i girls; have you both always been Coffs Coast locals? Em: Hey, hey! We are both true blue locals right now. But, it hasn’t always been that way. I was born and grew up in Bellingen. Olly: I’m a little confused with my nationality, as I was born and grew up in Siberia (Russia), lived in Dubai (UAE) for over eight years, then for a little while in Nairobi (Kenya) and two years ago finally found my personal paradise here in Coffs Harbour. Have you known each other for a long time? Em: We met two years ago at church. Olly: Em was one of the first people I met moving to Coffs, and it was almost instant friendship after the discovery of our mutual love for Mexican food and travelling. When did the idea for Raw X Salt begin to take shape? Em: As mentioned, our favourite thing after food (and our husbands) is travel. I have a little boy, Phoenix, so we went travelling together with our husbands and Phoenix to Singapore and Vietnam. We had the best time while eating our way through Asia! But it was down at the beach in Vietnam where we saw a lot of plastics littering the shore, and our business idea was born. Do you both have a background in fashion/swimwear design? Em: Yes and no. I had worked as a model in the fashion industry for many years and travelled around the world seeing the industry from that perspective. Olly: I had worked as a cabin crew for Emirates Airline and was more of an observer of fashion globally for a number of years. We both worked for a successful fashion brand here in Coffs and learned the back stage part of what it takes to run a business firsthand.

Raw X Salt

Why swimwear in particular? Living in this part of NSW, we are spoilt for choice when it comes to pristine, uncrowded beaches, rivers and waterfalls. It’s a part of our Australian culture to spend lots and lots of time at the beach. There is nothing better than salty skin, messy hair and sandy toes. We think that if you’re wearing shoes - you’re already overdressed. What do you think is the most important thing to consider when designing a swimwear range for women? Being kind to the environment and being kind to ourselves. These two are more connected than you would think. We’ve got to be more loving and accepting of who we are and the skin we’re in to be conscious of our environment and other people. What was the motivation for you guys to make your label an eco-friendly sustainable brand? “Eco-friendly” is definitely a term that gets thrown around these days. It’s important to really dig deep and understand what it really entails, spanning from the fabric that your clothing is made from, to the factories where the clothing is made. It includes the way the fabrics are dyed, how the wastewater for the factory is handled (ensuring it’s treated and not polluting the environment), are the factory workers safe and getting paid a fair wage, is your clothing high quality, or does it fall apart after a few wears, is the packaging it comes in biodegradable or recyclable? We knew we wanted to do things better. We did not want to do things the easy way. We wanted to bring value on more levels than

just “business sense”. We also think it’s almost a prerequisite for any new fashion brands to be mindful of how they are going to impact the environment and how the garments were made. There are many brands that create beautiful products, but there are way less of those who do this with the cost towards the planet and people in mind. There is a quote that nothing is really free or cheap in fashion; someone somewhere is always paying for it - be it the planet or people. This resonates with us on so many levels. Can you explain to us what makes your label sustainable? It’s a holistic approach. We use only innovative fabrics that literally turn waste into wealth: ocean retrieved fishing nets, old carpet scraps, pre-post consumer waste that would otherwise end up in landfills or harm our oceans, is regenerated and turned into

beautiful regenerated fibres. We are very thankful to be living in the time and age where technology makes this possible. There is a lot of devastation, damage and heartbreak that human consumption brings, but we’ve got to use this as a fire in our bellies to act. As our business mentor, Emily Cooper from Novel Creative says: look to the stars, carve out the dust. We also only engage with ethical manufacturing, making sure those who create our garments are taken care of. When it comes to shipping, we use compostable satchels and a carbonneutral courier. Even our business cards are made out of recycled fashion waste and old T-shirts. In everything we do, we try to keep the main thing; the main thing, for us, is creating something beautiful with other people and our planet in mind. Did it take a lot of extra research to find the right manufacturers and suppliers to suit your brand’s ideals? Yes, but it was time worth spending. It was slow and sometimes frustrating in the beginning, because we live in a fast world, but we always believed that things that are foundational will pay off eventually. At the end of the day, we would rather take time and do things slowly, but do it well. Have you both always had an interest in the environment and ethical/sustainable resources? Or, is this something that you’ve become more conscious of in recent times? We have always appreciated the beauty of the world around us, and maybe this is why we are such avid travellers. We are definitely becoming more and more aware of ethical and environmental aspects around us as we go, but it all started at making a commitment to simply recycle our rubbish and pick up plastic at the beach. We do have the best support in our husbands, who are passionate about people and the planet too, and the four of us can have endless discussions about how we should leave this world better than we found it. We are very lucky to live on the beautiful Coffs Coast, which is on the front foot with its environmental awareness. We never would say that we are perfect though; it’s all about learning how to do things better today than we did yesterday, loving people, the planet and going for salty dips every time we get a chance. Preferably twice daily. Thanks girls.

Kev Smith has had a passion for 4WDing for many years, and has been operating Woolgoolga Offroad since the '90s. We had a chat with him about some of his discoveries, his favourite destinations and what keeps him motivated to keep exploring the local landscape.

H

i Kev. You have been on the Coffs Coast for the past 35 years plus; what brought you to the Coffs Coast? Mum and Dad dragged us up here to the Coffs Coast in the mid '80s from the Blue Mountains for a better life, and after being here for 35 years, I’m now a genuine local. You have been operating Woolgoolga Off Road since the '90s. How has the landscape changed since starting out? Over time there have been some big changes. Lack of maintenance in the forests around the coast has been the biggest issue. But, this comes from lack of funding to organisations. So with lack of track clearing, maintenance of roads, very minimal back burning, no fires and wild weather, the bush and tracks just get out of hand. The Lantana is ridiculously thick in the hills, there are trees down everywhere, and a lot of the tracks we used to drive 10 years ago are now stupidly impossible and dangerous to drive. I support when the loggers come in and selectively log, as they fix the roads and push back the thick undergrowth. Where are some of the most exciting places you’ve been off-roading? That’s a hard one! I’ve been lucky enough to compete in 4WD events, I’ve done a huge amount of outback touring, explored our East Coast and just recently came back from Far 8 Coffs Coast focus

North Queensland. I really don’t know that I could tag any one place, as I get a buzz out of all destinations. But Coffs has been rated as the 4WD capital in NSW, as it’s only 10 minutes from some great tracks. How did you first become interested in 4WDing? I bought a little Rocky 4x4 years ago, and a mate from Grafton dragged me into (and out of) the bush one weekend - from then, I was hooked. On to my fourth 4WD now; it gets in your blood with where you can go, and the 4WD community is great, as we all share the same passion. Your tours are not just for adventure, but they touch on some of the Coffs Coast's history. How important is sharing the history of the Coffs Coast to you? Very, very important. Most people don’t think about or know a lot of Coffs history, but we have so much hidden history here. Most weekends I take groups out for a bush experience with some 4WDing and then always do a little history lesson as well. Even I learn every trip, as everybody has something to share on the local area. History in the hills has been bloody hard to dig up, so the more I can gather and learn, then the more I can share, so it can last just a little longer. Through your own study of the local history, what is an interesting fact that not many locals might know? I suppose the gold fields might be a good one.

WHERE ELSE CAN YOU STAY AT A 5 STAR RESORT THEN HIT THE BUSH JUST 10 MINUTES AWAY, MAYBE 4WD 'TIL LUNCHTIME, DROP INTO A CAFÉ FOR A FEED, THEN 4WD BACK TO YOUR ACCOMMODATION?

While only short lived, the gold rush we had here in Coffs was pretty significant, where towns evolved and are still growing today. Coramba and Nana Glen are two prime examples. There were over 300 registered gold, tin, silver and copper mines back before the turn of the century. Even today we go looking (and have found a lot of them) for the old mines, claim areas and even found some old relics out in the bush. They need to be preserved, and I would love to see some of the old relics out of the bush and displayed in town. We hear you’re off on your own adventure soon. Where are you heading? We (my partner, Sally and I) have been planning to go touring Australia wide. With the support of some great local companies, we are slowly getting ready to leave soon. I am lucky enough to have several national 4WD magazines on board, so we can share our travels through their publications too. How would you compare the Coffs Coast to some of the other 4WD locations in Australia? Where else can you stay at a 5 star resort then hit the bush just 10 minutes away, maybe 4WD 'til lunchtime, drop into a café for a feed, then 4WD back to your accommodation? It is that easy, and I think this is what attracts the off-road

community to Coffs. Where would you say is your favourite spot to get out and drive on the Coffs Coast and why? That’s like giving away

