Southern Grounds & Co. plans to expand to Downtown’s Brooklyn neighborhood with a coffee bar and “seasonally fresh” restaurant concept. The Jacksonville-based coffee chain’s owner Mark Janasik said Oct. 9 that Southern Grounds is working with Cronk Duch Architecture to fill both retail spaces and the kitchen at the proposed The Hub Brooklyn at Riverside Avenue and Forest Street. “It’s certainly a quaint gathering spot with the open courtyard design,” Janasik said.

“It’s a place to meet friends, a place for weekenders,” he said. “Gathering together is a huge part of what The Hub is and part of Southern Grounds’ Janasik philosophy.” The restaurant menu and the courtyard design connecting the business concepts will be similar to the Southern Grounds Neptune Beach location, he said. Janasik said the restaurant will be fastcasual, with food from local farms with “globally inspired cuisine.”

The Southern Grounds owner envisions a 1930s-style “prohibition kitchen” serving cocktails in the bar space. The Downtown Development Review Board approved the final design 6-0 at its Oct. 8 meeting. Plans presented by developer Joseph Loretta and Cronk Duch show a threelevel retail space and 2,593 square feet of outdoor dining and gathering space. Chef Kenny Gilbert is embarking on a new fast-casual restaurant concept in his own Springfield neighborhood. While he is waiting for approvals from the state for the restaurant, Gilbert said he won’t disclose the restaurant’s name and menu. He did say Oct. 7 that “it’s going to offer things that are missing in Springfield.” “For sure it’s going to be counter service, slightly elevated from what normal counter service would be,” he Gilbert said. “It’s going to be a fun concept that I think a lot of people are going to enjoy.” He and his wife, Anna Gilbert, registered the name Kenny’s Chicken and Biscuits LLC with the Florida Division of Corporations on Aug. 31. The address listed is at 1602 Walnut St. Gilbert said dishes would range from $6 to $18. He said the idea for the restaurant evolved from serving food out of his house and to health care workers during the pandemic. When he saw that the former Bleu Chocolat Cafe space on Walnut Street was available, his wife suggested they open a restaurant there. Terry Foundation donates to MOSH 2.0 The C. Herman and Mary Virginia Terry Foundation contribution to the Museum of Science & History’s 2.0 capital campaign will be recognized with naming rights. The museum will gain the C. Herman and Mary Virginia Terry Education Center. “We are not at liberty to disclose the amount of the contribution,” said museum spokeswoman Natalie DeYoung. Bruce Fafard, interim CEO of MOSH, said the center will be one of the most active areas within the museum. “It will serve as a place of enrichment where guests of all ages can be curious, explore and learn,” he said.

the courtyard. The second level has a 1,318-squarefoot event space with a catwalk. Janasik said the small interior space and emphasis on outdoor dining was intentional for the post-coronavirus market. Plans show the coffee bar will occupy no more 1,534 square feet. An 854-squarefoot bar is across the covered courtyard diagonal from the coffee shop. A third ground-floor space designated for the kitchen, cooler and restroom facilities totals 1,206 square feet. Cronk Duch initially will occupy the combined 2,407 square feet in secondand third-floor studio spaces that could become cowork space, according to Janasik. Southern Grounds and Cronk Duch are working out financial details, including an ownership split, Janasik said. The southwest corner of Riverside Avenue and Forest Street will put Southern Grounds across the street from the $145 million Fidelity National Information Services Inc. headquarters that will

house more than 1,700 employees. Construction is underway. It also is across Forest Street from the 220 Riverside and Vista Brooklyn apartments. Superior Construction Company Southeast LLC owns the 0.21-acre site. Depending on permitting, Southern Grounds expects the project will take 12 months to complete. Janasik said Southern Grounds’ growth strategy is to open two shops per year in “unique neighborhoods,” starting in Northeast Florida and eventually expanding into other Florida cities. The Hub Brooklyn will be the company’s fifth location. The third location is nearing completion in Avondale and a fourth will open this fall at Jacksonville International Airport’s Concourse A. Gilbert said the restaurant also will house his catering business and serve some of the same dishes. He’s never had a fast-casual restaurant of his own, but Gilbert said it’s something he’s wanted to do. And with the pandemic, the restaurants that he’s seen performing better than others are those that allow customers to take their food to-go quickly and easily. Gilbert said those restaurants are doing better because people see them as a safer alternative to dining in. “I think as people sit back and review and learn more about COVID and the reality of how things can spread, it’s simple things like dining out that put you in harm’s way at times,” he said. Even if there wasn’t a pandemic, Gilbert said he would want to open a fastcasual restaurant. His previous Jacksonville ventures, Gilbert’s Social and

Gilbert’s Underground Kitchen, were more traditional, sit-down restaurants. Those two restaurants’ closures were planned around lease expiration, he said last year when Gilbert’s Underground shut its doors in December. He said then he was leaving Jacksonville to open Cut & Gather Kitchen and Bar in Raleigh, North Carolina. He still plans to open it. “(Fast casual) is a great business model for a small space where you don’t have to do a lot,” he said. “Focus on a few key ingredients, make them delicious and you can have some options and it can spread from there.” A fast-casual concept also would be more scalable than a sit-down restaurant, which could allow him to add locations in the future. First, Gilbert said he is looking forward to opening a restaurant in his own neighborhood. “For me, I’m very passionate about cooking and serving my community,” he said. “That’s why I got into it.”
