More Than a Day As Thanksgiving Day rolls around, It brings up some facts, quite profound.

We may think that we’re poor, Feel like bums, insecure, But in truth, our riches astound.

We have friends and family we love; We have guidance from heaven above.

We have so much more Than they sell in a store, We’re wealthy, when push comes to shove.

So add up your blessings, I say; Make Thanksgiving last more than a day.

Enjoy what you’ve got; Realize it’s a lot, And you’ll make all your cares go away.

Remember to fly your flag on Veterans Day. Honor the many heroes from all the wars who died for our freedom and peace. ____________________________________________ Freedom is not Free There is a price we pay for freedom For it is not truly free But rather paid for by the contributions of veterans To buy our Liberty As their blood drains from their body and runs like a river through the grass I don’t think we all realize the importance veterans play As they voluntarily serve America each and every day We should honor the veterans for they act like a shield Protecting us from danger, keeping America healed.

So if you would take a second to commemorate You will instantly see We owe veterans our gratitude For they are the reason we are free.

Freshman vs. Senior A very self-important college freshman attending a recent football game, took it upon himself to explain to a senior citizen sitting next to him why it was impossible for the older generation to understand his generation.

“You grew up in a different world, actually an almost primitive one,” the student said, loud enough for many of those nearby to hear. “We, the young people of today, grew up with television, jet planes, space travel, men walking on the moon, our spaceships have visited Mars.

We have nuclear energy, electric and hydrogen cars, computers with light-speed processing and…,” pausing to take another drink of beer.

The senior took advantage of the break in the student’s litany and said, “You’re right, son. We didn’t have those things when we were young……so we invented them. Now, you arrogant little squirt, what are you doing for the next generation?”

The applause was resounding.. Bless those senior citizens. ______________________________________________________________________________

Bible Study It’s time to get into God’s Word once again! Anyone interested in studying God’s Word this season needs to come to our Bible Study get-together starting on November 19th at 12:30pm in the Card Room. All you need is your own Bible. We have lots of fun enjoying his word. After all, B-I-B-L-E stands for Basic Instruction Before Leaving Earth and we never know when we will be leaving this old earth behind so lets get our instruction first! Thanksgiving Potluck Dinner Just a reminder to all to take notice of the calendar on the last page of your newsletter for each month and the dates of all special events.

PLEASE, take note there will be no potluck on the 3rd Thursday of November but the following week is the Thanksgiving potluck dinner on Thanksgiving Day. Check the bulletin board for all sign up sheets . If any questions, contact President, Dot Cady.

Eggplant and Ricotta Casserole Slices of broiled eggplant are layered with ricotta cheese and a fresh tomato sauce to create a hearty end-ofthe-summer casserole.

3 Medium eggplants, peeled and sliced into Âź inch thick rounds.

Olive oil 3 tablespoons vegetable oil 1 medium onion, coarsely chopped 2 medium carrots, grated Garlic to taste 1 pound ground beef 6 medium tomatoes, peeled, seeded and chopped (or can sauce) Fresh basil Salt & pepper to taste, oregano 1 pound ricotta cheese 6 ounces Feta cheese, crumbled ž cup fresh grated parmesan cheese Generously brush both sides of the eggplant slices with olive oil. Place on a baking sheet and broil until lightly browned on both sides. Transfer to a large plate and set aside.

Heat the vegatable oil in a large skillet. Add the onion, carrots, and garlic and stir over medium heat until the onion is tender. Stir in the ground meat and cook until no longer pink. Add the tomatoes, basil and bring to a gentle bubble. Reduce the heat and cover the pan. Simmer for 10 minutes. Season with salt and pepper and increase the heat, cook, uncovered, at a gentle bubble for 30 minutes or until thickened.

Preheat the oven to 350 degrees, butter a shallow, rectangular baking dish.

Spoon in enough tomato sauce to cover the bottom of the pan. Layer on half the eggplant slices, spoon the ricotta cheese over the eggplant and scatter on half the feta cheese and half the parmesan cheese. Ladle half of the remaining tomato sauce over the cheese. Layer on the remaining eggplant slices and then sprinkle with the remaining feta cheese and parmesan cheese. Ladle the remaining tomato sauce over the cheese and cover the dish with aluminum foil. Bake for 30 minutes. Uncover the dish and bake for 15 to 20 minutes or until the sauce is bubbling. _____________________________________________________________________________________ Reuban Dip Appetizer 1 cup mayonnaise 1 16-oz can sauerkraut, well drained 1 8-ounce package Swiss cheese 1 large package chopped corned beef Hot mustard (optional) for topping Mix all ingredients together and put in a greased baking dish. Bake at 350 degrees for 25 minutes. Serve with party bread or crackers and hot mustard on the side for topping.

from the Association President Dear 2009 Association Volunteers, For all of those who have given time and effort. It is a comfort to know that there are HEROES among us regular people who are willing to do what they can to make this an even better place to live.