my little secrets. Honestly, that’s why I started Woolgoolga Offroad, and why I do drives nearly every weekend to show people my hidden secrets. To me, that’s what it’s all about. I have gained so many friends with what I do - that’s been my ambition all along. This has been my hobby and passion for nearly 30 years, doing it all off my own back. Exploring, sharing, helping and hopefully guiding people so they can experience nature and to develop friendships. Where can we find out more about Woolgoolga Off Road? hat brought you to the Coffs Coast? Two and a half years ago I accepted the role of General Sales Manager for Southern Cross Austereo in Coffs Harbour (radio stations HIT & MMM). I moved here from Newcastle and have loved living here since. You have kicked off 2019 with a bang with your new business; tell us a little about it ... In March last year, I decided to go out on my own and start Paradox Media. My dream was always to run my own media company, so I took the leap of faith. Having extensive knowledge within the media industry gave me confidence that I could help clients increase their revenue through creative marketing solutions. Lucky for me, it has been very successful. Paradox Media works with some of the biggest clients in Coffs. 2019 is gearing up to be even bigger, with our client base extending into Port Macquarie. How can Paradox Media help your business? A lot of business owners aren’t aware of how to get the best out of their marketing budgets, and this is where Paradox Media comes into its own. We have an unbiased opinion on where to and how to spend your marketing budget. I have spent over 14 years within the media and sales industry working in both small and national companies. It’s not a one size fits all for marketing, so I structure each marketing strategy to an individual’s business. Results, Accountability. Research: Spend time researching the business, the client and the desired outcome. Strategy: Once you have all the research, build a cost-effective strategy to maximise return. Execution: Making sure the campaign/promotion is activated properly. Results: You need to drill down on the data to get their real result of the campaign. Accountability: Most people fear this, but you must make sure it worked, or it didn’t. Holding yourself and the business accountable and then working out how you can do it better. Always growing and striving for a better result, regardless of whether it is successful. Missy Higgins is a name that most Australians are very familiar with; she’s been a significant figure in the Australian music industry for some time now. We were lucky enough to have a chat with the singer-songwriter in the lead up to her visit to the Coffs Coast as part of the Coming Home Tour at SummerSalt Festival this month. Hey Missy. We’re all really looking forward to catching your Coming Home Tour at SummerSalt Festival with the John Butler Trio here in Coffs Harbour! You have toured together before; what’s it like touring with John after all these years? We’ve played together a lot over the years, but the last time we actually toured together was when I was just starting out. I’d released my first album and he took me on the road as a support artist, which gave me a real leg up in the industry when I was trying to get my own fan base together. It was really fun; his whole touring entourage is like a family, and I definitely felt like I was part of that family. I remember he actually had his kids with him on that tour, which I’m about to do with this one! Your family has gone from three to four recently, with the arrival of your daughter last year - congratulations! Has Luna been on tour with you before? How do you find travelling with your little ones? Thank you. Yes, Luna is five months old and my son, Sammy has just turned four, and they’ll be coming on

the road with us. It’ll be the first time I’ve toured with two kids, and it will be Luna’s first ever tour, so I’m sure it’ll be pretty hectic - but it’ll be lovely having them along with me. And, we’re going to be playing songs from across all of my albums, because I guess we’re celebrating The Special Ones release, as well as my last album, Solastalgia, so I’ll be playing plenty of oldies, a bit of a retrospective, but also a few of the newer tracks too.

Coffs Coast Physie has had a successful year on a competition level, as well as a fun year of dancing as a club. We spoke with Allison Cook Pitt about what she loves about teaching Physical Culture, the club's achievements, as well as their goals for the year ahead.

H

ey Allison. For those who don’t know, can you explain what Physie is? Physie (short for Physical Culture) is a sport! A dance sport, to be precise. Physie is a combination of dance, jazz, ballet, hip hop, contemporary, aerobic dance, and even yoga and marching! The age appropriate choreography and music changes each year, and the dances are designed to maximise coordination, strength, fitness and flexibility. How long have you been involved with Physical Culture? I have been involved with Physie for over four decades. I started doing Physie myself when I was five years old. I am still competing, teaching and enjoying Physie and plan to for a long time to come! How many people make up Coffs Coast Physie, and what is the age range? Coffs Coast Physie is a family oriented club. We have approximately 120 - 130 girls and ladies who come to our classes each week. Our girls range from four years of age to our eldest individual competitor, who is 66, in our ladies' class. The BJP motto of Empowering Girls for Life is so true! It’s also really important to point out that ability is not a criteria at Physie; we welcome all girls and ladies. Does everyone who performs Physie get involved in competitions? No, competing is not compulsory! Girls and ladies are more than welcome to come along and just enjoy the exercise and friendships, but to be honest, it’s pretty hard to get to the end of the season and not want to show off all your new moves and skills! It really is so much fun to compete together and cheer each other on. 12 Coffs Coast focus

We have so much fun celebrating our successes, hard work and achievements! How do the competitions work? Do they start local and work up to national competitions? Each year we compete in Interclub competitions, at least two of them. We do one road trip, and one as close to Coffs as we can we know that families can find sports expenses hard, so we minimise it as much as we can. At the end of the season, our girls and ladies can choose to compete at our individual zone competition, as well our team events. These are a fantastic way to enjoy getting on the floor with friends and working together. Successful competitors at this level can then go on to compete in Sydney at a national level. The pinnacle of the competition season is, of course, Nationals. Not everyone gets to compete at this level; you are competing against the best of the best, and the Physie is amazing! We hear you competed in Sydney recently at Championship Team events? How did Coffs Coast go? Last year our juniors made it into BJP Championship Grade ... the highest of all grades. This is no mean feat for a regional club. We have been working toward this for the last seven years, and we were able to take six of our teams to Sydney to compete at the Quay Centre at Olympic Park. It was a great opportunity for many of our dancers, who may never experience dancing here otherwise. We went down with the only expectation to do our best and have fun, but we managed to walk away with three places in each age group. Matthew Matthew McEwan is a local man who is a very keen fisherman; his passion is obvious when you talk to him about the sport. He knows his stuff and his way around the local Coffs coast and waterways. He gave us the low-down on some of the best local fishing spots and what you might expect to catch there. ey Matthew. Tell us your about your relationship with the Coffs Coast. I moved to the Coffs Coast when I was nine months old from Kellyville in Sydney. I have now lived here for the past 22 years and absolutely love the area. It’s close enough to the coast for estuarine and offshore fishing, but is also only a few hours drive to many remote freshwater fisheries just over the Great Dividing range, making the Coffs Coast a fisherman’s heaven! When did you realise you had a passion for fishing? I realised I had a passion for fishing when we started going on family holidays to Yamba. We would stay there for two weeks at a time, and my parents couldn’t keep me away from the water. This passion started from an early age, as there are photos of me with my floaties on casting a lure. As the years went on, I would sneak away from packing up the campsite to run down to the local wharf with a styrofoam cup full of yabbies to fish until they had finished packing up camp. How does the Coffs Coast compare to some of the other locations you have fished around Australia and New Zealand? The Coffs Coast would have to be one of the most iconic fishing destinations in Australia - if not the world. It’s so diverse in the fact that we are located in a position which attracts the cooler water during the winter months, which brings in a very good run of inshore Snapper, where you can land trophy sized Snapper only a hundred metres or so from the beach. On the other hand, during the warmer months the East Australian Current runs down the coast, bringing with it a large variety of pelagic fishes. Mackerel and Marlin are the main targets for this time of year; however, Wahoo and Dolphin Fish can also be found amongst the mix. Bringing ourselves away 14 Coffs Coast focus

from the coast and heading to the west, the freshwater fishing is truly amazing. Australian Bass are a native fishing icon and can be found in the many freshwater streams and creeks around Coffs within half an hour’s drive. Heading up to the top of the plateau of Dorrigo, both Rainbow and Brown Trout are stocked by Dutton Trout Hatchery, making it an ideal spot for a fly fisherman to tangle lines with a trout a two. Not many spots in the world where you can catch a Marlin and a Trout in the same day! Pretty impressive stuff, if you ask me. What are some great fish to catch here on the Coffs Coast, and what’s been your best catch so far? As I stated earlier, the fishing opportunities are endless here around Coffs, so there’s always something on offer to cater for everyone. If you are looking at putting the boat in to head offshore, some great fish to target would be Snapper, Teraglin and Pearl Perch, as most of these fish can be targeted by dropping some baits on some reefy patches of the sea floor. If you are wetting a line up the estuaries and rivers, you can expect to cross paths with the likes of Bream, Flathead and Whiting by simply using prawns, yabbies or worms. As for me and some of my best catches, the ones pretty high up on the list would have to be a 200 kg Blue Marlin, an 8 kg Snapper or a 25 kg Dolphin Fish. For anyone starting out fishing or for those who don’t know about the etiquette of fishing, what are some of the things they should be mindful of? People should just be mindful of other users of the water. By saying this, I mean that if there are people towing others on a tube or swimmers around, try to avoid fishing in that area, as you could cause a potential accident by being in the road. As for etiquette when it comes to other people fishing, keeping a reasonable distance away from other boaters to the best of your ability would be an appropriate

action. A general rule of thumb is to keep around a good cast length or an Olympic size pool distance away from others. I understand that sometimes this can’t be helped, but just be mindful. Another thing that I would like to touch on would be the amount of rubbish left behind by some people. If you were able to take it to your fishing spot, then you can take it back, so please look after our waterways and put your rubbish in the bin! You enter the Dave Irvine Memorial Classic each year. What’s it like competing, and have you had any success with it? Competing for me is certainly more about the social aspect, rather than the competition itself. The Dave Irvine draws over 250 anglers each year and is always about getting everyone involved. Prizes are all given away via raffle, so you don’t even have to catch a fish to take home a boat and motor package! As to success, last year we managed to place third as a team out of 90+ teams, so we were pretty happy with that! So much so, that the trophy is now permanently mounted in our boat. What are some of your new projects this year which involve fishing? Could you tell us a little about these? For 2019 I’ve been invited to attend the Kakadu Klash at the start of May. The event is an invitation only event and promotes catch and release of Barramundi, so I’m looking forward to that. Another project that I’m looking at starting up would be a personal blog where I can post informative write ups and videos to help out those who are looking at getting into fishing or broaden the spectrum of those who already fish. I've put in all these hours, and now I’m here and it's what a lot of people dream of becoming - and I was able to achieve it. What do you love about learning Taekwondo, and what has it taught you? Dan: You need determination, respect, discipline and confidence. You have to work through stages. At a young age it teaches you to stop and think about what you are doing. It teaches you responsibility, respect for others and makes you a little more mature. Issy: The thing I love about it most is the exercise in determination; you really have to dedicate yourself, which will be a great skill to have for life. What are your future goals in Taekwondo? Dan: To someday be the best in the world and compete internationally and for the Olympics. Issy: To someday own my own dojo and be able to teach students different fighting styles. Thanks guys.

