ollowing a sell-out season at the Almeida Theatre, Ink, by James Graham, the playwright known for his gripping, political writing (This House, Labour of Love) has opened in the West End at the Duke of York’s theatre to 5 star reviews. Set on Fleet Street in 1969, Ink tells the story of the Sun newspaper’s rebirth under media mogul Rupert Murdoch. The play opens with Murdoch’s Photography: Marc Brenner

Cahoots is Soho’s underground home that transports guests back in time to post-war 1940s, to a disused underground tube station, where guests can enjoy bespoke cocktails, 1940s rationed snacks and regular entertainment with homages to the 1940s stars of the stage and screen.

Commons in safe hands after centuries of struggle words: Gwen Lardner
A
s clichéd as it is, Chislehurst is the epitome of a leafy, green suburb. Its woodlands, grassy open spaces, heathlands and ponds are collectively known as the commons and give the area its distinctive, rural charm. The 180 acres are managed and maintained by registered charity Chislehurst Commons, but strictly speaking, the commons are privately owned and have been since 974, with King Eadgar as the first recorded ‘Lord of the Manor’. Ownership has since passed through generations of monarchs and aristocrats. Until now, that is. In a historically significant deal, The Chislehurst Society – another local charity – has this month bought the freehold, ending over 1,000 years of private ownership. For the first time ever, the commons are now owned by an entity representative of the people of Chislehurst. Responsibility for managing the green spaces and ponds will remain with Chislehurst Commons, but financially it is not in a position to buy land and its governing legislation prevents it from doing so. The Chislehurst Society’s main purpose is the preservation and protection of local amenities, making it the ideal vehicle to own the freehold on behalf of the community. It was purchased from descendants of Viscount John Marsham-Townshend. He was the last ‘Lord of the Manor’ to actually reside in Chislehurst. When he died childless in 1975, the land was inherited by his two nieces who have since held it in family trusts. The trusts made the decision to sell as they are not involved in the day to day running of the land, nor are they obliged to finance it. As none of the family lives locally, it was their wish that ownership should be transferred to a local entity better placed to act in the interests of Chislehurst. News of the purchase will be well received, as for centuries, the people of Chislehurst have fought to use and enjoy the commons under rights established by the ancient feudal system. Prominent residents successfully lobbied for an Act of Parliament in 1888 to guarantee both protection of the land and a public right to use it. They had been concerned by the erosion of the commons for development and gravel extraction. Chislehurst Commons is run by a voluntary Board of Trustees and is still governed by the 1888 Act. It employs two full-time Keepers to maintain the 180 acres and volunteers work hard all year round to help conserve the land and to raise funds for its upkeep. Now in safe hands, the commons will be preserved in all their glory for the benefit and enjoyment of residents and visitors alike. 1 6 O C TO B E R 2 0 1 7

A Kentish Killer A challenging sportive in the heart of the Garden of England. F
or the fourth year running, Kent law firm, Clarkson Wright & Jakes (CWJ), are sponsoring the Kentish Killer, an annual sportive for the keen cyclist. This gruelling event, organised by Orpington Cycling Club, GS Avanti, takes place on Sunday 25th February 2018. With over 900 cyclists expected to set off from Brands Hatch motor racing circuit, the clue is in the title, this is no mean feat. There are two routes to choose from which take you up and down the North Downs and the Kentish Weald, with some stunning picturesque views. Cyclists can endure either a 45 mile route or the ever popular, super tough, 70 mile test. Thankfully, many of the roads used are incredibly quiet, particularly as it is an early morning in February. GS Avanti open up event registration at 6pm on Sunday 5th November and as in previous years are expecting to sell out places on the long route within 24 hours. Many local South London clubs see this as their winter challenge and lots of individuals return year on year because once you have done the ‘Killer’ once, you get the bug, as has Alex Wormald, one of CWJ’s personal injury and medical negligence lawyers. Alex will be embarking on his fourth experience of the Kentish Killer and knows only too well what’s in store, “For me I enjoy cycling and I do a lot of triathlon, however, it is a really tough ride, with extremely challenging hill climbs. As for training, I cycle to and from work every day and after the Christmas break I start putting in 1-2 hours training at the weekend.