Heroes give instead of take! They act instead of talk! They step forward and do the hard and unseen jobs! They give the best of themselves measuring their own success, not by wealth or comfort, but by the lives they touch along the way!

Maybe you don’t think of yourself that way but that’s what you are and I want you to know that you are my HEROES! On November 19th, we will be honoring all of our Heroes! In order that we do not overlook anyone, we are asking that you sign up or call me so that we can plan our refreshments. If you have helped in any way, on any events sponsored by the Association in 2009, you are invited. There are just to many tasks that have been done to list them all. Some examples are selling tickets, going on security patrol, help set up or clean up after an event, delivered the newsletters, etc. There are no tasks that are unimportant!!!

You are invited for what is our hope, a great evening of entertainment! Please come!

Southfork Semi-Annual Carport Sale

Saturday, November 14th from 8am to noon is the semi-annual carport sale. This is the time of year to have your sheds, closets etc cleaned out and try to get rid of things that you don’t know you even have. We will have the early birds who ride around starting at 7am waiting to be the first at your tables. So get started with your set ups the night before and be ready for the first customer who comes along. Yarn Hookers The upcoming craft fair sponsored by the women’s club is coming soon on December12th. donations of crochet or knitted items and also yarn etc.

From orm’s desk Well, we finally got our new heat pump installed for the pool. All of the questions about the cleanliness and conditions of our pool are unfounded and are being created by someone throwing chlorine tablets in the pool. Who ever is doing this, I would like to ask you to stop. These tablets discolor the marcite and are unnecessary. If you have any questions about the pool, please feel free to come to my office and review the health department reports. We have never had a problem except for excessive chlorine when someone throws chlorine pucks in to it.

Also, if you use sun tan lotion, please use a towel on the pool furniture and please shower before you enter the pool. Thank you in advance for your cooperation.

We have instituted a new policy regarding maintenance. We can no longer accept verbal requests of any kind or written requests that are not signed and dated. We will not acknowledge anonymous complaints or comments. If you wish to address an issue or a problem, I will have A.V.O’s (Avoid Verbal Orders) in my office and you may fill in the form, date it and sign it. This should eliminate some communication problems and help.

Please check the North Side of your home for mold and mildew. Upon checking on a drive by, we found approximately thirty five (35) homes that need cleaning on the North Side.

Pancake Breakfast Our monthly pancake breakfast will be started on Saturday, November 7th at 8:00am to 9:00am.

Included in this great breakfast are: 3 sausages, orange juice, pancakes (all you can eat), coffee and tea included. cost of $3.00 per person.

Women’s Club On October 7th, 42 members of the Women’s Club met for their monthly meeting. The clubhouse was well decorated for the fall with orange and black tablecloths with Halloween decorations.

The reports of each committee were read and approved. Shirley Rouer of the Charity committee explained that for Thanksgiving we will be doing like the previous years and we will be giving baskets of food to the less fortunate families. We count on the generosity of our members who will buy the food and the club will supply the meat.

Mary Bolin explained that our next Craft Show will be on December 12th. The Quilters and the Yarn Hookers are getting ready for this show. We hope that this show will be a success like the other years because this is the backbone of our club and 50% goes to Charity.

We had a very interesting speaker from Hospice, Ginger Olsen, who explained to us what Hospice can do for us and our love ones. We gave her a check donation of $50.00 for Hospice.

Next month on November 3rd, the social part of the meeting will be hosted by Bobbi Gillis, Tanya Hahn and Paula Campbell. We will also have a speaker from Toys for Tots so, please be there.

Bunco Night The first Bunco Night was held on Sunday, October 18th with great success. We had a total of 20 people (5 tables), and at first it was a little confusing , but once we started everyone was in tune and we all had a lot of fun. Thanks to Phyllis’s brother and sister-in-law who came to the rescue.

Our next Bunco game will be the 3rd Sunday of November (November 15th @ 6:30pm.) The sign up sign is on the bulletin board and first come, first serve in multiples of 4 people for each table. Everyone is invited. A break between the 2nd & 3rd game was had with refreshments and to take a breather from moving from table to table after each round. At the end of the games the winners were calculated and a lot of shocked winners were announced………….Please join us at this next Bunco Night!!!!!!

Association ominations On Monday. November 23rd, the first association meeting of the fall season will be held at 9am. At this time a slate of nominees, prepared by the nomination committee will be presented and nominations for Board Members will be opened to all members of the association at this meeting.

