outside of Sydney, and eventually made the move. I am happy and lucky to call Forster home again; it really is one of the most beautiful places in the world. Niki: From the moment I met Gordon, we spent a lot of our holidays in Forster. Once we decided to have a family together, we loved the idea of raising our children in Forster. Since moving here, I have always said it was the best manning-great lakes focus. 34 44 focus Special Edition

decision we have ever made. We love it. Who or what sparked your interest in photography originally? Gordon: My father, Gary Cooper, was a motorsport photographer, so I started learning the craft alongside him (he also inherited his love of photography from his father). Whilst I loved taking motorsport photos, I found myself drawn to the personal shots of the drivers - capturing the emotion of the drivers out of the cars and through the visors of their helmets. The human eyes can show so much! After that, my interest and passion for photography had taken over my life, so I decided to study portrait photography and expanded the business to weddings and portraits. I am lucky to say twenty years later, the interest for photography still grows every day.

Niki: I have always painted, and from very early on I found myself surrounded by oils and canvases. However, it wasn’t until 2009 when I met Gordon that he showed me the workings of a camera, and my interest took a turn. I found myself telling people's love stories through the lens of a camera. I have been incredibly lucky over the past 10 years to be working alongside a person as enthusiastic as Gordon. Your wedding pictures are truly stunning. Why do you love doing weddings? Gordon: Love is the most powerful thing in the world. When two people decide they want to spend eternity together and share this moment of celebration with their families and friends, it is my favourite thing in the world to capture. The day has so many emotions to it - from the bride and groom, who have been planning the day and are now living it, to the parents watching their children start another

chapter, to the guests who can remember their own special day, or are still looking forward to planning this day one day themselves. The excitement and nerves of the bride and groom preparing for the ceremony with the closest people in their lives ... The love shared with all of the guests during the ceremony and the fun of the reception afterwards. It all comes together for such an amazing celebration. Joan Miro once said, “You can look at a picture for a week and never think of it again. You can also look at a picture for a second, and think of it all your life”. On our clients’ wedding day, we try to capture pictures they will think of for all their lives. Niki: In some ways, weddings are very orchestrated events; you know where people are going to be at what times and what is going to happen. However, in some ways - you know nothing. Every wedding is completely different, and everyone has a unique and wonderful love story to tell. It is our job as the photographer to tell the story of your day honestly and naturally as it unfolds. You won't find me at a wedding telling people how to stand or where to look or making sure the

father of a bride kisses his daughter before he walks her down the aisle. These moments are real and will happen. Instead, you will find me in the background, capturing real smiles, real emotions and moments shared between people. What tips do you have for couples when they are looking for a photographer to shoot their wedding? These are my top three: 1. You need to have a photographer who you have a good rapport with - they spend so much time with you on the day, you need to be comfortable with them and be sure you have a connection with their vision for the day. 2. Pick someone who respects your ideas and style and can build on them - who will place importance on all aspects, both the big details and the little ones. 3. Someone who will give an honest cost evaluation. Some photographers you hire by time and some by the number of images you will receive. A passionate photographer will not put limitations on the day, but will work with the couple prior to the wedding so the day runs smoothly and everything can be captured from the day, start to finish. What have been some of your most

memorable shoots? There have been so many over the years. The Channel Ten Bondi Rescue boys were probably the most popular photos we have taken on social media. Through Runners Magazine we photographed a lot of people who were running for good causes, raising money for illness or picking up rubbish for the community. It is always so inspiring meeting amazing people committed to helping others. Weddings vary so much; it would hard to single one out. We have photographed beautiful weddings in Tasmania and even Europe. One that comes to mind right now is the last one we did for 2016 at Mansfield on the Manning, because it really was such a beautiful local venue with an amazing countryside as the backdrop. You don’t only photograph weddings ... can you tell us about the other photography services you offer? We can shoot anything you need. We love doing portraits as well, whether it be couples, families or newborns. We also photograph Santa on the Beach - Forster, which people from the community and outside love. This year we had so many people from the local community excited about getting their Santa