The great thing about this sportive is it’s really well organised, with plenty of marshalling and refreshment stops along the way. I see it as a great pre spring/summer warm up!” For CWJ, it is great to be involved in the local community and through our partnership with GS Avanti we have enjoyed being part of this event which is also supported by volunteers from the Kent, Surrey and Sussex Air Ambulance. I think if you start to think about doing other projects whilst doing one, it can really hamper what

Have you ever done musical theatre before? This is my first time doing something of this stature, so it’s been a great experience watching myself and the character grow from day one. Were you a fan of Grease and do you remember when you first watched it? I don’t think I’ve ever met anyone who isn’t a fan! I don’t remember a specific time, but I do remember being a youngster and thinking what a great film! Are there any similarities between you and Danny Zuko? I think there’s a bit of Danny Zuko in everyone. Confident, but when it comes to it, they’re a softie at heart. Do you have a favourite song in Grease? It has to be ‘I Think There Are Worse Things I Could Do’. It’s such a moving song, I watch Louisa Lytton performing it from the side of stage every night and she kills it! What can the audience expect from the show? It’s such an energetic show. Non-stop fun from start to finish. It will certainly have you moving your feet. If you could play any other character who would it be? Kenickie is a great part. Tom Senior who plays him plays a great Kenickie, so probably him! Are you looking forward to coming to The Orchard Theatre? I can’t wait! I’m only from down the road now, so it’s kind of my local theatre. My fiancée owns a performing arts school called K2K Stars and she’s bringing a whole bunch of students to one of the performances, so that’ll be fun! PEPPA PIG’S ADVENTURE
What can we expect from Peppa’s brand new outing? Peppa Pig’s Adventure takes us on a camping trip with Peppa and friends led by Madame Gazelle and Daddy Pig. There are lots of stories to be told and songs to sing before they all head off on their exciting adventures – and all the children are invited to come along. What makes the Peppa Pig live on stage so special for a young audience? The children and parents who come along to see Peppa live on stage will have been following her adventures through the animated television series. They love to see all the characters and what they get up to. Here they have an added thrill because, there, in front of all their eyes, are their heroes in 3D talking directly to them and inviting them to come on their adventures. When Peppa herself walks on stage the children go absolutely wild with excitement! Is there some magic to presenting Peppa Pig live on stage? The magic is already there – the characters are the magic. However, you do have to take into consideration the concentration span of younger children. I make sure that something new happens on stage at least every 9 to 12 seconds: this can be a new character coming on stage, or a new song, or some sort of audience participation. Parents love the characters too and we find that they become just as involved as their children, which makes the whole family experience one that is truly magical. I am lucky in that I was a drama teacher in a past life and that has given me great insight into what appeals to children on the stage.