I urge you to attend so that you too, can take part in nominating your choice of candidates .

Anyone who chooses to run or is nominated after the November Membership meeting can only then, run as a write in candidate. This is done in the interest of running an orderly and smooth event.

I wish to thank everyone who voted for me as Vice President of the Southfork Association this past year. It has been a priviledge to serve the community of Southfork residents, and a truly rare priviledge to work with such a fine group of people compromising this Board. A group of people who work for and are committed to the general well being of the Southfork Community.

Unfortunately due to a heavy work load in service to Southfork and in service to my lord, coupled with some health issues, this will be my only year of service with the board. I will however continue working with and scheduling the fine group of people who work as your security patrol.

November 1st marks the end of Daylight Savings Time. Before going to bed on Saturday night, remember to set your clocks back one hour. It is a good time to replace the batteries in your fire detectors and the batteries in your flashlights as well!

Help Wanted It’s that time again! Many residents have asked when the Wednesday night hot dog and hamburger cookouts will start. Hopefully we will be able to start early in the month of November.

In order to get started, 16 to 20 volunteers are needed so that we can get our teams together and work out a schedule for our Hot Dog and Hamburger Fest to be held every Wednesday evening from 4:30pm until 6:00pm, weather permitting.

Team members will be needed to help set up, cook, serve and clean-up for this weekly activity. Volunteers should plan to be at the pool area from 4:00pm until 6:00pm. Like last year there will be four (or five), 4-member teams and each team will work approximately 1 week per month.

We are planning to use a menu similar to last years and are also planning some unique and exciting events again for this year, so please volunteer and become an integral part of one of Southfork’s really fun events.

Talk this over with your neighbors and friends and form up your own 4-member team and then let us know.

If you have no neighbors and friends then just call us to volunteer and we will assign you some new friends to be with you on your team.

Bake Sale Items eeded On Saturday, November 14th at the semi-annual carport sale the community will be having a bake sale along with coffee and donuts at the clubhouse.

We need (desperately) as many bake sale items that can be donated for this first time sale.

Please contact Dot Cady and if possible, volunteer to help with the coffee/donuts and bake sale.

Thank You My most sincere and heartfelt thanks to all my wonderful friends and 2 neighbors who helped me in many ways after my recent fall and consequently broken bone. The dinners were delicious and the cards and calls were very reassuring.

Every act of kindness including the house (getting mail, the newspaper and taking out garbage) was deeply appreciated.

NEWS BULLETI The 2009/2010 Southfork Hot Dog & Hamburger Fest will open it's season with a special event for all Southfork residents on Wednesday, November 4th at 4:30PM. We will feature a menu consisting of Hot Dogs, Hamburgers, Cheeseburgers, Sloppy Joes, Coney Dogs, Soup, Chips and Sodas for the opening night.

This activity will be "FREE" to association members and there will be a minimal charge of $3 to non-association members.

We are still in need of volunteers to help with this popular and fun event. If you can volunteer please sign-up on the sheet in the clubhouse lobby.

Please sure to remind all of your friends and neighbors about this activity!

Proceeds from this event benefit the Southfork Mobile Homeowners Association.

Southfork residents, Out of their houses and About enjoyment.

We will prepare a luncheon, or similar outing on a monthly basis.

I believe a Tuesday or Thursday will work best. Each outing may follow a "Modified Poker Run" format.

This is a perfect event to drag a friend/neighbor along.

All vehicles will be provided a directional (rt. turn - If. turn) set of directions.

The distances will be measured in miles & l/10s, plus a time estimate.

Of course it goes without saying, the map reader is in the hot seat.

In the remote case that someone takes a shortcut and gets lost, a separate sealed set of directions will be in each packet. All sealed directions will be collected at our destination and an appropriate recognition will follow.

Now where are we going and how long will we be gone, plus lastly, what will it cost?

I'm not going to tell you where...

We will leave Southfork about 10:30am and return on our own. Shopping/site seeing are additional options to pursue? I believe we will return by 2:00pm.

The restaurant costs on average run from $6.50 to $14.00 on their lunch/dinner menus.

So, do you like Italian Food? We love it, but we aren't going there, this time.

We also like German Food, not happ'n... Yet. Chinese, is at the top of my list, but too many people hate it. No middle road here, we will work on this one.

Irish, Irish food, well I bet you have never seen an Irish Restaurant. Pubs and Taverns, but no restaurants!! Soft boiled eggs and fish for breakfast, are you kidding me....Irish food will kill you, we are not going there.

Buffets are usually good and inexpensive, but bland. Let’s have a waiter/waitress advise us on the daily choices. Bring our food and drinks to our tables etc..
