Southfork News “FOR THE RESIDENTS, BY THE RESIDENTS” Happy Mothers Day
May 2010
In Loving Memory, this Memorial Day
To All Moms
A mother’s love is like a garden Her children are the seeds And as they grow, she tends to them, Fulfilling all their needs. Her kindness is like sunshine That warms them as they flower. Her nurturing like springtime rain A soft and gentle flower. A mother’s love is like a garden Reflecting tender care, For wherever there is beauty, A mother’s love is there.
On every soldier’s tombstone should be a message of honor, respect and love.
“In loving memory of one who loved his country, who fought against evil to preserve what is right and true and good. In loving memory of one who is a cut above the rest of us, who had the surpassing courage, the uncommon strength, to do whatever had to be done, perservering through hardship and pain. In loving memory of one who was brave enough to give his life, his all, so that those he cared about would remain safe and free. In loving memory of a unique and treasured soldier who will never be forgotten.”
PLEASE DISPLAY YOUR FLAG ON THIS DAY TO SHOW HOW PROUD WE ARE!!!!!!!!!

Memorial Day Remembrance PEACE will come when people live in friendship, side by side And cherish understanding more then hatred, greed and pride. PEACE will come when people see all people as the same, And no one has to live in fear, in ignorance or shame. PEACE will come when people who are needy can reach out For shelter, food, or love and no one has to do without. PEACE will come when people learn to listen and to care, About the rights and dignity of people everywhere PEACE will come when love and trust And kindness know rebirth And on that day all people Will rejoice in peace on earth.
Show others respect and courtesy, always try to be a little kinder then necessary!

Check List Before You Leave your Home Here In Southfork To Go orth 1. Turn off your water 2. Set your thermostat to 80 (air) or higher because of the heat here in the summer. 3. Turn off all unnecessary electrical appliances (example: hot water heater & refrigerator, unplug cords etc.) 4. Properly store all outdoor furniture (hanging baskets, wind chimes, welcome mats, umbrellas, grills and all ornamentals) 5. Make sure an up-to-date house key is left with a trusted neighbor or friend who is a year round resident. 6. Properly prune all shrubs and dispose of any unwanted plants. 7. If you have shutters or awnings, please close them and secure them upon your departure. 8. Stop and forward your mail 9. Contact your cable etc and let them know you will be on vacation for however months and you will be away 10. Stop your newspaper 11. Put plastic wrap over your toilet tanks so that the water in the bowl will not evaporate. 12. Spray and set out some roach traps to catch those little invaders who love the heat. 13. Remember to ask a neighbor or friend to check your home while you are away in case of leaks etc. By making your property look like it is lived in everyday, might discourage theft. There are available people who will look after your home for a small fee if needed.
from the Association President Dear Friends and Neighbors, Finally, it is Spring!!!!! Many of our neighbors will have headed “UP” home by the time you get this letter. If you notice that any of your neighbors who have left to go North for the summer months, and something is needed or that their home should be looked into because of something that does not look just right, please contact Phyllis Grossi. She has a list of most everyone’s Northern home address and or phone numbers. I know that a call would be most appreciated by your neighbor. Security continues to be a great concern. Please be sure to read the article in this newsletter submitted by Tony Trubiano. Maintenance work request……..Please be sure to make use of the 3 part form (in Norm’s office) if you want to address a maintenance issue. Recently, a verbal request was misunderstood and a resident was not happy with the results. The form protects both the resident and the management. Recently, I changed my e-mail address to: dcady@lifesbigevents.com and my cell phone number is: 207-730-0081. Monthly ewsletter This is for all the “snowbirds” who do not have a computer to read the monthly newsletter that is online @ www.floridacommunities.com during the summer months. It was brought to me as a question whether I could mail a newsletter to those who cannot access the newsletter on line. After this conversation I had my husband go to the post office to see how much it would cost to mail out a monthly newsletter and depending on the weight (#pages) it would cost anywhere from $.61 and up and with the envelope the total fee would be $.75 per month if anyone is interested. So if you would like for me to mail you out a copy, just forward to me the address of where it is to be mailed to, which months you want sent and the advance $.75 monthly fee for however many months you want. I will give you a receipt for this and then make sure you receive your newsletter for the months requested. Thanks, Phyllis Grossi, 11150 Mesquite Dr,

Memorial Day Picnic!! May 31st, which is on a Monday, there will be a “Picnic/Potluck” dinner at the clubhouse at 4pm. Bring picnic food to pass and the meat will be provided. Please use the sign up sheet that is on the bulletin board. May 27th is cutoff!