picture on top of Forster’s iconic sand dune. We even had people from the UK, Newcastle, Tamworth and Sydney travelling up to Forster, just to get a photo with the big guy. I often joke that the motor sport photography was a good start. Once you can shoot something travelling at 340km/hr, everything else is easier to capture! Some fast facts about you: The camera you use? Canon 1D X: it's the best. Favourite time to shoot? Anytime. When the camera is in hand, we are having fun and doing what we love! Prefer indoor or outdoor? Depends on the

subject. We love the outdoors, but the studio is also fantastic. Something you can’t live without? 85 mm 2.8 lens. It's an amazing portrait lens. Your favourite place to take photos? ell us about yourself and your family ... My name is Deb O’Brien, and I grew up in the local area. After ten years of travelling Australia, my husband and I realised that “home” was a pretty awesome place and made the decision to move back. I would describe myself as a unique blend of quirky and earthy, and I believe Wayward Jerseys Farmstay reflects that. Wayward Jerseys would not be, without the love and support of my husband, Lauri Pulkkinen. Lauri is the type of man who not only supports his wife to follow her crazy dreams, but also says, “Fine, you want to buy a milking cow … Well, let me build you a dairy”. We also have three beautiful little girls, ranging in ages from six to eleven, who love their way of life and love sharing it with other people. I have always loved animals and am passionate about the New England area. I truly believe I have the best job in the world! What prompted the beginning of Wayward Jerseys? The name “The Home for Wayward Jerseys” (shortened to Wayward Jerseys for convenience) was initially a term that my husband jokingly used to describe my penchant for Jersey cows. Our guests are a pretty open minded lot and even if incredulous at the beginning, it is not long before they get into the spirit of things and are milking cows like a professional. Actually, one of my favourite things is being introduced to a child at the beginning of a stay who has their head down and focused on their favourite video game, and by the end of their stay they couldn’t even tell you where their gaming device is. Do you think locals like us take for granted what’s in our own back yard in regards to primary produce? Yes and no. Yes, because I think we are truly spoilt here in regards to our primary produce. But just because we are spoilt, doesn’t mean that most people don’t know they are on a good thing by living here. It’s like this area is a wonderful secret, and all us locals are in on it. There is a lot of buzz around local food and produce at the moment - justifiably so - and there are also a lot of amazing and dynamic people starting to really do some incredible things. I would have to say that it is pretty exciting times here in New England. Plans for the future? Yes, yes and yes. relocated from Newcastle with my husband, Dale, in 2003, intending to use our Koorainghat property as a bed and breakfast; however, circumstances changed our original plans. I had worked in an accounting support role prior to the move and then faced the challenges of seeking local employment. I attended many business and social functions and selected groups and have met some wonderful and supportive people. This encouraged me to make the jump and start my business, “Your Office Genie”, offering support to small business and accounting offices. Since then I have trained as a Celebrant - trading as Lovebirds Wedding Ceremonies and oversee the process of marriage, conduct naming ceremonies, and funerals or as my husband cheekily suggests, “match, hatch and dispatch”. Tell us what motivates you given your differing professions. I find that I have an inherent interest in people and a drive to help them achieve their personal or professional goals. As a celebrant and born romantic, I connect with couples approaching marriage by asking each of them to recount to me the story of how and where they met and how they fell in love. I’m passionate about ceremony and the power of the spoken word and encourage couples to use their imagination when planning their ceremony. For a funeral, I strive in the ceremony to honour the life of the deceased through personal stories by friends and family to celebrate their unique contribution in this world. approaches to time management. Sometimes the ducks are in a row, and sometimes late nights and early mornings are required to meet client expectations. In accounting, the deadlines are normally dictated by the financial year or the ATO and lateness can incur financial pain. In terms of weddings, the interrelationship of so many different parties as well as weather conditions can impact on the event and only the bride is forgiven for being five - ten minutes late. Death doesn’t have a timetable, and when I receive a phone call from the local funeral director, the bereaved family becomes the focus and I ensure that they are treated with dignity and respect in a timely manner. The Manning-Great Lakes is the perfect wedding location. What is it that makes our backyard such an attraction for newlyweds? We have the most amazing array of locations, some still to be found. We are spoilt for choice, and I am often amazed by couples who have such foresight and initiative in how they structure the service to integrate the natural beauty of the area to create their own special atmosphere of celebration. We all know that weddings can be a big expense. Often it comes down to price and the convenience of facilities that makes our backyard such an attractive option. MidCoast Council facilities compare favourably to areas such as Newcastle and Sydney, and it’s unlikely that you will have a problem with parking here. I told Jane exactly how I wanted things set up and placed, and I couldn’t have done it better. The last thing I wanted was for Trent or myself worrying or trying to set up the wedding - it was a relief for someone like Jane and her team to just do it. I think it is important to just focus on one aspect of the wedding at a time and try to not over-complicate things. Once I had everyone booked in, the rest all just fell into place. Tell us about the businesses that helped make your wedding day so perfect? As mentioned above, Petersons Winery were so incredibly helpful in assisting us to put together our perfect wedding. They were professional yet friendly and approachable and remained so from start to finish. There