Prestigious hairdressing awards The Australian Hair Fashion Awards (AHFA) is Australia’s largest and most successful independent hairdressing awards program.

T

he program has been growing steadily each year, and now attracts hundreds of entries from salons and individuals across Australia. Entries are judged by a panel of international industry professionals, each of whom brings a wealth of experience and knowledge to the judging process. The AHFA is organised annually by the Australian Hairdressers Journal. Each entrant is required to submit six photographs to be judged against others in their state. This month, the four finalists for 2019 will be nominated from each state. These finalists will

then attend a gala, red carpet event in Sydney, where the winners will be announced. real estate update. What will 2019 bring for the Coffs Coast housing market?

T

here is speculation around volatility of the real estate market but if we are honest with ourselves, when hasn’t there been speculation?

Falling property prices, share market jitters, federal elections, each of these factors keep us continually speculating and awake at night! People continue to make real estate decisions for the same reasons they always have. Births, deaths, marriages, financial stress, financial

windfalls, job loss and promotion. I’m not suggesting real estate is immune to the economic impacts of government decision making; however, I am suggesting there will always be people wanting to buy a home and always be people needing to sell their property. I believe it’s important to understand that none of these things are new; the world has always been volatile. So in saying that, here is my opinion on what to expect from the

housing market in 2019. Buying First home buyers have claimed their biggest share of new housing loans in more than six years. The data shows first home buyers made up 18.3 per cent of owner-occupier loans taken out in November. This is the highest share for first home buyers since October 2012. Meanwhile, the value of investor commitments dropped 4.5 per cent month-on-month and 23.4 per cent yearon-year. Many first home buyers have been biding their time, squirrelling away savings and waiting for the opportunity to strike. There’s finally space in the market for them to find their feet, without having to go head-tohead with experienced investors. Selling Active buyers have declined in the market, slowing growth of home prices across the Coffs Coast. This is certainly not a doom and gloom forecast for our local market; in fact, during the past five years alone Coffs has continually enjoyed slow and steady growth year on year and does not experience the erratic peaks nor troughs of metropolitan markets. The average house price has enjoyed an increase from $378,000 to $490,000 during this time, showing a consistent and balanced market. Homeowners looking to sell their

property may be hesitant to put their home on the market, because that also means purchasing a new house, which more often than not requires a brand-new mortgage. As a result, consumers can expect continued low inventory of houses on the market while buyers and sellers try to adjust to the new banking requirements. New Construction and Development The growth and expansion across the Coffs Coast has seen the demand for residential construction increase, with many new estates being developed across the coast. With the bypass discussion in full swing, this is an opportune time to consider where to purchase during this time. Due to the demand on services and trades, there has been an increase in building costs, and as such the affordable housing supply has been more so in the older properties and those seeking to renovate. Renting Low vacancy rates will continue throughout 2019, and therefore it is important to ensure renters seek pre-approval from real estate agencies, due to the increased competition for properties. Likely new homeowners should continue to save as much as possible, to ensure their application is strong when ready to make a loan application to purchase a home.

own café, Kath’s Café, which was named in honour of his late mother, Kathleen White. FOCUS had a chat with Simon, to find out more ...

W

hat is your connection to the Coffs Coast? The first time I came to Coffs was as a child on family holidays in 1969 and again in the ‘70s and ‘80s. I returned in 1985 and realised it was time to make it permanent. I’ve been here for 33 years. When and why did you start your business? I was about to leave for a family wedding in the USA, when I a good friend of mine from another business in the street told me that the café was available. I have always loved the village atmosphere of Sawtell, so it was an easy decision to make. I had less than two weeks to organise the purchase and all the legal requirements, before I left the country. With the help of amazing friends while I was away, who cleaned, painted, installed new lighting and electronics etc., I completed the clean-up and preparation of the premises with the help of my sister and her partner on my return and opened a week later - the last week of November. Where did the name “Kath’s Café” originate? Kath’s Café is named in honour of my mother, Kathleen White. Having grown up in

a large family in Sydney during the ‘60s and ‘70s, our lives were spent surrounded by friends, cousins and family - this meant regular lively gatherings involving food, avid conversation and music. I loved eating, and Kath was an ardent supporter of my desire to become a chef! It was because of her support in my early years that I persevered in my career, becoming an apprentice chef at The Wentworth Hotel in Sydney. Often, amusingly, she would state that when I opened my own venue, she would look after the cash register, while I did the cooking! Sadly, Kath passed away far too young, and it was as she was in her last days, I made a promise that, if and when I ever did open my own place, I would name it in her honour! This then, is my ode to my mum. A promise kept! What training did you undertake, and where was your first job? After my apprenticeship, I worked at several major hotels and restaurants before moving to the Coffs Coast. I‘ve worked at several restaurants, catering outlets, Pelican Beach Resort, Bonville International Golf Resort, Coffs Harbour Racing Club, and a local motel. When it comes to creating a seasonal menu, what do you take into

consideration? The theme of the café is very retro, ‘60s/’70s style - including old records as placemats (too scratched to play them). This provides the “burger bar/diner” feel of the café and is the influence for my menus. We offer old fashioned style burgers, snacks, home-made cakes, milkshakes, fresh juices and great coffees. Seasonally I keep with the village and beach theme, while also preferring to source as much produce as I can locally. What local produce features on the menu at Kath’s Café? We offer great coffee, and it’s roasted here in the Coffs Coast by Stoka Coffee. Our meats are from a local butcher, and all our fresh fruit and vegetables are from A&D Veges, who source as much as they can from the region (Coffs Coast, Dorrigo etc.). What is your favourite dish on the menu currently and why? Our classic Reuben on dark rye reminds me of my many trips to the USA; however, we often have on our specials board my version of Southern Fried Chicken. This always reminds me of Texas, where my youngest brother lives. When it comes to special events and functions, what range of food and services can you offer?

We will be opening for limited night events starting on Friday 15th February. Fab Fridays will offer our awesome burgers, along with several dinner meal options and local musicians playing tracks from the ‘40s to the ‘70s. Limited seating will be available, so I recommend calling or emailing us for a reservation. Where do you source new ideas from? My memories of the burger bars of my childhood, plus the many American diners I’ve tried - and I either replicate the classic flavours and style, or I put a modern twist to it. What would you say is the biggest influence on your cooking? Since a teenager, I have loved Japanese and Asian cookery, because of the purety of flavours and fresh produce. Also, the European styles from my childhood (my father was Czechoslovakian) that I still love to this day and often reproduce both at work and home. Outside of work, what do you enjoy cooking? I love trying nationalities that are new to me - South American, African, Mediterranean, Persian, to name a few. I also love to try making many preserves and chutneys of days gone by or a modern take on them. Where can we find out more? Neil Manson is a driver on the Rainforest Rattler - a vintage diesel powered train that runs to and from the Coffs Harbour Railway Station during the summer holiday season. Passing a diverse range of scenery, including coastline, rainforest, rural hinterland, urban landscapes and historic tunnels, the Rattler is a unique and special attraction for the Coffs Coast. We spoke to Neil about his experience with trains and the railway and what he loves most about driving the vintage train.

i Neil. How did the Rainforest Rattler come to be on the Coffs Coast? The Coffs Coast is almost a perfect storm for heritage trains; we have a city with a large enough population to create a viable market and have a large tourist population to ensure an almost unlimited market. We have some of the most beautiful scenery in NSW, only a few minutes from a railway station that is smack bang in the middle of our busy tourist precinct! In a one hour trip, travellers can experience coastal heath, coastal littoral rainforest, coastal estuaries, rainforest, five historic hand built tunnels, rural hinterland and urban landscapes. How did you become involved with the Rainforest Rattler? I am a diesel fitter by trade and naturally interested in all things mechanical. I first joined Lachlan Valley Railway (LVR) after meeting some of the volunteers when they were working a steam train out of Coffs Harbour. Most of my time is spent maintaining their steam locomotives. Steam is my passion, but it has limitations, such as only running in the winter months, and on a steam train only a few of us are in the driver’s cab at a time - so we don’t interact as much with our passengers. The Rainforest Rattler is a diesel powered rail motor, so we can run all year round and as the driver’s cabin is located in the carriage, we can interact 24 Coffs Coast focus

with passengers and share. As a Coffs local, I could see the huge potential a heritage train had running during Coffs Harbour’s peak holiday season. Numbers were crunched and it looked viable, so last year we trialled a short season, that was successful, and this year’s longer season was also very successful, with all tours selling out - so next year, with lessons learnt, we will most likely extend our season further to meet demand. Can you tell us a bit about the train? How old is it? How fast does it go? The Rattler is actually three vintage railmotors coupled together. These were the first diesel trains built by NSW Railways as a low cost alternative to steam trains for remote areas with small populations, where it was too expensive to send a steam train a long distance with only a few passengers. At almost 100 years old, it is remarkable that they are still running - let alone carrying thousands of people every year. The Rattler’s three 150 horsepower engines give us a total of 450 horsepower for a 75 tonne train; by rail standards, this is a very high power to weight ratio and while these trains were capable of high speeds, today’s safety regulations restrict our maximum speed to 80 kph. How many passengers can it take at a time? In 1923 the Rattler could carry 120 passengers. Today, the average Australian is larger than we were almost 100 years ago, so for comfort and to allow for picnic baskets and nursed kids, we limit tickets to 90.

