Events at Hever Castle Visit Hever Castle & Gardens this season to enjoy an entertaining programme of events and activities set amidst award-winning gardens.

s the gardens turn vibrant shades of red, pink and gold and the leaves tumble from the trees, it’s the perfect time to enjoy Autumn Colour at Hever Castle (from 1 October). Free garden tours providing information about seed collecting will take place on Tuesday and Wednesdays throughout October (with the exception of 1-16 October). Children can take part in a leaf and seed collection challenge with 10 different seeds and leaves to be collected. Young visitors are also given a tulip bulb to take home and plant.
Prepare to be spooked this Halloween at Haunted Hever (19-31 October). Do you really need a ‘straightforward’ Will?
‘I
only need a straightforward Will.’’ I estimate that a genuine nine out of ten clients who contact me about preparing a Will start their instructions with that statement. And I understand their point of view. Who gives a solicitor ‘carte blanche’ to create something complicated? However that would be missing a very important point. Your Will can be a brilliant financial planning tool for your dependants and the next generation and sometimes a straightforward Will won’t be the answer.
Trusts – when can they help? You may consider trusts to come under the category of not ‘straightforward’. However my clients’ lifestyles, family structures and financial priorities have also evolved away from the standard solutions that previously worked. Here are two very practical examples of when trusts can make a positive difference. Worried about losing the value of your home to care fees? If your home is your main asset, you may be concerned about leaving it to your spouse, who could go into expensive care, funded by its value, leaving your children with nothing. Or perhaps your spouse is not very financially responsible. With the right Will you can put your share of the home into trust on your death, giving your spouse the right to occupy your half of the family home, whilst ring-fencing the capital value of the property for your children. If your spouse subsequently remarries or goes into care, the capital value of the home is protected and your children will inherit it on your spouse’s subsequent death. Conditions can be applied, so that they can sell the property and purchase a substitute property (again owned by the trust). You can also give your spouse the right to any rental income generated from the property or interest income from the proceeds of sale, after you have died, still ringfencing the capital for your children.

The tax burden on cohabiting couples If you and your partner are not married or in a civil partnership, and your partner is not included in a Will, they have no automatic right to inherit from your estate. This applies even if you have lived together for a long time or have children together. They could make a claim against your estate, but the legal costs could be high and usually payable from your estate if they are successful. If your Will gifts everything to your partner directly, your estate is taxed at 40% above the Nil Rate Band, (£325,000). It is then added to your partner’s estate and taxed again on their death. That’s 80% tax before it reaches your children. With the use of trusts in your Wills you can double the tax relief available to your combined estates delivering a potential tax saving of up to £130,000. hen the time comes to choose your new kitchen, deciding on the best colour might seem like a daunting task. Especially as you’ll want a colour that will withstand the whims of fashion, but also adds interest to your design and reflects the style you want to achieve. In this article we take a look at the colours dominating the kitchen industry to help inspire you with your kitchen scheme.
Black is back Emerging from its heyday back in the eighties, black offers a sharp contrast to kitchens devoid of colour and can take your cooking space to a seriously sleek level. Oozing luxury, this brooding shade will obscure any accidental spills and scuff marks, which makes it a huge selling point. One thing to remember – black can sometimes make small rooms look even smaller. If your kitchen isn’t the largest, ensure there is plenty of natural light in your room to create an illusion of greater space. Alternatively, contrast with light cabinets, such as a monochrome palette, to establish a bigger feeling within your kitchen. Combined with the warmth of walnut, tones of oak and gold, brass or bronze finishes, black might just be the melodramatic shade you need to update the hub of your home.
Beautiful blue Colour can often go in and out of fashion, however one colour that seems to be sticking around is blue. This popular hue can retain classic kitchen style but is also very modern. This could be due, in part, to the feelings that blue provokes. Studies have shown that different shades of blue can lead to increased creativity, improved concentration and lower heart rates - what’s not to love? Make sure you choose a 3 4 O C TO B E R 2 0 1 9
blue that best suits the look you want to achieve. A dusty, powdery blue is ideal to create a coastal feel, while a deep navy blue can offer an elegant, sophisticated finish.
Gorgeous grey The colour grey is undoubtedly popular, and over the past few years, we have seen the demand for grey kitchens rise - what was once a trend is now a staple kitchen colour. The shade of grey you choose can determine the mood and ambience for your new kitchen. Dark, warm greys such as our Stoneham ‘Pipe Grey’ and ‘Thunder Grey’ work particularly well contrasted with white or neutral worktops. If you prefer a lighter shade of grey, Stoneham’s ‘Sand Grey’ or ‘Dove Grey’ work well with white worktops, but look equally striking with dark worktops. You could also mix ‘n’ match dark and pale grey kitchen cabinets – for instance try base cabinets in light grey and top wall cabinets in dark grey or vice versa for modern aesthetic. Alternatively, apply grey to a specific part of the kitchen, such as the island to make it the focal point of the room.