was not one thing we could fault with their service, and not to mention the delicious food. Jane and her team from Ivory Lane produced all decorating and styling exactly as we asked for. Like Petersons, nothing was a hassle, and Jane was more than happy to help us achieve our goals. From the drapery and chandeliers to the chairs and centrepieces (and more), Jane went above and beyond to deliver my vision. Flowers played a huge part in the decorating and styling of the wedding, and I was very excited to hear peonies were in season for our day. Maria from Rosemerin Florist in Butler Street was so wonderful to work with - she is so talented and knew exactly what I was asking for. In organising such a big and important event, communication is key, and I had no problems whatsoever with this with Maria. We received so many compliments on how beautiful the flower arrangements were -

and this is evident in our photos. No matter the occasion, I always have confidence in ordering flowers with Rosemerin, knowing they will be stunning and fresh. To capture our most treasured memories, we chose Andrew Pearson Photography, and we are so glad that we did. Andrew is based in Tamworth, however, travels to the New England and Hunter regions and beyond to preserve those once in a lifetime moments for the bride and groom. His approach is quite different to what I have experienced in the past - we both felt comfortable and at ease in front of the lens, and nothing was forced or premeditated. Andrew has perfectly captured our love for each other. The boys arrived in style - thanks to Fleet Helicopters! Trent kept this a secret from his groomsmen until they were headed for the Armidale Airport, all suited up! Barry from Fleet Helicopters flew the boys over

the gorges for a joy ride before landing at Petersons in time for the ceremony. This also happened to be Trent’s first time in a helicopter. As neither Trent or myself are originally from Armidale, 98 percent of our guests were from out of town. The majority of our guests travelled from Tamworth and Inverell; however, we did have guests travel from Sydney, Newcastle, Canberra, Coffs Harbour and even the United States. To prevent any confusion, we hired Edwards Coaches to collect guests from the Powerhouse, who then returned guests at the conclusion of the celebrations. We could put our mind at ease, knowing our guests would get back in town safely, and I think they really appreciated the service. What was the highlight of the day? Saying “I Do” for both of us was the best part of the day - becoming husband and wife before our beautiful families and friends. Plans for the future? Love each other. Work. Travel. Family. James Day Professional photographer James Day talks to FOCUS about the influence growing up in the New England has on his work, being adventurous with his clients, his passion for photographing weddings Australia wide and beyond, and the importance of nurturing young photographers. ell us about where you are from and how you got into photography… I was born in Armidale in 1985 and lived there until I was about 25. I shot my first paid job at 16. It was actually a family shoot for the librarian from my high school, which seems fitting now, because I was always into photography - and family and relationships are really important to me. It wasn’t long before I realised that wedding photography was something I loved doing. In the very beginning, I couldn’t really decide what to focus on exactly - advertising, sports, marketing, news; there are just so many different genres in photography. When I was asked to photograph my first wedding, I realised it had everything in one. It was just non-stop fun to me, because one moment you’d be photographing a landscape, the next moment crazy action, and then the next moment you’d be photographing something reminiscent of fashion. You know ... It was just a constant change between five or six photographic genres in one day. Since then I have shot over 600 weddings in Australia and overseas. Even though I’m based in the Sydney region now, I always love coming back to the New England to shoot local weddings - there’s something special about shooting weddings at home, where I started this whole amazing journey. How did you make the transition from an aspiring photographer to a professional photographer? It was just one of those really slow transitions for me. I learnt how to take decent photos, and