Where does the Rainforest Rattler run? All trips depart and return from Coffs Harbour Railway Station; we are extremely grateful for the assistance station staff offer us on what is a considerable addition to their daily workload. We have three main trips, with all trips firstly running south to Bonville Creek; Beaches And Tunnels goes as far north as just past the last of the five Red Hill Tunnels; Beaches and Coramba runs past the Red Hill Tunnels and extends into the Orara Valley to Coramba; the Hinterland Picnic Train continues further into the Orara Valley Hinterland to Nana Glen - this is a very popular trip, as people can enjoy their BYO picnic as we travel through the countryside. What are some of your favourite sights that you’ve seen from the train? As a passionate Coffs Coast local, I love it all, but my favourite sight is Boambee Reserve. As kids, this was our favourite picnic spot, and today on the Rattler I love taking a trainload of happy people over the bridge and watching our passengers waving to the beach goers and the people on the beach waving back. To me, that’s the ultimate Coffs Coast summer - happy people everywhere, enjoying our special place. How long have you been involved with trains and railways? Only since 2010, when LVR were running steam out of Coffs. Most of our members have been lifelong rail enthusiasts, and all our drivers are either XPT or freight train drivers who take holidays to drive the Rattler.

What is it like driving a nearly 100 year old train? How does it differ to modern trains? Our drivers love the hands on seat of the pants driving of the Rattler; we have heard stories of modern airline pilots flying gliders and tiger moths on the weekend for a true flying experience, without computers and technology. Our old trains are the same; there is no computer or automation to drive it for you. Apart from a modern state of the art radio with satellite communication, GPS and electronic messaging to and from train control, all the controls are still manual. They have some strange tricks that will catch the unwary, but it’s all the weird and different things drivers need to know that makes these old trains so much fun to drive. What’s your favourite thing about this train? Meeting so many people and sharing the experience of heritage travel through the magic place we live. What sort of response have you had from Coffs Coast locals who have taken a ride on the Rainforest Rattler? We have had a fantastic response; every trip has sold out, so the hardest part of my job is replying to people who missed out on tickets and telling them we will be back next year. One of our oldest passengers was an 89 year old lady who fondly remembered catching railmotors to school in the far west of NSW - for many children, we have been their first train ride. REGIONAL GALLERY The draw of the ocean and the free-spirit of surfing, particularly in the 1960s and ’70s, underlies the two exhibitions coming up at Coffs Harbour Regional Gallery - Gerry Wedd: Kitschen Man and Ripped Off: Gerry’s been doing it for years … it’s about time someone else got in on the act.

I

n these exhibitions, some of Australia’s leading artists - who also happen to surf play with the imagery and folklore of surf culture, at the same time “taking the piss” and highlighting the humour, irreverence and anarchy that pervades the scene. You’ve probably seen Gerry Wedd’s art, even if you’re not aware of it. In the late 1980s, as a young surfer (five-time South Australian surf champion) and artist, Wedd came to the attention of Mambo Graphics, the iconoclastic surf-wear company. With his sense of humour, subject matter, encyclopaedic knowledge of surfing culture and distinctive “scratch board” style of drawing, Wedd found a spiritual home at Mambo and helped create its unique ethic. Working for Mambo until 2006, Wedd designed T-shirts and other clothing, posters, ceramics, metalwork and surfboards. Choosing ceramics as his predominant artistic vehicle, Wedd draws his craft out of his personal inspirations, interest and experiences. It seems fitting (or is it ironic?) that Wedd’s two predominant pastimes are elementally different, yet perfectly paired in the complexity vs. simplicity that nature present us with. Drawn to the ocean and the unpredictability of the sea, Gerry surfs almost

every day, while his craft-practice gives him a grounded space (working literally with earth) calling for more measured decisions and outcomes. Kitschen Man includes new works influenced by the ceramics collection at the V&A museum in London, studied by Wedd on a recent Australia Council Residency, as well as quintessentially “Gerry” pieces from a career spanning close to 40 years. The exhibition also features works from his ever-changing personal collection of inspirations: work made by family, friends, colleagues and mentors. Surfing magazines and particularly the images of iconic surf photographer John Witzig are key inspirations of Gerry’s. In the accompanying exhibition Ripped Off, Gerry and fellow Mambo artist Robert Moore, along with Jon Campbell, Ozzie Wrong and John Witzig himself, delve into Witzig’s extraordinarily rich archive to create new artworks exclusively for Coffs Harbour Regional Gallery. Prepare for a free-wheeling and subversive ride through surfing’s “golden age”. February is also the time that Still: National Still Life Award opens for entries. Coffs Harbour Regional Gallery’s signature program, Still has established itself as one of Australia’s most exciting contemporary art

prizes by opening the award to artworks in all mediums. 2017 judge Lisa Slade, Assistant Director of the Art Gallery of South Australia, described Still as “a game changer … Still has placed the still life genre at the heart of contemporary art practice. There is a real sense that something new is happening here”. Over $20,000 is offered in prize money, and the award is open to artists at all stages of their careers. Beach Party - HOT CARS, HOT MUSIC & HOT BAND -

It’s been a long time coming, but finally someone has cracked it for the first retro music gig in Coffs in just over seven years. The last time we saw a ‘60s show on the foreshores was in 2012, when the old Wintersun Festival made a brief appearance in the town - but just as quickly disappeared.

W

e spoke to John Logan earlier this week, who was proud to announce his new event. Thanks to the gang at JLE and Ingenia Lifestyle with the support of Coffs Coast Events, the foreshores will come alive again with the sounds of the ‘60s on Saturday, February 2nd. Local events company JLE saw the potential of the space when it was redeveloped in 2017/2018 and according to manager John Logan, “It is ideal for a Saturday twilight event with a live band, but we have added some classic ‘60s cars, roller skaters, a Rock ‘n’ Roll DJ, Rock ‘n’ Roll dancers, a large (3 m x 2 m) video screen and a whole lot more. We thought a ‘60s theme would suit and once we started, it quickly adopted the feel of Wintersun. It isn’t Wintersun, but it draws from that genre and we have added to it.” Dubbed the Ingenia Beach Hopp, it takes its name from the old “sock hops” of the ‘50s and ‘60s, when teenagers would gather on the beach to listen to a new form of music that their parents hated, Rock ‘n’ Roll. Many religious groups would refer to the music of the day as “devil music”, and in some states of the USA and other countries,

Championing the Coffs Coast What’s happening in Woopi in 2019? Quite a lot actually! Our wonderful Woolgoolga and Northern Beaches Chamber of Commerce is responsible for this column each month, and our AGM is coming up on the 13th of February upstairs at the Seaview Tavern from 5:30pm.

e’re always looking for new people to come and join us, either as a member or on our executive committee. We’re specifically looking for a new Secretary and new Treasurer, so if you know anyone or you yourself would be interested, please contact social@woolgoolga.org.au for more info, or just pop your head in on the night.

he Coffs Coast welcomes over 1.8 million visitors to the region annually, as one of the most popular holiday destinations in NSW, with visitors enjoying the paradise that we all know is the Coffs Coast. With positive impacts on our local economy and employment, tourism really is everybody’s business. Locals are encouraged to create positive experiences for visitors, whether in business or personally, to create a friendly, welcoming impact for our region and the opportunities found here. It may be providing a friendly greeting, assisting with directions, recommending a favourite restaurant, or it may be joining one of the more formal programs that provide visitor services to the region’s holidaymakers. THE COFFS COAST CHAMPIONS PROGRAM is one of these programs. It provides an exciting way for local businesses to learn about the tourism offerings of the Coffs Coast, enhancing the visitor experience by providing more personalised local knowledge. The quarterly events, primarily suited to businesses who regularly interact with visitors to the area, allow Champions to gain insight on current information and trends. Sharing tourism information with each other, to then share with visitors to local businesses, will ultimately enhance our region’s unique tourism offering. Attending Champions events is a time and costeffective way for businesses to keep their finger on the pulse of the changing tourism market. To find out more about what is involved in becoming a Champion, email paradise@ coffscoast.com.au At each event, selected Champions give a brief presentation on their business and service offering, allowing time for questions and answers from other guests. Time for networking and collaboration to build strong industry