Go Green In 2017, PANTONE announced its Colour of the Year as ‘Greenery’, a fresh and zesty yellow-green shade, and since then green has gradually gained momentum in kitchen design. y name is Nick Plumley and I decided to open my own independent plumbing merchant 16th of July 2018. Called Plumleys Plumbing Merchant. I started in the industry over 30 years ago as a fresh faced sales assistant for a national merchant. With my positive work ethic and enthusiasm I quickly progressed through the company to become branch manager. It was here that I learned the relevant skills and experience, and gained the desire to open my own merchant. For several years I postponed my plans due to concerns about it being the right time to enter such a competitive market and being able to fund the initial investment. Sadly, my mother passed away September 2017. This made me realise and appreciate that life is too short and spurred me on to reignite my plans for opening a shop. With a little help from my friends and family I was able to fund my dream and began looking for premises for my new venture. I have now been trading successfully for 15 months in the heart of Petts Wood. The local community have made me feel very welcome and have given me great feedback complementing the look of the shop and the service provided. Customer care, quality service and friendly advice are what we strive to achieve on a daily basis. Bored of the treadmill? Looking for another way to keep fit? Here is a guide to the ultimate fitness classes - which one is for you? ZUMBA Originating from Latin dance styles, Zumba is a cardiovascular and aerobic exercise routine that infuses exercise with dance and choreography. The workout alternates between fast-paced and slow-paced dance moves which are practiced in time to Latin rhythms. Among the dance form’s influences are salsa, hip-hop and rumba. This South American workout tones the body through its use of resistance exercises which effectively amount to interval training due to the varying speeds at which they are carried out.
CIRCUIT TRAINING Circuit training involves a number of exercises – or ‘stations’ – which are performed one after the other, with a short rest in between. Exercises vary, but tend to include aerobic exercises such as shuttle runs, star jumps and burpees, along with strength moves such as pushups, squats and lunges. The nature of a circuit training class means that, rather than raising your heart rate and keeping it high for the duration of the class, it gives you more of an ‘interval training’ effect, where you mix intense bursts of activity with recovery periods. It is a very effective way of improving aerobic fitness.
BOXERCISE/KICKBOXERCISE Boxercise and kickboxercise are derivatives of boxing and kickboxing and use the drills and techniques of their respective sports in a non-contact setting, usually in the form of a circuit. For example, you might find yourself shadowboxing, skipping, using punch bags or teaming up with a partner to punch or kick focus pads. Both are considered one of the best allround high intensity exercise classes to get you in great shape.One study found that people felt more calm, more focused and less anxious after a kickboxing class. Taking out all that aggression on a punch bag can be a great stress reliever!