ishop Challoner nursery is a thriving and dynamic place to be and I have had the pleasure of being the Head of Nursery since September 2014. Our children are divided across three groups. The youngest, Rainbow group, can join us the term of their third birthday. The other two classes; Dolphins and Butterflies are children aged three and four in their last year before making transition to Reception class. At Bishop Challoner, we are lucky enough to be able to access all of the facilities on offer to the main school and use the sports fields and gymnasium, climbing “trim trail”, the stage for our Christmas Nativity Play, Chapel and dining hall for more physical activities. Children are also encouraged to join our extra-curricular activities which include mini-gymnastics, ballet and French. We also have visits from the specialist teachers in the school who have shared skills such as language tasters and story times. Our breakfast club and Creche provides wrap-around care for parents who work longer hours and enables children over the age of 3 years extended hours from 7:30 am – 6pm. Forest School is offered one morning a week. The children develop their safety and resilience skills in the outdoor environment. Coupled with all round learning, the children are able to use these skills in all weathers and seasons – monitoring the changes to the site throughout the year. We focus on the individual child, helping them to develop in a supportive and nurturing environment. The children are encouraged to be free-explorers, independent learners and be resilient in all that they do,
having a “can do” attitude to all they tackle. Learning is delivered through a balanced mix of child-initiated and adult-led learning within a more structured preschool environment, giving the older children, a taste of what school may be like in Reception. leek and slouchy has become VB’s signature style, but you can emulate her approach with just a few strategic high street purchases. Remember when Victoria Beckham was known for the taut, second-skin dresses she not only sent down the catwalk but wore herself almost non-stop? Well, times have changed, and now the 43-year-old says ‘soft tailoring’ is her signature look, for both her designer collections and her personal style. That means out with the constricting frocks and in with slouchy trousers, silky shirts and mannish blazers. It’s a style that catwalk brands do well, but you don’t have to pay luxury prices to get the VB look - and there are just three key pieces you need (plus a pair of box-fresh white trainers). First up, a pair of wide-leg trousers, cut straight rather than flared so they pool satisfyingly around your ankles. Add to that a shirt or blouse that’s fluid (not crisp) and top it off with a slightly oversized blazer (pushed up sleeves are optional). When embarking on a new kitchen the most important step is to ensure the layout makes the most efficient and stylish use of the space. Though every home and its owner are different, a fresh layout will complement any design and transform the room into an entirely different and unique setting.

Dazzling Design When it comes to creating your dream kitchen, a kitchen designer will help you plan a room that is best suited to your lifestyle. Organising the design can often feel overwhelming, but there are now a plethora of useful tools and websites – such as Houzz and Pinterest – which can provide you with inspiration. When you meet with your retailer, bring your ideas and spend a good length of time talking to them about your wants, making sure there is clear communication. The structure of your layout should be influenced by your everyday habits and routine; how your kitchen is used, how much storage you need, how easily accessible storage needs to be etc. Similarly, you need to consider what the main purpose of your kitchen will be – is cooking your main priority or would you like an open plan space for entertaining guests? Invest time discussing ideas with your designer so they can work out what layout best suits your requirements. The shape of your kitchen will certainly impact your design to some degree, but the best designers can easily make the most of an unusually-shaped room by adding bespoke features, or unique elements. For example, an alcove can be adapted into a breakfast, diner-style booth for the wow factor, or turned into an open-door pantry. Using a
bespoke kitchen manufacturer allows for optimum flexibility so your designer can plan the kitchen around your exact requirements.
Stunning Styles The most common layouts include U-shaped kitchens, L-shaped and galley kitchens. U-shaped have three walls and offer more storage options, and if they are large enough can facilitate a central kitchen island. They’re user-friendly and offer plenty of prep space for cooking. Their shape also lends itself well to lessening through traffic, reducing accidents. However, the three walls do harbour the potential of making the room feel isolated from the rest of the house, with the additional risk of too much storage reducing floor space. These kitchens are definitely more suited to cooking-enthusiasts, rather than social butterflies. If you’re a keen party host, then L-shaped kitchens are a good fit. They use an open plan concept making them feel spacious and are ideal for socialising and entertaining guests; their multiple entrances and exits means that traffic can flow freely. The ‘L’ shape of two walls naturally opens the space, which is perfect if you have a smaller kitchen. Just be wary that this shape isn’t multiple-cook friendly, as work surfaces for prep can be limited. Galley kitchens have walls either side and are