VISITOR INFORMATION is also distributed through the local Visitor Services Hubs. These sites are located at various locations around the Coffs Harbour region, including Woolgoolga, Sawtell, Park Beach Plaza, Dolphin Marine Magic and Coffs Central. Offering different levels of service, each of these hubs provide an option for visitors (and locals) to find out more about the region at identified locations. The Visitor Services Hub staff provide current information on individual operators and experiences at these locations and provide face to face contact, along with printed material for visitors. Volunteers work with the staff at these locations, particularly at peak times, and provide a valuable local perspective. FURTHER ACTIVITIES that assist promotion of the beautiful Coffs Coast and its many activities and experiences include the destination website, coffscoast.com, where tourism businesses are able to list their product or event for free and showcase it to the many of thousands of visitors who search the website each month. The website is the core resource for information regarding the destination and highlights the numerous places to play, stay, taste and explore the region. Locals are encouraged to check out the website and discover something new - after all a “stay-cation” is something we can all do. Visitors to the Coffs Coast benefit by getting help and assistance from a wide range of people, at many locations. his season brings back the ever popular Sawtell Summer sessions. This is where First Avenue in Sawtell gets closed off and locals and visitors fill the streets and peruse the local stores, dine at the eateries or enjoy a takeaway on the grass on the medium strip. We are spoilt for choice, with many restaurants, cafés clubs, take-aways and the Local Sawtell Hotel. The latest additions to the village are vibrant Mexican Lime at one end of First Avenue, and Kath’s Café at the other. Kath’s Café has proved to be super popular for breakfast and lunch, and now we can look forward to their very first night time venture on Friday 15th February. Fab Fridays at Kath’s Café will feature local live music every Friday from 6:30pm to 9:30pm. You can eat in or dine alfresco! Fab Fridays will also include Special Dinner Menus and of course, their amazing burgers. A meal at Kath’s Café with the BYO option is sure to be the new Friday night place to be! See you there. The weather was sizzling hot for The Le Dãin Designs Summer Cup just recently. This didn’t deter locals and visitors alike from attending the day to have some fun. This is a family and fashion day and is part of the Coffs Harbour Racing Club’s Summer Racing Carnival. There was a choice as usual to either dress casually

Well, it’s definitely summer now - kind of a slow start, but now the humidity has taken over … it's seriously hot! Fortunately, we can just trot down to the beach and have a swim or drive to somewhere like the Promised land and cool down ... Lucky us!

There was the option to enjoy the delicious sit down luncheon, or enjoy a light meal at the bistro. The race owners for the day were Le Dãin Designs, Racing Carnival Escapes, Raine and Horne Toormina, Sawtell, Two Tails Wines, Sawtell Hotel, Any Entertainment, The Bayrange Group and Country to Coast Pest Control. Great day out! The Pink Silks just recently had another of their hugely successful fundraising Golf Days on January 11th. The Pink Silks Trust Golf Day was another sell out, with 32 teams playing a 4-person Ambrose. There was a sea of pink around the golf course and lots of novelty prizes and the chance to win a Hole-in One car. This event was followed by the 13th annual Pink Silks Ladies Charity Race Day on Sunday 13th January. This is such a popular day, with the attendance of over 1,600 people all dressed up in vibrant shades of pink. Being adorned in pink is of course, to show support for all the amazing work put in to raise money for the cause by this amazing charity. The laughter and fun were evident across the whole crowd, and all ages were catered for.

This was definitely a day where families and friends alike could dress up and enjoy the day.

Pink Silks has now reached an amazing total of $860,000 raised in 12 years, for the women of this community and national research foundations. Over the years the Pink Silks Trust has expanded from breast cancer to cover all cancers, all illnesses and now all disabilities endured by the women of the Coffs Coast. The PST 13th Fundraising year starts again this month. There is always something to enjoy from the art world at the Sawtell Art Gallery. This weekend brings the launch of an interesting art exhibition exploring the theme of habitat. This is their first exhibition for 2019. The art work will be showcased from Saturday 26th January to Saturday 23rd February. Don’t miss out! The Le Dãin Designs Red Carpet, Bubbles Dress Up and Makeup evenings have started again for 2019. This is the third year that this has been rolling, and it is a mini event rather than a sales night. Lucy Williams met her dream man whilst living and working overseas; he was from Milford Haven in Wales and she was from Coffs Harbour, Australia.

T

hey didn’t let distance get in their way though, navigating stints of living in different countries and ultimately coming together here in Coffs to tie the knot surrounded by their loved ones. We got Lucy to tell us all about their love story and their beautiful beachfront wedding. Hi Lucy. You got married recently; congratulations! Can you tell us about how you and your hubby met? Thank you so much! Answering these questions has brought back so many amazing memories. Matty and I actually met at work. I had transferred to Malaysia in January 2015. A few weeks after my arrival, Matty and I were first introduced at an Australia Day BBQ. Matty was the token Welsh guy invited to the BBQ! It wasn’t until later that year, a group of us from work met in Singapore for the F1, and that’s where it all began. Was there a moment in your relationship that you realised he was “the one”? We went on our first holiday to Bali in December of 2015. Not only was our relationship new, and long-distance, I was working in Western Australia and Matty was still working in Malaysia. We were meeting at Bali airport,and the nerves and excitement to see him after seven weeks was out of this world. We had the most incredible eight nights in Seminyak! That’s when I thought, life doesn’t get better than this - I had met the absolute man of my dreams! While our families were from opposite sides of the world, mine from Coffs Harbour and Matty’s from Milford Haven in Wales and we were working in different countries, we just knew that no 42 Coffs Coast focus

Kelly Brady from The Prop List was our stylist, we used Fiasco for our catering, Rosie Pose for our furniture, Special Occasions for our lighting, Bower Bird and Brown for our flowers, C2C for our Marquee and flooring, Sugar Plum Cakes and Desserts for our wedding cake, David from The Moores Photography, Lauren from Hair by Lauren Moran, Tamika Munro for the girls' makeup, Benny Black for music, and the amazing Sam Dawson was our celebrant. Was there a particular moment from the wedding that really stands out to you? Gosh, there were so many moments that stand out. I think for me it was seeing our family and friends just having such a great time! Special mention also to our Best Man Harry, Matt’s son; he absolutely rocked as being Best Man and made the most incredible speech! I can remember Matt and I snuck out for 5 minutes during the night to have a drink before our first dance, and we both said to each other, "This is incredible; it’s everything we imagined!" Did you have a honeymoon? If so, where did you choose to go? We had one week in Coffs with our families, before Matty’s family flew back to Wales. We then had a week in Bali. Hanna handpicked flowers from the garden to match the bridesmaids’ dresses and created new headpieces on the spot! Her creativity saved our flower crisis, and her relaxed attitude kept us all cool, calm and collected. We loved our hair and had a beautiful morning getting ready - Ellie Pierotti. Hanna did a fantastic job on my hair for our wedding. We did a trial on my hen’s night, which helped me work out exactly what I wanted on the big day. She listened to what I wanted and executed it beautifully. I loved that Outpost came to us, so we had photos in our family home. My hairstyle was relaxed and not too formal, yet beautiful and elegant; I couldn’t recommended Hanna and Outpost more - Milli Divola.

M Y T H B U S T I N G Hair Adrian from Celtic Roots Hair Designers tackles some common myths about hair: 1. Cut your hair regularly and it will grow faster No matter what your mother told you, cutting your hair does not make it grow quicker. It will, however, be healthier, as split ends and overheated bits will be removed. 2. Stress gives you grey hair Unfortunately, much as I’d like to blame the kids, genetics and getting older are what cause grey hairs to grow. Stress can cause hair to fall out, but this is usually reversible once the stress is managed. 3. Air drying is better for your hair than blow drying As with most things, it’s all about moderation. It’s not good to attack your hair everyday with heated implements, but two or three times a week is fine. Just make sure you’re not going over the same bit of hair five times with your straighteners - once should be enough! 4. Dandruff is dry, flaky skin Dandruff is actually the result of too much oil on the scalp, which causes the production of too many skin cells. Dry flakes mean you need more moisturising, not Head and Shoulders. 5. Pigtails will make your hair fall out If you’re doing loose up-dos, then you’ll be fine. If you are overly stretching the ponytail or making very tight plaits then you’re putting stress on the roots, so it’s possible you may run into problems. It would be better to save those styles for occasions.