From orm’s desk: Please take note that Andrew and Tommy work for Southfork doing our maintenance. Please do not ask them to move furniture or dispose of furniture, old appliances, air conditioners etc. We cannot continue this practice. It is the homeowner’s responsibility to dispose of these items. Also, we have recently had people just dumping these items down in the R.V. area. Please do not do this! We have no way to dispose of them, so please make arrangements with whomever you purchase your new appliances or furniture to dispose of the old ones for you when they deliver your new ones. This must stop immediately. We can no longer accommodate any resident this way. If you wish they can do these things after work hours. Thank you for your understanding and co-operation. Also, please do not walk your dogs in the R.V. storage area. It is not fair to the people who have R.V’s to have to watch where they walk before entering their R.V. We provide a dog walk area for your convenience. Please use it or your own yard. Please pick up after dogs. Well, the “Birds” are finally migrating and the traffic is getting better. We can at least get a breather and walk through Publix and Wally World without having to ask people to move over. Thank God!! We are experiencing some sales activity but it still remains very, very slow. Norm ______________________________________________________________________________________________
Coffee for Our Troops CHARITY COMMITTEE We want to thank all of you in advance for helping our “Coffee for the Troops” campaign. As of this date, April 21st, we have collected half of our target amount of (100.) We will continue to collect coffee(packages only, no cans) until May 9th. It will then be delivered to Mr. Bob Williams and he will send it to our troops ASAP. We will also accept personal hygiene items, toothpaste, tooth brushes, deodorant, wipes. Our government has closed many of the PX stores and therefore, the troops have no place to buy their basic needs. Money is also accepted to help him with postage. This is a small price to pay for our freedom. Thanks Again!!!! Shirley Rouer, Charity Chair-person Mary Bolin, Co-chairperson
Women’s Club On April 7th, 37 ladies met in the clubhouse for their monthly meeting. The clubhouse was nicely decorated and the social part was handled by Mary Bolin, Mary Jo Dye, Bobbi Gillis and Nancy Steding. Thank you for a job well done! Our speaker was Bob Williams of Wesley Chapel who sends supplies to the Troops on a monthly basis. He was very interesting and he had videos from the Troops and told us of items needed such as Coffee, Feminine Hygiene Products, Socks, Videos, Beanie Babies. The soldiers carry the Beanie Babies in their pockets and pass them out to the children. These children become friends with the soldiers and have saved many of their lives by letting them know where mines are placed because of this gesture. At this time we are collecting coffee (regular) up until May 8th to send to the troops. So please when shopping please help with at least a pound of coffee and bring it to either Mary Bolin or Shirley Rouer. Bob Williams counts on donations to help him pay for the postage. The Government, even if they have planes going to Afganistan will not allow him to put parcels on the plane and he was told to use the Postal Service which most times he pays out of his own pocket. After his talk the women’s club gave him a check for $100.00 to help him with his expenses. The rest of the meeting went on as usual and by popular demand we have scheduled another Chili Dinner next year. We also had two guests from the Men’s Club, Don Duarte and Craig Whitbeck who came to invite the ladies and their spouse to a breakfast on Saturday before Mother’s Day, from 9:00 to 10:00am. It will be free for the ladies and $3.00 for the men. We will reciprocate for Father’s Day. Details will follow later. Next meeting is on May 5th at 9:30am. See you there!!!! Shuffleboard Tournament March 25, 2010 Once again we lucked out with the weather for our annual tournament. There were 32 shufflers that had a great time and much fun! Good food and fun was had by all including the spectators. Jim Browne’s Citrus Chrysler, Jeep, Dodge sponsored the tournament by supplying a Monetary Donation, Oil Change, Certificates and New Vehicle’s to view. Trophy winners were as follows: 1st Place Winner’s = Brenda Knight and Jack Nutter 2nd Place Winner’s = Nancy Jones and Jim Peltier 3rd Place Winner’s = Charlotte Lynch and Smokey Stoever Congratulations to the winners and A BIG THANK YOU to our Sponsor, participants, Committee and all who helped with food and setup. Thank You, Craig Whitbeck