ideal if you have limited space. By making the most of wall space, they can provide plenty of storage and are shining examples of the optimum ‘working triangle’, with a galley shape perfectly poised for optimum kitchen appliance placement. Functionality is one of its biggest advantages, as its linear shape makes everything accessible within a few steps. If you are considering a specific layout, it’s crucial to consider your lifestyle and requirements and decide what your priorities are. You may need to reconfigure the room to create the ideal space, but by working closely with a designer, you’ll be able to optimise your space for the perfect kitchen layout.
The Special Extras It’s important to bear the little things in mind when designing your kitchen layout. If you’re a keen cook for example, then a layout such as U-shaped or island design will facilitate plenty of prep space, as well as storage, bins and appliances within easy reach. You’ll need a kitchen which allows for easy workflow. If entertainment is the name of your game, you’ll want to choose a layout which gives you scope and space for a social zone – for example, a wine-cooler located within arm’s reach to the breakfast bar. Excellent kitchen zoning is achieved by a combination of aesthetics, usability and efficiency to create a design that suits both the space and your needs. When planning your kitchen, don’t treat ventilation as an after-thought – there’s nothing worse than a kitchen filled with smoke or steam, or pungent odours that can still be detected the next day. This is especially relevant with the current trend for open-plan kitchens. Similarly, you don’t want the TV competing with a noisy extractor fan, or conversation dominated by the hum of the motor so consider the size and layout of your kitchen

when picking the strength and placement of your extractor. Invest in a high-quality extractor, you’ll reduce noise disruption in your shared space as they benefit from technology designed to minimise noise across all power settings. Lighting will play an important role in creating the right ambience and atmosphere, and it will differ depending on whether your kitchen is used for cooking or entertainment. If cooking is your priority, you need excellent worktop lighting. Poor lighting is not only a design no-no, but can be downright dangerous in a kitchen environment. With sharp utensils, whirring electrical gadgets and scalding hot appliances, the kitchen needs to be well lit to avoid accidents and mishaps. If you’re going to be entertaining often, accent and illumination lighting can help to highlight the social spots in your kitchen – for example, pendant lighting over your kitchen island or floor-level integrated LED lights both help to create a party ambience.
Make no Mistake The biggest blunder people make is picking aesthetic over functionality. You need to pick a kitchen suited to both your tastes and your needs, not just your style. A common kitchen grievance is not having enough storage, resulting in a disorganised and messy space. Jamie Oliver Why we should Cook With Just five Ingredients

With fewer ingredients, Jamie is hoping to make people more aware of what’s going into their food - something he’s keen to do himself. He embarked on a nutrition course three years ago and is now studying for his masters. With the rise in health and wellness fads, Jamie wanted to be able to debunk much of the misinformation being circulated. He says: “You’ve got people who are taking 200g of butter out of a brownie and putting 200g of coconut oil in and saying it’s healthier. It’s just not true. I knew I had to go to school.” And he’s absolutely loving it. “It’s literally one of the coolest things I’ve ever done,” he exclaims. Discussion of education and learning about food inevitably leads Jamie to what he calls his ‘life’s passion’: child health. “My personal goal - what gets me up in the morning - is to help halve childhood obesity in 10 years,” he says. With nearly a third of children aged 2-15 overweight or obese, he is justifiably concerned about this issue, especially given its links to middleaged mortality, mental health and an increase in type 2 diabetes. No wonder Izzi Seccombe of the Local Government Association calls it a “major public health time bomb”. For Jamie, tackling this is not going to be easy

he celebrity chef also tells Prudence Wade why he’s so keen to help halve childhood obesity - and what he’d do if he was the prime minister. I had been forewarned that Jamie Oliver is as hyperactive in person as on screen, which turns out to be no exaggeration. Ask one question and Jamie is off, easy charm in full flow, at a million miles an hour. The celebrity chef, restaurateur and household foodie favourite, is set to continue his culinary domination with a new cookbook, 5 Ingredients - Quick & Easy Food. Not content with reducing our cooking times to a mere 15 minutes in previous tomes, he’s now trimming our shopping lists with dishes that require just five ingredients (give or take some additional seasoning). “Some books just want to be written,” Jamie enthuses. He originally wrote the recipes with four ingredients in mind, but added an extra when he realised something was missing. “I wrote 70% of that book but then realised it was just ‘good’ and I don’t think people want to buy a ‘good’ Jamie Oliver book,” he explains. “So the extra ingredient is that balance between creativity and getting straight to the point.”

