Worcestershire sauce has a long, delicious history

My pantry and refrigerator house a wide variety of condiments and sauces, standing ready to enhance everything from sandwiches to salad dressings. Some are more versatile than others. One in particular easily transitions from being necessary in meat, gravy and a Bloody Mary. That is Worcestershire sauce.

Although is carries a long history of being mispronounced, Worcestershire sauce is one of the most popular bottled sauces in the world. Where it originated is a mystery. What we do know is that a British Lord named Sir Marcus Sandys returned to England in the mid-1800s after serving as a governor in Bengal, India.

Upon settling back into his home country, he found that he greatly missed

a sauce that was routinely drizzled on many of the Indian dishes he enjoyed. He procured the list of ingredients in the recipe and asked two local pharmacists to see if they could replicate the sauce. Those pharmacists were named John LeaandWilliamPerrins.Themostprevalent ingredients were soy sauce, tamarind, anchovies, garlic, brandy, lime juice, onions, vinegar and molasses. Their attempt was so horrible it was relegated to their basement and in essence forgotten.

After nearly two years, it was rediscovered and the sauce had mellowed beautifully. After the approval of their pal Marcus Sandys, the two bottled the sauce and named it after their home in Worcester.

Their exact recipe remains a secret but the key is allowing the mixture to age at least six months before bottling. Sediment is often in the bottle, so vigorousshakingisnecessarybeforeuse.Itis

thin with a quite pungent sweet and sour flavor.

That unique taste is what makes it such a workhorse in the kitchen. It gives a spike to tomato juice-based anything and is a frequent marinade flavoring. Once opened it needs to be refrigerated but the shelf life is incredibly long.

Raquel: Let those sheets cool a minimum of 5 minutes between batches. If you can stretch it to 7 or 10, even better!