Pilates is a form of exercise which works on restoring correct posture and alignment (which are under constant attack from our seated, sedentary lifestyles), strengthening the muscles that stabilise the joints, and working particularly strongly on the abdominals and back. The movement exercises are very precise, focused and controlled, and performed on an exercise mat in a class context.
YOGA Yoga strengthens muscles, improves joint flexibility, and enhances balance, coordination and posture through a series of diverse poses (or ‘asanas’). There are many types of yoga. For example, ashtanga yoga is more energetic than viniyoga. Yoga works on the whole body without favouring one side, and includes forward and backward bending, twists, balances and inversions. Movements are coordinated with the breath. Different types of yoga have very different focuses and approaches – so it’s best to watch a class or speak to the instructor before you take part.
DANCE Dance classes are a lot of fun and very sociable – plus the high concentration factor means you’ll hardly be aware that you are doing a ‘workout’, on not if you are spending half the class trying to figure out which way to spin or how to shimmy. That said, there are so many different types of dance to try that you are sure to get the hang of one of them. However, all too often the risk of doing an extreme sport is overplayed - even though almost anyone can compete in them in relative safety. We have selected a few of the most accessible extreme sports out there that may be well worth giving a go, who they are suitable for and what risk factors there are. And you can really indulge yourself with breathtaking views in the most exotic locations over the world.

KITE SURFING
SKYDIVING
Kite surfing is a relatively new extreme sport whereby you use a small surfboard with foot straps and bindings which are attached to a large powerkite. This controllable kite propels you across the water - and at times over it - while you control both the kite and the board at the same time. Who is kite surfing suitable for? Kite surfing is considered to be a family sport, and can be done by children as young as 12. Those participating need to be strong swimmers with a fair degree of upper-body strength - and it also helps if you are proficient at other water sports such as windsurfing. Risk factors of kite surfing. Kite surfing is a relatively low-risk extreme sport, since most kite surfers wear helmets, and each kite has a quickrelease mechanism which allows you to release the kite with one tug or push, leaving only one line attached to a kite leash. This will cause the kite to lose its shape, preventing you from being dragged along by an out-of-control kite.
Skydiving involves throwing yourself out of an aircraft or other airborne craft at a typical height of around 12,000ft (approximately 3,658m) and then free-falling for a period of time before activating a parachute and steering it safely towards a landing site. Some people take skydiving to further extremes by doing things such as sky surfing Who is skydiving suitable for? There is usually an age limit of 16, and it is considered best to consult a doctor if you are over 40. However, skydiving is a possibility for most reasonably fit people, provided that they are not prone to panic! Most skydivers make their first jump with an experienced instructor in the form of a tandem skydive. Risk factors of skydiving. Despite seeming to be fraught with danger, fatalities in skydiving are rare. You have to complete a thorough course of training, and skydivers are required to carry a reserve parachute - plus some parachute packs now use an automatic activation device which activates the reserve parachute if the skydiver has failed to do so.
MOUNTAINEERING Mountaineering - as its name suggests - is the sport of walking, hiking and climbing up mountains. The degree of difficulty with mountaineering depends on the terrain, with the more daring mountaineers venturing up high, craggy, and often snow-covered peaks. Who is mountaineering suitable for? Mountaineering is not for the casual participant! You will need to have substantial rock climbing and hiking experience, and many mountaineering clubs limit membership to over-18s. Considerable physical fitness as well as mental skills are required. Risk factors of mountaineering. This sport can be extremely dangerous and should not be attempted without the necessary experience or a guide. Mountaineering requires significant safety gear, as there are the dangers of falling, things falling on you, or adverse weather - all of which you must be prepared for.
WAKEBOARDING Simply put, wakeboarding is like water skiing, but on one plank rather than two. A powerboat creates a tail in the water, and the idea is that you use this as a ramp to perform airborne tricks. Initially, though, you’ll probably settle for being able to stand up when starting out in wakeboarding! Who is wakeboarding suitable for? Wakeboarding is pretty exhausting and requires good stamina both when trying to stand and also when having to swim when you’ve come unstuck! There is generally no age limit to participation - the only limit being your own degree of fitness. Surfers, snowboarders and water skiers will probably take to it easily. Risk factors of wakeboarding. Seriously aching muscles plus the odd strain and bump will be the main risk to you, although you may have to look out for other people on the water so as to avoid a nasty collision when wakeboarding.