people would see what I was photographing and ask me about my work. That built up more and more over the course of many years, and I learned a lot from people around me. So, with the experience and knowledge I’d built up behind me, I asked the guy I guess you could call my hero to take me under his wing. His name is Simon James, and he’s based in Melbourne. I remember calling him, shaking with nerves, asking him, “Will you help me to become a better photographer? ”to which he replied, “Yeah, come on down!’’ So I got to spend some time in Melbourne with him, carrying his bags, helping him out, and learning everything I could from him. That was one of the biggest steps in my transition into becoming a professional. It’s been a constant evolution since I started. Now I’m focused on wedding photography itself and photographing weddings for Australia’s most adventurous couples - which is the kind of style I shoot. It’s very fun and outrageous and a bit crazy. What would you say has been the most adventurous wedding you have shot? One of the most adventurous weddings I’ve shot was only a few months ago. The ceremony happened in the middle of a river. The bride stood upstream and the groom stood downstream, and they basically met in the middle of the river, with their families in tow. The majority of the guests were standing in the water, with some standing on a little sandbank. They had their ceremony standing right in the middle of the river, the reception was on the riverbank, the bride and groom spent most of the day barefoot. I shot the wedding in my board shorts, as I had

to run up and down in the river photographing their day. As well as photographing amazing weddings like that, you’re also a Fujifilm ambassador. Tell us about how that fits in with your wedding photography. Yeah, I am an ambassador for Fuji, so they sponsor me to speak at different events. Being asked to work with Fuji was kind of a dream come true ... You know, one of those things that if you had told me as a kid growing up in Armidale that I’d be sponsored by a camera company, I probably wouldn’t have believed it. I’m one of only two wedding photographers sponsored by Fuji in Australia. I’m also sponsored by another company called Vision Art, who make wedding albums for professional wedding photographers around the world.The most important part of these professional relationships to me is that I can meet and speak with and encourage other photographers, and I try to do that as much as I can. I also speak at Australian and international conferences and run my own workshops to help other photographers grow and learn. That’s how I learnt, from other photographers, so it’s important to me to give back in the same way. What’s the hardest part of your job? Not eating all of the wedding cake! (Laughs). You know, after a long day photographing a wedding, you may have had a bit of travel to get there, then you might be photographing for 10 to 12 hours and then at night you see the wedding cake and you’re like, “Oh, man!” It’s a bit funny, but it’s true! Apart from that, it would be the many hours spent sorting and editing. So, right now, the wedding I shot on the weekend

had 12,285 images, and this week I have the job of sorting through those images. I think differently to a lot of photographers, because most photographers try to limit the amount of images they shoot. This leads to them not having such a heavy workflow throughout the week but, for me, when I press the shutter, it’s like buying a lottery ticket. When you press the shutter, you never really know what’s going to happen; moments change from millisecond to millisecond and for me, I would much prefer to have more tickets in the lottery. So, even if I discard more images, I have more chance of really nailing a shot. So that’s usually my week filled - sorting through photos. It does go to show how passionate you are to get that perfect shot. This leads us to our last question; tell us your passion for the New England. I have spent most of my life there, and the people of the New England really nurtured my love of photography as I grew up. So the people that have hired me past and present to go back (to the New England), I’m completely indebted to them. For me, I love going home, I love seeing my family, because all my family are still here. But also, there are not many places in the world that can beat the scenery of the New England region. My wife, Catherine, and I actually got married on a family property just outside Armidale and used all local vendors for our wedding. There are so many beautiful venues and talented wedding suppliers locally, that really do put together some of the most glorious weddings that you’d ever see.