Men’s Club On March 31st, we had a group of 20 people from Southfork attend a baseball game in Lakeland, Florida. Transportation to Joker Marchant Stadium was accomplished by car pool. The Detroit Tigers hosted the Pittsburg Pirates and what a great game it was and very exciting. The Tigers won the game 8 to 5. There were 22 hits which made it a very interesting game. We had great seats in the shade above home plate. I believe everyone had a good time from all the positive comments. Can Recycling Just a little note from the guys who take the cans from the recycling area in the back. PLEASE, PLEASE, do not throw any plastic bags in this bin because our volunteers have to go through and empty them before they can go and recycle the cans. _____________________________________________________________________________________
Ladies Day Presented by the Men’s Club Saturday, May 8th at 9am all Ladies will be served a free breakfast in honor of Mother’s Day which is on Sunday, May 9th. The men joining the women will have a small fee of $3.00 to pay to help cover the cost of the food. The Men’s Club is still a fairly new group and just getting started with their activities, so please come out to support them in their first activity being held. You all know what good breakfast makers the men are!!!!!
Recipe’s of the Month Sammie Burgers 1 (14.75oz) can of Salmon ½ cup seasoned breadcrumbs ½ cup chopped onion (optional) 3 tablespoons mayonnaise or salad dressing 2 eggs, beaten 2 teaspoons squeezed lemon (optional) Drain and flake the salmon in a medium bowl (remove any bones if not boneless) Combine all ingredients in the bowl of salmon and mix together. (Salmon mixture will be moist) Shape into 4 burgers or more. In a large skillet, heat the oil, place the burgers into the heated oil and cook on medium until each side is a golden brown. Be careful when turning the burger’s because of the moistness. Serve on a hamburger roll or bread and put either ketchup or mayonnaise on the rolls when serving. ______________________________________________________________________________________________
Potato Frittata 6 eggs 1/3 cup milk ½ teaspoon salt/pepper ¼ cup chopped roasted red bell peppers (from a jar) 2 tablespoons chopped fresh chives 2 tablespoons oil 3 cups (32 oz) frozen southern-style hash brown potatoes (optional fresh ones) 1. In a medium bowl, beat eggs, milk, salt/pepper with a wire whisk until well blended. Stir in roasted peppers and chives. Set aside. 2. In non stick skillet, heat oil over medium-high heat. Add potatoes, cook and stirring frequently until thawed and golden brown. 3. Reduce heat to medium-low. Stir egg mixture, pour over potatoes in skillet. Cover, cook 8 to 10 mins or until eggs are set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet. When done, cut into wedges to serve. OPTION: Add crisp bacon broken up in pieces or cubed ham in with the potato and egg mixture. Great breakfast item and serve with toast.
Birds in Your Backyard Create a bird-friendly habitat with plants that invite birds to your garden. Here are some tips to entice birds right to your own backyard.
FOOD: Understanding a bird’s preferences will help you to determine which plants to grow. A seedeating chickadee will seek out daisy like flowers. Hummingbirds are happy with nectar from bee balm. SHELTER: Offer protection and a cozy spot with plants that say, “Come on in!” Pine trees and junipers are popular with many birds NESTING: Feather your nesting area with a few brush piles and untidy corners, less lawn grass, more weeds - example, thistles provide seeds and nesting materials for goldfinches. WATER: Birds enjoy a continual source of water for drinking and bathing, whether in a nearby pond or bird bath DON”T FORGET A FEEDER: When a bird’s natural plant food is waning, a well-placed feeder can catch a bird’s eye
When it all comes together, your garden just may become a bird’s favorite place to be!!!!! _____________________________________________________________________________________
If I had my life to live over
I’d try not to make as many mistakes, next time I would relax, I would limber up I would be crazier then I’ve been this trip I know very few things I’d take seriously anymore I would take more chances, I would take more trips I would scale more mountains, I would swim more rivers And I would watch more sunsets I would eat more ice cream and fewer beans I would have more actual troubles and fewer imaginary ones.