Palmer Ltd’s highlyskilled carpenters can construct an oak frame in the workshop, which can then be dismantled so that it can be transported to site to be re-constructed. The building is a Grade II listed detached property constructed out of brickwork with a timber frame, tile hanging and clay roof tiles. It retains a large amount of its original features and this was an important part of the client’s remit. As with many houses of this period the existing kitchen space was quite diminutive in relation to the size of the property. Our clients instructed Stephen Langer Architects to work up a design that would offer an open space kitchen that is perfect for modern day living but would also complement the existing structure. The site conditions and topography dictated that the timber-frame extension would require significant groundworks and retaining walls built to enable the extension to be positioned to maintain subservience to the main house. Although in generally good order, the existing house was looking a little tired and the bathrooms were a little dated. A complete overhaul including plumbing and electrical rewiring had been specified, all of which had to be carried out in a sympathetic and systematic manner.

Our journey with this project started after being selected from a tender list of three by the clients. The works were scheduled into three phases: extension groundworks and brickwork; extension oak-framed roof; and existing house refurbishment. The final items of the refurbishment were timed to correspond with the completion of the main structure of the extension to maintain continuity of the project. The position of the extension required significant excavations and spoil removal and the proposed rear elevation external wall would in time become a tanked retaining wall as well. Once the brick walls had been built our carpenters came to site and carried out a detailed survey to enable them to construct the oak roof at our workshop in Smarden. From our experience we have discovered that this method of working is very beneficial for several reasons. Firstly, and very importantly, it is far safer to manoeuvre large, heavy sections of oak using our forklift within our workshop than it would be on site. Secondly, it is far easier to set out the timbers at ground level and on a flat concrete work area. Lastly, we are guaranteed not to lose any working days due to bad weather, this is important to us with deadlines to meet. Once the roof had been constructed, it was labelled and carefully dismantled and taken to site. Once on site a team of four carpenters and a machine operator erected the oak roof within a couple of days with only a few minor tweaks here and there required. meets Dishoom’s executive chef Naved Nasir, who lets her into the kitchen as the restaurant celebrates its debut cookbook

I am very much in the way. This is instantly clear. The chefs at Dishoom Kensington - their whites pristine as they to and fro with huge trays of buns to be stuffed with keema and paneer dance skilfully between charcoal grills and sturdy metal pots the size of car tyres. But now they also have to contend with me, attuned only to the prawn moilee (a south Indian style curry) under my nose, and not the intricacies of a frenetic open kitchen. I’m here with Dishoom executive chef Naved Nasir, one third of the team behind the restaurant chain and its debut cookbook, Dishoom: From Bombay With Love.