6. Rinsing your hair in cold water will make it shinier No, it will just make you feel cold! However, products such as Goldwell conditioners or colour can certainly make your hair shinier. 7. Brushing your hair 100 times a day will make it shiny Years ago when we washed our hair once in a blue moon, this was an excellent way to spread the natural oils along the length of the hair, making it naturally shiny. However, today we generally wash our hair a few times a week, removing the natural oils in the process. Consequently, the shine must be achieved through products like Goldwell Elumen. 8. You need to regularly swap shampoos to keep your hair glossy This one is true! No matter how fancy your shampoo is, it leaves a residue which quickly dulls your hair so that it doesn’t reflect light so well. How often have you left a salon with shinier hair? By using a different shampoo, the residue is removed and - hey presto shiny hair! The trick is to interchange a good quality salon shampoo like Goldwell with your regular one and use it every third to fifth wash. This way you’ll never get a build-up of residue and have shiny hair all the time voilà! Want the COVER LOOK. It seems creating easy, romantic waves can sometimes require a ridiculous number of steps - making the look, well, far from easy to achieve. So, it’s no wonder we’re crushing hard on the cover look. Lauren from Living Doll will share simple, time-saving techniques for whipping up perfectly bouncy, romantic locks. Now, let’s create some - in just three steps. Step 1: Start with a volumising mousse and blow-dry. Tip your head upside down and blast to help uplift your roots. Or, if your hair is already dry, dust on some volumising powder or dry shampoo to give roots a little extra boost. Step 2: Wrap small sections of hair around a curling iron, but make sure to curl right to the roots of your hair. This is the key for maximum body and hold. Then wrap each section around your fingers to create a curl and pin to allow to cool. (You’ll look great at this stage, like a little granny set.) The longer you leave them in place, the better. Step 3: Brush out curls and finish with hairspray. Keep your makeup quite natural but really make those eyes pop. All I can say is eyelashes BOOM! This month’s inspirational health and fitness story comes to us courtesy of Coffs Coast Health Club Founder, Duncan Marchant. He has been running health clubs for over 20 years and in that time has seen thousands of New Year’s Resolutions pass him by. This month we ask him for his Top 10 Tips to help you stick to yours, now you’re almost a month in to the New Year … 1. Start small It’s easy to promise yourself you’re going to hit the gym six days a week - but harder to do it, especially when the beach is calling. Aim for three sessions a week and do your best to fulfil it. If you only get there once, it’s not a fail … just get back on track next week 2. Set definite goals The more specific, the better. "Lose fat" or "Add muscle" isn’t very specific - "Lose 2%" body fat or "Add 2 kg of muscle by March" is much more specific, and it’ll keep you focused. Even better - set yourself workout targets like a bodyweight bench press or 25-minute 5 km run. They’ll keep you focused, and the body changes will be a nice side effect. 3. Have a plan If you go to the gym with no idea what you’re going to do, you’ll waste time once you’re there. Pick a plan you’re prepared to commit to for at least a month, and stick to it. Don’t rely on motivation; book your exercise appointment in to your diary. 4. Keep a record Sets, reps and weights will do, though you can add more detail if you want to. Aim to move more weight, hit more reps, or take less rest between sets every week, and you’ll see improvements fast. 5. Use "finishers" There’s no excuse for neglecting cardio, but it doesn’t have to take long. Finish your workouts with a nasty gut-check - an all-out 500 m row or 30 burpees as fast as possible will do the trick. 6. Stay accountable Tell someone you trust your goals - and ask them to help you stick to them. Once you’re committed, it’ll be harder to quit. Personal Trainers are especially helpful in this regard. 7. Stick with it For most people, what starts off as a new 60 Coffs Coast focus

and exciting hobby can seem more like hard work after only a couple of weeks, especially if you don’t see instant results. Rest assured; this is normal. You’ve come this far, so persevere. It usually takes around three months for training to become a habit, and by that time you will start to look and feel better. In the meantime, remind yourself why you’re doing it and reward yourself for sticking with it with something like a quality massage. 8. Change one thing at once Planning to quit the smokes, booze and sugar at the same time as starting a new fitness regime? Not even you will have the willpower to make that stick, champion. Change one small thing a week - giving up soft drinks, for instance - and add a new habit when the first one’s set. 9. Work as a team Exercise can be social, and it’s easier to stay motivated if you have a partner or friend to join you. Even saying hello to the regulars at your gym can make it a friendlier place. Group exercise classes are also a great option! 10. Visualise success "Use all five senses," says sports psychologist Michael Sachs. "Don’t only see things, but hear what’s going on, smell, taste the sweat in your mouth and feel the steel bar and what it’s like to go through the movements. This benefits ordinary people lifting weights, as much as it helps elite sportsmen." S UP ERF OOD S WHAT’S SO SUPER?! We’ve all heard the big news story or earth-shattering breakthrough about the latest “superfood”. So what’s in a “superfood” that makes it so super? Will it give you the ability to fly? X-ray vision? Superhero strength? The short answer is … NO! Leading local health expert Aaron Hardaker caught up with Katie Drury, an Accredited Practising Dietitian from Mid North Coast Physio, to find out more. Katie, what is a “superfood”? The term “superfood” is actually marketing genius used by food companies to describe common foods and their supposed health benefits. A quick Google of the word “superfood”, and you’re overwhelmed with headings such as, “The top 10 superfoods”, “The new superfoods for 2019” and “The best superfoods for weight loss”. While the foods touted as superfoods do generally have health benefits and contain various vitamins and minerals (like most foods); the anti-ageing, anti-cancer and slimming properties etc. are usually the work of smart marketing and media influence and don’t actually hold much weight. This is not to say that you should cut them out altogether. By all means, if you enjoy a kale smoothie for breakfast and don’t mind the expense, continue enjoying it, but just be aware that variety is important. So what do I need to be aware of when choosing what to eat? It is true that not all foods were created equal - each food has a different profile of vitamins, minerals and nutrients, all of which play an important role in maintaining body functions (even fat). Therefore, it is important to have variety in your diet. Aim to have a colourful plate each time you eat. As a general rule, each different colour fruit or veg has different vitamins, minerals and a host of antioxidants e.g. green leafy vegetables contain iron, some calcium, folate and the list goes on, whereas red and orange vegetables are high in vitamin A and vitamin C. Put simply, the more

colour on your plate, the better the nutrient profile of your meal. While an individual food isn’t going to give you super powers or make you lose weight, each individual food should be considered super. It is playing at least one very important role in providing your body with the fuel it needs to function every day, whether it is labelled as a “superfood” or not. How do I know what is the right balance for me? If you would like more information on vitamins and minerals in food or feel that you struggle getting variety from your diet, the easiest way is to see an Accredited Dietitian. There is so much poorly researched information being spread by self-touted “nutrition experts” through social media these days, that it is hard to know where to turn. The safest option is to see someone with a four year university degree, strong scientific evidence and accreditation through the Dietitians Association of Australia. ODY WEIGHT BADA$$ OR BEAST (Whichever is more appropriate). Body weight training can be one of the most brutal workouts you have ever done. It involves opposing gravity and resisting against it, whilst also effectively and efficiently utilising it for motion. Body weight training is for everyone; in fact, you cannot survive without it. We need it to live, move, work and enjoy free time. It isn’t just when you go to the gym or workout around a bunch of cool looking equipment. It can be done anywhere. If your holidaying, travelling, working away, at home, down the beach or wherever, it can be used to get some work done and improve health and fitness. What sort of bodyweight exercises can I do? The possibilities are quite endless in this regard. You can simply run, jump, climb, crawl, balance, roll, vault, swing, combat etc. You will not and do not need any fancy gym equipment to perform these. All you may need is a little quality coaching on the proper execution of these movements. They may seem simple, but please do not mistake simple for easy. Some of the simplest movements, e.g. balancing, can provide you with one of the best bang for buck movements in the industry today - although, you must know the intricacies of this pattern to ensure you obtain all of the benefits from this. What are the benefits of bodyweight training? Apart from the few obvious reasons - no requirements for machines etc. - there are deeper benefits that come from this method of training. The ability to adapt and utilise the exercises in practical situations become of much benefit, especially in total body control and organisation for sports and daily activities. The awareness that comes from this practice is also enhanced by environment awareness - what environments will allow you to perform certain movements etc. You will also develop lean, strong and toned muscle mass, whilst digging out the fat from inside the undesirable areas. Isn’t bodyweight training for those Calisthenics/HIIT type groups? Absolutely not! We coach all ages through various styles of bodyweight training - ages five, right up to 60 years! Our styles of training are accessible and suitable for any fitness level; we