given his relationship with the present government. He worked closely with the previous four prime ministers on child health but things haven’t gone so smoothly with Theresa May. “We exchanged a few letters and I’ll keep writing them but there’s not much coming back really,” he says. He is particularly angry about the changes the prime minister made to the anti-obesity strategy formulated under David Cameron. May’s version failed to include restrictions on advertising and promotional deals on junk food, two actions that would have a huge impact on childhood obesity, he says. “What that lot get up to baffles me. It baffles me economically and it baffles me morally.” He believes we can halve childhood obesity in 10 years but only if we tackle education and advertising, and generally make it easier for people to be healthy. That’s not the only matter that needs to be dealt with, Jamie believes. When asked what he would do if he was in charge of the country, the chef is uncharacteristically tongue-tied, but after a brief pause he returns to the conversation with gusto. If elected prime minister, first and foremost he would tackle education. He says: “Teachers need to be re-incentivised, they need to feel like they’re on the front line of our country and, therefore, they need to be paid accordingly. “It’s a very complex thing to tackle but I think losing great teachers because they’ve had enough is just not what we need right now.” He firmly believes children need to be better educated about food to be able to make healthier choices. “You don’t die young because you didn’t do your geography homework.” 9 4 O C TO B E R 2 0 1 7
Don’t expect Jamie to stop talking about childhood obesity anytime soon. TOM KITCHIN’S TASTY TOASTIES How to make Tom Kitchin’s open partridge and pancetta toasties with onion compote

T
he Michelin-starred chef shares a tasty new take on a toastie. Who doesn’t love a toastie? And this version even has a few twists to it. “This open partridge toastie is my way to take the toastie experience to a whole new level,” says Tom Kitchin. “I love to serve it with an onion compote, which brings a lovely natural sweetness to the dish. Don’t be shy to experiment and add other ingredients to give this recipe your own personal touch.” So what are you waiting for?
Ingredients: (Serves 4) • 4 partridge breasts, skinned • Olive oil • Butter for spreading • 4 sourdough bread slices • 2 hard-boiled free-range eggs, sliced • 8 pancetta rashers, cooked until crispy • Watercress sprigs • 4 slices cheddar cheese - Tom’s cheese of choice for this recipe comes from the Isle of Mull, but any strong cheddar would do • Sea salt and freshly cracked black pepper For the onion compote: • 50g butter • olive oil • 2 white onions, sliced • 1 garlic clove, finely chopped • 2tsp thyme leaves

Method: 1. The onion compote is ready to use as soon as it is made, or it can be stored in a covered container in the fridge for up to 3 days. Heat a well-seasoned saute or frying pan with a lid over a medium-high heat, then add the butter with a splash of oil. When the butter is foaming, add the onions, garlic and thyme and season with salt and pepper. Cover with a wet piece of greaseproof paper, cover the pan with the lid, turn the heat to very low and leave the onions to sweat for 20-25 minutes until they are very tender. Transfer to a plate and set aside to cool. 2. When you’re ready to cook, preheat the grill to high. Meanwhile, place a partridge breast in between 2 sheets of clingfilm and use a meat mallet or rolling pin to lightly bash until flattened. Repeat with the remaining breasts. Pat the breasts dry and season them all with salt and pepper.
3. Heat a well-seasoned saute or frying pan over a medium-high heat, then add a splash of oil. When it’s hot, add the breasts and sear them for 2-3 minutes on each side until cooked through, then set aside to rest for 5 minutes covered with kitchen foil. Fry the breasts in batches, if necessary. 4. Toast the sourdough slices on both sides under the grill, then lightly butter each. Do not turn off the grill. 5. Spread the pieces of toast with the onion compote and add the egg slices. Top with the partridge breasts, crispy pancetta, watercress and finally the cheese. Place the toasties under the grill until the cheese melts, then lightly season with salt and cracked pepper.