T
he other two thirds are cofounders Shamil Thakrar and Kavi Thakrar, who launched Dishoom in 2010. They opened first in Covent Garden, and now have five restaurants in London (including their labyrinthine Granary Square space, where you can lose all sense of time as the cups of chai keep coming), as well as joints in Edinburgh and Manchester. Inspiration initially sprung from Bombay’s beloved Irani cafes, and “each Dishoom is a small love letter to these cafes in Bombay”, as Nasir explains over bowls of crisp, rust-coloured okra fries and knubbly bites of chilli chicken. The cafes are the legacy of Zoroastrian immigrants from Iran, who set up these cosmopolitan nooks in the early 20th century, which, as a by-product of savvy business acumen (communal tables designed to optimise space) made India’s caste and class systems inconsequential - or at least suspended them for a meal and a drink or two. “[You’d] share a table - the chair is yours,” says Nasir. “These cafes broke down those barriers. That for me was the biggest contribution these cafes had, that you could have a Muslim sitting next to a Hindu or a Sikh, and a Christian next to them.” From 400 or so scattered across Bombay, they are now barely 30 of these opulent, nostalgically tattered Irani cafes left. While Dishoom is a love letter, it’s not an exact replica. And neither are the dishes you’ll find on its menu or in the cookbook - these aren’t traditional recipes done to the authentic letter. Instead, Nasir’s ethos is to ask: “If you tell someone in Bombay about a bacon sandwich, how would he go about it?” The answer is Dishoom’s famed tomato-chilli jam and cream cheese-slicked bacon naan roll. But perhaps their most lauded, signature dish is the house black daal. It’s beside the prawn moilee we’re making, majestic and statuesque in its colossal pot, quietly deepening in flavour. “You can tell the feeling of the kitchen by the daal,” says Nasir, ominously explaining that you mustn’t scrape the crust at the bottom of the daal pan with the lip of the wide ladle that sits in it, or
the smoky burnt flavours diffuse into the grains. Instead, you stir and scrape down the sides of the pan with the rounded base of it. It’s a system you don’t mess with, so no, I don’t get a go. Interestingly, daal may seem a simple exercise in comforting bowl food - it’s got very few ingredients and is arguably quite plain - but it’s far more intricate than you might imagine. It can be so sensitive in fact; when Dishoom opened in Manchester, their head chef there couldn’t get the house special quite right, no matter how hard she tried. Then they realised: “The water in Manchester is not as hard as the water in London, that had an impact on the urad daal grain as to how it cooks.” Against the jazz sax pumping through the speakers and the clatter of cups frothing with rose and cardamom lassi the colour of pink Angel Delight, Nasir recalls how, as a young chef in India, it took him six months to piece together his then restaurant’s daal recipe. Although, he was somewhat hampered by his secretive superiors. Sharing recipes is important though, he notes: “If you’re too secretive, recipes will die.” And so he’s quite happy to share the secrets to his perfect, fragrant prawn moilee - a dish that was a special at Dishoom Covent Garden. It turns out sunshine-yellow, the prawns plump and taut against our teeth, and the thick half-moons of white onion we chucked in have broken down and leaked their sweetness (“Browning up onions is a very critical stage,” Nasir reminds me). We eat it with steamed rice and wedges of lemon, and feel a little more like we’re in Bombay than we did before. Ambiance We visited on a Thursday evening (also known at Branded as ‘Ladies night’ - where every cocktail is just £5). We were warmly welcomed, and enjoyed a drink in the stunning and buzzing bar area before sitting down to our table.
Service Service was faultless - a nice mix of being supportive and friendly, whilst also giving us our space to relax and enjoy the evening. The Chef also popped out to welcome us, and shared a few of his trusted recipe tips. When you visit, be sure to ask him about his perfectly cooked steaks and roast dinners!
Drink
Food To shared three delicious starters - salt and pepper squid lightly coated in cornflour and fried, giving a soft texture to the squid, and a satisfying crunch to the outside, but without the heaviness of some batters. Rock shrimp tempura prawns with house dips - one had a good kick! Fresh, perfectly cooked seared diver scallops accompanied by noodles in a chilli, spring onion, and Thai style sauce. With steaks from naturally grass fed cattle selected and hand cut by Donald Russell (suppliers of meat and poultry to H.M The Queen), it was the obvious choice to go for steak as our main. Our favourite was the indulgent Côte De Boeuf - 600 grams of mouthwateringly tender meat, full of flavour due to being cooked on the bone and with a good marbling of fat. 9 4 O C TO B E R 2 0 1 9

Ambiance We visited early on a Saturday when the restaurant was set up ready for a fully booked evening. There were a mix of couples, families and large groups of friends celebrating birthdays and anniversaries.
Service The service was friendly and faultless. From the moment we arrived, we were advised on the food and drinks menu’s, and made to feel relaxed and not rushed at all. The food was delivered at a nice pace, and our drinks topped up throughout the evening.
Food We opted for one of their set menu’s - the ‘Lobster feast’ to share between two people. Generous portions, beautifully balanced dishes, and wonderfully presented. To start, we had the salt and chilli prawns and squid - a good crunch to the batter, and tender squid and prawns with lots of flavour from the spring onions and chilli. We were then presented with a whole lobster which had been cracked, ready to eat by the Chef, and cooked in a zingy ginger and spring onion sauce. The lobster was extremely fresh, and fantastic quality. To follow were four additional dishes - king prawns in fresh asparagus. garlic pak choi, special seafood rice, and steamed, tender, sweet seabass with ginger and spring onion in a soy dressing. All were delicious and all went so well together. To finish the meal, we shared banana fritters in a crunchy sesame toffee batter, flambeed in Cointreau and served with vanilla ice cream - heaven on a plate.
Drink A well stocked bar with beers and spirits, as well as a great wine menu.