new breed fitness believe this is a valuable way to stay in good health for everyone. What is a routine that I could try to begin with? Here’s a simple routine that you practice to begin to enter the world of body training. Proceed with caution - this isn’t a quick magic pill workout or two minute Gutbuster styled routine. They don’t provide lasting benefit. This will be the seed to a world of everlasting improvements, but it will not be the only thing you will need on your journey. Consistency and adaptivity are necessary for this effect. Movement 1: Standing single leg balance 30 seconds each leg. Movement 2: Backward Rocking 30 seconds Movement 3: Pushup Hold Position 30 seconds Movement 4: Hanging 30 seconds Perform this for two - three rounds every second day, to begin with. These are simple and foundational movement elements that will in time proceed to construct complete full ranges of movement patterns that can be used for practical application. To reach these skills, you must spend adequate time with these first and then progressively add more complexity and intensity. The skills of bodyweight training should not focus on intensity too early, as this may cause injury, and you must not progress too quickly with complexity, as to create lasting skills and movements you must understand the intricacies that are involved in the thousands of movements that we have access to. The moment you achieve this level, you will feel the ultimate satisfaction; you will feel confident, capable and of course, your physique will have become that of the work you have put in. We hear this a lot of the time with our tribe, on how “powerful” and “free” they feel. Limitations of your daily activities become less and less after each practice session. hoebe, welcome to Business Minds … You’ve recently opened a new store called Soda the Store; can you tell us a little about it? Soda the Store is the new women’s clothing and lifestyle store located at the Coffs Harbour International Marina. Focusing on casual daywear and coastal accessories, Soda is home to an easy-living style and features some new and exclusive brands previously not available in the region. Think coastal, natural, a little bit salty! Our doors opened early December 2018, and it has been non-stop since! There remains a hint of that fresh paint smell; it’s a nice little reminder of achievements thus far … It’s quite surreal to feature in Business Minds. What inspired you to take the leap of faith to start your own business? It has always been one of my goals since completing my tertiary studies to be involved in or run a small business. Like many, I just wasn’t sure how, what or when it would take form. I have had the fortune to be surrounded by inspiring and successful business owners throughout my life, and I’ve also helped others pursue side hustles and dreams of their own. I figured if I could rustle up enough belief in someone else, then surely, I have enough to believe in myself. I saw an opportunity and decided to take the initiative to turn my pipedream into a reality. Retail and fashion is a tough game; what do you think it takes to stand out from the crowd? Every industry has its challenges and risks. I think it’s important to be aware of these and to mitigate and manage expectations; going in with open eyes - and fresh eyes can help shake up the status quo. in Mudgee, my mum grew up on a banana plantation just outside of Coffs, and we made the long haul to the Mid North Coast almost every holiday to visit my grandparents and extended family. Naturally, many special memories and stories involve this area. A few years ago, I found myself visiting Sawtell for a well-needed hiatus, and you guessed it - I’m still here! It’s an incredible place to live, and now the special memories and stories can continue. The banana boxes on display in Soda are from my family’s banana plantation - a loving memory of a beautiful property and time, and a tribute to the history of the Coffs Coast. Any favourite motto or advice for other budding small business owners or those yet to take the leap? These are my three favourites: 1# Back yourself. It can be a dangerous (and natural) habit to turn to others for answers. It’s okay to get advice and bounce off ideas, but you have to call the shots. As soon as I forced myself to make the decisions and back my ideas - that’s when things started to go right and feel right and seriously take shape. Because at the end of the day, it’s your vision - you have to be the Director. Sit in that chair. Call the shots. 2# Enjoy the ride. It’s a rollercoaster, and it’s meant to be. It’s part of the fear and beauty of executing a dream. I am often reminded there are things we can control and those we cannot. Timing is not always perfect. Sometimes you just have to roll with it, let go and trust. A little bit of faith goes a long way. 3# Support crew are gold. Group sessions looking at business assumptions, market research and validation led to customer research and critical thinking about income. “Incubator is a perfect word for Startup Onramp: it has nurtured our budding idea into a business!” said Startup Onramp 2018 participants, TripaSista. The International Women’s Day (IWD) Coffs Coast Woman of the Year Award acknowledges and promotes the positive contribution of women to the community in the region of Coffs Coast.

he International Women’s’ Day (IWD) Coffs Coast Woman of the Year Award acknowledges and promotes the positive contribution of women to the community in the region of Coffs Coast. This includes the local government areas of Coffs Harbour and Bellingen Shire. The award aims to recognise outstanding women working for the empowerment of women and girls in business, education and community. Four inspiring finalists have been selected from all nominees for the 2019 Woman of the Year Award. The eventual winner of the Award will be chosen for her significant leadership and achievement in empowering women and girls. She will receive a monetary award of $1,000 for her project, sponsored by Coffs Harbour City Council and C.ex Group Club Grants. A runner up prize of $250, sponsored by One Agency, will also be awarded. International Women’s Day (IWD) falls on 8th March each year. The three major women’s groups in Coffs Harbour: the Zonta Club of Coffs Harbour Inc.; BPW Coffs Harbour (Business and Professional Women); and the Coffs Coast Business Women’s Network (BWN) will again be holding their very special breakfast on the morning of 8th March 2019 to provide the opportunity for girls, men and women to come together to share in the successes of our local women and girls.

NICOLE DONOVAN ”I know the debate has made a huge difference in enabling our regional women to feel more empowered in the workplace, to be heard in regard to harassment and bullying issues.” Nicole was instrumental in organising the #metoo debate in Coffs Harbour. This took many many hours of her time. Nicole worked tirelessly in the Coffs community to get the conversation going about #metoo, in bringing to the forefront the amount and extent of abuse that has happened to so many people in our society. Nicole also works full-time, managing the Surf Club Restaurant in Coffs Harbour, where she hires and trains, usually female, teens. SHELLEY LOWE “I have the opportunity to assist women and girls in reversing some of their dysfunctional lifestyle habits and medical habits. I will continuously strive to motivate women of all ages. This is my legacy to women.” Shelley is an enthusiastic, inspiring and empowering mentor for women and girls of Bellingen Shire and beyond. She founded Shelley’s Bootcamp in 2005 - outdoor group exercise classes for women and girls in Urunga. Shelley then saw a need and introduced

Seniors’ classes in 2015, with numbers in the “UCanDo” classes now exceeding 460 women. CLAIRE O’HALLORAN “I wanted to create a program to support female students, helping them as young learners … and developing strong, independent young women.” Claire is a PDHPE and Dance teacher at Woolgoolga High School. One of her roles is the Supervisor of female students - mentoring adolescent girls. In this capacity, Claire led a pilot wellbeing program for junior girls to enhance their self esteem - EMPOWER. Claire has visited partner primary schools to invite Year 6 girls to participate in the program next year, to support their transition into secondary school. In 2018 she also mentored young female refugee students to attend the Hallogen Youth Leadership Conference in Brisbane. KAMLA RUTHNAM WEBB “I fell into a role with some of the older girls from the program. It is an honour to be part of their journey and see them achieve so much.” Kamla has volunteered as a mentor for the Indigenous Mentoring Experience for the past eight years. For the last seven years she has volunteered weekly at the homework centre for indigenous children. Kamla mentors high school girls at her home and assists girls with Centrelink to provide them with safe accommodation. She provides business skills to

young women through her husband’s business and provides care packages to Warrina. NGINE & PERFORMANCE The new C 200 boasts a 135 kW/280 Nm 1.5-litre fourcylinder turbo-petrol with what Benz calls a “mild hybrid” function. This isn’t a hybrid with an electric motor driving the wheels; it’s an electrical system which is able to provide an additional 10 kW/160 Nm when accelerating. Known as the “EQ Boost”, the system also allows the C 200 to coast at a constant speed if the driver takes their foot off the accelerator. The battery is then re-charged when braking. The C 220 d offers a diesel alternative, and its new 2.0-litre engine now makes 18 kW more power at 143 kW and the same 400 Nm of torque. The C 300’s 2.0-litre turbo four has had a 10 kW increase, taking power to 190 kW, while peak torque is still 370 Nm. Also getting a power bump is the C 43, and its 3.0-litre V6 petrol is now good for 287 kW (up from 270 kW) while torque stays at 520 Nm. The C 43 uses Mercedes-Benz’s “4Matic” all-wheel drive system, while every other grade, including the C 63 S, is rear-wheel drive. The C 63 S still makes an impressive 375 kW and 700 Nm. The C 200, C 220 d, C 300 and C 43 all use the same nine-speed automatic transmission, while the C 63 S uses an “AMG Speedshift 9G”, which is a nine-speed dual-clutch auto. FEATURES Pride of place in the new C’s cabin is a significant upgrade in displays - the combination of a 12.3-inch digital instrument panel and 10.25-inch media display with Apple CarPlay and Google’s Android Auto are included. Touchsensitive controls are used on the steering wheel for the first time. These “allow the driver to navigate both digital displays using similar swiping

gestures to a smartphone, encouraging the driver to keep both hands on the wheel at all times”. Standard features, starting with the C 200 and C 220 d, include “Artico” upholstery, reversing camera, shifting paddles, dual-zone climate control, aluminium roof rails on the Estate, LED headlights, 64-colour ambient lighting and 18inch alloy wheels. The C 300 has the C 200’s features and adds leather upholstery, privacy glass (coupe only), proximity key and 19-inch alloys. The C 300 also gains the “Driving Assistance Package”. The C 43 picks up the C 300’s equipment and adds an enormous list of its own gear, including a new AMG steering wheel, brushed stainless steel pedals, Burmester 13-speaker stereo, heated sports front seats, head-up display, wireless charging, intelligent LED headlights, panoramic sunroof, black roof racks on the Estate, analogue clock and 19-inch AMG alloy wheels. Metallic paintwork is also part of the C 43’s standard features list, which includes “Obsidian Black”, “Iridium Silver”, “Mojave Silver”, “Cavansite Blue”, “Emerald Green” and “Brilliant Blue”, but you’ll have to pay for “Hyacinth Red”, which is a sort of candy apple red. Non-cost colours for the lower grades are non-metallic black and “Polar White” non-metallic. The C 63 S adds to the C 43’s equipment list with its own AMG steering wheel, illuminated door sills, digital TV tuner, nappa leather upholstery, an electronic rear differential lock, 19-inch alloys in matte black with high-sheen rim, plus high-performance brakes with red calipers. WHAT’S IT LIKE TO DRIVE: Starting off in the C 200, the steering is well weighted and accurate, offering a better sense of connection to the road compared to some of its prestige rivals. The steering wheel itself feels good to hold, too - and this is on the base car. Driver and passenger seats have multiple adjustments to get the fussiest of drivers comfortable, the vision

all-around is excellent and then there’s the engine, which is perfectly adequate. 1.5 litres sounds small, but the output is almost the same as the previous 2.0-litre and the 48 Volt EQ Boost hybrid system does provide just enough of a kick to get you away from the traffic lights or overtake without any lag. The hybrid system’s coasting function is excellent - take your foot off the accelerator and your revs drop to zero, but the car will maintain its speed. When you brake, the battery is recharged, so you’ll have the extra grunt again when you need it. Next up, my favourite - the C 43. Sitting just idling, the C 43 sounds sedate, but that’s with the exhaust note and engine in the Comfort setting. It means you can pull into your street at night or start it up early in the morning without waking up the entire neighbourhood. Put it in Sport, and the twin-turbo petrol V6 snarls and crackles as you shift through the gears. It’s not as vicious as the V8 C 63 S, but that’s the appeal of the C 43 - it’s a milder form of the C 63. With fantastic turn-in, all-wheel drive offering superb traction and great grip from the Continental ContiSportContact rubber (225/40 R19s front, 255/35 R19 at the back), a smoothshifting nine-speed, impressive brakes and that turbo V6, which pulls the car heroically out of corners. Leadership in the field of education can be a minefield. Everyone went to school, so everyone has some experience of schooling and how schools work or how they should work.