You see…I was one of those people who lived seriously and sensibly and sanely, hour after hour and day after day. Oh, I’ve had my moments, and if I had to do it over again, I’d have many more of them. If I had to do it all over again, I’d travel lighter, much lighter than I have. I would start barefoot earlier in the spring, and stay that way later in the fall. And I would ride more merry-go-rounds, and catch more gold rings, and greet more people, and pick more flowers, and dance more often and love, kiss and hug more! Submitted by an 82 year old man in another state. You know you’re getting old if, 90% of your dreams are re runs!
Enjoy life to the fullest, thank God every morning for being able to see out that window into a bright world and feeling healthy and alive!!!!
Walkers/Visitors It has been noticed that there are a lot of vacationers visiting here in Southfork lately, especially a lot of grandchildren whom we all love and adore. Many of the children use skateboards, bicycles etc and a few near accidents were avoided recently which could have been really bad. The children on skateboards were using the streets as a raceway and many a car pulling out of driveways narrowly missed a few because they did not see them and some were coming around a corner in a fast speed just narrowly missed being hit by the oncoming car. Please, when any young people are visiting, please alert them of the danger of being hit by a car and let them know of the dangers. Just another note, be very careful when walking past any home whether it be day or night. When a resident is backing out of their driveway, they have blind spots in the car and don’t always see the walker as they pull out of their driveways, even when looking both ways before pulling out. Please be cautious of this as you walk pass their driveway!!!!! This is also note worthy when walking or driving past some of the corners such as Mesquite & Bronco and also the streets leading into Brahman and the corner of Bronco and Maverick, Prairie and Tumbleweed. It is hard to see if another person or car is coming in any of the directions and it is amazing no one has been hurt or hit by a vehicle at these corners. The other dangerous place is pulling out of the parking spaces in front of the clubhouse to either side of Prairie or Tumbleweed traffic. There have been some near misses with either cars or pedestrians or golf carts almost getting hit. Please be careful! The scooters/golf carts are another dangerous vehicle with sometimes no proper lighting on them. Also, they should stay on the right side of the road and be careful around the clubhouse with cars pulling out of the clubhouse. All should have a backup mirror to see if there is any traffic behind before crossing on the road. PRACTICE SAFETY!!!!!!
I was asked to place an article on this for safety reasons!!!!
A Big Thank You The number of members willing and able to take on the job of being on the Association Board are in the minority in this community and so I would like to acknowledge and thank the huge contribution each of the officers and directors have made. There is always a lot of criticism made, but all in all, what would you do without these dedicated people who keep things just moving along and without problems. It would take a lot of paper to list everything that has been done and accomplished this past year up to and including this current month. There have been many successes since our meeting with the park owner in the Fall and we encourage all residents to use the voucher maintenance slips that are available in the office because of persistence on having things done. Do not take a verbal you don’t need one, but insist on using them because it does work! So over the summer months think of suggestions or ideas that we can bring forth at our annual meeting with the park owner and drop these ideas in the suggestion box in the lobby of the clubhouse. Once again, our life goes on here in Southfork once all you “Snowbirds” head North. So to all the year round residents, check your newsletter calendar and look at the bulletin board for sign up sheets etc. Have a safe trip so you can all come back to us! See you in the fall!!!!! ight Patrol The Community Has Spoken!!!!! Due to a general lack of interest by those capable of patrolling, there will be no schedule written in the foreseeable future. It seems that there is a general belief that either we are exempt from criminal activity or it is a real hardship to go out once a month for one to four hours to show a sense of security, to would be law breakers. Some of us however, will continue to patrol on our own. For those of you who are alone or not well --Pat Grossi and I will remain available, day or night, no matter what hour. If you should have a problem call: Tony Trubiano @ 813-992-0844 or Pat Grossi @ 352-567-6105 Submitted by, Tony Trubiano _____________________________________________________________________________________