W

ith this said, how much of education should be curriculum-based, and how much should be mentored and modelled? I had this very discussion with a friend recently, who questioned the spending that some public and independent schools are utilising on solar power, on LED lighting and on climate control for classrooms. This month’s article shines the light on this issue. Argument 1 - Modelling in Action It is the primary responsibility of teachers to educate students. The curriculum is diverse and complex. Yes, it includes English and Maths and the myriad of other learning areas; however, it also includes crosscurriculum priority sustainability. The sustainability priority provides the opportunity for students to develop an appreciation of the necessity of acting for a more sustainable future and so addresses the ongoing capacity of planet Earth to maintain all life and meet the needs of the present, without compromising the needs of future generations. This is complex. What can schools do to model this in action? Schools can action this through a reduction in plastics in canteens, reducing paper usage, planting more local trees on the school site, recycling within the school, but it can also be a structural demonstration. This modelling can include classrooms with sustainable designs and technologies. Schools have been moving towards this new mindset over the last few years. My school has replaced all the school lighting with LEDs and are installing an additional 99-kilowatt solar system. This is not a unique idea, but it is future-oriented and models environmental sustainability. Students can see action being taken, and they see their school is making a difference.

Argument 2 - Climate Controlled Classrooms Research since the 1950s has determined students perform better in climate controlled classrooms than in classrooms without heating or cooling. A 2017 Harvard University study found that student performance dropped by 0.45% for every degree above 22oC. This paper also determined that student attendance, and in the long term graduation rates, also improved in schools that had climate controlled classrooms. As educators, we have an imperative to provide a school environment that allows our children to meet their potential, and climate controlled classrooms will support this overall outcome. It is difficult to deny this logic. These arguments can, however, be seen as contradictory. How can you support the environment and sustainable practices and also be an advocate for climate controlled classrooms? The answer is, of course, a compromise, but one that is supported by the curriculum outcomes. The addition of LED lighting to offset the expense of traditional lighting will reduce electrical consumption and reduce emissions. This strategy is paired with the addition of a significant solar power system. This technology will offset the addition of more climate controlled classrooms and reduce the school’s future economic burden. The end result is positive educationally, economically and ethically. T H E C R E AT I V E T O Y S H O P One of my dreams when I started The Creative Toy Shop was to find a way of spreading my love of play based learning and open-ended toys to people far and wide - to give children the ability to explore a handful of new products each month that have been specifically curated by a trained teacher. I was able to achieve this dream last April, when I started my subscription box service. What is a subscription box? Split into age groups, 0 - 2 and 3 - 5 years, our boxes are delivered to your door each month and provide a special selection of three - four products. When ordering a subscription box at the Creative Toy Shop, there are two options; you can order for one month (like a trial box) or sign up to a rolling monthly subscription. Our subscription boxes are released for ordering each month between the 21st and 25th, and delivery is Australia wide. We believe so strongly in our subscription boxes, that each box has a retail value of over $80, yet we sell them for $69.95 - which includes delivery. Often any new staff will comment that even after 12 months working here, they haven’t scratched the surface. Training is ongoing. Tell us about your team and their area of expertise. We have an amazing team in the office, as well as the “A Team” on the building site! Having great people working and communicating together certainly is the key to building quality homes in a timely manner. Jason is our Project Manager. He’s the BossMan and is a qualified builder who prefers to now oversee the projects and work closely with our clients, regularly meeting onsite to discuss their build. He is responsible for meeting with clients, project estimating, managing job schedules, all the trades, deliveries and possibly the most important

aspect - quality of the build. That’s a big list! He is so good at what he does and is largely the face of the business. He is honest, open and upfront with clients about all aspects of their build. Our clients find him very approachable and easy to get along with, gaining confidence and trust in him right from the start. Cameron works in our office as our building designer. He meets with clients initially to discuss the house they want to build, and then produces a concept, presenting it in 3D format so the clients

can picture what their future home is going to look like. From here, further meetings with clients are held until the design is perfected. Cameron is also starting to estimate project costs, so this, together with his design expertise, makes him an invaluable part of our team. Wendy is in our office as book-keeper, ensuring that all our employees, suppliers and tradies get paid on time. In addition to this, Wendy is responsible for tracking all costs against each building project; this is a huge task! We place high importance of ensuring that everybody who works for us is paid, what they are owed, and on

time; this maintains good working relationships throughout the team. With the number of invoices that come in every month, this is no small feat for Wendy, and she has bravely taken this on as her challenge! Sonja also works in our office as Office Manager. She is responsible for all office administration and client selections, liaising with clients, subcontractors and suppliers, ordering material, and council liaison to get new projects up and going. With a background as an IT business analyst, this has been a completely new role for her. Bear started with us as a carpenter, but is now our up and coming project manager, taking on an ever-increasing load from Jason. At the moment, he spends his time between working

He is responsible for ensuring that the building material is on site and on time, subcontractors are where they need to be on time, and everybody knows what they are doing! Bear is quickly gaining a reputation of being great with our clients, super friendly, and very approachable. He’s always a smiling face on site with a positive attitude. Then we have our team of skilled carpenters, along with apprentices and labourers. We couldn’t do without these men; they are a crucial part of our team, and we appreciate their hard work and dedication. What services do Inspire Homes Coffs Harbour provide? If a client wants a new home but doesn’t yet have a block of land to build it on, we help find

a block of land in their budget and in their preferred location. If the client wants us to, we can negotiate the block of land and settlement terms on their behalf with the agent. Some clients aren’t comfortable in the negotiation process, so we are more than happy to take this on. We offer the full building process from design of building concept, obtaining all required documents and permits required by council, to build your home. We then lodge the building application at council and liaise with them until approval is gained to start building. All our clients meet with our interior designer, and all their selections are documented and presented for approval. This means that we are exactly on the same page as our clients as to every

fitting, fixture, material and colour that will be used in their new home, and there are never any surprises! Tell us about some the new, exciting projects you are working on now and in the future. This year we are opening a new and much larger office space with a large, state of the art showroom. Our kitchens, bathrooms, electrical, carpets and many more items will be on display, allowing clients to come and make their selections in the comfort of our office. From the outset you meet with Jason (the builder), not a salesperson, to discuss your home. What you get is personalised relationships, oneon-one, with the person who is project managing the build of your home and will see it through from the initial meeting to the handover. We love doing custom builds, tailored to the individual client, and we are definitely not limited to flat blocks. We specialise in the sloping blocks, the builds that aren’t ordinary! We believe it’s all about providing you a beautiful, quality home - one that you will love coming home to. What makes you stand out above your competitors? The very first home we built in Coffs Harbour won a Master Builders Award; this set the standard for Inspire Homes, what we aim for, and what we represent. The quality of our homes is second to none, and we are confident to stand by this. What is the process when a new client walks through the door? Your first meeting is with Jason, so that both you and he can get a feel for your new home. This discussion usually includes location, budget, timelines, features for your new home, as well as the kind of design you like. If the client doesn’t yet have land, we assist in finding a block and negotiating on the land on behalf of the client. We have also assisted clients with purchasing a block with potential to subdivide, and then finding a buyer for the other block. The next step is sitting down with Cameron, our designer, to discuss needs and requirements

for your new home. From this meeting, Cameron is able to produce a concept plan which is then viewed in the office in 3D format on a large screen. The home can then be viewed as a walkthrough and from all angles. Any changes can be made and this process repeated, until you are completely satisfied that this is exactly what you want. At this point, we lodge all the necessary paperwork at council. Once it has been approved, it’s time to meet with our interior designer. Now for the fun part! Your meeting with Lisa from The Design Cupboard will determine all your external and internal finishings and colours. Lisa will ensure your home has that special feel, and that it all comes together to create an amazing space. Next, the action starts! Once your building has been approved through council, we’re all ready to build your new home. From here you begin to meet with Jason every fortnight (or as required) to discuss your home. No doubt, you’ll be super excited about these visits and to see the progress made.

Tell us about your community involvement. We enjoy working in with local rehabilitation employment agencies and a local drug rehabilitation centre, offering free building services. Inspire Homes sponsors seven children through Compassion, an international care agency that brings hope to children living in poverty. We absolutely love being able to use Inspire Homes as the instrument to support so many children and will certainly look to do more in the future. We were so fortunate this year to be able to visit Indonesia to witness the incredible work that Compassion does, and to even meet one of our sponsor kids!
